hello Green piece This year, why not take a more natural approach to your festive decorating and fill your home with greenery? For all our foliage styling ideas, flip to p104.
HOW WAS 2020 FOR YOU? We all have such different stories. Some have done it really tough and are looking forward to better times. Others have relished in staying closer to home (or literally at home) amid travel restrictions and periods of social distancing. Thankfully, I tend to have an optimistic view on life, so though my own family has experienced ups and downs, I’ve tried to make the most of the cards we’ve been dealt. This festive season I intend to focus on the good and wave off the bad. Every Christmas I decorate my home. It makes me so happy to hang wreaths, light spice-scented candles and get out the red velvet cushions. These are simple things that bring me comfort and joy. And that’s the theme of this issue: easy and elegant ways to celebrate the holidays, the end of one year and the beginning of a new chapter. We could all do with a little more nature in our lives and our story on greenery covers everything from garlands to table settings (p104). You can gather foliage from your own garden, head to the florist or style with fresh produce from your local grocer or supermarket. If you’re sharing the food prep duties this year, why not offer to bring dessert? There are some sensational puddings, cakes and tarts from page 114. And when it comes to gifts, you’re bound to find the perfect present for each of your loved ones in our guide on page 72. Perhaps you’ll find something for yourself! Whether you’re celebrating with your family and friends in person or virtually this year, light a candle, sip a cocktail and exhale. A new year is coming and it’s full of promise.

With its white palette, open plan spaces and materials inspired by the Australian coast, this new home is a beautiful reflection of the family who live here and the perfect backdrop for a colourful ’70s style Christmas photoshoot Pretty bright Rhiannon Swan’s recently built family home is a cool and contemporary coastal retreat and for this Christmas photoshoot she let the real living team experiment with colourful, characterful pieces. Take the living room, which features a sofa from Instagram store My Verona, a Sarah Ellison coffee table, a Tigmi Trading rug and cushions from Stylecraft and Tara Dennis Store. Design objects from Makers’ Mrkt are displayed on the coffee table. Atop the white Muuto side table from Luumo is a Maison Balzac tumbler, a Dinosaur Designs coaster and a candle and brass holder by Black Blaze. EVERY NOW AND THEN, we come across a beautiful home that effortlessly lends itself to several interiors looks. One such place is this family residence on Sydney’s Northern Beaches, home to Rhiannon Swan, her husband Cameron and their three young daughters. This recently-built home is a modern interpretation of the dream Australian beach house, and it’s a fitting reflection of Rhiannon’s contemporary coastal style. For this festive photoshoot she let our stylists go wild with an on-trend ’70s look, and amid the timeless interiors it works. A FAMILY AFFAIR Aesthetics aside, what makes the design of this home feel so natural and intuitive is the team behind it – the architect Brianna Swan is Rhiannon’s sister-in-law and the builder Keegan Mitchell of Blucore Construction is Brianna’s brother. “It is a very special thing to be able to build your own home and have your sister-in-law design it,” Rhiannon says. “We’re lucky we had people we know and trust throughout the build. Everything was special, from the day the original house was knocked down to the day we moved in. Our third daughter was born during this time!” The brief began with a few photos of houses that resonated with the couple. “When Brianna sent the first mock up, we didn’t want to change a thing!” A COOL CHANGE From the beginning, Rhiannon loved the idea of a modern beach house. “We really wanted the front to look original and the back to be modern and functional,” she says of the 1950s-style front facade. Open plan living spaces and high ceilings breathe fresh air and instill a sense of flow throughout, as does the white palette. “We chose mostly white because then you can change your interiors and add or take away colour at any time,” she explains. Some materials were chosen primarily for their practicality like the concrete flooring in the living area, which is low-maintenance and family-friendly. Texture was also essential – Rhiannon says the shutter-front kitchen cupboards and master robe doors “were a must”. LOCAL ENVIRONMENT Not only does this home nod to the couple’s creative family ties, it’s a reflection of their surrounds. For example, Rhiannon first saw the bathroom wall tiles on her favourite walk from Queenscliff to Shelly Beach. “The public bathrooms along the coastal walk had just been rebuilt. I loved the tiles so much I called the council and they told me where they sourced them.” Similarly, she discovered the floor tiles on Instagram and called all the local tile shops until she found the supplier. “We’re quick decision makers and know what we like. If we loved it, we went for it and hoped for the best!” R Sweet style The dining table is set with an assortment of Mud Australia dinnerware and Bastile & Sons napkins. The pastel scheme is accented with brass Black Blaze candleholders, Dinosaur Designs vases and Krof cutlery. Colour palette is key. Swap a red and green scheme for shades inspired by the beach at dusk and dawn, and add soft shades of olive, moss and seagrass.

Instead of making a Christmas tree the hero, why not make a potted palm the feature? All it will need is a lightweight paper garland and a sprinkle of tinsel.

Burning brightly In Justine Lacoste-Hay de Slade’s recently restored early 19th century home, festive celebrations revolve around the dining table, which was a secondhand find. Above the wooden table are ceramic pendants made by Justine for her design studio Épure. A wreath of dried flowers and a garland of fairy lights adorn a secondhand ladder. Combined with the flickering fire and antique candlesticks, the result is utterly enchanting. A

FOR CERAMICIST JUSTINE LACOSTE-HAY DE SLADE, “beauty lies in imperfections”, and this wabi-sabi philosophy beautifully sums up her low-key approach to festive decorating. Sat in the pastoral Haute Saintonge region of France, Justine’s rustic 19th century studio and home, where she lives with her husband Jean and daughter Alma, is an enchanting place to be at Christmas time, and all it takes is embracing those imperfections. Take the Christmas tree, which Justine decorates with Alma’s help. “I confess the tree decorations are not harmonious,” she says. “Alma is three so the ornaments are mostly at the bottom!” Christmas morning is an equally relaxed affair – you’ll find the family of three unwrapping their presents in front of the fireplace, “everybody in pyjamas and photos without make-up!”. SHINE SO BRIGHT By mid-November the festive styling is in full swing. “Our Christmas style is very simple and pure in mostly white and gold tones with lots of candles and light garlands,” Justine says. Delicate festoon lights are strung up inside and out, and candles are displayed in antique brass holders and candlesticks from Épure, the couple’s ceramics studio. Dried flowers and rustic wreaths replace classic bright and bushy Christmas foliage, while the dining table is set with Épure pieces and an assortment of crockery and glassware. “Our approach to decorating is instinctive and a combination of the eclectic things we love,” Justine explains. “But one thing is for sure: we need to live in a soothing atmosphere without visual pollution.” TIMELESS TRADITIONS The simple yet poetically put-together table setting is an elegant backdrop for the main event – Christmas lunch. “The biggest French tradition is to spend all day at the table eating, drinking and talking about cooking!” Justine laughs. While Christmas Eve is an intimate occasion with Champagne and verrine dishes, Justine will spend the 25th surrounded by extended family. “It will be oysters, sea bass in a salt crust, pumpkin puree and frosted mandarins,” Justine says of this year’s menu. Cheeses, chocolate and a yule log will be served for dessert, and “everything is homemade; everyone prepares one element of the meal”. PEACE ON EARTH Justine’s recently restored home and relaxed surroundings reflect her humble attitude and authentic interior style, and you won’t find anything extravagant on her wishlist – she prefers surprises and would rather shop at flea markets than buy brand new. This Christmas, Justine simply hopes to continue doing what she loves and for us all to take care of our home here on earth. Precious vessels On the coffee table is a Moroccan teapot from La Maison Poétique and ceramic Épure vases and cups. Old soul Justine and Jean respectfully renovated their historic home and preserved as many of the original elements as possible, including the fireplaces, tiles and beams (opposite). Happy golden days... In this bright and blissful family home in Sydney’s Northern Beaches, the holiday season has arrived when festive pop tunes are playing, gingerbread is baking and the kids are making Christmas craft
Halo effect Homeowner and ceramicist Sophie Nolan describes her coastal family home as “bright, light and airy, yet still cosy”, and she maintains this blissful vibe come Christmas. “It has a peaceful feeI, which balances out the sometimes hectic energy of family life!” Sophie says. “I like to keep it clutter-free so it’s easy to tidy – cleaning is not my favourite pastime, I much prefer to spend my spare time making ceramics.” On this Sarah Ellison console are two angelic brass candleholders from Great Dane, a spotted bowl from Maison Balzac and Sophie’s own ceramic designs. The artwork on the wall is Moon Light by Justin Maurice Scivetti from Saint Cloche; the presents on the floor are wrapped in paper from Vandoros. A

TO QUOTE THE HOLIDAY MOVIE Love Actually, you’ll find that love actually is all around Sophie Nolan’s breezy Northern Beaches home. From the notes her daughters Lily, Isla and Elke leave one another in the pockets of an advent calendar to the gingerbread shortbread they bake together every year, Christmas is a time for heartfelt gestures, family activities and craft projects. “Christmas is my favourite time of year, so I like to create a little fun festive mood in the house,” Sophie says. “We take turns to read a message from the calendar every day. It could be each family member sharing something they love about you, or a foot massage voucher!” FROM THE ART Decorations start going up on the first day of December and Sophie says she likes to add festive touches such as white bunting and delicate twinkling lights rather than transform her entire home. “I favour a mostly neutral palette as too much colour, pattern and clutter can feel a little hectic. I get inspo from real living and I don’t mind getting my craft on,” she adds. “Last year, I bought a roll of Ikea paper as gift wrap and told my girls to go crazy with paints.” There are two Christmas trees in the house – a real one covered in tiny wire lights and white ornaments for upstairs, while a foraged branch from the nearby bushland is set up in the downstairs family room. This twiggy tree is decorated with colourful ornaments Sophie has collected over time. She looks for new ones at Mamapapa store and Country Road, but her most precious decorations are those made by her daughters. SUMMER LOVE Being a ceramicist, Sophie says the lead-up to Christmas is her busiest time, so she and her husband Pete take two weeks off to “chill and recharge”, which involves a family beach holiday on the NSW coast. The couple usually host a big party with friends and family before Christmas Day, and Sophie insists her approach to entertaining is low-maintenance. “Ideally, I have as much done as possible before guests arrive so I can relax and enjoy myself. Many of our friends have young families so we all help out.” It’s a quintessentially Australian affair with fresh prawns, a side of salmon, crispy potatoes and salads, and for dessert there’s always “mango and mascarpone trifle or pavlova, and of course Champagne and rosé,” she says. “We have leftovers for days.” R Family affair For Sophie, Pete and their daughters, pictured here with Rufus, it wouldn’t be Christmas without putting on their favourite movies and music. “The Grinch movies are popular with my girls and Love Actually is always a feel-good choice,” Sophie says. “And it’s fun to sing along to Last Christmas by Wham! and Mariah Carey.” The family are gathered on MCM House armchairs. The coffee table is a custom Euro Marble design, the framed mirror is from Kim Soo Home and the Beni Ourain rug is from Paddo to Palmy. Visual feast Sophie enjoys styling the table (opposite) for Christmas lunch. “Last year we had a black tablecloth and a huge display of native greenery and flowering gums,” she says. The chairs are Thonet, the Ay Illuminate ceiling pendant is from Spence & Lyda and the artwork is Melinda Marshman’s Pool No. 3 from Saint Cloche. On the dining table is a Pulp Creative Paper garland, glassware from The Lost+Found Department, Mud plates and bowls, Studio Dokola tumblers, a brass candleholder from Black Blaze, Krof cutlery and ceramics by Sophie.

The ceramics are Sophie’s, the candle is by Black Blaze and the soap and dish are both from The Lost+Found Department. hung up on storage One of the easiest ways to add storage to your space is to use the walls – hooks, rails and knobs are all perfect. But if you’re like me, chances are you’re always looking for a way to make a project easier and quicker without sacrificing style. Enter Selleys Hold Up, a DIY-friendly adhesive that makes bonding and sticking tasks so much easier. You can forget screws, nails or clamps – even on vertical surfaces! In this project, I’ll be showing you how to create your own peg rail, with quick and easy installation thanks to this fantastic adhesive.

Materials (not including tools) Selleys Hold Up; Selleys Aquadhere Interior PVA glue; a timber plank measuring 1.2m long; 7 pieces of 1.6cm diameter wood dowel, 6cm in length
1 Make your mark

Using a ruler and a pencil, mark where you want your pegs to go. We spaced ours about 10cm apart.
2 Drill down Using a drill and spade bit that matches the size of your dowel, drill the holes where marked, making sure not to drill all the way through the wood.
3 Start sticking Take your wooden dowels and apply some Selleys Aquadhere Interior PVA glue into the drill holes. Let dry for 12 hours.

4 Careful coverage Once the pegs have dried, it’s time to secure the rail to the wall. Turn the peg rail over and apply Selleys Hold Up adhesive to the back of it, in long vertical strips, spaced about 5cm apart. Make sure you cover the back end to end this way.
5 Fix it up

If mounting the peg rail to a painted surface, check the paint is not flaky, peeling or loose, or the final bond may be compromised. Ensuring it’s level, press the peg rail onto the wall in your chosen position. The adhesive stays tacky for 15 minutes, which gives you time to adjust the rail.
6 Get hanging Leave the adhesive to dry for at least 48 hours and then your peg rail is ready for use. A

pink grapefruit sponge with strawberries and sesame frosting Serves 10-12 Prep time 40 mins Cooking time 30 mins “Given that the healing power of cake is widely proven to transcend many other forms of therapy, it could be argued that a sponge cake is the ultimate exhibition of nurture,” Nadine says. “To bake for someone or be baked for is a gift from the heart that we all crave.” 225g very soft unsalted butter, plus extra for greasing 225g caster sugar 1 tsp vanilla bean paste 3 eggs, lightly beaten 200g (1¼ cups) self-raising flour, plus extra for dusting 25g cornflour 1 scant tsp baking powder 50ml milk
finely grated zest of 2 pink grapefruit, plus extra to serve, and juice of ½ grapefruit 500g strawberries, hulled 2 tbsp caster sugar SESAME FROSTING 400g cream cheese, softened 50g unsalted butter, softened 50g pure icing sugar, sifted 1 tbsp honey 1 tbsp hulled tahini
Preheat oven to 180°C. Grease two 22cm-diameter cake tins, line with baking paper, then grease paper and dust with flour. Beat butter, sugar and vanilla in an electric mixer fitted with the paddle attachment until pale and fluffy. Add egg, a little at a time and scraping down sides of bowl occasionally, until incorporated. 2 Combine flour, cornflour and baking powder and sift twice. With mixer on low, add flour mixture in three batches, alternating with milk, until just combined. Turn off mixer, scrape down sides of bowl and the paddle, then beat on high for 2 seconds to aerate batter. Add grapefruit zest and juice, then stir to combine, scraping the base of the bowl to grab any butter that hasn’t been incorporated. Divide batter between tins and smooth tops. Bake for 20 minutes, then reduce temperature to 140°C and bake until centre of cakes spring back when lightly pressed (5-10 minutes). Cool in tins before turning out. 3 Combine sugar and strawberries in a heatproof bowl, tossing to ensure they’re coated. Wrap tightly with plastic wrap, then place over a saucepan of simmering water (don’t let the bowl touch the water) and cook until strawberries are just starting to soften (15-20 minutes). Cool in bowl, still set over pan but off the heat. Strain juices into a separate saucepan and reduce over medium-high heat until syrupy (1-2 minutes), then add strawberries to syrup. SESAME FROSTING 4 Beat ingredients in an electric mixer fitted with a paddle attachment on low speed until smooth. Increase to medium speed and beat, scraping sides and base of bowl occasionally, until fluffy. Transfer to a piping bag without a nozzle. 4 Assemble by placing one sponge on a plate. Pipe over half the frosting and top with half the strawberries (avoid adding too much syrup). Sandwich with remaining sponge, and finish with remaining frosting and strawberries. Drizzle with extra syrup and top with extra grapefruit zest to serve. This cake is best eaten on the day it is baked. A 1

“In medieval Saxony, stollen was made with oil because the use of butter during Advent season was considered so provocative,” Nadine says. “Five popes died before only the prince’s family was finally granted consent to use butter. When Saxony became Protestant, the ban was lifted altogether.” Combine cherries, almonds, candied peel, citrus zests and Marsala in a non-reactive bowl. Cover and leave to macerate, turning occasionally (2 hours). MARZIPAN FILLING 2 Process ingredients in a food processor to a paste. Divide among 2 small bowls and freeze until firm (2 hours). Roll each piece into a 20cm cylinder, wrap in plastic and return to freezer. 3 Stir yeast, 200ml milk and 20g sugar in a bowl until well combined, then whisk in 200g flour. Cover bowl with plastic wrap and leave at room temperature until doubled in size (1 hour). 4 Warm remaining milk in a small saucepan until tepid. Pour into an electric mixer fitted with the dough hook, add yeast mixture, vanilla, spices, eggs, remaining sugar and flour, and 2 tsp fine salt. Mix slowly to combine into a shaggy dough, then increase speed and knead to develop elasticity (5 minutes; dough may be sticky but don’t add extra flour). With the motor running, add butter little by little until dough is glossy. Cover and rest for 5 minutes, then turn out onto a clean work surface and flatten slightly. Scatter fruit mixture evenly over dough, and fold dough over to encase fruit. Continue folding and kneading until fruit is well distributed. Transfer to a lightly oiled bowl, cover with a tea towel and leave at room temperature until doubled in size (1 hour). 5 Turn out dough onto a lightly floured surface and divide in half. Roll each half into a 25cm log and flatten to 2cm thick to form a 12cm x 25cm rectangle. Rest, covered with a tea towel, for 10 minutes. Place a chilled marzipan cylinder along the centre of each piece of dough, brush edges of dough with water, then fold dough over to encase marzipan, pinching edges to seal and forming oval shapes. Grease two baking trays and line with baking paper, then place stollens on trays, seam-side down, and brush with a quarter of the melted butter. Cover loosely with plastic wrap (or alternative) and stand until 1½ times their size (1 hour). 6 Preheat oven to 200°C. Remove wrap from stollens, brush with another quarter of the melted butter and bake, swapping trays halfway, until golden (40 minutes). Remove from oven and pierce small holes over the loaves with a skewer. Brush remaining melted butter and dust with icing sugar to cover. Stollen can be served immediately, but are best if left for at least 2 days or preferably a couple of weeks in an airtight container in a cool place. 1

Preheat oven to 180°C. Grease 6 x 250ml (1 cup) bundt tins and coat with caster sugar. Beat butter, sugar and vanilla in an electric mixer fitted with the paddle attachment until pale and fluffy. Scrape down sides of bowl and continue beating until all butter is incorporated. Gradually add egg, a trickle at a time, beating thoroughly between additions. Fold in desiccated coconut and coconut flakes, then a third of the flour, then a third of the coconut cream. Continue folding in flour and coconut cream, alternating until combined. Divide the batter among bundt tins, filling them to 1cm below the rim. Tap tins on bench to level filling, then bake until tops bounce back when pressed (18-20 minutes). Cool in tins for 20 minutes then turn out onto a wire rack to cool completely. YOGHURT FILLING 2 Beat cream cheese, butter and vanilla in an electric mixer fitted with the paddle attachment until smooth and light, then fold through coconut yoghurt. 3 Fill bundt holes with yoghurt filling, top each with a wedge of mango and a spoonful of passionfruit pulp, dust with icing sugar and top with lime zest to serve. Bundts can be served at room temperature, but will keep for 1 day, covered in the fridge. Fill and top with fruit before serving. 1

blackberry and chocolate meringue roulade Serves 10 Prep time 60 mins Cooking time 35 mins “French chocolate sponge is a revelation because it is both flourless and keeps for a day or so in the fridge,” Nadine reveals. “Admittedly it needs cream or a mousse to marry with, but it’s so light that it will spoil you for other sponges for life.” 140g mascarpone 140g crème fraîche 70ml pouring cream 1 tsp vanilla bean paste Cacao nibs, to serve BLACKBERRY COMPOTE 250g blackberries 70g caster sugar Juice of 1 lime
FRENCH CHOCOLATE SPONGE 4 egg yolks 200g pure icing sugar, sifted 5 egg whites 75g Dutch-process cocoa, sifted, plus extra for dusting CHOCOLATE MERINGUE 6 egg whites 280g caster sugar 100g Dutch-process cocoa, sifted 1 tsp cornflour
Preheat oven to 170°C. Grease two 25cm x 35cm Swiss roll tins and line base and sides with baking paper. BLACKBERRY COMPOTE 2 Bring ingredients to the boil in a medium saucepan over a medium heat, and stir occasionally until thickened (12-18 minutes). Remove from heat and leave to cool. FRENCH CHOCOLATE SPONGE 3 Whisk egg yolks and half the icing sugar in an electric mixer on high speed until pale and thick (4-5 minutes). Transfer to a large bowl, and clean and dry mixer thoroughly. Add egg white and a pinch of salt to electric mixer, and whisk on high speed until soft ribbons start to form. With the motor running, slowly add remaining icing sugar until incorporated, and whisk until thick and glossy. Gently fold a third of the egg white through the yolk mixture, followed by a third of the cocoa. Continue to fold in egg white and cocoa, alternating between them, until combined. Pour batter into one of the tins, smoothing evenly into corners. Bake until sponge springs back when pressed lightly (10 minutes). Cool. CHOCOLATE MERINGUE 4 Whisk egg white and a pinch of salt in a clean, dry electric mixer to soft peaks. Gradually add sugar and beat until thick and glossy (8-10 minutes). Sift cocoa and cornflour over and gently fold in with a spatula until no streaks remain. Spread meringue into second tin, reduce oven to 160°C and bake until set (15 minutes). Cool in tin (5 minutes), then invert onto a sheet of baking paper dusted with cocoa set on a large sheet of plastic wrap. Peel away paper, then invert sponge onto meringue and peel away paper. 5 Whisk mascarpone, crème fraîche, cream and vanilla in a bowl to soft peaks and spread evenly over sponge with a spatula. Drain compote a little and spoon evenly over mascarpone mixture. Rolling away from you and with the long side facing you, using the paper and plastic wrap to roll and lift over, wrap roulade into a log shape, then gently twist ends of the plastic wrap to secure. Refrigerate to firm (1½-2 hours).Scatter roulade with cacao nibs, and slice to serve. 1

eat trifle with madeleines, lemon curd and peaches Makes 6-8 Prep time 60 mins Cooking time 55 mins “My go-to Christmas Day dessert has always been trifle,” Ingram explains. “Tiramisu Natalizio, the Italian dessert, uses madeleines soaked in rum, and zabaglione, and has inspired the use of madeleines here.” Begin this recipe at least a day ahead to make the curd and allow the trifle to rest. 500g firm ricotta 350g pouring cream, whisked to soft peaks 100ml white rum, Cointreau or peach liqueur 100ml milk Candied clementine or cedro, and edible flowers (optional) to decorate LEMON CURD 3 eggs 1 egg yolk 160g caster sugar Finely grated zest of 2 lemons, plus 150ml lemon juice (from 3-4 lemons) 160g softened unsalted butter, diced MADELEINES 110g unsalted butter, plus extra, melted, for greasing 1 tbsp honey Finely grated zest of 1 lemon 1 tsp vanilla extract 125ml (½ cup) beaten eggs (about 3 small eggs) 90g caster sugar 110g plain flour, plus extra for dusting 1 tsp baking powder ROASTED PEACHES 6 ripe peaches, halved and stones removed Juice of 1 orange 100g caster sugar Scraped seeds of 1 vanilla bean
LEMON CURD 1 Whisk eggs, egg yolk and sugar in a bowl to just combine. Add lemon zest and juice and whisk to combine. Place bowl over a saucepan of barely simmering water (don’t let bowl touch water), and cook, whisking every minute, until curd is the consistency of thick whipped cream (12-16 minutes). Remove from heat and cool until just tepid. Add butter, a little at a time, whisking to incorporate between additions. Cover directly with plastic wrap and refrigerate to set (4 hours). MADELEINES 2 Grease a 12-hole large madeleine tin and dust with flour, shaking out excess. Heat butter, honey, lemon zest and vanilla extract in a small saucepan over low heat until butter melts. Cool. Meanwhile, gently whisk eggs, sugar and a pinch of salt in a bowl, sift in flour and baking powder, and continue to whisk gently until a smooth batter. Add cooled butter mixture and stir to combine well. Refrigerate batter for 2 hours to rest. ROASTED PEACHES 3 Preheat oven to 180°C. Place peaches cut-side up on a large baking tray and drizzle with orange juice. Combine sugar and vanilla, then sprinkle over fruit. Roast peaches, turning halfway, until softened (30-35 minutes). Remove from oven, cool briefly, then when cool enough to handle, peel (discard skins). 4 Increase oven to 190°C. Fill madeleine moulds to 5mm from the top, reserving remaining batter for another batch. Bake until tops have formed humps and spring back when pressed lightly (9-10 minutes). Remove from oven and immediately turn out onto a wire rack. Cool tray, then grease and flour as before, and bake another batch with remaining batter (there’ll be enough for about 6). 5 Assemble trifle by whisking ricotta until smooth, then fold in whipped cream and cooled lemon curd. Combine rum and milk in a bowl, add madeleines and turn briefly to soak. Place 6 madeleines in the base of a 3.5-litre glass trifle bowl, spoon over a quarter of the lemon-curd cream, place 4 peach halves on top and drizzle with a third of the peach syrup. Repeat layering, finishing with a layer of cream. Top with candied fruit and flowers. Trifle can be served the day it’s made or refrigerated overnight for flavours to meld. A

passionfruit tart Serves 12-15 Prep time 45 mins Cooking time 1h 30 mins Nadine believes a passionfruit tart is the yellow sunshine of Australian summers. “That bounty of passionfruit that hangs over a neighbour’s fence, foraged for our gain, represents the fruits of Aussie tenacity and resourcefulness,” she says. “If only to create something that we can skite about on the table of a sweltering backyard barbecue.” Begin this recipe a day ahead to make and rest the pastry. PASTRY 1 egg 2 egg yolks 25g caster sugar 2 tbsp milk 250g (1 cups) plain flour, plus extra for dusting 175g unsalted butter, cut into large dice Softened crème fraîche (optional), to serve PASSIONFRUIT FILLING 6 eggs 2 egg yolks 250g caster sugar 400g passionfruit pulp (from about 15 passonfruit), plus extra to serve 250g mascarpone at room temperature 125ml (½ cup) pouring cream
PASTRY 1 Whisk egg, yolks, sugar and milk in a small bowl. Tip flour onto a work surface, add a pinch of salt and scatter butter over the top. Working quickly to keep the butter cold, rub butter into flour with your fingers until just combined, keeping lumps throughout. Make a well in the centre, then pour egg mixture into well. Gradually work flour from sides into the well, mixing with your fingertips until liquid is just absorbed, then push the dough away from you on the bench with the heel of your hand in a sweeping motion, isolating the butter lumps and flattening them into ribbons throughout the pastry (take care not to overwork the flour and butter). Form dough into a 2cm-thick flat rectangle, wrap in plastic and refrigerate to rest (at least 3 hours or overnight). 2 Roll out pastry on a lightly floured surface to a 3mm-thick round. Line a 28cm-diameter loose-bottomed tart tin with pastry, leaving 1cm overhang. Ensure pastry is snug against sides of tin and there are no air bubbles underneath. Refrigerate to rest (overnight). PASSIONFRUIT FILLING 3 Whisk eggs, yolks and sugar in a bowl until well combined. Add passionfruit, mascarpone and cream, and whisk to incorporate thoroughly. Push filling through a fine sieve with a spoon into a jug. Leave at room temperature until needed. 4 Preheat oven to 180°C. Trim excess pastry from tart (reserve it to repair any holes), then blind-bake until set (34-45 minutes). Remove paper and baking weights and bake, gently pressing down any bubbles with a tea towel, until pastry is cooked through (5-10 minutes). Remove from oven and return paper and weights to pastry case until case is cool (15 minutes). Repair any holes with reserved pastry, spreading it over gaps. 5 Reduce oven to 120°C. Skim off any cream that has risen to the surface of the filling, then whisk until smooth. Place tart case in oven and carefully pour in filling to almost reach the rim (there may be some leftover). Drag a sheet of paper towel across the surface to absorb any residual cream and burst any bubbles. Bake until set with a slight wobble in the centre (30-35 minutes). Cool completely (2 hours) and serve with crème fraîche and passionfruit pulp.

“Every year I make this cake for all those friends of mine who don’t like traditional Christmas cake,” Nadine says. “This is one of the many versions I’ve made at Flour and Stone, but feel free to make it your own by changing the fruit or nut varieties. Just remember to keep the quantities the same. It’s also important to note that when making any cake, the ingredients, particularly the eggs and butter, should be at room temperature.” Begin this recipe a day ahead to soak the fruit. Combine raisins and figs in a bowl, pour in rum, cover with plastic wrap and leave at room temperature overnight to soak. 2 Preheat oven to 160°C. Grease a 22cm-diameter cake tin and line with baking paper. Combine chocolate, nuts and orange peel in a large bowl. Beat butter, sugars and vanilla in an electric mixer fitted with the paddle attachment until pale and fluffy. Scrape down sides and bottom of bowl with a spatula and beat briefly to ensure everything is well combined. Add egg a little at a time, beating between additions and scraping down sides of bowl occasionally, until incorporated. Fold in nut mixture, soaked fruit and rum, lemon zest and honey, then add flour and fold to combine well. 3 Pour batter into prepared tin, smooth top, and bake until golden, and centre of cake springs back when lightly pressed (40-50 minutes); it may feel slightly undercooked, but the chocolate will firm up as the cake cools. 4 Cool in the tin then turn out and cool completely. Decorate with gold leaf. Cake will keep in an airtight container for 5 weeks. R 1
