Fill a deep container with water. Spray Rust-Oluem Painter’s Touch in your chosen colour onto the surface then repeat with another colour, then a metallic shade.
Stir until you’re happy with the consistency and colour mixture, adding more if necessary. Gently submerge the bauble into the water, then remove.
Hang your bauble on a string line to dry, with newspaper lining the floor underneath to catch the drips. Experiment with different colours and metallics as shown.

Twist on a classic
Ginger millionaire’s slice
A well-stocked bar cart instantly creates a party vibe. Add helium balloons, decorative garlands and leave a New Year message on a chalkboard or light box to kick-start the celebrations
Serve as a delicious festive treat, or give as a homemade gift; simply present in a brown paper bag tied with string. 1. In a food processor, pulse 250g ginger biscuits with 250g almonds, 50g pistachios, 50g candied ginger, zest of an orange and 200g melted unsalted butter. 2. Pour into a lined brownie tin and press into the edges. Leave in the fridge to set. 3. For the caramel, blend 200g pitted dates, 100g smooth almond butter, 1 tsp vanilla extract, 1 tsp ground
ginger, pinch of ground cloves, ¼ tsp salt and 100g melted unsalted butter. 4. Spread over the biscuit base with a warm palette knife and return to the fridge. 5. Melt 250g dark chocolate in a bowl over simmering water and pour over the caramel. Set in the fridge for 1-2 hours before cutting.

s far as festive mishaps go, Stephen Nash and partner Miranda May came a cropper on the very first Christmas in their home. ‘Miranda made me buy the biggest tree we could find,’ Stephen recalls. ‘Unfortunately, we hadn’t thought to measure the front door and, of course, the obvious happened. We had to Chuckle-brother it through the front window, leaving barely a single needle left on the branches.’ Two years on, the couple have perfected the art of Christmas decorating – and that’s not the only thing they’ve done. ‘I spend my life exploring amazing places and inspirational homes as an interior designer,’ explains Stephen. ‘Miranda is also incredibly creative and loves design, so between us we knew we could do something really special if we found the right place.’ After a long search and several bidding wars, Miranda spotted this red-brick Victorian cottage for sale in Hackney, but Stephen wasn’t convinced: ‘It was a lot more work than we had in mind, as the layout was made up of lots of small rooms that

Use baubles on the table For a quick and easy styling idea, pinch a few baubles from the back of the tree (or raid any leftovers), and place one on each guest’s plate; Miranda and Stephen’s are from John Lewis & Partners, £10 for three. Loop a ribbon through the ixing and, if you’re feeling creative, attach a handwritten note or place card, and give as a gift at the end of the celebrations.

Kitchen Working with contractor Gregos Builders, Stephen designed the matt black kitchen himself, choosing to instead bring in colour and texture with wooden features and a Kote London terrazzo worktop. ‘The one thing we did by hand was help with the island worktop, which is made from reclaimed parquet looring,’ says Stephen. ‘It was laborious, but worth it – and cost-effective, too.’

COLOUR TIP ‘The corridor upstairs has three different levels of ceilings, due to the various additions added over the years, including our own,’ explains Stephen.‘ To unify the space, we created a colour-split effect on the walls so there was just one continuous line of paint, rather than following the top of the jagged ceilings.’

A woodland-inspired garland from Gisela Graham dresses the pared-back headboard were just so diicult to work with; there wasn’t even an indoor bathroom.’ Still, Miranda persisted, and by the time they had the keys the couple had already decided a course of action with planning architects Red Deer. Out came most of the ground loor walls and in went a large rear extension to house a large kitchen-dining-reception room, featuring striking black steel doors opening out to the garden. ‘he cottage has a very traditional frontage, and in adding a modern addition we wanted to make the design true to both external aesthetics,’ Stephen explains. ‘Our hallway and front reception room are much more classic and use darker, moodier colours. In fact, the stairs have been virtually untouched to retain their rustic character, and the walls are a very dark grey.’ In the new extension, the steels are exposed but painted 56 GOODHOMESMAGAZINE.COM JANUARY 2019

white, so the bones of the house are still exposed but blend seamlessly with the crisp, bright walls. ‘We love that the renovations are honest and tell a story of the cottage’s history,’ Miranda adds. Concrete is a constant feature throughout, from looring to walls and basins, and yet with the mix of raw white-washed brickwork and original loorboards, it feels softer, with an almost silk-like quality. ‘Our taste is pretty eclectic and quite changeable,’ she says. ‘We buy a lot of vintage and mid-century pieces that have a wonderful shape and patina, but then aren’t afraid to

Bathroom Vaulting the ceiling gives the feeling of more space, but also solved a fundamental issue. ‘When we bought the cottage there was no indoor bathroom, so we had to squeeze one in upstairs by pinching space from the guest bedroom. In doing so we couldn’t it in an extra window, but in raising the ceiling we were able to punch out a skylight, which changed the feel of the room completely.’ Raw materials White-washed brickwork contrasts with smooth microcement walls to bring a design unity between the irst loor and ground loor, where Kote London also laid all the cement loors and feature chimney breast

throw in contemporary items, too – and a lot of plants. I think our mix-and-match interiors style mirrors how the house is cosy and cottage-like in some areas, then big, bright and airy in others.’ However, when it comes to Christmas, the modern approach takes a back seat – and it’s traditional celebrations all the way. ‘We have big families, so the festivities start on Christmas Eve when we all get together and each open a present early,’ explains Miranda. ‘We’re then woken up on Christmas morning by our excited nieces and nephews to play with new toys till it’s time for turkey.’ Last year, Miranda bought Stephen a drum kit, which he was over the moon with; however this year, she knows exactly what she wants from Santa: ‘Noise-cancelling headphones,’ she laughs.

espite not looking to move from their four-bedroom estate house, curiosity brought Wendy and Paul Martin to a renovated granary that had recently come up for sale in a quiet village near York. ‘We never expected to fall in love with it,’ Wendy says, but they adored the large open rooms, original oak beams and the light pouring in through floor-to-ceiling doors and windows. ‘We just knew we could make it cosy and comfortable, but with a contemporary edge.’ The couple put in a successful offer and decided to make a fresh start, which involved selling most of their furniture with the old house and giving the rest away. ‘We liked what we had but it wasn’t going to work in the granary,’ Wendy explains. ‘Apart from the living room cabinets, everything – even the pictures and ornaments – was bought new. It was so refreshing to let go of everything and start again.’ Wendy and Paul’s life in the country began in earnest. Their new home had been converted from a dilapidated granary by local builders, who restored it and created the layout, but Wendy and Paul were able to choose fittings to their own specifications, including the built-in wardrobes and kitchen. ‘We opted for designs for their texture and traditional hues, creating a calm backdrop, and added colour

THE BIG IDEA Layers of texture Informal and dressed with warm woods, leather accents and country-inspired fabrics, the kitchen is filled with the aromas of Christmas where it needed a bit of a lift,’ says Wendy. ‘Our style is rustic country with a modern twist,’ she adds. ‘The kitchen is our favourite room because it’s so cosy and welcoming. When we have friends over, we can open the doors into the living room and it becomes one large open-plan area.’ With this in mind, Wendy and Paul swapped the dining area in the kitchen for a relaxed seating area, and moved the dining table and chairs into the corner of the spacious living room. ‘It works well,’ she says.
‘We’ll relax in the kitchen with coffee, but after a big dinner party, such as Christmas dinner, we can move seamlessly to the sofas in front of a roaring hearth. ‘It really comes into its own at this time of year,’ she continues. ‘We loved the open fire in our previous home and would never have considered buying a house that didn’t have one, or at least a log burner. It’s so lovely to wake up on Christmas morning, light the fire and open our presents around the tree. When we are cooking Christmas dinner, we throw open the doors into the living room, which fills the whole ground floor with warmth, and smells absolutely wonderful.’ Wendy and Paul also make the most of the huge beams in the kitchen, adorning them with bunting,

foliage from the garden and festive hangings. ‘We love the fact that the living, dining and kitchen areas all link together,’ she says. ‘We did consider putting the dining table in the kitchen window, but we only use it on high days and holidays.’ Instead, the couple positioned the armchairs in the window instead, enabling them to enjoy the garden all year round. Wendy and Paul are delighted with the characterful layout of their country house. ‘It’s such a sociable place,’ she beams. ‘One of us can be in the kitchen and the other in the living room and we are still able to talk to each other. It feels like one large living space – with the benefit of being able to close the doors between them when we want to cosy it up. It’s the perfect all-occasion, all-year-round home.’
EASY PROJECT Make wrapping awkward-shaped presents a thing of the past by copying Wendy’s clever idea: decorate a lidded box with paper offcuts instead, and simply place the gift inside. Hobbycraft has a huge range of papier mâché boxes from as little as £1.20

or the Elshouts, Christmas is a special time of year, spent with family and friends at their idyllic home, set within two acres of rambling gardens and surrounded by the rolling countryside between Chipping Norton and Shipston-on-Stour. Juggling raising their family and working between home and offices in nearby Kingham, both Lieset and husband Andre appreciate having found Willow House, just fifteen minutes away from their previous home. ‘It’s a great place to switch of from the pressures of everyday life, and really enjoy the festivities with people we love,’ says Lieset. When she happened across it, the

16th-century cottage had various outbuildings, which had gradually been connected to the farmhouse over the years. ‘I still wanted to keep the cottage feel, even though it’s been expanded,’ explains Lieset. ‘I didn’t want it to feel too big, so by using natural colours in a modern country style, along with the building’s low ceilings it gives the illusion the house is smaller than it is. Now it’s all finished, it really does feel comfortable and homely in its new skin’. An open fire draped in winter greenery greets you in the hallway, and a feather-illed sofa and worn leather chairs beckon from the candlelit living room. In the dining room, Lieset’s prized possession – her huge

Living room The characterful ireplace with crested metal ire box was sourced and installed by a Belgian friend of Lieset’s, creating a stunning focal point and warm Christmas glow in this rustic living room. Tealights illuminate the mantel further, highlighting the Dutch-style portrait hanging above Christmas detail Basking in the light from Lieset’s beautifully decorated tree, an initialled antique Swedish dresser – which would’ve been a wedding present at the time it was made – features a drop leaf table bedecked with hand-packaged gifts and aged silvered glass lanterns from Pipii
distressed blue table – overflows with tasty treats and sparkling decorations. An eye-level fireplace blazes beside it, dressed with a smattering of ir cones and spruce sprigs that draw the eye and add to the warm, festive ambience of the room. Every detail has been considered in Willow House; much of the flooring, the fireplaces and the tiles has been reclaimed from salvage yards or shipped in from Belgium, where Dutch-born Lieset lived for ten years. Kitchen and utility Looking through to the laundry room, the cabinetry is painted in Farrow and Ball’s Pigeon. A rustic swan bought at an antique fair sits below vintage green china on the shelf above a fresh with a new house,’ she says. Having grown fond of things she has collected over the years, Lieset simply makes them work with her new environment. However, necessity has called for bespoke carpentry for some rooms: the kitchen units were designed and handmade in Hungary and the bathroom cabinets built for her by a local joiner. he overall look of the farmhouse is English in style, complemented by French, Flemish and Swedish furniture. Lieset’s no-fuss approach is a trait stemming from her upbringing. ‘Dutch style is calm, practical and very simple – ideally suited to family life where the robustness of furniture is needed to withstand children climbing all over it as they play!’ she says. Main bedroom Textural pieces, from hide rugs to wicker and marble, make up this atmospheric scheme, with an ornate Belgian chair and side tables teamed with a folk-style stool and bed from Hypnos Bedroom Chloe’s attic room, painted in Farrow and Ball’s Stony Ground, features sanded and distressed exposed beams for a light, airy feel. A huge Christmas tree in the living room is festooned with sparkling silver and white baubles to match the palette of blues and greys throughout, and by the time their work is done, all that is left is to put out the mince pies, milk and carrots for Father Christmas and his reindeer and encourage two excited children off to bed. he interiors in this house hadn’t been touched for about 40 years,’ recalls journalist and blogger Ciara Elliott, of the 200-year-old red-brick property in the English countryside that she and husband Ben have lovingly renovated into a cosy home for their young family. ‘A well-known Royal Academy artist Peter Coker and his wife Vera had lived here all their married lives, and while they had maintained it to a certain degree, they really had spent nothing,’ she explains. ‘The windows were all rotting, there was rising damp, dry rot, peeling wallpaper – the whole nine yards.’

Despite all of the work ahead of them, Ciara and Ben were very much drawn to the townhouse due to its unique history and extensive garden landscaped in the French style. ‘There was a side gate that took us to the most beautiful lily pond with an overhanging magnolia tree,’ says Ciara. ‘We were absolutely enchanted.’ On the practical side, the house is also in a good location for excellent local schools, as well as on a main rail line into London, so the couple could easily commute. he family continued to rent around the corner when the irst phase of renovations, which also included new plumbing, electrics and gas, got underway. hey needed a

Modern Crittal-style windows and Georgian details make this space the perfect blend of old and new Kitchen With its bamboo nightshade and plethora of plants, the kitchen has a lovely natural feel; local artist Lucy Tiffney used Annie Sloan paints for the island and splashback design new roof as well as a whole new heating system, and even had to get the gas connected to the national grid. ‘Despite it being a stressful time – it seemed the more we stripped the house, the more problems we found – it was also such an exciting one,’ says Ciara. ‘Every day we felt we discovered something new; we found old newspapers from the 1920s, and there were floors buried underneath floors, including original Victorian tiles in the porch. There was also an amazing bell system for maids, which we got working again. And we realised that in Georgian times the

Hallway The stairs have been festooned with holly and ivy from the garden as well as large hanging decorations from Next and Talking Tables. ‘There’s no such thing as too much kitsch at this dreary time of year!’ says Ciara, who has styled the front console table with favourite objects, including vases and jungle decorations from Raj Tent Club and Anthropologie Desk detail Edie sits at her mum’s work desk, snuck in at the top of the stairs, to write Christmas cards – all from Liberty – and her all-important present wishlist house had actually faced the other way, as the spine of a central staircase was found as we took up the floorboards.’ The second phase was achieved two years later after the family had sold off some of their garden to raise funds. ‘Costs were just spiralling,’ Ciara recalls. ‘And even though we had done so much already, we still hadn’t managed to extend to have a decent kitchen, or build the annex we had promised for Ben’s mum.’ he family then 92 GOODHOMESMAGAZINE.COM JANUARY 2019

moved out again, renting a nearby AirBnB, while the builders came back in to put in a double-height rear and side addition. ‘My new favourite spot is the kitchen in our extension, with its big Crittal-like windows and our kitchen island, which was painted by local artist Lucy Tiffney,’ says Ciara. She also loves the big window in the living room, which looks straight out to the garden at the side of the house. ‘It’s the perfect perch to read a book or just contemplate the changing seasons as the trees bare themselves for winter.’

EASY PROJECT Copying Ciara’s starry night feature wall couldn’t be simpler. Start with a coat of deep navy paint. Next, pick up a pack of self-adhesive star decals from Happy Decs (£19.99 for 133 stars) and stick them to the wall in clusters. Ciara chose gold for her stars, but there are 19 colours to choose from, including copper, silver, mint green and lilac
One of the biggest lessons Ciara learnt, however, was right at the start of the project. ‘I know it’s obvious, but the positioning of lighting and switches is crucial, and the earlier you think about it, the better,’ she advises. Thankfully, the couple drew out on the floor where their furniture and beds were going to go so they knew where they would be sitting, reading or eating to make it easier to plan. ‘If I had my way, I would have included much more wall lighting, but my budget held me back!’ says Ciara. ‘I don’t think central ceiling

pendants are actually necessary, as you can create so much more atmosphere with wall and task lighting.’ As Ciara’s daily work involves being surrounded by the changing trends in interiors, one of the biggest challenges was picking a theme and sticking with it. ‘In the end I gave up,’ she laughs. ‘I have so much choice in my job and I change my personal style all the time! WHY DID YOU HATE YOUR OLD KITCHEN? It was a dated looking, budget wood kitchen with a slate-effect floor and worktop. Admittedly, it was usable, but it was extremely cramped – we really had to squeeze our dining table into the room and one of us had to get up every time we needed to get to the pantry. HOW DID YOU WANT TO CHANGE THE SPACE? The only logical move was to extend to the side. A limited garden restricted the extension to 5m x 2m, but it was big enough to create a kitchen area that would then free up the old kitchen space for a dining area. And we were thrilled to discover we didn’t need planning permission because the extension came within permitted development guidelines. WHAT WERE YOUR MUST-HAVE FEATURES? I am Spanish and blue is my favourite colour, so the décor had to be a bold shade, while Tim is a furniture designer so the

inches. That amount may not sound all that much, but we had to change the design at the last minute into an L-shaped kitchen to make everything fit.
DID YOU HAVE A PROJECT BUDGET IN MIND? We were on a tight budget of £15,000 for the kitchen because we needed to spend £40,000 on the brick extension. We only managed to stick to that figure because Tim built and fitted the kitchen himself. He makes furniture, but had never done a kitchen before; however, we simply couldn’t afford the quotes from kitchen companies, so Tim took the plunge.
DID ANYTHING COST MORE THAN EXPECTED? No, as Tim’s input meant that we knew how much it would cost us in materials and in his time. We agreed a realistic price with the builder at the start to avoid any nasty expenses cropping up mid-way. And we carefully researched our flooring and lighting and knew exactly what we could afford to spend on them.
WERE THERE ANY DISASTERS ALONG THE WAY? We had planned a U-shaped kitchen, but then we discovered that the garden boundary line isn’t straight, so we had to reduce the interior by four
WHAT WAS THE BIGGEST LESSON YOU LEARNED? The simple lesson of ergonomics. No one used the breakfast bar at first and we couldn’t understand why. We didn’t want to get rid of it, so in JANUARY 2019 GOODHOMESMAGAZINE.COM 115

the end Tim made an extra unit for the wall end, which brought the breakfast bar out into the room by 40cm. With that simple change, everyone now uses it because no one feels squashed into the wall like they did before. DID YOU STICK TO YOUR ORIGINAL BUDGET? Yes, but purely because Tim made and installed everything. He used his stock of solid elm for the worktop, breakfast bar and drawer fronts, and birch ply for the carcasses and cupboard doors. He then stained the unit doors with a cobalt blue dye left over from an earlier job. We also recycled what we could, including our fridge-freezer and sink, and we chose a tough-wearing but economically priced vinyl floor. HOW DO YOU FEEL NOW IT’S ALL FINISHED? I’m extremely proud of what Tim and Kris Webster of Renovation Builders have achieved. I like it best because it is all a beautiful blue. Tim likes it because it does not look as if it has come straight out of a showroom – it’s a total one-off, and our very own bespoke kitchen. It’s now also the hub for our family, and a place for cooking, eating, chatting and for the children doing their homework – and making slime at the table!

WHY DID YOU DISLIKE YOUR OLD KITCHEN? Our original kitchen had limited storage and almost no worktop space – it was a nightmare trying to prepare food! he room also felt very disconnected from the rest of the house, which was a real problem for us. HOW DID YOU WANT TO CHANGE THE SPACE? The kitchen needed to have a larger presence in our home; to function and serve not only as a place to cook but also somewhere we could entertain our friends as well as our daughter, tackle homework, store crafts and books, and everything else in between. With that in mind, we reconfigured the downstairs layout to create a kitchen-diner that spanned the depth of the house. WHAT WERE YOUR MUST-HAVE FEATURES? We love the Scandinavian look with its clean lines, bold colours and warm timber. We knew we wanted handleless units and open shelving to add our personality to the space, with the all-important accents of wood included. Corian worktops and a moulded sink were also top of my list – as seamless joints are so easy to clean – plus an island with breakfast bar seating. WERE THERE ANY DISASTERS ALONG THE WAY? We originally planned a rear extension, so had very different ideas for the ground floor and kitchen. High-street finds Ikea’s Skogska range of dining furniture suits the Scandi theme perfectly WHAT WAS THE BEST BARGAIN YOU FOUND? Uncovering maple flooring under the carpets was a huge cost-saving discovery in the project – we had no idea they were there! It was covered in horrible orange varnish, so we sanded the timber to reveal its beautiful original patina. We then used a clear acrylic varnish that highlights the natural variations and colour of the wood while also protecting it.

DID YOU LEARN ANY LESSONS ALONG THE WAY? That being organised makes the whole experience far more enjoyable! Not having to make decisions under pressure gives you a far more restful night’s sleep. HOW DO YOU FEEL NOW IT’S ALL FINISHED? Our new kitchendiner has changed the way we live – we spend so much more time together as a family now. Our daughter often sits at the breakfast bar while we prepare dinner, and the conversation flows far more easily in an open-plan space than shouting through corridors! What’s really surprised me is how layering lighting can transform the function of an open-plan space; we can illuminate different areas depending on what we’re doing, and it changes the atmosphere completely.

WHAT WAS WRONG WITH YOUR ORIGINAL BATHROOM? When we bought our 1930s house, the bathroom was quite dated and oppressive, with large-format brown tiles, so was in desperate need of freshening up. DID YOU HAVE ANY BIG IDEAS FOR THE NEW DESIGN? I definitely wanted the bathroom to be light, bright and contemporary, in keeping with the Scandi style I’ve introduced into the rest of the house. The space was to remain the same size but a central window put at the back, and the side windows removed. WHAT WAS THE BIGGEST CHALLENGE YOU FACED? Finding the right tiles! I had set my heart on yellow, but didn’t want them to be too acidic in colour. I found just what I

was looking for at Fired Earth, however, that have a lovely textured finish, so I decided they were worth the price to achieve the exact look I had in mind. HOW DID YOU MAKE YOUR BUDGET WORK FOR YOU? Our budget to it out the whole room was only £2,000, but I managed to stick to it! To save on costs we kept the same basic layout, which meant we avoided expensive re-plumbing. One of our best buys actually came from a problem area; as space was limited, I looked for a streamlined basin and found one at Ikea for £60, which had a matching washstand for £100, so this has provided us with all the storage we needed.

WHAT WAS WRONG WITH YOUR ORIGINAL BATHROOM? The design was totally inappropriate for our Grade II-listed house, as unfortunately a previous developer had covered up its characterful features. Added to this, there was no separate shower, which was an essential, so we decided to get rid of everything, except the radiator!
WHAT WAS THE BIGGEST CHALLENGE YOU FACED? Changing the style so it was more sympathetic to the period the house was built in, but keeping the practicality of a modern bathroom. This meant searching out reproduction sanitaryware and adding in plenty of wood to create warmth and the impression of age.
DID YOU HAVE ANY BIG IDEAS FOR THE NEW DESIGN? It’s not a huge room, but as we were determined to make space for a shower, the layout needed a complete rework. I’ve always wanted a roll-top bath, and worked out we could site one under the window, fitting in a spacious curved shower rather than a rectangular design.
HOW DID YOU MAKE YOUR BUDGET WORK FOR YOU? I had help with managing our £5,000 budget, as well as sourcing products, from Danecia Scheepers of upcycleyourhome.com, who was recommended by a friend. We were living in a flat right next door to this property when the owner asked if we’d like to buy it. As we had two young daughters and needed more space, it was great timing, but it required refurbishment and only had two bedrooms. We knew we’d need to extend up into the loft and change the whole layout, as the staircase position created dark corridors and landings. Adding high levels of insulation, hot water solar panels and a wildflower roof lowered the building’s carbon footprint, which was important to us.
support the structure. The old timber ground floor had been suspended over a void, which allowed us to drop the floor levels and improve ceiling heights. We added 63sqm of space, and instead of lots of pokey rooms, the ground floor is now far more open-plan and the glass at the rear makes the space really light.

Why did you choose such unusual materials? We wanted the new extension to be distinct from the older part of the house. Cedar shingles work well with the planted wildflower roof and are natural and renewable. All new elements of the building are clad in Douglas fir plywood internally, to contrast with the existing painted plaster walls. Our daughters were responsible for choosing the bright signature colours: yellow on the ground floor, with orange and green upstairs. They really bring the house alive and make it an exciting space where we love to spend time and entertain.

How much has the layout changed? We were able to carry on living in the adjacent flat while our builder stripped out the inside of the house, taking down internal walls, chimney breasts, the staircase and floors. It was just a brick shell left, and we needed to insert a steel frame to

CONNECT TO NATURE Planted roofs will turn a lat roof into part of the landscape, providing colour throughout the year, depending on the plants. Popular choices are sedum or wildlower mixes, which require little or no maintenance other than watering in extremely dry weather. They are available as pre-planted mats designed for roofs. CONSIDER THE DESIGN Plan the design early on so the roof structure can support the soil’s weight and prevent slippage – it is not recommended that a green roof is built on a slope of over 10° without specialist advice. STRAWBERRY & LIMONCELLO SORBET WITH BURSTING BUBBLES & PROSECCO (pictured on previous page)
Made using PopaBall strawberry & peach bursting bubbles, enjoy this refreshing recipe as a light dessert or super-stylish cocktail
CHEESY MINI LOAF SCONES
Serves 2
FOR THE STRAWBERRY SORBET • 225g caster sugar
• 300ml water • Juice and zest of 1 lime • 350g strawberries, hulled and roughly chopped (to serve) • A good glug of Prosecco • PopaBall strawberry & peach bubbles for Prosecco • Slices of lime • Sprigs of mint
1 To make the limoncello sorbet, place the sugar and water in a saucepan and warm gently over a medium heat until the sugar dissolves, then boil for 2-3 minutes until the mixture is slightly syrupy. 2 Pour into a bowl and add the lemon juice, zest, limoncello and lemon extract. Cover, then chill for at least 2 hours or overnight. 3 Pour the chilled mixture into an ice-cream machine and it the lid or slow blender. Churn until it starts to thicken – it will be a soft texture when ready. Freeze in an airtight container. 4 For the strawberry sorbet, place the sugar and water in a pan, heat gently to dissolve the sugar, turn up the heat and bring to the boil. 5 Add the lime zest and juice and simmer for a few minutes until you have a light syrup. Remove
from the heat and leave to cool. 6 Place the strawberries and cold syrup into a food processor and blend to a puree. Pour the mixture into an ice cream machine and churn until it is a smooth, soft consistency. 7 Freeze in an airtight container until needed, or try a dedicated blender that makes frozen drinks or ice-cool cocktails at the lick of a switch. These products are great to get a party started as they can mix up a batch of margaritas, daiquiris or frosés in a matter of minutes. 8 To serve, place two scoops of the limoncello sorbet and one scoop of the strawberry sorbet in a glass. Add a good glug of Prosecco, sprinkle over some strawberry & peach bursting bubbles and inish off each glass with a slice of lime and mint sprig.
FOR THE LIMONCELLO SORBET • 375g caster sugar • 450ml water • Juice and zest of 3 lemons • 125ml limoncello • 1 tsp lemon extract

Enjoy the heavenly aroma of these tasty morsels as they bake! Makes 12 • 325g self-raising lour • ½ tsp baking powder • ½ tsp salt • 75g butter • 150g mature Cheddar cheese • 2 tbsp inely chopped red onion • 1 tbsp chopped fresh chives • 1 large egg, beaten • 150ml milk 1 Preheat oven to 220°C/Gas mark 7. 2 Sift the lour, baking powder and salt in a large mixing bowl. Rub in the butter until a ine-crumb consistency. Mix in three-quarters of the cheese with the onion and chives. 3 Beat the egg and milk together, add enough to the mixture to make a soft, but not sticky, dough, and mix in with a knife to bring it all together. 4 Flour your hands a little, and knead the dough for a few moments. Turn onto a loured surface, then use a lightly loured rolling pin to roll out the dough to about 2.5cm thick. 5 Using one of the loose bases, cut out the dough to it each tin. 6 Brush the tops with the remaining egg and sprinkle with the rest of the cheese. Bake for 15-18 minutes.
MINI QUICHES When it comes to little bites to hand round at parties, these delicious veggie treats are the perfect appetiser Makes 24 FOR THE PASTRY • 200g plain lour • Pinch of salt • 100g unsalted butter, diced FOR THE FILLING • 3 medium eggs • 150ml whole milk • 4 tbsp double cream
• Black pepper • 12 cherry tomatoes, halved • 75g Cheddar cheese, grated • Handful of basil leaves, torn into small pieces • 1 tbsp chives, chopped
1 To make the pastry, sieve the lour and salt into a large bowl. Rub the butter into the lour until it has the texture of breadcrumbs, then add enough cold water to make a irm dough. Bring the dough together into a ball and place the bowl in the fridge for around 30 minutes. 2 While the dough is chilling, beat together the eggs, milk
and cream with a little black pepper and preheat the oven to 190˚C/Gas mark 5. 3 Divide the chilled dough into little balls about the size of a ifty pence piece and add one to each hole in your chosen tin. 4 Lightly lour a pastry pusher (Lakeland sell the perfect tool) and use to mould and shape the dough into place to make cases. 5 Add most of the cheese to the pastry cases, reserving a little, then pour over the egg mixture. Top each mini quiche with a half tomato and a sprinkling of basil, chives and the reserved cheese. Bake for 20 minutes, until golden and softly set.

MINI CHOCOLATE CHRISTMAS PUDDING CAKES The classic fruit-packed pud isn’t for everyone, but this fun update will appeal to those with a sweet tooth – particularly chocolate lovers
FOR THE SPONGE • 175g unsalted butter, softened • 125g soft light brown sugar • 100g caster sugar • 2 large eggs, beaten • 1 tsp vanilla extract • 175g plain lour • 1 tsp baking powder • ½ tsp bicarbonate of soda • 50g cocoa • Pinch of salt • 75ml buttermilk • 75ml boiling water • 150g raspberry jam FOR THE TOPPING • 200ml double cream • 100g dark chocolate • Renshaw green ready-to-roll icing • Black and brown food colourings • Redcurrants
1 Preheat the oven to 180°C/Gas mark 4. Lightly grease a mini tin. To make the cakes, cream the butter with both the sugars until pale and light. Gradually add the beaten eggs, mixing well between each addition and scraping down the sides of the bowl. Add the vanilla extract. 2 Sift the lour, baking powder, bicarbonate of soda, cocoa and salt into the mixture and combine. Add the buttermilk and boiling water, and mix until smooth. 3 Fill each hole until two-thirds full. Bake on the middle shelf for about 20 minutes, or until a skewer comes out clean. Leave the cakes to cool for 2 minutes, then ease onto a wire rack. 4 Once cool, cut each into three equal parts. Top the bottom layers with a teaspoon of jam.
Place the middle layers on top, add another teaspoon of jam then add the top layers. 5 To make the ganache, put the chopped dark chocolate in a bowl. Add the cream to a small saucepan and heat until just below boiling point. Take the cream off the heat and pour over the chocolate. Stir until fully combined and smooth, and set aside to cool. Spoon over the tops, letting it drizzle down the sides. 6 To make the mini holly leaf decorations, add a little black and brown colouring (Wilton’s 8 Icing Colours is used here) to the green ready-to-roll icing and knead until combined and the desired shade of green. Roll out to 5mm thick, then stamp out the leaves with cutters. Arrange a couple on each cake with the redcurrants. JANUARY 2019 GOODHOMESMAGAZINE.COM 155

MINI CHRISTMAS CAKES IN DECORATED JARS Don’t forget to place the dried fruit, cherries, peel and brandy in a large covered bowl overnight for the perfect boozy bake
Makes 6 • 225g currants • 90g sultanas • 90g raisins • 25g glacé cherries • 25g mixed peel • 2 tbsp brandy • 115g unsalted butter • 115g soft light brown sugar • 2 large eggs • 115g plain lour • ¼ tsp ground or grated nutmeg • ¼ tsp allspice • 25g chopped almonds • Zest of ½ orange, grated • Zest of ½ lemon, grated • 1 tbsp black treacle • 250g marzipan • 400g Renshaw ready-to-use royal icing
1 Preheat the oven to 140°C/Gas mark 1. In a large bowl, cream together the butter and sugar until light & luffy. Lightly beat the eggs, and add slowly to the mix. 156 GOODHOMESMAGAZINE.COM JANUARY 2019
2 Gently fold in the lour, nutmeg and allspice. Add the dried fruit mix, almonds, zest and treacle. 3. Using a teaspoon, divide the mixture between six sterilised jars. Smooth out the top of each and wipe away any mix from the sides. 4 Cover each jar with a circle of baking parchment with a small hole cut in the centre and bake for 1½ hours, or until each cake is irm and springy. Remove from oven, place on a rack and leave to completely cool. Before decorating, add a little more brandy to each cake, using a ine skewer or toothpick to make holes in the top and drizzling over. 5 To decorate, roll out the marzipan to about 5mm thick. Use the lid of one jar as a template to cut out six discs, then gently push a marzipan disc into each jar. 6 Using a piping bag, add a layer of royal icing to the top of each cake, then luff up the surface of each with a fork for a snow effect. 7 Add the seals and lids, and inish with twine, foliage and gift tags.
