Christmas For the fourth time, Whitefriars Square - situated right in the centre of the picturesque, medieval City of Canterbury, will be transformed into a small traditional Christmas Market. Visitors can enjoy the festive atmosphere, whilst relaxing with a glass of “Glühwein” (German Mulled Wine) and listening to traditional Christmas music.
The typical German Sausage “Bratwurst” does not need an introduction. While wandering about, look for and find unusual Christmas presents such as silver jewellery, lacquer wood, unique icons and funky hats, candles in unusual shapes and sizes or creative Swarovski design. TV star’s visit to Kent’s orchards Already described by chef extraordinaire Raymond Blanc as the ‘best eating apples’ chosen from a selection of new British varieties, the introduction of Norman Collett’s newest variety to the UK - the Rubens - has generated a flurry of interest from television producers and celebrity chef James Martin. James Martin is fronting the second programme in a new series entitled Great British Food Revival, due for broadcasting on BBC2 in January in which the celebrity chef turns his attention to the Great British apple industry in the ‘Garden of England’. Martin is a champion of British cuisine using simple, seasonal ingredients and uncluttered recipes to produce his classic British dishes and was immediately attracted to the intense flavour and “unique crunch” of the newest apple variety to be introduced into Kent’s orchards - the Rubens.

The programme includes a visit to Brogdale Farm - home of the national fruit collection - and a visit to a traditional cider producer; then follows the harvesting of the Rubens apple, taking the viewer on a journey from a Rubens orchard in Kent, through the picking and packing process. The Rubens apple has also caught the attention of producers of BBC 1’s Inside Out in the South East. With the programme featuring ‘the stories that matter to the region’ Kaddy Lee-Preston will put the spotlight on the booming English apple industry and the introduction and popularity of the new Rubens variety in England. Rubens are currently available via supermarkets across Kent including Co-op, Morrisons and Tesco.
Local artist set to unveil underwater work near Cancun A Canterbury based sculptor - famous for his work creating artificial reefs - is set to officially open his biggest exhibition to date off the coast of Cancun, Mexico. Using ‘life casts’ made from materials that encourage coral growth, Jason de Caires Taylor is building an underwater installation on the sea bed, which will see 400 statues create an artificial home for a variety of aquatic creatures at the Cancun and Isla Mujeres National Marine Park. Part of an ongoing project, Jason (36) has been working on the collection for over a year. One of the first statues was submerged last November and is already showing promising signs of life. Named ‘Man on Fire’, the cast from Joachim, a local Mexican fisherman, was drilled with over 75 holes and planted with live cuttings of fire coral which have since bloomed and attracted other sea life.

The statues were all made in a studio in Puerto Morelos over 20 miles from Cancun. After sculpting them Jason and his team of artists then moved the statues in batches of 10 - weighing several tons each - to begin their long voyage to the sea floor.
The installation sits at a depth of 10 metres making it accessible to divers and snorkelers, and visible from the surface with good light for visitors to explore the underwater art museum.
Reaching the docks each batch is loaded onto a barge featuring a powerful crane. Once the barge is directly above the reef, a snorkeler then directs the crane operator where to lower the latest piece of colossal artwork.
The project, named Museo Subacuático de Arte (MUSA), will officially open on November 27th ahead of the 2010 United Nations Climate Change Conference, which is being held in Cancun. www.underwatersculpture.com

Oliver Winconek : Private View
Everything in Between
Over the last five years that local artist Oliver Winconek has been based in Kent he has become a renowned name in the art world, drawing on everyday life for his inspiration and exhibiting worldwide. A lot of his work is created using stencils made from photographs, then spray paint and acrylic are applied to create the depth and vitality seen in his pieces. Throughout all of September Oliver held his solo show at Castle Arts Gallery in Castle Street, Canterbury and EK One went along to the evening event to see his new body of work, we may also have sampled the delicious homemade cupcakes.
This latest exhibition has been a great success, what’s next? I am very keen to develop certain ideas and themes from the show, I am very happy with the work on multiple layers of perspex and would like to experiment with this further. I am not one for standing still and will continue to strive for an even greater level of depth within my new work. I am keen to travel in order to build up a collection of images to work from, New York is high on my priority list as is Japan. Having said that I am still finding parts of Kent and London that surprise and fascinate me.

Do you have a dream project? I can’t say I do, everything moves so fast that I couldn’t even begin to think of an eventual dream ending. I am very happy working day by day, always striving to push the quality of my work. For me having a dream project or dream situation almost feels like it would spell the end once I got to that point. I much prefer being able to take risks and leave things to chance.
In the exhibition you focus on landmarks and people - are these themes that you intend to continue with or do you have new avenues that you want to explore? People, buildings and landmarks are a theme that will always run through my work, but for the first time I have started to include animals in certain paintings. I have always steered clear of this in the past although I have really enjoyed depicting the subtle play between humans and animals so much that I am keen to explore it further. As an artist do you feel more responsible for highlighting issues in local life such as the closing of the Canterbury post office for which you produced a protest piece in situ? I can’t say that all the work I create has a strong political or social message. In all honesty I try and shy away from creating pieces like this as I feel with so much advertising in the world we are always being told how to think. However, there are times when something will strike a chord with me and I will feel the need to comment. It’s only natural for me to reflect that in my artwork. Has Kent been a good place for you to develop your work over the past few years? Definitely, I love living in Kent. I’m very lucky that I am surrounded by such a

Faversham On this walk you will follow in the footsteps of Royalty and Romans! You will walk between town and country, country and town, the two merging so seamlessly that you hardly notice where one begins and the other ends.

where the watchword is variety; colourful domestic gardens mark out the town and villages with their lavish planting, whilst the open country is testament to the working agricultural landscape. Pawley Farm will welcome you with its locally-produced cider and apple juice; if you call in advance, you can take a tour and see today’s rural industry for yourself. Discover the fifteenth-century manor house which gave nearby Painter’s Forstal its name, or rest for a while at The Alma pub overlooking the village green. Then it’s onward again, through coppiced woodland, across the valley bottom and along leafy glades. Far from the bustle of the town, the only sounds you’ll hear are the cries of the birds and the wind in the trees. Orchard paths and wooded trails now lead you to the Brogdale Collections. Explore the unrivalled collection of apples, pears and other top-fruit and discover why this part of England was called its garden. Relax in the tea-room before striding on again, back to the bracing activity of Faversham. Those town centre inns and pubs are beckoning! Or perhaps you’re ready for some of the fine dining Faversham has to offer? There’s plenty of welcoming accommodation locally too, in this walker-friendly destination. So why not stay and explore? After all, this walk can only show you a fraction of what the area has to offer. This walk can start and end in various different locations depending on what is most convenient to you; as this is a circular walk you’ll always return to where you began. Many sections end in a spot where you’ll find a pub, restaurant or tea room to help fortify you for the next stage of your walk or perhaps to offer a welcome treat once you’ve finished the whole route. Throughout the walk you will discover the changing face of Faversham. The historic medieval and Tudor heart of the town, clustered around the Market Place, gives way to later styles of building as you move out towards the country. Georgian and then Victorian homes and buildings line the streets, evidence of how the town has prospered, grown and changed over the centuries. All around you’ll see signs of the
industrious nature of the people who live here - the sites of windmills and watermills and, of course, the gunpowder mills which contributed so much to the town’s prosperity. Not only industry, but also philanthropy - the wonderful almshouses in South Road are some of the finest in the country; at their centre, a magnificent chapel with decoration and stained glass worthy of any cathedral. In the parish of Ospringe, follow the road the Roman legionaries took towards London. Kings and queens passed this way too and the church bells rang out to greet them. Then, gently leaving town and village behind, you cross Ospringe churchyard and find yourself in open country. You will walk paths and tracks our ancestors trod and enjoy wooded hillsides reflecting the changing colours of the seasons. The walk will take you through a mixture of typical and pretty English countryside

Steeped in history and filled with many examples of architectural building styles, there is a tremendous amount of culture to soak up in the city and for this reason I would highly recommend one of the guided walks offered by Visit Manchester. Our tour guide Emma took us on a two hour walk all around the city and was full of knowledge about aspects of Manchester life; past and present, being able to answer all of our questions asked. This served as a great introduction, especially if (like me) you had limited knowledge of Manchester’s deep history. There is plenty to keep you occupied around Manchester. The impressive collection housed in John Ryland’s library is a must visit for any bibliophile, whilst art lovers should stop by the City Art gallery or Lowry
For the shopaholics, Manchester becomes a dream; offering a vast range of huge department stores, dedicated malls - with The Arndale being the biggest city-centre mall in the whole of Europe - top names, and also plenty of alternative & boutique shops to be explored too. Nightlife thrives in the city, and you are always guaranteed to find something to satisfy your needs whatever they may be! The Northern Quarter houses bars and clubs aplenty which occupy nearly every street corner and here you will find live indie bands, if you are looking for that famous Manchester sound, as well as popular jazz clubs and the well known Sankey’s; complete with it’s NASA engineered sound system! The Printworks; Manchester’s vast ex-newspaper printing factory forms a complete entertainment centre, offering an IMAX cinema alongside bars, restaurants and nightclubs where everything is literally under one roof. Even though Manchester is large and home to some 500,000 people, it never felt crowded. I found it easy and pleasant to wander around the streets and with flight times of just over an hour, the north is now a much closer place and a destination to consider for any type of break.

Having not visited Manchester before, I was eager to see what was on offer to the casual explorer when I stayed for a short weekend recently. The first thing you realise is that it is grandiose! A large city composed of big buildings, wide streets and oversized shopping malls, forming a great example of how the cotton industry around the turn of the 19th Century had revolutionised this sleepy town into the hive of activity it is today.

from seed to shelf all by hand

Hidden away on the hillsides in Biddenden are some vineyards. Originally planted by the Barnes family in 1969, when it was becoming hard to make a living out of apples, Biddenden Vineyard has grown from strength to strength. EK One went along to see the wine and cider making process.

Being from the garden of England and having grown up surrounded by farm land I, mistakenly, feel that I should know a little bit about farming and harvesting. However, I was surprised to arrive at Biddenden Vineyards in mid-October to find they were just picking their grapes. Surely this should have been done at the end of the summer? But Vikki Wright, in charge of marketing at the vineyard, informs me that by picking the grapes later in the year gives them longer to soak up as much sun as possible - after all this is when apples get picked. It’s beginning to get chilly on the hillside as we walk around the vineyards. Being out in the fresh air is a very welcome change to being stuck in the office but I don’t envy the pickers as they pile the grapes into large barrels with bare hands. The vineyard employs a number of local people every year to help with the harvesting, many who come back year on year. They also have regular staff who take care of the vines throughout the year and ensure that everything is running smoothly. There is no automation in the vineyard itself, all of the pruning, picking, planting and caretaking is done by hand with a grape growing system, designed by owner Julian Barnes, to ensure that the grapes receive the maximum amount of air and warmth. The vineyard consists of 22 acres and has 10 grape varieties which produce white, red, rose and sparkling wines. All of which are picked, pressed, bottled and packed on site. After our stroll I am taken down to the pressing house where grapes are being gently squeezed in an air vacuum to extract their juices. At that particular moment cider is being bottled and packed away and the room is noticeably warm. Vikki tells me that the cider is bottled at a high temperature as part of the pasteurisation process. On the way out we pass the fermentation tanks which loom over the yard and are full of apple juice from the orchards, just waiting to be turned into scrumptious cider. The vineyard produces a range of strong ciders, ranging from 6% to
13% they can be lethal and local pubs have been known to only sell them in half-pints. Biddenden Vineyard has won a number of awards in the last few years including more recently Best Kentish Cider for their Biddenden Strong Kentish Cider and Best Kentish Wine for their Biddenden Ortega 2008 at the 2009 Taste of Kent Awards (awarded February 2010). Biddenden Ortega 2008 was also awarded Wine of the Year by the United Kingdom Vineyards Association in 2009 along with several silver and bronze medals. Their cider was awarded cider of the year by CAMRA. Tours around the vineyard are available throughout the summer and Autumn but they finish mid-November. However they are opening a Christmas shop from Friday 12th November and welcome visitors to come and sample their wares before picking out the perfect present. he term Personal Shopper is one that everyone knows well, but how many have taken advantage of such assistance first hand? I was keen to find out just what can be gained from the experience, so I spent a morning with Deborah Eastlake at Ashford’s Designer Outlet. Arriving for my ten o’clock appointment, Deborah took me to the outlet’s style suite for an introductory chat, including a questionnaire to ascertain my current fashion styles and any dislikes I might have about my body image. We also browsed through examples of the most current (male) fashion trends and had a ‘colour consultation’ where Deborah highlights which colours will work best with each individual’s skin tone, hair and eye colour. Armed with this new found knowledge, it was time to set off around the Outlet and begin shopping en masse. First stop was Fred Perry to investigate the ‘80’s mod’ look. At this point, Deborah explained her shopping methods to me, in that she would home in on particular clothes she thought might work and ask me to promptly try them on without any unnecessary discussion. This I liked, after all a personal shopper should shop for you and take control shouldn’t they?! Having tried on a few outfits, including a pink chequered shirt - a colour I hadn’t been brave enough to try before, a clearer picture started to emerge as to what suited my body shape and overall style. Some items had potential and some didn’t. The process is a learning curve and requires a bit of trial and error at first to understand the right path to take. Our next stop was
the fine tailoring of Ted Baker where Deborah was a lot more successful in finding potential items. Layering was top of the hit list here; mixing detailed shirts with cardigans and jumpers in those warm dark tones we had decided upon earlier. A smart pair of grey trousers was also added to the mix, providing an alternative to my staple jeans. Again some items weren’t as successful; a shirt with flamboyant collar and cuff detail didn’t quite work, but the success rate was much higher overall, with whole outfits now appearing viable.

After visiting a handful of other select shops (such as Henri Lloyd, Mexx and Levi’s), I now had a variety of fashionable choices lined up at my (or rather my cash’s) disposal. This brought a tough choice; with so many new items recommended to me I had to decide which I would now chose within my budget. Weighing up each item’s price per wear (i.e. how much ongoing usage would be gleamed from individual items); I opted for the lovely pair of grey trousers and a complimenting olive green jumper (both from Ted Baker). I did decide to treat myself and extend my budget a little further to include a gorgeous pair of shoeboots from Henri Lloyd that Deborah had spotted for me. After all, it’s not everyday you get such dedicated service!

EK One spent two weeks bareboat sailing around the Grenadines to Grenada soaking up the sun and culture to bring you some of the best.

The Grenadines and Grenada consist of thirty-two islands in the south of the Caribbean, Grenada being the largest of these and the most densely populated. The smaller islands are mostly unspoilt with a few being completely uninhabited, there’s even a man made island, aptly named Happy Island, where you can get one of the best rum punches in the group. If you are a nature lover then these islands will satisfy the naturalist in you. They are incredibly lush with large, brightly coloured flora, plenty of birds, animal life and the odd celebrity to spot and, of course, the impressive sea life that can be seen by both snorkeling and diving. We arrived in Canouan at night after a long day of travel via Barbados and our first challenge was finding a taxi to the dock. We were officially on Caribbean time.
Our yacht was hired through The Moorings ‘The Best Sailing Vacations in the World!’ and spent two weeks sailing around the Grenadines down to Grenada and back again. The yacht, a 46 foot catamaran, was stunning with inside and outside seating areas for up to 10 people, four double cabins en-suite and two single cabins. The small kitchen area had all the facilities needed for cooking, including a microwave, and there is also a small gas barbeque connected to the back of the yacht. If you need to escape from the heat for a while then the onboard air conditioning unit is your saviour. A little tip (not very nice but good to know) is to use the air conditioning to slow down local beasties (such as flies) before having a good swatting session. There is also an on board CD player, iPod dock and a flat screen television through which you can watch DVDs. Don’t expect to keep up with your favourite soap opera though - reception is unsurprisingly bad. You will also be given complimentary towels and snorkeling gear, although all the towels we had were the same blue so be prepared to share. Of course my favourite place on

The diving in Tobago Cays and Mayreau is renowned for being some of the best in the Caribbean and any dive enthusiast should make a dive or two a priority. The reef off of Petit Tabac, Horseshoe reef, Mayreau Gardens and the Purini wreck are some of the dive highlights with Mayreau Gardens being the most colourful and the wreck the eeriest. If a drift dive is on your list then Horseshoe reef is the place for you. To dive in this area contact Glenroy, owner of Grenadines Dive. After filling the cupboards with supplies and water we had a debriefing from Moorings on sailing around the islands which included tips of the best places to visit and what to avoid. Our planned route would first take us down to the Tobago Cays, Mayreau and Union Island for a couple of nights. Then across to Palm Island, Petit St Vincent (a duty free island), and Petit Martinique where the waters officially change to Grenada’s ownership, requiring a check in with customs. From here we would sail down to Carriacou followed by the longest sail to Grenada for a long weekend before slowly heading back up to Canouan and onwards to Bequia for a couple of days and finally flying out from Canouan. If you’re a fan of Johnny Depp then the island of Petit Tabac might be on your hit list. A very small bank of sand with a few palm trees growing on it was where the famous rum scene in Pirates of the Caribbean with Johnny Depp was filmed and, as such, it has become a bit of a tourist hotspot. It is a little tricky to navigate to due to the reef surrounding it but it is
possible in good winds. Also, if celeb spotting is your thing then it might be worth adjusting your itinerary to include a stay near or on Mustique where there is a high chance of spying the rich and famous behind their oversized sunglasses. Grenada You will be pleased to hear that there are free showers at the mooring in St George’s, Grenada as well as a swimming pool, restaurant, bar, and a large supermarket with it’s own miniature dock that you can take your dinghy over to when stocking up on the essentials. A walk along the harbour to the Carenage and over the hill will bring you to the market, or Creole Cuisine Caribbean cooking has become very popular in recent years, partly due to Levi Roots, and it is delicious. Must try dishes include fried lambie (conch) fritters, chicken roti, jerk chicken, breadfruit, callaloo soup (similar to spinach), fied okra, fresh mango, fresh fish and oysters. go up the hill a bit further to Fort George for a fantastic view over the town and hills. We hired a mini van for the day to take us around the island. We began with a visit to Concorde Falls where we were welcomed with a serenade. The waterfall is nestled in the hills surrounded by a vast variety of vegetation, some of which is labelled. Local boys will often show off by jumping from the top of the waterfall into the pool below. Up on the mountain used to be the place to see monkeys but since the hurricane of 2004 that destroyed a large percentage of their canopy in this area (and a portion of the population), they have moved on and are rarely seen by the public now. We took a short walk around the Grand Etange before heading to the Belmonte Estate cocoa plantation. The plantation was established in the 1700’s by the French, then run by the Scottish and is now owned by an Indian family. At the plantation it is possible to take a tour on how the cocoa beans are View of St George’s from Fort George
prepared before going to the chocolate factory, you will be given complimentary cocoa tea (hot chocolate) and some tasting samples of chocolate.
It took us about half an hour to locate the various sculptures but it was well worth it.
Another excellent trip is to the River Antoine rum distillery and nutmeg factory, sadly it was closed when we wanted to visit so do check opening times before you go. Instead we headed to Bathway Beach for a dip and lunch in Aggies which was delicious and popular with the locals. After lunch we made a quick stop at Leaper’s Ledge where a large number of Caribs ended their lives rather than live on in slavery under the French.
The island of Bequia at the northern end of the Grenadines is a stunning highlight to the trip. We arranged another mini bus tour here and attempted a visit to the Moonhole community at the north end of the island where Tom Johnson built dwellings in a natural arch rock formation in the 1960s. The dwellings gained the title of moonholes as the moon can be seen through the arch at certain times of the month. However, the community is private and it isn’t possible to visit the buildings without prior permission but it is possible to view the original moonhole by sailing past. We also visited the Old Hegg Turtle Sanctuary, founded by Orton King in 1955, where there are various species of turtles and tortoise to see and a large number of roaming goats and chickens. The town of Port Elizabeth is well worth exploring with a large number of craft stalls dotted around, an internet cafe and bookshop. We would recommend the Frangipani restaurant for a luxurious meal and the ice cream parlour around the back is excellent. There are also places offering spa treatments in the town so this could be the place to treat yourself.
A final must-do before you leave Grenadan waters is to stop at the underwater sculpture park on the westward coast of the island in Mollinere Bay. Created by Jason de Caires Taylor, the sculpture park is located in shallow waters to allow easy access to boats, snorkelers and divers.

From relative obscurity to instant recognition thanks to her role as Hermione Granger in the iconic Harry Potter series of films, Emma Watson has proved her talents and elevated herself to become a star in her own right.

Born 15th April 1990 in Paris, Emma Charlotte Duerre Watson relocated at the age of five with her mother Jacqueline Luesby and younger brother Alexander to reside in Oxfordshire England, where she would grow up. In September 1995, Emma attended Lynams School, the nursery school for the prestigious Dragon School in Oxford and it was here that Emma first demonstrated her talent for acting at the age of just seven, when she won the Daisy Pratt poetry competition for her recital of ‘The Sea’ by James Reeves.
It was in 1999 that her life would take such a dramatic change, bringing her into the attention of the entire world to critical acclaim. Casting began for Harry Potter and the Philosopher’s Stone, the film adaptation of British author J.K. Rowling’s bestselling novel. Casting agents discovered Emma through her Oxford theatre teacher and producers of the film were instantly impressed by her confidence and natural acting abilities. After eight consistent auditions, producer David Heyman told Emma and fellow applicants, Daniel Radcliffe and Rupert Grint, that they had been cast for the roles of the three leads, Hermione Granger, Harry Potter and Ron Weasley. It has been said that dedicated Potter fans have expressed mixed opinions about Emma’s portrayal of Hermione Granger. Some feel she is perfect for the role whilst others firmly believe Emma fails to capture Hermione’s true insecurities and flaws, complaining that she is “too pretty”, since in the book series Hermione was generally described as being very ‘plain’ (neither ‘pretty’ nor ‘ugly’). It is somewhat ironic then that the Harry Potter screenplays, have made Hermione a more powerful and prominent character than originally written by J. K. Rowling herself, proving to be somewhat of a heroine for young girls to look up to. Ten years and seven films later, Emma has finished her filming duties in the role she has made her own. During this time Emma’s global popularity has won her many awards such as the AOL Moviegoer’s Award for Best Actress (won on two occasions) and Young Artist Award for Leading Young Actress in a Feature Film. The latest and final instalment in the series; Harry Potter and the Deathly Hallows, will be screened in two parts, the first of which will be released on 19th November 2010, with the second following

in July next year. Fans were excited earlier this year to hear that plans were being made to release the films in full 3D, taking advantage of recent developments in cinema technology. However it has now been made clear that part 1 of the final chapter will be shown in traditional 2 dimensions, at least upon it’s initial release. With part 2 due to be available in both 2D and 3D next year, rumours have now surfaced that a remade 3D version of part 1 will also be made available at a later date. Fans will have to simply wait and see for further news in this area.

The upcoming Deathly Hallows; Part 1 is expected to reach it’s target of $933 million worldwide, set by the previous total earning of Harry Potter and the Half-Blood Prince in 2009. To date, the six previous films have amassed an estimated whopping $5.4 billion at box offices worldwide. With a personal fortune of more than £10 million, Emma could easily have rested on Hermione’s wealthy laurels, retiring away from the public eye and living out the rest of her life, but that just isn’t in her nature. In 2007 Emma accepted her first role outside of the Harry Potter films playing Pauline Fossil in the BBC’s drama film Ballet Shoes. An adaption of the Noel Streatfeild novel, it was well received and was viewed by a staggering 5.2 million people. The following year, Emma voiced her first animated character (playing opposite Dustin Hoffman, Sigourney Weaver and Matthew Broderick) with the role of Princess Pea in Universal Pictures’ The Tale of Despereaux. Now studying for a Liberal Arts degree in Ivy League Brown University in the United States, Emma continues her education whilst juggling her acting career to film for her next role, which will see her appear in the biopic My Week with Marilyn. Filming now and due out in theatres in 2012, Emma has a small part in the movie, starring opposite Michelle Williams as Marilyn Monroe, and Kenneth Branagh as Laurence Olivier. The screenplay is based on Colin Clark’s memoir, which recounts his time spent serving as Laurence Olivier’s assistant on The Princess and The Showgirl, and more specifically, the relationship between himself and Marilyn Monroe that transpired on set. Recognised for her individual style and beauty, Emma has also graced the covers and interiors of countless magazines. She was the youngest actress to appear on both the covers of Teen Vogue (2005) and the UK’s Tatler magazine (2007) and has since appeared on covers and in magazines such as V, Italian Vogue, Elle and not forgetting EK One of course. Already having made her modelling debut for Burberry’s Autumn/Winter 2009, and subsequent Spring/Summer 2010 campaigns, Emma - who is a self-confessed fashion devotee - is already making waves in the fashion world, becoming a style conscious public figure who turns heads wherever she goes, being widely respected for her knowledge and interest in the field.

in the Bathroom
With winter upon us, the thought of long soaking hot baths or drenching showers are very enticing but there is always the worry of what products will fit into my space, what styles are available and what choices do I have. Dean Chesterton (Owner of Ripples, Canterbury) explains some of the fundamental principles, so you needn’t worry. To have glamour in the bathroom you will need stunning tiles that glitter when the lights are turned on, there could be some mood lighting which will give you a different feel to the room, freestanding baths with floor mounted taps and large double basins for both parties to be able to wash at the same time. Lighting in the bathroom is as important as in any other room. Spot lights in the ceiling will give an even light throughout the entire space without any shadowing. Having these on a dimmer will give a totally different ambience or the inclusion of lowlevel LED lighting in the walls will give a subtle glow whilst relaxing in the bath. Showers are a very important part of our everyday life and the choices are endless, the shower valve can be recessed into the
wall with a large fixed head to drench you or an exposed valve with riser rail. The enclosures are now getting very minimal with little or no chrome profiles to surround the glass, giving you a totally clear look and making the room feel more spacious. Those who are eco-friendly or conscious of their water meter may be thinking about all that water consumption, well Hansgrohe, the manufacturer of shower valves and taps, will supply you with a range of eco items to suit your needs. For example the 240mm diameter flat plate showerhead can be reduced down from 16.6 l/min to 9.5 l/min, retaining an excellent shower but reducing water consumption by almost half. As for the basin taps; a flow limiter of 5 l/min applies which again helps on conservation. It has long been recognised that the toilet can consume the biggest amount of cold water. In the old days, a flush was 9 l/min and has now been reduced to dual flush of either 6 or 3 l/min. To enable bathrooms in the house to work correctly you will need a correctly sized boiler and hot water cylinder. The cylinder will need enough capacity to carry the volume of water to the bathroom without starving the remaining sources being used. A 210 litre capacity cylinder will amply supply 2 bathrooms and a kitchen. The best solution is an unvented (pressurised) cylinder, it will give you good pressure to all taps and showers and you won’t need a booster pump which is noisy. Planning the bathroom The bathroom is the one room in the house where you can concentrate on pampering, self-indulgence, relaxation & literally escape from the world outside. When faced with limited space, problem or awkward areas, it is well worth considering made to measure and other bespoke products, so whether it’s a sloping ceiling causing you issues or you would like to transform an otherwise wasted space, there really should be nothing stopping you. If boxing around pipe work or raising
a floor area is unavoidable, accentuate the work creating a feature with accent tiles, shelving, lighting and curves. Storage is a must, even for the most bijoux of rooms, towels and toiletries should have a place whether they are hidden away or displayed proudly in a lit alcove. Larger tiles can make the room look longer depending on how you place them. Using the same tiles for floor and wall can create a seamless appearance, and open up the space. One important tip is to keep clutter to a minimum. A glamorous bathroom can be created by combining and contrasting bright colours, different textures, patterns, materials and finishes. Whether these contrasts are subtle or stark, it depends on how adventurous you want to be. Colours of the season This year we have seen a swing from beige to greys when it comes to tiles. Grey is the new neutral. Use the neutral backdrop and enhance with bold coloured accessories that are a cost effective way to dramatically change the feel of a room. The trend is to use large format tiles, minimising grout lines and making a space feel larger, particularly in shower areas. We have also seen much more demand for colour backed glass, hence eliminating grout lines altogether. You can even be daring and go for a bold statement colour. Alternatively instead of injecting colour into the scheme, another way to add interest to a room is to be creative with textures. This can be with tiles or even furniture. Just bear in mind the limescale and cleaning!

Utopia; the popular wine bar and restaurant in the heart of Ashford has re-launched it’s £10 food menu on a Thursday night. Providing three courses for a square ten pounds, this is exquisite dining at exceptionally good value. Customers are offered a choice of three starters and three mains; each with a meat, fish and vegetarian option so all palates will be catered for. I opted for black pudding with a light curry sauce and tuna with wasabi mash for my starter and main courses respectively. The flavours were perfectly
balanced and everything was expertly cooked and presented well. Three desserts are also offered and if you get the chance, I highly recommend the upside down cheesecake - one of chef Dan Wilson’s personal triumphs, that just has to be tried to be believed! In keeping with the restaurant’s philosophy, the menu will contain seasonal, locally sourced ingredients and produce that will change on a three weekly basis so no two visits will be the same.

The competition is the brainchild of Produced in Kent, which champions Kent’s food and drink producers and retailers. Julie Monkman - manager at Produced in Kent remarked: “Last year’s competition clearly hit the right flavour with the general public as voting leapt to over 10,000 votes, smashing all previous records! We saw an incredible 89 per cent increase in votes from the general public and consumers nominated over 680 food and drink businesses and products in the county. This was an impressive 50 per cent increase on the previous year and a clear indication that the people of Kent really care about food and drink in the ‘Garden of England’. Now consumers can be part of the 2010 selection process by voting online at the dedicated awards website www.tasteofkentawards.co.uk.

We spoke to the UK sales director Darren O’Connor to find out more… In a nutshell, what is Dining Club 500? “Dining Club 500 is a network of fine dining restaurants, that offer concessions to member cardholders” How long has it been running? “It has been a concept for 3 years, and we have started to appoint member restaurants in the last 3 weeks to get the ball rolling.” What made you want to start it? “Seeing so many restaurants empty, or failing to attract customers was a real shame. We also wanted to move people’s perceptions away from the ‘meal for two including wine’ from supermarkets and back into fine dining.” How can people pick up a card for themselves? “By visiting one of our member restaurants (see website for details), key workers are entitled to a free card by visiting member restaurants and having a meal.” What does the average day entail for you? “Phoning restaurants, explaining our package, and making appointments to explain the full service in greater depth.”
What do you think about the quality of Kent restaurants in general? “I think Kent has some fantastic restaurants, and that’s why I really want to help these restaurants attract more customers.” Where is your favourite place to eat? “I have so many, but my favourite restaurant at the moment is Reeds in Faversham.” Where do you see yourself in 5 years time? “I am going to be so busy with Dining Club 500, our intention is to take it to Europe after the UK network is fully functional, and we have had lots of interest from other countries around the world already.”

Situated in the midst of Butchery Lane - one of Canterbury’s medieval streets en route from the town centre to the magnificent cathedral - Cafe Mauresque could easily become lost among the throng of tourists studying their guide maps and the plethora of other café’s and restaurants in an area which is fast becoming the heart of Canterbury’s “Café Society”. There are however, two very good reasons why Café Mauresque will never suffer such an indignity. First and foremost the quality of the food will guarantee repeat business by the truckload. Secondly the enthusiasm, charm and passion emanating from Xavier (patron, host and heart and soul of the restaurant) is overwhelming. When someone believes so wholeheartedly in what they are doing it is hard not to agree with them. During my time with him you would occasionally see Xavier’s eye flick over to the front door and he would bound up to whichever person was taking a cursory glance at the advertising board outside and before you know it he was pulling up chairs for them and recommending a starter. This is a man who genuinely feels sorry for those people who he misses and who miss out on his food and hospitality. It is always a sign of a good restaurant when you receive unsolicited recommendations from the menu by other
diners - it is however very rare for you to get three of them from different tables within the space of half an hour! All regular customers of Café Mauresque, they each enthused over their favourite (in order; the Squid & Chorizo salad, the Seafood Paella and the Roast Pork Belly) each time making sure to tell me that they come here all the time - fine praise indeed. Inside the restaurant you are treated to a genuine dining experience. From the outside you see a rather compact little street side cafe with outside space for alfresco dining. Once you explore inside however a whole new world is revealed. Go through the café front and down the stairs and you discover a cellar restaurant which sprawls underneath the buildings next door and its design and decoration are both atmospheric and enchanting. Xavier has painstakingly designed every aspect of the restaurant from the three heights of chairs (through customer feedback he realised the need for different sized chairs for the larger diner rather than the standard low Moroccan chairs) to the brass taps and sinks in the bathrooms. He says that the idea of the design came from visiting a friend’s Moroccan restaurant in Toulouse although given that the actual theme of the restaurant is ‘Andalusian Arabic’ you will see many Moorish influences throughout the restaurant, notably the exquisite tiles on many of the walls. There are also exotic lamps, ornate mirrors and other middle eastern artefacts to add to the cosy, authentic feel of the place. The cellar restaurant offers intimacy but if you really want privacy there is a first floor function room with a large circular table for up to 15 guests which when laid out with the tagines, tapas and candlesticks is a mouthwatering vision. The myriad influences all combine to create a wonderful place to eat. The menu (and, as our genial host is keen to point out much of the general ambiance) is inspired by visits to Granada and in particular the Alhambra Palace and the flavours of the Moorish food of Andalucia. The dishes served are a collaboration of Xavier’s ideas and the inspiration of both his former employer and business partner from Café des Amis and his executive chef. Luckily for everyone concerned the food completes the wonderful experience of a visit to Café Mauresque. The tapas menu is varied catering for
Moorish meat eaters (divine lamb meat balls and the home made merguez sausages being my particular favourites) and for the vegetarian palate (stand out for me here would be the falafel with harrissa yoghurt and the spiced aubergine stew). Also, although we didn’t have the time or stomach capacity left to try it we were impressed on a tour of the kitchen to see a vat filled with fresh prawns being used solely for the purpose of making the fish stock for the paella we’d heard so much about earlier. On a side note you simply must try the greek flatbread and beautifully garlic infused home made hummus - my dining companion could have easily had this for starter main and dessert. The menu is also abound with a variety of Couscous dishes and Tagines as well as the Spanish specials, but for me there was one dish I just had to try - the Roast Pork Belly in a Membrillo and Fino Sherry Sauce served with Patatas A Lo Pobre. The very generous belly is cut to plate length strips and twice cooked over several hours leaving a meat which could be eaten with a spoon and crackling that is as flavoursome and crispy as you could wish for. A real gem - and at £7.95 on the lunch menu (evening diners will pay full price) it is a complete steal. With no room for dessert I’m afraid I can’t vouch for those although I’m sure plenty of Xavier’s regular customers would happily do so. Café Mauresque is not a restaurant, it is a complete dining experience. Thank you for having us and we’ll be back.

winter warmers The weather outside is frightful, our cocktail bar is delightful. This time of year it can be hard to stay full of good cheer, this is how I manage with my own mince pie Martini…
Mince Pie Martini You will need: 1 egg 25ml spiced sugar syrup 25ml spiced infused vodka 20ml dark rum 15ml brandy 25ml double cream
To Garnish: Icing Sugar Nutmeg Sultanas / Raisins Twist of orange peel (optional) Method: 1.
Gently press a handful of sultanas or raisins into the bottom of your glass.
2.
Add the egg, sugar syrup, alcohol and double cream into a cocktail shaker.
3.
Shake hard for approximately ten seconds and then strain into a martini glass. (If you don’t have a shaker, you could always use a blender to mix the ingredients; easy!)
4.
To garnish, use a generous sprinkling of icing sugar on the top with some freshly grated nutmug and carefully float a twist of orange peel in the centre (if desired).
Dark & Stormy I love this drink because it is so simple, yet has a fantastic flavour. It is one of the first cocktails from the Sours family from the 1700s. You will need: 50ml Meyers Rum 120ml Ginger Beer 2 Lime wedges Method: 1.
Pour the rum over ice in a highball glass and top up with ginger beer.

Squeeze in one wedge of lime.

make your own spiced sugar syrup: Boil two parts water to one part sugar and add some star anise, cloves and a cinnamon stick. The vodka can also be infused with festive spices by adding some lemon and orange zest, sultanas and raisins. The Ambrette

This is definitely an Indian restaurant but don’t expect mutton vindaloo on the menu.

The town of Margate has long been synonymous with the decline in fortunes of England’s seaside; a poor relation of the counties more salubrious tourist and commercial hotspots. While this opinion is still not too wide of the mark, the residents of the Isle of Thanet have some reason to believe that the tide may just be turning, and not just the one which twice daily graces its 19 miles of coastline and 15 sandy beaches. Did Dev Biswal, head chef of this highly acclaimed gourmet Indian restaurant, know something we didn’t when he relocated from London and opened The Ambrette (formerly the Indian Princess) in Margate some four years ago? It would seem not, Dev tells me it was simply “destiny” and a decision based more on timing and his appreciation of the quality of life in our beautiful part of the world than as any part of a detailed study into the areas future regeneration prospects. Having lived and worked in Mumbai, Dubai and London - some of the more populous locations in the globe - one can understand Dev’s appreciation of our idyllic country and seaside surroundings. With a supreme confidence in his abilities, Dev knew that his food and what he was doing in Margate would be enough to attract a customer base and word would spread to ensure patronage for a wide and varied clientele. Dev tells me that he often has diners travel from London to sample his take on traditional Indian cuisine. Praise for the Ambrette is pretty much universal, from the Michelin Guide recommendation to being rated Kent’s number one rated restaurant
on tripadvisor.co.uk (out of 733 rated restaurants), so to travel a mere 85 miles to sample his creations is but a minor inconvenience it would seem. On arrival, diners are dealt with quickly and courteously - and I’m pleased to see that the level of attention is maintained throughout the meal. The front of house staff are well mannered, well trained, well informed and keen to make sure you enjoy your experience at The Ambrette. It comes as no surprise to me that since my meal The Ambrette team won the ‘Best Restaurant Front of House Service’ at the 2010 Restaurant awards at Earls Court. This is traditional Indian cuisine with a twist. The ever changing menu will often include such delights as belly of pork, tender breast of wood pigeon, freshwater Nile perch, spiced Ramsgate crab and brochettes of Kentish lamb. I plumped for the tender and sweet brochettes of Kentish lamb starter followed by breast of Gressingham duck for main. The lamb was charcoal roasted served on a mildly spiced bed of sweet potatoes and marinated in pickles. The flavour of the meat was sensational and the portion generous. My dining companion tried the soft shell crab, golden fried in gram flour served with sundried pickled shrimps, crab pate and home made fishcake. Again, the flavours were sublime and I’m sure my companion would have enjoyed it even more had I not had to “review” quite so much of it! My duck was a recommendation from a friend and did not disappoint – pan grilled with spices and accompanied with an orange sauce with cinnamon and fennel. I accompanied the course with a portion of
crispy green fried okra coated with gram flour and mango powder. Delicious. My companion enjoyed breast of British chicken char grilled in a North Indian style sauce flavoured with nutmeg, cloves and coriander. Although these dishes are clearly worthy of the praise they reserve, I can’t help but find myself looking forward just as much to the amuse-bouche served throughout the meal. These marvellous intercourse appetizers are a joyous explosion of colour, style, flavour, texture and beauty. To list the component parts of them all would, I fear, take another page at least but do go down and experience them for yourself and rest assured that your waiting staff will give you a detailed and thorough explanation of every item and how they are prepared. My personal favourites were the bite sized chicken supreme in tempura better on a bed of date and fig relish with mustard raita and plantain fritter and of course the orange and rose granite - made with orange zest, fresh orange juice and rose syrup and given a memorable kick with the inclusion of space dust no less! Much as I would have loved to sampled the dessert menu (previous visits have seen me partake of the handcrafted chocolate silk with home made ice cream and the rose flavoured crème brûlée - both works of culinary art), I was just too full this time. The Ambrette have set lunch (3 courses for £19.95), à la carte and tasting menus. They also have regular themed sampler evenings and wine tastings. With the variety of foods, menus and occasions available at The Ambrette, as well as the reputation and bucket load of exceptional reviews do you really have an excuse not to try it out? I’ll need some convincing.

RECIPE JASON FREEDMAN: Life started for Jason as a 15-year-old kitchen porter in Canterbury on leaving school. Moving away to work in Southampton Restaurants, he rose through the ranks eventually gaining the experience to man the helm of a string of beautiful country pubs and hotels in Kent. By 1995 he was running his own successful and reputable outside-catering company. 2003 saw him purchase a traditional but very seasonal beach-side café in panoramic Minnis Bay. He seized the opportunity to transform and create a restaurant that reflected his ethos and personality. Jason champions home-cooking, fresh local produce, local suppliers and the local community. In seven short years and despite a devastating fire in 2009 he established a beacon in Thanet. The Minnis is recognised for its inventive, constantly evolving menu and has garnered a reputation for quality and ethically sourcing its products. Its testament is in attracting repeat custom from around the country, as well as the local county. The young kitchen porter is now a mature successful chef, established businessman, irrepressible, enthusiastic and above all well respected - backed by a very loyal, very local team.
Kentish Venison Loin
with Shredded Sprouts, Parsnips & Chestnuts Serves 4 Ingredients Loin of Fresh Venison 16 Fresh Sprouts 4 Rashers Streaky Bacon 50g Chopped Chestnuts 4 Medium Parsnips 100g Sliced Onion 2 tsp Redcurrant Jelly 500ml Beef Stock Knob of Butter 100ml Double Cream Salt for Seasoning Fresh Ground Black Pepper
1.
Place a pan on a high heat, add a little oil and season well with salt & pepper. Sear the venison loin in the pan for a few minutes, until nicely coloured all round. Place the venison into a pre- heated oven @ 180°c for 12 minutes. (this will be rare, but with resting time around 10 minutes the meat should be nice and pink).
2. Blanch the sprouts in boiling salted water for a couple of minutes to soften slightly, remove and refresh in cold water. 3. Slice the sprouts finely and put to one side. 4.
Peel, chop and boil the parsnips in salted water. When soft, drain and mash. Add the butter, cream, salt & fresh black pepper to taste.
5. Heat a sauté pan and add a little butter, add the sliced onions, chopped

streaky bacon and colour nicely. Add the shredded sprouts and cook through. At the last minute toss through the chopped chestnuts.
6.
Pour the beef stock into a sauce pan and add any juices from the venison pan and the redcurrant jelly. Reduce over a medium / high heat until the sauce thickens to a coating consistency.
7.
Slice the venison into 8 medallions. Place the parsnip mash on the plate and lay the venison on top. Place the shredded sprouts to the side and drizzle the sauce over the venison.

RECIPE RICHARD PHILLIPS With an early restaurant career starting off at London’s famous Savoy Hotel, going on to work alongside the likes of the Roux Brothers at La Gavaroche and then becoming Head Chef for Marco Pierre White at The Criterion, Mirabelle and Les Saveurs, it’s no wonder Richard Phillips had his own Michelin starred restaurant by the age of 29. Further excellent grounding prepared him for creating his own restaurant, having come from two years with the Schrager Hotel Group, putting together and directing teams in both the Sanderson Hotel and St Martin’s Lane, the first hotels owned by this group outside United States. After his runaway success with that first restaurant Thackeray’s, in Tunbridge Wells and then Hengist in Aylesford, Richard took the opportunity in 2008 to create another outstanding restaurant, this time alongside England’s leading wine producer. Having recently been awarded two AA rosettes and Kent English Restaurant of the Year 2009, Richard Phillips at Chapel Down is fast becoming East Kent’s leading restaurant experience. Slow Birling Estate Pheasant in Kentish Red Wine, with Thyme and Smoked Bacon Serves 6 50g butter 12 baby onions (peeled and left whole) 150g button mushrooms (left whole) 50g flour (browned) 1 large pheasant (jointed into 8 pieces) 150g smoked bacon (cut into lardons) 4 cloves garlic - finely chopped 250ml Chapel Down red wine 250ml brown chicken stock ½ bunch of chopped parsley 2 x bay leaf Sprig of fresh thyme
METHOD 1.
Pre heat a large pan, add a little olive oil, dust seasoned pheasant pieces with browned flour.

Then place into the heated pan colouring on all sides until golden brown, remove from the pan and set aside
3.
Add the baby onions, bacon and garlic to the pan and cook for a few minutes until slightly coloured, then add the mushrooms, bay leaf and thyme. Cook for a further minute
4.
Add the pheasant back to the pan
5.
Add the red wine and reduce by half, then add the stock, bring to the boil, cover and place into a pre-heated oven (180°c) for 45 minutes.
TO SERVE 1.
Remove the casserole dish from the oven.

Sprinkle with parsley and serve with creamed mashed potatoes

Dan Desborough / Photographer Over the last 2 years Dan has been working closely with local fashion companies, makeup artists, hair salons and other creative organisations to promote and raise awareness of the diverse and highly creative people we have in Folkestone and the surrounding areas. Through using a dynamic range of colour and contrast, dramatic locations and using the natural elements to his advantage, Dan’s photographic message is bold, always gets the desired affect and is highly recognisable. After teaching himself photography and developing a defined style, Dan decided to quit his 9-5 office job and follow his dream of being a photographer and now works across the continent on various project and publications, as well as offering wedding photography services during the season. Over the last few months Dan has joined forces with some other creative local companies to form a collaboration of services that complement each other and help to promote small, local business in the area. Using the skills of Holly at Absolutely Flawless makeup services, the beautiful gowns from Ella and Aggi at Ella Fashion boutique and local aspiring models Rosanna and Agnieska, we set off to the vast wilderness that is Dungeness to get some dramatic photos to really show off the gowns in an environment that would really make them stand out.
Dan says “I chose Dungeness as the location due to the sheer emptiness and atmosphere of the area. The quality of light for photography there is amazing and the stark contrast of miles of empty, dull coastline allowed me to bring out the sheer beauty and colour of the dresses and makeup.” We also had some beautiful hats made up to match the dresses, from Sophie at Coco rose Millinery, however due to the wind we were unable to use them in this particular shoot! The pictures came out amazingly well and really captured the essence of what we were trying to achieve.”

Holly Hanrahan / Absolutely Flawless Make-Up Artist Freelance makeup artist Holly Hanrahan has been taking the fashion and wedding industry by storm with her unique flair and passion for all that is makeup! First inspired to become a makeup artist after modelling for an artist’s portfolio herself when she was eighteen, she could not believe the immense transformation that makeup had the power to create! Sophie Desai / Coco Rose Milinery CoCo Rose Millinery is a new small business based in Hythe and the surrounding areas, specialising in bespoke hats and headpieces for special occasions and I, Sophie Desai, am the proud owner. I started making hats 7 years ago, when a well-known milliner Tracey Mogard of Herald and Heart, took me under her wing. Tracey had placed hats on some special ladies such as, Kate Moss, Naomi Campbell, Andie MacDowell in ‘Four Weddings and a Funeral’ and a few princesses that I really should not mention! Tracey taught me everything I needed to know about creating a perfect hat for ladies special occasions. Whether it was a fashion show, fantastic wedding, a day at the races, a christening or garden party, I was ready for them. The first hat I made went onto the catwalk at the Clotheshow Live in Birmingham and I was hooked. No amount of glue burns, pin stabbings or brim cutters rash was going to stop me from designing and making one off hats. I went on to accessorise heads all over the country, stocking our biggest client, Selfridges. After having my daughter last year, Mia
Coco Rose, I decided to start my own hat empire, working from my home in Hythe and a small studio in Romney Marsh. This summer I made a 30 hat collection consisting of a range of styles for every possible occasion and headed off to the wedding shows, hats-a-blazing. I show my collection at Studio 26 in Lathe Barn, Romney Marsh and this is where I have most of the appointments. Ladies bring their outfits and we have a fitting of all styles to find the right hat to suit the occasion. I match or contrast the colours to the outfit and gather the materials and I head to my workroom. My prices start at £35 for a headpiece and £120 for a hat and most of my clients are Mothers of the Bride or Groom, but I have been known to make a hat for a greyhound at a beach wedding too! There is never a dull moment when hats are concerned and I embrace all of the madness that goes with it. I take my inspiration from everywhere, whether it’s an old French art film, a solitary lady at a coffee shop or the pages of Vogue. Just outside Dartford in the countryside of Wilmington, lies Rowhill Grange; a unique and luxurious 18th century four star country house hotel, boasting an award winning spa and recently refurbished fine dining restaurant. Set away from the busy roads in it’s own expansive grounds – including a duck pond necessitating the cute ‘mind the duck’ signs as you approach the hotel, the essence of Rowhill Grange places it as a retreat to escape the bustle of everyday life. This is immediately apparent once you step inside, as the staff were most welcoming and are always on hand to answer any queries no matter how small. After checking in, the concierge gratefully showed us to our room, explaining along the way that all suites at Rowhill Grange had been charmingly named after various flowers - our room being the Dahlia suite. Each and every room has been individually designed with luxury in mind, meaning no two suites are identical at the hotel. Elegantly furnished with solid-wood, our room formed a personal retreat from life outside and instantly felt like a home from home. All rooms lead into their own en-suite bathroom, complete with freshly laundered towels and plush robes. Wandering around the interior of the hotel, an air of calm relaxation is always present. The perfect balance has been captured between an unrestricted feeling of homeliness and that of professionalism with attentive staff always on hand if needed. Guests are welcome to lounge in the luxurious aforementioned robes amidst all areas of the hotel until 6:30 in the evening, helping to further facilitate a feeling of calm. For this reason, those looking for a spa-like getaway can find all their needs attended to at Rowhill Grange, whatever time of the day. Nestled inside the hotel, you’ll find the fullyfledged Utopia Spa. Simply Drift Away If ever a treatment could be as descriptive as possible from just a few short words, the ‘Drift Away’ full body massage certainly fits the bill. Consisting of a complete top to toe massage, and ending with a face and scalp pampering, this 55-minute treatment is the epitome of relaxation. My confident and friendly therapist Elaine introduced herself and welcomed me into the room to discuss the steps involved in the treatment itself. Elaine then started the massage by allowing me to deeply inhale ‘Breath Of Life’, which has been specially formulated to both relax and invigorate the senses with it’s mixture of lavender and citrus scents. This was followed by a quick pressure example to show how the massage would feel and to check everything was comfortable for me. Starting with my upper back - where my muscles were most tired and aching Elaine’s expert hands went to work and quickly eased out the tension. The combination of dim lighting, warm atmosphere, relaxing music and soothing scents, all helped to take my mind away
from the stresses of life as Elaine continued to massage the ‘Drift Away’ oil into my skin. Time passed quickly and before long I was ready for my facial and scalp massage. Beginning with a double cleansing to remove excess impurities followed by toning and an assortment of specialised products for the various areas of my face, my skin was left feeling rejuvenated and positively glowing. The final scalp massage was incredibly soothing and seemed a fitting end to this most luxurious treatment. A full ‘prescription sheet’ was presented to me as I left, handily detailing all of the products used during the course of my session should I wish to take a slice of the spa away and enjoy back at home. All products are available from the Utopia Spa reception and feature enticing names such as ‘Aaahhh!’, ‘Windows of the Soul’ and ‘Siesta Forever’! RG’s Situated under a magnificent glass atrium, the recently refurbished RG’s restaurant is a stunning yet relaxed dining experience, offering expertly crafted foods alongside top quality table service. Led by executive chef Luke Davies (who has worked at the likes of The Milestone, The Capital and with Novelli, Chervaux and the Queen Mother), the new kitchen team works hard to achieve only the best service for it’s hungry customers. The menu is impressive, offering a range of rich flavours and interesting ingredients among the likes of autumnal truffles and fallow venison. However, the meals on offer are not just fancy for the sake of it, but offering good, honest seasonally inspired dishes with priority to source the very best local produce from local suppliers. Taking a seat in the restaurant feels comforting; the dining area is open and airy and tables are laid beautifully, each complete with floral decorations colour matched to the calming pistachio, green and cream colour scheme that flows throughout. Having been tendered to by the polite waiting staff, it was time to try our first course. I opted for the RG’s Prawn Cocktail whilst my dining partner chose the Kentish Goats Cheese & Fig Tart.

Both of these were highlighted as ‘RG’s signature dishes’; a select few meals from the menu that would highlight the unique creative flair and culinary knowledge of the kitchen team. Served on wonderfully large tableware, the food was certainly an immediate delight for the visual sense and didn’t disappoint the taste buds either. My prawn cocktail was just right, with a great texture to the prawns and a complimentary subtle flavour coming from the Marie Rose sauce (which can so easily overpower the dish). The goats cheese & fig tart was equally spot on, with the delicate puff pastry perfectly balancing the strong cheese and fig. Fully satisfied by our first course, we were eager to try our main specialities; Roasted Loin & Confit Haunch Pithivier of Kentish Fallow Venison for myself, and Roasted South Coast Sea Bass for my guest. The sea bass was again one of RG’s signature dishes, with a delicious looking fillet of bass perched atop a creamy pea risotto and surrounded by a wonderful splash of vivid green from the parsley sauce. The fillet was lovely and soft, contrasted well by the roasted crisp skin, which gave a most delightful crunch. My fallow venison was simply divine. Cooked to perfection; the loin cuts were joyously tender and tasted superb with the accompanying braised red cabbage and red wine sauce. I was
pleased to report the smooth celeriac puree delivered just enough of that delicate celery flavour too. Alongside all of this, sat the Confit Haunch Pithivier, looking like a work of art. The pastry was golden and crisp, giving way to the tasteful venison inside. We were in two minds regarding the desserts and whether we could possibly fit them in. Deciding that they sounded far too delicious to pass up the opportunity of sampling them, I opted for the Peanut Butter Brittle (with Caramelised Banana & Chocolate ‘Soil’) whilst my partner chose the Open English Apple Tart (with Caramel & Sea Salt Ice Cream). Both were a fitting finish to the evening, offering lovely sweet flavours. Of note in particular was the surprisingly tasty caramel and sea salt ice cream. Whilst sea salt would not make an obvious choice for a sweet dessert, it worked wonderfully in this instance and I wholeheartedly suggested you try it as soon as you can!

the Salt cave Tucked away in the heart of Tunbridge Wells lies a Speleoclimatic chamber; known better as ‘The Salt Cave’. Utilising health giving properties of negativelycharged airborne salt particles, the age-old benefits of Halotherapy are brought up to date with a modern twist. eview

I was unsure of what to expect from the Salt Cave as I have never heard of anything like this before but I was mightily intrigued. On arrival we were greeted by very friendly staff and invited to put our belongings into secure lockers. We were also offered a drink and the option of taking magazines into the cave to keep us occupied for the hour. The cave itself is quite surreal being completely white with a few lights dotted around and the walls are crystallised making it feel very cave like indeed. What I liked the most about it - and wasn’t expecting at all - was the covering of salt on the floor which seemed like a cross between sand and snow, hence the slipper shoes that have to be worn. The treatment is taken in easy chairs with foot rests and after a read through of how the treatment works and some very positive testimonials from past clients I sat back to relax with my eyes closed for a few minutes. Or so I thought. Breathing became so easy in the salt room that I quickly drifted off into a light sleep and woke up when the lights came back on to indicate the end of the session. Unsurprisingly I felt refreshed and my breathing was definitely a lot easier and deeper, my mild sniffles of the morning had also disappeared. I would definitely recommend a visit to anyone who suffers from respiratory problems and am strongly considering a course of treatment to help alleviate my hayfever next summer.

Review
Having recently looked into the heath promoting properties of the Salt Cave, I was eager to experience it first hand – no less so due to a rather annoying cough I had recently developed and hadn’t managed to shift! After being escorted by the friendly reception staff into the chamber itself, we were left to relax for an hour in whatever way desired, and informed that the brightening of lights would notify us of the end of our session. Inside the room, salt covered both the floor and walls, with crystals decorating all sides whilst powdered salt lay on the floor some few inches thick, resulting in a quite peculiar but nevertheless intriguing surface underfoot. With the addition of distinct low level lighting, these features help to transform the room into a cave reminiscent of a natural salt mine or cavern, where halotherapy was first utilised. Having already arrived prepared with a book, I also picked up a couple of magazines and some literature on the Salt Cave itself. The literature (although quite technical in places) was very informative and provided not only examples of the health giving properties but also a detailed background into the use of halotherapy and the history behind the technique. Also present were a handful of testimonials from customers who had used the Salt Cave on previously occasions. I found these to be somewhat sobering as almost every individual had visited the cave in search of relief from their symptoms of problematic respiratory difficulties. It warms the heart to read that the therapy was able to offer improvement in all cases. After finishing the testimonials, I decided to lay back in the chair and relax by closing my eyes to let the comforting sounds of gentle waves crashing ashore fill my head. Being isolated inside the cave, it is very easy to relax and I couldn’t tell you how many minutes passed before I decided to resume my reading once again. It wasn’t long before the lights signaled the completion of our hour period and we made our way out of the room. I can honestly report that my wish to improve my cough had been granted. During the session I felt that I could breathe easier and with more depth, and when I did occasionally cough I could feel mucus moving more freely - a well documented feature of the salt therapy. If you are feeling a bit under the weather or looking for relief from respiratory problems - especially those with afflictions such as Asthma, I would recommend a course of treatment at the Salt Cave. With such pleasant surroundings, it’s a far cry from other more traditional and unpleasant treatment regimes. In the heart of Deal there is a small beauty centre called Calma, located at The LiMes where holistic therapist Rebecca Troia practices a variety of treatments including one I had never heard of before; the lava shell massage. Similar to a hot stone massage, the lava shell massage is a new treatment that is becoming more and more popular with beauty centres and clients alike. The lava shells are Tiger-Striped clams which are part of the diet in the Philippines and used to be thrown away. Now they are being recycled for use in this therapy and this has helped to bring work and income to locals of the Philippines. The temperature in the shells is created using a mixture of minerals, algae, sea
kelp and a liquid activator. The reaction between these creates the heat, which will last for a few hours. Different sides of the shells are used to massage different areas of the body in a variety of ways. The treatment began with Rebecca massaging my arms and shoulders. She uses mango and green tea botanical oil on the skin prior to applying the shells and beginning the massage. The shells themselves are surprisingly hot but I quickly adjusted to the temperature and relaxed. As part of the full lava shell massage I received a stomach massage, which I have never had before. This involved the shells being moved in a circle over my abdomen in the direction of digestion and also in linear movements to the lower abdomen. As someone who suffers with stomach problems I found this a little uncomfortable but felt the benefits later
on in the day with a much less bloated stomach than usual. Rebecca then concentrated on my leg muscles, both back and front, which are notoriously the most painful areas to massage and I could feel the difference in my muscles after only a few minutes; something I have never experienced from a massage on my legs previously. Moving up to my back, Rebecca initially started with a deep massage on my problem areas, such as the shoulder blades (thanks to computer work), before finishing with a gentler massage which very nearly put me to sleep.

The perfect make-up needs to suit the new trends, your personality, your individual style, facial features, occasion as well as age so there are a variety of details to be taken into consideration if you wish to look flawless. No one is perfect but make-up can help you put a step forward towards perfection so learning how to properly apply make-up can only be beneficial. I like a wash of blush just over the apples of the cheek, fade so that it is not too close to the nose or your hairline, your under eye area or too below the contour of your cheek. Or for a slimming affect, contour under the cheeks with a darker tone, matt powder.

Apply a base to the eye, even if it’s a touch of foundation, this will help the shadow to adhere and last longer.

With a flat brush apply by pressing on to the lower lid, a dark shadow creating a block of solid colour.

A tip is to tilt you head slightly back and hold a mirror below your eye level whilst lining the eye.

If you are feeling patient and steady handed, apply a pair of false lashes, this will give a real vintage flair to the look, still give your lashes a coat of mascara as this will disguise your natural lashes compared to the false lashes.
This look is perfect for going out in the evenings but try to stay away from it during the day as the make-up will appear to heavy for daytime.

Put your best foot forward Our feet were designed to walk on soft surfaces and with almost 30 bones in the foot, wearing shoes to navigate an urban concrete jungle can often constrict or even warp our natural gait and movement. This can in turn lead to strains and stress as well as poor alignment, resulting in back pain, knee pain and calluses amongst other things and potentially arthritis later on in life. In my quest to get to the bottom of my back problems I had a gait analysis done at the Special Footwear & Orthotics Store in upmarket Marylebone where master craftsman Anthony Andrews has been providing professional specialist quality foot care for over 40 years. Using state of the art technology - the RS scan - the gait analysis involves walking across a plate which collects 350 images per second to assess foot pressure. The operator analyses the images and talks you through the findings and what action if any is required. In my case, he determined that I supinate on my left foot and have a low arch on my right and the best way to correct this is with specially designed insoles. However, if an insole isn’t sufficient to correct the problem they also make bespoke handmade orthopaedic footwear. Although they will cost substantially more than your average shoe they are built to last a very long time and Mr Andrews and his team are even able to make bespoke shoes for most sports. Having worn the insoles for just over a month, I am no longer misaligned and as a result I have minimal symptoms and feel much better, so I am one happy customer. New Year, New Face Being the wrong side of 30 I have started noticing wrinkles around my eyes in particular so I headed to Harley Street based Dr Ariel Haus for a consultation. He examines my skin and pronounces that I have big pores, hyper pigmentation and wrinkles, recommending Botox and fillers to dewrinkle me as well as a skin peel to even out my complexion. Gulp. I return a couple of weeks later to have Botox and once the anaesthetic cream has taken effect the needle comes out and he injects Botox around my eyes. For anyone who’s scared of needles, they can rest assured that this procedure is entirely painless and I leave his clinic eagerly waiting for the Botox to kick in. A couple of days later the wrinkles are much less apparent and I’m pleased with the subtle result as I made it clear that I didn’t want to end up looking like my face had been ironed. I return later for a mild chemical peel which does involve some pain but it’s only fleeting. The peel is applied and I can soon feel some tingling which turns into a burning sensation. The solution is removed and my face is spritzed with some thermal water and the stinging feeling is barely noticeable. Having applied some aloe vera, Dr Haus proclaims the treatment a success and hands me a mirror to inspect the results for myself. The open pores and blackheads that normally stare back at me are all but gone and my skin looks smoother and more radiant. Performance & Style The new A8 from Audi offers an exceptionally comfortable ride. The only question you need ask yourself is whether you want the experience up front, driving, or from the spacious seats in the back. WORDS BY JOHN SANSON, PHOTOGRAPHS BY STUART KEELER

Sitting at the pinnacle of Audi’s saloon range, the A8 is an understated elegant cosseting luxury express that has just had some major updates in order to keep it at the top of it’s game. Before I took (Alas temporary) ownership of this car I felt some trepidation around the onboard gadgetry and sheer tech involved. when I did the usual internet research. However I found the A8 to be one of the most intuitive and easy to helm cars I have ever had the pleasure of piloting. The new A8 launches with enhanced 4.2-litre FSI petrol and 4.2-litre TDI diesel engines, combining power and torque increases with economy improvements of up to 19%. The popular 3.0-litre TDI unit follows suit, offering a 22 per cent mpg boost to a class-leading 42.8mpg and 174g/km CO2. This engine has the automatic Start/Stop function as standard. Audi says there is approximately a 20 per cent reduction in CO2 emissions across the engine range compared to the current A8, reducing road tax costs significantly. A new eight-speed tiptronic automatic transmission, the latest generation quattro all-wheel-drive and adaptive air suspension are all standard across the new range. All models feature energy recuperation technology plus the all-new A8’s space-frame construction aluminium bodyshell is 24 per cent stiffer than the previous version and 6.5kg lighter. The new A8 is full of technology, both standard and as optional extras. Standard specification includes 18inch alloy wheels, Xenon headlights with LED daytime running lights, leather upholstery, electrically-operated memory seats, double glazing, adaptive air suspension, DAB digital radio, cruise control, Bluetooth, keyless start button
and an interior LED lighting package with changeable colours. What all this means is unparralled luxury and effortless continent crushing ability whatever engine you should choose. The 4.2 TDI on test is perhaps the choice engine as the economy and C02 emissions make it a viable business tool coupled with THAT engine, and frankly, what an engine! Forget it’s a diesel, forget for just a second the figures, this is one characterful unit. With a distinctive V8 burble as a soundtrack it can’t help bring an ear splitting grin when at full chat. Compared to units from Mercedes and BMW it offers more power with less emissions and is linked to that 8-speed gearbox. There’s a variety of gearbox settings from sport through to serene coupled with manual paddle adjustment on the steering wheel. Leaving it in full auto was my default choice but each to their own. Externally the daytime running lights and revised front grill give the car more character. However it is important to note that rather than the ‘Look at me’ styling of it’s German competition the A8 is a far more subtle affair hiding it’s dimensions behind tasteful contemporary curves and subtle chrome highlights. The 18inch standard alloy wheels fill the wheel wells perfectly and although larger wheels are optional (Up to 20 inch), the 19” set fitted to the test car allowed it to ride in a suitably limo like silence with very little disturbance either being felt or heard through the cabin. The A8’s greatest attribute is probably the interior. It’s a pretty class act frankly. No expense has been spared and in a survey a few years back customer perceptions alligned the Audi brand with high end audio manufacturer Bang and Olufsen in terms of the tactile nature of the controls. That was a few years back and unlike other German car makers that could be mentioned, Audi has only got better to
the point where there is probably no other mass market manufacturer with better quality interiors (This side of Rolls - Royce perhaps). As soon as you press the start button a gorgeous LCD screen rises from the centre console displaying Navigation and a multitude of other options from dynamic settings and options through to Stereo and heating controls. Audi’s MMI interface system is intuitive and all concentration can go into driving rather than mastering sub-menus and settings. The A8 can be specced with long wheel base but the majority will be sold in standard format. That’s fine as head and leg room is massive. From the back seat, separate climate controls and a surplus of leather cocoon you in real luxury and many owners will be based just there as they will be driven by a chauffeur. For those that forego the back seat and prefer to take the wheel we should probably mention the handling with the air suspension and four wheel drive this adds up to is a driving experience that gives the driver an unforgettable experience behind the wheel. For a near two-tonne kerb weight saloon measuring 5.13 metres it drives and handles like a hot A4 – just a lot more refined. In Dynamic mode the throttle and body response is superb. Grip

So all in all it’s a fantastic car, offering great value (both purchase and running), a multitude of technology, and a great experience for those that simply love driving. The 2010 Audi A8 is thus the one to go for if you are in the lucky position to have the choice.

Magpie, a beautiful haunting album from local Kent artist TESS, is set to please fans of Damien Rice, Nick Drake and Ray Lamontagne. Born in 1972, TESS could have not had a better education into music and songcraft. Bowie, Nick Drake, John Lennon all “left a calibre of musical structure and melody that strongly imprinted on the mind of a child”. Yet those vivid memories of 70s acoustic rock took time to mature. At 37, TESS has only just released his debut album and it appears quite by luck. Through a chance meeting in a Kent seaside café, he was introduced to producer/strings arranger Howard Gott (from Whitstable). Howard recognized the strength of the vocals and songs immediately, and now we have Magpie; 11 songs of introspection and depth that is already gaining notary reviews from the press. We spoke with TESS to find out more: Tell us about Magpie. For me it’s a series of intimate diary entries. Each song represents the highs and lows that life throws at us all. Sonically, it’s a mix of vocal, guitar and beautiful strings arranged by my producer. Working together, we tried to make this album feel like the classic 70s record it wanted to be. The album it wanted to be? In a way, as you work on something, it becomes clear to you that it has its own life. Some songs, for example, were remolded because they didn’t fit with the record.

So, did meeting your producer change things? I was certainly thinking about making a record, but it needed string arrangements and the right feel. I just couldn’t foresee how it was ever going to happen. It seemed too complex and expensive. A friend of mine, Bean (who plays Cello on the album), however introduced me to Howard and things changed! How much of this was done locally? Nearly everything! The album was mostly recorded in Whitstable. The album art was shot in Folkestone by fantastic local photographer Dan Desborough. Some of the songs are inspired by Kent; The Warren, for example, talks about the beauty of walking by the sea. Several of my friends here, such as James Pyott (a great songwriter himself), also played on the tracks. What’s the acoustic music scene like in East Kent? Lively! Fellow acoustic players to check out include Diane Dunn and local duos The Soulignes and Lykes of Deux in Folkestone, Lucy Kitt in Canterbury and Pierre Vincent from Deal. Any final words about the album? A reviewer said Magpie is the perfect companion for a winter night by the fireside with a glass of wine. I rather liked that description.
