Conejo al ajillo is a traditional Spanish dish that’s believed to originate from the farmers who used to cook in their countryside cabins. It is a great dish prepared with rabbit, patatas bravas, garlic, vinegar, sea salt, and extra virgin olive oil. The rabbit is cut into smaller pieces and fried in olive oil until browned.
The potatoes are fried and then placed in the pan with the rabbit, lots of crushed garlic, vinegar, and salt. The rabbit is then cooked until the vinegar has evaporated. Once done, it’s recommended to serve conejo al ajillo in a clay pot, with a fresh salad and allioli on the side. Enjoy. Recipe on the next page.

1 rabbit in pieces, salted and peppered 2 heads of garlic A glass of red Rioja wine Water Olive oil Salt and black pepper Fresh rosemary Fresh sage
Method
• Heat a pot and brown the rabbit pieces with olive oil over high heat until well browned on the outside. • Peel the cloves from 1 whole head of garlic and cut them into thin slices and set aside. • Allow the pot to cool a little and then add the the cloves of garlic of 1 head. Cut the other garlic head in half and place the open sides in the oil. • When the garlic is browned, add the wine, rabbit, salt if necessary, rosemary, sage and water until the meat is covered. • Cook for about 30 minutes or until the rabbit is tender. • Serve in a traditional clay pot. Serve with brown bread or patatas bravas, a cold salad, and drink the Rioja wine. Enjoy with family or friends, and don’t forget a lively conversation. EAT, DRINK &MORE

maHou CInCo eSTreLLa The beer you’ll most likely receive if you ask for una cerveza (a beer) or una caña (a little beer) in madrid. It was first introduced in 1936 and has been consumed in many bars ever since. The blonde beer has a light taste and is the perfect refreshing tipple on a warm Spanish day. It is the official beer of Real Madrid so prepare to enjoy a few pints of it on match day. La VIrgIn This craft beer, brewed in Las rozas, just outside madrid, has a full-bodied fruity taste. You can visit the brewery for tours, tastings and a bite to eat in its laid-back restaurant. Choose from the madrid Lager, a pale Lager, the Jamonera, an Amber Ale, the 360 Pale Ale or the brand’s own pale ale. 58

eSTreLLa Damm This is the favoured beer in Barcelona and the one most likely to be served if you ask for a beer in Spain’s second largest city. The brand was founded in 1876, making it the oldest in Spain. Their beers have a rich, malty taste (the company is one of the last in the world that produces all of its malt barley in its own malt house). morITz The only beer in Spain whose label is written entirely in Catalan, moritz is a pilsner larger brewed in Barcelona.
It has become quite readily available throughout Spain, however, and is a popular tipple throughout the country. amBar This beer’s medium roasted malt gives it its signature bright amber colour and its soft, balanced taste, making it a refreshing and popular drink. It is brewed in Spain’s oldest brewery, in zaragoza, which also offers guided tours (advanced booking required). The brew won four medals in the 2016 World Beer Awards.

Spain’s biggest beer brand is currently owned by Dutch brewing behemoth Heineken. It was founded in Seville in 1904 by two brothers from the osborne sherry family (creator of the iconic osborne bulls). The brand, which is especially popular in andalusia, makes several different types of beer but its pilsner lager is the most popular. It was the first Spanish beer brand to create an alcohol-free beer, in 1976 and is the official sponsor of Spain’s national football team.
The team behind this Barcelonabased craft beer started out brewing in their home, before the Ipa really took off. It has a dark amber colour and toasted malty taste, mixed with a fruity finish and bittersweet aftertaste. This brand has become a particular favourite of craft beer connoisseurs and is available in specialist beer shops and bars in Spain and across europe.

This honey-coloured ale is another popular addition to Spain’s craft beer scene. The taste is fruity (the brand says you should be able to detect banana and red apple, alongside a back note of molasses). This artisanal brew company from Madrid makes 12 different ales, from a refreshing pale ale to a rich stout. The brewery offers regular tours, tastings and even beer making classes, opening up the secrets of the world of beer brewing to the general public. aLHamBra This pale lager is brewed in granada, southern Spain, and takes its name from its most famous sight, the stunning moorish fortress that over looks the city. The brand produces several different beers, from its alhambra Traditional, a refreshing premium lager, to the alhambra reserva 1925, its most artisanal brew, inspired by the original beers produced at the brewery in 1925. Het assortiment van de wijnen is zeer uitgebreid van jonge lichte wijnen tot wijnen die minimaal 18 maanden op het vat hebben gerijpt. Sinds enkele maanden verkoopt Vinos Bartos vanuit Spanje en Wijnhandel Brabant vanuit Nederland ook de heerlijke Spaanse wijnen van de wijnhuizen van Dehesa el Carrascal en Bodega La cepa de Pelayo. De rode wijnen van Dehesa el Carrascal zijn van hoge kwaliteit, zeer intens, gekleurd en aromatisch. De Almarina witte wijn is een een zomerse Verdejo/Sauvignon blanc. De wijnen van het wijnhuis La Cepa de Pelayo zijn het resultaat van een zorgvuldige voorbereiding van elk van hen, waarbij versheid en fruit de hoofdrol spelen. Spain is one of the most desirable sailing destinations in the world. With its 6,000 kilometers coastline Spain offers sailors a mild climate, diverse cultures, great food and breathtaking landscapes. Looking for the ultimate sailing adventure? Canary Islands are the place to go if you want to run away from the cold European winter without leaving Europe. Canarian cities like Tenerife and Palma enjoy an almost perfect weather. Nights are rarely colder than 15ºC and the daily maximum temperature doesn’t exceed 30ºC. Moreover, the fair winds offer great sailing conditions for sailors. In Spain, trade winds dominate the weather system throughout the year, being the strongest during the warmest hours of the day, from May till late July. Wind speed is usually not faster than 30 mph.
The unspoilt Northern coast is well known for the best food offer in Southern Europe, and for its intact green coastal landscapes of Galicia, Asturias, Cantabria and the Basque Country.
The Mediterranean Coast offers the opportunity to discover the Spanish culture at its best, through regions such as Andalusia, Valencia, Catalonia and the Balearic Islands, getting to spend some time in the picturesque and bohemian-like places like Sitges, Cadaqués, Barcelona, Valencia, Alicante, Peñíscola etc.
The Cantabrian Sea goes from Galicia all the way to Bayonne, a French city located 40 kilometers from Spain, and it has 800 kilometers of shore. Although less intricate than the Atlantic coast of Galicia, this part of the Spanish seashore can also offer some of the best coastal landscapes one can find in europe.

The Atlantic Ocean washes a 1,498 kilometer-long coast of Galicia, which is full of estuaries, capes and islands. After crossing Portugal, the Atlantic Ocean meets again with southern Spain in western Andalucía and the Canary Islands - an archipelago formed by seven islands and many more islets.
The Mediterranean coast of Spain is the most recognizable part of the Spanish coast, with its mild winters and scorching summers, tepid water all year long and a movie-like array of tiny caves and bays, dry landscapes and vibrant cities like Barcelona, Málaga, Valencia and Palma. Sailing throughout the year is possible. In winter, between November and February, the Canary Islands are the perfect choice. The climate is mainly sunny and warm, with temperatures very rarely going below 18ºC all year round. Besides that, the sea temperature is constantly close to 22ºC. Both spring and autumn are enjoyable because the weather is still great. You also have the advantage of escaping the big crowds that come to the area as soon as summer starts. As long as you don’t come in July, August, and maybe even September, the Mediterranean coast of Spain can offer you an amazing vacation full of life, fiesta and culture. Summer is the right time to pay a visit to the northern coast of Spain, enjoy local food, coastal sceneries and hidden gems such as A Coruña, Gijón, Oviedo, Santander and Donostia. Be careful, though. The Atlantic Ocean can get a bit rough at any time of the year and you might need to look for a haven in July or August as well. anyway, don’t worry, you can easily find a shelter for your boat here. Another thing to be aware of is the water temperature, especially in Galicia, where it doesn’t usually go beyond 15ºC, not even during summer.
The Canary Islands are definitely the top experience in Europe if you want to spend your sailing holidays on a tropical destination without travelling far away. Those 7 islands offer a bit of everything for everyone and are a true paradise. Tenerife is the biggest island in the Canary Archipelago and, except for beaches and nightlife, it is where the highest peak in Spain is located. Mount Teide, with its 3,718 meters, was named World Heritage Site back in 2007. Going north from the capital of the island, you will come across the Antequera Bay, a sandy and dry beach surrounded by cliffs, which is a perfect spot for anchoring thanks to being protected from all winds, except for the southerly ones. Gran Canaria offers the same mix of beaches, mountains and nightlife. Las Palmas, the biggest town on the island, is also the most important town in the Archipelago. Fuerteventura and Lanzarote are the natural gems of the Canary Islands. the first one was declared biosphere reserve by UNESCO in 2009 and is a prime destination for water sports, thanks to strong winds, powerful waves and a diverse underwater life. Lanzarote, on the other hand, is a stunning volcanic island with black beaches and the beautiful Timanfaya Park, entirely made up of volcanic soil. The Balearic Islands Menorca and Formentera boast some of the most stunning beaches and caves in the world, all surrounded

by a hippy vibe you just can’t miss. Mallorca and, especially Ibiza, as you might know, are some of the best destinations in Europe when it comes to nightlife. Every spot and every corner of the Balearic Islands is perfect for holiday sailing and enjoying life to the fullest. If you are looking for anchorages for your boat, Mallorca offers two special ones: Sa Foradada, a mustsee for sailors who want to enjoy an astonishing landscape sheltered from most winds, with an easy access for boats; and Cala Brafi, a virgin corner surrounded by lush vegetation, where only boats with a shallow draft can anchor. Do you want something else? Sail just for a few hours from the Archipelago and you’ll be in Barcelona, Alicante or Valencia. If you want to find a quiet and appealing spot to escape to from one of these cities, we recommend Tabarca, a tiny islet historically inhabited by fishermen and located only 15 kilometers from Alicante and 8 kilometers from Santa Pola. Although it is forbidden to anchor around the island, there are two marinas where you will be able to do it. We also suggest visiting the Garraf Beach, which is situated about 30 kilometers from Barcelona and which is one of the quietest spots to anchor in the vicinity of the Catalonian capital. 78

San Sebastián in the North is the food capital of the Iberian Peninsulae. No city has a bigger average of Michelin Stars per kilometer in the world, and only a few cities can match the beauty of San Sebastián. Be sure to visit! A Coruña, in the west corner of Spain, is the most ‘oceanic’ city in the country and a place completely open to the Atlantic Ocean. Here you will find the best seafood in Spain. The Spanish winds are fairly stable but it can be very windy. Tarifa (Cádiz), the most southern point of Spain, has excellent all yearround wind conditions, and it is one of the main destinations for windsurfers from all over the world. The main Spanish winds • BorraSCa: thunderstorm or violent squall, especially in the Mediterranean and the Northern Part of Spain. It usually comes from NW, W. • CHuBaSCo: rapid and strong downpour, it starts up very quickly but stops in a matter of minutes. It is very common throughout the country. It doesn’t come from a specific direction.
• Levante: hot wind from E, NE, that can be especially strong in the area of the Strait of Gibraltar, where the local conditions increase its power and speed. • LeBeCHe: warm wind from SW, this one coming from the Sahara, bringing elevated temperatures and sand from the desert. In the Canary Islands area, it is also known as calima. • GaLerna: stormy, hot and very humid NW wind that arises unexpectedly on the North Coast, especially during the summer season. Wind gusts can go up to more than 100 kilometers per hour. • tramontana: originated in the French Central Massif and the Pyrenees, it is a N wind that blows strongly over the Balearic Islands and some parts of Catalonia. Sometimes it can reach speeds close to two hundred kilometres per hour. Depths: The coast around the Balearic Islands is shallower than in the rest of the country, since it is not in the open Ocean like the North Coast and Canary Islands. Tides: On the Mediterranean Coast, there are practically no tides. The Cantabrian coast of Spain has a tidal range of 1 meter. On the
Atlantic Coast (Galicia, Canary Islands) tidal range can go up to 2,8 m. Waves: In the Mediterranean, waves occur primarily because of the wind blowing. Normally, the heights of waves in the Mediterranean range between 0.5 and 1.5 m, and very rarely exceed 5 m. However, the Atlantic and Cantabric coasts are a whole different thing. There, waves can easily go beyond 10 meters during the winter. Actually, the biggest wave recorded in Spain was appeared near to Galicia, and was 27,81 meters high. Of course, that makes the northern facade of the Spanish coast a place to go for any surfer specialized in big waves. Sea currents: are influenced by winds, differences in pressure, temperature, and salinity. The currents of the Mediterranean can hardly be noticed, but this changes on the Atlantic side of the Spanish coast. The Galician coast is under the influence of cold currents all year long, but the more east you go, the warmer water you’ll get. You love the nautical holiday life? The Island of Tabarca in Alicante has great charm. Enjoy the all year round fantastic climate, the very tasty Mediterranean cuisine and the beautiful coves and beaches. Tabarca is great for a day trip. Tabarca (the Flat Island) is the only inhabited island of the Valencian Community and at present, around 60 people live there. Tabarca is a magical island comparable with Ibiza or Formentera. Therefore, you have to visit the island. If you like peace and quiet, visiting in winter will be your best option and if you like to snorkel, the island will become your dream paradise in summer. There are several ways to reach the island, but the most recommended way is by boat, so you can enjoy

a nice journey whilst taking in the views of the Alicante coastline. The most recommended way (if you don’t have one of your own) is to take one of the boats that leave for Tabarca from different ports such as Benidorm, Calpe, Villajoyosa, Alicante or Santa Pola. From Benidorm (during high season) boats to Tabarca usually leave 4 or 5 times a week (according to demand). The timetable is reduced to only a couple of days in October. The service is not available from November. The
boat journey is approximately an hour and a quarter depending on the port where you leave. Another option for your crossing to Tabarca is to leave from the port of Santa Pola. The cost is less as it is only 8 km away. The journey takes between 15 to 20 minutes depending on sea conditions. Alicante gastronomy is famous and of course on Tabarca Island you can enjoy tasty rice and fish dishes in the different restaurants. Don’t miss the chance to try the tasty Caldero Tabarquino, an exquisite rice dish made with stock from fish caught in the bay of Santa Pola, which is served in two parts, the first part being Gallina fish with potatoes and some aioli which is then followed by the rice. We also recommended that you try the lobster stew, the “lecholas al curricán” (lemon fish) or the “potera squid”. Tabarca has many restaurants with terrace, views, good service and delicious food. “Nou Collonet”
or “Restaurante Gloria” are two outstanding restaurants on this beautiful island. If you prefer tranquil dining with great service, during the summer months on the island of Tabarca we recommend that you call in advance to book a table. A good option to escape the summer crowds is to book an early or late lunch so you can enjoy a nice relaxing lunch without the masses. Tabarca was declared an artistic historical site in 1964 and although it is a small island, it has some interesting monuments to visit. Follow the wall that surrounds the town and enjoy the beauty of the water breaking. Visit the gates of San Rafael, San Miguel and San Gabriel and the churches of San Pedro and San Pablo, don’t miss the lighthouse, a walk through the old town, the main square and its adjoining streets. 500 metres wide Tabarca is a paradise for those who like water sports. You can practice sailing, windsurfing or take a boat ride around the islets that surround this pirate island. In winter, diving

and rambling will be your means to enjoy this beautiful island. Declared a Marine Reserve in 1986, it is a paradise for diving and snorkelling. Should you visit the island, it is a must to discover and enjoy its ocean floor. The best places for diving around Tabarca is La Muralla, located just before the port area, it is a shallow area where you can see large shoals of fish such as Barracudas, Breams etc. Don’t miss the Cova del lleó marí and the Cala el Francés, two coves that won’t leave you feeling indifferent as from these coves, you can venture 40 m deep under the wall and pass from one cove to another via the communicating tunnel. 84

Tabarca is a protected marine reserve called Reserva marina de la Isla de Tabarca, with a variety of marine fauna including sea bass, grouper, conger eel, and gilthead, and was declared a Zone of Special Protection for Birds by the European Union. It is surrounded by very clear and unpolluted waters. The island is formed by materials of volcanic origin on top of which limestone and quaternary deposits have settled. Tabarca was the last Spanish Mediterranean location where the critically endangered Mediterranean monk seal successfully bred before it became extinct in this part of its range in the 1960s. This proves the high quality of the waters around the island in terms of marine ecology. Therefore, waters around Tabarca were declared a
marine reserve in 1986, the first of its kind in Spain. This status was mainly granted due to its submarine posidonia prairie, which is the largest in the Spanish Mediterranean and has an extraordinary ecological value in terms of marine fauna and flora. In order to both enhance the marine biodiversity and protect it from fishing, an artificial reef was laid near the island by the Marine Reserve authorities. Before 1700, the island was known as Illa de Sant Pau (‘Saint Paul’s Island’) or Illa Plana (‘Flat Island’). Believed to be the island that St. Paul disembarked on, the island was a refuge for Barbary pirates up to the end of the 18th century and used as a base for raids on the Levantine coast.
The gateways are still visible and so are the Governor’s House (currently a hotel) and the church of St Peter and St Paul, concluded in 1779. At the end of the 19th century, the island had a population of around 1,000 people mainly devoted to fishing. In the early 21st century, the permanent population was around 50, making Tabarca the smallest permanently inhabited Spanish island (although this number is multiplied by ten during the tourist season in summer). The main activity of the local population is fishing, with the catch brought to Santa Pola’s fish market, but tourism becomes the most important resource during summer, especially in July and August. He studied light therapy for three decades. How does red light therapy work? Red light therapy, also called photobiomodulation, naturally charges the skin and cells with two types of light: red and near infrared light. Biography Rolf Jan van der Wal was born in 1954 in Hilversum, The Netherlands. He graduated from the Art college in Utrecht. He attended esthetic and graphic design education. After college he started teaching two and three dimensional art and art history and did so for 38 years. As a Dutch artist Rolf is very well known for his amazing two-dimensional artwork which is carefully drawn and painted by hand, with oil- or acrylic paint, soft pastels, color pencils or Indian ink on paper or canvas. Rolf has gained his fame through exhibitions, work in commission, in various countries. He created his own sensational style of original, authentic, fine art. He currently is retired from teaching and moved to Spain, where he still paints.

How a burnt painting comes alive again In the previous issue of this magazine we read that a major fire destroyed 10 paintings by artist Peter Engels. His entire summer exhibition was
reduced to ashes. Under the motto “Never Give Up”, the artist recreated the showpiece, namely the portrait of Daniel Craig. Peter Engels wants to auction this painting for charity. “I want to have a positive feeling about the disaster,” he says.

Fernando Caruncho by Pedro Angeles Editor
Fernando Caruncho, who lives and works in Madrid, has been creating unforgettable landscapes all over the world. His instantly recognizable garden designs are characterized by geometric structures, typically arranged trees and large, rectilineal pools of water. His designs are mainly Spanish and Mediterranean inspired.
In his book “Reflections of Paradise: the gardens of Fernando Caruncho” (Ed. Rizzoli), you can admire his recent landscaping projects like a

vineyard in Italy, a monumental golfcourse in Morocco, a terrace garden bordered with laurel hedging at the Royal Botanical Garden of Madrid and several sumptuous private gardens. Carunchois studied philosophy at the University of Madrid for three years before switching to garden studies. When discussing his understanding of space and light, he frequently refers to philosophers like Plato and Aristotle, who both taught in their gardens. Caruncho also draws inspiration from
Epicurus, the Stoic, who wrote, “It is impossible to know outside of the garden.” His book begins with a wide-ranging conversation between the English garden designer Gordon Taylor and Caruncho, who explains that he prefers to be called a gardener, not a designer, because a gardener is someone who nurtures an outdoor space rather than imposing a design upon it. Caruncho reminds us that the Alhambra was conceived and carried out by highly qualified gardeners who were masters of their art, that the gardens of Chinese and Japanese palaces were created by gardener-poets and that after completing the gardens of Versailles, André Le Nôtre was awarded the coveted title not of the king’s designer but the king’s gardener. In the book Caruncho pays homage to William Kent’s 18th-century classical landscape garden at Rousham Park,
in Oxfordshire; Filippo Brunelleschi’s magisterial architecture in Florence; the perfectly balanced layering of rocks and water at Katsura, the emperor’s garden in Kyoto; and the magnificent French garden that the great Le Nôtre designed at the Château de Vaux-le-Vicomte prior to his work at Versailles. He also reveals that he is no fan of the hugely influential Edwardian British garden designer Gertrude Jekyll, who, to his horror, was sometimes known to send clients a planting plan without having visited the garden site. Jekyll is all about color and flowers, whereas Caruncho uses very few. Instead, his gardens are focused on structure, and he mostly restricts his palette, creating mass plantings of single specimens for which he selects plants that he believes connect a garden to its landscape, such as olives, vines, cypresses, holm oaks, lemons, limes, myrtles, palms, pines,

figs, oleanders, camellias, hydrangeas, loniceras, jasmines and roses. Mas de les Voltes, an agricultural property in the Spanish province of Girona, is the garden that, in 1994, first brought Caruncho some attention. Here, huge wheat fields, their edges angled and cut with sharp precision, function as a parterre in the landscape. It is a garden of high drama, and many of the motifs employed (formal lines of cypress and olive trees set out in strict geometries, immense square troughs of water and vines planted on either side of long terraces) appear frequently in Caruncho’s later projects, including Mas Banyils, an agricultural garden in Catalonia; Cotoner, a wheat garden in Majorca; and Silva, a private garden on the outskirts of Madrid. All of these are profiled in the new book. Fernando Caruncho has undertaken 142

three projects in the United States, including, most recently, on an island off the coast of Maine. In New Jersey, nearly 20 years ago, he was asked by the owners of Bird Haven Farm, Janet Mavec and Wayne Nordberg, to come up with a master plan for a series of gardens that would transform the existing fields and integrate them into the surrounding countryside, which he did using the geometry of a circle and an ellipse. He had first deployed these shapes a few years earlier at a seaside property in Hillsboro Beach, near Boca Raton, Florida, where he created a garden around a house being designed by the distinguished Mexican architect Ricardo Legorreta. For Caruncho, this commission represented a key moment in his career, since, as he explains, it was the first time
