Fish and seafood The Mediterranean sea offers a wide range of culinary ingredients to the Costa Blanca cuisine. The coastline is nearly 250 km long. In food shops, the markets and restaurants you will find excellent fresh seafood and all kinds of fish. The most common for the region are the red prawns (gamba), the king prawns (langostina) and the shrimps (quisquilla). Catch of the day Every day the most popular and common fish appear on the market. Choose between more than 30 different species delicious fish like hake (merluza), red mullet (salmonete), whiting (bacadilla) and monkfish (rape). But also red sea bream (besugo), sole (lenguedo), sardine (boqueron), sardine (sardinas), sea bream (dorada), sea bass (lubina) andconger eel (congrio). Futhermore the mackerel (caballa), bonito (bonito) ray (raya), tuna

(atun) and swordfisch (espadon). But do not forget the squid (calamar), the cuttlefish (sepia) or octopus (pulpo). They are also culinary specialty’s. And with a little bit of luck you will find the rare sea urchin (el erizo del mar). Fishing port of Santa Pola Along the coast, there are several fish markets worth the visit. But the most important is Santa Pola. Its fishing port is one of the biggest on the Costa Blanca. Fresh fish is coming in every day. There is a daily fish market on week days. It is a joy to watch the boats arriving with their fresh catch. You can even buy fish directly from the fishermen selling their products from their boat. Today, the fishing industry is not what it used to be. Despite the decline it is worth a visit. The fishing fleet is still very impressive, and an important source of income and employment for the region. According the regional government a total of 3500 people are employed in the fish industry.

Of fishing boats and fishermen There are over 90 large fishing boats so the Santa Pola fishing fleet is bigger than anywhere else in the province. The boats are fishing nearby the coast of Santa Pola but are also heading to the Atlantic. These boats have enormous drag nets and are very impressive to see. In recent years the number of smaller fishing boats has increased. They have a smaller tonnage and more safety and technology. The smaller boats still fish in the traditional way. Fishermen wait till large schools of fish turn up at the Costa Blanca. This leads to a good and natural variety of fish each season. Want to know more? Guided tours (also in English) show the historical relationship of Santa Pola with the Mediterranean sea. The tour starts at the aquarium and visits the port, the docks, auction house and the aquarium. Reservation at the tourist information office, Plaza de la Constitution. In the evening the plaza near the old fortress is the meeting point for the locals to eat and drink. There are plenty of fish restaurants and small shops. Costa Blanca’s fish specialties In restaurants along the coast you can order fish and seafood tapas, starters and main dishes. Denia is well-known for its red prawn and Guardamar del Segura is very popular for its king prawn dishes.

Salted Fish Salting is one of the most popular and old known methods of preserving fish. The fish is salted and dried in the hot Mediterranean sun. Salted or cured tuna is a best seller. The ‘salozones’ are used in salads, rice dishes and stews. Platos de cuchara The Costa Blanca has a long tradition of dishes eaten with a spoon. Spoon meals are called ‘platos de cuchara’ and they are an important part of the Mediterranean cuisine. Spoon dishes originate from poor families preparing meals by boiling their leftovers into a broth or stock (caldo o sopa). Over the years the spoon dishes have found their way to traditional cuisine. Restaurants offer some of their spoon dishes like ”Caldo con pelota” and “Gaspacho” or “Sopa con albondigas” just for one day since it is made of leftovers. Best Costa Blanca Seafood Restaurants Hundreds of restaurants at the Costa Blanca offer great Spanish fish and seafood tapas and dishes. The website of Tripadvisor.com has listed up the best places to enjoy fish and seafood. Find the restaurant you like the best, for your budget, with a view, with live music, etc. Enjoy.

There are many tasty Spanish hams. But do we know the difference between, for example, Serrano ham or Pata Negra? The difference is in the pigs’ diet and the maturation time of the meat. The Spanish tradition of ham making dates back more than 2,000 years to when the Roman Empire controlled most of the country. Even to the exotic palates of the Romans, Spanish ham was a delicacy. But for hundreds of years, cured ham legs were a speciality reserved only for royalty and clergy. It wasn’t until the 13th century that ham made its way to the everyman’s table. Today, the average Spaniard eats more than 7 pounds of cured ham per year. But what are the big differences in taste and quality?

There is massive variation in price and quality. The most important variable when discussing Spanish ham is the breed of the pig. When it comes to Spanish ham, not all pigs are born equal. 1. Jamón is the hind leg of the pig. Any ham can be called Jamón, from the regular cooked variety to the special Pata Negra. 2. Jamón Serrano (Serrano ham) is the most common. About 90% of the production of cured ham in Spain is Serrano ham. Jamón Serrano comes from the common white pigs (cerdo blanco) fed on grain and maize. 38

Originally, Serrano ham comes from the mountainous region of Andalusia. Serrano ham is matured for about nine months after it has been in a bath of herbs. There are 3 types of Serrano ham, the official classification depends on the ripening process: • Serrano Bodega: aging time from 10 to 12 months. • Serrano Reserva: aging time from 12 to 15 months. • Serrano Gran Reserva: aging time of more than 15 months. 3. Jamón Ibérico, (Pata Negra) is considered one of the best raw hams. The Iberian pigs have black hooves,

Spanish ham should be eaten thinly sliced by the hand of an expert. Carving ham is considered a skill. Maestros spend years training and practising, and then they compete in annual ham festivals and ham-slicing competitions.

hence the name ‘pata negra’. The front legs are usually aged for 14 to 18 months, the hind legs for 24 to 26 months. The result is a ruby red ham with a highly flavoured taste. The official classification of Ibérico ham is determined by the type of food and the amount of acorns in the animal’s diet. There are 4 types of Ibérico ham: • Ibérico ‘Pate Negra’ Cebo: the ham from pigs kept on a farm and which are exclusively fed natural compound feed. • Ibérico ‘Pate Negra’ Cebo de campo: from pigs that live in the countryside where they eat grass, supplemented with natural

compound feed of vegetables and grain products. • Ibérico ‘Pate Negra’ Recebo: the pigs are kept in pastures. They eat grass and natural compound food. In season they also eat acorns. When Toni Marí was 14 years old he was a blacksmith apprentice in Javea. He could give free rein to his creative impulses by forging iron. The blacksmith merely saw horseshoes, but Toni Marí imagined new worlds. With his ﬁrst object, a bull, Marí stated that in his world the bull signiﬁes creative energy. Today Toni Mari is an internationally renowned artist and metal sculptor. His iconic rust-coloured sculptures can be seen all over the world and in many Costa Blanca destinations.

The career as a sculptor of Toni Marí took ﬂight when Ángel Palencia, the master builder, visited his workshop and asked a sculpture for a nearby square.” Soon after this the architect Julio Sela commissioned Marí to create a donkey, which unfortunately was never used, but this small setback merely aided the ignition of the sculptor’s career, which was shortly assured of success by another commission. Another renowned Valencian architect, Jiménez de la Iglesia, saw the donkey and liked it, but since it was not for sale, he asked Marí to make him a goat, which, appropriately enough, symbolizes dreams and whims. The donkey eventually found its way to Jávea’s port area, where it stood for some time. Increasing demands on his time and creativity meant that Toni Marí felt the need to move his workshop away from the hustle and bustle of the city

to a more peaceful location, where he was less likely to be disturbed. He settled in Denia, where he soon received his ﬁrst public order. A classic “bous a la mar” was requested, a wonderful opportunity for Marí to create one of his famous bulls. The visibility of this work meant that orders now began to come in and Marí’s imagination was stretched still further as he extended his metalworking skills to create new shapes, such as birds and a golfer. Even today his creative universe is constantly expanding. A prestigious commission from a winery took his work to the next level. For this dedicated artist, parting with his sculptures is still painful. He is clearly happier when their ﬁnal destination is nearby. Perhaps, ultimately, he is subject to the same vanities as the rest of us: “It doesn’t have the same value for me when they’re far away. I like it better when people I know can admire them.” Today Toni Mari is an internationally renowned metal sculptor. His iconic rust-coloured sculptures can be seen in so many Costa Blanca destinations – including Denia, Jávea, Teulada-Moraira, Ondara, Els Poblets, Pedreguer and beyond. His most well-known works are no doubt the roundabouts that stand at the entrances to Javea, Moraira and Teulada.

Calpe, in the Marina Alta Calpe is a coastal town in Alicante that is dominated by the Peñón de Ifach, a Natural Park formed by a rock in the sea of imposing beauty and great ecological value. It is a huge limestone formation with a great variety of birds. At its feet are

the ruins of Pobla de Ifac, a medieval walled city. The Red Wall is an iconic castle-like building designed by the Spanish architect Ricardo Bofill. End of the line: Jávea Jávea is located between Cabo de San Antonio and Cabo de la Nao at the Montgó massif’s foot. It offers 20 km of high-quality beaches and coves with many leisure and sports activities, thanks to its marina. Racing blood As the son of former Formula-1 pilot Jos Verstappen, Max Verstappen was born to be fast. He is the youngest world champion in F1 history. As well as a famously fast father, Max’s mother Sophie was also a successful kart driver. Born in Hasselt, Belgium, in 1997, it wasn’t long before the young Verstappen hit the karting track. Karting and F3-champ By 2003 he was karting regularly. In 2005, things got serious and he took part in his first championship, the Belgium Championship Mini (VAS), where he won every race. By 2013, Max Verstappen had won just about everything karting had to offer, winning the 2013 World KZ championship at Varennes-surAllier in France. His single-seater debut came in the inaugural Florida Winter Series, but he was soon snapped up by Van Amersfoort to take part in the FIA Formula 3 European Championship. At just 16, Verstappen took the F3 championship by storm, winning his sixth race before going on to win an incredible six consecutive victories in the series, placing third in the overall rankings. 82

Formula-1 Verstappen joined Scuderia Toro Rosso in 2015, making him the youngest Formula One driver in history, surpassing the record of Jaime Alguersuari by nearly two years. Verstappen went on to score an impressive 49 points in his debut season, taking two fourth places. After just four races of 2016, Verstappen moved from Scuderia Toro Rosso to join Red Bull Racing and race alongside Daniel Ricciardo. In his very first grand prix for the team, in Spain, he defied the odds and, under relentless pressure from 2007 world champion Kimi Räikkönen in second place, took an epic maiden victory. Verstappen wasn’t finished there, however. Emerging talent A further six podium finishes, including perhaps the standout drive of the season in rain-lashed Brazil, landed Verstappen fifth overall in the 2016 World Championship and confirmed him as the hottest young talent in F1. More promising results came in 2017, with victories in Malaysia and Mexico, second in Japan and third in China securing him an overall finish of sixth place.

Race tot the top But Verstappen’s form went up a gear during the 2018, when he finished in a career-best of fourth place overall thanks to victories in Austria and Mexico and a string of impressive podium places all over the world. Verstappen went one better once again in the 2019 Formula One Season with a thirdplace overall finish in the standings as a result of consistent performances which earned him podium places in Australia and Spain, a memorable win at the Red Bull Ring at the Austrian Grand Prix and an impressive first place at the Hockenheimring at a dramatic and rain-soaked German Grand Prix. After that he finished the 2019 campaign strongly with podium spots in Hungary, Singapore, the USA, first place in Brazil and second place in Abu Dhabi to confirm his reputation as one of Formula One’s most formidable and improving drivers. Podium after every race Verstappen put an end to speculation about his future by signing a contract extension through, a move which seemed to inspire even more big results in 2020. After scoring third place in the Styrian Grand Prix, he went one better by finishing second at Hungarian Grand Prix and the British Grand Prix. By that point it was clear that 84

Verstappen had made a home from home for himself on the F1 podium, and he went one better once again by claiming first place at the UK 70th Anniversary Formula One Grand Prix. The Dutch driver ended the season in style with victory in Abu Dhabi to end the campaign in third place overall. First, first, first Season 2021 was one where Max went from a consistent podium presence capable of occasional giant-killing results into a bona fide world championship contender. The list of firsts were many, mostly because Max spent so much of the season finishing first. A first win on the most famous city streets of all in Monaco, a first hat-trick of successive wins in France, Syria and Austria (leading all 142 laps across two memorable races at the Red Bull Ring) and a maiden win in the United States were highlights, but it would be hard to top his domination of his home race at Zandvoort in September, where he took pole and won the race in front of a frenzied orange-hued adoring home crowd. Max then finished on top of the world, securing his first world title in the final race of the season in Abu Dhabi.

For more than 100 years the brand has been the go-to brand for handmade leather shoes and boots. Sendra was always a trendsetter on the catwalks of the Fashion Week in Madrid, among others. Various major brands showed their beautiful spring-summer collections and styled their creations completely with a pair of beautiful Sendra boots. Sendra Boots’ history is defined by the four generations of the same family that have dedicated their lives to the passion of boot making. From the founder Andrés Sendra, to his great grandson Francisco Javier Sendra, current CEO and owner. All started in 1905, after several years living in the United States, Andrés Sendra, son of a tannery owner, returned to the Spanish town of Almansa, Albacete (140km West of Benidorm) deeply impressed by the cowboy culture and the style of the boots people wore there, with fine toes and intricate designs. He became a footwear passionate and in 1913 founded Sendra Boots together with his brother Vicente. They initially were dedicated to produce 98

moulded boots similar in style to the traditional Camperos Boots. A few years later, specifically in 1919, after the development by United Shoes Machinery of the Goodyear welt shoe construction technology, Sendra brothers decided to take a step forward by purchasing that equipment, being conscious about the quality leap that will achieve in the production of Sendra Boots. It should be pointed out that, even nowadays, there are just a few brands able to produce footwear using this patented system. In 1926 the factory moved to Campanario Street, popularly known as “La Placeta Sendra” (Sendra Square), to give space for new and much larger premises, where the production remained until the 80’s. The Spanish Civil War outbreak in 1936 caused impact in the whole country and the production was dramatically reduced because the lack of leather and resources but with big effort the factory remained active. It took fifty years to the next milestone on brand’s history. In 1960, after decades of difficulties and impossibility to open markets outside Spain, the

international expansion started with the brand’s expansion in the United States of America. A true test for the brand that, unexpectedly, turned out to be a much bigger success than initially planned. After several years, the expansion continued, first in Germany in 1965 and later on in the rest of Europe, Russia, Asia and Brazil, supported by Sendra Boots’ presence in the most important fashion and footwear shows around the world. Up to 1962 Sendra had more than enough to meet the huge demand for cowboy boots in the domestic market, but now it was time for further international expansion and marketing. The big challenge was to step onto American territory and challenge the U.S. market to see if they had the same great opportunities and success as in Spain with their unique quality products. After the greatest success in the USmarket on cowboy boots in 1965, Sendra started expanding its commercial business on its own Continent as well. From 1958 Sendra even started to become more and more professional in marketing and Sendra puts up enormous goals starting creating and producing a wide range of different quality Boots. Sendra began his race into the world center of fashion and fads.

In 1988 they launched a completely new line of boots, side by side their now world-famous Cowboy Boots. It was a further development of the Biker Line. The Motoro Style is being launched for the “asphalt cowboys” in black leather with straps and rings around the ankle also named harness. Just in a few years, the brand became established as biker culture icon. Shortly after, in 1994, Fashion collection appeared to open doors to new trends and fashion world. After the inauguration of the new factory in 1995, keeping its location in Almansa but moving to an industrial estate to meet the requirements of more capable and up-to-date facilities, Sendra makes its way on the catwalk with big names of the international fashion design that included the brand in their collections. Despite entering the world of fashion, and the continued evolution and development of new models thanks a passionate creative team, the brand has never lost its essence. Cowboy and biker boots kept being Sendra Boots’ keystones. “Goodyear welt” characterizes Sendra boots in their high quality. You can feel it in all aspects: from the raw materials, to the finishing. Everything is about carefully and traditionally handcrafted manufacturing. A specially intensive production process that spans up to 250 different

Sendra Boots’ variety is really impressive. From the typical camperos leather boots with a plain design to spectacular models with exotic leathers, eye-catching distressed finishings or flashy embroideries. Breathing Why is breathing so important? Everyone breathes the same air. The breath carries the life energy (pranayama), because without breathing you cannot continue to live. The Yogis had discovered early on that breathing is the bridge between body and mind, a connection between your physical sensations and your thought processes. It is, as it were, a barometer of how you feel physically and mentally.

However, if you constantly breathe like this, it disrupts the hormone balance. Your body produces too much adrenaline as a result of this breathing, which makes you feel constantly rushed. Something that is therefore easy to solve with breathing techniques. There are many health problems related to breathing. Unfortunately, too little research has been done on this in science. Philosophy The underlying idea is that Yoga has traditionally always aimed to give you a better and happier life. Yoga is a philosophy or lifestyle that brings you silence, peace and happiness. Yoga is a comprehensive system for well-being on several levels: physical, mental, emotional and spiritual. In our current society and actually in the entire western world we hardly think about ourselves anymore, 110

In the past there was only the ‘midlife crisis’. People suddenly want to do and buy all kinds of things, simply because they give the feeling of getting more out of life. The quarter life crisis Today, some have this feeling as early as 25 years of age. More clothes, a bigger house or a more expensive car makes you happy for a short time. But soon we are used to this and we want something new again. We try to fill the feeling of emptiness by buying stuff. Yet they make us depressed despite we have everything. We should not let our happiness depend on material things. Money does not buy you a connection with yourself or with the world around you. Our perceptions are influenced by our experiences. Often we are blinded by the fears and traumas of our childhood and we can no longer see the beauty around us. We have shut ourselves off from the world to protect ourselves from potential danger. What

people need is more connection with themselves, spiritual awareness, the forces of the universe. There are 10 different types of Yoga, all with 1 goal: to get and stay in balance physically and mentally. You develop more flexibility, strength and balance. You get more energy. By breathing in the right way, the oxygen content in your body also increases, so that muscles and organs can make and receive more fuel. Back and neck complaints Many people are referred to Yoga by doctors when they suffer from back and neck problems. Not surprising, because Yoga can release a lot of tension in the body. The physical effect of twisted postures, for example, is that “tension is squeezed out of the body.” Breathing creates more space in the spine, so that the vertebrae are less pressed together. The ‘auxiliary breathing muscles’ are located around the mind. If you constantly breathe too fast and too high, these muscles become overloaded and start to hurt. Controlling the breath can therefore ensure that these muscles get rest and can relax. Insomnia Poor sleep mainly comes from the inability to relax. Partly because of the breathing, your brain is constantly alert and thinking. Breathing techniques help you calm your brain and find more peace when you go to sleep. Stress Managing stress is not the main goal of yoga. It is a very beneficial side effect to relax and unstress. Sense of satisfaction By getting in touch more with

yourself, pressing the pause button from your hectic life, you get more time to reflect on the world around you. Nature, the animals, the people, yourself. Everything continues. Meditation Meditation is not necessary, but it is recommended. It is not sitting still for hours in the lotus position, in a room full of herbal incense. Meditation is the big trend in the health industry. People are starting to realize that they not only need to keep their bodies fit and healthy, but also their minds. This can be done through meditation. Daily routine It is better to create a daily routine. It’s better to spend 15 minutes every day than just a few hours once a week. It is important that yoga becomes part of your life. Don’t think of it as a sport that you go to a few times a week, but as a lifestyle. Los MoLinos de La PLana Pedro Angeles Editor Centuries ago Xàbia’s economy was based on agriculture, specifically on rainfed crops such as wheat, almond trees, vines, olive trees and carob trees. Wheat was responsible for the development of the 11 windmills, aligned from southwest to northwest at about 190 metres above sea level in the Flat Sant Jeroni.

In Medieval times Jávea grew wheat hence the need for windmills to grind the grain. They started with just one mill to service the small population, but as the town grew, more mills were added.

The windmills of La Plana are shaped like large cylinders approximately seven meters high and six meters in diameter. They consist of two floors: a warehouse, and the upper floor was where the wheat was ground. There used to be an intermediate room, the miller’s room. The upper level was supported by a rough vault that housed the wood mechanisms that moved the stone grinding wheels and supported the blades. The mills gradually ceased to function as a consequence of industrialization, the greater importance of the raisin trade and the abandonment of wheat cultivation in the region. Today the stone mill towers without roof or blades exist as a memory of old days.

Guardians In his book “La Plana, Terra del llebeig”, author Ferran Zurriaga i Agustí describes the mills as “the guardians of La Plana”. They took advantage of the Llebeig winds and were built by the inhabitants of les Coves Santes, who also founded the Monastery of La Plana. The mills were last operated in 1911. Some of the mills are privately owned or even inhabited. One of them was well restored and has blades. It even has a small garden on two levels. Public or private, all are protected, controlled and subject to regulations since they are assets of cultural interest. Molí de la Safranera The Molino de la Azafranera is separated from the mills of La Plana, that is, it is not part of this set. It is also a windmill, but it is located in the Frechinal neighbourhood. It dates from 1850, and is much lower than the Molinos de La Plana, only 19 meters above sea level. It is very close to the Gorgos riverbed. It is privately owned and surrounded by a property fence.

Breathtaking hiking routes If you want to do an easy excursion, there is one route marked between the recreational area of Cap de Sant Antoni and the mills. Or you can also take the much more demanding itinerary, which goes from the port of Jávea to the top of Montgó passing by the mills of La Plana enjoying great views of the bay of Jávea. Enjoy a mixture of road and rocky path. The route climbs steeply up to the heights of La Plana on which the windmills were built to capitalise on the Llebeig wind which blows across the flat plain. After enjoying the views from the windmills, the route descends using a little-used wide path which affords great views of the hulk of Montgó and the hill of Santa Llúcia before rejoining the tarmac to pass through the urbanisation of Puchol to return to the start.

How to get there by road Take the CV-736 road from Jávea in the direction of Dénia and turn right onto the CV7362 (the Cap de Sant Antoni road). And turn right again onto Camí de les Pedres. Parking drops you about 200 meters from the mills.

When visiting the mills you must look for the curious ancient signs made by stonecutters or secret societies of stone workers.

He felt that the French actress should see these inspiring portraits. From the 50s through the 70s Brigitte Bardot was a wildly popular and stunningly beautiful actress. Today she is well in her 80s and lives secluded in her villa just outside Saint-Tropez. So the art fan wrote a sweet letter to the actress and included photos of the paintings. He promptly received a letter back in which Brigitte Bardot praised the paintings. With each painting she wrote her findings in her beautiful large handwriting.
