After working with top chefs in Sydney, including alongside Miguel Maestre from Channel 10’s The Living Room, a change in lifestyle for chef Kanwaljot ‘Jotti’ Singh was on the cards.

“I had a daughter and life changed,” Jotti says, “So we started to think about our future.” That future took Jotti to Geelong, where he worked at Flying Brick and Anglesea Golf Club before finding his place at The Bungalow Restaurant in Drysdale. 12

The Bungalow Restaurant was the perfect fit for Jotti’s newfound lifestyle and his passion for cooking dishes that were a little bit different. “I always say, ‘Let’s give it a go’, and 99% of the time people love it,” he says of experimenting in the kitchen.

Ingredients:

• ½ cup whipping (or heavy) cream • 2 tablespoons milk • 4 ounces goat cheese (soft and fresh) • 2 tablespoons chives (finely chopped)

• 2 x red bell peppers/sweet pimento peppers charred and skins removed • 5 peeled garlic cloves • 1 x 400g can chopped tomatoes drained (include the juice for a more saucy consistency) • 1 tablespoon smoked paprika • 2 x fresh red chillies such as Serenade peppers but jalapenos will also work • 1 x fresh red bird’s eye chilli • 5-6 tablespoons olive oil • salt & black pepper to taste

• 2 egg yolks • ¼ lemon, juiced, or to taste • 1 pinch salt • 1 pinch cayenne pepper • ¼ cup salted butter, melted

Method: 1. Gather the ingredients. 2. Either by hand or using an electric mixer, whisk the cream until it has soft peaks and a texture that is similar to whipped cream. Set aside. 3. In a separate bowl, whisk together goat cheese and milk until the goat cheese has softened. Mix in chives. Gently fold in whipped cream.

Spice Mix • 1 teaspoon cumin seeds • 1 teaspoon fennel seeds • 2 teaspoons coriander seeds • 2 teaspoons dried chilli flakes

Method: 1. Toast all the spices (in the Spice Mix) over medium heat in a pan until fragrant. Grind in a mortar and pestle until fine and set aside. 2. In a blender/food processor, combine all the remaining ingredients along with the spices then blend well until you have a brick-red, vibrant paste. Season to taste then transfer to jars.

Method: 1. Beat egg yolks, lemon juice, salt, and cayenne pepper together in a bowl until fluffy smooth. Slowly stream melted butter into the egg yolk mixture while whisking to incorporate. 2. Heat in microwave for 15 to 20 seconds; whisk. For Harissa Hollandaise, mix 1 tablespoon of Harissa Paste to 3 tablespoons of normal Hollandaise.

It was an interest of Jotti’s that aligned with owner Kerry Bell’s vision for the venue and overall goal of creating the surprise, exploration and joy that can come from eating food. “We like to be a little bit different. We like to try new things and new combinations and experiment with food,” Kerry says. This zest for experimentation in the kitchen formed the basis of the new breakfast menu at The Bungalow. Jotti’s biggest challenge was discovering new ways to present the classics of eggs on toast – a staple of the modern Australian breakfast. “I really wanted to create something different from what everyone else was doing. Everyone was doing eggs on toast and [the customers] all know what that was,” he says. Eggs on Nest was the solution. In this dish, poached eggs are nestled on a kataifi pastry nest, roasted pumpkin, feta, crispy prosciutto, kale, beetroot hollandaise and pomegranate molasses. The dish has become so popular with customers, recent visitors from Melbourne proclaimed it as one of the best dishes they’ve ever had – better than what they were being served in the food capital of the state. “It’s nice to think that we’re competing with cafes in Melbourne, I mean Melbourne is the foodie epicentre of Victoria, even Australia, with what they’re throwing out. And to have those comments coming through for our little business in Drysdale is exciting,” Kerry says. Another popular egg dish with a twist was the iconic eggs benedict. At Bungalow the dish is served with grilled asparagus, smoked salmon, poached eggs, Drysdale goats’ cheese mousse and harissa hollandaise. “Rather than using the traditional ingredients, we have smoked salmon and asparagus, which goes well with the goats cheese mousse – and we make that with local Drysdale goats’ cheese,” Jotti says. In this dish the spice of the harissa is complimented by the silky smooth and slightly more acidic Drysdale Cheeses goats’ cheese – an award-winning local ingredient in its own right. 14 14

“Harissa is of Middle Eastern style, so it has a nice kick of spice, cumin, coriander, pepper and red chillis,” he says. Having worked in all sorts of restaurants specialising in Asian, fine dining, modern Australian and seafood, Jotti’s favourite type of cooking is blending Asian and Middle Eastern flavours with modern Australian classics. It’s something that’s evident throughout The Bungalow menu, as punches of flavour are delicately slipped in with a variety of dishes. The flour mix to coat the paprika calamari is made in house, as are the many sauces that elevate the flavours of so many dishes at Bungalow – the harissa hollandaise is the tip of the iceberg. “When people come to the café you have to give them something more and something better than what they can cook at home,” Jotti says. Throughout the breakfast, lunch and dinner menu, The Bungalow Restaurant celebrates local produce. Seafood comes straight from Port Phillip Bay to The Bungalow kitchen thanks to local fish monger White Fisheries. “You know it’s fresh”, Kerry remarks. Lamb comes from the Bellarine with fruit and vegetables also sourced locally. What isn’t featured in the dishes is displayed proudly, and for sale, at the venue. Several collaborations with local businesses extend beyond the kitchen in the form of discount coffee cards, hampers and food events. The Bungalow also supports a number of local charities including the RSL, Salvation Army and sporting clubs. “We want to support our community in the area, so as much as possible we stick with our locals,” Jotti says. Further utilising the quality produce of the region, Jotti is finalising a new winter menu. This menu will feature homely dishes with comfort felt from the very first bite. “You want a meal that makes you feel nice and warm,” he says, “So I’m going to mix up the menu with some curries, some beef cheek slowcooked and cooked overnight and some more Middle Eastern flavours.” 15

Dining at The Bungalow as the sun goes down also opens diners up to the extensive wine menu, which is one of the largest in the region. The selection is a smorgasbord of local talent, with several varieties from other regions also available. From the dishes Jotti makes in the kitchen to the wine poured beside it, the venue is a magnet for customers with a love of food and enjoying each others’ company. However, the venue’s greatest ability is shining a light on the talent in the region. “I love everything about The Bellarine and everything about Drysdale too... It’s a great place to live,” Kerry says. “I’ve lived here and I know how great it is. I’m surprised it wasn’t discovered years ago.” 16

Le Fournil French Bakery Bringing a little of Paris to Pako

Renowned for their authentic and fresh French delicacies, Le Fournil produce handmade and high quality pastries, classic traditional home-style breads, sweet delights and so much more, leaving you to wonder if Paris has come to Pakington Street.

Michelle and Chris opened their French Bakery nine years ago, with the aspiration to supply Geelong with original and superior pastries and cakes made by hand – which is exactly what they have done. Having previously owned a bakery in Tasmania, the couple relocated to the city by the bay where they established Le Fournil and have enjoyed much success. 25

Located on bustling Pakington Street, Geelong West, Le Fournil is the perfect place for locals and visitors to shop for their fresh breads or meet for a coffee and cake date. With husband and baker Chris learning his tricks of the trade in his coastal home town of Dunkirk in northern France, wife Michelle manages the front of house and behind the scenes of this flourishing business. Le Fournil takes pride in serving fresh foods daily, all of which are made on site, using locally sourced and honest-to-goodness ingredients. “Chris makes everything. Everything is made fresh, using all natural ingredients. We use traditional French products to make our pastries and cakes,” says co-owner Michelle. “We’ve been open for nine years now. Chris has been baking for 36 years, he learnt in France so is the real deal. We have his son working who is also a baker plus 26

two apprentices. With Chris’ experience running his own bakery before and knowing there’s not many in Geelong, we thought we’d give it a go and we haven’t looked back.” Straight away you know you are in good hands at Le Fournil. “We focus on taste. We use real butter. People can see it’s the real thing. Everybody comes in here that’s been to France or is going to France to compare the two and ours is better. It’s authentically French. Everything is fresh, made daily with the real deal ingredients, not pre-mixers.” The deliciously fresh creations are clearly displayed for customers to select from, that is, if they can possibly choose from the wide variety and tempting options including hearty beef bourguingnon pies made from slow cooked beef in red wine, chicken and vegetable pies, baguettes made daily with chicken and avocado, tuna or ham fillings or a family size quiche made

with bountiful fresh cream and eggs. And that’s only lunch! Le Fournil provide breakfast options too, with traditional Danishes and French croissants including a selection of customised crescents with added almonds or chocolate. The 300 plus croissants that the bakery makes daily sell out by early afternoon, so make sure you get in quick. “Most of our sweets and bread sell out daily. Today we’ve sold out of our croissants and Danishes. People know to get in early,” Michelle says. Then comes dessert if customers have room, which I’m positive that they will after admiring the impressive sweets on display. Chris and the team bake a variety of up to 14 different cakes daily, big and small, approximately 50 in total, along with 10 to 12 different pastries each day. So customers have plenty to choose from. The cabinet showcases the days cake selection; croquembouche with toffee delicately coating each custard puff, vanilla slices, different types of mousse from strawberry chocolate to raspberry white chocolate and fluffy slices of lemon meringue pie, to name only a few. Although the 28

crowd favourite is the lemon tart, buy it as a whole or treat yourself to a slice. Michelle says it is always popular. “Our lemon tart we are known for because it’s nice and creamy. Our almond croissants, chicken baguettes and our beef bourguingnon pies, they’re probably our most popular products.” Le Fournil also offers some flourless options. “We do a few gluten free cakes like our flourless orange cake or chocolate cake,” advises Michelle, that look equally mouth-watering. Michelle firmly believes that knowing what is in the foods, knowing where it is made, and the invariability that Le Fournil provides is why customers continue to return time and time again. “I think the quality and our consistency is what keeps customers coming back. A lot of places you go these days will have one sort of meal and you get hooked on it then you go back another time and it’s not the same or there’s a different chef. Here, it’s consistency. Every time someone buys a lemon tart for birthdays over the years it’s always been consistent, there’s no changes. If they have a baguette, they know what’s in it and it always tastes the same.”

Michelle continues, “People know we use fresh ingredients, they know what it is, there’s no genetically modified stuff, and we don’t use pre-mixers. There’s not a whole lot of ingredients in our breads, it’s mostly flour, yeast, water and salt. Same with our cakes, it’s real cream and real butter. People know once they try it. They’re not sickly sweet desserts, they’re not very rich or very dense.” Everything used at Le Fournil is natural based and with typical, authentic French foods in mind when ordering ingredients. “We use Nardi Produce (family owned local Geelong fruit and veg supplier) for our fruit and vegetable requirements. Everything else comes from Melbourne because we use a lot of French products like our liquors for cakes and a lot of our pastes like the pistachio paste comes from our specialised French suppliers. Otherwise, as much as we can we use local,” advises Michelle. Le Fournil choose to use Laucke Flour from South Australia for all of their baking requirements, just in case you’re in need of a handy tip now that you’re feeling inspired to create your own French fancy!

Keep a look out for seasonal dishes emerging as the year progresses. “Chris comes up with all the recipes. He likes to create new cakes or goes through his books, but we always have our favourites,” Michelle says. Be sure to rush in for your French fancies in celebration of Bastille Day on Sunday 14 July. “For Christmas we do Bûche de Noël which is like a rolled up log,” and you no longer have to wait until Christmas to savour this amazing cake. Due to their popularity, they are now baked all year round as a normal cake filled with raspberry or white chocolate mousse. Hot cross buns were bountiful over the Easter period and you can find fresh, mixed berry tarts adorning the glass cabinets during summer and of course there is the choice of a made to order cake for those special occasions throughout the year – imagine a croquembouche for a 21st surprise. Le Fournil take 20 to 50 personal cake orders a week. Michelle says, “We have so many nice things in there you don’t know where to start.” The dedication and care that Chris and the bakers put into the craftsmanship of the food is what makes it such great quality and unique 29

Situated in the quiet residential streets of Leopold is a hidden treasure of foodie delights, known to the locals as Noble Foods. Established back in 2009, Noble Foods is celebrating a week-long of specials, commencing June 17, in commemoration of its 10th birthday.

Husband and wife owners, Craig and Nicole Millett, are always excited to see the familiar faces every day dating back years. They are now introducing their children to the same captivating flavours, warm smiles and friendly atmosphere that first allured them to Noble Foods. Unchanged for Noble Foods in 10 years, is its utilisation of quality ingredients and its passion for handcrafted take home ready meals, catering packages and its meticulously sourced dessert and gourmet product ranges. The fridges and freezers are always stocked to the brim, meaning there is always something on offer in that time of need for a quick family dinner or lunch. However, Saturday mornings you are also spoiled for choice with freshly baked breads by Noisette Bakery from Port 52

Melbourne and locally handmade, traditional sourdough, fruit danish and croissants by Ket Baker. It’s all hustle and bustle on Saturdays with the younger crew keeping the locals fuelled with coffee, breakfasts and catering in between. We are all very grateful and humbled for everyone who walks through our door,” Nicole says. This is something Nicole is clearly very passionate about, and it is clear to see from the customer’s faces who have stepped through the door as we are talking and taking notes. Each one has given a knowing smile to Nicole, many of which she knows by name, and there is a sense of joy as they leave to continue the rest of their day. Every business owner hopes to have these sorts of relationships with their customers, and it is something Noble Foods has shaped over a decade. Wine Geelong Update

For wine growers around the world, winter plays a crucial role in determining the success of the following year’s harvest. In 2018, rain was heavy throughout winter with a peak again in December before an extremely dry summer. As a result, fruit for most vineyards in the region ripened early, meaning most harvests took place in mid-February through to mid-March. While these wines may have been harvested earlier than previous years, they are shaping up 84

to be yet another great example of the quality that the Geelong region can produce. “Wines in oak and tank look vibrant, full and structured, with likely long futures comparatively different to the ethereal, more elegant vintage 2018’s now in bottle,” Wine Geelong president Scott Austin says. The harvest period is a turning point for many vineyards, where observation and maintenance turns into action. For Scott, the harvest period is a highlight for him during the season.


“Harvest is the grand final for growers and makers,” Scott says. “The variables of agriculture generally have our growers in a state of flux: hoping for rain, waiting for rain, hoping it does not rain at the wrong time…we accept our fate and all that comes with producing such an interesting and delightful product. We are joined at the hip with mother nature and would not have it any other way.” While all eyes will be watching the rain radar over winter, the season also marks the celebration of the cool climate reds Geelong is known for. Pinot Noir was showcased at the Pinot Affair on May 25, which for its second year was another sell out event. The Pinot Affair involved more than 20 producers from the Geelong region for a day-long celebration of tastings and live music in a beautifully ornate setting. On July 6 and 7 more than 27 wineries will take part in the Winter Shiraz Festival, shining a light on the second of Geelong’s most celebrated red varieties. Shiraz inspired lunches and dinners, master-classes, vertical tastings, meet the makers and more will run across the two days at various locations. Entry to this event over the weekend is free, with the addition of Friday night tastings at Bottles and Barrels, Union Street Wine Bar and Barwon Heads Wine Store set to kick off the weekend of Shiraz-fuelled fun. “There will be plenty of live entertainment across the region on the festival weekend, and a perfect chance to gather your friends for a glass

of spicy, delicious Geelong Shiraz by the fire,” Scott says. Releases to look out for include Shiraz from Austins & Co., Barrgowan Vineyard, Jack Rabbit Vineyard, Provenance Wines, Scotchmans Hill and Terindah Estate – all of which were gold winners at the 2018 Geelong Wine Show. Plans are also well underway for the annual Toast to the Coast event, which this year returns for its 18th year on November 2 and 3. “We are expecting 5,000 people to attend this year and enjoy winery hopping across the region,” Scott says. The two-day event, held over the Melbourne Cup long weekend, offers guests the chance to taste, drink and eat their way across a selection of award-winning wineries while enjoying the picturesque vineyard settings. In 2020 Wine Geelong will also proudly celebrate another Geelong variety: Chardonnay. This showcase will serve as a precursor to next year’s Pinot Affair event, with 20 wineries involved in tastings. More details are yet to come on this exciting addition to the Geelong wine event calendar. As Geelong produced wine and wine-based events gain traction, so too is the interest in what goes on behind the scenes. Many vineyards are starting to open their doors up to customers and share these insights, including the recent ‘Stompfest’ at Provenance Wines, which saw wine lovers get their feet dirty to help create something they love. 85


“People are intrigued by the mystique of winemaking,” Scott says. “It is a real art form and difficult to master, hence when incredible wines are produced, acclaim always follows.” “We are finding the general public’s interest is increasing and they want to gain insight into the science behind making fine wine. Events like the Winter Shiraz Weekend and the Wine ‘Stompfest’ at Provenance are a wonderful window into gaining behind the scenes knowledge and forming an appreciation for the craft.” In recent months, a number of growers have invested in new machinery, including a state of the art ‘Select harvester’ for machine picking fruit and an under vine weeder. While this does present as a cost-effective business decision, it also promotes environmentally safe practices by reducing chemical inputs, improving the quality of the fruit and increasing efficiency. Our region is continually leading the charge with both the business and craft in the wine producing industry. With this new machinery on board and being shared by several vineyards, and some very welcome recent rain events as we enter winter, the 2019 season looks to be in good hands. With each subregion and winery displaying their own unique characteristics, visitors are invited to explore the diversity of the stunning scenery, touring routes and restaurants whilst sampling some of Victoria’s finest cellar door experiences. Areas within the region have varying microclimates influencing the depth of colour, bouquet and flavour of the wines. The Surf Coast is famous for its long summer days and cooling ocean breezes. James Halliday in his Wine Atlas of Australia and New Zealand wrote: “If there is a unifying feature in all of the Geelong wines, it is their strength and depth of colour, bouquet and flavour.”

Not only does the Geelong wine region produce some of Australia’s best wines, but the wineries are surrounded by some of Victoria’s best scenery and touring opportunities. For the Winter Shiraz Festival, wineries throughout the region will give guests the chance to soak up the warmth of open fires and outdoor braziers in beautiful surroundings while showing off their award-winning Shiraz. Talented Chef ’s will match the region’s renowned cool climate wines with hearty winter fare and offer you the chance to sit for a while and soak up the atmosphere. An engaging wine experience

In the 1860s, the Geelong region was the largest and most highly regarded producer of wine in Victoria. The original vineyards were planted by Swiss vignerons from Neuchatel and the wine they produced was exported back to Europe, winning many awards. The phylloxera epidemic then hit the region and no vineyards were spared. It’s thanks to wine lovers like Ray Nadeson and Maree Collis of Lethbridge Wines (est 1996), that we are making great strides in once again holding that title, if not in vine area, then in wine quality. In March 2019 the duo opened their second cellar door, ‘Lethbridge@Hatrock’, to an eager crowd. Located amongst the lush rolling hills and thriving farmlands of the Bellarine Peninsula, this is the second cellar door for Ray and Maree, with the original located at their primary vineyards at Lethbridge Wines in the Moorabool Valley.

While the cellar door may be new, Ray and Maree’s relationship with the Hat Rock site extends back over a decade. Soon after the Pinot Noir vines were planted by the original owners 15 years ago, Ray and Maree worked with them to create the vineyards first ever wine, named ‘Hatrock’ after a local geographical feature. 101

Since that day the partnership has blossomed, culminating in the opening of the Lethbridge@ Hatrock cellar door. Along with building the new cellar door, vineyard expansion is underway with the planting of a hectare of Chardonnay grapes in 2018. These vines should become productive in three to four years’ time.

Lethbridge@Hatrock is situated on the Portarlington Road in Bellarine and is a stone’s throw away from other wineries, the whiskery and cellar doors in the region.

“We’ve had a long relationship with the site down there, we’ve made wine with them from the very beginning. The first wine from Hat Rock was made by us and over the last 10 years we’ve looked after the wines and used the grapes with our special range Lethbridge@Hatrock,” Maree says.

With this new cellar door, Maree hopes to extend the same engaging wine experience to that which they have created at Lethbridge Wines in the Moorabool Valley, which is the recipient for five years running of the Gourmet Traveller ‘Best Cellar Door’ award.

As Maree says, “There’s quite a bit happening in that space. It has become a real hub, a great destination for visitors.”

“At Lethbridge our goal at the cellar door is that people walk away having learnt something about wine that they didn’t know before. The idea with our cellar door at Hat Rock is really to be able to do the same thing: share the story, teach people about our wines in a really casual way,” she says. The bright and airy space is grounded by a large wooden table in the centre of the room. It’s at this table where visitors will be able to sample from more than 20 of the wines on offer, while taking away the story behind each bottle. A nod to Maree and Ray’s travels line the far wall of the cellar door, a mere glimpse of the inspiration that goes into each of the bottles that line the shelf at the counter. Thanks to knowledgeable staff at the cellar door, which will often be winemakers, Maree, Ray or viticulturist Peter, visitors will gain an

understanding of the flavours and processes involved in each wine they sample. These stories can be appreciated over an antipasto platter of local produce, which the staff make by hand with each order. Much of the produce used, including Wildings Pantry Essentials, Meredith’s Goats Cheese and Manzanillo Grove olive oil, can also be purchased at the cellar door’s pantry and deli. Another exciting element of the newly opened space is the installation of the Coravin system. By creating an argon atmosphere through the custom-made cap on the bottle, the wine is able to be kept for up to a year after opening. This means that the special and rare wines, including the Hugo George, Indra Shiraz, Mietta Pinot Noir and Allegra Chardonnay, can be sampled at this cellar door. 103

These wines are currently served at some of the best restaurants in Australia and around the world, including, Attica in Melbourne, Brae in Birregurra, Dinner by Heston in London and at GAGGAN in Bangkok. The restaurants have received Michelin stars, are award-winning and proudly pour Geelong wines to accompany their dishes. “The fact is that wines from top producers in Geelong are served together with the very best wines that the world has to offer in the very best restaurants. So Geelong wines definitely stack up,” Maree says. With more than 40 wines produced between their labels Lethbridge, Between Five Bells and 104

the Italian wine range il Modo, Maree and Ray are certainly punching above their weight. Given their background in research science, with Maree holding a PhD in chemistry and Ray a PhD in medicine, their continual exploration of new wines, flavours and combinations is not surprising. This love of wine and experimentation has resulted in the creation of some of Australia’s most sought after, rare and unusual wines. Their Negroaramo and Pinot Noir have both been rated in the top 100 Australian Wines in the UK with the 2012 Pinot Noir awarded ‘Best Wine of the Year’ in the UK Sommeliers Wine Award.

“We love to experiment and try new things, one of Ray’s life long projects is to make a wine beginning with every letter of the alphabet, from Arneis to Zinfandel. I think he is more than halfway there!” Maree says. “We have a huge passion for wine, winemaking and exploring wine all around the world.” This passion hasn’t diminished over the decades and wines that the duo have produced were spurred on by the beauty of the region and what is has to offer. “Geelong is a sensational wine region with a great history, it is a true hidden gem,” Maree says.

Deep garnet in colour. With the use of 100% whole bunch fermentation this takes the wine to a new level. Forrest floor, damp earth. There is more palate weight & complexity over the Ménage a Noir. Medium red in colour. Ripe fruit characters display more fruit forward, than the traditional savoury style more attuned to the Australian palate.Bright cherry notes, blood plums with a touch of juicy Raspberries. santa & d'sas 2018 ish dolcetto King Valley

13.4% abv

Showing great depth of colour for a Dolcetto, full red in colour with a purple rim. The grape variety originally from Piedmont Italy has found a new home in the King Valley. It is Italian for “Little Sweet One”. Notes of cherries and spice. Intense flavours fill the mid palate with a supple mouthfeel. Firm tannins, but kept in check with the power of the fruit. If this is what Australian Dolcetto tastes like… I’m in! Food: Cured Meats Drink: 2019 – 2023

Light to medium red in colour. Upfront aromas that screams Pinot Noir. Wild raspberries/ strawberries with notes of bramble and undergrowth. I’m a fan of the complexity. I’m a fan of the mouthfeel. 12.8% abv

Light to medium red in colour. Aromas of sour cherries. At first I was surprised to read 12.8% alcohol especially a wine coming from Heathcote, but don’t be,this wine expresses full ripe characters with a touch of sage, showcasing polished tannins. Aromas of blackcurrants/ blueberries with just a hint of menthol.More of blackcurrants on the palate with a touch of leafiness adding further complexity. Vibrant red in colour with purple rim. Dark berries and regional liquorice characters are prominent on the initial nosing. Similar flavours fill the palate with the addition of pepper & spices. The key to this wine is the impeccable balance at such an early stage of its life. With fine grained tannins, and and good use of French Oak make sure you grab a bottle or two for your Sunday Roast. Salmon pink in colour deriving from the raspberries. The base is made with 100% Peckham Pears blended with Raspberry extract. Notes of crushed summer berries and musk sticks. The pear cider is fermented dry before adding the raspberry addition fishing up with an off dry style.
