Sam Winchcomb at Elephant & Castle Hotel

Prosciutto Wrapped Chicken Breast stuffed with goat cheese, spinach and dates

serves 4

Ingredients: • 4 chicken breast fillets, skinless • 12 long prosciutto slices • 200g of soft goat cheese • 50g of dates, diced • 100g of spinach, chopped • 2tbsp olive oil

Method: 1. Place chicken breast on a chopping board and cover with wax paper. Using a mallet, start in the middle of the chicken, where the thickest part is and pound out chicken breast so to make flat. 2. Lay chicken on top of 3 slices of slightly overlapping prosciutto.

4. Roll into a sausage shape and wrap tightly with cling film.

7. Finish in a large frying pan with olive oil over medium-high heat. Cook chicken breasts for about 6 minutes until browned on all sides. Slice into four medallions and serve with roasted kipflers and garlic tossed broccolini and bok choy.

3. Combine dates, goat cheese and spinach together in a bowl. Pipe one quarter of the mixture across the flattened chicken breast.

5. Repeat for remaining prosciutto, chicken and mixture.

to serve: Serve with red wine jus.

6. Cook in a steam oven or in simmering water for 40 minutes or until the core temperature reaches 75°C.

With new owner Darryn Lyons, who purchased the business in 2012, the Elephant & Castle was unrecognisable when Sam first returned approximately five years ago. The refreshed space highlighted Darryn’s extensive prized photography collection with images of James Dean, Elizabeth Taylor, Princess Diana and many more lining the walls. Combined with an array of collectables, taxidermy animals and vintage items, these changes added a modern flair to the previously dull space. Amongst his favourite elements of working at pubs, Sam lists the ability to please people with the dishes he creates while bringing exciting flavours to traditional meals. Since Sam rejoined the team, his influence from his time abroad and finding his feet at pubs early in his career are felt throughout the menu. As a result, one of Sam’s favourite dishes at the moment is one from England. “The beef Wellington is one of my favourite dishes at the moment; it’s a very traditional English dish,” he says. “We just started to put it out here and people love it and it’s one of our signature dishes.”

Chocolate Mousse Cake

MERINGUE BASE AND LID

• 100g hazelnut meal • 1tbsp corn flour, sifted • 4 egg whites • 240g sugare

• 125ml thickened cream • 200g dark cooking chocolate • 200g white cooking chocolate • 4 egg yolks • 2 egg whites, whisked until soft peaks form • 375ml of cream, whipped

To assemble, place meringue base in an expandable cake tin, then add mousse and allow to set in the fridge slightly before adding the lid.

Method: 1. Preheat oven to 120C (100C fanforced). Draw a desired size of cake lid and base onto non-stick baking paper and place on two baking trays. 2. Use an electric mixer to whisk the egg whites in a large bowl until soft peaks form. Gradually add sugar, a tablespoon at a time, whisking well between each addition, until sugar dissolves, scraping down the side of the bowl occasionally. 3. Use a large metal spoon or spatula to fold in sifted corn flour and hazelnut meal. 4. Split the mix between the two trays. Use a metal spatula or the back of a spoon to spread to the desired size. Reduce the oven temperature to 100C (80C fanforced). Bake in the lower half of the oven for 60 minutes or until dry and crisp. Turn oven off and leave meringues inside for 2 hours to cool completely.

1. Heat the thickened cream and both chocolates over a double boiler of simmering water, stirring occasionally until chocolate has melted and mixture is smooth. Set aside for 5 minutes to cool slightly. 2. Use a metal spoon to stir the egg yolks into the chocolate mixture. Don’t overstir or the chocolate can harden. 3. Gently fold half of the whipped cream into the chocolate mixture until it’s almost combined. Fold in the remaining whipped cream. 4. Gently fold half of the whisked egg whites into the chocolate mixture. Gently fold in remaining whisked egg white. Place mousse in fridge for 15 minutes before assembling.

Made with a side of truffle mash and red wine jus, it reinforces Sam’s joy in bringing exciting flavours to well-established dishes. Other popular dishes at the venue are of course the chicken parmigiana which is made with 100% chicken breast and with a variety of different toppings, the crispy skin Atlantic salmon and the four choices of quality cut steaks. Another menu item, that has been so popular it has returned in many different iterations, is the stuffed roast chicken. “It’s been on the menu two or three times on rotation,” Sam says, confirming the chicken dishes’ popularity. “At the moment it’s stuffed with dates, spinach and goats cheese and wrapped in prosciutto and served with Kipfler potatoes and greens.” The dish offers a homely experience, with the added elegance of the flavours within it. When recreating the dish at home, Sam says there is one integral step in ensuring the quality of the chicken is maintained. To ensure the chicken breast stays tender, he emphasises the importance of steaming the chicken when it’s stuffed and wrapped. If this step isn’t possible at home, a substitute for this method can be done by wrapping the chicken breast and simmering it in 80 degree water for about 20 minutes. Greens are best served with a slight crunch and the red wine jus helps bring the flavours of the dish together. The seasonal menu change in September brought a variety of lighter options and salads to enjoy as we enter the warmer weather. Such additions, and ones that are gaining in popularity, are the house-smoked salmon salad, the Thai beef salad and the quinoa salad with honey-glazed Dutch carrots, vegetables and a Chardonnay vinaigrette. “We’ve extended our lunch menu too, to make a bit more of an express menu at lunch,” Sam says.

All dishes made in-house by the team in the kitchen, this also extends to the desserts. Offering a range of favourites from house-made waffles layered with fresh berries, ice cream and ganache through to a deconstructed meringue pie, and the indulgent chocolate meringue mousse cake is always a favourite for those seeking something extra after lunch or dinner. The mousse cake is made even more extravagant with its garnishes of honeycomb shards and silky smooth vanilla bean ice cream. While Sam takes the lead creating each new menu, he works with his sous chef Shaun San Martino, the kitchen team and the Elephant & Castle owners in creating the perfect balance and variety to offer diners. “We all work together on it,” Sam says. With each menu there is often a tasting night between the owners and the team, offering the perfect setting to experience how the flavours all work together. This current menu went off without a hitch and was launched in September. “Nearly every night a staff member will get a dessert [each shift],” Sam says smiling. Passionate about fresh and local produce, Sam will continue to deliver a diverse and sophisticated menu that echoes the vibrancy of the items lining the wall of the Elephant & Castle.

Eighty years on from the creation of white chocolate, and a fourth variety has finally been created. Invented by one of the world’s biggest chocolatiers, the Swiss-Belgian chocolate business Callebaut, the new variation, known as ruby chocolate due to its iconic pink-colouring, was launched in Shanghai last year.

It wasn’t until September this year that ruby chocolate hit Australian shelves, and Moorabool Valley Chocolate owner Lynne Meek was one of the first to obtain it. Making a special trip to Melbourne, she picked up the pink-coloured chocolate buttons and became the first business in the region to experiment with the chocolate. “I went down to Melbourne to pick it up, and when I picked it up we brought it home and made something with it,” Lynne says. Unlike its predecessors of white, milk and dark chocolate, the ruby chocolate is processed in a completely different way to give it its distinctive pink colouring and unique taste. The process, while rumoured amongst those in the industry, hasn’t been released to the public. However, the chocolate still comes from the same source of the Cacao bean. “[Callebaut have] put seven years of research into it,” Lynne says.

“It’s pink and it doesn’t have the chocolate flavour that you’re used to. It’s more of a light flavour, a slightly fruity flavour, and we find it goes really well with things like freeze dried raspberries and nougat. Things that help to compliment the flavour.” These flavours highlighted by Lynne are seen in the various different forms that the ruby chocolate is available in at the chocolaterie. The chocolate can be purchased from Moorabool Valley Chocolate as a block or mixed with nougat, berries and vanilla in a variety of individually crafted chocolate pieces. Some of Lynne’s ruby creations to date include solid bars and bites, ruby nougat, raspberry rose truffle, ruby rocky road, vanilla ruby, ruby bubbles and pearl and ruby speckles as well as ruby torte and ruby ice cream shells filled with ruby berry ice cream. For Lynne, she’s continuously looking for new developments and exciting chocolate ideas from around the world to inspire and implement within

her business. She has often ordered chocolates unavailable in Australia from overseas to see what the industry is creating elsewhere. “We’re always looking for new ideas and ways to keep people interested,” she says. Such new ideas recently involved celebrating the Mexican Day of the Dead festival with colourful chocolate skull creations. Previously Lynne has also created a month showcasing dark chocolate in its many flavours, forms and functions. These events add breadth to Moorabool Valley Chocolate’s range while educating customers on chocolate’s versatility. While there will always be experimentation within the business, there are many favourites that will be available permanently as part of the central range. Nostalgic treats such as the honeycomb, nougat and marshmallow are part of this collection and are highly celebrated. Another popular creation is the Moorabool Valley Chocolate signature caramel and nougat layer, which is often only made by Lynne. “We’ve always had a signature chocolate which is a caramel and nougat layer together. That has our logo on it and we have trouble keeping up with that,” she says. With a team of four chocolatiers in house, chocolates are often made on Mondays and Tuesdays, with the odd chocolate made in front of customers during the businesses open days on Wednesday to Sunday. “Something I do enjoy, and customers very rarely see me doing it, is making honeycomb. It’s spectacular,” Lynne says smiling. “As you boil up your sugar, then you add the bicarb soda and you’ve got this big fluffy mass that you pour out onto the table. I don’t think I’ve ever had a customer watch me do that.” Within the central and rotating range is also a variety of vegan chocolates. As many creations use Callebaut dark chocolate as a base, there is no milk product present. To keep it entirely animal-product free, Lynne works with a range of fruit purées, glucose, sugar and other substitutes to create flavoursome fillings.

Further to this, Lynne is passionate about stocking a large range of nut-based milks in the café to ensure all dietary requirements and needs are met and to compliment the vegan chocolates available in house. “Some of the vegan chocolates are very popular and move incredibly fast,” Lynne says. As well as offering sweet treats to go, customers can dine in at the café and select from a range of lunch-style meals as well as indulgent treats like the cupcake sundae, lemonade scone or Belgian-style waffle. Virtually everything at the café is made in-house utilising local produce where possible. With Christmas fast approaching, Lynne is once again hand-painting the iconic chocolate Santas in a variety of Australian settings. Last year saw two Santa variations; one where he enjoyed a cool drink on a deck chair and another where he was making a sand castle on the beach. These, along with other Christmas

creations including reindeer, snowmen, trees, puddings and pralines, serve as the perfect Christmas treats to be admired and then enjoyed during the festive season. Hampers will also be available for giving those on your list an entirely locally made gift. As popularity of the ruby chocolate continues to grow, Lynne and the team will explore new ways to showcase its original flavour. Pako Festa was born when the Geelong Ethnic Communities Council Inc. (previously known as Geelong Migrant Resource Centre) gathered with Geelong West traders and Geelong West City Council with an ambitious idea for a community-driven social event that celebrated the region’s diverse cultural communities.

In 1983 the very first Pako Festa attracted 12,000 people and in 2018 (36 years later), more than 100,000 people attended; 5,000 people participated in the street parade and 10,000 people performed across five presentation stages. These days the festival is organised by Diversitat

(previously known as Geelong Ethnic Communities Council Inc.) and has become Australia’s largest free to attend celebration of multi-arts and cultural diversity. Remaining the same throughout the years is the fact that Pako is about community and is led by community. The event continues to celebrate and highlight the extraordinary contribution made to this country by individuals, cultural groups and multicultural communities throughout Geelong and across Australia. Pako Festa is held annually on the last Saturday of February in Pakington Street, Geelong West, ‘the multicultural heart of Geelong’, it will incorporate an extravagant street parade featuring approximately 90 floats along with hundreds of performers representing 45 affiliated ethnic communities and close to 60 other community groups and organisations. The street will be lined with stalls selling traditional foods in addition to arts and crafts while six separate stages in the precinct will present performances of music and dance as well as interactive workshops and exhibitions. Pako Festa offers FREE entertainment for the entire family to enjoy across all six stages in addition to the great Pako Festa Street Parade which begins at 11am

with spectacular colour, music, movement and creativity from around the globe. Local community groups involved in the event, whether it be in the street parade, cooking up a storm or performing on the day include: Afghan, Bosnian, Brazilian, Chinese, Croatian, Dutch, Fijian, Filipino, French, Greek, Hazara, Hungarian, Indonesian, Iranian, Iraqi, Irish, Italian, Japanese, Karen, Karenni, Lao-Thai, Lithuanian, Macedonian, Maitri, Maori, Nepalese, Nigerian, Polish, Russian, Scottish (Highland), Serbian St Nicholas, Serbian Youth Club, Sikh, Slovenian, Spanish, Syriac, Ukrainian and Wathaurong Aboriginal Co-op. A very important aspect of Pako Festa is in its provision for Culturally and Linguistically Diverse (CALD) communities to continue to affirm and honour their contributions to Pako Festa. Since its inception the festival continues to be a major event on the community calendar, and in 2019 Pako Festa celebrates 37 years of operation on Saturday 23 February from 9am-5pm. The festival theme for 2019 is ‘Generations’, the importance of embracing culture, respecting its past, present and future.

FOOD GLORIOUS FOOD Pako Festa has always presented a unique once a year opportunity to sample unfamiliar cuisine from foreign lands, or to revisit popular international dishes, in this unique multicultural street party celebration that Geelong has enthusiastically embraced since 1983. In pop-up food vans and marquees throughout the length of Pakington Street, Geelong West and at West Park, passionate volunteer local community groups will represent the culture and cuisine of their homelands with lovingly prepared home-cooked food. So, what are the Pako Festa Communities Cooking? The local Greek community will serve up traditional souvlakis, while the Dutch community will satisfy your sweet tooth with traditional Oliebollen (Doughnuts), traditionally served at New Year Celebrations. Be challenged by the Indonesian community and try to choose between Chicken Satay, Nasi Goreng, Mie Goreng, Beef Rendang, Curry Puffs or Spring Rolls. The Filipino community will prepare the popular ‘Inihaw’ (Pork skewers), this dish has been a highlight since the inaugural event in 1983 and continues to live up to its reputation. Cevapi is a grilled dish of minced meat, either lamb, veal, pork or beef. It’s a type of kebab, found traditionally in the countries of south-eastern Europe. Pako

Festa is the only event where you can sample a variety of Cevapi from our local Croatian, Macedonian, Bosnian and Serbian communities, each with their own special spice and unique style. If kebabs are more your style, visit the Russian food stall and Iranian stall, you won’t miss the sizzle and aromas of the chicken, lamb and beef over hot coals wafting through the street. For a dish suitable for vegetarians you can’t go past the Polish stall offering traditional Pierogi Dumplings and discover Tofu Puffs from the Indonesian stall. New community food stalls to Pako Festa in 2019 include Nepalese, Pakistani and Indian, who collectively will add new tasty vegetarian and non-vegetarian options to the extensive food choices already on offer at Pako Festa. Finally, if dessert is your weakness you can’t go past the Slovenian stall offering traditional Apple Strudel and Streusel Cake. The French community will tempt you with a collection of packaged treats, and you can find pancakes at either the Russian or Croatian community stalls. The Greek, Serbian, Nepalese and Macedonian food stalls also have a variety of sweets on offer. The event program map will highlight the locations of all community food stalls so there is no excuse to miss out on your entree, main, snack and dessert on the day! Each of these diverse cultural groups have agreed to share with Pako Festa audiences and Geelong, their treasured family recipes of traditional dishes

passed down through generations which are indicative of their culture. In celebration of the 2019 theme of ‘Generations’, a series of locally produced recipe cards will be available to collect only on the event day, featuring international recipes from numerous diverse community groups in Geelong. So in 2019, Pako Festa visitors can once again celebrate Geelong’s extraordinary cultural diversity and taste a vast array of delicious cuisine from far-flung corners of the globe plus, they can also take away from the festival traditional recipes to recreate a collection of signature dishes at home. In 2005 Julie and Paul Kos established Kossies Free Range Eggs and they went on to become one of the most successful egg-producers in the region. Now 13 years into operating the business the couple have created a product that will change the culinary industry worldwide. For the past three years, Julie and Paul Kos have been developing the technology and science behind smoking raw eggs—a concept that arose through very organic means. “We’re actually egg producers and I bought my husband a smokehouse for our 30th wedding anniversary,” Julie says. One day when using the smokehouse, Julie decided to try and smoke a raw egg. The result was astounding, and she decided it was something her closest friends needed to experience as well. “We often have people come around for a visit and they never leave our house without having some food and drinks. So I called them up and said, ‘I’ve got something I want you to try’,” Julie says. Using smoked raw eggs, Julie’s otherwise simple quiche was taken to a whole new level with these flavour-enhanced eggs.

“When we all tried it, the flavour that we got was incredible,” she says. For the next three years Julie and Paul worked at altering this technology for large scale production and implementing this smoking process to raw shelled eggs. “We worked and worked and couldn’t get colour or flavour transformation. That was looking at it from a chef ’s point of view as I’ve had my own catering business in the past. Then I looked at it from an egg producer’s point of view,” Julie says. “We ruined numerous smoking chambers but we got it to work in a 72 hour process.” This fine balance of temperature, density of smoke, volume of product and humidity became the winning formula to create a product seen nowhere else in the world. Branded as The Smoked Egg Company, the raw eggs are available smoked in a shell and in various liquid forms. The discovery has been so impressive, Julie and Paul have registered the IP across the world and are in the final stages of signing an agreement to license their IP in the USA. Discussion is also underway with Thailand, the Netherlands, Canada, the UK and New Zealand.

“We can do about 12 pallets per smoke process in a much quicker period in time,” Julie says. “We’re the only people in the world [doing this].” Further to the impressive impact these smoked raw eggs have in the culinary world, these eggs are also showing ground-breaking results in halting the ageing process, the presence of salmonella and bacteria overall. “We’ve had tests and at 18 weeks a normal egg has 250 million bacteria, my eggs have no bacteria,” Julie says. “It’s actually safer than what you can buy now.” While testing is still underway for its impacts on salmonella, it’s exciting times for the couple who are yet to officially launch the product. Already with demands for the product overseas, celebrity chefs are also heralding the product as a game changer in the culinary industry. “There’s lots of applications and that’s what celebrity chefs are saying—it completely changes the culinary world and modernises any recipe that’s around,” Julie says. From Julie’s experimentation and for those who have been lucky enough to sample the product, the smoked eggs impact seems to take away the sweetness or saltiness of any food it is cooked alongside.

For Julie, her favourite use of the flavour-enhanced eggs come with dishes from her heritage. “I was amazed at the smoked egg mayonnaise and the hollandaise sauce, but my favourite is my pasta. I love the carbonara and putting a smoked egg in the end just gives it the most amazing flavour. And the smoked egg gnocchi is to die for as well,” she says. While these exciting developments are happening with The Smoked Egg Company, Kossies Free Range Eggs still runs as one of the finest egg producers in the region. The eggs are so sought after they are in demand at top restaurants across Geelong and Melbourne.

“We’ve been on Masterchef and Heston [Blumenthal] only uses them when he’s on,” Julie says. “He’s used them five years in a row. If they need a good egg they come to Kossies and we do most of the top cafes and restaurants in Geelong and Melbourne as well.” Julie is passionate about Kossies Eggs’ beginnings in Geelong, and plans to keep all eggs produced at their farm and affiliate farms kept under their label—even with the demand for eggs in their side business of The Smoked Egg Company. Her passion for Geelong extends to this new venture as well, ensuring production of the raw smoked eggs will remain where the concept was first discovered. “We’re launching it in Geelong, making sure it’s an exclusive Geelong made product...We’re so proud that all of this is happening in the Geelong area and it’s going to go far and wide all around the world and it’s a Geelong creation,” Julie says. There are also plans to create a local business reward system in town, educating customers on the local cafes and restaurants in the region that support fellow local businesses. “Cafes and restaurants get on a register and if they use local products they get a green star. And what’s really good about that is customers can make an educated decision on where they’re spending their money and whether or not it’s on local product,” Julie says. Despite the attention worldwide, Julie and Paul Kos will still keep their passions close to home and continue to put Geelong on the map across the globe. 90

Connecting over a mutual love of food and wine, Christine Kowald and Brent Chapman explored their passions even further when they made the decision to purchase Bells Brewing Co. in April this year. 96

“We’ve always had a huge passion in food and wine,” Brent says before adding, “It’s a dream come true in that sense.” Since taking over the artisan craft brewing company earlier this year from a close friend, the duo have grown Bells Brewing Co.’s operations from four clients to more than 80. The mammoth growth over the short period of time is credit to the couple’s approach to business and their passions for the craft. Working together as a team, Christine and Brent’s skill sets from the industry perfectly compliment each other in operating a successful business. “The team is you and I,” Christine says to Brent smiling. Moving from South Australia and having worked in the Barossa Valley, Christine developed impressive connections in the industry as a sales representative for a local wine business. As a result Christine looks after socials, delivery and sales direction for the brewery, while Brent looks after the business plan, design and contracts. Since April, Christine and Brent have rebranded using textured labels, introduced a range of merchandising materials and added tap systems and kegs to their offerings.

A somewhat more challenging change was the trial and error of refining the existing recipes and introducing three new ones to the Bells Brewing Co. catalogue. “When you get it right it’s pretty exciting,” Brent says of creating the perfect recipe. “You could do it 50 times and not quite get it right — it’s a lot of timing.” These new additions are the Amber Ale, Summer Lager and the Malted Double Indian Pale Ale — the latter of which was released earlier this year. “The IPA is pretty exceptional and it’s got everything. It’s very bold with a million flavours in it,” Brent says before Christine adds, “It’s got lots of different malts and hops to have that balance. It’s a smooth drinking experience that pairs well with food — there’s not that smash of hops at the end of your palate.” The Double IPA uses a combination of Crystal and Munich ale malts with flaked oats, followed by the addition of Centennial, Chinook and Galaxy hops. It sits at an ABV of 7.5% and is best enjoyed with flavours of lamb, beef, spice and chilli. Both the Amber Ale and Summer Lager are yet to be released, with the Amber Ale set to make its debut in February 2019 at the Brewers Feast in Melbourne.

“It’s a craft beer that doesn’t offend the Carlton Draught drinker,” Brent says of the Summer Lager. Something that’s different about the Amber Ale, and that will become apparent on the first taste, is the noticeably smooth finish. The duo attribute this to their secret ingredient which they spent months trialling different ingredients to uncover. “[It has a] creamy mouth feel that is really smooth off the tongue and doesn’t give you that hop taste,” Christine says. As Christine describes, Bells Brewing Co. beers aren’t “offensively craft” and the proof is in its drinkers. Since refining the recipe, everyone from women to dedicated Melbourne Bitter drinkers have come to love the smoothly crafted Amber Ale. These three newer beers — including those yet to be released — join the brewery’s original release of the Citra Pale Ale. The Citra uses Nelson Sauvin hops and lightly roasted ale malts to create the perfect balance between bitter hops, malt sweetness and a hint of citrus. It’s the veteran of the Bells Brewing Co. catalogue and still stands as the most popular release to date.

A noticeable difference with the Bells Brewing Co. process and beer range is the lack of preservatives in each bottle. Instead, each bottle is vacuum sealed, resulting in a longer fridge life of up to two years. All of these elements contribute to the recent growth and success of the business, and while there has been significant change with the new ownership, Brent and Christine are very selective in where Bells Brewing Co. is available. Restaurants and bars stocking their beer are chosen carefully, with the choice a reflection of the brand’s overall vision. A venue that stands out is Bells Brewing Co.’s flagship Melbourne venue, the iconic Garden State Hotel on Flinders Lane. Spread across four levels, the venue puts its focus on the experience of enjoying the breadth of cuisine and beverages on offer. As Brent says, “[the Garden State Hotel] is everything our brand stands for.” An equally thoughtful decision is the couple’s venture into festivals and weddings. Stumbling across a whiskey van from 1971, the duo saw its potential and are currently modifying it with taps and branding to take to events.

If there’s something Wine Geelong does exceptionally well, it’s share the wonders of our local wine region with the people living within it. This past few months with the association has seen this ability come to the forefront, as the general public celebrated the spoils of our region at the Geelong Wine Show as well as the annual Toast to the Coast event. The Geelong Wine Show is a yearly event that recognises the diversity of the vintages and varieties of the region. Wines are judged by a number of factors including, but not limited to, tannin development, flavour intensity, balance and fruit ripeness. Across the 22 classes, nearly 200 wines were

judged this year on October 16-17. Wines celebrated by judges received a gold title, with silver and bronze also awarded to stand out releases. Some of the varieties recognised with gold were Leura Park Estate 2017 Chardonnay, Simonsens 2017 Barrgowan Vineyard Shiraz, Clyde Park Estate 2017 Pinot Noir and Dinny Goonan Single Vineyard 2018 Riesling. Provenance Wines, Austins & Co. and Oneday Estate came away with a number of titles for their varieties of wines. Provenance Wines were also crowned with Best Wine of the Show, a fitting follow up to the title of Best Value Winery for 2019 bestowed on the winery by critic James Halliday.

To close the formal proceedings of the show, the celebrations were opened up to the public at Geelong Cellar Door on October 21. This public event allowed wine-lovers to sample the 13 gold-winning wines ranked highly in the region while celebrating with the winemakers involved. “It was great to have several producers there on the day as an opportunity for the public to meet the winemakers,” Scott says. Celebrations continued a fortnight later as Toast to the Coast ran for its 17th year. The yearly two-day event sold over 5,000 tickets, with early bird tickets selling out in under a week. This year 22 wineries across 17 locations took part in the weekend, where wine lovers flooded cellar doors, danced with friends and enjoyed a slice of cheese (or two) alongside their glass of local wine. “The event is definitely growing in popularity, attracting people from far and wide,” Scott says. Several attendees took up the opportunity to experience Toast to the Coast from a new angle this year.

Striving to improve each year, this year Wine Geelong engaged extra buses for ease of transport for attendees, additional security and encouraged venues to be creative for a fun, safe and overall well run event. Celebrations continued within the Wine Geelong community as Oakdene Vineyards General Manager, Steven Paul, was selected into the 2018 Lev Evans Scholarship program. This prestigious scholarship is given to 12 ‘scholars’ who, over five days, are exposed to the great wines of the world and the leaders in the industry. Famous wine critic James Halliday has described the scholarship as one of the most exclusive wine schools in the world. “For Steve to be accepted into this prestigious program highlights his talent, passion and perseverance to learn and make a significant contribution to the wine industry, not just locally but nationally and abroad,” Scott says.

This instance with Steven and Oakdene is hardly isolated, our wineries are recognised, at varying levels, on a daily basis. Scott celebrated an announcement at his own winery recently, when his 6Ft6 brand was confirmed as the exclusive wine partner for the highly praised Portsea Polo event held in January 2019. The Portsea Polo is a sellout event that thrusts together the finest elements of Melbourne life. Fashion, music, wine and food combine with the excitement of three polo matches to create a thrilling day of entertainment. “Partnering this major event on the Victorian calendar highlights not just the strength and demand for our brand, also the recognition that Geelong produces many of the best wines in the country,” he says. With accolades felt throughout the Wine Geelong community and this appreciation swelling to the Geelong region as a whole, it seems there are no limits to what our wineries can achieve.

Local vineyards have been busy bottling Sauvignon Blanc, Rosé and Chardonnay recently, so in a few weeks time there’ll be some new wines to toast the region’s success. Five years ago Jamieson Bennett and his family purchased an old winery on the Bellarine. Needing some serious TLC and attention to its vineyard, Jamieson and his family got to work. Now all these years later, the family has finally reached the last stage of Bennetts on Bellarine with its brand new cellar door. “When we got here it hadn’t been touched for 10 years. So we did a lot of work on the soil and replanting those plants,” owner Jamieson Bennett says. “We started in this old rustic milk shed and got the containers in last year. We were working out of those and this year we got to the final stage of the cellar door built, which I call ‘Rustic Version 4’.” The new cellar door carries on the winery’s vision of a casual, rustic setting that celebrates its prime location overlooking Port Phillip Bay and the You Yangs. Utilising the existing shipping containers that were installed last year, the open plan design incorporates earthy tones and recycled fence palings that have been sanded down.

“We started out very rustic, and although it’s a new build we wanted to keep that rustic casual feel and keep it simple,” Jamieson says. Two weeks into opening one Saturday morning and the cellar door is filled with a busload of eager wine-lovers enjoying the breadth of wine and cheese on offer. It’s one of the few occasions where Jamieson has really come to settle into the realisation of finally reaching the family’s vision. “There’s a photo inside of the dream we had five years ago when it was still a rustic shed, and it’s a little bit weird to walk by and think, ‘Well, the dream’s almost finished. It’s here’. It’ll be a fun year to start focusing on the wine and producing a bit more wine and food. So we’re really looking forward to the next 12 months,” he says. “The vineyard is nearly back to full strength and that’s coinciding with the new cellar door, it’s been a great small family project.”

Now with the stress of a build out of the way, Jamieson can focus on developing exciting projects in the new space. Already with a selection of mouthwatering cheeses from around the world, Bennetts on Bellarine has just introduced a new degustation experience. For $25, attendees can sit down and relax while learning the art of wine and food pairing. The degustation features six of Bennetts on Bellarine’s wines perfectly matched with six local items of food. “We really want to combine our food and wine experience and it works nicely together,” Jamieson adds.

There are also plans to introduce mussels to the menu as well as a selection of pasta dishes. This builds on the winery’s existing wood-fired pizza menu, which alone is an enticing option worth visiting for. Five pizzas are currently available, ranging from margarita to vegan with a special ‘blacksmith’ option of mozzarella, pork sausage, mushrooms, garlic and parsley. Where there’s great food, there’s great wine, and naturally Bennetts on Bellarine has plenty of it. The winery is currently in the final stages of releasing its next varieties, bottling its sauvignon blanc currently and its rosé, chardonnay and pinot noir in the coming weeks.


“I get excited when it’s time to bottle and release them as they change quite quickly over the first three months. [During] bottling they all tighten up and seize the flavours. It’s a good excuse to open a bottle every few days to see the progression that’s for sure,” Jamieson says with a knowing smile. Jamieson likens the wine produced at Bennetts on Bellarine to those produced in the south of France. Both regions celebrate a summer style of wine, with lightly oaked varieties that keep the wine quite elegant and pure. “[We’re] trying to keep the wine pure from the

grape to the bottle, not wanting to be too technical with our oak and lightly oaking to pull the wine together but to also capture the crisp summer armours of the Bellarine,” he says. The 2018 sauvignon blanc variety is shaping up to be a dry and crisp wine with floral tropical fruit flavours. The elegantly made chardonnay features a soft peach flavour with just a hint of oak pulling it together and the rosé is made with pinot noir in a French style, making it quite dry and crisp. A surprising difference with Bennetts on Bellarine’s rosé is its colour, which boasts a real rustic red-orange tone.

These wines are all upcoming releases and will no doubt be enjoyed by the many locals and tourists who visit the Bellarine boutique winery. Luckily for Jamieson, when his family moved into the Bellarine winery it occurred around the launch of the Port Phillip Ferry and they’ve made full use of that fact while ensuring they celebrate the wineries around them. Partnering with Bellarine Estate, Terindah Estate and Scotchmans Hill, the businesses have worked together in creating a courtesy bus for wine-lovers to experience their wineries and the region as a whole. Tours can be arranged via Portarlington Wine Tours with local pick ups available. “We put on a free bus that picks you up from the ferry and moves you around the four wineries for the day. It gives people an opportunity to see the four vineyards and it’s been well supported so far,” Jamieson says. With many visiting the winery before there was even the new official cellar door, it’s pretty clear that locals, fellow wineries and visitors want to be ‘friends with Bennetts’. Be sure to visit the winery and experience the new lovingly crafted space for yourself with picture perfect views and wine to impress.

Fantastic shimmering colour & beading considering its bottle age with constant fine beading. Made from Pinot Noir grapes this displays exceptional red fruits whilst retaining a beautiful backbone of citrus. The mouthfeel is complex, powerful & precise. The Vintage 2011 in Geelong was not a great vintage for Reds so I can fully understand their decision to pick early and focus on making a classy sparkling. Bravo! Bright red/purple in colour. Full block colour for a cool climate Shiraz. Brambley, dark berries & olives. The transition from nose to palate is seamless. A core of liquorice runs through the middle of this wine picking up fruit characters along the way. I’m not sure whether it’s vine age or a warmer vintage but I’m certainly enjoying the extra palate weight of this wine. Silky tannins round out this complete wine. Bravo once again. 2017 CHARDONNAY 13.2% abv Yarra Valley

Pale lemon in colour. 2017 was a great vintage in the Yarra Valley and could possibly surpass the 2015 vintage only time will tell. The nose shows characters of figs, cinnamon & cashews fill the palate. The flavour quickly changes to citrus verging on mandarin ( tangerine). Good quality and well executed use of French Oak. Although this wine is approachable now it is assured of up to 10 years in a cellar if you can wait. Food: Pork with Asian Slaw Drink: 2018 – 2028

Santa & d'sas

2016 shiraz Heathcote

14.4% abv

Full red in colour with a purple rim. There is no escaping the power and the regionality of this wine showing lashings of blue fruits. At 14.4% ABV the fruit is ripe but in no way stewed. Palate weight is part of the purity here showing velvety tannins that dovetail seamlessly. Great use of French Oak that litterly plays a supportive role. Almost clear in colour with a green tinge. This has been a go to Riesling now for a couple of years. It shows varietal purity including lemon pith. Even though it has typical citrus notes, it is the added dimension of the floral notes that gets me in. Full purple in colour. It’s polished, aromatic nose shows notes of blackberries & olive tapenade with a lick of liquorice. The Shiraz is co-fermented with viognier not only to plump out the wine but also helps produce a silky, textural mouthfeel. This is a powerful cool climate wine with polished tannins. There are not too many local Shiraz’s that have the inclusion of Viognier but after trying this I’m sure there will be soon. A class act. Food: Kangaroo with red wine jus Drink: 2018 – 2030 122

2014 amphora shiraz 14.5% abv Bellarine Peninsula Full red in colour. Dark berries and mixed spices with notes of whole bunch fermentation. Not only is this wine wild fermented it also has a lick of viognier present to polish out the mouthfeel giving it a slippery mouthfeel. Amphora is a Greek jar or jug with 2 handles and a narrow neck for transporting liquids (wine being one of them). Food: Let’s go traditional Greek Drink: 2018 – 2027

Medium purple showing good depth of colour. Notes of red fruits and cherries. Partial whole bunch ferment adding another dimension to this wine. Textural, yet fleshy dark plums fill the mid palate. 2017 chardonnay Bellarine Peninsula

Medium straw in colour. There is no mistaking the quality of this wine upon the first swirl of the glass. It’s clarity both in the glass and on the palate are exceptional. I still have memories of how good the 2016 Vintage was, this is no exception. It shows great complexities ranging from stone fruits to oatmeal and funky notes from the wild fermentation. The consistency of this brand has continued to rise to new levels making it one of the regions standouts. Food: Poached Chicken with mango salsa Drink: 2018 – 2027

2016 chardonnay Yarra Valley

Shimmering light gold in colour. White peach, stone fruit and cashews are the initial notes that jump from the glass after a brisk aeration of the wine. It has a good depth of flavour on the palate showing ripe fruit characters that have been caressed by controlled winemaking. With partial MLF this wine has plenty of tricks in its bag. This is the latest in a string of local gins to appear on the shelves. With ingredients sourced locally and then distilled in Melbourne with plans in the new year to set up locally. Peppermint gum provides both aromatic notes whilst juniper, kelp, saltbush and coastal daisy adds to the complexities of this Gin. There is also a dollop of Honey present which binds the flavours together. This is the first in a series of Gins from Great Ocean Road.Shortly to be released Split Point Navy Strength Gin 57%ABV.

With a back label stating Pear, Chilli, Lime & Ginger you know your in for a taste sensation. This is the second release of Pachinga only this time it’s also available in cans for convenience. It is tightly wound like a spring coil using a splash of pear juice to fill out the back palate. The ginger keeps it clean whilst the chilli adds zest. Food: Chilli Con Carne Drink: Icy Cold

cockies suntanned vanilla ALE 5% ABV Tan in colour as the name suggests, notes of vanilla bean & dark chocolate. A fruit driven style beer showing a touch of Christmas notes. A well weighted beer just a tad shy of a stout. I could see this sitting well besides a plum pudding at Christmas time. Although Malt is prominent, it acts as a backbone for the beer.
