THE HERBAL CHEF’S THC/CBD INFUSED FROZEN MEALS and cooking is typically out of the question. Not only do the strong chemicals from the chemo drain the nutrients out of patients, but also the inability to properly feed the body makes it hard for patients to muster up energy to cook for themselves. Chris thought there must be a better way to help patients using two of his favorite things, cannabis and food. Thus, the idea of infused frozen meals came to fruition.
KYMBER WARD STAFF EDITOR The Herbal Chef aka Chris Sayegh has been in the cannabis scene for several years. Prior to entering the marijuana industry, the molecular biology student turned chef worked under some of the best chefs at Michelin starred restaurants in Los Angeles. After leaving the University of Santa Cruz, Chris went to Melisse’s head chef and explained his dream, who ultimately gave him a chance. He worked for no pay for three months, soaking up all that the chefs had to offer. Every Wednesday, he spent the early hours of the morning wandering farmers’ markets, learning about ingredients, menus, and the reasons behind choosing them. He entered the cannabis world after falling in love with the plant back in college. When asked why he got involved with marijuana he explained, “It was a natural synergy. It felt so right and it was combining two of my favorite things [cannabis and food], so why not!” He began hosting private dining parties in 2013, and as they say, the rest is history. Chris said, “The point in creating The Herbal Chef was to elevate the perception of marijuana and elevate consciousness. I am so tired of being called a stoner or looked at as lazy or unmotivated. I am just really tired of this herb having such a bad reputation.” The Herbal Chef offers a full line of edibles including everything from ice cream and sorbet to marinara and pesto sauces, baked goods, and much more. However, perhaps the most innovative idea to hit the edibles market, thus far, is his new line of nutritional infused frozen dinners. The Herbal Chef’s CBD/THC Frozen Meals are infused with Hemp CBD, Whole Plant CBD or THC designed to provide necessary nutrients while medicating. “Why put medicine into things that may hurt you… I want to have a line of healthy meals that taste delicious,” proclaimed the chef. He went on to explain that the inspiration behind this idea was a family friend who suffers from stage IV cancer and explained how hard it was to maintain proper nutrition while undergoing chemo. After treatment he is lethargic
If patients choose to use THC or CBD to help with symptoms, smoking is not always the preferred method. In fact, 10 out of 10 doctors recommend edibles over smoking. By creating the infused frozen meals, The Herbal Chef has crafted a way for sick patients to quickly medicate all the while fueling their bodies with vital nutrients. Eating is no longer a task with The Herbal Chef’s THC/CBD Infused Frozen Dinners, “They [patients] don’t have to worry about it. Cooking is not laborious; they can pop it in the oven or microwave, eat and get their medication all in one punch, explained The Herbal Chef.” Price points for the medicated meals range from $13-$15 retail and will be sold through his website theherbalchef.com, and they are working to get the hemp CBD meals into local markets. Currently, they are taking pre-orders for meals online and are set to launch this month. A sample menu may include quinoa stuffed chicken breast with steamed vegetables. Each meal will contain between 200-500 calories and will be made out of the highest quality products with no preservatives. “The only preservatives you will ever see in my food are Vitamin E, lemon or vinegar,” declared the chef. First, they are launching an array of dinner items and will shortly branch into breakfasts, snacks and desserts. In the future, they will have a nutritionist on staff to help create specifically designed meal plans to suit the individual’s needs. Although, these products fall under the edible market (which we know is severely under regulated in most states) all ingredients are of the highest quality and will be held to FDA standards – even though the FDA does not recognize cannabis as a supplement. This young chef has not stopped there, he also operates infused private dining events including his own Stoney Supper Clubs. According to Chris, these events are “designed to push a person out of their comfort zone, while creating a thoughtless atmosphere; a place where one can go and not think, everything is already thought out and all they have to do is enjoy the experience,” he said. The supper clubs usually include a cocktail hour with handcrafted cocktails and live art intended to stimulate intellectual conversation. Immediately following, is a 6-course meal each paired with top of the line bud and wine. Ultimately, the night ends with a blunt and whiskey bar. The next Stoney Supper Club is on October 17th in Echo Park. These events aim to bring like-minded people together to experience all that cannabis, food, and networking have to offer. HAPPY SEED EDIBLES
RICHARD BELL STAFF EDITOR I am a C5/6 quadriplegic, and suffer from different types of neurological pain, and insomnia. Since ending the use of all pharmaceutical medications, I have been extremely spastic, and have noticed that CBD works really well for my spasticity. So, I was excited to discover that Happy Seed Edibles has a high CBD version of their Gummy Cup. Happy Seed Edibles boasts a large product line including Dankies, a spin on the cult favorite Twinkie. They also offer an assortment of rice crispy treats, donuts, hard candies, a number of baked goods under the Buddha Baked line, and Green Mountain Honey. They have a full spectrum of products including several options made with Sativa, Indica, Hybrid and CBD. These made-from-scratch gummies are an excellent, professionally packaged product suited for my specific needs. They even brought me back to my childhood candy binges. The Cherry Bomb has a very pleasant sweet and sour flavor with a mild herbal finish. This edible works perfectly for me because I am a “lightweight”. The dosage includes 20mg CBD, and 5mg THC. I am also an artist/painter, and need to be clear-headed as I work. I discovered that eating 1/3 of the Gummy Cup at a time was the best dosage for me. After about 15 minutes, my spasticity subsided significantly and eventually stopped entirely. My pain level also decreased, but I am still alert enough to continue working. Happy Seed

achieves the desired effect by using both hemp and whole plant CBD. In my test of their products, when it was time to go to sleep, I had to switch to a THC rich medicine. I gave the Gummy Cup another try when I woke up the next morning to see if it would interfere with my work. I am happy to report that it was great being able to work all day without being interrupted by spasms and pain spikes. We all have various physiological differences and tolerance levels that may affect efficacy. If you have not already, you should consult with a physician to determine the best path for you. With that, I highly recommend this product. It is perfect for those of you who need to work during the day without feeling high or drowsy, but need to be medicated to keep symptoms at bay. Is CBD from Cannabis the Same
as CBD from Cannabis? Settling the Debate.
CHARLIE BOUCHER & STUART TOMC You may go ahead and re-read that title now. While it may seem like an obvious response or even rhetorical question to ask, this question has popped up on forums, in dispensaries and independent, specialty natural products stores, within the Cannabis industry, and various media platforms. We felt it was time to dive in and settle any debate to clear the water. The root of this debate is whether CBD (cannabidiol) sourced from low THC (delta-9-tetrahydrocannabinol)/ high CBD strains of Cannabis (typically called industrial Hemp at less than 0.3% THC concentration in aerial parts of the plant) would somehow be considered different or ineffective compared to CBD sourced from higher THC/ low CBD strains of Cannabis (i.e., Marijuana). If you’re following the Cannabis discussion nationwide and globally, or if you’re an avid reader, there is no doubt you’ve heard of CBD—the “other” major, fascinating cannabinoid that has non-euphoric, antiinflammatory, anxiolytic, antipsychotic, metabolic health and neuroprotective benefits, among others. This is in contrast to the physiologic action of THC, and other cannabinoids. However, there are over 90 other cannabinoid compounds found in Cannabis, the majority of have yet to be studied more extensively in biological systems.

For those readers who have shunned organic chemistry with extreme aversion… First, you’re not alone! Next, let us be clear that the laws of physics, chemistry, physical chemistry and biochemistry remain the same whether the molecule is synthesized within and sourced from a Cannabis (Hemp) plant, or a Cannabis (Marijuana)
plant. A molecule of any compound is composed of a specific arrangement and configuration of atoms, with a specific bonding pattern. The strain of Cannabis plant, regardless of its percentage or ratio of CBD/THC, does NOT change these fundamental truths. As such, when it is administered the human body does not recognize that the CBD compound was somehow sourced from Marijuana vs. Hemp, and certainly all the biologic activity, interactions with various enzymes and receptors specific to CBD also remains the same. The human physiology does not make a conscious decision to treat CBD differently because it was sourced from whole-plant hemp material vs. whole-plant marijuana material.

The argument being proposed by some in the established Cannabis industry would be akin to declaring that DHA from menhaden is somehow “different” or “superior” to the DHA from microalgae, or vice versa. Once again, the laws of chemistry demonstrates that DHA from microalgae is the same molecule as the DHA isolated from menhaden fish. A similar analogy can be drawn with Vitamin C from oranges being “different” than that from grapefruits, or acerola cherries. Clearly, in any of these scenarios the DHA and Vitamin C retains its same chemical and biologic characteristics irrespective of the source.
CBD-rich strains of Cannabis that categorizes the plant as Hemp vs. Marijuana (or simply Cannabis that has greater than 0.3% in THC) are driven by the expression of genotypes that direct their phenotypic characteristics. The genotypes of various Cannabis strains dictate the biosynthetic pathways that result in different phenotypes and variations in cannabinoid, terpene, stilbene and flavonoid profiles or “fingerprints.” However, assessing the different structure/function relationships of plants with different cannabinoid and flavonoid profiles is an entirely different question than whether the CBD from these distinct strains are inherently different.
The very same can be said about the CBD, CBC, CBG, THC or any other cannabinoid not being “different” despite being sourced from different strains of Cannabis. We hope this has been edifying, and you now understand that CBD is CBD, whether from Cannabis or “Cannabis.” Any argument against it is simply both a logical and scientific fallacy.
We can draw an analogy from the dietary supplement /nutraceutical space regarding DHA (Docosahexaenoic Acid), the long-chain omega-3 polyunsaturated fatty acid found in fish oil. Interestingly, the dietary sources of DHA are broad and varied, from fatty cold-water fish to purified fish oil (menhaden, salmon,

TO REGULATE OR
NOT TO REGULATE?
From a Chef’s Point of View
THE HERBAL CHEF STAFF EDITOR Our glorious Golden State has turned green; it’s about time! Along with all of the new dispensaries, extraction methods, strains, and so on comes a new set of regulations. Colorado was the first to set precedent in the cannabis regulatory standard realm, and I must admit - we [California] can do it better. Colorado’s board of regulators, has done a great job regulating the sale and distribution of marijuana, but I believe that we can set a better standard. I won’t bore you with the details (you can see sources below), but I am specifically talking about the regulation of our beloved edibles. As a Michelin trained Chef, and thoroughly being involved in the culinary world as well as manufacturing and production, I do not see the difference between my medicated cupcake and my nonmedicated cupcake. By that, I mean that just because it is cannabis infused doesn’t mean you can throw it in a plastic baggie and slap a sticker on it. Edibles are still food. In my humble opinion (which I will try and push onto everyone I meet), we should be regulating edible packaging and labeling as the FDA regulates all other food. We have the right to know what is in our edibles and especially to have them packaged properly. When I go to a dispensary and see items packaged in a plastic condiment container or in cellophane wrap, I cringe. Bacteria love to hang out in cool, oxygenated spaces with a bit of moisture. So if it is not a shelf stable product and pasteurized before bottling or packaging in a sanitary environment, the bacteria spores will go crazy once it has time to cool. This is the ‘stuff’ to be wary of. What to look out for: • Packaging that is completely sealed off. • You are more than likely safe with chocolates, that doesn’t mean chocolate cake - it means pure chocolate. Chocolate has very little room for bacteria if any at all. It can also keep at room temperature and will be fine. • Any baked items are a little tricky. Make sure to see the “produced on” date and check for freshness. If it wasn’t in a refrigerator, be careful. • Anything bottled, such as my marinara sauces or salad dressings, make sure they have a pressurized lid and a shrink wrap around the top. Be smart out there folks. I hope that soon we can all demand a certain standard from our dispensaries and the edibles they carry. I like kimchi, and cheese just as much as the next person, but please, push to regulate to the FDA standard- otherwise enjoy the lousy packaging just waiting for bacteria to grow.

REMEDY PLUS GUMMIES
KYMBER WARD STAFF EDITOR Man, was it like Christmas Day when I walked into the Edibles List office to find a bag of Remedy Plus edibles sitting on my desk. The folks at Remedy were extremely gracious and gave us close to fifteen different options to review. However, my only problem – which one do I pick?! As much as I would have loved to evaluate all fifteen options, I went the adult route and picked three; because well, I had to be coherent enough to write this. Instead of specifically choosing the products I thought it would be much more interesting to pick them blindly out of the bag. I pulled out a package of Gummi Buddies, OG Peach Rings and the new Adios Muddasuckas. In a market saturated by gummy vendors, Remedy has managed to set themselves apart from the competition. The gold opaque packaging is eye-catching, and for those of us who have “shiny ball syndrome” it is too enticing to walk away from… Well-played Remedy, well-played. The Gummi Buddies are precisely what you may think they are, gummy bears with a kick. They seemed to be rolled in sugar after they are sprayed with CO2 oil. I don’t hate this, I love me some sugar! Remedy only uses CO2, as providing safe products to consumers is their top priority and they do not believe in using butane in their products. The specific package I was given contained a total of 150mg split between 15 gummies – 10mg per gummy is the perfect starter dose! Please note: Remedy does offer 300mg packages as well and are coming out with a CBD line shortly. Out of all of my choices these covered the taste of the pot the best, I think rolling them around in granulated sugar may have helped.

The second package I opened was the 150mg OG Peach Rings, which only contains 7 pieces, approximately 21mg each. I am actually super stoked on this choice of mine as I used to live off of Peach-O’s in high school! Can you say YUM?! These are delicious and absolutely take me right back to my teens. The CO2 taste is not as not noticeable in this edible as in some of the others. I ate two of these and was feeling really good. Last but not least, the Adios Muddasuckas. PS Remedy, I started uncontrollably laughing about the name – points for originality! These mango chili lollipops are good, but I would like to have seen more spiciness to it. I love Mexican candies and being from SoCal, I know Mexican candies! I think some more chili and a pinch of lime would do the trick for spicy lovers like me. You can taste the cannabis quite a bit, but flavors of the sucker mix well with it. The mango part is spot on! These were more potent than my other choices; with a total of 100mg in the package and only three lollies, these weigh in at about 33mg each. All around I like this new edible of yours Remedy, and I look forward to see what new south of the border candies you come out with! All in all, Remedy Plus provides quality edibles, with great flavors, and a clean high. In total I consumed 60mg between all three of my choices and I did not feel too high to function. As I previously mentioned I really dig the idea of a south of the border product line and can’t wait to see what comes next! STRICTLY EDIBLES At first glance, they seem as if they could be normal donuts, until you bite into one. The cake has a bit of a green tint to it, as Strictly uses cannabutter as their infusion method. You do not taste the cannabis at all in the beginning. The taste creeps up in the aftertaste and to me it actually tastes slightly like green tea. The cannabis acts as a complementary flavor profile in the product, as opposed to the main flavor profile like some of the other medibles on the market.
KYMBER WARD STAFF EDITOR There are few things in this life that I enjoy more than cannabis and well, donuts. Donuts are a wonderfully sinful treat that I just cannot stay away from. Strictly Edibles has managed to combine these two wonderful things to create one magnificent concoction, a cannabis infused donut! I mean honestly, if you aren’t as excited as I am you should really re-evaluate your priorities in life. Let me mention, these are by far some of the best tasting edibles on the market. You should not take my word for it, go out and get one – seriously. The amazingness does not stop with just donuts, oh no, brace yourself; their menu boasts an assortment of brownies, cookies, crispy treats, donuts, Lolos, “The Beast” (aptly named and will be touched upon later), and many more products to choose from. Lolos deserve an explanation; a Lolo is a miraculous cake, either chocolate or red velvet, filled with a non-dairy cream, covered in either dark chocolate or white chocolate; and just so you know, they are simply divine. The mini-donuts are packaged in an opaque resealable bag with all pertinent information easily found on the front of the package. The information includes: nutritional facts, ingredients, and a full explanation of the product inside. The resealable bag is great because it really keeps the products and fresh for a while.The they do not disappoint.
Each donut contains 100mg of THC and according to their Vendor Profile on EdiblesList.com, the company uses a hybrid trim and shake to produce their products. My guess is that they use sativa dominant hybrids as I am usually very sensitive to indica dominant hybrids, but I was still functional and didn’t get couch locked. I really liked the effects of this medicine. It was a really clean high and I didn’t get the drowsy comedown. The Beast… The Beast, aptly named, is not messing around! It is a 1500mg brownie, with Reese’s Pieces, M&M Minis and white chocolate chips. Not only does this thing pack a HUGE punch, but tastes great too! Even though you can definitely cannabis in this, the flavor definitely does not overpower the other flavors of the brownie. The brownie is made with an Indica dominant hybrid and it hit this girl hard. Let me tell you Korova, The Beast will give the Black Bar a serious run for it’s money! This brownie is not for the faint of heart and should be taken with an extreme caution, unless you are trying to lose three days of your life! I only consumed a corner of it and had a hard time coming back from it. But, I have to admit for an Indica edible it gives you a very euphoric feeling - everything got really warm and I suddenly felt at peace. According to the owners of Strictly Edibles, it all started with what they knew, baked goods... Let me tell ya’, they truly do know what they are doing. Thankfully they are not stopping at just baked goods, shortly they are launching a new CBD line as well as savory products!! I have been using it for just about a week, and it is fantastic. It comes in a roll-on type of container. Upon opening the lid, your nose is flooded with a mixture of mint and eucalyptus, which is delightfully aromatic. After reading the ingredients, you can see why. Not only is it made using high-quality cannabis infused coconut oil (which Love & Light sells at wholesale), but also is rich with eleven kinds of essential oils. The use of essential oils in the Dragon Balm is very impressive to me as I use many of them for respiratory issues and general health care. Dragon Balm is just as impressive in application. I would apply it in the morning and not have any hypersensitivity issues for the entire day. It also works great for edema. Because I’m in a seated position all day, I tend to get swelling in my ankles. Since I’ve been using this balm, my swelling has notably lessened. This is a non-narcotic deep pain relief that truly works!

I’m no stranger to balms and different topical ointments. After suffering a spinal cord injury in 2002, I have hypersensitivity in my upper right arm and neck. I’ve tried all kinds of topical ointments to help alleviate the discomfort. The first option recommended to me by my physician was lidocaine patches. We have seen a dramatic change in how animals negotiate thier environment. In the wild animals eat from food sources we both manage and that come from the landscape. We are seeing an uptick in Cancers, Autoimmune Disorders, Tumors, viruses as well as numerous other diseases that were rare or nonexistent not 10 years earlier. Mice are the most commonly used vertebrate species, popular because of their availability, size, low cost, ease of handling, and fast reproduction rate. (D. Mahdi, personal communication, 2007)] Another reason rodents are used as models in medical testing is that they’re genetic, biological and behavior characteristics closely resemble those of humans, and many symptoms of human conditions can be replicated in mice and rats. However, we have animals such as, dogs, cats, horses and even deer that are showing effects of disease outside the lab that are acting and reproducing lab results. Recently my cat a Maine Coon started showing symptomology consistent with Stomatitis Dentalis, which WebMD defines stomatitis, a condition caused by canker sores, cold sores and other irritations in the mouth. In the regards to my cat, this is a virus that is an autoimmune disorder that attacks the dentin in the teeth, causing inflammation and pain. The conventional treatment for this condition is extracting all the teeth or a lifetime of antiinflammatory drugs like steroids or animal herbs. This was rare to non-existent just a few years ago but is rapidly rising in numbers. Additionally, we’re seeing this condition even though non-transmittable in children once their teeth come in. Now we are seeing deer in the Midwest presenting with Tumors caused by a variety of viruses and inflammatory disorders. Coincidently a 2012 study was published, “Long term toxicity of a Roundup herbicide and a Rounduptolerant genetically modified maize” by a group of French scientists led by Gilles-Eric Séralini, claims that a Monsanto herbicide-tolerant GM corn and Roundup, Monsanto’s brand name for the herbicide, caused severe diseases and tumor growths in rats. (Seralini, 06/24/2014, p. 2) Roundup is a common outdoors herbicide used everywhere to kill weeds,
insects etc. There is no non-GMO corn in the United States and it is grown and proliferated in the Midwest. As I stated, animals such as deer are suffering from Tumors from unexplained reasons, however, the Tumors are similar to the Tumors seen in rats from the Monsanto study. But taking this premise further, consistent with the article I wrote on Inflammation.; our bodies have an immune system that protects us from foreign invaders that can cause disease and infection; however, if you have an autoimmune disease, your immune system attacks itself by mistake, causing illness. (“VCA Animal Hospital,” 2014, p. 2) The immune cells fail to distinguish the body’s normal healthy cells from foreign cells and thus try to destroy the normal tissues. The cause of this “mistake” is not well understood. Autoimmune disease can affect a single system or multiple body systems. Autoimmune diseases can affect the skin, connective tissue, nerves, muscles, the endocrine system (the system that controls hormones and other chemicals), and the digestive system. What we are seeing are multiple factors of our environment, our food, our, water and our air that contains particles of substances that are causing these diseases in our pets, food sources, and ourselves. Many industrialized nations such as Canada are outlawing GMO Foods for this very reason attempting to keep their population and food sources healthy. What we are seeing is a bombardment of these factors on animals effectively showing the results as if they were in a lab experiment. But there are no labs in the same environment that our dogs play in, our cats’ encounter, and our cattle and wildlife eat and live in. We are seeing the same factors as we’ve seen in the lab but on a larger wider scale. It is almost impossible to protect yourself from encountering these environmental factors in everyday life. Everything and everyone is affected by the environment they live in and now we’re seeing supporting evidence that proves the cascading health problems we are experiencing have a direct correlation to GMO Foods, toxic water, food, and air and plants. It is difficult and expensive for humans to buy non-GMO Foods. However, animal products contain GMO based fillers for the food supply for dogs and cats as well as most animals. The literature suggests that all these factors are leading to the rise
in viruses and autoimmune disorders within our pets. In earlier articles, I referenced numerous studies utilizing high CBD cannabis related supplements to act as both a preventative, treatment and cure for these problems in humans. Animals being similar in anatomy and physiology should see the same benefit. However, the component Tetrahydrocannabinol (THC) the psychoactive component in MMJ is toxic to pets. Some people think that if they enjoy something, their pets will, too. Or we think it’s funny to blow pot smoke in a cat’s face and watch her get crazy. But did you know that marijuana could be toxic to pets? Veterinarians report that they are encountering more incidents of marijuana poisoning in pets, mostly dogs. (Smith, 2011, p. 1) It’s usually an accident when an animal ingests marijuana in edibles; some bud dropped on the floor or even discarded trimmings. Now we’re seeing high CBD treats for dogs and cats from extracted from hemp products. Numerous articles and journals are reporting positive results from using hemp based CBD’s treating autoimmune disorders, Tumors, cancers in our pets. As more people are trying these avenues as both a treatment and a preventative to diseases. Pets have taken a very large step to become beloved companions and family members. It’s this author’s opinion and experience these products work and I both use them for myself and my pets to protect them from environmental toxins and disease. One caution is to read the label and do your due diligence to see what fillers were used in making the pet food and confirm no GMO products were included in the recipe. This way the pets will not be ingesting both the problem and cure at the same time. There are several veterinarians that recommend these products and support their use. CANNABIS JIDDEH’S SPINACH PIES “Jiddeh” means Grandmother in Arabic. To stay true to my roots, I wanted to include this phenomenal baked good that has been a staple at every dinner my family has ever had.
DOUGH Ingredients: 2 ½ lbs Bread Flour ½ tbs Salt ½ cup Cannabis Olive Oil 4 tbs ½ tsp Yeast 1tbs Sugar ¾ cup Water, Hot 2 cups Water, Room Temperature
FILLING Ingredients: 1 ½ lb Spinach 2 cups Diced Onion, Small 2 tbs Olive Oil (Can use infused oil for higher potency) 1 tsp Sumac Sour Salt (Citric Acid) & Pepper, to taste Pine nuts, optional
Instructions: Combine hot water, sugar, salt and yeast, mix gently with a whisk and then let sit for 10 minutes to let the yeast activate. Combine with the remaining water. Put your flour into a large bowl and slowly add the water to it. For every ½ cup water you add, add in ¼ cannabis olive oil. Knead the dough with your hand until it is smooth, it shouldn’t stick to your fingers. You may need to add a small amount of flour if the dough feels too tacky. Let sit for 2 hours with a damp cloth over it to rise. Freeze or set aside to make fresh. Heat pan on medium flame. Add the olive oil first. Then add the diced onions with the sumac and sauté for 3-5 mins. Not quite translucent, but enough time for the sumac to really open up and infuse its flavor. Add the spinach (if your pan isn’t big enough, do this is smaller batches) and cook until wilted. Add the sour salt and pepper to taste. Mix in pine nuts (optional). Take the contents out of the pan and put it into a table-cloth to stain until dried. Make sure the taste is still sour and if not, add a little more salt. Do not add lemon. Roll the dough into 1 ½” balls and flatten out with a rolling-pin. Add in the spinach filling and fold the tops in and the bottom up to create a triangle (although you can shape it however you’d like). Brush with egg whites and water. Bake at 350༠ for 10-15 minutes or until golden brown.
I nfused C hicken R oulade Ingredients: 1 Whole Chicken 5 cloves Garlic 1 tbs Olive Oil Salt/Pepper 2 lbs Button Mushrooms ½ cup Borsin Cheese 2 tbs Soy Sauce 1 Lemon, Juiced
Infused Grape Seed Oil 3 tbs Dijon Mustard ¼ cup Sundried Tomatoes 3 cups Spinach Orange Rind Leeks, ½ stalk of white part 2 tbs Clarified butter Fresh Parsley The Herbal Chef’s Infused Pesto
Instructions: Debone entire chicken. Rub with olive oil, salt and pepper on inside and outside. Preheat oven to 350F. Clean and cut mushrooms into thin slices, set aside. Mince garlic, set aside. Heat pan on high heat. Add olive oil, add some mushrooms, be sure not to overcrowd the pan and to season with salt/pepper, cook on both sides until mushrooms are golden, add minced garlic and sauté for 20 seconds. Empty pan into a dish with a paper towel and repeat until all the mushrooms are fully cooked. Put all mushrooms into a blender and add the Dijon, soy sauce, and lemon juice. Blend thoroughly. Add the grape seed oil slowly until well emulsified (until it’s thick like a spread). Take it out of the blender and put in a bowl, fold in Borsin cheese. Set aside to cool. Put a large pan on medium-hot and add one tbs olive oil and the orange rind (DO NOT BURN). Add in spinach; do not pile too high, otherwise it will not cook evenly. Keep sautéing the spinach until wilted slightly, add minced garlic at the end. Add salt and pepper to taste. Put in a bowl and let cool. Get a pan going on medium heat. Chop the leek in very thin slices and add them to the pan. Keep sautéing until translucent and soft. Add 2 tbs clarified butter and stir occasionally until extremely soft. Lay the chicken flat on its back and have all your filling ingredients (Mushroom emulsion, Sundried tomatoes, Spinach, confit leeks and The Herbal Chef’s Pesto) ready to go. Spread the pesto and the mushroom emulsion first and then add the other ingredients to your liking. Put in oven until golden brown and chicken breast is cooked to 165F. Slice while hot and serve with pesto sauce.
homemade medicated 420 sorbet Ingredients: 2 lbs Strawberries, ripened 3 cups Sugar
1 cup Water 2 tbs Fresh Lemon Juice 50 mg of cannabis oil
Instructions: You will begin by making a sorbet syrup. Bring the water, sugar and cannabis oil to a boil, then simmer for 5 mins. Take off the heat and put the syrup into a proper container for an ice bath. Cool rapidly. While the syrup is cooling, take off the green leaves and any white parts of the strawberries off and discard in your compost. You only want the juiciest most flavorful parts of the strawberries in the sorbet. Blend all the strawberries until liquified. Then strain through a fine mesh strainer. You do not want any seeds or inconsistencies in the sorbet. Add lemon juice. Now, depending on how sweet your strawberries are, you may not need to add all the syrup. Taste your mixture in increments to judge its flavor. If you are getting them from a local farm as I do and they have immensely sweet strawberry flavor, you will only need ¼ cup. The syrup is needed to fortify our sorbet, so that it is smooth and creamy instead of icy. Put mixture into an ice cream machine and follow guidelines the manufacturer provides you. Take out and put it in a bin to enjoy for when you crave a fruity tangy bite! 52

Some critics fear that mixing recreational with medicinal programs will cause friction and ultimately end the medical program much like Washington State. The legalization of recreational marijuana for adults over 21 years was approved by Oregon voters old back in November of last year; however, from then to now has been a slowmoving and confusing process to follow. The more tools we have, the better we are at ensuring consistency and accuracy in both the creation and manufacturing of food products. What are these tools and how can they help you, the food maker, make consistent quality products that will never disappoint your clients. Water Activity: These units measure the amount of “available” water in your energy bars, gummy bears and rice crispy treats. Your goal is to have a Aw reading below 0.65 to ensure no yeast and mold growth. These units typically cost around $2,000 dollars and can be used for quality control, product consistency and will help ensure that each batch will consistently last as long as the last batch. Refractometer: In the wine world, refractometers are used to measure the amount of sugar in grapes- or the “brix”-so the
winemakers know when the grapes are ready to be picked. In the food world, a refractometer is used to measure sugar and other “soluble solids” in an edible product. If you are making beverages this will ensure that the person who made the batch added the right amount of sugar, salt, caffeine and anything else that dissolved in your water or liquid base. When you buy a refractometer make sure that you purchase one with a brix “range” that fits your product. If you are making candy, you want a refractometer that can measure a range of 50 to 100, if you are making a beverage, you may only need a 0 to 50% range. pH Meters: Acidity is important in food, not only for safety but also for flavor and quality. There are lots of pH meters on the market and you can buy a good one for under $300. Make sure you also purchase calibration fluids and calibrate your pH meter before you use it every time. Bostwick: The Bostick, also known as a “consistometer” is a tool used in the sauce and condiment industry. It is a simple metal trough that is about 14 inches long. The Trough has a spring-loaded gate at one end,
into which you load your sauce product. When you release the gate, the condiment slowly (or quickly) travels down the slightly angled trough and the distance that the trough travels in 30 seconds is your final reading. The thicker the condiment, the less distance it will travel. Brookfield: A Brookfield unit is used to measure the viscosity of fluids. It consists of a metal spindle that pushes its way through a liquid or syrup—measuring the force or internal friction of that fluid. It is used to ensure that the mouthfeel and texture of food products like yogurt or syrups are the same from batch to batch. Salt Analyzers: A salt analyzer is just that— you take a drop of your solution mixture, place it on the readable unit, press a button and in less than a minute you will know the percent salt of your solution. Typical salt solutions will read between 0 and 5% or 0 and 10%. These simple tools are available online or you can go directly to the manufacturer websites and order directly from them. The past year has seen a surge of interest in cannabidiol (CBD), a non-intoxicating cannabis compound with significant therapeutic properties. Numerous commercial start-ups and internet retailers have jumped on the CBD bandwagon, touting CBD derived from industrial hemp as the next big thing, a miracle oil that can shrink tumors, quell seizures, and ease chronic pain—without making people feel “stoned.” But along with a growing awareness of cannabidiol as a potential health aid there has been a proliferation of misconceptions about CBD. 1. “CBD is medical. THC is recreational.” Project CBD receives many inquiries from around the world and oftentimes people say they are seeking “CBD, the medical part” of the plant, “not THC, the recreational part” that gets you high. Actually, THC, “The High Causer,” has awesome therapeutic properties. Scientists at the Scripps Research Center in San Diego reported that THC inhibits an enzyme implicated in the formation of beta-amyloid plaque, the hallmark of Alzheimer’s-related dementia. The federal government recognizes single-molecule THC as an anti-nausea compound and appetite booster, deeming it a Schedule III drug, a class reserved for medicinal substances with little abuse potential. But whole plant marijuana, the only natural source of THC,continues to be classified as a dangerous Schedule I drug with no medical value. 2. “THC is the bad cannabinoid. CBD is the good cannabinoid.” The drug warrior’s strategic retreat: Give ground on CBD while continuing to demonize THC. Diehard marijuana prohibitionists are exploiting the good news about CBD to further stigmatize high-THC cannabis, casting tetrahydrocannabinol as the bad cannabinoid, whereas CBD is framed as the good cannabinoid. 3. “CBD is most effective without THC.” THC and CBD are the power couple of cannabis compounds—they work best together. Scientific studies have established that CBD and THC interact synergistically to enhance each other’s therapeutic effects. British researchers have shown that CBD potentiates THC’s anti-inflammatory properties in an animal model of colitis. Scientists at the California Pacific Medical Center in San Francisco determined that a combination of CBD and THC has a more potent anti-tumoral effect than either compound alone when

And extensive clinical research has demonstrated that CBD combined with THC is more beneficial for neuropathic pain than either compound as a single molecule. 4. “Single-molecule pharmaceuticals are superior to ‘crude’ whole plant medicinals.” According to the federal government, specific components of the marijuana plant (THC, CBD) have medical value, but the plant itself does not have medical value. Uncle Sam’s single-molecule blinders reflect a cultural and political bias that privileges Big Pharma products. Single-molecule medicine is the predominant corporate way, the FDAapproved way, but it’s not the only way, and it’s not necessarily the optimal way to benefit from cannabis therapeutics. Cannabis contains several hundred compounds, including various flavonoids, aromatic terpenes, and many minor cannabinoids in addition to THC and CBD. Each of these compounds has specific healing attributes, but when combined they create what scientists refer to as a holistic “entourage effect,” so that the therapeutic impact of the whole plant is greater than the sum of its single-molecule parts. The Food and Drug Administration, however, isn’t in the business of approving plants as medicine. (See the scientific evidence at ProjectCBD.org) 5. “Psychoactivity is inherently an adverse side effect.” According to politically correct drug war catechism, the marijuana high is an unwanted side effect. Big Pharma is keen on synthesizing medically active marijuanalike molecules that don’t make people high— although it’s not obvious why mild euphoric feelings are intrinsically negative for a sick person or a healthy person, for that matter. In ancient Greece, the word euphoria meant “having health,” a state of well-being. The euphoric qualities of cannabis, far from being an unwholesome side effect, are deeply implicated in the therapeutic value of the plant. “We should be thinking of cannabis as a medicine first,” said Dr. Tod Mikuriya, “that happens to have some psychoactive properties, as many medicines do, rather than as an intoxicant that happens to have a few therapeutic properties on the side.” 6. “CBD is legal in all 50 states.” Purveyors of imported, CBD-infused hemp oil claim it’s legal to market their wares anywhere in the United States as long as the oil contains less than 0.3 percent THC. Actually, it’s not so simple. Federal law prohibits U.S. farmers from growing hemp as a commercial crop, but the sale of imported, low-THC, industrial hemp products is permitted in the United States as long as these products are derived from the seed or stalk of the plant, not from the leaves and flowers. Here’s the catch: Cannabidiol can’t be pressed or extracted from hemp seed. CBD can be extracted from the flower,
leaves, and, only to a very minor extent, from the stalk of the hemp plant. Hemp oil start-ups lack credibility when they say their CBD comes from hemp seed and stalk. Congress may soon vote to exempt industrial hemp and CBD from the definition of marijuana under the Controlled Substances Act. Such legislation would not be necessary if CBD derived from foreign-grown hemp was already legal throughout the United States. 7. “‘CBD-only’ laws adequately serve the patient population.” Seventeen U.S. state legislatures have passed “CBD only” (or, more accurately, “low THC”) laws, and other states are poised to follow suit. Some states restrict the sources of CBD-rich products and specify the diseases for which CBD can be accessed; others do not. Ostensibly these laws allow the use of CBD-infused oil derived from hemp or cannabis that measures less than 0.3 percent THC. But a CBD-rich remedy with little THC doesn’t work for everyone. Parents of epileptic children have found that adding some THC (or THCA, the raw unheated version of THC) helps with seizure control in many instances. For some epileptics, THC-dominant strains are more effective than CBD-rich products. The vast majority of patients are not well served by CBD-only laws. They need access to a broad spectrum of whole plant cannabis remedies, not just the low THC medicine. One size doesn’t fit all with respect to cannabis therapeutics, and neither does one compound or one product or one strain. 8. “CBD is CBD—It doesn’t matter where it comes from.” Yes it does matter. The flowertops and leaves of some industrial hemp strains may be a viable source of CBD (legal issues notwithstanding), but hemp is by no means an optimal source of cannabidiol. Industrial hemp typically contains far less cannabidiol than CBD-rich cannabis. Huge amounts of industrial hemp are required to extract a small amount of CBD, thereby raising the risk of toxic contaminants because hemp is a “bio-accumulator” that draws heavy metals from the soil. Single-molecule CBD synthesized in a lab or extracted and refined from industrial hemp lacks critical medicinal terpenes and secondary cannabinoids found in cannabis strains. These compounds interact with CBD and THC to enhance their therapeutic benefits. Cannabis vending was strictly prohibited. One might think that the largest cannabis event in the nation would have cannabis for sale galore, but this was not the case. State law prohibits the sale of any cannabis or cannabis infused product outside of anywhere but the state sanctioned location associated with an I-502 license. So we saw a lot of naive youngsters going booth to booth asking around for cannabis or concentrates.
Maybe 1,000 people showed up on Friday. Throughout Saturday and Sunday there were rumors of between 100,000 to 750,000 attendees that showed up to experience HempFest.

Last year, there were 21+ fenced-off “marijuana gardens.” This year, the organizers had to forego the adult lounges, due to new legal restrictions that state, providing a place for public marijuana use is now a class-c felony in Washington. This did not prevent the public from consuming openly onsite. The local police made themselves known but for the most part had no reason to interact with attendees or vendors.

Ingesting marijuana follows a different pathway - consumed cannabis is metabolized by the liver into 11-Hydroxy TetraHydroCannabinol. This ingested marijuana metabolite is twice as strong and lasts at least twice as long as the inhaled metabolite. Furthermore, smoking marijuana brings on effects within minutes. Ingesting marijuana can take several hours before you feel the effects. It is easy to misjudge the effects of an edible and overdose. Now a marijuana

Start with a low dose of 10 milligrams of THC and wait two hours before consuming any more cannabis. Your digestive system processes food, including pot, slowly. It usually takes about 90 minutes - 2 hours for food to make it to the small intestine where it is absorbed. It can take even longer if you’re eating a substantial meal or a fatty meal. After absorption the cannabis oil will be metabolized by the liver; THC is converted into another chemical called 11-hydroxy-THC and released into the bloodstream. This metabolite is actually very potent, which is why edibles have such a strong effect.

However, when marijuana is combined with alcohol or other substances there can be an additive reaction which can cause very uncomfortable side effects, such as vertigo/dizziness/”the spins” and even more dangerous effects such as respiratory distress or even death.

Another important cannabinoid is CBD. It has less of the psychotropic effects of THC which means that CBD can be used to lessen the paranoid, panicky feelings that can occur with an overdose of THC. Even with your precautions errors can happen and having some CBD capsules or CBD rich flower around for vaping can save you hours of misery. Think of CBD as a sort of antidote that will take the edge off and reduce the bad side effects of too much THC. If you do not have CBD readily available you could try citrus fruits as a weaker substitute.

Marijuana edibles are not a joke! They are medicated foods and there are many laws in place which make it illegal to to medicate someone without their knowledge. This is actually a criminal offense. You can be prosecuted for assault and battery. Medicated foods are not for playing around. They should be treated with the same respect as any other medication.
