Slow-Cooker Baked Potatoes
INGREDIENTS:

6 medium russet potatoes 3 tablespoons butter, softened 3 garlic cloves, minced 1 cup water Salt and pepper to taste Optional: Sour cream, butter, crumbled bacon, minced chives, guacamole, shredded cheddar cheese and minced fresh cilantro
INSTRUCTIONS
Scrub potatoes; pierce each several times with a fork. In a small bowl, mix butter and garlic. Rub potatoes with butter mixture. Wrap each tightly with a piece of foil. Pour water into a 6-qt. slow cooker; add potatoes. Cook, covered, on low 8-10 hours or until tender. Season and top as desired.
Kitchen tips
Serve the potatoes right in the foil packets to get the most out of the garlic butter. This is an easy way to make potatoes for a baked potato bar at the office.
Health Tip: Skip the highcalorie sour cream and try a dollop of fat-free Greek yogurt instead. (Don’t forget to add a sprinkle of chives.)

Super Simple Scalloped Potatoes
INGREDIENTS
3 cups heavy whipping cream 1-1/2 teaspoons salt 1/2 teaspoon pepper 1 1 teaspoon minced fresh thyme, optional 2 3 pounds russet potatoes, thinly sliced (about 10 cups) Minced fresh parsley, optional
INSTRUCTIONS
Preheat oven to 350°. In a large bowl, combine cream, salt, pepper and, if desired, thyme. Arrange potatoes in a greased 13x9-in. baking dish. Pour cream mixture over top. Bake, uncovered, until potatoes are tender and top is lightly browned, 45-55 minutes. Let stand 10 minutes before serving. If desired, sprinkle with parsley.

Mashed Potato Truffles
INGREDIENTS:
1/2 cup mashed potatoes (cold) 1 cup dark chocolate chips 1/2 teaspoon vanilla 1/2 cup of topping for rolling (cocoa powder, coconut flakes, powdered sugar or finely chopped nuts)
INSTRUCTIONS:
In a small bowl, add the chocolate chips. Melt them in the microwave at 50% power, or in a double boiler. Melt slowly and stir often. When they have melted entirely, stir in the mashed potatoes. Add the vanilla. Stir, stir, stir. And stir til you can't stir no more. Place the mixture in the fridge to firm up for 30 minutes. Pour your rolling mixture(s) in little bowls and have them ready. Take 1 tablespoonsized hunks and roll between the palms of your hands. Roll in desired topping, then place on a baking sheet and refrigerate until firm.

INGREDIENTS:
FOR THE CRUST 2 sleeves graham crackers 1/4 c. granulated sugar 1 1 tsp. kosher salt 2 10 tbsp. melted butter 3 FOR THE FILLING 1 (15-oz.) can sweet potato puree 3 tbsp. granulated sugar 3 large eggs 1 tsp. pure vanilla extract 1 tsp. ground cinnamon 1 tsp. ground ginger 1 1/2 c. heavy cream FOR TOPPING mini marshmallows ⅓ cup chopped pecans
INSTRUCTIONS
Make crust: Preheat oven to 350°. Line an 8"-x-8" baking pan with parchment paper. In a food processor, pulse graham crackers, sugar, and salt until fine crumbs. Add melted butter and pulse until texture resembles wet sand. Press into pan and bake until golden, 10 minutes. Make filling: Mix together all filling ingredients until evenly combined. Add filling to crust and bake until set (no longer jiggly in the middle), 48 to 50 minutes. Let cool slightly. Heat broiler. Cover top of bars with mini marshmallows and broil until golden, 1 to 2 minutes. Let cool completely before slicing and and serving.

Everyone has an inner voice, i.e. the way you talk to yourself in your head or out loud. But sometimes that voice can be cruel—even though it’s ultimately dictated by you. It can tell you that you’re a failure or convince you to stress about something that you have absolutely no control over. Most people have a loud inner critic which makes their life more stressful.Learning to have a reassuring and soothing inner voice can make a big difference in improving your mental health. Obviously that’s easier said than done, but here’s a good place to start: When your inner voice is giving you really crappy freedback and advice, stop and consider how you would talk to your best friend in this situation. WEAR YOUR MASK IN PUBLIC
To slow the spread of COVID-19, the Ministry of Health and Child Care (MOHCC) recommends mask-wearing when you're out in public, at events or gatherings, or pretty much anywhere where you're going to be around others who don't live in your household. (Be sure to stay up to date on mask guidelines where you live, too!) Make sure to wear your mask over your nose and mouth and help any children 2 or older wear theirs, too.
