One of the turning points of Head chef Dale Scanlon’s career came while working at a country pub in rural Australia. Each week he would be presented with a collection of produce that had been foraged and selected at the market to make into a week’s worth of meals for customers.

"I did a stint in country Victoria just before I came here. The owners [were] from Melbourne and they had some really good ideas for what they wanted to do," he says. "They used to buy me ingredients and say, ‘Here you go, this is what you’ve got for this week, figure something out’. And that’s probably the best experience I’ve ever had because it gave me a chance to think and deal with ingredients I never had before." "Even though I’ve been a chef for close to 30 years you’re constantly learning and picking up new ideas and I think that’s what keeps things fresh and keeps you going." It was during one of these moments at the country pub when Dale was introduced to pheasant and saltbush for the first time, discovering the flavours and depth these ingredients gave to dishes. Dale now harnesses the skills developed during this exploratory period of his career when creating dishes at The Cremorne Hotel on Pakington Street. 13

For the last six years, Dale’s menus at the Cremorne Hotel have catered to a range of diners; from those looking for a nostalgic, homely feast through to those looking for something a little bit more adventurous. Something Dale loves to see at the venue is when diners decide to step out of their comfort zone and order one of the more colourful dishes on the menu, like the roasted pork chop with celeriac mash, apples and prunes or the crispy chilli beef salad with vermicelli noodles, peanuts, green papaya, fragrant herbs, fried shallots and roasted sesame dressing. "The thing that sticks out with me is customers who come here and they try everything; an entrée, a dessert and things on the menu that are less mainstream," he says. "I often put a few things on there that I like to see if they do sell. It’s always good for me if people have those menu items and say they’re the best things they’ve ever had. That’s basically why I do it, I love to get feedback on menu items from those people." Other popular dishes at The Cremorne Hotel are the Greek salt and pepper calamari, the variety of chicken parmigianas and buttermilk chicken burger. These dishes are taken to the next level through Dale’s knowledge of pairing flavours and the strong focus on sourcing quality local produce. "We try to use a lot of local ingredients," Dale says. "We have a meat supplier from Colac who sources the best possible meat from the area at the time and he’s constantly updating me on what’s available and what’s good." Other local suppliers The Cremorne Hotel uses include Born and Bred for baked goods, seafood from White Fisheries in Drysdale and fruit and vegetables from Harvey’s in Highton. Ensuring the highest quality produce is extremely important at The Cremorne Hotel, and it’s one of the reasons behind their soughtafter steaks on the menu. "We sell a lot of steaks here and we really pride ourselves on sourcing the best possible 14 14

Espresso Martini Panna Cotta with Roasted Strawberries and Espresso Sauce serves 4

Ingredients:

• 2 1/2 gelatin sheets • 125ml Espresso Martini (Pre made from liquor shop or substitute with espresso coffee) • 50g brown or raw sugar • 375ml double cream • Pinch salt • Cooking spray

1. Soak gelatin in bowl cold water, set aside.

1. Mix water, sugar and strong coffee in a pan over low heat until sugar dissolves completely and liquid thickens, forming a syrup.

Espresso Sauce Makes approx 300ml • 75ml coffee, very strong • 100ml water • 100g sugar • 25ml coffee liqueur such as Kahlua, optional

2. Combine Espresso Martini and sugar in medium saucepan and stir until sugar dissolves. Stir in cream and salt. Bring to boil and immediately remove from heat. 3. Squeeze water from gelatin. Add gelatin to warm cream mix and stir until completely dissolved. 4. Pass mixture through fine sieve and whisk over ice bath until cold. 5. Pour mixture into a jug. Spray 4 dariole moulds (available at Spotlight and most supermarkets) with cooking spray and pour mixture 1cm from top of mould. Refrigerate until set. Approximately 4-5 hours.

2. Switch off heat and add coffee liqueur. Serve warm or cold.

to serve To unmould Panna Cotta, carefully run a warm knife between the Panna Cotta and the mould. Turn upside down onto serving plates or in bowls. Place a few strawberries along with some juices beside the Panna Cotta. Serve the Espresso Sauce either warm or cold in a little jug to the side or poured over Panna Cotta. Decorate with a few coffee beans on top of Panna Cotta if available.

While the secrets of cooking the perfect steak are staying in The Cremorne Hotel kitchen for now, Dale is sharing the recipe for espresso martini panna cotta with Eat & Drink readers. "I’ve gone with an espresso martini panna cotta, to keep it as an easier dish for people to make at home," he says. "So that’s just served with some roasted strawberries and espresso sauce." A feature on a recent Cremorne Hotel menu, this dessert was an incredibly popular item for those wanting to strike the perfect balance between cocktail and sweet treat. While it mightn’t be available at the venue anymore, it’s something you can now make at home. Dale’s biggest tip when creating this dessert is to pay particular attention when measuring ingredients. "With the Panna cotta you do have to stick to the precise ingredients because you’re working with gelatine, and it could get too hard or too soft," he adds. Another key step is the espresso martini flavour itself; which Dale says can be purchased pre-made from a liquor store or made at home. After it’s set to your liking, simply serve with some roasted strawberries and an espresso sauce and you’ve got yourself an indulgent treat. For those who’d prefer to have their dessert dining out, The Cremorne Hotel welcomes a brand-new menu with the arrival of autumn. From March, there’ll be new options for lunch, dinner and dessert and the special nights during the week will also make a return. There will be a night for the burger lovers, parmi lovers and on Wednesday a night full of pub classics to choose from paired with local wines and beers to wash it down with. Whether you’re looking for something adventurous, comforting or an Australian classic, you’ll find a food option to suit any mood you’re in at The Cremorne Hotel. And let’s not forget the espresso martini on tap as a quick night cap! 16

While many of us were recovering from the hectic summer holiday season and settling into the new year, Moorabool Valley Chocolate owner Lynne Meek was diligently preparing for one of her busiest times of the year: Easter.

As each piece is made and painted by hand by the team, every egg, bunny and bilby is truly one of a kind. “We’ll be doing our hand painted Easter eggs again this year and because they’re hand painted, there’s no two the same,” Lynne says. “[They are all] different designs.” Colour certainly isn’t lacking in these handpainted varieties, with the popular “Galaxy” painted eggs boasting vibrant pinks, blues and greens on a delicious base of milk, dark or white chocolate. Lynne and the team also offer the option of making custom egg orders. Eggs can be 26

In addition to the range of Easter eggs, bunnies and bilbies available, 2020 sees the return of an Australian icon to the chocolaterie’s offering: the chocolate koala. The koala is a fitting addition this season as one of Australia’s most popular native animals and given the devastation from recent bushfires. The entire Easter range is the perfect locally made solution to seasonal hampers or for a sweet treat for colleagues at work. Despite entering into one of the busiest times of year for the business, Lynne still dedicates time to explore new chocolates and varieties to

bring to her customers throughout the region. The newest on that list is the luxury chocolate range made by Valrhona, a premium chocolate manufacturer based in the small town of Tainl'Hermitage in Hermitage, France. “I’m just in the process of organising things so we can start getting some of that in,” she says. “Valrhona comes from France and it’s slightly more expensive than the regular chocolate. It’s a very interesting range as it’s a fruit chocolate with different flavours like passionfruit, Asian citrus and strawberry.” What’s particularly interesting about this “fruit” chocolate is that there are no actual fruit pieces, the flavours are blended in and as a result each blend matches the colour of its key ingredient. This collection by Valrhona is called the Inspiration range and is the first ever fruit and nut couvertures. Flavours included in the range include almond, strawberry, yuzu and passionfruit. It’s a reimagining of nut and fruit chocolate and what will surely be a welcome

addition for chocolate lovers in Geelong and beyond. Lynne is yet to decide how the flavours of this unusual chocolate range will best be showcased, but that’s half the fun of making one-of-a-kind creations in store. “I always love experimenting and trying new things and introducing customers to things they may not know about,” Lynne says. The Valrhona chocolate range isn’t currently available in Geelong. It’s this joy for discovering new flavours and techniques that also led Moorabool Valley Chocolate to be the first in the region to introduce Geelong to ruby chocolate. Ruby is the fourth variety of chocolate made worldwide, following on from its predecessors of white, milk and dark. The iconic pink-hued chocolate has been described as tasting ‘sweet yet sour’ with ‘little to none’ of the traditional cocoa flavours of milk and dark chocolate. With these flavours in mind, Lynne created a ruby nougat which has been one of her most popular items ever since. 27


“The flavours blend really well with the ruby nougat, so we always have that [in store]. It’s very popular,” Lynne says. Another popular staple at Moorabool Valley Chocolate is the caramel blonde. Exhibiting a golden, caramelised tone, the blonde is made with plenty of heart over a slow and dedicated creation process. “It’s got to be cooked at a low temperature for several hours and then it has to be tempered on a table. But once that is all done it’s very nice and very caramelly. Essentially, it’s white chocolate cooked slowly, so the sugar and the milk caramelise,” Lynne says. In addition to the display cabinet full of gourmet chocolate pieces, bars and nougats, the child-friendly tearoom and café also has a selection of mouth-watering cakes, slices and other sweet temptations and the occasional savoury dish in addition to a choice of sandwiches and light meals as well as a range of hot and cold beverages. Lynne is passionate about having options available for those with dietary requirements and allergies. As a result she has vegan and sugar-free 28

On a chilly winter’s day several years ago, Christine Ciancio sat at her home on the Bellarine Peninsula and made the decision, then and there, to write a cookbook. The idea had been building over many years and you could say it all started when Christine was just eight years old cooking dinners for her brothers after school. 37


I’ve been creating recipes ever since I was a little girl and I think I was eight years old when I started cooking for the family, -Christine Ciancio

Christine’s early introduction to cooking led her to running a small café at the back of an antique centre in Geelong. The café was called Legends of the Screen, taking inspiration from the black and white romantic movies of the 1940s and 1950s. At Legends of the Screen, Christine made everything from soups, pastries and pies to cakes and cookies. Hidden behind Christine’s passion for food and the joy of serving a freshly homemade dish, her body was disagreeing with a lot of what she was dishing up. A series of life events, increased stress and health concerns heightened Christine’s 38

allergies to certain foods and she was eventually diagnosed with an inflammatory bowel disease, collagenous colitis. While the diagnosis was the answer she’d been waiting for, it meant she had to relearn everything she knew about food. As she explains in the introduction of her cookbook, the diagnosis sent her on “a journey of discovery, throwing out all I was taught about food from a young and impressionable age and embracing a new way of eating. A way to help heal my damaged gut and get a better quality of life”. Christine’s journey started by trialling a paleo diet with her husband, Nick. As she explored this new diet, she started the Instagram account ‘Grain Free and Happy Kitchen’ where she shared her recipes and thoughts throughout her food journey. Her path to clean eating ultimately steered her towards the release of her first-ever cookbook, Cook Food, Eat Clean, Live Happy. The new 109-recipe cookbook is a godsend to those with dietary requirements as Christine guides those cooking at home how to make everything from

I’m not a doctor and I’m not a nutritionist but if I can help other people going through similar things to what I went through myself, and I can, it’s those people I want to help.” And the book isn’t just for those whose body needs it, Cook Food, Eat Clean, Live Happy is also a great option for people who simply want to substitute some healthier meals into their lifestyle.

Since sharing her recipes and health journey online, and with the release of Cook Food, Eat Clean, Live Happy, Christine has been contacted by many others going through similar experiences to her, but finding solace in the recipes she provides. Recently released figures by the Australian Bureau of Statistics reveal that almost four million people in Australia reported avoiding certain foods because of an allergy or intolerance, so it’s quite clear Christine isn’t alone in her experience. More often than not these allergies appear later in life, like they did for Christine, and it may feel like everything you’ve ever known about food has been flipped on its head. One of her biggest tips, for those who are either having to make changes or looking to make changes to their diet, is to keep things simple. “I love a lot of the recipes but one of my staples are the crepes because I can’t eat bread and I have to be careful with eating too many nuts,” she says.

“I freeze them and then when I need them for breakfast or lunch I defrost them and they’re so versatile. That’s what I say to people, ‘If you’re going to cook, make it easy and cook extras to put in the freezer’. So when you’re in a rush it’s better to get something out of the freezer than eat something bad for you.”

2020 Festival Line Up Lovers of culturally rich music, dance and arts rejoice - the National Celtic Folk Festival has revealed a broad bevy of talent as part of its line-up announcements. On the International front, the National Celtic Festival will give a big winter welcome to Dublin-born singer and bouzouki player Dàoirí Farrell - one of the most important singers to come out of Ireland in recent years. If it’s high-octane folk you’re looking for then let us introduce you (and Australia) to Boxing Banjo. Awarded the most exciting new act on the Irish music scene, this four-piece band will get you on your feet with an exciting mix of traditional Irish music and American old-time and bluegrass music. The highly acclaimed Scottish harpist Rachel Hair - one of the UK's finest performers of the lever harp - teams up with Ron Jappy, one of Scotland’s leading guitar accompanists who has toured with folk music heavyweights Mànran, Skerryvore and Jamie Smiths Mabon, just to name a few! How The Q Train Works As the train whistle sounds your journey begins, travelling along the beautiful Bellarine Railway, offering views of the rolling hills of The Bellarine. Your first course will be served soon after departure. Between the set courses of our degustation menu, you are welcome to walk around the train, or enjoy a relaxing drink in Club Loco. Feel free to explore the train and soak up the rich history. The Q Train will pause at Suma Park Historic Homestead before travelling alongside beautiful Swan Bay where it will stop again allowing you to embrace the relaxed ambience while you dine prior to continuing on its journey. The return journey takes approximately three hours and as The Q Train closes into either Queenscliff or Drysdale Railway station, enjoy a final cup of coffee or tea, perhaps with a digestif of your choice?

The wait staff are keen to meet your every need and answer any questions you may have regarding the train or surroundings. We also provide reference booklets on each table which are full of information about the train, the menu and our local suppliers. The Q Train has a toilet in each carriage, however they cannot be used when the train is stationary. There are also toilets at every station. How Will A Function Operate On The Q Train? We have two group dining carriages seating 28 and 40, groups are always seated together and allowed to move around the train. The bar and lounge carriage known as Club Loco can also be accessed at any time. All the carriages have walkthrough areas at the end, so groups are able to move around freely between courses. A dégustation is a great way for restaurants to take their diners on a culinary journey. (A metaphorical journey – not all restaurants are on wheels!) With a number of small courses, guests have the opportunity to experience various flavours and combinations that, while being quite different, all complement each other. Sometimes dégustations are referred to as "tasting menus" or "chefs selections" or "feed me menus". The word "dégustation" comes from the French word for taste. Will We Be Too Full Or Still Hungry At The End? Just like baby bear's porridge, we think the amount you receive over your three hour culinary journey is just right. The portions are carefully planned so you can appreciate every course, and not be uncomfortable when you disembark. Of course, not everyone is the same. Don't starve yourself to 'make room' before you come aboard, and if you're joining us for lunch, you will still have room for dinner that night. I'm Vegetarian, Vegan, Or Pescatarian. After 365 days of using Just Composting’s services, a small cafeteria had diverted 17 tonnes of organic waste from going to landfill to instead being transformed into nutrient-rich compost.

While this cafeteria has made the decision to reduce their waste, on average 60% of what foodrelated businesses throw in the rubbish bin has the potential to be composted.

Using his expertise and know-how, Just Composting was born. As simple as the name suggests, Just Composting supplies local food businesses with an 80 or 120 litre bin that is collected as often as two times a week through to once a fortnight.

Across the country each year, approximately 20 million tonnes of rubbish is sent to landfill, where a large percentage could have been repurposed.

Many businesses are often surprised at what can be composted, with items such as coffee grinds, teabags, meat, bones and food scraps able to be placed in a Just Composting bin.

Armed with these facts, Laurence Clarke saw an opportunity to help other small businesses in the region reduce their organic waste output and in turn remove excess waste from going to landfill.

Once the bin is installed, which for many businesses can be easily placed in the kitchen, it’s a simple change of putting food scraps in the supplied bin instead of in the rubbish bin. This small change in habit has many benefits, and ones that are often felt immediately.

After a lifetime of growing up on a farm and now operating his own, Laurence understands the benefits of a circular economy and the potential that organic waste presents. "Why bother

going into the [skip] bin and all the birds were making a mess. The birds are gone now," Laurence says. Other benefits Just Composting users have noticed are less trips to the rubbish bin outside, a saving on the purchase of bin liners, not as much manual handling, less odorous waste and, for most businesses, an actual monetary saving overall. "It doesn’t cost any more to go the green way," Laurence says. "We’ve done tests and studies with customers and it was even-steven or slightly cheaper." "They also save on their 25 trips to the rubbish bin, lifting plastic bags and, the wheelie bin comes straight into the kitchen, if they’ve got room, and they just wheel it out once a day." The dirty work is also taken care of, as when Just Composting bins are collected they are replaced with a freshly cleaned bin to start fresh for another week. Your regular rubbish bin will

also be noticeably less odorous as it will no longer contain organic materials. "They’re not using plastic bags because they put it straight in the bin and I wash the bin and give them back a clean bin," he says. After collecting the materials, Laurence takes them back to his farm and business in Anakie and prepares it for the three stages of composting: mesophilic, thermophilic and maturing. "The food scraps break down within five days, but it takes three months from start to finish," Laurence says. When the organic waste becomes matured compost, it can be put to use in providing nutrient-rich stimulant for crop growth. By putting organic waste back into the soil, it improves the natural soil fertility, so it’s even more possible to grow healthy crops without the need for harsh, processed fertilisers.

As well as minimising the use of processed fertilisers, the other major benefit to using Just Composting’s services is that the whole process helps minimise harmful greenhouse gas emissions. PIKNIK CafĂŠ Scooping dream ice cream for all seasons

About halfway along the Queenscliff Road at PIKNIK, owned and operated by David and Denise Humphris, Denise has been, literally, churning out her house-made ice cream since 2016, and it has become a firm favourite with locals and visitors alike. Their chiller cabinet is filled with favourite flavours including vanilla bean, chocolate, peppermint choc chip, coffee, salted caramel, a vegan-friendly Black Hawaii which is made with coconut and chocolate and plum jam, the newest flavour to join this frozen family. The ice creams have an intense flavour and are very creamy. Denise uses seasonal produce including fruit from around the Bellarine and Sungold full cream milk from Warrnambool. To produce a batch of ice cream, Denise starts early in the morning, while the kitchen is cool, to make the anglaise which is the creamy base. It has to be cooled in the fridge for a few hours and then poured into the Telme Italian churner. It takes about 30 minutes to churn each batch. The longer it churns, the lighter the ice cream. 96

Following the churning process, Denise skilfully pours out the ice cream into five-litre stainless steel containers, ready for the chiller cabinet. David says, “Each week during summer time we make about 25 litres of vanilla, 10 litres of coffee and about 5 litres of each of the other flavours. They are all gluten free.” “The ice cream is served in waffle cones and cups and we also have 500ml take-home packs,” adds David. He continues, “We also use it in our spiders and milk shakes, and our iced coffee has vanilla and also coffee ice cream which is combined with our Allpress espresso coffee.” David comments that they have found that their ice cream is of good quality and has stood the test of time and is what their customers like. As for other PIKNIK offerings, David continues, “We’ve got the weekend cellar door, next door, with Anthony Brain from Livewire Wines on The Bellarine. He gives wine tastings and showcases our region’s fine wines. This is a great drawcard for us.”

“We’ve got a big, long table in there which we use for functions and big luncheons. We make all the food here, and also supply catering for outside events such as birthdays and weddings,” adds David. “We’re planning quarterly dinners now that the summer season is over, which is a menu event. We’ll get 40 people in to cook and cater for and we’ll get Anthony involved in that, too.” David says, “We are keen on showcasing seasonal and local produce where we can; tomatoes from up the road at Lonsdale Tomato Farm and goats cheese from Drysdale. Wine Geelong Update

"As a region we have been very fortunate not to be impacted by the devastating bushfires which has caused havoc in so many wine growing regions. Our heart goes out to all our fellow winemakers who have lost their harvest. Many areas in New South Wales, Canberra, Victoria and South Australia have been affected," Wine Geelong president Robin Brockett says. The end of summer often signals the beginning of the harvest, with the month of March dedicated to this step of the wine-making process. Following some heavy rainfall in the region, crops are a vibrant green with plenty of fruit to create the next year’s vintage.

The past few months have been a challenging time for wine growers across Australia. While bushfires ravaged much of the country, our region escaped the devastation. Thick smoke blanketing Geelong and surrounds served as the only reminder for those who weren’t so lucky.

"Crops are shaping up to be average to slightly below but quality once again shaping up to be very good. It’s an exciting time of the year with all the hard work of the past 12 months coming to fruition. By the end of April all grapes should be safely tucked away in the winery and well on the way to creating another great vintage," he says. As crops are harvested, they are soon crushed and pressed, before moving on to the final steps of making wine – the last of which, is of course bottling. Two of the next few wines to release is the Pinot and Chardonnary varieties, both of which will be celebrated at dedicated Wine Geelong events in May.


The Pinot Affair runs for the third year, once again showcasing the world-class cool climate Pinot Noir of the Bellarine, Surf Coast and Moorabool Valley. This elegantly styled event takes place at the Deakin Waterfront café on Saturday 30 May.

A Splash of Chardonnay is a welcome addition to the Wine Geelong event calendar, forming a perfect trio of events for our most well-known varieties. Expanding these celebrations beyond our region, will be another new event from Wine Geelong.

The inaugural A Splash of Chardonnay takes place on the same weekend as the Pinot Affair at Deakin University Waurn Ponds campus on Sunday 31 May.

Held on Saturday 5 September for the first time this year, Cheers Geelong sees 20 plus wineries head up the highway to Williamstown Hall. The event will show exactly why Geelong is booming as one of Victoria’s premium wine regions.

"We are very excited with this new initiative which will showcase the world class Chardonnays the region produces," Robin says. "Along with Pinot Noir and Shiraz we are very, very fortunate as a region to have three varieties we are world class at producing." "A Splash of Chardonnay dovetails in beautifully with Pinot Affair and gives people an opportunity to sample both varieties over two days. There is incredible diversity of style produced by all our winemakers and will demonstrate their fantastic skills." Geelong Chardonnays have been described as elegant and with a sublime mineral complexity. The region has benchmark Chardonnays that weave texture, finesse and complexity with the finely focused citrus and stone fruit characters. Coupled with gentle and supporting French oak use, the wines produced can be very classy indeed.

"Although we love people visiting our wonderful Geelong region, this is an opportunity for us to showcase our wines to our many followers in Melbourne," he says. Back in Geelong a handcrafted walnut Wine Geelong Honour Board hangs proudly on the wall at Geelong Cellar Door – a popular haunt for wine lovers in the region. The board features incredible workmanship by Olivia O’Connor, serving as a fitting tribute to the local talent in the wine industry and all that’s been achieved to date. "This is very important to celebrate our wine making history and the pioneers who have got us to where we are today," Robin says. "It also recognises the great achievements of winemakers over the past 20 years in winemaking. The future is certainly very bright for the Geelong region." 113

After a stint abroad working in construction, Tim returned to the wine industry in Australia where he soon attained a Bachelor of Wine Science. Following this degree Tim delved deeper into the art of viticulture while working at Brown Magpie Wines, Bellbrae Estate and Scotchman’s Hill Winery before making his start at Terindah Estate. With cooler overnight temperatures and extremely fertile grounds, Timothy enjoys the luxury of making wine at Terindah Estate. Mentored by highly esteemed winemaker, John Durham, Tim ensures grape quality and fruit characters are ideal at harvest, capturing the unique characteristics of each vintage and varietal to produce exceptional wine. With a penchant for Burgundy varieties, Tim says winemaking is the only career he hasn’t grown tired of. “I’m continuing to become more and more excited about wine and love its variety and dynamic nature. Winemaking is a healthy mix of art and science which suits my personality to a tee.” In addition to the quality wine produced, the stunning architectural event spaces and

A powerful Pinot Noir from a warm vintage. Fruit, acid and tannins are all in balance so it’s a wait and see how this evolves with at least 5 years under its belt. It will reward the patient. I was unsure what to expect with Fiano coming from King Valley but it works and works well. Think ripe Summer fruits, stone fruits, melon and pineapple. The variety is quite textural sitting somewhere between a Pinot Gris and Viognier. I’m glad that the acid has been kept in check which I think would come naturally coming from King Valley. Deep red/ purple in colour. Full ripe fruit without pushing the boundaries of overripe fruit. Aromas of blood plums, dark berries and dark chocolate. Powerful yet polished mouthfeel showing great depth and purity of fruit. Deft handling has ensured this wine hit the high notes from the start to the finish. All class. Scotchmans Hill 2014 cornelius syrah Bellarine Peninsula

14.5% abv

Vivid purple red in colour. Initial nose of liquorice, dark berries and spices. Partial whole bunch has been used to add both further complexity to both the palate and structure. This is Flagship Scotchmans Hill and you can tell as it evolves in the glass displaying both fruit purity and great winemaking techniques. I can’t imagine there would be much left of this wine so grab it while you can. Food: Mediterranean lamb cooked in a tangine Drink: 2020–2027

Scotchmans Hill 2017 Shiraz Bellarine Peninsula

14.5% abv

Deep red in colour with beautiful depth. Aromas of dark berries, liquorice and black cracked pepper. It’s interesting to note that the clonal selection for the shiraz is PT23 which is used in a lot of cool climate regions for their Shiraz. These are the aroma profiles in which is indicative of this clone and also the regional style. This is a extremely well made Shiraz showing lashings of fruit on the palate, which seamlessly dovetails into a long finish with touches of French Oak. Shimmering mid gold in colour. Aromas of Nashi Pear, white peach and exotic fruits. This is quite a rich oily/ textural Pinot Gris that shows a generous mouthfeel. Similar flavours roll out across the palate whilst maintaining a good fruit, acid and tannin balance. This Burgundian Grape variety is well and truly entrenched with the local wine scene. Vibrant red in colour in colour. I’m not from an European background and you may be wondering why I say this in a wine review? The answer is in my travels of the world with food and wine I have never encountered a wine that smells more of European Sausage with sage & pepper than this. Now before you question this, I am saying this as a positive. This is a food style wine that should be in every Australian, European themed Restaurant. Beautifully balanced with poise and polish.
