We often prefer local products to support the local economy. And let’s not forget the higher carbon footprint of imports. Spanish Cava, French Champagne and Italian Prosecco are all bubbling. But are there substantial differences?

Cava is Spain’s most popular sparkling wine and it undergoes the exact same production process as Champagne. However, the Spanish process is known as “traditionelle”, instead of “méthode Champenoise”, as only wine makers in the French Champagne region may legally label their products méthode Champenoise.

Champagne comes solely from the Champagne region of northeastern France. It’s made from any or all of three grapes: Pinot Noir, Pinot Meunier and Chardonnay. It gets fizzy via a labor-intensive process called “méthode Champenoise”.

Upward of 95 percent of Cava is produced in Catalonia in northeastern Spain, and the most common grapes are Macabeu, Parellada and Xarello. Some Cavas however may also include Chardonnay, Pinot Noir, Garnacha and Monastrell. More frequently than is the case with Champagne, Cava’s flavors can veer toward earthy.

First, a winemaker ferments grape juice into base wine, which is still, just like any other wine. That wine is bottled with sugar and yeast, then closed up to ferment a second time. Since the bottle is sealed, carbon dioxide produced during that second fermentation dissolves into the wine, making it bubbly. While that’s happening, the bottles are gradually tipped forward so that

the yeast and sediment collects in the bottle’s neck. Winemakers flash-freeze the bottle’s neck, remove the cap and a plug of lees pops out. Before it’s corked, each bottle is spiked with the dosage, a mixture of sugar and wine that determines the bottle’s final level of sweetness. That sweetness level is indicated on the bottle, the most common designation, which indicates a nearly-dry wine, is brut. Champagnes can taste and smell like many different things, but common flavor descriptors include yeast and brioche.

Prosecco Prosecco comes from the Veneto region of northeastern Italy, where it’s made from a grape varietal now known as Glera (which, confusingly, used to be called Prosecco). Unlike Champagne or Cava, Prosecco’s secondary fermentation occurs in tanks rather than individual bottles. This process, known as charmat, is cheaper and faster than the méthode Champenoise. Prosecco tends to be sweeter than the average Champagne or Cava, and its flavors are usually simpler and fruitier. That’s not to say its charms are insignificant: Prosecco now outsells Champagne worldwide.

Ostras de Cambados Cambados is a small fishing port, near Pontevedra, north of Vigo, in Galicia. Its several varieties of oysters are a well-known delicacy. About 95% of flat oysters consumed in Spain originate from this village. However, these are the European flat oysters called Ostrea edulis. Their shells are not large nor particularly heavy, suggesting a fairly rapid growth due to the strong Atlantic tides and currents. They are fleshy with a good chew and have a rich variety of flavours. Being so close to Santiago de Compostela, the area deserves an oyster pilgrimage some day. Largest European producer With its 8,000 km of coastline Spain 48

is by far the biggest producer of flat oysters in Europe for the last decades, producing well over half the world production. But in comparison to other marine cultured species, the commercial yield of oysters has been very small. In the last forty years the number of oyster enterprises has decreased by more than 90% from around 900 to less than 80 aqua farms. Raft and rope culture the most used methods to grow oysters are the floating-rafts culture and secondly the more traditional rope suspension. Wine and oyster festival The region is also famous for its delicious Albariño white wine and Cambados is also regarded as its capital. On the first Sunday of August every year the Albariño wine festival is held. It makes, of course, for a wonderful, fresh and natural combination with seafood and in particular with the native oysters. Being so close to Santiago de Compostela, the area richly deserves an oyster pilgrimage some day.

DELTA DE L’EBRE, CATALONIA

World’s best oysters come from Delta de l’Ebre, Catalonia When you think of eating oysters in Europe, you may automatically think of France. However the area of the Delta de l’Ebre in Catalonia, produces such excellent oysters that actually 80% of these are exported to France. Imported oysters from France? The delicious taste of the oysters from the Delta de l’Ebre is the result of the influence of both the sweet fresh water of the River Ebro and the salty water of the Mediterranean. The Delta oysters have a silky texture and a lovely, distinctive flavour. How to savour oysters? Aficionados recommend not adding

lemon juice to them, but leaving them linger on your tongue for a while, to let the ﬂavours escape. Of course this breaks the normal rules of how we eat oysters, but when you’re sitting in the sunshine of the superb, unique landscape of the Delta de l’Ebre, washing your oysters down with cava, you won’t see this as a problem. Are Oysters an Aphrodisiac? For ages people have searched for foods or drinks that could turn on desire. Chocolate, honey, saffron and many other delicacies and supplements are thought to ignite the passion in your love life. Oysters have been a reputed aphrodisiac at least since the Roman Empire, and supposedly were regularly enjoyed as a virility-booster by the illustrious Casanova. So where there is smoke... Oysters and cava, a gourmet pleasure Oysters and sparkling wines such as cava are subconsciously associated with gourmet pleasure, with an outing in good company, with the luxury that we all deserve at one point or another.

• 24 oysters, on the half shell • 50 g unsalted butter, melted • 2 slices jamon, finely chopped • 1/2 teaspoon dark sugar For the cava dressing: • 60 ml cava • 2 teaspoons sherry vinegar • 3 teaspoons red onion finely chopped • 1 tablespoon flat-leaf parsley finely chopped • Sea salt and black pepper

PREPARING • • • • • • •

For the cava dressing, combine the ingredients in a bowl Season with sea salt and black pepper Put the oysters on a baking tray Mix the melted butter, jamon and sugar in a bowl Spoon over the oysters and keep some to serve separately Grill for 2 minutes until the jamon is a bit crispy Drizzle each oyster with the cava dressing and keep some to serve separately • Serve with a glass of chilled cava, of course!

SKIING IN SPAIN Andorra is the tiny state between Spain and France, high in the Pyrenees. Sierra Nevada is a mountain range in southern Spain in the province of Granada. Sierra Nevada is Europe’s most southerly ski resort. SIERRA NEVADA The Sierra Nevada Ski Resort is located on the slopes of the Pico de Veleta, Spain’s third-highest peak, located just 32 km or a 30 minutes drive from the historic city of Granada. It offers over 106 kilometres of skiable routes and has 124 runs suitable for all levels of skiing and snowboarding. 19 easy green runs, 41 blue, 50 red and 7 black runs. ANDORRA In Andorra, you can look forward to 303 kilometres of slopes. The ski resorts are served by 103 ski lifts. The ski slopes in Andorra are excellent for skiing and offer spectacular views. and lots of sun. And only a two hour drive from Barcelona. QUALITY OVER QUANTITY Compared to many of the mega ski resorts in the Alps, the Andorra and Sierra Nevada ski stations are relatively small. But they are a centre of world-class, high-altitude skiing. Both resorts regularly holds international ski and snowboarding events. DIVERSITY For high-class skiing in Spain, you can’t beat the Pyrenees. With ski resorts all along the border with France, while for the sheer novelty of skiing in the south of Spain and being able to go to the beach on the same day, the Sierra Nevada is perfect. There are also ski resorts near Madrid, in the north-west of Spain (in Galicia, Leon, and Cantabria), La Rioja and Teruel. ADVANTAGES Skiing in Spain is cheaper than in most European resorts. SKI RESORTS IN ANDORRA Andorra provides a skiing experience like there is no other in the world. The Pyrenean mountains have their own unique landscape and culture. With France to the North and Spain to the South, there are still many familiarities. One significant difference is that many of the Andorra resorts still have their own charm and authenticity. Andorra mainly is influenced by Spain and especially the Catalan food and culture is a bonus. Think Sangria and Tapas at lunch, rather than the usual ‘vin chaud’ and ‘fondue’. Andorra skiing is deﬁnitely not to be scoffed at. With more than 60 peaks and 2,500m of altitude, Andorra is the ideal winter sports area for the whole family to enjoy. There are lots of lovely tree-lined, gentle slopes as well as steeper runs and plenty of off-piste. Here is an abundance of skiing and boarding for all abilities. The altitude of the higher resorts are relatively snow-sure. They can provide a unique experience for those looking to try something other than the usual European resorts. Many of Spain’s resorts are gentle and uncrowded. They are the perfect choice for many beginners or intermediates looking to carve up some new terrain.

Best of class Bentley Continental GT Convertible is a 4-seater, uber-luxurious convertible that you’re likely to see vying for attention alongside the likes of a Mercedes S-Class Convertible or a Rolls-Royce Dawn cruising along the Spanish coast. But out of these three, the Bentley has unique bragging rights. It is the fastest 4-seater convertible. The Bentley GTC is indeed the world’s quickest and most expensive hairdryer. Cool-looking The imposing grille and huge badge let everyone know you’re behind the wheel of a Bentley. There’s a strong crease along the side of the car that blends into the rear’s wide haunches. The V8 version comes with 20-inch alloy wheels, the W12 gets 21-inchers and you can upgrade to 22-inch wheels if desired. And the brakes are the largest ﬁtted to a production car. At the rear, there are more LED matrix lights but the star of the show is that fabric folding roof. It comes in a range of colours, including a Tweed effect

– and it can go from open to closed in 19 seconds, at up to speeds of 30mph. The interior is just fabulous. Handstitched leather, exquisite real wood trim, knurled metal knobs… Everything you see and touch breathes quality. Only Rolls-Royce is on the same level. But you don’t have to go for a Gentlemen’s club vibe. Opt for the carbon ﬁbre trim and the GTC interior can look sporty and modern instead. Inside The infotainment system is OK. It is similar to the one in the Porsche Panamera. But it’s not the easiest to use. Still, the optional rotating infotainment screen is very cool. It rotates from the screen to analogue dials to a wood panel. Lovely. Also lovely is the digital driver’s display. It looks like the one you get in the latest Audi cars. By the way, Bentley, Porsche and Audi are all owned by the same parent company and so share many of their technologies. The display is easy to conﬁgure and looks great.

That bit about the fastest 4-seater convertible might not sound so appealing when you are actually sitting in the back seats. Like the front, it’s beautifully made, but it’s really quite cramped. The boot is small too as the roof takes up space when it’s folded away. So those golf clubs may have to go on the rear seats. Personal If anything isn’t quite to your taste, however, you can personalise your GT Convertible in any number of ways and Bentley will happily take your cash for extras, such as the Naim sound system, or the Touring 74

Speciﬁcation, where you get a headsup display, adaptive cruise control and night vision. V8 or W12 Unlike all the options and upgrades, engine choice is easy. There’s a 550hp V8 or the astonishing 635hp W12. Sure, the V8 is great but a bit lighter and maybe a bit more nimble. The W12 is just more impressive. There’s an abundance of driving tech that makes the Bentley GT Convertible brilliant to drive. It comes with intelligent 4-wheel drive that can send 38% of its power to the front wheels to help

you scrabble you out of a corner, or 83% of the power to the rear wheels to make it feel more sporty. The W12 gets active roll bars which keep the car ﬂat as you go round the corners. That makes this car feel great fun on a twisty road. The roll bars disengage on the straights to keep the ride smooth. You can get it as an option on the V8. All told, despite its size, the Bentley is more fun to drive than its Mercedes or Rolls-Royce drop-top competition. It gives them a run for their money in the comfort stakes, too. Its standard

adaptive dampers continuously adjust to make sure you get the most comfortable drive when you are cruising, while the air suspension can raise the car up, which smooths things out when you’re going over speed bumps around town or when you’re driving on uneven road surfaces. Dream If there’s a downside to having the convertible over the coupe is that tyre noise is just a bit more apparent. And the view out the back isn’t great when the roof is up. Ayurvedic massage also known as abhyanga, employs holistic medicine principles used 3000 years ago in India, where it was first discovered. The main focus of this massage treatment is to balance out doshas within your body to achieve spiritual fulfilment and relaxation. It also helps to improve lymphatic drainage, release muscle tension and nourish the skin.

Ayurveda massage Doshas refer to the five elements which are earth, water, air, fire and space, practitioners believe that Ayurveda occurs naturally inside of us. These elements should be in perfect harmony within our bodies, however, due to many external and/ or internal influences of modern life, the doshas become off balance in most of us. Doshas are paired to one another and have a specific name. Air and space are known as Vata, fire and water as Pitta and water and earth are called Kapha. The body has a large number of energy points, hence, with a welltrained touch and understanding of energy flow, the massage therapist is able to feel if and what imbalances your body might be experiencing What can I expect during an ayurvedic massage? Differences The technique of the massage is quite different to the usual Swedish, deep tissue or sports massage. The massage therapist can combine the special techniques with essential oils to achieve the benefits. The technique largely focuses on the manipulation of the skin as well as the specific energy points, so you should not expect a therapist to apply a deep pressure to break down the ‘knots’. Essential oils There are lots of essential oils for ayurvedic massage. They are very similar to those used for aromatherapy treatments, however, 98

expert therapists classify them as uniquely to promote the flow of specific doshas. For instance, if the massage therapist believes that you need some work done to promote the flow of the Pitta, he will use cold oils; whereas if a therapist believes that you need to improve the flow of your Vatta, it is very likely that he will suggest warm or even hot oils. Ayurvedic massage has many benefits and this depends on the type of oil you select. The selection of oil will also depend on your desirable outcome, for example, if you would like to improve your focus, memory, concentration or efficiency, the massage therapist may recommend oils such as verbena, rose, tea tree or ginger. If you want to reduce inflammation, fight infections or illnesses, the therapist may recommend something like camomile, cedar or pine. You may have not heard much about ayurvedic massage, so if you read this post and it caught your interest, it is definitely worth trying it out. Abhyanga One of the most traditional Ayurvedic treatments, abhyanga uses frictionbased strokes and warm doshaspecific oils. As the oil penetrates your skin, it also penetrates the tissues to loosen toxins at a cellular level. This style of massage promotes circulation, boosts immune system function, and creates deep relaxation in the mind and body.

Gandharva combines touch with sound therapy to improve energy flow. During this kind of massage, the therapist uses warm, herbal oils and crystal singing bowls to vibrate and transform the body’s cells. This treatment promotes vitality and blissfulness. Marma points are vital life or energy points among the body, mind, and emotions. During a marma massage, dosha-specific essential oils are combined with a light, circular touch to stimulate these energy points. Marma massage awakens the body’s inner healing system, manipulates subtle energy or prana, relieves stiff muscles, and boosts circulation. Odyssey Ayurvedic massage This treatment includes five Ayurvedic techniques and is intended to work on the entire system (mental, physical, and energetic). One or two therapists perform the massage. It begins with Garshana, a dryglove exfoliation that starts the detoxification process, stimulates the lymphatic system, and prepares the skin to absorb the oils. This is followed by Abhyanga, in which the therapist covers your body in warm herbalized oil from scalp to toes, using friction strokes that move the oil into the tissues to loosen and dislodge ama (toxins).

This treatment calms the central nervous system, and integrate the mind and body. After experiencing shirodhara, some say they feel a sense of restful awareness. Vishesh is another rhythmic massage technique. It uses firm, slow strokes to elongate contracted muscles, break up adhesions, and help release deep-seated impurities. The therapist uses little oil. If it follows Abhyanga massage, much of the surface oil is removed. This allows for a higher level of friction on the skin and deeper access to the tissues. Following a Vishesh massage, some say they feel light, loose, and relaxed.

Christmas markets, fêtes and fairs, street entertainment, concerts and shows, and spectacular nativity scenes. Find out what’s happening at Christmas and New Year, Costa Blanca style, you deﬁnitely won’t get bored! Throughout Spain the Christmas season is in full swing by the beginning of December. Christmas decorations, party clothes, gifts and goodies ﬁll the stores, and town centres are ablaze with festive lights. December 6th and 8th: holidays December kicks-off with a double bank holiday – the 6th of December is Spanish Constitution Day and 8th December commemorates the ‘Immaculate Conception’. This is a good date for going up to Barcelona, Seville or Madrid in winter if you want to see the Xmas lights and markets. They may not be so grand but the Costa Blanca has its own share of authentic Christmas fairs! December 8 to 11: Jijona Christmas Fair Jijona Christmas Fair 2021 takes place from the 3rd to 8th of December. This Costa Blanca mountain village is famous for its turròn and marzipan – the majority of Spain’s almond and honey nougats, traditionally eaten at Christmas time, is made locally. December 22: El Gordo Lottery ‘El Gordo‘ is Spain’s most famous lottery, dating back to 1812. First thing in the morning everyone tunes into the radio listening to the children from San Idelfonso School calling out the winning numbers, eagerly waiting to hear if their lucky lottery ticket has won them millions. ‘El Gordo’ (the big one) has been generous to the Costa Blanca on numerous occasions! And if you don’t win this ‘Sorteo de Navidad’ Christmas lottery, you can always try your luck your again in the New Year with the ‘Loteria de el Niño’ on January 6th. December 24: Christmas Eve Spain’s Christmas Eve, ‘Noche Buena’ literally translates to Good Night, and marks the birth of Christ. Until recent years, Catholic Spaniards traditionally celebrated midnight Mass ‘La Misa del Gallo’ but the custom is dying out somewhat nowadays. It’s not a bank holiday, but businesses and stores usually close early. Christmas Eve is an extra special occasion in Spain, when the family typically gathers together for a sumptuous evening meal at home, when sons and daughters living away return for the celebrations which includes the kiddies and grandparents too! Inﬂuenced by global trends, Santa Claus may pay a quick visit to the Costa Blanca but don’t expect your main

pressies until the 6th of January, Three Kings’ Day! A typical feast includes a spread of various appetizers. Prawns, shellfish, sliced meats and cheeses, croquettes, potato salad, Spanish omelette, ’empanadillas’ (savoury rollovers), etc. And for the main course baked fish, or roast lamb or suckling pig are popular. For dessert you could expect a ‘brazo de gitano’ an elaborate chocolate cream roll or a slice of whisky ice-cream cake! At the end of the meal plates of Xmas pastries and sweets are handed round, many of which are made locally – traditional almond turrón and the latest delicious varieties (the best come from Jijona), chocolate truffles, ‘polvorones’ (a sweet powdered almond mixture) and ‘rollos’, biscuit rings flavoured with orange, wine, or cinnamon. Choose an Alicante wine to accompany the banquet and a Cava to toast everyone’s health, and a sweet liqueur to finish – anis, herb, mistela… Yes, Christmas Eve on the Costa Blanca is definitely an evening to forget your diet and to sleep overnight! December 25: Christmas Day Christmas Day in Spain is quite different from one in the UK as there is no present giving. ‘El Día de Navidad’ is a national bank holiday, a laidback day to spend with the family where the traditional midday meal is fairly simple and healthy – a homemade chicken broth with meatball for example. The weather on the Costa Blanca is usually mild at Christmas so it’s a good opportunity to go out for a leisurely stroll and afternoon coffee. If you don’t fancy cooking and want a stress-free Xmas, book a table at a restaurant or hotel and enjoy a festive menu.

December 26: Boxing Day Boxing Day as such doesn’t exist, the 26th of December isn’t a bank holiday in Spain and businesses will be open as usual. However, on the Costa Blanca places with a British clientele may feature special shows, meals or events to keep us happy! It’s also the day that children write a letter to the ‘3 Kings’, a wish list of coveted toys to be delivered by the ‘three Wise Men’ at Epiphany. December 28: Day of the Innocents ‘Día de los Santos Inocentes’ is Spain’s equivalent to April Fool’s Day, so expect light-hearted pranks from family, colleagues, friends and the media! The tradition hails from the Old Testament, and marks the day of the Massacre of the Innocents. The townsfolk of Ibi celebrate this day with the remarkable Els Enfarinats fiesta, when the Mayor is ‘locked-up’ for the day while a flour battle takes place through the streets of the small inland Costa Blanca town. Ibi is well worth a visit for their traditional Winter Fiestas in December, especially on the 28th to see ‘Els Enfarinats’ taking over the town – a lively battle around the main plaza with a ‘flour fight’ and firecrackers followed by ‘Els Tapats’ in fancy dress, street musicians and dancing. For more info: Ibi Tourism Board. December 31: New Year’s Eve Apart from eating 12 lucky grapes at midnight there are many other superstitions to start the New Year on the right foot in Spain. New Year superstitions include wearing red lingerie to prevent jealousy, putting coins in your shoes for prosperity, or a dice in a glass of Champagne. ‘Noche Vieja’ is New Year’s Eve and party time… and the Spanish certainly know how to celebrate in style! Spain celebrates the occasion with colourful street parades and children watch in awe as the three Kings arrive – Melchior, Gaspar, and Balthazar passing by in their ornate carriages, or riding camels, and most likely accompanied by Santa too! See your local town or village agenda, as most places have a get together in the main square. Bigger towns and cities throughout Alicante Province feature live music entertainment and popular street parties which go on all night, where everyone is welcome. At midnight expect complementary party bags, a packet of 12 grapes to bring luck and Cava to toast in the New Year. If you’ve got the stamina, enjoy the party all night long and ﬁnish off at ﬁrst light with ‘churros’ and hot chocolate for breakfast! January 1: New Year’s Day New Year’s Day, January 1st ‘Año Nuevo’ is pretty much the same on the Costa Blanca as back home in the UK, but with sunshine if we’re fortunate! A bank holiday to recover from the night before, for a brisk walk in the country, a stroll along the promenade or even sunbathing on the beach in a secluded spot weather permitting. You can of course do it the popular Spanish way, and go out for a late tapas lunch! January 5: Eve of the Three Kings’ Day January 5th is the eve of ‘3 Kings’ Day’. This is the morning of Spain’s second Xmas lottery ‘Lotería del Niño’, so called because later today an important event takes place, it’s the most magical night 110

Kids leave their new shoes or Xmas stockings underneath the windows before they go to bed, and drinks and titbits are left out for the Kings and camels, who bring presents during the night for all good children, and a lump of black coal ‘carbon’ candy for the naughty ones! January 6: Epiphany or Three Kings’ Day On Three Kings’ Day ‘Dia de los Reyes Magos’ children, and adults across Spain, excitedly wake up on this bank holiday morning to loads of presents. It’s a day to spend with the family. Finish off the festive season on the Costa Blanca with afternoon tea and a slice of traditional ‘Roscón’, a large sweet bun ring sprinkled with sugar and candied angelica. Baked inside there will be a hard haricot bean – the person who ﬁnds this foots the bill – and a lucky ceramic King for the fortunate one. The plain bread cakes are often cream ﬁlled nowadays, and there are even bakeries which conceal prize tickets inside the dough as a publicity gimmick. Costa Blanca December Agenda December’s fun-packed agenda on the Costa Blanca features Christmas fairs, charity fêtes, Saint Silvestre road races, ice-skating, seasonal concerts and theatre, and carol singing. Theme Parks are another favourite – look out for special events organised at this time of year.

Although most homes in Spain now have an Xmas tree as well, it’s tradition to put up a ‘Belén’ Bethlehem nativity scene over the Christmas period. How driving at Lake Como in a classic car inspired portrait painter Peter Engels On a classic car road trip portrait painter Peter Engels drove past George Clooney’s house in Bellagio at Lake Como (Italy) last summer. That inspired him to paint Clooney’s portrait with his beloved red 1959

Corvette. What better occasion than the famous Zoute Grand-Prix in Knokke (Belgium) to start painting the portrait. The weather was great and Peter Engels painted ‘live’ outside.
