This issue we have a bike ride for you cyclists out there, comprising a route that takes you from the beautiful sights of Dover’s white cliffs through to Canterbury’s iconic cathedral. We also have a report on Countryside 2011; the unique project aiming to get you – the people of Kent out and about enjoying just some of the fabulous activities that are available to you in the Kent countryside. New look for Dover hotel The Ramada Hotel Dover has recently undergone a major refurbishment, which has enhanced its reputation as one of the leading branded four-star hotels in East Kent. The upgrade costing half a million pounds, was undertaken by one of the UK’s top interior designers. The improvements include a new restaurant, bar and lobby, together with the installation of flat-screen TVs and a new guest information system in all 68 bedrooms. The hotel, which is just off the A2 at Whitfield, is run by Leaf Hotels, which also owns two other successful hotels in East Kent, including the beachfront Best Western Dover Marina Hotel & Spa which opened on 25 March.
The fine dining restaurant – called The Olive Tree – is large enough to cater for weddings and other events for up to 130 guests. General manager Gehan DiasBandaranaike said the investment would help the hotel to meet its long-term objective of gaining two to three dining rosettes and gave local people and visitors to Dover the opportunity to enjoy using a fine dining venue.

Cured to perfection Chef-patron Jason Freedman of The Minnis, Birchington is reintroducing food preservation methods brought to Britain in the first millennium by the Roman invaders. Although we now have refrigeration to preserve produce, Jason is interested in the unique flavours that these ancient culinary crafts bring to the abundance of high quality meat, game, fish and seafood available in Kent. Constantly setting themselves new challenges, Jason and his team of chefs decided to learn the art of home curing, smoking, brining and pickling their own foods in house for the new spring and summer menus. The Minnis Bar and Restaurant will be serving their creations in a variety of dishes such as, Chorizo with Grilled Oysters, Platters of Home Produced Meats with Home Pickled Seafood, Home Pickled Vegetables and Home Made Chutneys. UK’S FIRST MALBEC WINE England’s leading wine producer, Chapel Down, has teamed up with a top Argentinean vineyard to create a UK first – an English made Malbec wine. The project coincided with the first Malbec World Day on 17 April 2011, a global celebration of Argentina’s famous grape variety. Malbec is a red wine, produced from Malbec grapes grown in Argentina, where the sun-drenched climate, high altitude and poor soils create ideal growing conditions for low-yielding high quality fruit. Chapel Down, the UK’s market leader in English wines, has joined forces with Gaucho Restaurants’ vineyard in Mendoza, to supply the Malbec grapes that will be used to create the AngloArgentine wine. 2,100 kilos of old vine Malbec grapes have been transported over 7,100 miles from Mendoza in Argentina to the Chapel Down winery in Tenterden in Kent. Chapel Down will crush and press the grapes to produce up to 2,000 bottles of this limited edition wine. The wine will then be aged by Chapel Down, ready to be released on Malbec World Day 2012, when it will available to buy at Chapel Down, in Gaucho Restaurants and at selected retailers around the UK. Taste the NEW ROUTE FROM MANSTON TO BELFAST A second route is to be opened and operated out of Manston airport by Flybe, providing customers with a direct route to the heart of the Northern Ireland capital of Belfast. The summer service will run three times a week and begin on the 26th May. Flights are available for booking now at www. flybe.com with fares from just £29.99 one way, including taxes and charges. Flybe’s popular service between Manston and Edinburgh is set to continue, however Flybe has taken the decision to suspend its service to Manchester from Monday April 4th as passenger numbers made the flight economically and environmentally hard to justify. However, Flybe remains committed to developing its route network from Manston and is continuing to work with the airport to bring travel choice to the people of Kent and the south east of England. Countryside 2011 returns to showcase the best of Kent’s great outdoors.

Ever fancied jet-skiing on a freshwater lake, getting up close and personal with creepy crawlies or swinging through the tree tops? Well now’s your chance, thanks to Countryside 2011.
Countryside 2011 is a super showcase of country-based activities, attractions and events that can be enjoyed across Kent and eight other counties in the South East during the Countryside 2011 fortnight of discovery, which runs from 28 May to 12 June. The campaign’s Event Directory, now online at www.countryside2011.org.uk, features something for people of all ages, interests and energy levels. Many choices are free and visitors to the website can also download a range of special discount vouchers. Hundreds of organisers have taken advantage of the Countryside 2011 Directory to tell us who they are and how they can get us hooked on the great outdoors. Kent activities already include everything from willow sculpting and cidery open days to jousting displays and family fun days. More entries are being added daily between now and 28 May.

The two-week event is the second Countryside campaign to be organised by Tourism South East. It follows last year’s hugely successful inaugural campaign, Countryside 2010, which attracted half a million people to the South East’s rural open spaces – 38,000 of which were new visitors to the countryside. Countryside 2011 is being supported by organisations such as the National Trust, RSPB, Cycle Touring Club, British Horse Society, Ramblers, Sustrans and the Wildlife Trusts. This idyllic ride takes you along leafy lanes and bridleways amid rolling hills, wide skies, woodland, country villages and hamlets. This can be the perfect recipe for a cycle holiday or a mixture of great day rides. It is advisable to start the journey anticlockwise via Route 16, as the climb out of Dover is short and steep compared to the longer, harder climb out of Folkestone. As you leave take a moment to enjoy the stunning views of Dover Castle spectacularly perched above the White Cliffs. The Castle was founded in the 12th century and has been described as the “Key to England” due to its defensive significance throughout history. The route meanders through fine east Kent countryside and historic villages to Patrixbourne, where the North Downs Way leads to Canterbury. Canterbury has a wealth of history and culture to uncover. If you have time it’s a great idea to spend some here, some sights are not to be missed. The skyline is dominated by the stunning Cathedral, the oldest in England. But the cathedral is
only part of the story; the ancient ruins of St Augustine’s Abbey and St Martin’s Church form Canterbury’s World Heritage Site while other ancient ruins such as the Castle are reminders of the city’s rich history. Although Canterbury is a place steeped in tradition it is also a modern and vibrant city. Luxury hotels, fine restaurants serving food from across the globe, lively nightclubs and welcoming pubs combine to give a complete experience. The return leg of your journey from Canterbury branches off route 16. You will pick up scenic Route 17 through the village of Bridge and follow quiet valley lanes to Elham. Here you can visit Park Gate Down Nature Reserve, a popular grassland site that has two orchid reserves. Good en-route signage allows you to join the journey at any point. One-way day riders can let the train take the strain on the return leg thanks to convenient stations at Folkestone, Dover and Canterbury.

I have a confession to make – I’ve never understood why we Brits choose to go on far-flung holidays during the summer months. Why wait all year for the sun to come out on our own doorstep, only to pack our bags and head to a corner of the world where the sun will still be shining come December - long after we’ve mothballed our swimwear and retrieved our winter woollies from the wardrobe? No, now is the time to enjoy the delights we have in our own backyard and one fantastic and often overlooked way to get the most out of the European summer is to visit a destination blessed with the alluring phenomena of the Midnight Sun. Only a handful of countries in the far Northern hemisphere can offer Midnight Sun and White Nights, and the season is just about to start - it runs from mid-May until the end of August - making now the perfect time to plan a trip to a destination which would often fall below your travel radar, and capitalise on an all-too-short window of opportunity.

The Scandinavian countries, along with Iceland and Estonia make for the most easily accessible Midnight Sun or Midnight Twilight destinations. These countries suffer from long, bitter and inhospitable winters, sometimes making sightseeing difficult, and often causing the tourist infrastructure to either close or operate on a heavily restricted basis for much of the year. But these destinations literally spring to life at this time of year as the light becomes as abundant and omnipresent as the darkness and ice of the preceding winter months. They are warm and light enough to attract tourists, creating a buzz of energy and atmosphere, but are never too overcrowded to stop us feeling we are really discovering something new and special. Activities like cycling, horse riding, hiking and fishing become possible all day long, and around the summer solstice (the longest day in the Northern hemisphere, typically on 21st June) all night long too. NEWS Porto in Northern Portugal is a unique city, it gave the world Port wine and today it is the ideal city break destination. The newly opened Yeatman Hotel is the first wine hotel in the region offering a truly unique experience. If you are swayed by ratings/grades then The Yeatman lives up to its 5 stars and if the scale allowed it; I would rate the hotel even higher! It sits on the river Douro and every single bedroom has a larger than life balcony with breathtaking views of the UNESCO Ribeira area of Porto along with endless views of the river. WHAT THIS VISA WAS FOR I WAS LATER TO FIND OUT BUT AT THE TIME I IGNORED IT ALL AND COLLECTED My LUGGAGE FROM THE OTHERWISE EMPTy ARRIVALS AREA. Last time I visited Egypt I stayed in a 5* hotel in Sharm-el-Sheikh and ended up with food poisoning and a twisted ankle. Not the best holiday in the world, although the appearance of a wild dolphin did improve it slightly. This time the destination was Dahab; about an hour’s drive north of Sharm-el-Sheikh. This was my first chance to really see Egyptian terrain and it is what I imagine the surface of the moon to look like, minus the scampering goats and large number of dead camels on the roadside apparently there are a lot of camel deaths on the Sharm to Dahab road. After a rather morbid start I arrived at our hotel to join my friends. We stayed at

the Blue Beach Club and, whilst not 5*, it was certainly a very comfortable, clean and authentic place to stay for a week. Our room was in the newly built building across the road from the main hotel and had it’s own garden courtyard with a covered area full of comfortable cushions. The swimming pool, restaurant, popular bar, and private beach are all across the road. In the hotel it is also possible to take Arabic lessons, indulge in a massage or enjoy yoga. They will also arrange a variety of other activities for you including horse riding and there is an on-site dive centre. During our stay I took part in an evening yoga class in the roof top yoga room, which was a very relaxing experience. I also had a physiotherapy massage at the hotel with the hotels masseuse Anne, who was excellent and gave me some stretches to help improve the muscles in my over worked shoulder. Traveling as part of a group I had not been responsible for selecting our dive school but I was very pleased when I arrived at Poseidon Divers to find very organised and experienced members of staff from all nationalities. Poseidon pride themselves on being safe and require all divers to take a check dive before any recreational dives, they also offer a large variety of courses accredited by PADI. My check dive was my first experience of diving from the shore and trekking to the edge of the water in full scuba gear with ten kilos of weight strapped to me in temperatures nearing thirty degrees. This was not the most comfortable of experiences! However, doing this enabled me to enjoy boat dives at Gabr El Bint later on in the week and these made it all worthwhile. Gabr El Bint was a beautiful dive site with fantastic corals teaming with marine life. There are a huge number of dive sites in and around Dahab and could keep you busy all week if you wanted them to. Bear in mind that some sites are only open to advanced divers, these include the Blue Hole and Thistlegorm wreck (you will also need that airport visa I ignored to get to Thistlegorm!). Another activity you can engage in during your visit is that of bartering. You will need to get used to the invitations into shops but a firm ‘No thank you’ will usually suffice in warding off unwanted attention. However,
if you do go in don’t be surprised if you are offered Bedouin tea and come away with an extra little gift from the shop owners wares. When you spot something you want to buy don’t forget to haggle the price down. Have a finite figure set in your head and don’t shift from it. There are few places that won’t haggle on price and it’s better to walk away than pay over the odds, you can always go back later if you decide you really want it. One thing you will always be able to find is food. There are so many places to eat and restauranteurs vying for your custom that you might find yourself getting free food thrown in. Surprisingly finding genuine Egyptian food was difficult and the recommended eatery Felucca was closed at the time of our visit. Favourites from our trip included Eldorados, an Italian to the North of the main town, the food is excellent and the atmosphere is pleasant and comfortable; secondly was The Blue House which is a popular Thai restaurant. If there is a group of you then I would recommend booking an early slot as it is only small and dishes do tend to run out later on into the evening.
Whilst the service can be a little slow it is well worth the wait, the food is delicious. Finally, it wouldn’t be Egypt without cats and they are everywhere! They have their territories and I witnessed two scrawny cats seeing off a scrounging dog from ‘their’ restaurant. Poseidon dive centre takes in strays, feeds them and has them neutered. I almost came home with a tortoiseshell kitten from one gallery owner until he discovered I lived in England at which point he declared that it would be too cold for her.

OUR TRIP BEGAN WITH DFDS SEAWAyS DOVER TO DUNKIRK SERVICE WHICH TAKES JUST UNDER 2 HOURS TO CROSS THE ENGLISH CHANNEL. From £25 each way for a car and up to four people, taking the ferry provides excellent value for money and if you don’t fancy simply kicking back and relaxing during the 2 hour crossing (which I can highly recommend doing in the VIP lounge - £12 extra per person), why not utilise the time to plan ahead some of your holiday activities. Once on board, we were treated to a little (actually rather large!) surprise in the form of an impromptu flash-mob in aid of promotingKoninginnedag,or Queen’s Day – an important national holiday in the Netherlands symbolising unitywith everyone getting involved in freemarkets, music, dance and laughter. Incidentally, for those wishing to experience such frivolity - Holland House takes place in Trafalgar square, London every year in celebration of Queen’s Day. The flash mob was conducted to great effect by members of a local Dover drama school,

with members breaking out into unified song and exposing their bright orange (previously hidden) t-shirts. Our destination in the Netherlands was to be Dordrecht. After departing from the boat, we drove through France and then Belgium towards the Dutch border, allowing us to glimpse other areas as we travelled. If time allowed, it would have been interesting to stop off at a few cities along the way but we were on a tight schedule so we headed straight for Dordrecht. Dordrecht is Holland’s oldest city and has a rich historic culture. Our first experience was to be the newly renovated Dordrechts Museum which houses Dutch paintings ranging from 1600s to the present day. Being closed since 2008, the museum reopened in late 2010 to reveal the extensive work that has been done to bring the museum up to date as the beautiful and modern art gallery it is today. It is a real pleasure to wander around the airy museum, taking in the various exemplary paintings of Dutch culture and life throughout history. The museum features a red walled room dedicated to AryScheffer’s work and also various paintings from the Cuyp family - both being key to Dordrecht and the Netherlands artistic history. Adjacent to Dordrechts museum is the restaurant ‘Art & Dining’, delivering fine dining to hungry visitors with a relaxed and open atmosphere, featuring selected works of art on display from the museum collection. The food was exquisite; on a par with the high quality feel of the establishment itself. Suitably refreshed, we headed to Hotel Dordrecht which was to be our overnight stay ready for the next days exploring. After our morning breakfast, we embarked on a walk around the city itself to catch a feel for the way of life and soak in some of the rich culture. The city was so peaceful that you could easily imagine yourself
sipping tea and reading the paper by the waterside as the world went by around you. Leaving Dordrecht behind us, we stopped briefly at Villa Augustus; an interesting location where a 19th Century water tower and industrial site has been wonderfully reclaimed as a hotel, restaurant and gardens. Being mid-March during our visit, unfortunately much of the garden’s splendour was still dormant but it was easy to imagine the grand scale of the plot and the café was still popular as a meeting place to have a spot of lunch. Next on the agenda was the bit I had been looking forward to most on my whole trip; the world heritage site of Kinderdijk, where 19 iconic Dutch windmills grace the flat southern landscape of the Netherlands. Visiting the site is akin to stepping back in time as all you see are the windmills adorning the flooded land, and one of the 19 has been maintained as a working ‘visiting mill’ where you can explore inside and see how the millers lived and worked.
Whilst time was rapidly escaping on this brief visit to the Netherlands, there was still time to stop off at one last stop before my journey home. De Biesbosch National Park is a freshwater tidal area some 9,000 hectares strong, formed by the St Elisabeth’s flood of 1421. The park is an important nature reserve, being home to many species of flora and fauna – some of which cannot be found anywhere else in the Netherlands. Of noted importance is the introduction of beavers into the area, which had previously last been seen natively in around 1826. In 1998, beavers were reintroduced and there is now around 150 beavers living in 60 lodges within the confines of the national park. The entire park is open for visitors to explore either by walking, cycling or by hiring or taking one of the boat trips on the expansive waterways. I did just that on an hour long slow cruise around the park perimeter aboard a solar powered boat! This proved to be most relaxing as the lack of engine noise allowed me to listen to the tranquillity of the surroundings. Unfortunately, I didn’t see a single beaver! Whilst my trip to the Netherlands was brief, I thoroughly enjoyed the chance to soak up some of the unique Dutch culture and I shall definitely be returning someday soon to explore further.

As Ellie Goulding prepares to headline Kent’s Lounge on the Farm festival in July, EK One takes a look at her life so far and her impressive rise up the pop charts and the nation’s hearts.

COVER STORY It has not taken long for Ellie to become an established name in popular culture, being relatively undiscovered and unknown until early 2010, she is now instantly recognised and comfortably part of today’s music population. Born in 1986 in the city of Hereford, the young Elena Jane Goulding started her passion for music early, playing the clarinet and writing songs at the age of just nine years old. By fourteen she had started to learn guitar and was songwriting a year later when she was fifteen. The age of 18 saw Ellie move to the county of Kent to study drama at the University of Kent in Canterbury, where she also lived. She would take part time jobs to pay her way and worked at the local theatre as a means to see interesting plays for free. Music still remained her hidden passion though, and at University she discovered electronic music. One night she took part in an open mic event in London and quickly found that performing felt quite natural to her. Soon after she got a manager, set up her MySpace page and started to collaborate with Vince Frank, better known (musically) as Frankmusik. This former beatboxer from Croydon helped Ellie remix one of her early demo songs “Wish I Stayed” into a completely new direction for the singer. After two years of studying, Miss Goulding decided to leave university and soon signed a publishing deal with Chrysalis Records in 2007. This offered her a chance to focus on the music and start her career doing the thing she loved. As a regular user of MySpace, it wasn’t long before Ellie met up with Finlay Dow-Smith; a 22 year-old songwriter, producer, remixer and DJ who goes under the performing name of Starsmith. He would later go on to produce Ellie’s debut album; Lights and co-write five of the album’s songs.

After moving to London, her popularity began to grow and news quickly spread of her increasing attention, including that of many record companies eager to have her on board from the beginning. It was Polydor records who successfully took Ellie under their wing, signing her in September of 2009 and her debut single “Under the Sheets” soon followed in November. The very beginning of 2010 saw Ellie catapulted into the limelight with the help of BBC Sound of 2010 poll. This annual poll, conducted by over a hundred music producers, editors, presenters and writers aims to bring to the public attention, those musicians that they believe deserve attention as they will be ‘the next big thing’. So quite an accolade to receive, and in Ellie’s case it was also followed by a ‘Critic’s Choice’ award at the BRIT awards 2010. Soon after, she released her debut album; ‘Lights’ in March and it

may have come to no surprise to some that it went straight to number one in the UK album charts. This was no mean feat, particularly when you consider that Ellie’s success pushed Lada Gaga’s ‘The Fame’ from the top spot, who was considered by most to be one of the key female pop singers at that time. Touring soon followed the release of Lights, seeing Ellie support Passion Pit in May and then making festival appearances in the summer, including the prestigious Glastonbury on the John Peel stage. Another area of her life that Ellie Goulding is passionate about is running. In August 2010, she released ‘Run Into the Light’, which was a remixed version of the album Lights and was supported by the clothing and sports equipment company; Nike. It was intended as a running soundtrack as Ellie herself likes to run, and with Nike she performed a series of gigs which included an element of running earlier in the day. At the end of 2010, Ellie Goulding made the brave move of covering Elton John’s ‘Your Song’ which featured in the John Lewis advertising campaign for Christmas. It was an instant success, both with existing fans and also with those that were not too familiar with her previous work. It has become her highest charting UK single to date, reaching number two on the singles chart and charted in some European countries as well, helping Ellie to spread beyond the borders of the United Kingdom. ‘Bright Lights’ was released in November of 2010 as a re-release of the debut album ‘Lights’, featuring the aforementioned ‘Your Song’ along with five other new songs. So what’s next for Ellie? A new album is currently being worked on and we can expect a release around September 2011. In the meantime, she continues to dominate today’s modern culture and refuses to just be left in the background. Her music is likeable and accessible; appealing to a wide audience, both young and old so it’s easy to see why she has made it to the top of her game. Let’s face it; who hasn’t heard of ‘Starry Eyed’?

Just as you might invite an architect in to provide advice on how to make the best use of the area inside your house, it makes sense to bring in a garden designer to gain their professional insight on how to maximise your outdoor living accommodation.
To many, a garden designer is responsible for artistic and creative input resulting in the origination of a stunning, designer inspired, perfectly styled garden. And whilst this is one aspect of their job, it is most certainly not the only role of the garden designer. In addition to delivering this creative flair and visionary thinking, a garden designer is there to guide you on a number of practical issues to ensure the final design delivers the functional as well as aesthetic benefits to suit you/your family’s lifestyle. At the heart of any well thought out garden design is an honest and open dialogue with the client at the initial consultation stage. Most reputable designers will have a standard questionnaire, which they ask clients to complete in advance of the first meeting. The above are just some of the obvious questions that you might be asked to consider but an experienced designer will be able to provide expert counsel on a number of specific issues. inspirational Show Gardens “The existing show gardens that proved very popular with visitors last year are all being revamped”
It was dubbed a mini Chelsea flower show, now it’s being extended for a second year so there will be even more to see here’s how a Kent company has CAUSED VISITORS TO FLOCK TO THEIR SHOW GARDENS. In May 2010, celebrity TV gardener Joe Swift unveiled four fantastic show gardens for Jacksons Fencing’s at their HQ in Kent. The gardens were the result of a competition run by Jacksons aimed at garden designers with the prize being the chance to have their design built. The gardens showcase Jacksons and other top quality garden supplier’s products in inspirational show gardens that wouldn’t look out of place at any of the big garden shows. The difference is, Jacksons gardens are open to the public, not just for a week like many garden shows, but all year round, allowing visitors who have never had the chance before, ample opportunity to see a show garden and get inspiration for their own garden projects. This year’s competition winners are ‘The Fragrant Front Garden’ by Justine Jobson, ‘The Chill Out Garden’ by Helen Elks-Smith and ‘The Paradise Garden’ by Mary Ann Le May. Justine was one of only two designers who thought to create a front garden using Jacksons’ steel railings and other products

to ingenious use. Helen’s garden is a space to relax and unwind, with a wild flower lawn, hammock and footbridges over a moat. The Paradise Garden however is bound to cause a stir – it comes complete with five colourful water windows, ripples in the sand and a rill running down to a pool where the water is then recycled. The existing show gardens that proved very popular with visitors last year are all being revamped, with all seven show gardens set to be officially opened once again by Joe Swift on the 21st May (the weekend before Chelsea Flower show starts). RECIPE RICHARD PHILLIPS With an early restaurant career starting off at London’s famous Savoy Hotel, going on to work alongside the likes of the Roux Brothers at La Gavaroche and then becoming Head Chef for Marco Pierre White at The Criterion, Mirabelle and Les Saveurs, it’s no wonder Richard Phillips had his own Michelin starred restaurant by the age of 29. 5g tarragon

1 clove garlic, chopped

5g Flat leaf parsley, washed and chopped

2 tablespoons honey
•
180ml cream, semi-whipped
Dressing
Dressing METHOD:

1 tablespoon Dijon mustard
•
2 tablespoons white wine vinegar
Whisk the oil a little at a time onto the mustard and vinegar until the correct consistency is achieved. Season to taste.

CARPACCIO Method:

3 medium sized beetroots, peeled and baked in tin foil until soft

10 walnuts, shelled and roasted

Micro cress leaves - to garnish

3. Slice 3 pieces of the cooked beetroot 1 cm thick and 3 pieces of beetroot ¼ cm thick. 4.
Place the 3 larger pieces of beetroot down the centre of a long plate, then pipe the mousse on top of the beetroot.
Blend the goat’s cheese in a food processor; add the pine nuts, herbs, garlic and honey.

Place the thinner piece of beetroot over the top, then place the poached quails egg on top.
Blend together, gently fold in the cream, season, and place into a piping bag.
6.
Drizzle the walnut dressing over the top and around, then sprinkle the walnuts around and garnish with the micro cress leaves.

A Coastguard Lunch
On an unseasonably bright and sunny day in early April, EK One took a trip to St. Margaret’s Bay to sample the delights of The Coastguard Pub & Restaurant.

Having navigated the narrow winding road through St. Margaret’s, we were greeted by the spectacular views of the bay which opened up before us, hugged either side by cliffs (one side heading towards Deal, the other towards the famous White Cliffs of Dover) and fronted by the sparkling splendour of the English Channel. The Coastguard, sitting pretty in the midst of all this natural beauty with its double width terrace is a truly inviting prospect, especially on a day like today. We decided to forgo the reserved table within the main restaurant (30 covers, seamanlike décor, cosy atmosphere) in order to take advantage of the sunshine, sea views and alfresco dining. After locating our spot in the sun I also got the chance to catch up with proprietors Nigel & Sam Wydymus. Having been at the Coastguard now for a decade after trading the smog, congestion and frenetic pace of the London rat race for the sea air, seafood and scenery of East Kent, this pair of food loving entrepreneurs have transformed the Coastguard from a pub offering standard microwaveable “pub grub” into an altogether more sophisticated experience for the hungry punter. And they’re loving every minute of it. Having spotted the Coastguard on a dark and miserable winters day, intent on finding their dream business they immediately saw the potential and offered the incumbent owners the chance to sell their business (despite it not in fact being for sale). Although the owners were not immediately tempted, Nigel & Sam were persistent and a full two years later the place was theirs. Proof if ever it were needed that persistence pays dividends. Ten years on and the Coastguard is renowned not only for it’s fantastic location but also for it’s beautifully presented dishes, prepared using the finest local ingredients. Sam, as Head Chef, is the driving force behind all things foodie and her talents often see her appearing on BBC Radio Kent offering fascinating insights on food history. This visit however is to discover how Sam and her team are serving up today’s fayre. One thing is for sure, with fresh fish, meat and vegetables delivered daily (meat from Johns of Walmer, fish from Jenkins of Deal) we can be sure of quality, local ingredients.
Pete’s review As you would expect given the location, name and sea-shanty theme, the menu was awash with fishy delights from the scallops seared with garlic butter starter to a choice of freshly dressed crab, hoegaarden battered cod, plaice fillet or fresh mackerel – not to mention the days special, the first lobsters of the season. However, on this particular day I was in a distinctly carnivorous mood so opted for the platter of chorizo salami and roast cherry tomatoes starter followed by the local matured beef sirloin steak seared on sea salt. The chorizo had lovely rich and bold flavours and the sweetness of the tomatoes served as a fine accompaniment. I have always loved chorizo and served sliced with the pot of tomatoes, a salad garnish and some beautiful freshly baked bread this is an ideal starter or snack to lazily consume on a delightful sunny day overlooking the flat-as-apancake sea from my picturesque vantage point. I had my steak cooked medium rare and it was suitably mouth watering. The delicious three grain mustard butter and double fried chips (with obligatory house salad) completed the meal and I can safely say sated my desire for a meaty double-header. My lime cordial was refreshing enough to wash down my meal but having opted to drive I was a little envious of those surrounding me enjoying the selection of English wines and local beers on offer at the Coastguard.
Joanna’s review A sucker for pâté, I was instinctively drawn to the chicken liver pâté made with port and tarragon. The pâté was rich and textured and when spread on homemade bread and grape chutney was very much my cup of tea. If anything the quantity made for a rather heavy and filling starter but as I had starved myself all morning in anticipation of a “robust” luncheon this was fine by me. Flavoursome and hearty I would recommend it to real pâté lovers everywhere. It would have been rude to come to such a venue and neither of us take advantage of the seafood on offer so I was more than happy to indulge in one of the first lobster of the season, served with hot chorizo, salad and double cooked chips. The lobster was tender and bursting with flavour and the chunky slices of chorizo really worked well to enhance the dish. I had to pass some of the chips over to my dining companion as there was no way I was going to pass up the dessert menu so had to leave a little room for an outstanding Bailey’s Irish Cream crème brûlée. The very generous portion left me glad that I had left those last few chips as I most certainly wouldn’t have wanted this delicious dish to go to waste!

Home Cured Salmon ‘Japanese Style’ SErvES 12
METhOd:
iNGrEdiENTS:

Wash the salmon and pat dry. Sprinkle over the salt and sugar.

Wrap the salmon in cling film and place on a tray.
Unwrap the salmon and finely slice, not cutting through the skin.

Place another tray on top and weight it down to compress the salmon underneath.
Lay the slices of salmon on the serving plates.
4.
Leave in the fridge for 3 days.
5.
Unwrap the salmon and wash off the salt & sugar mix, pat dry.
6.
Mix together the soy sauce, grated ginger, pureed chili and honey. Baste this mix all over the salmon flesh, making sure that it is well covered.

Wrap tightly in cling film and place back in the fridge, again weighting it

1 side fresh salmon (skin on, pin bones removed)
•
5 tbsp sea salt
•
4 tbsp caster sugar
•
100ml light soy sauce
•
½ tsp freshly grated ginger
•
½ fresh red chili (chopped or pureed)
•
2 tbsp honey
•
1 tsp wasabi powder or paste
•
250ml mayonnaise
•
1/2 lemon juice
down to remove any excess liquids. Leave for 4 Days.
10. Mix together the wasabi, lemon juice and mayonnaise. Serve in small pots next to the salmon.
We make the foam by mixing the mayonnaise, lemon juice, wasabi powder and any juices left from the Salmon together before straining it into a ½ litre foam gun and charge with 1 nitrous oxide canister.

Packed with vitamins, antioxidants and lots of other detoxifying nutrients, fresh asparagus will be springing up on a farmers’ market stall near you during May and June. So why does the asparagus season create such excitement in our county? Well if you ask any of the asparagus growers in Kent they’ll all give the same answer - it’s all down to the outstanding flavour. Chairman of the Kent Farmers’ Market Association, Benjamin Dent, says; “Asparagus flown in for the supermarkets from hotter climes really is a pale shadow of its English cousin. Kent’s temperate climate means the crops can grow slowly and develop their intense flavours. The most important criteria for achieving outstanding flavour in asparagus, from ‘farm to fork’, is freshness and growers always try to ensure that asparagus is

Many growers say asparagus is at its most tasty in mid-May – half way through the season.

Is it possible?” Yes it is possible but the main thing to take great care with is that you don’t compromise the condition. Firstly we would do strand tests to ensure that we can achieve the desired levels of lift and how your hair withstands the lightening procedure. We would pre treat your hair to get optimum condition then treat after the colour service. “I would really like to have a tan before I go on holiday but I have seen lots of streaky orange tans on people. How do I prevent that?” A celebrity secrets spray tan like all tans is only as good as the person who applies it. If your skin is prepared prior with Body exfoliation and moisturiser the tan when applied is best to not be over applied. Our tan dries instantly and is so natural that you can go straight out. The aftercare is important; when you shower only pat your skin dry and moisturise to help the tan to last longer. Also available are tan extender creams and touch up cans should you need them if you can’t get back in for another spray. “I am loving all the hair styles I keep seeing in magazines with soft waves and curls, how can I achieve this all I do right now is straighten my hair with irons.” I am with you they are gorgeous so feminine sexy and it’s great to see after
so much overdone straight hair. We use curl enhancing products to prepare the hair and then use round brushes to give movement in different directions, or you can curl with irons but make sure you use heat protector so as not to damage your hairs condition. Lounge on the Farm
Going from strength to strength, Lounge on the Farm (hereafter LOTF) has been turning more and more heads with every successive year since its fledgling outing in 2006. The first seeds of the festival were sown in the spring of 2004, due to chance meeting between ‘Lounge Original’ Sean Baker and the son of a farmer. Together they watched a band perform aboard a lorry in Canterbury - ideas were exchanged and a telephone number was hastily jotted on a pack of Marlboros. 2006 saw the first LOTF and since then it has won many awards including ‘Best Line Up’ at the 2009 UK Festival Awards and the ‘Sustainability’ award at the 2008 Greener Festival Awards. Lounge on the Farm was built around the desire to do something different, to bring a unique slant to the packed and competitive UK summer festival market. Located on the gorgeous and invariably sun drenched landscape of Merton Farm, LOTF combines the very best elements for the ultimate British Summertime. With style oozing from every beautiful curve, you’ll want to be seen out and about in Peugeot’s stunning RCZ coupe.
MOTORS
If you ask someone on the street to describe Peugeot cars, they’ll probably talk to you about the range of family cars that has become synonymous with the lion brand. The range that is comprised of numerical model numbers with small style changes over the years, but essentially steering clear of a full-on change in design principles. Enter the RCZ; Peugeot’s head-turning coupe that seems to demand attention wherever it goes. The exterior styling is designed to perfection – creating a good balance between a car that fits in on the road, whilst also holding its head above the competition to get itself noticed as something special. From the front, the RCZ has distinctively large feline headlights that wrap around the front wings, deep into the bulging front wheel arches and the Peugeot emblem stands proud at the tip of the bonnet. That curving bonnet also draws your eyes to the rather large, open-mouthed grille that is perhaps fitting for a car that makes people stop and stare agasp. A clever feature of the enveloping bonnet is that it forms the back part of the wheel arches, cutting down behind the light clusters which means that maintenance work on the wheels and engine is easy via the extra access.
The sleek lines continue with a low curving all-glass roof, flanked by rails in silver giving a very defined look and making the whole car look and feel very sporty and low the ground. The most important and oft commented upon feature of that glass roof (and the car in general) is the ‘double bubble’ curving that stands out and gives the car real flair. This simple but gorgeous modification to the roof panel makes the RCZ shine and defines its own way against some of its competition, such as the commonly compare Audi TT. The curvaceous roof blends with the black rear
glass perfectly to complete the smooth lined silhouette of the RCZ, which follows through to the rear end. At the back, the rear light clusters mirror the front styling with the large sweeping red arcs cutting through the bodywork elegantly and seamlessly. This looks particularly stunning contrasting against the pearl white paint finish (as tested), which itself makes this car really shine (literally!) on a bright summers day with its unique metallic effect that really makes it special - seeing (in real life) really is

Also at the rear of the car is the active rear spoiler which, otherwise hidden, automatically rises out of the car in two stages at different high speeds to assist the driver with aerodynamics. Inside, the styling is keep clean and simple but again oozing with class and sophistication. Black integral leather envelops every surface with the occasional highlight in chrome, which looks fantastic against those pearl white externals. A charming and retro-looking analogue clock graces the centre console of the dashboard and neatly recessed into the upper dash is the display for the Peugeot Connect system, which automatically flips out upon activation of the electronics. The sound system, powered by JBL technology is both powerful and impressive with great dynamics and one interesting feature of note is that it automatically adjusts the harmonics depending on the rate of acceleration. The ‘Connect’ system also (by means of an optional upgrade) houses the satellite navigation unit and I found it to be very detailed and thorough. On the driver’s instrument panel, a sizeable digital readout displays the next turn information, in sync with the Connect main panel so that the driver can quickly, easily and safely refer to the navigation without averting their gaze from the essentials.

The RCZ is advertised as being a socalled ‘2+2 coupe’ which essentially means that as well as the expected driver and passenger in the front, you can also fit two passengers in the back as well - something not always available in superstylish coupes. However, whilst headroom was ample enough in the back of the RCZ (with the assistance of the bulges in the roof above), the leg room wasn’t great. As such you wouldn’t want to spend a very long journey as a passenger in the back. This is not to be unexpected though really as whilst being advertised as a 2+2, pretty much all coupes suffer from the same fate due to their elegantly sloping styling. Think of the back seating as an optional bonus, there for using should you need but not as an essential because let’s face it, you won’t be buying such a beautiful head turner of a car if all you are looking for in transport is maximum space. No, you will fall in love with the RCZ if you are looking for something stylishly different, good allround and exciting to drive. Handling is gracefully brilliant on the RCZ and is a real pleasure to drive. Steering is light but precise, meaning that little effort is needed to direct the car round corners and steer it where you want it to go. The large 19 inch wheels stick to the road so grip is not a problem, even at speed. The large wing mirrors offer exceptional
MOTORS views of the road behind, as well as the gorgeous, bulging rear wheel arches. A neat trick to the mirrors (available on the GT models) is the ability to auto-dip when reverse gear is engaged. This comes in very handy when reverse parking, allowing the driver to see the side of the car in relation to the kerb at all times. Power is abundant too; with the relatively small 1.6 Litre engine managing to squeeze 200 bhp with the help of some aggressive turbocharging. This unexpected power from quite a mainstream engine size is in line with the general ethos of the RCZ - delivering that little bit extra from the normal and bringing a smile to your face without being too exotic and over-the-top. Acceleration is prompt with 0-62 mph achievable in 7.6 seconds and stopping isn’t a worry either, with the help of massive brake discs all round (ventilated at the front). The car is responsive at all times and the suspension feels right for its situation - soft enough to give a pleasant bump-free ride on the (sometimes pot hole ridden) roads around town, whilst being firm enough to make the car feel sporty and give the driver control. You can be fairly green too with the RCZ, something you might not expect on such a racy looking motor. Thanks to that smallish 1.6 engine, fuel economy is rated at a pleasing 40.9 Mpg and CO2 emissions are a respectable 159g/km. This is not
a fuel hungry, all out power machine; it is a beautiful, well thought out car that is suitable for almost any occasion. Personally, I found the RCZ to be one of the best cars I have driven, and with those beautifully abundant styling touches, it’s
almost impossible to not be seduced by its charm. It’s easy to see why the RCZ has won awards such as ‘best design’ and ‘best coupe’. The RCZ is a glimpse into the possible future of Peugeot design and it’s an exciting prospect, I can’t wait to see what they come up with next.

AS MANy OF yOU WILL BE AWARE, GEORGE OSBORNE DELIVERED HIS FIRST ‘ORDINARy’ BUDGET ON 23RD MARCH 2011. OSBORNE’S EMERGENCy BUDGET IN JUNE 2010 SET OUT A VAST RANGE OF CUTS TO PUBLIC SPENDING AND TAx INCREASES WHICH WOULD HAVE AN IMPACT ON EVERy UK CITIZEN. FAST FORWARD TO MARCH 2011 AND THE 2011 BUDGET WAS AN IMPORTANT TEST FOR THE COALITION GOVERNMENT AND OSBORNE HIMSELF. Armed with a range of conflicting economic data, poor growth forecasts and rising inflation and fuel prices, it appeared that the Chancellor’s options were limited. For this reason, it came as no surprise that he set out a fiscally neutral Budget. The background of the Budget is now set by the forecasts and information provided by the Office for Budget Responsibility (OBR). Its growth forecast made for uncomfortable reading – the forecast for economic growth for 2011 was reduced from 2.1% to 1.7%. Growth forecasts thereafter were unchanged at around 2.35% to 2013, but given world events there must be a risk that this assumption is too optimistic. you would therefore expect this to have a knock-on effect on tax revenues.

If you also look at the Government’s overdraft, the information provided by the OBR shows a much more positive result. The main highlight of this is the fact that the overall borrowing forecasts are virtually unchanged in comparison with the report the OBR issued in November 2010. While this is encouraging, there are still concerns for these figures if inflation remains in the region of 4-5% - which is considerably higher than the Bank of England’s target of 2%. If inflations remains at this level, it will put pressure on the Government’s borrowing and interest charges. Based on the uncertain economic climate, Osborne’s approach and strategy is clear for all to see which is to find ways to assist the level of UK growth and rebalance the
economy away from government spending and the financial sector towards exports and manufacturing. This is reflected by his intentions to reduce business taxes, increase investment incentives, enhance tax reliefs and make a start in simplifying the tax system. An example of this was the reduction of the corporation tax rates from both large and small companies. For large companies, the rate will be reduced from 28% to 26% from April 2011 and will decrease by 1% for the next 3 years so by April 2014, the corporation tax rates for large companies will be 23%. The rate for small companies will be reduced to 20% from 1 April 2011. There were also changes made to Entrepreneurs’ Relief. These changes now mean that the sale of a business asset will be taxed at a 10% Capital Gains Tax rate rather than the normal 18% or 28%. The limits for Entrepreneurs’ Relief from April 2011 will also be doubled from £5m to £10m. With the Office of Tax Simplification (OTS) starting to take shape, there were a number of announcements in the Budget mainly in relation to the OTS reports on tax reliefs and on SME business taxation. On the recommendation of the OTS, tax relief for 15p luncheon vouchers and cyclists’ breakfasts has been scrapped. While these reliefs will not be missed by the masses, the scrapping of tax relief on late night taxis could raise a few eyebrows. By abolishing a number of these reliefs, there is a possibility that employers may now have an increased compliance burden as tax liabilities may arise from these benefits where none have existed in the past. It seems a little counterproductive considering the OTS is supposed to be making the tax system simpler. This Budget was clearly aimed at encouraging growth. While this was a credible attempt from Osborne to try and grow the UK economy out of trouble, only time will tell whether it will have the desired effect.

On paper, the Leica X1 is a fixed lens compact camera but in life it really is a thing of designed beauty. Available in silver and black as well as all black, the all-metal construction feels perfect in the hands, with enough weight to feel like you are holding something substantial without being too much to be uncomfortable during long periods of use. The high quality leather trim adds tactility and finishes the look of the camera body to make it undeniably ‘Leica’. With a RRP of £1395 for the X1, the cost may seem a bit high for the average camera enthusiast, but the Leica is not designed to fit alongside any other camera available. The X1 is a beautiful design classic that appeals to a very specialist market of photographers who will appreciate its unique qualities and treasure it. That’s not to say that the camera has a very limited use though – far from it. The compact nature of the X1 means it is very easy to take it practically anywhere and it will deliver outstanding photos in all types of situations. Be it on holiday in a foreign land or shooting a creative photoshoot, the little Leica delivers and is very easy to use along the way. At the heart of the camera is an APS-C sized CMOS sensor, which for those who are not so technically aware, is the same size as those found in the majority of DSLR (digital SLR) cameras. The 12.2 megapixel resolution very effectively captures the light and ensures low noise in the final image and accurate colour differentiation. Quite impressive for such a small package! An efficient sensor is all very well but just as important (if not more so) is a top quality lens in front, to bend the incoming light into sharp focus, resulting in perfect pictures. Thankfully the X1 comes equipped with a Leica Elmarit 24mm f/ 2.8 ASPH lens, offering outstanding optical performance equivalent to a 35mm focal length, which serves well in both wide angle and close up situations.
Images are recorded via the readily available SD card format and you can choose whether to capture images as compressed JPEG, DNG raw files or interestingly - simultaneously in both formats at once. This is a very useful ‘middle ground’ between the two formats. If you like the instant usability of JPEG files but sometimes wish you could improve elements of the photo in post processing (such as the popular Adobe Photoshop suite), you still have a backup raw file to work on at your leisure. Adobe Lightroom is available free to registered users of the Leica X1. Control options on this little camera are vast but also easily accessible and a breeze to operate. On top you’ll find three dials - the main ‘on’ switch which allows you to select single shot mode (S), continuous shooting (C) for multiple bursts and a self-timer option for unattended portraits. The silvery metal shutter release button is also incorporated into the centre of this dial, offering the usual half depression for auto focussing. To the left and right are the shutter speed and aperture priority dials (respectively). Selectable shutter speeds range from 30 seconds up to 1/2000 of a second, providing pretty much every option you’ll ever need, whilst apertures range from F2.8 through to F16 – again providing plenty of choice to match your photographic candidate. The dials turn easily with a satisfying soft click and feel both special and precise. Both aperture and shutter priority dials have an automatic (A) setting too so you can also set the camera to a fully automatic position, negating the need to worry about intricate details if you just wish to take a quick simple photo. Also on top of the camera is the recessed flash that can be (manually) popped up when required. Flash exposure can be program automatic, aperture/shutter priority automatic and also fully manual. Exposure can be set +- 3 EV steps too. Lastly, there is a hot shoe for attachment of optional Leica flash units or the optional optical viewfinder. The viewfinder is simple yet well-constructed and
comes in highly useful when composing shots. For many photographers, using an LCD screen to compose a shot just doesn’t feel as natural as holding your eye against an optical viewfinder. The optics themselves are very clear and the addition of hard etched framing lines are a nice touch. The aforementioned LCD screen is however, pleasingly large at 2.7 inches - taking up a lot of the available space to the rear of the X1. Reviewing your images is therefore precise. Focussing on the X1 is efficient with the choice of 1 or 11 point auto-focussing, both available in high speed mode as well. Spot focus can be used for precision and face detection is also available for the more relaxed portrait shots. The ISO range is impressive for this compact; running from 100 right up to 3200! Low light photography need not be a problem for the X1 due to the high ISO and the ability to capture images in RAW format to reduce noise. Another optional extra that is worth mentioning is the X1 hand grip. Screwing securely into the tripod mount on the underside of the X1, this all-black grip provides improved handling and makes the camera feel that little bit more complete as it naturally fits into the hand. The grip does cover up access to the SD card and battery compartment but the Leica can be connected to a computer by the USB lead for downloading of pictures and battery life is good, meaning fewer changes or charges in daily use. The Leica X1 is a luxurious and iconic camera. It won’t be for everyone, but for those who are captivated by its unique stance in quite a crowded photographic market, it’s appeal is limitless. The X1 is undeniably fun to use and will give you a real sense of pride through ownership.
