INGREDIENTS (for 6 persons)

Virgin olive oil 2 chopped onions 2 ribs celery, chopped 2 chopped carrots 2 chopped cloves of garlic 1 beef tongue (lengua de ternera) 1 bunch of parsley 2 bay leaves Black pepper Sea salt 4 tablespoons red-wine vinegar 1 tablespoon sea salt Sauce gribiche (see recipe)
METHOD
• Pour 3 tablespoons of olive oil in a pot with lid over medium-high heat. Glaze the onion for 3 minutes while stirring. • Add the celery, carrot, garlic and a splash of water and let steam for 2 minutes. • Add the tongue, parsley, bay leaves, red-wine vinegar, salt and be generous with black pepper. Pour in boiling water covering the tongue completely. • Reduce the heat and let simmer for 4 hours. Check regularly and add water keeping the tongue covered. • As a side dish you can bake some patatas bravas and prepare a cold salad. • Take the tongue out of the pot and peel the outer skin off. • Cut the tongue into thin slices and arrange on a platter. Add some of the sauce and top with fresh parsley, a splash of extra virgin olive oil and a twist of black pepper. Enjoy with friends and a glass of good Spanish red wine. EAT, DRINK &MORE

Karlos Arguiñano Urkiola is a popular Spanish TV chef. His devotion to cuisine started when he was a child. As eldest son of four siblings he helped his disabled mother in the household.

3 criadillas (bull testicles), peeled 600 g mushrooms chopped 24 green asparagus chopped 24 pipe onions chopped 3 garlic cloves cut in half Flour 3 eggs, beaten Breadcrumbs Extra virgin olive oil Salt Black pepper Parsley
Method
• In a large pan heat a splash of olive oil and bake the pipe onions, mushrooms and asparagus. Add a pinch of salt. • Cut the criadillas into slices and add salt and black pepper • In a second large pan heat 12 tablespoons of olive oil over medium heat. • Cut the garlic in half and ad to the olive oil in the pan. • Beat 3 eggs, add a pinch of salt. • Cover the criadillas with flour and put them in the beaten eggs. Then pass them through the breadcrumbs and into the frying pan. Fry them for 1 minute on each side. Drain on a plate covered with paper towels. • Serve the criadillas with the pipe onions, mushrooms and asparagus. Garnish with parsley. HEALTHY Oranges are an excellent source of vitamin C, fibre, and folate. They also contain antioxidants that help boost immunity. The region that produces the most oranges in Spain is Valencia, so much so that the region has attracted the name “The Orchard of Spain”. Valencia oranges are the most well known type of orange. In the city of Valencia, oranges are so abundant they even grow on the trees lining the streets. There are orange trees (naranjos, with an ‘o’ for the tree, as opposed to ending in an ‘a’ for the fruit), all over the city, and especially along the avenues.

But the tasty and sweet oranges we know are grown in well irrigated groves near the coastline. In the summer the air is filled with the heavy scent of orange blossom. AGUA DE VALENCIA Valencia oranges are commonly juiced and served during breakfast. The juice is also used in the local cocktail Agua de Valencia, which is a mixture of orange juice, spirits, sugar, and cava, and is traditionally poured into champagne glasses. When served fresh, the oranges are sliced and served as a dessert with a sprinkle of cinnamon. In addition to culinary uses, the blossoms of Valencia orange trees are often used in bridal bouquets as a symbol of love, and the branches are burned to flavour paella.

This famous liquor uses 43 natural ingredients, including citrus and other fruits, herbs, and spices. It can be enjoyed on its own, as a popular companion for coffee, and makes a great cocktail ingredient. 43 is derived from an ancient recipe. It dates back to around 209 B.C. when it was known as “Liqvor Mirabilis” (miracle liqueur), a favourite drink of the Carthaginians that was produced in secret when the Romans banned it. Since alcohol wasn’t distilled until the 13th century or so, it’s more likely that this was a fermented beverage similar to mead or wine that was infused with the herbs and spices. The recipe was apparently passed down through generations. In 1946, Diego Zamora and his family purchased a distillery in Cartagena, Spain along with the recipe that they would market as Licor 43. Today it is a worldwide success. The original Licor 43 liqueur has been incorporated into two additional liqueurs produced by the brand: Licor 43 Orchata and Licor 43 Baristo.

Johan Cruyff was one of the greatest players in football history. He started his career at the Dutch club Ajax. In 1973, he moved to Barcelona. Later he became highly successful as manager of Ajax and later Barcelona and remained an influential advisor. He died in 2016 and left a beautiful football philosophy. A few of his quotes: 1. Being able to juggle the ball a 1000 times doesn’t equal technique. Anyone can do that by practicing. Then you can work in the circus. Technique is passing the ball with one touch, with the right speed, at the right foot of your team mate. 2. Someone who has juggled the ball in the air during a game, after which four defenders of the opponent get the time to run back, that’s the player people think is great. I say he has to work in a circus. 3. Choose the best player for every position, and you’ll end up not with 60

1 strong 11, but with 11 strong 1’s. 4. I always threw the ball in, because then if I got the ball back, I was the only player unmarked. 5. When you play a match, it is statistically proven that players actually have the ball 3 minutes on average… So, the most important thing is: what do you do during those 87 minutes when you do not have the ball. That is what determines wether you’re a good player or not. 6. We must make sure their worst players get the ball the most. You’ll get it back in no time. 7. If you have the ball you must make the field as big as possible, and if you don’t have the ball you must make it as small as possible. 8. Players today can only shoot with their laces. I could shoot with the inside, laces, and outside of both feet. In other words, I was six times better than today’s players.

MARINALEDA WITH NO POLICE & FULL EMPLOYMENT

Marinaleda looks like any other small agricultural town in southern Spain. Orange trees, white houses, numerous bars and social clubs. But when you visit the village you will notice that the streets are named after Spanish and Latin American socialists and ideologies. A Che Guevara portrait and many communist inspired murals are tolerated throughout the village that calls itself “Una Utopia Hacia la Paz” (A Utopia for Peace). Since 1980 former mayor Juan Manuel Sanchez-Gordillo transformed this small rural village into a self-contained communist utopia in his fight against unemployment and poverty. Five years after the death of Spain’s military dictator, General Franco, mayor Sanchez-Gordillo saw no other option to 66

save his community than to occupy in an illegal way some agricultural farmland to feed his community. After years of numerous arrests and failing evictions the actual owner of the land gifted the land to the village. Marinaleda has no police force. Despite this the crime rate is low. People are offered mortgage-free houses on the condition they don’t sell them. Unemployment has been almost eradicated. As the 2008 financial crisis developed, Sanchez-Gordillo lead his Pueblo on several raids of national supermarket chains in neighbouring towns. Several Marinaledans were arrested for stealing and distributing food amongst the poor villagers. This gained Marinaleda national and international notoriety, and earned the former mayor the nickname of the “Spanish Robin Hood.” EAT, DRINK &MORE

Cicada means “buzzer” and Orni possibly comes from Fraxinus ornus, the flowering plant where this cicada often lays its eggs. Cicada Orni is the most common cicada in Spain.

CICAdAs Are hArMLess And UseFUL The adult Cicada Orni reaches up to 25mm in length, with a wingspan of about 70mm. The cryptic coloration of the body varies from brown to gray. Cicadas can be encountered in summer feeding on sap from plants. They look like big, fat and lazy flies. Never kill them but put them back in the garden as
they are easy to catch. Cicadas don’t bite or sting. They are not harmful to pets, even when eaten. They don’t spread disease and are not venomous. They are good food to birds and other animals like squirrels. In some cultures cicadas are a delicacy to people too. sCIenCe Recently, cicadas were discovered to have microscopic structures on their wings that destroy bacteria. This discovery is being used to inspire medical advancements, such as antibacterial cornea replacements. Amazing. the MALes Are the sIngers Only males produce their well-known calling song, a clicking sound caused by the
contraction and relaxation of abdominal membranes (tymbal). This song has the function of sexual attraction for females. LoVe Is In the AIr When the males are approached by the females, the courtship takes place, in which cicadas repeatedly hug and touch each other with their legs. At the end of this process they mate in the same place. short AdULt LIFe The adult cicadas lay their eggs in the summer, which will hatch in late summer or autumn. While their life span as adults lasts only about a month and a half for breeding, the larvae will live for several years underground, feeding on juices of plant roots. The purpose of adult cicadas is to mate and die.

You never used to go along.’ ‘Yes, but I did love her.’ ‘Okay, you are in the boat and then?’ ‘We realized that we could only be together if we never went ashore again. So there we went. On the way to the end of the sea.’

Today’s El Caminito del Rey is a hiking route stretching nearly 7.7km. It takes you three to four hours to complete it. It offers stunning views and beautiful flora and fauna.

The path is open every day of the week except Mondays. Buy your tickets in advance and wear suitable clothing.
Over the years, the path became popular by hikers. But deterioration and lack of maintenance made it too dangerous to walk after five hikers fell to their death.
El Caminito del Rey was originally built by El Chorro Hydroelectric Company to get maintenance access to their two waterfalls. The path was made by sailors from Malaga who were used to hanging from the ropes and masts of their boats. King Alfonso XIII inaugurated the path that came 78

Soon local villagers and children began using the path, too, as it was a faster route to school and the neighbouring communities than walking around the mountain.
In 2015 the path reopened to the public and El Caminito del Rey became a major international tourist attraction for over 300,000 visitors every year. The restoration won the Europa Nostra Award for heritage conservation.

The 2020 Vuelta a EspaĂąa starts on foreign soil for the fourth time as the Dutch city of Utrecht becomes the first to host stages of all three Grand

Tours. It will also be the Vuelta’s second start in the Netherlands after the Dutch village of Assen hosted the Salidia Oficial in 2009.
The action gets underway with a 23.7 km team time trial in Utrecht on the evening of Friday, August 14 and the opening weekend will see two road stages on Dutch roads before the caravan decamps to Spain for the remainder of the race. Madrid will be the site of the final stage on September 6. Primoz Roglic (Jumbo-Visma) was an emphatic winner of the 2019
Vuelta. The Slovenian seized the red jersey with a dominant display in the Pau time trial, before defending his advantage in the mountains and in the echelons of the final week. Alejandro Valverde (Movistar) placed second, while Roglic’s fellow Slovenian Tadej Pogacar (UAE Team Emirates) rounded out the podium after winning a hattrick of mountain stages in his maiden Grand Tour.

You’ll also find big schools of giant grouper and barracuda swimming alongside historical wrecks.

Longest underwater cave in Europe, Sa Gleda cave, which is ideal for tek divers. ■ COLUMBRETES ISLANDS Major natural marine reserve protected against fishing. Giant lobsters and beautiful red coral, as well as huge schools of fish. ■ COSTA BRAVA & PYRENEES Dive sites directly accessible from the shore or by boat. Some of the most famous areas of this coast are the Medes Islands (also a nature marine reserve), seven little islands where you can find underwater caves and tunnels, gorgonian coral, and marine life. Up to the north, there’s the Catalan Pyrenees, a mountain range with peaks over 3,000 metres. In this area there are numerous lakes offering ice diving in winter.
■ NORTH OF SPAIN While the Cantabrian Sea is often rough and the temperature is cooler than the Mediterranean, it has excellent dive sites with sometimes blue sharks or moonfish. It is recommended to go with a dive centre that knows the best spots to explore. ■ CABO DE PALOS Diving among wrecks and great sea life like groupers, gorgonian coral, and moonfish. The famous Syrian ocean liner, ‘El Carbonero’ (SS Thordisa) or the ‘Naranjito’ wreck are extremely popular and will offer a new perspective on the underwater world of Spain.

The workshop takes place in Simone’s house: Casa Colora (1 km from the sea). In May and September there will be painting workshops in small groups, for both beginners and advanced. You learn to “feel free” and work with several materials. During your stay you will be sleeping in a cosy room. On beautiful twisted roads, only 30 minutes away from the Costa Blanca, you reach Guadalest. It is a pretty and historic small town with spectacular views. Guadalest is one of the most popular places to visit at the Costa Blanca. Castell de Guadalest is a Moors castle and can only be accessed by walking through a 15 foot long tunnel carved out of the rock. This is known as the Portal de San Jose. No wonder the castle was so secure. When you get through the tunnel you see the old village houses and it feels like you have entered an ancient time. Walk the little streets and squares, visit the house of the Orduna family, the school and the jailhouse. 118

Enjoy the breath-taking views of the valley with the dam and reservoir. Visit the typical white bell tower of Penon de la Alcala. The Museo de Saleros y Pimenteros (Salt and Pepper Shaker Museum) has more than 20.000 salt and pepper shakers from all over the world. Take your time to visit Guadalest and take a break for a drink or a long leisurely lunch. There are a couple of restaurants just before Guadalest which have lovely views. In the actual town there are many restaurants. About 7 km before Guadalest there is the Museo Vehiculos Historicos Valle De Guadalest, a small museum packed with motorbikes. Don Quixote is a 15th century novel by Miguel de Cervantes. Originally conceived as a parody of the chivalric romances that had long been in literary vogue, it describes realistically what befalls an aging knight who, his head bemused by reading such romances, sets out on his old horse Rocinante, with his pragmatic squire, Sancho Panza, to seek adventure. The work opens in a village of La Mancha, Spain, where a country gentleman’s infatuation with books of chivalry leads him to decide to become a knight-errant, and he assumes the name Don Quixote. He finds an antique suit of armour and attaches a visor made of pasteboard to an old helmet. He then declares that his old horse is the noble steed Rocinante. According to Don Quixote, a knight-errant also needs a lady to love, and he selects a peasant girl from a nearby town, christening her Dulcinea del Toboso. Thus accoutred, he heads out to perform deeds of heroism in her 120

name. He arrives at an inn, which he believes is a castle, and insists that the innkeeper knight him. After being told that he must carry money and extra clothes, Don Quixote decides to go home. On his way, he picks a fight with a group of merchants, and they beat him. When he recovers, he persuades the peasant Sancho Panza to act as his squire with the promise that Sancho will one day get an island to rule. In their first adventure, Don Quixote mistakes a field of windmills for giants and attempts to fight them but finally concludes that a magician must have turned the giants into windmills. Don Quixote acquires a metal washbasin from a barber, which he believes is a helmet once worn by a famous knight. In addition to spawning countless works of critical discussion, Don Quixote inspired artists in every medium. Notable adaptations included a classic ballet, a musical and a film (1972) starring Peter O’Toole and Sophia Loren.
