In 2016, the cover story of our May issue was devoted to CBD and our search for it. Nevada was still an extremely new medical cannabis market at the time and CBD or cannabidiol was scare as hen’s teeth. Cannabidiol is a cannabis compound that has significant medical benefits but does not make people feel “stoned” or “high” and can counteract the psychoactivity of THC. Because CBD-rich cannabis is non-psychoactive, it’s an appealing option for patients looking for relief from inflammation, pain, anxiety, psychosis, seizures, spasms, and other conditions. Sounds almost to good to be true, right? And a little odd we were just now becoming privy to this magical cannabinoid. As we pointed out in the story more than two years ago, there were many possible reasons for the dearth of CBD. At the time, some of the industry leaders I interviewed believed dispensary owners were driving the demand for high-THC products and, in turn, overlooking CBD. Others suggested patients just weren’t educated enough about CBD-dominant strains to ask for them. While still others contended that there were strain limitations because the state of Nevada requires commercial cultivators to get their product solely from the state’s patient-growers. Fast-forward to today and CBD is plentiful, whether you want to buy it at a Nevada dispensary or wish to go online to procure the healing elixir with a few clicks on your computer. And it’s just not in Nevada where CBD has found a very strong foothold. According to a CBD market analysis by Hemp Business Journal, total CBD sales in the United States will exceed $2.1 billion by 2020, with $450 million of this
figure comprised of hemp-derived CBD sales. That's a 700 percent increase from 2016. Greenwave Advisors believes the CBD market will exceed $3 billion by 2021, as CBD becomes more readily available to the masses. And the most exuberantly positive on the topic is the Brightfield Group, cannabis industry analysts who estimate the hemp-CBD market alone could hit $22 billion by 2022. As CBD started to become more widely available over the last 18 months it also quickly became a staple ingredient in just about anything you could think of from coffee, water, and tea to wine, soda and beer. And that’s just beverages. It also found its way into face masks, bug spray, lotions, lip balms, shampoo and conditioner, body oil and scrub, and bath bombs. And because hemp CBD is not federally illegal you could stumble across it anywhere from farmer’s markets and beauty aisles to cafes and doctors’ offices. An even more interesting point about CBD’s explosive growth is that the market has flourished basically as a result of word-of-mouth by users because there’s been no huge mass market retailers advertising or branding the healing properties of CBD. Nor has there been a big education push on the cannabinoid’s powerful compounds which leads to another point. Because CBD is plant-based it offers a safer alternative to pharmaceuticals making it a more attractive option to many consumers who are looking for a natural path to treating their medical issue or condition. But the main reason for CBD becoming the drug of choice among both cannabis and non-cannabis users is because it offers healing without a high.

Comedian Ron White trades blue-collar humor for his own brand of comedy By Josh Bell

on White is tough to pin down. Most comedy fans first got a taste of the Texas-born standup’s work in the hugely successful Blue Collar Comedy tours, albums and specials, when White teamed up with fellow Southern-affiliated comedians Jeff Foxworthy, Bill Engvall and Larry the Cable Guy. But White was always a bit of an outlier among his Blue Collar buddies, with a more refined sense of style and jokes that tended to be more off-color than blue-collar. “I was always a little on the wild side compared to the other guys,” White says. “There was a little bit of backlash when people saw the Blue Collar [tour] and then they came out to see me live by myself, and it was way bluer than they thought it was going to be. But I saw no future in me trying to be more like somebody else.” While Foxworthy, Engvall and Larry have stuck more closely to their original Blue Collar stage personas, honing catchphrases and recurring bits, White has branched out further. “[My management company] wanted me to be more like Jeff and Bill, and there’d be bags of corporate money,” he says, “I’m like, ‘I don’t think so.’ I work in bars, as do they, every night, and I see people just like me all over the place, that may drink too much and may smoke too much and may talk too much, and I’ll just go for those guys. Maybe they’ll be my fans.” Those people and many more ended up becoming Ron White fans, allowing White to follow his own instincts and carve out a unique comedic identity. White’s current act references such non-blue-collar pastimes as golfing, hanging out with celebrities, and spending tens of thousands of dollars on home renovation. Even when he’s talking about eating at the Four Seasons in Beverly Hills, though, White remains unapologetically uncouth, and his gleefully vulgar description of a certain kind of duck taco becomes a running bit in his recent Netflix special (released in October), If You Quit Listening, I’ll Shut Up. White has also been a longtime supporter of marijuana legalization and has never been shy about his own regular marijuana use. When he was arrested in Florida in 2008 for possession of 7/8 of a gram of marijuana, he famously joked that “when I have 7/8 of a gram of marijuana, I consider myself to be out of marijuana.” White’s Twitter timeline is full of retweets from cannabis advocacy groups, along with posts celebrating the recent legalization of recreational marijuana in Canada and Michigan. “It’s a ridiculous prohibition that we’ll look back on in 20 years and laugh like crazy that it was ever illegal,” White says. “If you want to make a dent in the drug problem in this country, you can’t make that dent doing the easy thing,” he adds, citing the serious problems with meth and opioids in the U.S. “You have to make doing it the hard thing. So, you can’t just go around arresting me and Willie Nelson. That’s a

soft target.” White doesn’t hesitate to advocate for marijuana use as therapeutic and beneficial, and he doesn’t mind if his penchant for speaking out turns off any potential fans. “They’re yelling at somebody that’s not hearing what they’re saying because I do not pay attention to any of that kind of stuff,” he says. In general, White doesn’t pull any punches when expressing his point of view. Asked about working with Netflix for his new special, he first responds with a curt “Next question!” before then expounding on the pros and cons of the monolithic streaming service and the way it’s become a repository for so much stand-up comedy programming. “Netflix is smart, smart, smart, because they see these hourlong shows that don’t cost them hardly anything, and they’re really, really, really good shows, and they can show them over and over and over and over,” he says. “Most of them they pay less for than it would cost NBC to make an episode of a shit sitcom that nobody will ever see again.” At the same time, he says that If You Quit Listening has done “really, really well” since its October release, and that Netflix’s worldwide presence has allowed him to reach audiences that he’d never previously had the chance to connect with. “That’s why I did it, to open up European markets, and whatever those three towns in the whole country of Australia are,” he says. At this point in his career, White could be coasting on past glories, but he’s still touring regularly and creating new material, looking to make new fans. And he’s still a big draw in Vegas, where he’s been performing steadily since the Blue Collar Comedy days in the early ’00s. “I genuinely look at it as a week off,” he says. “You can wake up and play some really great golf, and go have a bottle of wine with lunch, and take a five-hour nap, and you wake up and you’ve still got two hours to kill, and then you’re wide awake after the show’s over.” Of course, the legalization of recreational cannabis gives White another reason to love Vegas, and he hopes to see that expand. “I really can’t wait for the next step, where there’s actually clubs we can go to and places we can go, social scenes that’ll eventually come around,” he says. Whenever that happens, there’s no reason to think that White won’t incorporate the experience into his comedy, which remains a distinctive and idiosyncratic representation of his life. He wouldn’t have it any other way. “About the only common denominator between people that have made a lot of money doing stand-up—really successful guys—is that they were basically true to their nature,” he says. “I just do what I do the best I can do it, and whoever likes it, likes it, and whoever doesn’t like it can just go watch somebody else.” Ron White performs December 7-8, 14-15 as part of the Aces of Comedy series at the Mirage.

BRUNCHING GETS THE GLITTER, GLAM AND GOODWILL TREATMENT AT SEÑOR FROG’S DRAG BRUNCH By Danny Axelrod

here’s a lot of ‘brunch’ out there on the Strip, but the Drag Brunch at Señor Frog’s is not quite like anything else you’ll find. Sure, there’s lot of flash, fierceness and fun in the twohour meal and spectacular, but there’s also something you may not expect to find: heart. The show is a specific type of performance art within the context of LGBTQ culture, with a real sense of belonging, community and celebration of people expressing who they are. That being said, I’m just getting paid to write about things to do in Vegas when you’re stoned. With munchable food, raunchy humor, music, dance, and an open bar, the Drag Brunch may very well have what you’re looking for. First, let’s talk about the venue and the food. Señor Frog’s is a novelty in and of itself. It’s kind of like a TGIFriday’s for folks who want to party like they are in Mexico without actually having to confront the harsh realities of life in a third-world country. The decor is like a soundstage cantina, loaded with signs with quotes written on them to encourage food, drink and general goofiness (my personal favorite reads: “If you can’t serve as an example, serve as a warning.”) The actual show takes place upstairs in a dining area with a giant stage. The ‘brunch’ consists of breakfast staples like eggs, bacon, sausage and potatoes, as well as a decidedly American interpretation of Mexican basics. It’s almost as if they stocked the buffet with the largest takeout order of Taco Bell they could get away with. It does the job just fine from the standpoint of being high and hungry (I can attest to multiple late-night Taco Bell drive-thru visits in my youth, often fueled by skunky herb).

Once you’re seated and have your food, you can help yourself to the bucket of tableside mimosas or saunter over to the open bar for a cocktail. As it was afternoon, I was high and I kind of needed to function for the rest of the day, I steered clear of the cocktails and nursed a glass of economyclass champagne. Combining alcohol and marijuana can take different people to different places mentally, so my advice is to party responsibly and if you’re going to go like a rock star, download a ride share app. The actual show is a collection of “RuPaul’s Drag Race” alumnus with varying degrees of success on the show. Hosted by the force of nature known as Shannel, she gets the already fed and tipsy crowd energized with jokes and innuendo. She also gets the audience to participate by bringing up people who are celebrating their birthdays or other anniversaries. She interacts with them and in some instances, she even gets them to perform a little. When the performers start doing their routines, the crowd goes wild and whips out dollar bills to be collected as each one works the room. There’s practically something for everyone in the music selections -- India Farrah saunters across the stage as superstar Adele, Coco Montrose becomes Tina Turner, Desree St. James simmers as a Latin seductress. The show that I saw practically got stolen by Josephine O’Hara Andrews, whose
physique and physicality allowed for some of the best dance moves performed to a disco and techno medley, that I’ve ever seen, in drag or otherwise. Which brings me to this point; I’m a middle-aged, straight white dude who hasn’t been to a whole lot of drag shows. My first thought with some of the performers is, “There’s no way that’s a guy!” Being high further clouds my sense of what is real and what is makeup, and I guess that speaks to what this is all about. This isn’t just playing dress-up, these performers really transform themselves into their characters. They exhibit a number of talents (lip-synching being one of them), but they also turn themselves into an embodiment of LGBTQ culture. As I looked around the room, I saw same-sex bachelor parties, college reunions, even guys bringing their moms. It was one of the most diverse and yet united crowds I’ve ever been a part of, with everyone there out just to have a good time. Now that is a good buzz I could ride every day of the year. So, there you have it. The Drag Brunch and Supper Club at Señor Frog’s, located inside TI, is a great place to eat, drink, laugh, and dance, and is a thoroughly suitable place to spend an afternoon while being high. It also provides a premier LGBTQ entertainment option, with enough goodwill to elevate all who should attend. I have a feeling as word gets out, the tourist business alone will keep this show going for some time.

WHOLESOME GRIDNESS Host a Frolicking Waffle Bar Brunch this Holiday Season By Deborah L Costella.

There were already three large Ziploc bags in her freezer, each filled with various flavor combinations prepared weeks prior. But those were for her personal quiet Sunday morning enjoyment. Today’s assemblage was part of a special breakfast she was preparing for her youngest daughter, Hannah. When asked what she wanted for her celebratory birthday dinner, Hannah instead requested a Waffle Bar Brunch. It’s an obsession Hannah shares with her canna-chef mother, Rebecca. Once a month Rebecca dedicates herself to preparing a large batch of yet another taste sensation. She spends endless hours searching for new waffle ideas to
add to her extensive repertoire that includes eggnog, malted milk, even meat waffles. Considering medicinal alternatives, she added cannabis into the mix. Her canna-waffles were immediately popular among friends and relatives. Today Rebecca finds herself, once again, whipping egg whites past the ocean foam stage to soft wilting points and then stiff peaks like the snow-capped mountains of the Grand Tetons. The egg whites will soon be folded into individual mixing bowls of flour, sugar, and some with kief and other dry ingredients. Lined up on the service table are several waffle irons. From Belgium squares etched with deep pocketed grids to

irons with shallow cubes making for delicately, circular waffles. Of course, the proverbial Mickey Mouse iron is among the choices along with one that is heart-shaped. A large jug of authentic Canadian maple syrup sits center table, after all National Maple Syrup Day is December 17. Containers of mix-ins and toppings to tease even the most rigid and traditional of waffliers completes the display. Rebecca delights in knowing her immeasurable love of waffles serves as a kind of thread to her husband’s Greek heritage, the origin of this versatile treat. It was the Ancient Greeks who first roasted these flat cakes between two metal plates with long wooden handles. The obelios, as they were then known, consisted of grain flour and water, not the sugary, sweet waffles consumed today. Nor were they emblazoned with the face of Disney characters or the familiar grid design. Rather they were marked with Biblical scenes and religious icons. These smaller, wafer-like treats were consumed at the end of the meal as a symbolic final blessing. The obelios of Ancient Greece were later referred to as gaufres in France, and wafel in other parts of Europe. The now familiar spelling, using two “f’s,” is attributed to English chef Robert Smith in his 1725 cookbook “Court Cookery.” Not only did he alter the spelling, chef Smith also tinkered with the recipe. Creating a sweeter batter with the inclusion of granulated sugar, Chef flamboyantly also added a few other spins. Here’s an excerpt of his recipe: “Take flower, cream, sack, nutmeg, sugar, eggs, yeast, of what quantity you will; mix these to a batter, and let them stand to rise; then add a little melted butter, and bake one to try; if they burn, add more butter: melt butter, with sack, refin’d sugar, and orange-flower water for the sauce.” Rebecca actually tried chef Smith’s recipe as written.
In the opinion of her family, it barely qualified as a waffle. She later prepared the recipe using canna-butter, happily adding “more butter,” as suggested in the original version. She re-wrote the recipe as an adaptation with the inclusion of cannabis, writing it in the same vein as chef Smith with no measurements or amounts. She also replaced sack with Grand Marnier. Her husband changed his vote from a “never again” to a “yes, anytime.” Rebecca’s love of waffles inspired her to do additional research where she learned, by the early 1700s, waffles were making appearances throughout Europe in varied taste connotations. Germany was famous for a coffee waffle. The French gaufres were more savory in nature with the inclusion of cloves, Spanish wine and lemon zest. These were most often sold by street vendors and eaten as an afternoon treat. The Dutch also enjoyed their waffles during afternoon tea along with a bit of chocolate. But it is the waffles of Belgium, where this treat took off, that has become as associated with the country as chocolate and beer. Lighter in texture, the Belgium waffle was thicker, rectangular in shape and coated with caramelized sugar. This sugary coating was created by one of the royal chefs to appease the sweet tooth of Prince Liège. Waffles came to America in the mid-1700s care of the Dutch. That’s when they went from afternoon snack to breakfast food. An expensive import at the time, sugar was replaced with the more readily available and less costly liquid sweetener, maple syrup. The heavier, more substantial American Waffle was slathered with butter and syrup and was often as large as the plate upon which it was served. In the midst of her research Rebecca discovered waffles are actually part of her own heritage. Her maiden name, Vernersch, was the surname of Belgium immigrants Maurice and Rose Vernersch. Hardly a common name in America, Rebecca dug deeper. It didn’t take much delving to discover she was indeed a direct descendent of Rose. While waffles made their debut in America at the 1962 World’s Fair in Seattle, it was in New York at the 1964 World’s Fair, that her newly identified ancestors, Maurice and Rose, turned Americans onto the glory and splendor of waffles. Setting up shop in the Belgium Village, they posted a banner above their quaint, gabled rooftop hut advertising their “Brussels Waffles: A Bel-Gem Product.” For only a dollar a piece, the Vernersches sold their traditionally plain, yet fluffy, light-as-air, crispy waffles. These were far different than those flying saucer-like waffles American palates had grown accustomed to. The Vernersches offered a second choice at the Fair. Another delightfully plain waffle but this one was topped with sliced, fresh strawberries and a generous dollop of whipped cream. The scent of these buttery, sweet waffles wafted its way under the noses of
talents of her ancestors and, yielding to her obsession, she beats, stirs and creates a variety of batters for Hannah’s Frolicking Waffle Bar Brunch. Flavors range from sweet berry to cranberry-cinnamon to chocolate chip. Savory options offer the inclusion of cardamom, her famous bacon and cheddar, or newcomer sweet potato and maple. For guests 21-and-over, there will be almond amaretto, bananacoconut Galliano, and Kahlua with cream. Of course, some will be infused with cannabis for those who like to start their mornings on the brighter side of the road. The traditional Liège Waffle will make an appearance, incorporated with chunks of Swedish Pearl Sugar, instead of orange sauce. A large platter of down-home fried chicken cooked in a richly infused canna-oil is also set to debut as Rebecca’s version of Chicken ‘n Waffles. Rebecca couldn’t leave out this Harlem-born delicacy. One of our nation’s original fusion foods, it melds the comfort of Soul Food with the practicality of Pennsylvania Dutch cuisine. No matter their preference or taste, Hannah’s guests will surely walk away from her birthday celebration knowing waffles can be enjoyed for breakfast, lunch or dinner. They might also find Rebecca’s weakness for waffles (with weed) is contagious.

the multitudes of people attending the Fair that year. That and the sight of these piled high, new fan-dangled waffles is what caused visitors to line up for a taste of this deviant galette. Inspired by this newly acquired knowledge and familial connection to her beloved waffles, Rebecca was determined to make her daughter’s “Waffle Frolic” (the term used for waffle parties hosted in the 1740s by New Jersey and New York’s wealthier residents) the biggest and most expanded waffle celebration ever. For the Flolicking Waffle Brunch party, photos of the Vernersch family along with other waffle-loving alumni were positioned at each seat in place of name cards. Hannah’s guests would choose a seat with a photo they believe resembles them most or simply looks interesting. One of the photos is of Thomas Jefferson. Evidently, Mr. Jefferson had his own love affair with waffles. While traveling through the Netherlands he bought four waffle irons that he’d purchased in Amsterdam and brought to America. Per Mr. Jefferson’s directive, waffles were a regular item on the menu at Monticello. So, on this winter morning, Rebecca has let the historic juices of waffle-making flow. She summons the traits and
COSMIC MUFFIN’S LEMON CURD WEED WAFFLE WITH BLUEBERRY COMPOTE WAFFLE INGREDIENTS:
2 eggs, room temp and separated 1 cup heavy cream 3 Tbsp. freshly squeezed lemon juice 8 Tbsp. canna-butter, melted and cooled 2 cups all-purpose flour 2 tsp. baking powder 1/8 tsp. salt 4 Tbsp. granulated sugar 2 Tbsp. kief zest of one large lemon
PROCESS FOR WAFFLES:
In small mixing bowl, beat egg whites until stiff – set aside. In larger bowl, combine egg yolks, heavy cream, lemon juice and butter. Add flour, baking powder, salt, sugar and kief, mixing just until blended. Gently fold in egg whites. Cook in prepared waffle iron according to manufacturer’s directions. LEMON CURD INGREDIENTS:
2 whole eggs + 1 egg yolk 1 cup granulated sugar 1/2 cup fresh lemon juice (2-3 lemons) 1/4 cup unsalted canna-butter, cubed 2 Tbsp. lemon zest
PROCESS FOR LEMON CURD:
(can be stored for 7 days and makes 1-1/2 cups)
In heavy saucepot over medium-low heat, whisk eggs, sugar and lemon juice until combined. Add cubes of butter and lemon zest while continually whisking. Cook until curd thickens, coating the back of a spoon. Don’t allow mixture to boil. Pour curd into a bowl, placing plastic wrap onto surface to avoid skin forming on top. To prepare Blueberry Compote simply combine 1-1/2 cups fresh or frozen blueberries along with 2-3 Tbsp. of water, ½ cup granulated sugar, and 1/8 tsp. lemon zest, into a medium saucepot. Cook over medium heat about 8 to 10 minutes. Stir in remaining blueberries, cook another 5-7 minutes or until compote has thickened.

Gourmet vegan chef Stacey Dougan adds cannabidiol to her menu of healthy offerings by Beth Schwartz

Declaring she doesn’t do anything that doesn’t fit within her vision, vegan chef Stacey Dougan decided infusing CBD into the next stage of her business plan made the cut. The idea behind that infusion into her business strategy was offering plant-based, fine dining, CBD-infused dinners. Dougan started offering the monthly dinners, called 4&Twenty, in September because she explains, “I have such reverence for the plant.” As a metaphor for both her personal aspirations for success and for diners who are lucky enough to get one of 20 seats at the 4&Twenty events, CBD can both boost your business offerings as well as shore up your body’s endocannabinoid system. For those who aren’t familiar, CBD, or cannabidiol, is the nonpsychoactive part of the cannabis plant that has significant medical benefits – offering relief from inflammation, pain, anxiety, psychosis, seizures, spasms, and other conditions. When explaining her concept to potential diners, Dougan describes CBD as “the part of the cannabis plant that just relaxes the body and helps the body to heal itself.” Called 4&Twenty because there are four courses and 20 guests at the CBD-infused dinners, Dougan has two goals for the experience she holds at a secret location that is not revealed until the day of the event. “The first thing we want diners to get out of it is to have a good time,” she explains. “I want people to feel good when they come and when they leave. We want the experience to be great from beginning to end, that’s why when you walk

in you are served plant-based wine and hors d'oeuvres and there aren’t a lot of people, so you feel like you are part of something intimate. I know feeling good is the first step to healing, whether it be emotional or physical, because it’s all connected.” The second objective for her 4&Twenty dinners is education. “We want to educate people about CBD and plant-based food. I want to show people you can have plant-based food that tastes amazing – that it is just not a chicken sandwich on a plate.” So far educating people about CBD has been the toughest part of organizing the dinners. Dougan often has to walk people through what CBD is “because it is still very scary to people. I didn’t think that was going to be an issue at all and I think that’s because I am in the industry and I love the plant so much. So, it feels kind of weird to me that people still look at it as if it’s something that’s bad.” For the second 4&Twenty dinner Dougan held, she decided to create educational handouts outlining the benefits of CBD for diners. “We actually had to point out what the health benefits of CBD were at the October event because some people are cool with CBD, but some people are still nervous about it. People just want reassurance that that they aren’t gonna be high and that they will pass their drug test. “Once you communicate with people and give them the information then they can make their own decisions. Some people are going to explore it, and some people will not for whatever reason. It just may not be for them. My job is just to give information and knowing in my heart this information will help to heal the body and if you choose to take it great and if not, then good luck with those medications,” she says with a laugh. Dougan tells diners that as a result of the meals which she infuses with CBD isolate powder “they are going to feel relaxed, especially the next day. More so because the event is at night and the CBD does take a couple of hours to maneuver through the body, so we tell them the next day you are going to wake up and you are going to feel good. Even in the evening as you start to slumber you will be able to sleep easier.” In addition to spreading the gospel of CBD, Dougan is trying to show people you can heal your body with plant-based food and it can taste good. “I want to show people you can have plant-based food that can taste amazing,” says the self-taught chef. “I have been a plant-based chef for 17 years, so I had to learn how to cook when we didn’t have the alternatives and we couldn’t buy vegan cheese because there were none on the shelves. You had to learn how to make your own cheese. I make all my sauces, all my cheeses. I try to make everything from scratch as much as possible.” Dougan, who is a restaurateur, opening Simply Vegan restaurant in the Container Park five years ago with a second location set to open during the first quarter of 2019, is adamant about the ingredients being as important a component of the experience as CBD. “They both go hand in hand,” she explains. “Just to give people that experience of not only having CBD infused in your food but to have real plants on your plate and not something that was made in a laboratory. fake meat products, I am just saying we have kind of gotten away from the art of vegan food preparation. I want to show people that you turn plants into something amazing on the plate and it doesn’t necessarily have to come from a box.” elevate got a taste of the 4&Twenty dining experience on October 18 at special event space The Doyle in Downtown Las Vegas. The October dinner, which was $125 per person, had a coast-to-coast theme of Four Corners of the U.S. with each diner being served 250 milligrams of CBD during the four-course experience. The first course began up North with a focus on Detroit, spotlighting locally loved Vernors ginger ale as a staple ingredient. Dougan made a flavorful Vernors Ginger Root Tumeric Consommé with roasted root vegetables. With 62 milligrams of CBD-infused broth, forget chicken noodle soup and sup on this consommé when you want to feel better. The second course was a quick visit out West to California for a fresh, green salad of mango, dragonfruit and avocado caprese with papaya drops. The salad’s kaffir lime vinaigrette was infused with 30 mgs of CBD. For the Southern course which was inspired by Louisiana, Dougan prepared a main course of creamy Lobster Mushroom Macaroni and Cheese with grilled vegetable batons. The vegetables and an olive oil drizzle were infused with 90 mgs of CBD. The final course, infused with 60 mgs of CBD, was a nod to New York with a raw, vegan, soy- and gluten-free cheesecake topped with pomegranate lavender crème anglaise and sitting on a chewy crust of almond and raspberries. Eventually Dougan would like to be able to offer THC dinners as part of 4&Twenty’s slate of offerings. “I believe it’s important to have both. You just can’t separate everything, you can, but I feel like the CBD is more for the body and THC is more for the spirit, the energy, the mind, which also has to be healed and the body can be healed simultaneously,” she says. “That’s my passion and reverence for the plant.”

It is rumored that Sticky Toffee Pudding originated in the 1970s in reaction to the warming comfort it provided to people during cold, bleak winter months. In turn, we thought December was the perfect month for Sticky Icky Toffee Pudding, a festive dessert that combines dates and a rich toffee sauce, to be spotlighted in ‘Cooking with Cannabis.’ The original Sticky Toffee Pudding recipe is thought to have been produced by Francis Coulson at Sharrow Bay in the Lake District in north west England. Coulson’s secret recipe is such a matter of culinary legend that each staff member at Sharrow Bay has signed a secrecy agreement not to reveal the recipe that is kept in the hotel’s vaults. Served warm, Sticky Icky Toffee Pudding is guaranteed to live up to its original purpose – to provide comfort and satisfaction – as does all the rich tapestry of Persian, Indian, and Pakistani flavors prepared by chef Jainine Jaffer at Shiraz restaurant, shirazrestaurant.com, a new local culinary hotspot.
CAKE INGREDIENTS: makes 8 portions 1-1/4 cup whole dates (pitted), chopped into small slices 3/4 cup warm coffee (strong) 1-1/4 cup flour 1/2 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. salt 2 large eggs (room temp) 3/4 cup packed brown sugar 1 tsp. vanilla 4 Tbsp. cannabis butter (melted)
TOFFEE SAUCE INGREDIENTS: 8 Tbsp. cannabis butter 1 cup packed brown sugar 2/3 cup heavy cream 1/2 tsp. lemon juice
DIRECTIONS FOR FILLING: Preheat oven to 350°F. Grease and lightly flour (8) 4 oz. ramekins or a large cast iron (this is what I use) and line bottom with parchment. Line the bottom of a roasting pan with a clean dish towel and set the ramekins on top. Bring water to a rolling boil to use as your water bath.
In a small saucepan, combine dates, coffee water and baking soda on medium low flame and let it reduce into a thick paste (approx. 10 minutes), stir as needed. Set aside in a medium bowl and let cool. In a medium bowl, whisk together flour, baking powder and salt. Once date mixture is cooled, incorporate eggs, brown sugar and vanilla until smooth, then incorporate cannabis butter. Next, slowly incorporate dry ingredients into wet mixture until just combined. Distribute evenly among prepared ramekins. Fill roasting pan with enough of the boiling water to come halfway up the sides of ramekins. Bake for 35-40 minutes or until the cakes have puffed up. Immediately remove and set on a wire rack to cool. While cakes are baking, prepare Sticky Icky Toffee by melting the remaining 8 Tbsp. of cannabis butter over medium low heat. Whisk in brown sugar until smooth. Continue to cook, stirring occasionally, until sugar dissolves and mixture begins to look puffy (about 3-4 minutes). Slowly pour in cream and mix until frothy. Remove from heat then add lemon juice. To serve, invert ramekin onto a plate and remove ramekin, peel off parchment and drizzle on sticky icky toffee. Serve immediately with creme anglaise, custard or your favorite ice cream.
Please remember when cooking with medicinal cannabis you are cooking with a medicine and the medicine amount and portions of the food ingested should always be taken into consideration. Always start out with small portions or doses and wait 30 minutes to an hour before eating any additional portions of food that has been medicated.

S
Sometimes the crooked path, although trickier to navigate and strewn with more obstacles, is the one that gets you to your goal. For the Thompson family that was definitely the case. It all started in 2008 when Taiya and Jimmy Thompson welcomed their son Kian -- an active, lively, and beautiful little baby -- into the world. However, what she and her husband, Jimmy, didn’t know was that Kian would also arrive with Down syndrome. “It was surprising when he was born and came with something extra. But we pushed our fears aside as we embraced him as our child,” Taiya says of Kian who continued to grow normally, not displaying any symptoms of Down syndrome during his first three years. “A lot of things we were afraid of didn’t happen. Kian was a model kid, I thought I won the Down syndrome jackpot,” says Taiya.
But the Thompsons’ good luck with Kian wouldn’t last, after turning three he quickly started to regress. He lost all of his functional skills, fine motor skills, had a change in gait until he eventually couldn’t walk, and stopped drinking out of cups because he couldn’t hold them. Along with these changes in behavior, Kian showed aggression, hyperactivity, and self-harm (such as banging his head against the wall) because he was likely frustrated at his inability to communicate. His sensory processing was so overwhelming, Taiya felt like a prisoner in her own home. “We couldn’t leave because everything was too much for Kian outside of it,” she says. At that time, the Thompsons had another child, Kasia, who is a year and a half younger than Kian. Their friends and extended family members stepped in to help raise Kasia and try to give her a normal life outside the chaos encircling her brother.

I had friends on Adderall in college and they were not happy people. I didn’t want that for my son. THE TRADITIONAL PATH As Kian got worse, doctors told the Thompsons that Kian’s behavior was just the natural evolution of Down syndrome and recommended highly addictive and pharmaceuticals to help with Kian’s behavior. But Taiya both refused to accept the diagnosis or the recommendation to lead her precious son down the path of prescribed medications that he would likely be on for the rest of his life. With Kian’s diagnosis, doctors recommended drugs that included Adderall, Ritalin, serious epilepsy drugs, antidepressants, and everything in between. “And there were all the side effects – they were telling me that he’d have to be on them for the rest of his life and that it would change his brain chemistry. The side effects included suicidal thoughts, even death, and as he grew he would become immune to them and would have to increase the dosage,” she says. “I had friends on Adderall in college and they were not happy people. I didn’t want that for my son,” Taiya adds.
Taiya got on a nine-month waiting list to see a neuropsychologist and when they finally got the appointment, the doctor noticed some slight motor movement in Kian – a hint of hope – and referred him to another neurologist for further analysis. Finally, after a long and difficult two-year struggle, Kian was diagnosed with ADHD, autism, a partial seizure disorder, and sensory processing integration disorder. “We finally get a diagnosis and it’s so much easier to work with something that has a name, a label,” explains Taiya, who held off putting Kian on pharmaceuticals, using three months to research alternative therapies. She researched everything from acupuncture and Chinese herbs to Googling things like “naturally treating autism” and “alternative ways to treat ADHD.” “We took him off gluten, dyes, went to a chiropractor, nothing was working,” Taiya says. And then she stumbled across cannabidiol (CBD) oil.
THE RISK AND REWARD OF CBD For those who grew up in the ‘80s and ‘90s, you were most likely exposed to the “Just Say No to Drugs” campaign and the afterschool “this is your brain on drugs” egg-in-the-frying-pan TV PSA that basically meant that if you smoked weed, your brain would turn to mush. Taiya also grew up in religiously conservative

Taiya was a certified financial planner with federal security licenses and she had heard stories of parents whose children had been taken away for dabbling in cannabis products. With that in mind she had to consider that if she invested in cannabis to help her child, she could risk losing her career. “I had to ask myself, ‘What would this look like for my family? Are my kids going to be taken away?’” Taiya pondered. Yet, the overwhelming evidence and stories Taiya was hearing from friends and family about how CBD was helping kids with special needs as well as the online research she was doing dispelled a lot of her fears. Plus, suggested therapies like Applied Behavior Analysis cost around $3,000 a month -- a huge chunk of money for an average-sized family and insurance wouldn’t cover it. Taiya dove into the research and it led her to take a step back and think, ‘Hey, at the end of the day it’s a plant and we couldn’t in good conscience put him on these lifelong, addictive pharmaceuticals.’ Therefore, in 2014 the Thompsons drove to Colorado and bought some cannabis oil. Taiya’s dad brought over a small syringe and they filled it up with the CBD oil and gave Kian an injection. “We thought, if nothing else it will make him feel better. I asked myself, do I put him on all these medications or do I get him a little high? Maybe he’ll calm down, slow down, sleep, and be less angry. His body was going so much and he didn’t sleep for days. I thought, how bad would it really be for him to have some THC in his body? So we all gathered around and watched him, wondering if he’d get the munchies or start giggling hysterically,” Taiya recalls. But nothing happened. That first time, Taiya gave Kian a .1 mg dosage, then the next day she gave him the same dosage twice a day, then three times a day, then started playing with increasing the dosage to .2 or .5 mg servings. Since they spent $400 on the bottle of CBD oil, they were going to use it. It wasn’t until about three or four days later that Taiya

THE SPROUTING OF CROOKED CACTUS Despite growing up in a conservative area, Taiya’s parents were open and supportive of Kian using CBD and her mom grew cannabis recreationally. Still not recognized as a viable treatment in Nevada at the time, Taiya’s mom started playing around with growing flower strains high in CBD and learning extraction processes. She made butter and creams and soon started noticing that her rheumatoid arthritis wasn’t bothering her as much and she wasn’t getting migraines anymore. The only explanation was that the cannabis passing through her hands was making her body feel better. “I started realizing that it’s not just for seizures or

started noticing a change in Kian’s behavior. “He would spin around and around in a circle for two hours straight,” she says about how exhausting and heartbreaking it was to watch. “(With CBD) we started to see him slow down. It’s such a subtle change, though, we were questioning -- is it the oil or is it just a good day?” But Kian was definitely changing. Soon he went from being completely nonverbal to talking again and at the three-month mark of using CBD therapy Kian said “mom.” “Then I thought, this stuff works. We started to see more breakthroughs, and in the fall (of 2016) he trick-or-treated for the first time in years,” recalls Taiya, adding that Kian also takes a small dose of an epilepsy drug as well, but it’s the only pharmaceutical he takes. “But three years later, we have never increased the dosage. My opinion -- and I’m not a doctor or anything -is that the CBD takes care of most of his symptoms.”

Through the realization that CBD had healing potential for a number of conditions and illnesses, a lightbulb went off and a family-operated Las Vegas-based business was born. “Our number one goal was to promote the education of cannabis and CBD,” explains Taiya of starting Crooked Cactus Oils in 2017. “But we couldn’t sell it to people, so we gave away an ounce of plant material along with our classes. We taught people how to make their own tinctures and bath bombs while sharing the benefits of cannabis. I wasn’t really looking for another business opportunity, but there were so many people asking for help.” Word of mouth about Taiya’s business got around so fast that she left her six-figure financial planning job to pursue Crooked Cactus fulltime. She started developing her own line of CBD products that, of course, included tinctures to help other special needs families. But she also developed other products – salves, body butters, massage oils, muscle menders, and dog treats – that would appeal to and benefit almost anyone. She explains that the majority of her customers are women between the ages of 45-65. “They’re conservative, high achievers – they have a lot of stuff they still want to do in their lives but feel like their bodies aren’t keeping up with them. And they’re not the type to go into a dispensary,” Taiya says. Plus, Taiya is grateful that she is able to keep her business in Nevada. “It’s pretty amazing running a business here. I’m thankful that we live in a pro-cannabis state that values our freedom and independence. Our community for the most part is embracing cannabis and recognizing the economic benefits it brings,” she says. At nine years old, it seems like nothing is stopping Taiya’s larger-than-life little boy. “Kian is amazing. We’re living as a normal family now. We went to a pumpkin patch/carnival-like event and I didn’t have to hold his hand at all, he stayed with us the whole time,” Taiya says. “He’s thriving in school and insurance is paying for his therapy because he’s progressing. He’s learning vocabulary and colors and is just doing really well. And he loves to dance.” And it’s a beautiful sight to envision, the Thompson family dancing down that crooked path to a normal life.

makes 5 cups | 1 cup per bath = 200 mg CBD
*If you have a canna oil you prefer, replace half the coconut oil with the infused canna oil and omit CBD isolate.
INSTRUCTIONS
1. Place (melted) coconut oil in glass bowl and microwave for 7-10 seconds to warm. Add CBD isolate to warm coconut oil and thoroughly mix until completely dissolved. 2. Add almond oil and mix thoroughly to fully incorporate into infused coconut oil. 3. Stir in essential oils. We recommend 20 drops lemon, 20 drops rosemary and 40 drops peppermint but you can personalize the aroma and concentration to your liking. 4. Add Epsom salts and baking soda, stir to combine. 5. The mixture will look like fresh snow! Keep all of it for yourself or separate into 5 jars for gifting. Store in airtight containers or the salts will dry out.

Best used as a bath soak just before bedtime. Fill tub with hot water adding 1 cup of the salts. Soak for 20-30 minutes. The ingredients are detoxifying. Keep a cold glass of water within reach to rehydrate. After soaking, pat dry and go to bed. t’s estimated that the CBD market will grow to a $2.1 billion market in consumer sales by 2020—a 700 percent increase from 2016, according to the Hemp Business Journal. In 2015, the market for consumer sales of hemp-derived CBD products was $90 million, plus another $112 million in marijuana-derived CBD products which were sold through dispensaries—bringing a total CBD market to $202 million. With the availability and popularity of tinctures growing, the perception of CBD or cannabidiol in general is evolving to reach a more mainstream audience. “When I first launched our products in 2017 and would ask people if they knew what CBD was, most people outside the industry would say ‘no.’ Now when I ask people they say ‘of course!’ That’s a very short period of time to see such a drastic change in public awareness,” says Heather Vanek, founder of Hot Mess Kushmetics. “It has definitely translated to an increase in business. Cannabiotix’s successful grow philosophy hinges on pure love of flower
“Our growers love their plants like a parent loves a child,” offers Bert Adams, president of Cannabiotix, as one of the main reasons for the cultivator’s success. “Our rigorous internal process is self-imposed based on the pure love for the flower.” That love is very evident just based on the cultivator’s first-place win of the 2017 High Times World Cup for Best Hybrid Flower and 2018 High Times Top Ten Strains of the Year for Cannabiotix’s much vaunted Kush Mountains, a cross of White Walker OG and Blue Flame OG #4. “Our success is a collaborative effort to ensure the flower’s full potential is expressed in the end product,” says Adams. “There are checkpoints in the grow, flush, dry, trim and packaging rooms. If at any point the team is not happy with the product no matter how far into the production process it gets, the customer will never see it.” Formed in 2014, Cannabiotix also attributes its success in the Nevada marketplace to a “proprietary process that starts with our genetics and continues through the lifecycle of the plant to include our highly detailed strain specific nutrient process, organic pest management, and by avoiding the use of cancer-causing plant growth regulators (PGRs) and pesticides. We hand water, pick by stem, trim by hand and never touch the flower. Our environments are customized at every stage for each strain,” reveals Adams. “Without giving to much information away, our process is highly technical with a human touch that yields the highest quality THC, best flavor, produces clearer oils, and provides a consistently pleasant experience.”
That human touch has resulted in many awards for Cannabiotix including first place Sativa & Indica Flower at the 2016 High Times So-Cal Cannabis Cup; second place for Best Sativa Flower at the 2015 High Times Medical Cannabis Cup in Michigan; first place Indica Flower at the 2015 High Times World Cup; first place for Best Hybrid at the 2014 High Times Cannabis Cup; and first place for Best Hybrid Flower at the 2013 High Times NorCal Medical Cannabis Cup.
