Edina Community Education is an integral part of both the Edina Public Schools and our wider community. We believe that everyone can continue learning throughout life.  Be a part of the home food preservation revival! Learn the skills you need to preserve the freshest and best local produce, and keep it handy all year long. You’ll leave the class with the knowledge and confidence you need, as well as a jar or two of produce you helped preserve. Instructor Caitlin Williams is an avid gardener and enjoys learning new things.  Struggling to eat enough fruits and vegetables every day? We have the solution for you. After years of experimenting with green smoothies using non-traditional smoothie ingredients, we have created recipes that will delight your taste buds and fuel your body with energy for life. We will guide you with tips and tricks for grocery shopping, prepping and blending these tasty treats.. Knife Skills Basics

Coffee Cupping Class

 Build your knife skills. You’ll learn knife maintenance and care, what to look for in a basic knife kit, and gain plenty of hands-on practice with lots of muscle-memory-building chopping. Extra knives will be available, but BYOK (bring your own knife) if you have one you want to practice with. You can even learn to sharpen it if it’s dull!

 Learn how coffee is grown, processed and roasted. Explore coffees from a few different cooperatives and estates that grow top coffees through the process of “cupping”—observing the tastes and aromas. Learn a simple method for hand-brewing coffee that will bring out all the flavors, and taste the coffees we cupped when roasted for brewing.

Instructor Kate Moore is a local foods chef who loves the intersection of food and community. Her love of people is reflected in her informal, collaborative teaching style, which is fun, engaging and empowering.

Instructor Tim Chapdelaine of Cafe Imports in Minneapolis has been a leading importer of fine coffees for 16 years. Tim and his well worn passport have spent endless hours searching for great coffees from some of the most remote areas of the world, including Brazil, Costa Rica, Kenya, Nicaragua, Rwanda, and Burundi. Instructor Carey Chapdelaine owns a small local boutique roastery, Troupe Coffee, that sells beans to coffee aficionados and enthusiasts. Carey believes that excellent home-brew coffee should be simple, clean, and accessible.

Meet Amalia Moreno-Damgaard Amalia Moreno-Damgaard’s love affair with cooking began in her grandmother’s kitchen in Guatemala. “I still remember the banana leaves, the chiles, cinnamon, loroco, chipilín, and all those native spices and flowers.” After a first career in international banking, Amalia graduated from Le Cordon Bleu, and has gone on to share her passion for Guatemalan culture through its simple, fresh and delicious cuisine. Her cookbook, Amalia’s Guatemalan Kitchen, is the winner of four national and regional awards. ¡Buen provecho! Happy Eating!

 Whether you are familiar with Guatemalan cooking or not, Mayan stews and soups provide an opportunity to expand your repertoire in a delicious way. You’ll explore pepian (chicken and pork stew), caq ik (turkey, chile, cilantro and mint soup), arroz con chile, pimiento y arvejas (rice with red bell pepper and peas), and freshly-made corn tortillas.

 Guatemalan tamales are not only scrumptious, but also easy to make. On the menu: paches (spicy pork and potato tamales with lime), chuchitos (chicken with chile-sauce mini-tamales topped with cheese and parsley), guacamole the Guatemalan way, and fresco (a fresh fruit-based drink). You will learn about ingredient sourcing and special techniques to save time and effort.

 Street food is fast food in countries outside the U.S., and it is a way of life for many. These easy, fresh, and delicious foods can be prepared in minutes and can be a feast for the eyes. On the menu: tostadas (baked corn tortillas piled with a variety of toppings), mixtas (freshly-made corn tortillas filled with guacamole, sauerkraut the Guatemalan way, and topped with hot sauce and ketchup), rellenitos (sweet plantain dumplings filled with black bean-chocolate puree and topped with canela (Ceylon cinnamon)), and Guatemalan chocolat con leche (hot chocolate and milk).

Food Risotto Basics

 Interested in learning how to make delicious homemade risotto, but feeling a bit intimidated? Join this fun and empowering class where you will learn how to “be the boss” of this naturally gluten-free dish! You will learn to make a basic risotto base, as well as several easy and flavorful variations. The evening will conclude with a family-style meal. Don’t forget to bring a container for leftovers! Whole Grain Risottos  Crave the creaminess of risotto, but looking for healthier choices? We'll explore recipes made with whole grains—rather than arborio rice—to create the same rich and creamy dish using the familiar risotto method of cooking. On the menu: buckwheat risotto with goat cheese; farro-spelt risotto with sausage, kale and tomatoes; oat risotto with peas and pecorini; quinoa risotto with mushrooms and thyme; barley, saffron and Meyer lemon risotto; and bulgur risotto with roasted butternut squash and roasted garlic. Bread for the Senses  Learn the basic technique for baking white Italian bread. We’ll talk about the origin of bread and its important place in our diet. Bring your nose to smell the aroma, your sense of touch to judge the dough’s consistency and readiness, and your taste buds to enjoy the finished product. You will leave with an artisan, home-made recipe that you can knead, rise, bake and enjoy on your own at home. Instructor Mary DePaulis Brindle learned the basics of baking bread from her Italian grandmother on the Iron Range in Eveleth, Minnesota. Be the “boss” of your kitchen. It’s All About Cupcakes!

 It looks like the cupcake craze is here to stay. Are you ready for it? What recipes should I use? How many do I make? How do I fill and decorate them? If these are some of the questions you are asking, then this class is for you! We will walk through the process from the very beginning, using demonstration, lecture and lots of hands-on participation in our class. You will go home with a nice box of finished cupcakes to share with family and friends.

 Ooh la la! You’ve tried the rest, now try the best truffles of all… and you will make them yourself! These handmade candies make wonderful gifts (if you can bear to part with them). We will make five different recipes, and you will take home a classy box with 18 truffles.

Sweet Bites from Giorgio’s Kitchen  Learn to put together a perfect tiramisu by making a very light Italian sponge cake, mascarpone cheese, and the marsala zabaione cream needed for this dessert. Use the same sponge cake base to make a Florentine zuccotto, a frozen rum ice cream cake. Round out your sponge cake repertoire with a zuppa Inglese recipe. We’ll also make authentic almond biscotti and its variations, as well as amaretto cookies, and a fabulous chocolate salame dessert. To finish the class, the secrets of a perfect blueberry panna cotta will be revealed!

Food Markets of India  Get off the beaten path and learn about the customs and foods of colorful India, a country both interesting and challenging for travelers who choose to be more than casual tourists. Observe aromatic spice markets. Learn about India’s most popular fruits and vegetables. See enormous loads of bananas being transported from carts to market stands on the shoulders of slender Indian men. Observe the activity as fresh fish are unloaded from trains at Mumbai’s Victoria Station and then carried on porters’ heads in dripping bins as they dash down crowded city streets toward market stands. See female vendors clad in colorful saris seated on platforms among a sea of colorful produce in Panjim. Learn about dabbawallas and the method for delivering tiffin lunches to Indian workers in Mumbai.

 Hindi-language cinema (informally known as Bollywood) is the largest segment of Indian cinema, which in turn is the most-watched cinema in the world. In 2013, Bollywood is celebrating its 100th year in existence. Get acquainted with this world of fantasy and romance, populated with handsome heroes and gorgeous heroines dressed in a rainbow of colors and lights, stunningly lacking in violence and blood, and rich in history and mythological archetypes. Relish the crazy mash-ups of Indian culture spiced with western pop-culture, the traditional values of Indian society blended with changing values and march of progress at the same time, the wonderful music. Instructor Katherine Pehrson is a musician, educator, student, commentator, actor, docent, and parent. Her fascination with Indian culture began with an interest in fairy and folk tales from around the world, and grew with a trip to India in and a stint as a literary intern for the Guthrie Theater compiling research material for the stage production of the Indian folktale “Naga Mandala.” Since then, she has independently explored the many artistic traditions of Indian movies, dance, music and art with random abandon. Day of the Dead Fiesta  Join us for an interactive family activity with music, stories and activities focused on this bizarre celebration of death. For some Latin Americans, Dia de los Muertos (Day of the Dead) is a joyful celebration of life and death. For Amalia, it’s an exciting opportunity to share surreal spirit and food tales connected to the loved and departed that culminate with delicious cuisine honoring the cultures of two countries: Guatemala and Mexico. Menu of activities: Queso Fundido -cheese fondue; Sugar Skulls; Ayote en Dulce -seasonal gourds in spiced panela sauce; the history and culture of Fiambre -a layered salad consisting of more than 48 ingredients. Global Languages g g Meet Yang Ye Sifu Yang Ye is a native Chinese speaker experienced in teaching a secondary languages. He makes makes the learning easy with a combination of interactive lecture, drill practice and role playing. In addition to his interest in different languages and cultures, Master Ye has 15 years of Tai Chi experience, studying under various Tai Chi grandmasters from China. He combines the traditional method of teaching with modern scientific methods to offer students the maximum health benefits of Tai Chi. He is an avid supporter of evidence-based research of Tai Chi and believes that Tai Chi should be an integral part of our healthcare system in improving people’s quality of life while lowering the costs. He coorganized the first gathering of all Tai Chi professionals in the Twin-Cities in 2005.

Meet Rita Goodmanson Instructor Rita Goodmanson has been playing mahjong “for quite a while.” She first learned to play Chinesestyle mahjong while on a 6-week trip to New Zealand. Back at home, she started to watch and learn about American-style mahjong—a very different game. She stayed patient and observant, and eventually became a teacher of this “game of a thousand intelligences.” She loves introducing her students to the strategy of the game, teaching them to read and understand all the clues along the way.

Forster’s A Passage to India (1924) was selected as one of the 100 great works of English literature by the Modern Library, and Time Magazine included the novel in its list of “100 Best English-language Novels from 1923 to 2005.” The novel is based on Forster’s experiences in India, and asks whether it is possible for an Indian and an Englishman to be friends. District Advisory Councils Edina Public School's 13 advisory councils provide input, advice, direction and insight to District leadership. The District uses the advisory council model to help shape District policies, procedures and practices. Advisory positions include membership on various Teaching & Learning, Finance, and Leadership subcommittees, councils, teams, and task forces. Volunteers fill out an application and appointments are made by District administration and the School Board to ensure a balanced representation of community and staff. Help Provide a Welcoming Learning Environment for non-native English Speakers and their Children For seven years, Mary Streier, Edina Family Center School Readiness Coordinator, has collaborated with Metro South, a local educational collaborative serving adult learners, to provide English as a Second Language (ESL) services to the Edina community. Together, they have worked to provide a welcoming learning environment for non-native English speakers and their children. Streier coordinates child care for preschool children while their parents work on ESL skills with Metro South volunteer tutors. Gina Carpenter, Coordinator of Alternative Educational Services for Metro South Volunteers & Learning Exchange, says that the program “has helped to bridge the cultural divide many immigrants feel when they move to a community like Edina.” Carpenter noted that helping immigrant families make connections to their school district makes them feel a part of the community. AARP Driver Safety - 8 Hour Introductory Course

 The state of Minnesota offers a 10% insurance discount to adults 55 and older completing this 8-hour course. You will learn tips to keep you driving longer safely, and how to cope with changes that occur as you grow older. At the end of two 4-hour sessions, you’ll receive a certificate to present to your insurance agent. Coffee provided. Taught by AARP certified instructors. Red Cross First Aid  Respond appropriately to first aid emergencies by recognizing a sudden illness or injury, summoning help, and providing care until advanced medical personnel arrive. Our Technology Learning Lab Edina Community Education and Edina Public Schools have teamed up to bring a state-of-the-art learning lab to the community. Our new computer lab, located on the third floor of the Edina Community Center, features iMac computers with both Mac and PC platforms and all current software. All of our community education technology classes are taught in this classroom.

 Don’t be left behind! This hands-on class will help you get started with what you need to get going, or help you take your skills to a new level of proficiency. Learn how to use the mouse properly, access programs, build folders and save your documents. You’ll learn how to connect to the Internet and find some of the free applications available online. Aerobics

 Start out with 30 minutes of aerobic cardio followed by 30 minutes of simple core exercises. (Your core is your center and your “corset,” and responsible for balance and posture.) Use weights, stability balls, mats and your own muscle strength to create a toned backside, a smaller waist, and strong, flat abdominals. Fitness Weights and Circuit Training

 Develop your all-around muscle strength through circuit training. We use the resistance machines and free weights used by our student athletes in the bowels of the Edina Community Center. Find a routine that meets your needs, and work at your own pace. End your workout with group exercises focusing on our abs. Join our supportive community of adults committed to healthy living, to each other, and to building community! Instructor Justina Debruzzi attended Centennial High School, where she played hockey, soccer and lacrosse. She played hockey for the University of St. Thomas women’s hockey team, and now plays rugby for a Minnesota women’s league. She has a passion for physical health and fitness, and is excited to share her knowledge with the wider community..

So Much More than a Class Over the years, members of the Weights and Circuit Training class have come and gone, yet a core group has been together for over ten years. They meet once or twice a week to lift weights and do core conditioning in the weight rooms used by student athletes. But this is so much more than a class. These are neighbors with an active sense of community, committed not only to a fitness and wellness lifestyle, but also to each other. They have supported each other through many of life’s transitions, including births, deaths, job changes and health challenges. They regularly meet outside of class, for lunch, for walks around Lake Harriet, or coffee at Sebastian Joe’s. Though many of them have been together for a long time, they are a very friendly and open group, and they invite you to join them!

Ballet Sculpting Barre

 Enjoy a fun, invigorating workout that develops muscular endurance, dynamic balance, flexibility, and core strength. Blend classical ballet exercises with a special focus on core fitness. Intermediate Kripalu Yoga

 Interested in deepening your yoga physically, emotionally and spiritually? Have some prior experience with yoga? Looking for a mindful, flowing and creative practice? You’ve found it! Our intermediate-level yoga class is more challenging than a gentle class, but includes modifications of many basic, foundational poses to ensure safety and enjoyment. Learn to listen to your own body as you are guided through a series of asanas (postures), pranayama (breathwork) and meditation. Kripalu yoga uses smooth transitions and proper alignment principles informed by an in-depth understanding of anatomy to learn body awareness.

 Continuous flowing movements combined with yoga postures and set to creative music make this an effective workout. Class begins with warm-up exercises, then moves to standing postures, and ends with seated postures. Appropriate for new and continuing yoga participants.

Zumba

Zumba®

 Zumba combines dance and fitness moves. Inspired by Latin dance music and international rhythms, it uses a variety of styles, including cumbia, merengue, salsa, reggaeton, mambo, rumba, cha-cha and hip hop. Music includes both fast and slow rhythms to help tone and sculpt the body. You could burn between 350 to 1100 calories per class, depending on how you exert yourself. Ditch the workout. Lower Impact p Quite A Stretch  Stretching is a great way to gain flexibility, warm up the body, loosen muscles to prevent injury, and stay limber. We will stretch for an hour each week focusing on different muscle groups, stretching techniques, and alignment. You will learn to stretch effectively on your own, and how to help keep your body working efficiently with a low-impact routine. Please wear comfortable clothing and bring any pillows/cushions you may need when we’re on the floor.  Are you looking for a fun way to work out? Try water aerobics! The buoyancy of the water helps to protect muscles and joints from injury. We’ll work through a warm up, strengthening and toning exercises, 20-25 minutes of aerobics and a cool down. You don’t have to be a swimmer or even get your hair wet!

 Join us in the pool for some high intensity training. Use the natural resistance of the water to improve your metabolism. It has been proven that participants using high intensity intervals vs. moderate intensity training have improved their metabolic resting rate. Workouts will be in both shallow and deep water. Dr. Charles Reznikoff, a physician and addiction specialist at the University of Minnesota and Hennepin County Medical Center, is a talented presenter who is able to look at both sides of the marijuana use debate. Making Good Choices in Middle School

 Now that the fall semester is underway, we invite you and your student to join us for a discussion on the choices and challenges that students in middle school face. We will talk about a range of topics, including academics, activities, social life, stress, and alcohol, drugs and tobacco. We’ll focus on making transitions and maintaining a healthy balance. A student/ parent panel will provide perspectives and first-hand experiences, and break-out discussion groups will provide opportunities for adults and students to ask questions and share ideas with peers. You’ll walk away with “talk” questions that you can use to continue the conversation at home.
