NEW STRAIN SPECIFIC GUMMIES
KYMBER WARD STAFF EDITOR The folks at Kushy Punch are back at it! We all know the power behind the original Kushy Punch taffy-like products; none of the potency is lost in their new gummies! Much like the original product line the these are small, 80mg, super potent gummies with only 7 calories per serving - perfect for those of us trying to watch our girlish figures. They are conveniently pre-cut into 4 equal doses, so you do not even have to worry about figuring out what the perfect dose is. The company (and I) suggests on the packaging, that patients should begin with a ¼ of the candy at a time and adjust as they become familiar with the effects. The products come in shiny packaging and are color-coded based on the strain used: Hybrid, Sativa or Indica. Keeping in mind that I do our reviews and have built a tolerance, I took a quarter of a Raspberry Hybrid gummy in the evening before I went to sleep. After about 30 minutes, I felt the effects, but I decided to try a Cherry Indica quarter as well – this happens to be my favorite flavor. Shortly thereafter, I was in a happy and deep sleep. When I woke up, I didn’t feel like I was having an “edible hangover,” where you feel like your head is in a cloud or that you are still high – that’s always a win in my book! It was an incredibly clean high, mainly due to the fact that, Kushy Punch is infused with an organic, whole plant extract and does not use any butane or solvents. With that being said, please note there is a strong flavor
of cannabis, but it meshes well with the various flavorings and is an extremely effective medicine – so you won’t hear any complaints from me! The owner explained to me that they buy all the raw ingredients and make the candy themselves. They do not just buy candy and spray it with cannabis oil, as ‘that process never leaves the candy very potent.’ Their next product to keep an eye out for is a vegan sugar-free gummy – YUM! Kushy Punch also offers a Sativa version (and this girl loves her Sativa) so aturally, I had to try that in the morning. I thoroughly enjoyed the effects. It was a quick onset with no drowsiness. Their connection with Cannabis as a Treatment
DR. ALLEN MILLER STAFF EDITOR Studies estimate that nearly one-third of people with autism spectrum disorder also have epilepsy. However, until recently, there has been limited clinical research on the connection between these two neurological conditions (Danielsson, Gillberg, Bilstedt, Olsson, and Zaatreh 1). Autism spectrum disorder (ASD) is a range of complex neurodevelopment disorders, characterized by social impairments, communication difficulties, and restricted, repetitive, and stereotyped patterns of behavior. Autistic disorder, sometimes called autism or classical ASD, is the most severe form of ASD, while other conditions along the spectrum include a milder form known as Asperger syndrome, childhood disintegrative disorder, and pervasive developmental disorder not otherwise specified (usually referred to as PDDNOS). Although ASD varies significantly in character and severity, it occurs in all ethnic and socioeconomic groups and affects every age group. Experts estimate that 1 out of 88 children age 8 will have an ASD (Centers for Disease Control and Prevention: Morbidity and Mortality Weekly Report, March 30, 2012). Males are four times more likely to have an ASD than females. In the latest study, researchers found the brains of people with autism have inflammation response genes that are perpetually switched on (Brain study shows inflammation is a marker of autism 1). In my “Inflammation” article published in 10
Issue 14 of Edibles Magazine, I discussed the ravages of inflammation on the body process, increasing the immune response that inhibits several processes in the body that it needs to operate. There are many theories of the geniuses of both Epilepsy, and Autism, the causes have been linked to environmental factors, genetic disorder, or injury (seen in studies of veterans’ with brain injury), and a plethora of other causes. The parents and caregivers of people affected with these issues report several problems and secondary side effects from the pharmaceutical drugs recommended by their Healthcare Providers. One point that comes forward, inflammation is a resultant cause of symptomatology, regardless of the cause stimulating and sustaining the inflammatory response. CBD’s have been known to be a natural inflammatory, and are used by my patients both personally and for their children with amazing results. The story of “Charlotte’s Web” that contains high CBD rich oil has seen significant symptom relief in children and adults with severe tremors or seizures that was widely reported on CNN. In conclusion, you may not be able (with today’s diagnostic equipment) to find the specific cause of the disease. However, the after effects like inflammation can be treated effectively with CBD rich strains of Cannabis. The inflammation and secondary effects of the pharmaceuticals that are provided to treat autism and epilepsy have significant side effects which in turn, affect the mood, and retard the processes of the brain. CBD as both a preventative and a treatment for inflammation is already tested with positive results among my patients as
well as my colleague’s in the medical professions’ patients. The reason my patients moved to cannabis, as they were able to see first-hand, the results of the plethora of drugs provided by the physicians. Please do not see this as an indictment of the medical profession; the United States government has significantly restricted cannabis. With this said, we need to look to the actual clinical trials the parents are experiencing utilizing the CBD compounds. They are at this time the best source of information on the use of CBD’s and their effects on disease. My patients have been a wealth of information regarding the efficacy of some of the products on the market. With my relationship with several cancer charities, I as a physician get to see first-hand how these remarkable people use these compounds, and the great results they are experiencing. Even without a disease expression as I stated in my last article, inflammation is present daily in the body as it fights all the environmental effects, food, water that negatively affect us. JOURNEY my son cannabis.” B. LE GRAND EDITOR-IN-CHIEF You may have heard their story on Weed Wars, Weed 2 (with Sanjay Gupta), and the documentary Culture High. Jason David began treating his son Jayden with cannabidiol when he was was four years old. He obtained his first CBD tincture from Harborside dispensary in Oakland, California, and documented the first four days of treatment on the short-lived television show Weed Wars. Now five years later and Jayden is nine years old, taking his own brand of CBD medicine appropriately named “Jayden’s Juice.” We met Jason, Jayden and a dozen of other patients currently using Jayden’s Juice as their medicine for epilepsy and autism. Jayden has Dravet syndrome, also known as severe myoclonic epilepsy of infancy (SMEI). It is a type of epilepsy with seizures that are often triggered by hot temperatures or fever and often begins around six months of age. 70%-80% of patients with Dravet syndrome carry rare mutations in the sodium channel gene SCN1A, which encodes an important component of neuronal firing, creating a deficiency in preventing seizures. Approximately 90% of Dravet mutations are ‘de novo’, meaning they are not inherited from a parent. In Jayden’s case, neither of his parents carried the gene that, in extremely rare cases, can be inherited. Dravet syndrome it is characterized by cognitive impairment, behavioral disorders, and motor deficits. Behavioral deficits often include hyperactivity and impulsiveness, and in more rare cases, autisticlike behaviors. SMEI is also associated with sleep disorders including somnolence and insomnia. The seizures experienced by patients with Dravet syndrome become worse as the patient ages since the disease is not very predictable when first diagnosed. Jayden was born a normal boy. At four months old, he started having seizures and developed Dravet Syndrome. Jason describes it as a downward spiral from then on. Jayden was prescribed 12 medications, including rectal injections of Valium for his seizures. He was having grand mal seizures that lasted an hour and a half, and he would have myoclonic seizures all day long. Grand mal seizures involve a loss of consciousness and violent muscle contractions, caused by abnormal electrical activity in the brain. It is the kind of seizure most people picture when they think of seizures. Myoclonic seizures are brief shock-like jerks of a muscle or group of muscles, where the person is usually awake and able to think clearly. To control the seizures, doctors prescribed a “magic three” cocktail of pharmaceutical drugs that initially incited a honeymoon phase for a few months, but then things worsened. “We were at a life and death situation. Jayden was dying from the medications,” Jason said. In April of 2011, Jayden had not slept for a few months. Jason said, “Imagine not sleeping one day, let alone not sleeping everyday. I made a decision to make a change. God showed me a sign to give

Jason began conducting his own research on CBD, at a time when no other parents were out there talking about cannabis with children and epilepsy. The Cash Hyde Foundation was a charity he found for children with cancer, but did not find any support for Dravet syndrome patients. His research kept leading him back to the United States patent number 6,630,507, issued to The United States of America as represented by the Department of Health and Human Services (Washington, DC), issued October 7, 2003. He founde evidence that the government owns the patent to using cannabinoids as antioxidants and neuroprotectants. Not only is this proof that the Federal government knows there are medical benefits to cannabis, it is hard written proof that

medication, and they were still having brain zaps.” He used to attend support groups and Dravet Syndrome Foundation conferences around the nation. “I got kicked out of all the Dravet syndrome meetings in different states - before anyone came out with cannabis, I was treated very bad. The same people that kicked me out are trying to legalize only CBD states,” Jason said. “I feel bad for these parents, because they’re not being educated on the whole plant. The whole plant is the most important thing.There has been a fight for this plant for such a long time. They’re brainwashed to think CBD is the only thing that is good for them... That’s the biggest mistake anyone can make.” Jason believes it is not right to fight for one specific aspect of the plant., He observes parents
“He was growing it correctly with the ratios, the others ruined the plant. It’s whole plant, not hemp. Hemp isn’t for medicine, it’s like the garbage of cannabis,” Jason said.
Convinced CBD was the answer, Jason went to a dispensary to obtain CBD. The part of the story left out in Weed Wars was that he had the medicine in his possession for two weeks before he administered it to Jayden. “Everyone was scaring me. The first day I gave it to him, was the first day that he didn’t have a seizure in his life. I went back to the same dispensary, and got the same company’s CBD brand. There were no labels showing percentages, or levels, or ratios, or anything like that. I gave it to Jayden and it wasn’t working. I realized something was wrong,” he recollected.
Jason explains, “It’s not one size fits all. This plant is not half evil and half good.”
At that point in time, Jason started working with Dr. William Courtney, a world renowned doctor; known for curing cancer for an 8 month old baby with cannabis. He educated Jason on ratios and testing. Jason then had the medicine he was using tested, and found out that there was no CBD in that batch.
Prior to using cannabis oil, Jayden was having about 200 grand mal seizures a day. Jason even had trouble obtaining rectal diazepam at Walgreens because his insurance company thought he was selling it on the street. Since they have weaned him off 22 pharmaceutical drugs, and are down to the last two pharmaceuticals.
Shortly thereafter, he began further researching plant material, the flowers the plant itself, and was able to obtain a high-CBD, low-THC plant. He began asking other people to make the medicine for them. For 6 months, a company made Jayden’s medicine, and Jason even helped them onto the cover of the LA Times, which is when they told Jason they would no longer make the medicine. Jason explained, “That left me hanging; [it] left me desperate.”
Jason says he’s working on setting this project up, so he can really focus on weaning Jayden off the last two pills. “It’s hard, he needs my full attention in going through the withdrawals. He’s my number one priority,” Jason said.
As fate would have it, one day at a restaurant, Jason met a local man who had heard his story and wanted to work with him. At the time, Jason was paying $400 for ounces and $2,800 per half pound in order to make medicine, it was costly trial and error process. He received donations
It took three and a half years to get Jayden off 22 pills, and Jason says taking a 10mg pill and even shaving off just a hair of medication can causessevere withdrawal symptoms like head zaps and seizures. Benzodiazepine withdrawal syndrome can be extremely dangerous, especially for a child. Jayden never had these symptoms before, but the doctors chalked it up to his epilepsy. Jason said, “I went and talked to people on this medication, two years after being off the

He is a religious man stating, “I’ve talked to my Bishop at my church. The big thing out there with our Christian community is that everyone’s scared of it because we’re Christians. It says in the bible, ‘Use my plant, use my seeds.’ Don’t blame God for saying it’s evil. God wouldn’t do that to us.”
Cannabidiol was so successful for Jayden, Jason started weaning him off the opioid medications. CBD gets metabolized through the same liver channels as benzodiazepines. Jason found that CBD did not work during the withdrawals which included attacks, tremors, and hallucinations, so he started giving Jayden THC and THC-A.
Through their research, they found that each patient has a different reaction to different bases. Jason says they have some patients using a coconut oil extraction doing great while others do terribly with it and the same with olive oil, MCT oil, alcohol extractions, etc., using the same plant material.
“Jayden’s suffering isn’t for nothing. Jayden has saved many lives. Instead of cannabis being a last resort it can hopefully be a first resort, so people don’t have to go through what Jayden did,” Jason said optimistically.
When asked what he would do if there was no access to CBD or THC oil, he said, “If I had to use anything else I would use diet, that’s the main thing I would use.”
“Our community is blinded and very easily brainwashed from propaganda… this plant - that’s never killed anyone. This plant is so dangerous, but not killing anyone, but we use everything else including alcohol, which kills people every day. I say, ‘Try it, if it doesn’t work, then I understand.’ But what if you try it and it changes the rest of your life? What if it saves your life?”

Jason points out that people develop a tolerance and notes that adjustments must be made from time to time. He admits that while using cannabis and cannabidiol oil has made monumental improvements to Jayden’s quality of life, his life is still not perfect. Jason also explained that sometimes it is hard to pinpoint the appropriate dosing for each patient, and that it is a trial and error process.

I’m very thankful for what I do have, I could be in a much worse position if it wasn’t for Jayden.”

Wishy washy stances hinders the parent’s credibility and makes it difficult for city council members and legislature writers to take them seriously. He shared stories about other parents that say CBD did not work for their children, because they only tried one product, and now they’re turning to brain surgery. Marketing can make people believe there is only one product out there, but Jason points out there are 20,000 different strains of cannabis, thousands of ways to extract it, and hundreds of different bases. There is no “right” way, what works for one person may not work for another. “People aren’t trying different things. Our kids should not suffer. Don’t give up,” Jason said. Another story he shared was a family that turned to fenluramine/phentermine (fen-phen), after learning about one German study treating epilepsy with the popular 1980s weight loss drug. They gave up on cannabis after moving to Colorado because they had not seen the results they were hoping for with their 5 year old. Jason stated, “We experiment trial and error with chemicals, why not experiment with this plant? In thousands of years, no one has died from cannabis. On pharmaceuticals, your kids are getting worse, a quarter of a million people die a year from pharmaceutical drugs, but no one says a thing. Pharmaceuticals don’t work, so why do they keep prescribing them? I’m not anti-pharma, but some of the things we use are pretty scary. There’s good and bad in everything.” When I asked Jason what he hopes to achieve with Jayden, he said, “I‘m

Cannabis saved my son’s life and saved my whole family. When you’re child is sick and dying your whole family is dying; it brought back my son, it brought back my family.” Jason says, “Do your research. I tell doctors, ‘If

George is an epileptic patient who experienced his first seizure at 24 years old. He learned about CBD through dispensaries as a medical marijuana patient. Case has a genetic deletion syndrome and began having seizures at four months. His genetic deletion mimics MS, he has vision problems, and has epilepsy on top of everything. Katherine and Mike took him to a neurologist that started him on various pharmaceuticals. He began having more seizures and increased irritability. He started taking Jayden’s Juice at eight months. Therefore, the Hillbilly Hash Tea is bottled in 16-ounce mason jars, and they are only 160 calories per bottle and with 5 doses per jar that is only 32 calories and 18mg of THC per dose. However, this tea is really too good to only have one dose. I get about one-third through the jar and after 20 minutes I feel great. MARIJUANA USE DECLINED AMONG TEENS THIS YEAR WHILE
“MARIJUANA SAVES LIVES” DAN CAPENER STAFF EDITOR The University of Michigan’s newly released “Monitoring the Future” study, which surveys 40,000 to 50,000 students in 12th, 10th and 8th grades about their use of alcohol, legal and illegal drugs, and cigarettes, showed a slight decline from 26% to 24%, in 2014. Among high school seniors 5.8% (1 in 17),said they used marijuana almost daily, down from 6.5% in 2013. The study findings are particularly noteworthy, due to the fact, that Colorado and Washington state implemented full-scale retail marijuana markets this year, and Oregon, Alaska and Washington, D.C., voters have voted to do the same! Even synthetic chemical concoctions like K2 and Spice have fallen out of favor as 11% of 12th graders in 2011 listed themselves as users, and only 6% in 2014. Nora Volkow, Director of the National Institute on Drug Abuse, said abuse of prescription drugs also declined 2% this past year and narcotic drugs dropped to 6% for 2014. He said teens consider narcotic pain relievers like Oxycontin and Vicodin safer than illicit drugs like heroin and cocaine because doctors prescribe them. Volkow said, “A very strong and aggressive campaign about educating the public on the risk of opioid medications as it relates to overdoses and deaths has made teenagers aware that they are not so safe as they thought they were.” Cigarettes posted the sharpest drop in daily use, falling from nearly 25% of 12th graders in 1997, to about 7% in 2014. Another factor for the cigarette decline includes E-cigarettes. It is the first year the survey has asked about E-cigs, and whether students had used an e-cigarette in the past 30 days. Among 8th graders, 9% reported using an e-cigarette, while 4% reported smoking a tobacco cigarette. But with 12th graders, 16% said they used an e-cigarette compared to 7% for tobacco. In a press release the study’s author stated that, “Both alcohol and cigarette use in 2014 were at their lowest points since the study began in 1975.” Another recent survey of over 11,000 high school seniors done by the Journal of Psychoactive Drugs found that 33% of high school seniors in the United States support legalized marijuana and 25.6% believe marijuana should be considered a crime. This survey was taken from 2006-2011, and at that time 1/3 of seniors supported legalizing marijuana. That figure has grown in the past two years, but the legalization debate goes on. However, most new studies and surveys as well as research show the positive effects of legalizing marijuana and making it easily accessible. A new study by the Rand Corporation and the University of California - Irvine reported this week by MSNBC states that, “Marijuana Dispensaries Save Lives”. This study examined whether, in the years following legalization, states that legalized marijuana had experienced reductions in fatal overdoses and addiction treatment center admissions relating to opioid abuse. The researchers found that these states experienced significant reductions in both measures of opioid misuse — but only if they had also legalized marijuana dispensaries. According to the Center for Disease Control, more than 16,000 people fatally overdosed on prescription painkillers in 2013, accounting for 60% of all overdose deaths. This study suggests that easily accessible marijuana may curb this fatal epidemic. The research according to the MSNBC report found that in the six states where doctors are allowed to prescribe marijuana, but where retail dispensaries are prohibited, the study found “no evidence” of “reductions in substance abuse or mortality.” But in those 18 states where medical marijuana shops are allowed, they found a 16% reduction in “opioid-related mortality” and 28% reduction in opioid-abuse treatment admissions. The Rand/UCI study found that there was no decline in the distribution of legal opioid painkillers in states with dispensaries. Thus, the researchers suggest that the reduction in painkiller abuse in these states comes less from patients switching their prescriptions, than from people who were taking illegally obtained opiates replacing the drugs with legal marijuana. Therefore, the findings suggest that dispensaries may have saved the lives of some recreational pill-poppers, who quit hard drugs once they got a pot prescription. When coupled together these two studies present a positive picture for more legalization, and more dispensaries. They also showed that accessible marijuana isn’t the negative people once thought, and control thru legal dispensaries can save lives. Conclusion, it’s time to “end the war on drugs.”

THE HERBAL CHEF STAFF EDITOR Our glorious Golden State has turned green; it’s about time! Along with all of the new dispensaries, extraction methods, strains, and so on comes a new set of regulations. Colorado was the first to set precedent in the cannabis regulatory standard realm, and I must admit - we [California] can do it better. Colorado’s board of regulators, has done a great job regulating the sale and distribution of marijuana, but I believe that we can set a better standard. I won’t bore you with the details (you can see sources below), but I am specifically talking about the regulation of our beloved edibles. As a Michelin trained Chef, and thoroughly being involved in the culinary world as well as manufacturing and production, I do not see the difference between my medicated cupcake and my nonmedicated cupcake. By that, I mean that just because it is cannabis infused doesn’t mean you can throw it in a plastic baggie and slap a sticker on it. Edibles are still food. In my humble opinion (which I will try and push onto everyone I meet), we should be regulating edible packaging and labeling as the FDA regulates all other food. We have the right to know what is in our edibles and especially to have them packaged properly. When I go to a dispensary and see items packaged in a plastic condiment container or in cellophane wrap, I cringe. Bacteria love to hang out in cool, oxygenated spaces with a bit of moisture. So if it is not a shelf stable product and pasteurized before bottling or packaging in a sanitary environment, the bacteria spores will go crazy once it has time to cool. This is the ‘stuff’ to be wary of. What to look out for: • Packaging that is completely sealed off. • You are more than likely safe with chocolates, that doesn’t mean chocolate cake - it means pure chocolate. Chocolate has very little room for bacteria if any at all. It can also keep at room temperature and will be fine. • Any baked items are a little tricky. Make sure to see the “produced on” date and check for freshness. If it wasn’t in a refrigerator, be careful. • Anything bottled, such as my marinara sauces or salad dressings, make sure they have a pressurized lid and a shrink wrap around the top. Be smart out there folks. I hope that soon we can all demand a certain standard from our dispensaries and the edibles they carry. I like kimchi, and cheese just as much as the next person, but please, push to regulate to the FDA standard- otherwise enjoy the lousy packaging just waiting for bacteria to grow.

How To Find A Food Scientist RACHEL ZEMSER STAFF EDITOR Years ago (like 15 years ago) companies like Nestle, Unilever and General Mills made most of the processed shelf-stable food products. Those companies would hire food scientists right out of school and there was no confusion about how to find them and what their role or job description would be in the company. Food Scientists didn’t need to look to hard to find a job because once you were in the “inner circle” recruiters would just - find you. Fast - forward to 2015 - times have changed and there are many small food companies out there that desperately need food scientists to help them bring their product to market. Unfortunately, food scientists have been tucked away for so long, in the secret world of big, food companies that no one except the big companies really understand what we are, what the job descriptions should be, and how to integrate us into their commercialization process. Yes - commercialization, that is the term used to describe the path that we take to bring a concept from the CEO’s mind to the supermarket shelf. What Is a Food Scientist? What is a food scientist anyway? From a degree standpoint, a food scientist is someone who has a BS in Science, but focuses their last two years in school on understanding how basic science applies to food. A typical undergraduate degree will include Chemistry, Microbiology, Physics, and Biology the first two years and the last two years more focused courses like “Food Microbiology”, “Food Chemistry” and “Food Processing”. We have specific textbooks designed to teach us the ins and outs of manufacturing and the science behind food ingredients. Food Science is an applied science and we are “scientists” (although, I think in Europe the term “technologist” is more commonly used for anyone that does not have a PhD). There are also higher degrees in Food Science and someone with a Masters will have more knowledge on a specific topic that they did research on— for example, I got my MS from the University of Illinois in Food Microbiology. I spent two years studying Listeria and its virulent enzymes. There is lots of crossover in the other sciences, for example, someone can get an undergraduate degree in Chemistry or Microbiology, but then get a MS in Food Chemistry. The PhD’s will spend years working on one specific area and their research is usually funded by private industry, the FDA or USDA. How To Find a Food Scientist? Entry-level food scientists are easy to find. Simply go to the IFT website (www.ift.org). From there you can find a list of approved Food Science programs and contact the University to post your job. You can also obtain other information from www.ift.org about the national conference (all the students attend the show - many who are graduating and looking for jobs) or even post a job on that site. The competition is fierce for these recent grads - meaning there are more jobs than food scientists, so it is in your best interest to offer a fair and generous package! LinkedIn has made it easier for jobs and applicants to connect, but I still see a slew of badly written job descriptions designed to attract food scientists. If you were looking for a lawyer, would you write “law firm seeks someone who knows how to argue and write legal stuff… and… You know” - Unfortunately I see similarly confused postings for food scientists since no one really understands how food products 28
are commercialized and they don’t understand what we study or our area of expertise-- they also don’t understand how to properly recruit us. I can’t help but roll my eyes when I see job postings like “seeking emulsion expert” or “molecular gastronomist” or “food whiz”. Here are a few correct descriptions: • Food Scientist: A general jack of all trades, someone who can formulate, source ingredients, conduct shelf life studies, connect with suppliers, do sensory analysis. Level of experience may vary. • Food Microbiologist or Food Safety Microbiologist: Someone who is experienced and well versed in food safety. A Food Microbiologist may be trained in HACCP or understand the deep details on the quality and safety aspects of your food product. • Food Chemist: This is a very specific term used to describe someone that does specific chemistry research like manipulating proteins, creating flavors, or are experts in certain ingredients like oils, carbohydrates and other chemicals. Don’t use this term if you want to hire a general food scientist to help you formulate, a food chemist is more specialized. • Food Engineer: A food engineer is often used to describe a food scientist. I always imagine a food engineer as someone who measures the flow of food through pipes and understands heat transfer but I do see that the term is often used to describe a general food scientist. • Research Chef: A unique individual who has experience and training as both a food scientist and culinary arts. They may be certified by the RCA (certified food scientist, or certified research chef) This person should be hired for creative roles that require an understanding of processing and industrial ingredients. Use these specific terms and hashtags when trying to recruit a food scientist. We are out there but it is difficult to know what you really need without the right terminology. A startup company should try to hire someone with experience since they probably won’t have anyone on their team who can mentor and train a newcomer. However, even a few years of experience in the food industry can go a long way. If someone has spent even two years at one of the big companies like Kraft or Unilever, you know they have been trained well and by the best scientists in the field. Hire The Right Person for the Job If you want a food safety expert or someone to set up a HACCP plan, hire an experienced food microbiologist. If you want someone to create a flavor for you, hire a flavor chemist, if you want a general food scientist to do formulations and run the lab, find someone with at least 3 to 5 years experience. If you want entry-level, make sure you have a more senior person who can guide them in their first job. If you want someone to create fake meat and eggs, check with a food science department, find a professor who specializes in that area and ask if they have any former students who worked under them. Please understand, not all food scientists are the same; we have different levels of experience and expertise. Someone with a BS and 2 years experience is not qualified to run your safety and quality program, but they may be a good fit to do formulations on the bench and monitor production runs. Someone with a PhD is going to be very research oriented and may not be interested in making cookie prototypes. Infused Zucchini Spaghetti Burrata
Ingredients:
1 IncrEdibles Cookies and Cream THC Chocolate Bar 6 Graham Crackers 12 Jumbo Marshmallows
Ingredients: ½ tbs Cannabis Olive Oil 1 large Zucchini 4 oz Burrata 3 Garlic Cloves 1 Shallot Parmigiano Reggiano (to taste) ½ cup small Heirloom Tomatoes Aged Balsamic Vinegar (to taste) 1 tbsp Extra Virgin Olive Oil Black Pepper (to taste) 1½ tbsp diced Parsley 1 Chicken Breast (optional)
Instructions: Chill zucchini prior to prep and bring burrata to room temperature. Slice Zucchini using a melon scraper or vegetable spiral slicer. Press garlic cloves with a garlic press. Slice the heirloom tomatoes in halves. Use a micro-plane to “zest” the parmigiano reggiano. Coat bottom of a medium sized skillet with extra virgin olive oil. Add pressed garlic to the pan and sauté at medium low heat. Add diced shallot. Once the shallot begins to caramelize, add zucchini. Move zucchini and to one side of the pan and add heirloom tomatoes. Once the tomatoes begin to break down, add parsley. Add Parmigiano Reggiano to coat and thicken zucchini. Slice Burrata in half, taking care not to let the inside cream spill. Plate zucchini and shave additional Parmigiano Reggiano on top if desired and pour tomatoes along with residual oil from the pan around the “spaghetti”. Place half of the Burrata on the bed of zucchini. Drizzle burrata with cannabis oil and add balsamic vinegar to taste.

From there carefully take the hot marshmallows from the stick or rod and place firmly onto the cracker. at least 2 cm thick layer of cheese. Place the toast carefully onto the baking tray and space them out. Shake Parmesan cheese over the toast to create even layer. Try to clean
heat for 7-10 minutes. Once finished transfer to a cutting board and serve with additional CBBQ Sauce. Enjoy!

This has created a bizarre situation in which reasonable, law-abiding citizens are caught in limbo: criminal and not criminal at the same time. For the day-to-day living of the average cannabis consumer, this will have no effect on their lives. However, for the people creating and supplying the product - recreational and medicinal alike - this creates a number of serious problems, seriously halting the supply and limiting the expression of the market.
For those uninterested in spending the rest of their life in prison or forfeiting the entirety of their life savings to the DEA, this has resulted in people hiding their legal money and transactions, and an impossibility of storing their funds in a bank, as banks are required to comply with all federal restrictions. As a response to the banking problem on July 9, Senators from the involved states, including Jeff Merkley (D-OR), Cory Gardner (R-CO), Michael Bennett (D-CO), Rand Paul (R-KY), and Ron Wyden (D-OR), have come together to propose a bipartisan bill that would allow those involved in the industry to properly store their funds in a bank and help pay their taxes properly. The Marijuana Business Access to Banking will allow businesses to operate outside of cash transactions; thus, dramatically decreasing crime surrounding places known to have large amounts of cash on property. Last month, Inslee also signed a law changing the recreational tax system from a threetier system where the processor would be taxed 25% and a 25% tax on the retailer. Now it will be a single 37% at the retail point of sale.
