Spring Celebrations—Brunch

We’ll start with “Empanadas,” tasty little pastries filled with beef, tomatoes, potatoes and herbs. We’ll then prepare authentic Mexican rice, prepared with onions, garlic, tomatoes and fresh coriander leaves. Fajitas will follow—tender strips of beef and chicken along with fresh sautéed bell pepper and onion wrapped in warm tortilla shells and served with fresh tomato salsa, guacamole and sour cream. Learn to cook low calorie Indian meals in a very short period of time. Get hands-on instruction of Indian cooking covering all regions of India with special emphasis on dishes from Calcutta-Bengal. We’ll begin by making Mushroom Lasagna so that it will be ready by the end of class to enjoy. Learn how to make basic, spinach and roasted pepper dough, from which we shape Fettuccine, Pappardelle and Capellini. We’ll cover stuffed pastas, like Ravioli and Manicotti with filling like butternut squash, meat sauce, spinach, and ricotta cheese. A great class for pasta lovers! Giorgio Cherubini ECC 165

Enjoy the marvelous flavors of traditional Southern Italian cuisine starting with “Panzanella,” a toasted bread salad with fresh garlic, sliced onion, cucumber, peppers, and tomato tossed in a light vinaigrette. Succulent breast of chicken follows, sautéed with thin sliced prosciutto ham and fresh sage in a lemon, caper and artichoke butter sauce. Potato gnocchi (Italian dumplings) is next tossed with fresh basil pesto. Artisan Bread in Minutes Wow your family and friends with fabulous, delicious homemade artisan breads! Learn to make savory, healthy breads in less than 5 minutes using dough that you mix in minutes and store in your refrigerator for up to two weeks. Sample several breads in class, mix up a batch of dough to take home and receive recipes for a variety of artisan breads. Outstanding Pasta Sauce!

The Art of Sushi

Italian chef Giorgio Cherubini will show you how to make the best pasta sauces for special occasions and everyday dining. From a rich Bolognese meat sauce to be tossed with pappardelle or to be layered in your lasagna, to a light vodka cream sauce to be tossed with smoked salmon or caviar with green peas and Parmesan cheese. Using a basic tomato sauce, learn how to make Puttanesca, Arrabiata, Spaghetti alla Norma, Tonnara, Mare e Monti, adding and using readily available ingredients from your pantry. Basic pasta making techniques and pasta shapes will be part of the course. ECC 165

Come explore the world of Sushi as you create this Japanese delicacy. We’ll begin by preparing sushi rice, then learn the art of “maki-sushi” rolling rice and various fillings in nori (dried seaweed sheets). Options will include panko-breaded shrimp, seared tuna, teriyaki chicken, crabmeat, avocado, cucumber and more. For the adventurous, there will be raw tuna to prepare “nigirisushi” (on hand molded rice). European Style Breads Chef Giorgio Cherubini will show you the secrets to baking the perfect loaf of bread. Giorgio’s expertise comes in handy to make the healthy Altamura Bread or Golden DurumFlour Bread from Altamura, Italy, a great all around bread, using a starter that has been in the family for 250 years. Next are Semellini, the perfect crunchy dinner rolls from Florence also used to make wonderful sandwiches. We will also make the best Giorgio’s bread—Pane Toscano—in both the white flour and FlaxSeed whole wheat versions, the ultimate foil for bruschetta and bread puddings.
