How many hams are there? Let’s see, the ham comes from old, from the Romans. The elaboration processes in Spain are multiple, but the most common distinction is between serrano ham and Iberian ham. Serrano ham comes from a white pig (which is not Iberian) of Duroc, Landrace, Pietrain or Large White. Their diet is based on feed and the result is lean and pink meat, with less fat and more salt. There are two denominations of origin (Jamón de Teruel and Jamón de Trévelez) and three qualities depending on their cure: from Bodega (9-12 months of cure), Reserva (12-15 months) and Gran Reserva (more than 15 months) . In Gargallo they have their own dryer, in Venta del Aire de Albentosa (Teruel), where they produce about 100,000 pieces per year. “It is important natural drying, with the winds, which have the aroma of the trees in the area, the notes of pine,” explains Raul.

For its part, the Iberian ham comes from the Iberian breed, which is exclusive to Spain, and even has a genealogical record (Aeceriber). It feeds on natural feed with cereals and, during the montanera in the pasture (from October to March), also eats many acorns. “The taste of ham is what the pig has eaten in its last three months of life,” he tells us, and hence we talk about an intense and bright product, very red and veined. A symbol of prestige in the world. four designations of origin: DO Extremadura; DO Huelva; DO de Los Pedroches and DO Guijuelo Since 2014, the regulations classify them in black, red, green and white labels depending on race and type of food.

¿Cuántos jamones hay? A ver, el jamón viene de antiguo, de los romanos. Los procesos de elaboración en España son múltiples, pero la distinción más habitual es entre jamón serrano y jamón ibérico. El jamón serrano proviene de un cerdo blanco (que no es ibérico) de raza Duroc, Landrace, Pietrain o Large White. Su alimentación se produce a base de piensos y el resultado es una carne magra y rosada, con menos grasa y más sal. Existen dos denominaciones de origen (Jamón de Teruel y Jamón de Trévelez) y tres calidades en función de su curación: de Bodega (9-12 meses de curación), Reserva (12-15 meses) y Gran Reserva (más de 15 meses). En Gargallo cuentan con un secadero propio, en Venta del Aire de Albentosa (Teruel), donde producen unas 100.000 piezas anuales. “Es importante el secado natural, con los vientos, que tienen el aroma de los árboles de la zona, las notas del pino”, explica Raúl.

Por su parte, el jamón ibérico procede de la raza ibérica, que es exclusiva de España, y hasta tiene un registro genealógico (Aeceriber). Se alimenta de piensos naturales con cereales y, durante la montanera en la dehesa (de octubre a marzo), también come muchas bellotas. “El sabor del jamón es lo que el cerdo ha comido en sus tres últimos meses de vida”, nos cuenta, y de ahí que hablemos de un producto intenso y brillante, muy rojo y veteado. Un símbolo de prestigio en el mundo. Existen cuatro denominaciones de origen: D.O. Extremadura; D.O. Huelva; D.O. de Los Pedroches y D.O. Guijuelo. Desde 2014, la normativa los clasifica en etiqueta negra, roja, verde y blanca dependiendo de la raza y el tipo de alimentación.

1,5 kg rabbit, chopped 2 large onions, sliced 10 cloves chopped garlic 2 tablespoons sweet paprika 1 tablespoon hot paprika 5 red bell peppers, chopped 2 chopped tomatoes 1 handful olives 2 cups red Rioja wine 400 g pancetta 1 tablespoon chopped fresh rosemary 1/2 cup chopped fresh parsley 1/4 cup olive oil Salt and black pepper

• Chop the veggies. • Pour 3 tablespoons of olive oil in a heavy pot with lid. Heat over medium-high heat. Brown the rabbit meat on all sides. Do not overcrowd the pot. Take the time to do this right. Add more oil if needed. Set the meat aside in a bowl when browned. • In the same pot cook the onions until they begin to brown, then add the garlic and the rabbit until fragrant. Add some salt. Pour in the Rioja wine and turn the heat up until the wine is half gone. • Turn the heat to medium and add tomatoes, bell peppers, olives, spices and herbs (except the parsley). Stir well. The level of liquid should be about 2/3 the way up the sides of the meat. If it is low, add some stock. • Cover and let the stew simmer for about 90 minutes. Add salt, black pepper and parsley. • Serve with brown bread or patatas bravas, a cold salad, and drink the Rioja wine. Don’t forget a lively conversation.

*Fried anchovies with garlic sauce

INGREDIENTS (for 4 persons) • • • •

600 g fresh anchovies cleaned and gutted 220 g flour Frying oil (coconut, red palm...) 2 lemons, cut in quarters

For the garlic sauce: • 250 g yogurt • 2 tablespoons of mayonnaise • Fresh minced dill • 3 tablespoons lemon juice • 4 cloves of garlic chopped • 1 onion chopped • Sea salt • Black pepper

METHOD (15 minutes) First prepare the sauce by putting all ingredients in a small bowl and stir them. Decorate with dill. Then put the flour in a large bowl. Throw the anchovies in and coat them with the flour using your hands. Be careful not to damage them too much. Fry the flour coated anchovies in the frying oil for only 2 minutes. Serve with the garlic sauce, lemon quarters and skewers. Enjoy with a good glass of Spanish white wine or cava. Share with people you love.

INGREDIENTS (for 16 muffins) • • • • • • •

130 g sugar 4 eggs (room temperature) 100 g butter Zest from 1 lemon 1 tablespoon milk (room temperature) 250 g flour 1 tablespoon baking powder

METHOD (15 minutes) Preheat the oven (180°C). Put the eggs in a large bowl. Beat with 100 g sugar until the mixture is light and fluffy. In a small saucepan, melt the butter over low heat (no bubbling). While beating the egg mixture, slowly add the melted butter, zest and milk. In a separate bowl, whisk together the flour and baking powder. While stirring the egg mixture, add the flour mixture into a thick batter. Scoop the batter into cupcake liners filling them halfway. The batter will more than double in size when baked. Sprinkle some sugar on top of each Magdalena. Place in the oven 180°C for 18 to 20 minutes until they are golden. Great dessert from a little girl named Magdalena who served her muffins to pilgrims on their way to Santiago de Compostela.

Given today’s Spanish dominance in MotoGP it is hard to believe that it is only fairly recently that a Spaniard for the first time won the World Championship. Yet on Saturday, June 27, 1992 Àlex Crivillé’s victory at the Dutch circuit marked a significant day in the history of Spanish riders in the sport. Àlex Crivillé is Spain’s first ever GP winner and World Champion. By the early 1990s Spain had produced many World Champions, all in the smaller classes. Ángel Nieto, Ricardo Tormo, Sito Pons, Jorge Martínez ‘Aspar’, Manuel Herreros and Crivillé himself had all given Spain a taste of success across the 50cc, 80cc, 125cc and 250cc categories but never in the premier class.

Crivillé’s victory at Assen (The Netherlands) in ‘92 came in his first season in the 500c class and was Spain’s first success at the very highest level, but he had to wait a few more years before he became a consistent winner. Àlex Crivillé said: “It was an incredible fight, right to the end. I still remember the last lap. I almost couldn’t believe it when I’d won. The first victory for a Spanish rider in the premier class. It was just the best feeling ever.” Then, in 1999, after already finishing runner-up to the dominant Mick Doohan (Australia) a couple of

seasons earlier, he put a strong campaign together and took the title to become his nation’s first-ever 500cc World Champion. LONG SEASON The Sierra Nevada is a mountain range in southern Spain in the province of Granada. Sierra Nevada is Europe’s most southerly ski resort. The ski season starts in November and ends late May or even early June depending on snowfall. Combine great skiing with city visits and beach trips. 106 KM AND 124 RUNS The Sierra Nevada Ski Resort is located on the slopes of the Pico de Veleta, Spain’s third-highest peak, located just 32 km or a 30 minutes drive from the historic city of Granada. It offers over 106 kilometres of skiable routes and has 124 runs suitable for all levels of skiing and snowboarding. 19 easy green runs, 7 black , 41 blue and 50 red runs. SNOW, SUN & FUN The ski slopes in Sierra Nevada 54

are excellent for skiing. The Sierra Nevada offers spectacular views. On a clear day the views can stretch to the northern coast of Africa. Enjoy nature and skiing all day at affordable prices. SNOWBOARDING PARK See the action at the Superparque Sulayr, the specialised snowboarding park with a 165 metre-long, six metre-high half pipe (the biggest in Spain) and medium and advanced difďŹ culty areas covering pipes and jumps.

NIGHT SKIING & PARASKIING The resort also offers night skiing from Thursday to Sunday and a children’s snow park. Adrenaline junkies should consider paraskiing, which involves paragliding with an instructor over the Sierra Nevada.

In the beginning of this year, 22-yearold Dutch professional football player Frenkie de Jong agreed to switch from Ajax to Barça for a transfer of 75 million euros. Barça president Josep Maria Bartomeu played a key role in pushing the deal over the line. PSG, Manchester City and Juventus did nearly everything to sign Frenkie. But Barcelona had always been the first option, their style of football, their DNA. Tears of happiness Hasan Cetinkaya, one of Frenkie de Jong’s agents said in an interview: “Barça was under huge pressure to get a deal done. They were so relieved that sporting director Pep Segura began to cry when the documents were signed. I got a little emotional myself. There was a hug, champagne and a good dinner in a great restaurant in the mountains. We drank the best wine in Spain, ate a fantastic steak and everyone was happy.” Since then Frenkie de Jong has continued to rise, and it is hard to see where his ascent will stop. A symbol of the Dutch national team’s bright future, the deep-lying central midfielder was handpicked by Barcelona as their long66

term replacement for Sergio Busquets. He and close friend Mattijs De Ligt were the brightest stars as Ajax returned to the big stage with a bang last season, proving that the Amsterdam club is still at the forefront player development. Right man on the right place There has been a lot of talk about Barcelona’s identity crisis over the past few years. In Frenkie de Jong, though, Barça has a player who can and will preserve the philosophy of the club. Frenkie de Jong is showing the maturity needed to fulfil his immense potential. De Jong is quiet, unassuming and humble, with the right mentality to succeed. The biggest worry for Barcelona in the years to come will be what will happen when Messi retires. It is impossible to replace the greatest footballer ever, but that doesn’t need to lead to disaster. Rather than buying players who feed the desire for instant gratification, Barça tries to find the right players to fit into their ideology. In Frenkie, Barça has found one. And if they are patient, they will reap the benefits for many years to come.

MY GIRLFRIEND FROM THE PAST The first time when I saw her, I think I had the age of seventeen/eighteen years old. It was in the summer, because there was a big screen with the world Champions of football on the other side of the square. This is Dave.’ She said. ‘Maybe Dave wants to walk with you through the park.’ The father Said. I took the handles from the wheelchair and pushed the wheels over the grass. She hardly weighed anything anymore. She was thinner than the wings of the butterflies she had once released into my belly. ‘That’s quit a shock? She asks. ‘Yes we live on the same planet, but in a different world. How much do you weigh?’ ‘Only people who still want to know how much they weigh are still on the scales, but I am very thin. hen we say Flamenco, we are talking about the song, the dance, and the guitar. Although many of the details of the development of flamenco are lost in history, it is certain that it originated in Andalusia. Many Andalusians say that it is their sacred duty to pass on this art to their descendants. Flamenco involves handclapping, foot stomping, and shouts of encouragement. The handclapping or “palmas” is an art itself. It is not easy, and the palmeros will weave intricate rhythms around the bases of the song, and in the “tablaos” this is used in conjunction with the zapateado (tap dance style). At some time in history the dance was forbidden. Stories spread of

these strange people performing their wild and erotic dances. Around the 1970’s the Spanish dictator Francisco Franco adopted Flamenco as a national dance. Flamenco became a key component in the government’s plan to attract more tourists to Spain. And it worked. Gaudí is probably the best known and most influential modernist architect in Spain. Gaudí spent most of his life in Barcelona and the city shows the largest concentration of his works in the world. His style is unique, artistic and authentic. Gaudí´s ideas influenced the architecture of a whole generation. Sagrada Familia Of the most visited attractions in Barcelona, half are buildings by Gaudí. The most famous Gaudí building in Barcelona is the temple Sagrada Família. The temple is still under construction and completion is expected in 2026. La Sagrada Familia is perhaps the best known structure of Catalan Modernisme, drawing over three million visitors annually. Gaudí worked on the project until his death in 1926. Cas Milà (La Padera), Provença 261-265, Barcelona We took a guide and visited Casa Milà with its undulating façade and surrealist sculptural roof. it worth it. The building appears more organic than artificial, as if it were carved straight from the p Casa Milà (La Padera) ground. Known as La Pedera, the building was inspired by the Modernista movement, Spain’s version of Art Nouveau. This modernist apartment building is divided into nine levels and surrounds two interior courtyards, making for a figure-eight shape in plan. On the roof is the famous sculpture terrace. Practically, it houses skylights, emergency stairs, fans, and chimneys, but each function’s envelope takes on an autonomously sculptural quality which has become a part of the building itself. Last September, after the dry summer, a NASA satellite spotted an ancient stone monument that has been submerged underwater for half a century. NASA published two photographs of the Valdecañas Reservoir. The photos were captured by the Landsat 8 satellite. The first image shows the reservoir at high water levels in the summer of 2013.

The second and recent photo of last July shows low water levels after this summer’s drought. The picture reveals the stone monument (or megalith) known as the Dolmen of Guadalperal.

England’s Stonehenge, this megalithic monument is arranged in a circle-like pattern. Its purpose isn’t entirely clear, but Angel Castaño, a member of Raíces de Peralêda, the group dedicated to the preservation of the site, thinks it was a religious site and a trading hub.

The monument has been submerged underwater since 1963, when the Spanish government under Franco built the reservoir that brought fresh water and hydroelectricity to underdeveloped regions in Spain.

Castaño says that this is a good time to relocate the site to preserve the stones. It will also establish a new tourist attraction for the region, where few come to visit.

Fietstocht een ‘rondje’ Spanje: 3500 km ‘sola’

Eind mei ben ik gestart vanuit de Costa Blanca, van daaruit naar de bergen landinwaarts. Vijf fietstassen 40 kilo bagage ook vanwege kampeeruitrusting. Richting Granada en de Sierra Nevada over ‘via verdes’en ruta Don Quijote,en Andalusia-ruta. De uitgestorvenheid van de binnenlanden en de natuur van Spanje werd al snel duidelijk. Hele dagen alleen geen fietser of wandelaar kom je tegen, ’wild’ kamperen was dus vrij voor de hand liggend. Ik was uitgerust met outdoorhangmat en tarp; fijn gevoel omdat je omgeving kunt scannen. Voor een aantal steden een dag de tijd genomen om de bezienswaardigheden te bekijken: Granada, Cordoba en Salamanca. Daarnaast had ik een deadline om over en in de Picos D’Europe te komen. Daar zou na bijna 5 weken fietsen een vriendin tegenkomen om samen een tocht te voet te maken van 11 dagen. Een dag was ik verloren doordat ik in een onherbergzaam gebied totaal ‘lost ‘was. Alle 3 de navi-systemen helemaal in de war, ook googlemaps gaf hier paadjes die niet bestonden of ‘dood ‘liepen. Na 10 uur dolen van kastje na de muur, uitgedroogd, toch een uitweg gevonden, 98

was ik ’s avonds weer op de plek waar ik die ochtend was begonnen. De komst van mijn kinderen in Spanje bepaalden de volgende deadline; 15 juli moest ik terug zijn op mijn startpunt. Deze gegevens zorgden ervoor dat ik met een gemiddelde van 100 km per dag het rondje moest afleggen. Hoogteverschillen waren er natuurlijk ook elke dag, zo vlak als Nederland kom je in Spanje niet tegen. De wegen verschilden van B-wegen, via verdes, fietspaden, tot onverharde voetpaden en bergpaadjes. Bij het zien van de witte toppen van de Sierra Nevada wilde ik graag even met mijn voeten in de sneeuw staan. Daarna richting Cordoba en de oversteek naar de Extramadura. De meest verlaten, uitgestrekte, droge streek van Spanje (Ruta plata). Via de steden Zafra, Merida, Caraces, Salamanca en Zamora, van zuid naar noord gefietst. Prachtige dorpen ook gepasseerd waar je werkelijk in de middeleeuwen waant, verlaten dorpen en grote uitgestrekte gebieden ertussen. Zoals ik me verwonderde over wat ik tegen kwam en vooral soms ook niet tegen kwam, verwonderde men zich natuurlijk over die vrouw op die ‘rode stier’ al-


leen met haar hele hebben en houwe. Zo was er een toevallige ontmoeting met José Rojas, Spaans para-olympisch fietskampioen die toch wel even wilde weten wat ik aan het doen was. Na deze leuke onderbreking naar Burgos gefietst en vandaaruit vis de El Cid ruta naar Valencia en terug naar Benissa in de Costa Blanca. Dit was overigens nog ruim 1200km. De keuze om deze tocht alleen te maken was overigens een hele bewuste. Natuurlijk ben ik vrij avontuurlijk en sportief ingesteld (met een sportacademie achtergrond ken je je fysieke en mentale veerkracht wel). Ik vond het mooi om een langere periode los te zijn van alles en te vertrouwen op mijn eigen intuïtie, mijn eigen gezonde verstand, mijn fysieke kracht en mijn eigen beslissingen te nemen, totaal vrij zijn. Alleen zijn maar je niet eenzaam voelen en genieten van al het ‘moois en de natuur’, leuke toevallige ontmoetingen te hebben en Spaans te studeren… Grappig is dat ik op een gegeven moment kruizen ben gaan fotograferen, niet op kerken maar in de natuur en niet op voor de hand liggende plaatsen. Symbool: kruispunt in je leven, keuzemogelijkheden, ontmoetingen… De meest gehoorde opmerking was wel: ’Dat je dat durft alleen’, zelfs mijn zonen die wel iets van mij gewend zijn; ‘Daar ga je toch niet slapen’. Mijn motto was gerelateerd aan het liedje van Veldhuis en Kemper: ‘Ravijn’; de mooiste bloemen staan aan het ravijn om die te kunnen plukken moet je durven bang te zijn. Op naar de volgende uitdaging ….in het kader van je moet het NU doen. Start your day in Sevilla in the historic centre, at the Palacio de las Duenas (opens at 10 AM), home of the Dukes of Alba until the 19th century and featuring a massive collection of art and colourful gardens. Check out the Convento de Espiritu Santo next door. The baroque church is worth spending a few minutes in and it’s open 24 hours a day. Head south on Calle Dona Maria Coronel. This will take you 10 minutes to reach Plaza Cristo de Burgos. There you visit the museum Casa de Pilatos with its various patios and gardens. Leave the palace and head west on Calle Aguilas. After 5 minutes, at the fork, take the left route and walk south for 2 minutes until you see the Flamenco Museum (dance shows are to be booked in advance). After leaving the museum, head to The Royal Alcazar 10 minutes away. On the way, stop for lunch. Try the serranito, the city’s signature sandwich with chicken or pork, cured ham, fried green pepper, sliced tomato and alioli sauce. 106

The Royal Alcazar of Seville is one of the top Seville attractions and is impossible to miss. The palace and its grounds cover an entire city block. The various courtyards and rooms on the lower floors are mostly open to the public, but the upper floors require an extra ticket and tighter security since the palace is still used by the royal family. Tip: to avoid long waiting lines we recommend purchasing your Alcazar Skip-the-Line Guided Tour online. Walk down to the river and enjoy the view. After a trip to Toro del Oro, the golden watchtower, you walk north from the tower for 10 minutes, passing the royal palace on your right, to reach Catedral de Sevilla. The cathedral began as a mosque in the twelfth century and was Christianized. One of the most interesting features of the cathedral is the tomb of Christopher Columbus, one of the first European explorers to reach the Americas. Time for dinner and relaxation in this charming neighbourhood, Barrio de Santa Cruz with its many cafes, bars, restaurants, shops and hotels.

Since I was wondering why we see these giant black bulls along the roads throughout Spain, I was surprised finding out that this icon has been around since 1956. Artist Manolo Prieto designed this majestic black bull silhouette for the Osborne company as the visual representation of their brand Veterano, a Spanish brandy. Little did the artist know that more than 60 years later the bull ended up as a national symbol. In 1957 the first bull billboard appeared. By 1964 there were more than 500 bulls scattered along the Spanish countryside. The original “Toros” were made of wood, but due to their low resistance to the climate, Osborne turned them into metal with a weight of 4,000 kilos, a height of 14 meters and an area of 116

150 m2. The construction needs 6 m3 of concrete, more than a thousand screws and 25 litres of black paint. In 1988 the new law prohibiting all alcoholic beverage advertising visible from public roads, endangered the existence of the classic Osborne bull, which had become a symbol instead of an advertisement. The court ordered the removal of all bulls which caused an unprecedented popular opposition. Due to the undeniable social importance, the cultural and artistic Toro silhouette could stay if all brand names and texts were removed. The Osborne company kept the sole and exclusive rights of use. Today the Osborne marketing department has maintained bull silhouettes, of which 90 are now scattered around the country.
