PUBLISHER’S LETTER

Recipe for Disaster

A

ccording to Elegant Island Living’s website data, the number ONE topic that our readers access in our online archives are the recipes we share in the magazine. (Especially Southern Soul Barbeque’s Brunswick Stew recipe, which we printed eight years ago and people still

pull up online every single month!) As a nod to our readers, Terry, Beth, Kathi, Yolanda, Molly and Julie collaborated to produce this bacchanalia of the senses. Unfortunately, none of them wanted me to contribute to the issue. Knowing me as they do, I’m not much of a cook. In fact, I literally go out to eat for EVERY meal!

ELEGANT ISLAND LIVING

I have one pot and two pans. Well, one is more like a cookie sheet. I can make a mean PB&J sandwich and I can microwave a TV dinner with the best of them. I once bought a set of knives to give as a wedding present but forgot to bring them to the wedding, so I kept them. Is that wrong? I DO use my blender sometimes when I try to make a “healthy green smoothie.” That counts as cooking, right?

On the positive side, both my eleven-yearold dishwasher and oven look brand new! I think I’ve only used my oven a couple of times, because if you look closely at the photo here you’ll notice that the oven door only “opens” about 15 degrees before hitting the refrigerator. Makes it tricky to get that lasagna in the oven, much less getting it out of the oven! I tend to use the stovetop for “important papers” that I will eventually throw out. Now that it’s bathing suit weather, I need to try to drop a few pounds. (Ok, maybe more than a few.) Friends tell me that I need to quit eating out so much if I want to lose weight. I should start cooking at home more. More? I have never cooked at home! As I sat down to write this, I decided to come up with a recipe using whatever I have currently in my kitchen. So, even though the EIL gang didn’t want me to, I would like to present to you, dear reader, the Butler Family Banana Bread recipe. Feel free to try it out yourself!

he palette of colors that Mother Nature uses to paint the Golden Isles

never ceases to amaze. There’s the shimming glow of the sun as it rises on the horizon to its fiery oranges and reds as it disappears for the night. Cotton candy pink and pastel peach shades bring a smile when seen at daybreak. Our cerulean blue skies are almost fairytale-like, especially when contrasted with white fluffy clouds and vibrant green foliage. The magenta and purple shades that we witness especially in fall sunsets have to be seen to be believed. From the foam tipped waves of the ocean to the flowers and the ever changing colors of the grasses in the marsh to the lush greens of the maritime forest, there’s a compelling urge to capture the beauty that constantly surrounds us here, whether on canvas or with photos. Here, we’re using those colors as inspiration for the table, not in a tablescape, but in the food we put on it. A palette for the palate, if you will.

ELEGANT ISLAND LIVING

W

e’ll start with gold, of course, because we are the Golden Isles, after all. According to history, the name came from the 1717 writings of Sir Robert Montgomery, a Scottish nobleman who was attempting to entice the support of wealthy Londoners to establish a coastal colony here. While perhaps the name sprang merely from fanciful dreams of early explorers who traveled to reach our far off shores in the

hopes of finding vast riches and sparkling treasure, the “golden” moniker indisputably still applies. From our sun-kissed beaches and the color of the marsh grasses in winter to the legacy of the millionaires who made this their playground, these isles are golden indeed.

Southwest Style Quinoa Salad INGREDIENTS:

For salad: 2 tsp. olive oil

PREPARATION:

2 cloves garlic

Heat 2 tsp. olive oil in a medium saucepan over medium heat. Add garlic and sauté about 1 minute, stirring constantly. Add rinsed quinoa and vegetable broth. Bring to a boil. Reduce heat and cover. Simmer until liquid is absorbed, about 12-16 minutes. Remove from heat. While quinoa is cooking, prepare vinaigrette. In a small bowl or jar, add vinaigrette ingredients and whisk until well combined. Transfer cooked quinoa to a large bowl and stir in corn, black beans, chopped avocado, onion, and cilantro or parsley. Add vinaigrette and stir gently to combine. Taste and adjust seasonings as necessary. Serve salad warm or refrigerate and serve cold later. Salad will keep 3-4 days in refrigerator.

1 tsp. ground turmeric

2 cloves garlic, minced 1 c. quinoa, rinsed well and drained 1-3/4 c. low sodium vegetable broth 1 c. fresh corn kernels, cooked (or used canned, drained) 15 oz. can black beans, rinsed and drained 1 avocado, chopped 1 small onion, chopped 2 Tbsp. fresh cilantro (or parsley) minced

3-4 Tbsp. curry powder 1 tsp. ground cumin ½ c. coconut milk 4-6 Tbsp. chicken stock Juice from ½ medium lime Juice from ½ small orange salt and pepper to taste fresh parsley, chopped baby kale, or crushed cashews to garnish PREPARATION:

Cook onion in large skillet until translucent and slightly brown. Add ginger, garlic, turmeric, curry, cumin, and more olive oil, if needed. Set aside. Prepare your preferred rice to accompany the curry, following instructions on the package. Season chicken with salt and pepper, then add to skillet with onion, garlic, and spices. Cook chicken on high heat for about 3 minutes on both sides. Stir in coconut milk, stock, lime, and orange juice. Mix well until chicken is covered in sauce. Let simmer a couple of minutes. Serve in bowls over cooked rice and topped with the garnish you desire.

For vinaigrette: 3 Tbsp. fresh lime juice 2 Tbsp. extra virgin olive oil

Skillet Pineapple Upside Down Cake INGREDIENTS:

1 can (20 oz.) sliced pineapple ½ c. butter 1 c. packed brown sugar ½ c. chopped pecans 3 large eggs, separated, room temperature 1 c. sugar 1 tsp. vanilla extract 1 c. all-purpose flour 1 tsp. baking powder ¼ tsp. salt Maraschino cherries PREPARATION:

Preheat oven to 375°. Melt butter in a 9- or 10-in. ovenproof skillet. Add brown sugar; mix well until sugar is melted. Drain pineapple, reserving 1/3 c. juice. Arrange about 8 pineapple slices in a single layer over sugar (refrigerate remaining slices). Sprinkle pecans over pineapple; set aside. In a large bowl, beat egg yolks until thick and lemon-colored. Gradually add sugar, beating well. Blend in vanilla and reserved pineapple juice. Combine flour, baking powder and salt; gradually add to batter and mix well.

In a small bowl, beat egg whites on high speed until stiff peaks form, fold into batter. Spoon into skillet. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. If cake browns too quickly, cover loosely with foil. Let stand 10 minutes before inverting onto serving plate. Place cherries in center of pineapple slices before serving.

Stuffed Squash Blossoms INGREDIENTS:

12 fresh zucchini blossoms ¾ c. soft goat cheese (room temperature) 1 egg yolk ¼ c. Gruyere cheese, shredded 1 pinch freshly ground black pepper 1 pinch cayenne pepper BATTER:

1 c. self-rising flour ½ c. cornstarch ¼ c. ice-cold water vegetable oil as needed 1 tsp. all-purpose flour

26

ELEGANT ISLAND LIVING

PREPARATION:

Bring pot of lightly salted water to a boil. Prepare large bowl of ice-cold water. Drop squash blossoms into boiling water until slightly wilted, 30 to 45 seconds; transfer immediately into cold water to chill. Remove to paper towels to drain. In medium bowl, mix goat cheese, egg yolk, Gruyere cheese, and pepper; stir until smooth. Spoon filling into a heavy, resealable 1-quart plastic bag, squeeze air out and seal. Cut off a small corner. Gently insert cut corner of bag to the bottom of the open end of a blossom and pipe about 1 Tbsp. of filling inside. Pick up petals and drape them over filling, to cover completely. Fold excess petals over top of the filled blossom. Refrigerate filled blossoms until cheese is set and firm, at least 30 minutes. Combine flour and cornstarch in a mixing bowl; whisk in ice-cold water, a little at a time, until batter is smooth and is about as thick as pancake batter. In heavy or cast iron skillet, pour vegetable oil to a depth of 1” and place over medium heat. Heat oil until a thermometer placed into oil, not touching the bottom, reads 350°F. A drop of batter dripped into oil should sizzle immediately. Remove squash blossoms from refrigerator and dust lightly on all sides with all-purpose flour. Shake off excess flour and dip blossoms in batter. Let excess batter drip off. Gently place coated squash blossoms in hot oil on their sides; cook in 3 batches of 4 at a time until pale golden brown, 1 minute on first side and 30 seconds to 1 minute on remaining sides. Let cool slightly before serving.

1 large eggplant 3 Tbsp. extra-virgin olive oil, divided ½ lb. ground turkey (or ground beef) Salt and ground pepper 1 onion, small diced 1 red pepper, small diced 3 cloves garlic, minced ½ c. fresh parsley, chopped, ½ c. fresh basil, chopped 1½ c. grated Pecorino Romano, divided ¼ c. breadcrumbs 1 egg 4 Roma tomatoes, chopped

32

ELEGANT ISLAND LIVING

PREPARATION:

Preheat oven to 350°F. Cut eggplant in half and scoop out center, leaving enough flesh inside for the “boat” to hold its shape when baked. Boil scooped-out eggplant until very soft, about 10-12 minutes. In medium pan, heat 1 Tbsp. olive oil over medium heat. Season ground meat with salt and pepper, then add to pan and sauté until liquid is evaporated and meat begins to brown. Drain. Set aside. In another medium pan over medium heat, add remaining 2 Tbsp. olive oil and sauté onions, peppers, and garlic together. In large bowl, mix together cooked eggplant, vegetables, cooked meat, herbs, 1 c. cheese, breadcrumbs, and egg. Fill scooped-out eggplant halves with this mixture, dividing evenly between the halves. Top with chopped tomatoes and remaining grated cheese, season with salt and pepper. Place in oiled baking dish and bake for 50 minutes. Let cool briefly, slice widthwise and serve.

Baked Purple Sweet Potato Chips INGREDIENTS:

2 large purple sweet potatoes 2 Tbsp. olive oil ¼ - ½ tsp. kosher salt ¼ tsp. cayenne pepper PREPARATION:

Preheat oven to 350°F. Using a mandolin, slice sweet potatoes (with skin) into very thin, uniform slices. Toss with olive oil and sprinkle with salt and cayenne pepper. Place slices in a single layer, without overlapping, on a large baking sheet. Bake for 10-12 minutes on center rack, then flip slices and bake for another 10-12 minutes. Increase baking time if edges aren’t golden-brown. Remove from oven and let stand about 10 minutes to crisp. Serve immediately.

here is no question that our skies here are blue more often than they are not. And while our water at the shoreline isn’t the crystal blue of the Gulf, due to the plant debris and sediments stirred up here, if you look out on the horizon at just the right time on a clear day, there’s nothing but shades of blue blending into more blue.

And on a crisp, clear day, especially after a rain, the pure, vibrant blue of the heavens above is absolutely stunning.

The Wondrous Woodpecker by John Adams

O

ne of the visual joys of island living is an opportunity to see and enjoy the beauty of a kaleidoscope of birds. Like us, some of those birds are year-round residents. Others pass through on annual migrations. We call them “snowbirds.” Few visit only once. A favorite of mine is the pileated woodpecker, technically known as Dryocopus pileatus. The word pileatus is from a Latin word meaning capped. This bird features deep black coloration with white accents and a brilliant red crest and is commonly associated with the cartoon character Woody Woodpecker. One of the features of this bird that I find striking is its large size. The pileated woodpecker is almost as big as a chicken, and scares away most other birds who are in the area where it is feeding. They are an almost common sight on our island. Several years ago, I was looking out the patio window and saw what I think was a relatively young male bird hopping around on the bark of a nearby cedar tree. He was very clearly looking for a delicious lunch of ants, and seemed totally focused on the job at hand. Or perhaps I should say “job at beak.” I am no photographer, but I did manage to videotape the encounter for a full eight minutes

through the picture window. You can watch the shaky result at RealEstateCoffeeBreak.com/ssi, although I apologize in advance for the commentary. I think you will agree with me that this young woodpecker means business. Pileated woodpeckers are formidable excavators. Each strike of the beak (the peck) is between 1,000 to 1,400 Gs of gravitational force. They do this 20 times per second. This is like going from 26,000 MPH to a dead stop each second. For comparison, a human hitting a wall at 16 mph is a concussion-inducing 100-150Gs. The 1000–1400 G force of each peck can be 20 times greater than what would normally cause a concussion in human beings. Woodpeckers, on average, peck around 12,000 times a day. The fact that most woodpeckers don’t knock themselves out has led to the study of woodpecker heads to design new and safer football helmets, among other things.

a marching snare drummer marching in our bedroom. Upon investigation, it was a pileated woodpecker announcing that he had claimed our metal chimney protector as the center of his known universe. To add to their efficiency, the beak of this woodpecker is constantly being sharpened in a chisel shape. Plus, they have their own “safety goggles,” nictitating membranes that act like third eyelids and close at each strike to prevent debris from damaging the eyes. They can excavate with abandon.

Woodpeckers use their beaks not only to search for insects, but also to claim their territory. Early in our marriage, Marjie and I were awakened at sunrise by what sounded exactly like

our pileated woodpecker friends. These beautiful birds are our neighbors all around us. This is just another one of the reasons why we love our island home so much.

JOHN ADAMS is American by birth and Southern by the Grace of God. He has never lived outside of Georgia, and commutes between homes in Decatur and St. Simons Island. Learn more about him at RealEstateCoffeeBreak.com

At

Your home is more than a building or an address. It’s where you experience life, connection, and growth. That is why our agents find what they do so rewarding! Each month we are going to take you into the home of one of our agents. See what they love and value most about their homes and where they live. It is a long story of how I ended up in my home, but the short version is that it was love at first sight. I had a visceral reaction when I first saw it, and I wasn’t even house hunting on St. Simons at the time. I was living in California and was considering a move to Atlanta, but after coming home to St. Simons to visit my parents I came across what is now my house. In part because of the house, I made a mid-course correction (in the right direction) and decided to move back home to St. Simons. What is even more special is that my house is built on a lot that used to be owned by my grandfather, James Matthew Rozier, who I am named after. My house is tucked back in a little secret cove in the community of Beach Drive Place. I live here with my two children,

home with

Mack Sullivan

Amelia and Gavin. We love our neighborhood for the relaxed, beachy vibe and convenient location to the St. Simons Pier, restaurants and beach. When we are all at home together, my kids and I like to spend time talking and catching up with each other. We also like to spend time where everyone does their own thing. Our house isn’t very large, and sometimes that feels like a benefit to us. I can be doing real estate work on my computer in the great room, my son can be upstairs on his x-box and my daughter can be in her room on her phone, and we’re all still in the same general vicinity. It still feels like we are all together. To me, a house is a place where you live and take shelter from the elements. It is a very important part of our lives. But that house doesn’t become a home until it has some love added to it. A home is where family lives and grows, where you feel safe, where you know you are loved and where memories are made. As REALTORS®, we help people find the right house for them. After that, the ball is in their court to make those houses homes.

There is an old saying: “The person who does not appreciate what they already have will never be happy.” I believe that to be true, so I try to remind myself to appreciate what I do have. I appreciate my house, and I appreciate everything else I have in my life, especially my children, the other members of my family and my friends. I appreciate and enjoy my work. And, I am happy to report, I am happy. James “Mack” Sullivan is a Sales Associate at DeLoach Sotheby’s International Realty. Mack has built a sterling reputation built on trust, honesty and integrity. He blends his market knowledge and experience with enthusiasm and passion - all to create and exceptional experience for his clients.

Public Transportation of the Past Newcastle, and Gloucester streets, business owners and workers needed a way to commute more easily to their places of work.

I

f you want to travel the streets of downtown Brunswick quickly these days, you’re most likely hopping in a car and driving to your destination. But there was a time, before cars, when you would hop onto a streetcar instead. Late nineteenth century Brunswick was a boomtown, with a bustling port and a vibrant business district downtown. As residential neighborhoods developed further from the main corridors of Bay,

The Brunswick Company developed the first streetcar system in the city. This business also owned the Oglethorpe Hotel, the Hotel St. Simons, and – appropriately – the trolley system on St. Simons Island that transported people from the pier to the hotel. These first streetcars on both the island and the mainland were drawn by horses or mules. By 1909, Brunswick was ready to move into the future with two

electric streetcar lines. The lines were completed in 1911 by the City & Suburban Railway Company and ran along the city’s main thoroughfares including Bay, Union, Newcastle, Albany, and Gloucester. Poles along the route and lines directly above the tracks supplied power to the cars. According to research and oral histories compiled by local historian Tyler Bagwell, the streetcars were yellow, with glassed-in windows and woven-straw seats, and cost around 10 cents to ride. The electric streetcar system was relatively short-lived. Service was discontinued in 1926, just two years after the opening of the F.J.

Torras Causeway to St. Simons and coinciding with the rise in automobile ownership across America. Today, in Brunswick’s Queen Square the last of the remaining electrical poles for the streetcar stands alone under a magnolia tree, a reminder of a once-extensive public transportation system. TOP: A streetcar in front of City Hall – from the collection of Tyler Bagwell. INSET (left): Newcastle Street, circa 1915, with electrical lines for the streetcar system – from the collection of the Coastal Georgia Historical Society.
