Spain produces well over 100 different varieties of cheese. Each region offering its own speciality from fresh, cured, fermented to blue-veined.

And finally goat’s milk cheeses are found mostly along the regions of the Mediterranean coast, from Catalonia to Andalucia.

From cow, sheep and goat. Essential characteristic is the type of milk used in the production which varies from region to region.

Because of the variations in climate and geography, as well as culture, each region of Spain can produce several or more varieties of cheese.

In general, cow’s milk cheeses are found in the north, along the Cantabrian coast, from Galicia to the Basque Country, and along the northern Cantabric Mountain Range and the Pyrenees.

You are never far away from being able to enjoy good fresh Spanish cheeses, which are readily available. The smaller cheese shops are usually better prepared to assist with extra information.

Sheep’s milk cheeses are found inland, from the north, in Cantabria and the Basque Country, down to the flat lands of Castilla-León, Castilla La Mancha, Aragón and Extremadura.

and goat milk; the locals say that cow’s milk acidifies the cheese. The humidity level in the caves is around 90% with a temperature between 8 and 12°C. The environment necessary to promote the growth of penicillin spores which gives the cheese its green patches and blue veins. The ripening stage in the caves lasts between 2 and 5 months, the cheese is regularly cleaned and turned during that time.

DOP Cheese Regions. Spain uses the DOP system for its cheese classification. There are 28 Protected Designations of Origin (DOP). And two IGP (Protected Geographical Locations). Let’s have a look at some of them. 19 Manchego is Spain’s best-known cheese, named after the province of La Mancha, the home of Don Quixote. Manchego was originally made to barter at livestock markets as it provided durable food for the shepherds.

22 Mahón, a distinctively fruity cheese, that is named after the major town of the island of Menorca. Local farmers have been making cheese here for centuries but its reputation rests on the skill of the local experts who collect the young cheeses from the producing farms. They then proceed to ripen them in underground cellars for two months to two years. During the maturity process

It is handmade on farms in the Picos de Europa mountains of Northern Spain and matured in caves which are aired by cold, damp, and salty winds blowing up from the Bay of Biscay. butter, paprika and olive oil is often rubbed onto the rind. This cheese is quite dense in texture with a salty buttery taste and is often eaten with olive oil, tarragon and black pepper.

3 Tetilla from La Coruña is an unusual DOP cheese. The remarkable thing about this cheese is that it is shaped as a breast (Tetilla). This conical cheese from Galicia is made from the milk of cows grazed on the lush pastures behind the coastal mountain ranges.

10 Nata de Cantabria comes from the Cantabrian sea coastal region of Cantabria, in Northern Spain (Vizcaya Gulf). Before obtaining the Denomination of Origin it was only known as Queso de Nata. It’s name, creamy cheese perfectly defines the qualities of this cheese. It is soft and almost melts in your mouth, leaving smooth flavours of cream cheese but with a delicious distinctive bitter point.

24 Majorero is one of the most popular Spanish cheeses originating from the Canary island of Fuerteventura. It is quite fatty with a strong pungency. It is a hard pressed cheese made from the tasty Marjorero goats milk and up to 15% sheep milk from other parts of the Canary Islands. The secret of its taste comes from the aromatic fatty full flavour of the Marjorero goat. 14 Zamorano is a hard sheep’s milk cheese which differs from the well-known Manchego as it has a more nuttier and richer flavour. This cheese has a slightly sharp bite, it is buttery with a nutty after taste and a texture that melts in the mouth. 5 Afuegal Pitu means fire in the throat because its concentrated taste gives a hot sensation as if it sticks to the back of your throat. The young version of this gourmet cheese has a milky flavour and is medium soft in texture, it is also smooth with some granular structures. 13 Roncal cheese from the Navarra region, comes from the rich sheep’s milk of the legendary Lacha and Aragonesa 30

Arzula Illoa is also called Queso de Ulloa and is made in Galicia, in the the North Western part of Spain. It is a pale, soft and creamy cow´s milk cheese which becomes stronger in flavour the longer it ripens and matures. 18 Torta de Casar refers to its shape, in Spanish legends, shepherds who first made the cheese realised that the inside of the cheese remained semi liquid, causing the middle of the cheese to sink. The shepherds used the word ‘atortao’, meaning ‘cake-shaped’. Torta de Casar has an intense aroma with a well developed flavour with a touch of bitterness.

Ferran Adrià did not go to university, but he is Honoris Causa for several of them. He did not study business and is one of the most successful Spanish businessmen. Nor did he learn the trade at any famous chef school, and yet he is recognized worldwide as the icon of the gastronomic avant-garde.

Ferran Adrià ended up being an accidental cook. As a young man he started working in a kitchen to save money to go on vacation to Ibiza. When he arrived in Ibiza he also had to earn his living and he continued working in kitchens. During his military service he ended up in the kitchen as well.

In this way, with endless collaborations, books and editorial products of all kinds, elBulli revolutionized the kitchen. The restaurant was open six months. The other six months Adrià and his team dedicated themselves to research.

Equally fortuitous and transcendental was his time in elBulli, which would end up being his property along with Juli Soler, the chef and sommelier who owns much of the merits of the restaurant. He died in 2015. Ferran Adrià quickly diversified to add an infinite series of collaborations. From universities and scientific teams to large retail brands, where decades were spent 38

Covid-19 has changed everything When covid-19 struck the globe, top chef Ferran Adrià was preparing to reopen his worldfamous elBulli restaurant. elBulli held three Michelin stars. It had been closed for nine years.

The Catalan chef has been using the lockdown to work on the August reopening of the new elBulli 1846. To Ferran Adrià this brutal situation is a real tragedy for the gastronomy sector. After being shut for three months, restaurants were facing tough, restrictive conditions of limiting capacity and social distancing. When clients feel that they cannot freely associate with friends and family, this reduces the chances of them going out to eat. For many restaurants this could be fatal if they are unable or unwilling to adapt. Most restaurants need to be booked at least for 70 percent or they are not running a viable business. The gastronomical result of the lockdown was that most people learned about cooking. They could not keep ordering online every day. People also discovered the importance of a good organized kitchen. Like many other top chefs, Adrià has been sharing some of his own recipes, tips and tricks to encourage the home cooking revolution. Survival of the fittest Adrià has been obsessed with improving the efficiency of very different companies where he is a member of the board of directors and mentor. 40

One of the most influential chefs of our time became also one of the most sought-after minds to think about innovation, especially regarding food. Since his legendary restaurant elBulli closed in 2011, Ferran Adrià has dedicated himself to studies at his elBulli Foundation. He has been working on a number of ambitious projects to spread knowledge, often about management. Adrià wants to help young chefs. Especially in these extreme situations, the worst possible. Adrià feels that all restaurant managers should keep some funds for when there’s a problem and they have to reinvest. These are business skills, not cooking skills. The absolute priority in the restaurant business will be management. “A restaurant is not a passion, it’s a business first”, he says. “Culinary schools will change and management will be the most important thing.” Adrià had his share of setbacks. But he never gave up. He learned from it and came back. And that is what the restaurant business has to do too. Adrià is optimistic that restaurants will return as before in a year or a year and a half. And those that endure this, will carry on. Every year there is about 10% of restaurants that don’t make it. This crisis has been a forced selfregulation. A survival of the fittest.


Business dropped dramatically but clients will come back. History shows us that after the flu pandemic at the end of World War I in 1918, restaurants carried on. They also carried on after World War II. And after every major crisis in history.

One thing is that there is a sense of union, a social and general empathy, but of course you have to save yourself first to save others. Reality is hard, but I tell you: we are going to survive. Many of us, not all of us by any means, but whoever can afford it, will come back because we’re human. Now it’s time to help. It’s time to ask people with a lot of experience to share their learnings. Because if you have experience, you’ve failed many times. I have failed so many times that now I can share it. I will do everything possible to get out of this crisis in the best possible way.”

1. Whisk the eggs in a bowl. 2. Add 1 tbsp oil to a frying pan on medium heat. 3. Add the potato chips to the eggs and pour the mixture into the pan. 5. After 3 to 4 minutes cooking, cover the omelette with an upsidedown plate and gently flip over the omelette to release it on to the plate. 6. Add 1 tbsp oil to the pan, then carefully slide the omelette from the plate, uncooked-side-down, into the pan and cook for about 2 minutes. Slide the omelette onto a plate, slice and serve immediately. Polo riders and their horses Each polo team consists of four riders and their mounts. During the entire game each rider uses four horses. The modern game lasts roughly two hours and is divided into periods called “chukkas�, of which there are four to eight, 7 minute chukkas. The polo pony ranges from 147 to 163 cm in height. They are usually thoroughbreds or thoroughbred crosses, and they are selected carefully for quick bursts of speed, stamina, agility and manoeuvrability. It is vital that the horse remains responsive under pressure.

Polo in Spain Polo originates from ancient Persia and grew enormously at the beginning of the 20th century with clubs being established in Santander, Bilbao, Sevilla, Cordoba, Valencia and Granada. Although polo in Spain declined in popularity up until the 1960s, it began a revival thanks to Santa Maria Polo club in Sotogrande which is one of the most important Clubs in Spain. Today there are several Polo Clubs that hold tournaments. Most of them in Andalusia. But also Madrid, Barcelona and Ibiza have their polo club.


What to wear to a polo match There is no written dresscode but there are some unspoken rules to your attire. People dress up but in an informal and light way. Many men and women wear a hat for that typical polo look. Wear comfy shoes and no stilettos as you will be on grass and dirt most of the time. Men do not wear formal office suits. Do not wear black. A funny, creative blazer or a jacket in light cotton or linen with a striped pattern will work just fine. At polo matches you will see the revival of the bow tie, pocket square and funny socks.

The girlier the better Women normally wear full skirts or dresses panning out to below their knee. But they can truly wear just about anything to a game. Tight pieces, dark colours and black are not entirely recommended. Light summer dresses with vivid prints are usually a go-to. Depending on the event, jeans could be appropriate as well. But you will be surrounded by a garden of floral dresses and vivid colours. Tie-dye and feathers are just about at their peak. Wear a feather lined dress or a tie-dye print to truly fashionista-worthy attention.

If you love the mountains, the sea, nature and culture, a road trip around Catalonia is definitely a memorable choice. Gather a friend, or better still, gather some classic car maniacs or motorcycle fans and enjoy this beautiful corner of Spain. Let us take you around Catalonia to discover hidden gems, amazing villages, secret beaches, mountain waterfalls or quirky museums. From Barcelona, head south along the coast to Tarragona with a stop in Sitges and the option of relaxing in one of a few great beaches along the way. From Tarragona, this trip goes inland towards Montblanc and all the way to La Seu d’Urgell in the Pyrenees via Solsona. 114

On your route across the North of Catalonia, you are spoilt for choice with the Garrotxa volcanic national park and the village of Santa Pau worth visiting, a detour into Andorra and towns like Besalu and Castellfollit de la Roca all great options before you arrive in Figueres. After some cultural sightseeing, head on to Cadaques on the coast. There are some great beaches and a Salvador Dali House Museum. The rest of the road trip follows the Costa Brava back down to Barcelona. There are tonnes of great places to stop including Roses resort, the canals of Empuriabrava, L’Escala and Begur. A drive inland to Girona is optional before you make it down to the relaxation end of the journey with beach stops in Tossa de Mar and Lloret de Mar on the menu. Start planning.
