As an old Chinese saying goes, it takes ten years to sharpen a sword. Behind every successful individual, behind every classic Chinese painting, behind every enduring brand is a story of meticulous, steadfast devotion. It’s a story that is often missed by the spotlight that focuses only on their current glory.

In our search for the most radiant stories, we found them. But it’s precisely where the light does not shine that we sometimes discover the most resplendent stories of all—the beautiful journeys that brought them to where they are today.

In this issue of Elite Lifestyle Magazine, we invite you to revel in the Chinese landscape paintings now on exhibit at The Metropolitan Museum of Art and explore how the ancients imbued mountains and rivers with their emotions. eet Mariano Palencia Crespo of MPC Bespoke, one of London’s bespoke bootmakers. Crespo shares how he traveled the globe and was inspired to apprentice in the art of bootmaking, a tradition familiar to his father, who was a cobbler. It’s a journey that took Crespo to two different worlds, both steeped in tradition yet miles apart: from an old master in a remote Spanish village to an old English bootmaking establishment in the heart of London. Now, he is freelancing with two prestigious London bootmakers (John Lobb, and Foster and Son), as well as having his own workshop. In 2016, Cockpit Arts awarded him the National Association of Decorative and Fine Arts Societies (NADFAS) award, and in 2018 its Leathersellers’ Award.

Q: Why is it important to keep traditional craftsmanship like shoemaking alive? A: Crafts are really important because they’re a part of our life, part of our history. So if nobody wants to learn how to do these things, or you don’t pass down this knowledge, they will disappear; they will die out, and it’s really sad to see.

He was making swords by hand, and I felt moved. “[I thought] I would love to do some craft,” and because I had the knowledge of shoemaking, I decided to go back to Spain and try to find someone who was happy to teach me. It took me a year searching for a shoemaker in Spain. It wasn’t easy, until I met this old man. He was in his 80s, and I was lucky he took me under his wing and taught me what he knew about shoemaking. This was in the south of Spain, in San Silvestre de Guzmán (Huelva), a remote village of 600 people right next to the border with Portugal. He was a retired man and did it as a hobby. what I think. I never talked about this with him. … But I think for him it was something new, in a way: “OK, I will pass down my knowledge. I feel comfortable with this guy and why not.” He was open-minded and he did it, I think, for that reason. His father was a shoemaker too, so he was a second generation of shoemakers, and they were specialized in country working shoes, boots, and riding boots. I was there for three to four years. In the south of Spain, people still keep their traditions alive. There’s a religious festival called Romería, where they move a [statue of a] saint from place to place. Everyone in the procession dresses up in traditional Andalusian costumes, and they travel with their animals and carriages, the old way of transport. That costume requires the long Spanish riding boots, so that’s why these people still buy these boots. The boots are also bought by bull fighters, horsemen, and cattle herders who work in the region.

Q: How long and what did it take to learn the art of making Spanish hunting boots? A: The thing is, this is very repetitive work. When someone shows you how to do it, you just do it again and again, and then someone will point out the mistakes. You correct those, and then they will guide you to achieve the right way of doing it.

They would teach me every month, step by step. Sometimes we repaired things, because that gives you an idea of how things are made. It takes three to five years to understand what you are doing, but then it will take your entire life to develop and improve those skills. Someone who is quite old will produce the best product after all those years of experience. Q: Now you have your own workshop. If we were to come to you for a pair of shoes, what should we expect? A: To make a pair of shoes or boots, you need to first measure the customer’s feet and then produce the “last,” which is a piece of wood made of, normally, Romanian beechwood. To make a pair of lasts, you measure the shape of the feet with a piece of paper, taking down the outside measure of the feet, then the joints, the instep, and heels. From those measurements, you carve the wood down with rasps, knives, and sandpaper to get the mold of the customer’s feet. The lasts take about two to three days [to make]. The customer tells you the style of shoe or boot that they want, so you make the upper. The upper involves the outside leather and the lining which goes inside the shoe or boot. First, you make the pattern for the last, and then you transfer that piece of paper onto the leather to cut out the pieces for making the upper. You then close those uppers. Uppers for a pair of shoes would take you one eight-hour day. For boots, it will take longer because it is a different process. Then you put everything together. Last is sewing the welts and stitching the soles. So we’re talking about nine days to make a pair, really. This is as long as it takes you to make a bespoke shoe or boot. The way I make shoes hasn’t changed for 400 to 500 years. It’s still the same methods, the same techniques. The only difference these days is that we have electric lights, which they didn’t have back in the day, and we sometimes use glue if you ask for rubber soles. Everything is done by hand, except the closing bit. Sometimes you can do it by hand, but it depends on the style. Ninety-nine percent of the uppers are closed by sewing machine. That’s the only machine that is involved in bespoke shoemaking.

s a child, Teasy Shiruo Sun loved to sit in her grandfather’s loft every day after school and watch him craft delightful objects out of wood. Like her grandfather, Teasy was a creative soul. As the only child in her family, she grew up playing and talking with herself, drawing manga, reading kung fu novels, and designing elaborate interactive game books to enjoy when she was alone. Now, she’s a children’s wear fashion designer, a career that perfectly combines her creativity and playfulness with her passion for design, illustration, and handicrafts. Her designs are not only wonderfully adorable but also thoughtful and heartfelt. For her recent senior thesis project at Parsons School of Design, Teasy designed a collection that reflects her childhood in China’s city of Shanghai, her cultural heritage, and her warm recollections of her grandfather, who passed away when she was in ninth grade. While wearing and interacting with the clothing in this collection, children will head on a journey with Teasy and her grandfather—quite literally, as cartoon renderings of them appear on many of the outfits— through various aspects of Shanghai’s culture. The clothing designs allow wearers to explore the city, from its traditional teas and desserts to its beautiful classical gardens. The collection’s name “Ah La” means “us”

in Shanghainese, a reference to Teasy and her grandfather, as well as to all the children who want to head on a trip to Shanghai through her collection. Teasy’s clothing designs are not only soft and comfortable for children to wear, but also interactive and fun to play with, incorporating elements like a felt pinball game that attaches to the garment or extra-long sleeves for children to fiddle around with. While volunteering with a nonprofit that helps children from low-income families, Teasy observed that the children “got excited about the little things.” So she incorporated many exciting details into her designs, in both the play outfits, which are made by needle felting, and the more functional outfits made by machine knitting. All the play outfits in her collection are like individual toys that children can play and interact with. To showcase Chinese tea culture, she created a garment with a marble maze game for kids to pick their favorite—osmanthus, fruit, or bubble tea. To spotlight Eight Treasure Rice, a delicious Chinese dessert associated with festivities and family reunions, Teasy created a pinball game that attaches to an apron-shaped top. The game illustrates the process of making this classic dessert, which has eight key ingredients or “treasures.” The most elaborate outfit in the collection is a play mat that doubles as a poncho sweater, showcasing locals going about their daily lives in Shanghai. Among the intricate details on the mat are people playing the board game Go, eating outdoors, selling books, buying snacks, and playing hopscotch. Teasy spent 300 hours creating the mat from scratch, meticulously needle felting the different colors together. With all her designs, Teasy made sure the clothing is comfortable and satisfying for children to wear—no frustrating zippers, itchy fabrics, or ill-fitting parts. “I want to make something that is actually cozy and practical for them, that they like to wear and touch,” she says. “Children’s wear has just one goal: make the child happy,” Teasy says. And that’s exactly what she has sought to achieve. It was a time-consuming and painstaking process—with lots of late nights and two dozen needles broken along the way—but the result is a beautiful homage to her beloved grandfather and the carefree joys of youth.

When Piotr first started dancing, it was just something he enjoyed, but as he delved deeper, he discovered a universe of boundless meaning rooted in five millennia of Chinese civilization. PERSEVERANCE Born and raised in Poland as the son of Chinese immigrants, Piotr flew across the Atlantic Ocean eight years ago to study classical Chinese dance at the prestigious Fei Tian Academy of the Arts in New York, which trains many of Shen Yun’s dancers. Back then, Piotr enjoyed dance, but he was far from flexible; he could barely even touch his toes. Etched in his memory are the times he had to practice leg splits, with two other boys holding his legs in place for as long as ten minutes. While most students were instructed to complete this agonizing stretching exercise once or twice a day, Piotr had to endure it three times every day. It was so excruciating that he tried to evade training by hiding in his dorm, only to be lectured by his teacher. Compounded with the training was his homesickness. Piotr missed his friends and his old life in Poland. Every day, he wanted to tell his parents he wanted to quit and return home. But while at Fei Tian, he was often given unique and precious opportunities to observe Shen Yun’s dancers in rehearsals. “Every time I finished watching them, I felt deeply moved,” he recalls. “Shen Yun’s performances gave me a joy I cannot describe. At the time, I thought to myself: I also want to become one of them.”

surface, like the techniques.” Instead, it was grasping and evoking the profound inner meaning of a dance. At the core of classical Chinese dance is the concept of bearing, when you channel your innermost spirit into all your movements. It’s the soul of the art, the essential ingredient that transforms movement into dance. “As part of the new generations who grew up in the West, we don’t have that deep of an understanding of Chinese culture. So our dancing is relatively straightforward. The inner meaning is not as profound. When you understand the habits or values of people from ancient China, the feelings evoked by your dancing are not the same,” Piotr says.

Although Piotr is ethnically Chinese, he initially spoke patchy Chinese and knew little about the essence of Chinese culture. So at Fei Tian, he honed his Chinese and immersed himself in the worldview of sages like Confucius who believed in virtuous conduct and self-cultivation. The more he studied, the deeper his love grew for both his cultural heritage and for dance. Soon he was selected to tour in practicum with Shen Yun, beginning a brilliant new chapter in his life. For each historical figure he plays in Shen Yun’s performances, Piotr pores over the character’s life story and his written works to understand every stage of the character’s life. He contemplates the character’s decisions in life and then questions himself: Under similar circumstances, how would I behave? If I would make different choices, why did he choose differently? For NTD Television’s 6th International Classical Chinese Dance Competition, Piotr played Li Bai, one of China’s most beloved poets. To perfect the character, he read dozens of Li Bai’s poems. Under the moonlight, he’d go for a stroll, listening to the music he picked for the dance and trying to experience Li Bai’s feelings. “When you’re dancing, you have to forget yourself. If you bring your own thinking, it will surely interfere with the character,” Piotr says. For his impeccable interpretation of Li Bai, Piotr was awarded the gold prize in the adult division. When asked which Chinese historical figure inspires him the most, Piotr replies: “There are simply too many. Too many.” A figure currently on his mind is the Duke of Zhou, who acted as regent for his young nephew, King Cheng. “He could have stolen the throne, but he didn’t. He just kept on helping [King Cheng] responsibly and diligently. At the time, the effort he put in for the country and the people—he truly put himself in the most humble position,” Piotr says. Piotr hopes to bring back such traditional values, like benevolence, righteousness, propriety, wisdom, and honesty. Beliefs in moral and spiritual elevation once permeated all spheres of Chinese society, but in the past century, they have been rejected and defiled by the communist

As part of Shen Yun, Piotr is rekindling the lost wisdom of the ancients, who celebrated virtue and endlessly strove to cultivate their character. “I came to understand Shen Yun was not only bringing joy to audiences. At the same time, it was reviving traditional Chinese culture,” he says. This is what fuels Piotr as he leads over a hundred tightly packed performances every year, always with the same dedication as if every show was his first. “We’re not doing this for ourselves, so our motivation is different,” Piotr says. AN ELEVATED ART To truly move audiences, Piotr knows that he can’t simply act the part. Both onstage and off, he has to embody the moral values Shen Yun presents. Like many of Shen Yun’s artists, Piotr is guided by the ancient Chinese spiritual discipline of Falun Dafa. Through abiding by the practice’s tenets of truthfulness, compassion, and tolerance, Piotr became a better, more considerate person. “When conflicts arise, we can calmly deal with them through cultivating ourselves,” he says. When he was young, Piotr frequently clashed with his older brother and was inconsiderate toward his parents. Falun Dafa’s principles have helped him become a kinder brother and more filial son, who now frequently dials home to check in with his parents. This spirit of kindness and thoughtfulness permeates every aspect of Shen Yun. When Shen Yun dancers have fleeting seconds to switch costumes in the dimly lit backstage area, Piotr says it’s not a matter of taking care of yourself and making sure you’re dressed. Instead, everyone helps each other, zipping up costumes and distributing props. Piotr’s eight years of immersion in performing classical Chinese dance have enriched his life in ways far beyond what he could have imagined when he first started dancing. “The most joyous part,” he says, is the time he spends every day with his fellow dancers. “Now, of

course, they’re my brothers,” Piotr says. “When someone walks over from afar, just from hearing the sound of his footsteps, I can tell who it is.” A veteran dancer now of classical Chinese dance, Piotr has become a team leader tasked with helping the newer male dancers. “Helping the newer dancers is like looking at my old self. I also went through all this before, and veteran dancers helped me. While helping them, I’m also improving myself,” he says. “I will see their shortcomings, and I can evaluate myself, like looking at a mirror.” Instead of forcing them to change or improve, he inspires with his example. “The easiest way is to do well yourself, so they can see these older brothers, how they behave,” he says. Someday, Piotr hopes to become a professional dance teacher, to guide aspiring children into the magnificent world of classical Chinese dance. An art of not only technical mastery but also ineffable meaning, classical Chinese dance has imbued Piotr’s life with purpose. or centuries, the Chinese have exalted and reveled in beautiful landscapes. Ancient China was a land where human and divine coexisted, where Daoist immortals wandered mist-shrouded mountains, and spiritual practitioners meditated in deep caves. The natural world, with its lofty mountain peaks, trickling streams, and rushing waterfalls, was not merely a source of beauty. It was a place where one could elevate the mind and the spirit and free oneself from the entanglements, follies, and excesses of human society. For both Confucians and Daoists, nature was a source of boundless wisdom. As Confucius said, “The wise delight in the sea. The humane delight in mountains.” And as the founder of Daoism, Laozi once said, “Man follows the Way of Earth; Earth follows the Way of Heaven; Heaven models the Way of Dao; the Dao models the Way of nature.” Landscapes permeated almost every realm of Chinese art, from paintings to porcelain vases. In the realm of painting, the Chinese have traditionally revered landscapes over all other painting styles. Within these vast landscapes, humans are depicted as minuscule figures—humble and reverent participants within the flow of larger forces. Dozens of such exquisite works of brush and ink are now on view at The Metropolitan Museum of Art’s exhibition Streams and Mountains without End: Landscape Traditions of China, which is now in the third of its four rotations. Its curator, Joseph Scheier-Dolberg, wanted to showcase the diversity of this seemingly monolithic and impenetrable art form by breaking it

One gallery showcases works emulating the works of old masters, one gallery evokes historical legends, and another gallery points to the intimate relationship between Chinese poetry and painting, with one often mirroring the other. The exhibit draws from The Met’s holdings of 2,000 works of painting and calligraphy, and also features a dozen private loans. Some of the paintings have not been exhibited at The Met in years, and one is appearing for the first time, a century after it was first acquired by The Met. Landscapes materialized as an independent genre in Chinese painting during the later years of the Tang Dynasty (619–906). Over the centuries, it has blossomed into a rich and multifaceted artistic tradition. The primary forms of landscape paintings are the hanging scroll, the handscroll, and the album leaf. The hanging scroll hangs on a wall, suspended by a silk string, while the handscroll is typically rolled up, stored in a box, and only intermittently unfurled to be appreciated. A handscroll could span the length of an entire room, but nonetheless, it was traditionally viewed with only one arm’s length visible at a time. Handscrolls invite viewers into the scene to stroll on the curved paths alongside the small figures, who are dwarfed by the surrounding landscapes. In The Met’s Views of Nanjing in the Four Seasons, a breathtaking 38-foot-long masterpiece, the painter Wei Zhike used the brush modes of various old masters to subtly bring viewers through the seasons and past famous sites in Nanjing. Much of Chinese landscape painting is filled with common symbols or allusions, recognizable nowadays only to those more familiar with this art form. Paintings inspired by the Orchid Pavilion Gathering often depict a group of scholars sitting along the banks of a stream. As the story went, at a spring purification ceremony in the fourth century, literati gathered to play

a drinking and poetry game. Cups of rice wine were floated down the winding stream, and whenever a cup stopped in front of someone, he had to drink the wine and spontaneously compose a poem. By the end of the day, the scholars composed over three dozen poems. Among the most common symbols in Chinese landscape painting is that of the recluse—typically rendered in paintings as a lone man surrounded by nature, fishing on a boat, reading in seclusion, or gazing at a waterfall. In Chinese history, it was common for scholar-officials to retreat from society and political life, especially in times of political turmoil or pervasive corruption in the declining years of a dynasty. Away from the dusty, human world, they cultivated themselves and lived a peaceful life devoted to scholarship and art. Painting in China was not the exclusive domain of professional artists. Beginning in the Song Dynasty (960–1279), a new class of scholar-officials also extensively studied the arts, including painting, poetry, music, and calligraphy. Confucians believed that art aided moral cultivation. The quintessential scholar epitomized both inner virtue and outward refinement, reflected in his artistic skill. Like other Chinese arts, Chinese painting emphasizes “yijing”—the feelings and meanings evoked by a work of art. Taken literally, yijing means “the realm of meaning.” It is an artistic space that exists beyond the physical lines and contours rendered on paper or silk. An artist’s brushstrokes were a window into his spirit, his emotions, and his worldview. It was an “imprint of the mind,” Scheier-Dolberg says. “Like calligraphy, this is an art that can really tell you about the person, and that can be truly, deeply expressive.” At first glance, a Chinese landscape painting may appear to be a simple collection of mountains, trees, and rocks. But hidden within it is likely something deeper, something intricate and profound. “It's one

eople say a good marriage is all about compromise, but this elegant home in Mountain Lakes, New Jersey, shows that compromise doesn’t necessarily mean settling for less. Crafted by KNOF Design, the home merges the contrasting preferences of a recently married couple—combining “her” love for classic French furniture with “his” for the modern lines and geometry of art deco—to create a chic yet timeless living space. For Susan Knof, founder and creative director of KNOF Design, this project was personal, as one of the clients also happens to be a longtime friend. “It was inspiring and special to know how significant the new home was for my friend, representing, as it does, the creation of a solid base for her new life chapter,” Susan said.

The house was designed not only with the couple in mind, but with consideration for the couple’s collective six children from their first marriages, as well as their newborn baby son. While several of the older children are fully grown and likely to visit only during holidays, key spaces—such as the dining and family rooms— had to be furnished for the possibility of all nine family members being present at the same time. Satisfying the couple’s differing tastes may at first appear to be a daunting task. For Susan, the solution was to “treat both influences with a light touch.” In order to ensure cohesion throughout the home, it was essential to avoid clashes in style and obviously themed looks. Instead, the two preferences are present in material choices, from slick mirrored furniture, to strong geometric shapes, to distressed timber finishes. The house is arranged so that it opens immediately into two formal rooms; upon entry, one faces the living room on the right, and the dining room on the left. As the two rooms are clearly visible from one another, Susan chose a palette of similar colors and materials to maintain flow and harmony. The rooms are tied together by strong blue tones, textured finishes and layering, as well as furniture with a distinctly luxurious feel. Stunning silk wallcoverings from Phillip Jeffries, metallic finishes in gold and brass, and dramatic chandelier lighting add touches of glamour without overwhelming the viewer. In addition to the two formal living spaces, a more casual and intimate family room looks out onto the back lawn. Designed to accommodate the entire family during leisure times, the room is centered around the impressive Poliform Bristol sofa designed by Jean-Marie Massaud. Tonal grays and creamy offwhites create a muted, neutral scheme. “The slightly rustic flavor to this room was a conscious decision,” Susan explained, “so that it would work with the stone-framed fireplace, which was inherited and deemed too costly to replace.” Playful accessories, such as the light-up marquee letter M (for the family surname), contribute to the room’s lively atmosphere. A movie-style standing light is a subtle nod to a family of film fanatics, offering a glimpse into their personality. In the master bedroom, mirrored accent furniture, like the chic bedside tables from Z Gallerie, give the room a distinct deco feel. However, Susan made sure to incorporate more classic pieces too, such as a vintage French side chair upholstered in velvet and a

A charming pink and purple colorway, combined with vintage French furniture, makes the young daughter’s room every little girl’s dream. Several sophisticated pieces embellish the room, such as the four-arm pewter chandelier with glass beads and faceted crystal. Nevertheless, perky touches, such as the flamingo-patterned wallpaper, keep the atmosphere childlike and playful. A zebra-patterned rug in light lavender and bright purple further accentuates the animal theme, and a quirky faux fur polar bear bean bag chair completes the look. When it comes to the younger son’s room, Susan didn’t shy away from bright colors, playful layers, and

fun patterns. The Spiderman-themed bedding accompanies the vintage superhero posters adorning the walls. The room contains a study nook, with custom bookshelves set into the recess. Colorful books complement the scheme of the room, serving both a decorative and practical purpose. For Susan, this project initially presented a logistical challenge, as she typically splits her work life between London and Miami. With additional ongoing projects in the U.K., Bulgaria, and West Africa, finding a balance and combating timezones proved difficult. Nevertheless, her experience and persistence prevailed. The final product is an impeccable combination of two entirely different concepts, giving her friend a magnificent start to a beautiful new chapter of her life. │69

t SingleThread, the menu does not alternate with the usual four seasons. Instead, it changes every five days. The chefs at SingleThread use a Japanese calendar with 72 distinct microseasons, so the ingredients are always at their peak. With two Michelin stars, SingleThread’s 11-course tasting menu is an ode to the beauty of California’s Sonoma wine country—its flavors, its terroir, and its year-round agricultural bounty. Co-owned by high school sweethearts Katina and Kyle Connaughton, SingleThread combines a 52-seat restaurant with a farm and a five-room inn. They’re united by a common thread of selfless hospitality, inspired by Katina and Kyle’s time in Japan. For years, Katina and Kyle had dreamed of opening their own restaurant and farm, with a few rooms for guests to stay overnight. Katina is an expert in farming and f lower arrangements, including the Japanese art of ikebana, while Kyle is an accomplished chef, who has cooked at top kitchens in California and Japan. His crowning achievement before SingleThread was leading the research and development of new dishes for the three-Michelin-starred restaurant The Fat Duck in England.

A few years ago, Kyle and Katina finally returned to California to create something of their own. They planted the crops, mended the soil, perfected every detail of their beautiful restaurant and inn, and in December 2016, they officially opened SingleThread, realizing their two-decade-long vision. A TASTE OF SONOMA Years ago, Kyle and Katina fell in love with Sonoma County because it was “one of the few places in the country where the focus is really on food and wine,” Kyle says. Sonoma’s climate and soil made it a place where they could successfully grow vegetables all year round. And it was home to a community of food-focused artisans, winemakers, and organic farmers. For Kyle, who loved to learn about new cultures through their cuisines, the best restaurant experience was always one “where you really, really get a deep sense of the place.” And that’s exactly what he and Katina sought to achieve with SingleThread. “When you are dining with us here tonight, you really experience what summer on our farm and in Sonoma County is like through the ingredients that we’re using, through the preparation of the dishes, even down to all the floral that’s in the restaurant,” Kyle says. Every day, Katina and her team of professional foragers gather fresh floral pieces to adorn the dining rooms, the hotel rooms, the rooftop gardens, and even the presentation of the dishes themselves. “The floral pieces, they really speak to what’s happening outside at that moment,” says Kyle.

FRESH FROM THE FARM Pushing the envelope of the farm-to-table trend, Katina and Kyle don’t just source locally. They built a farm of their own. Overseen by Katina and her team, SingleThread’s five-acre farm supplies 70 percent of the produce used in SingleThread’s kitchen, including vegetables, fruit, herbs, flowers, honey, eggs, and olive oil. At SingleThread, vegetables and fruits are complemented by the meats and seafoods, instead of the other way around. When crafting a dish, Kyle always chooses the produce first, based on what’s fresh and in-season, and picks the meat and seafood ingredients afterward. SingleThread’s menu is driven by the farm, “so we can always be using those products at the peak of their ripeness and the peak of their flavor,” Kyle says. “The morning it comes in, that day we’re serving it,” says Kyle.

ROOTED IN JAPAN Although Californian at heart, SingleThread cannot be separated from Katina and Kyle’s time in Japan. In fact, they both discovered their passions while in Japan. Kyle, at 9 years old, was captivated as he watched a sushi chef at a restaurant in Japan. Since then, he has immersed himself in Japanese culinary traditions, studying at the California Sushi Academy and the Sushi Chef Institute and interning in several Japanese kitchens in Los Angeles and western Japan. It was during the couple’s three-year stay in Hokkaido that Katina gained exposure to farming. Living in this agricultural center of Japan, she discovered a world she’d known little about while growing up in the suburbs of southern California. When Katina and Kyle designed SingleThread, they drew from wisdom they found in Japan, a country known for its exquisite craftsmanship and timeless traditions, in the culinary arts and beyond.

Everything in their restaurant and inn was artfully tailored for SingleThread. They asked a Kanagawa-based ceramic artist to create the custom coffee and tea service sets. The Nagatani Family of Iga, 8th- generation master potters in Japan, hand made all the earthenware pots. Even the tiles lining the walls were handmade—with clay from the couple’s farm. “Everything that we have here, we know where it came from, and who made it, and how they made it,” Kyle says. “They feel very at home here, rather than something that we just found and purchased.” Inspired by the Japanese spirit of selfless hospitality, Katina and Kyle hold themselves to similarly high standards. This Japanese ideal, known as “omotenashi,” has two readings: One translates to “not holding anything in your hand,” to serve with no motive but a genuine desire to serve; the other translates to “not showing your back.” In traditional Japanese culture, one never turns one’s back to the guests while serving them, even when exiting a room. More metaphorically, it means you don’t turn your back on a guest’s needs.

Every day, before the guests arrive, Kyle writes down individualized versions of the 11-course tasting menu for all four dozen guests based on each guest’s preferences and allergic restrictions. A night at SingleThread is not merely a dinner. It’s an experience imbued with warmth, courtesy, and sincerity. “We want them to not just enjoy great food,” Kyle says, but also “connect with the companions that they are dining with and relax and decompress and feel that they can switch off the outside pressures of the world for a few hours.” Katina and Kyle designed the kitchen to be completely visible, so guests can interact with the chefs and watch as their food is prepared. It may be a fine-dining restaurant, but the pair hope it will feel more relaxed, like “a dinner party in our home.” Just as they emphasize seasonality in their menu, Katina and Kyle know that their guests today will not be the same as the ones tomorrow. Every guest comes for a single, special night, “and that night is never going to happen again.”
