Outside the courtroom, Mollica spends a substantial part of her legal career advocating gender equality and women’s rights. She is also passionate about developing and coaching teens and belongs to the Teenage Empowerment Forum. "With this forum, I coach the youth and young adults to achieve their life goals academically,, personally or professionally." She is also a blogger for the Institute for African Women in Law, along with many other organisations.
Mollica has won numerous awards including but not limited to Top Performing Business Manager and Top Performing Women Leadership Awards. She featured on radio and on GlowTV on many topical and legal issues.
A day in the life A day in the life of Mollica as a CEO of a law firm is extremely busy and no two days are alike. Simply put her day involves closing deals and negotiating in heels. She is responsible for the strategies, she establishes, communicates, and enforces the values, policies, and procedures of the firm. She needs to create awareness and a positive image of the law firm by building relationships, maintaining credibility, providing information to the legal community, media, government, and the public. She is also instrumental with her team to generates revenue by attracting calibre clients and obtaining new referrals from existing and past clients. Coaching & empowerment
Mollica is extremely passionate about empowering the youth, especially young women. This triggered her to take her passion of coaching to the teens and the young adults. "I believe that the earlier we start coaching and
developing the youth, their chances of success into the big corporate commercial world is far more successful and further gives the ability to deal with life and professional challenges with confidence." The Teenage Empowerment Forum that Mollica is involved in, will be hosting an official
launch in Johannesburg in the month of October. "Coaching is a skill I learned and developed over 10 years ago when I noticed there is a need for it when I found myself informally coaching teenagers, women and businesses. I decided to make it formal and known so people could engage me
On a personal note
Dealing with the loss of a loved one has been one of Mollica’s biggest challenges. She lost her mum in July 2019. "She emulated everything a woman should stand for. She had grace,
resilience, studied after marriage and became an owner of her own business and a true entrepreneur. I have watched her weather storms in her life and always come out smiling and with more strength and vigour. She has
made me the person I am today. My dad gives me my strength to preserve and to keep shifting the goal post. He is my biggest supporter and fan apart from 2 successful sisters."

After the meeting, the dress can be dressed down by removing the jacket and slipping on a pair of takkies for a quick cocktail with the girls. While most people were baking bread and
practising their dance moves for Tik Tok videos when SA went into alert level 5, Umhlanga aesthetic doctor Parushinee Naidoo used the time to lock down a dream to create her own medical-grade skincare range.
Dr Naidoo, who is a graduate of the
Medical School of the University of Witwatersrand, relied on her extensive clinical experience to develop Skin Solutions Skincare, specifically formulated for South African skins. The Covid-19 pandemic, the ensuing financial impact and the emergence of new skin-related concerns associated with wearing a face mask for prolonged periods, were all contributing factors to producing this range that was launched in September. The range comprises a Rejuvenating Cleansing Gel, Sheer Hydration Lotion, Intensive Moisturising Cream, Clarifying Serum and Cellular Rejuvenating Complex.
Common skin conditions “Most of the common conditions that I treat include pigmentation, acne, dehydrated and sun-damaged skin. The Skin Solutions range is dedicated to providing medicalgrade products to help treat these
conditions. Patients were looking for more reasonably priced options when compared to the current medical-grade
skincare. The increased number of patients presenting with “Mask-ne” (acne associated with wearing a mask), required

INGREDIENTS 400 g pasta 3 large chicken breasts - cut into cubes 6 rashers cooked bacon - chopped 1 large onion - peeled and chopped1 large 1 chopped red and yellow bell pepper 1 pinch of salt and pepper 2 cloves garlic - peeled and minced 1 tbsp tomato puree1 ½ tsp dried oregano ½ tsp dried thyme 800 g tinned chopped tomatoes 120 ml double (heavy) cream 100 g fresh baby spinach 100 g cheddar cheese - grated 100 g mozzarella - grated
METHOD Preheat the oven to 190c/375f. Boil a large pan of water and cook the pasta for 1 minute less than recommended on the pack. Drain. Whilst the pasta is cooking, heat
the oil on a medium heat, in a large frying pan. Add the chicken, and cook until just sealed - about
5 minutes. Add the onion and cook for a further 3-4 minutes until the onion is softened. Add the chopped peppers, salt, pepper, garlic, tomato puree, oregano and thyme. Stir and cook for 2-3 minutes.
Stir in the tinned tomatoes and cream, bring to a gentle
bubble, then add the pasta, spinach and cooked bacon. Stir everything together, then transfer to a large baking dish.' Top with the cheddar and mozzarella, and place in the oven for 20-25 minutes, until the cheese is golden brown. Take out of the oven and top with parsley before serving.
CHEESY CHICKEN AND BACON PASTA BAKE
BEEF STROGANOFF
INGREDIENTS 2 tbsp olive oil 1 tbsp unsalted butter 1 thinly sliced onion 200 g baby mushrooms 400 g strips fillet or ribeye steak 1/4 tsp salt and 1/4 tsp black pepper 1 cup double (heavy) cream 160 ml sour cream Cooked pasta to serve with
METHOD Heat one tbsp of the oil and butter in a large frying pan (skillet) over a medium-high heat, until the butter starts to foam. Add the onion, and cook for 5
minutes, stirring often, until the onion starts to soften. Add the mushrooms and cook for a further 3-4 minutes, stirring often, until lightly browned. Transfer the contents of the pan to a bowl. Place the pan back over the heat and turn the heat up to high.
Drizzle the strips of steak with the remaining 1 tbsp of oil and sprinkle on the salt and pepper.
Place the steak in the pan in a single layer and cook for 1 minute, then turn the steak strips over and cook for a further 30 seconds. Add the onions
and mushrooms back to the pan and turn the pan down a medium heat. Pour in the double (heavy) cream, followed by the sour cream. Stir and slowly heat through until the sauce is hot and the sauce at the edge of the pan is just starting to bubble slightly (don't let it boil). Turn off the heat. Spoon the stroganoff over cooked pasta and sprinkle on some paprika before serving.
CHICKEN AND RED PEPPER PASTA METHOD Heat a large frying pan and spray with the fry-light. Add in the chicken and cook for 8-10 minutes until the outside of the chicken starts to brown (if you don't move it around to much it will brown a lot quicker).
Add in the onion and cook for a further 5 minutes until softened. Add in the garlic and red pepper and cook for 2 more minutes, then add in the mushrooms. Crumble on the stock cube (or bouillon), add the tomato puree and oregano and stir to combine. Add the tinned tomatoes, stir and bring to a gentle simmer. Simmer for 15-20 minutes. Whilst the sauce is simmering, fill a large pan with boiling water from the kettle and add the spaghetti. Cook for 10-12 minutes until al dente.
Drain the spaghetti then divide between 4 bowls. Top with the chicken and sauce and sprinkle on the basil leaves and chilli flakes before serving.

The Pole Room
T
he Pole Room is one of Kwa-Zulu Natal's first pole dancing studios going on 11 years running. Based in waterfall Durban, it was originally founded by Jessica Dawson. Simone Amber Hall was one of Jessica's students who had a passion for pole from the first lesson she started and when Jess decided to sell the studio in 2017 it was a no brainer for Simone to take over. The Pole Room offers Pole Fitness classes, flexibility and occasional hoop and Ariel lyra. The Pole Room welcomes students of all shapes, sizes, ages and strength. "At the pole room we take pride in helping our students achieve their pole goals big or small. It is our mission to help our students improve, become confident in their bodies and ultimately build a family amongst all the students."

Smone's passion for pole started in 2011 when she attended her first pole class seeing the other ladies touching the roof and spinning around so elegantly – this made her want to fly. “I love pole dancing and how it has grown confidence in myself and my body. I want every woman to feel like that: Strong, powerful and to love themselves” In 2019 Simone fell pregnant and had her beautiful baby girl Zoey which has been her biggest blessing. However ,having said that she was unable to teach all the required classes in the evening as her baby needed her. She felt she was not able
to give the same energy into the studio as she did before. After 9 years in the industry, 6 years of teaching and 3 years of owning the studio, Simone decided to sell. Chalene was apart of the studio when the studio was called body design studios and taught beginner classes – she took time off teaching to focus on her own training for pole. “I believe chalene is the perfect person to take over the studio. When she agreed I couldn’t be more ecstatic. I can already see that she is going to make the studio a huge success with all the plans she has for the dancers and the studio as a whole” Simone.

WHY YOU NEED SUNSCREEN – Catherine Strydom
W
earing sunscreen daily has become a hot topic, especially with South Africa having one of the highest rates of skin cancer in the world. Sun protection is not only about keeping your skin looking young and beautiful; it is about taking steps to prevent developing life-threatening diseases in the future. Therefore, we do the right thing and apply sunscreen when we spending the day outdoors and next to the pool, but is that truly enough?
Sunscreen protects us from the sun's harmful ultraviolet rays (UVR): UVA and UVB. UVB rays are the ones most associated with sunburns and UVA rays are associated with
skin aging. UVA rays have the ability to pass through glass, which means 34 | Ella - October 2020
your skin is exposed to them while you are driving and standing or sitting in front of windows with the blinds open. Sunscreen in turn creates a shield that prevents UVA and UVB rays from reaching the skin and keeps it safe from the harmful effects of Ultraviolet Radiation (UVR). Dermatologist, Dr Tarryn Jacobs had the following to say concerning the importance of wearing sunscreen from a professional point of view and added a few other important points to take into consideration. “Sunscreen use is an essential tool to prevent skin cancer, both melanoma and non-melanoma types. Research shows that daily sunscreen use can reduce your risk of getting melanoma in half.
If that is not enough motivation, keep in mind that aging of the skin is mainly due to the effect of Ultraviolet radiation (UVR) and that sunscreen is the most essential “antiaging” ingredient to slow down photo aging. UVB rays causing sunburns and uneven pigmentation and
UVA and infrared radiation penetrate more deeply and damage the skin's
collagen, resulting in wrinkles and sagging skin. Unfortunately, Sunscreen cannot block out all UVR and need to be used in conjunction with protective clothing and sun-seeking behaviour!” We also often forget there are other areas besides our face that requires daily sun protection. Dr Tarryn adds, “The lips are more prone to skin cancers because the skin is so thin. It is important to apply an SPF to prevent this.” Ultimately, applying sunscreen protects
our skin against sunburn and reduces the appearance of sun damage, dark spots, sagging or leathery skin, and wrinkles. Overall, assisting the skin to maintain a more even skin tone. So, remember areas like your ears, lips, hands and skin close to the edges of our clothing like our décolleté when applying your daily SPF.
