May I Tell You a Story?
When I first saw the island, I felt deep inside me that every person on Earth must visit Santorini, Oia and the Caldera at least once in their life. And although Santorini has a very strong personality that captivates you from the first moment, I thought that I could help people on their way to discovering it by creating equally strong points of view in the form of small boutique hotels of high standards at Santorini’s Caldera. It was important to me to always respect the history and architecture of this idyllic landscape as its strongest asset. Together with a team of talented, experienced people, we worked hard and managed to upgrade the quality of hospitality available, create unique experiences and develop high cuisine, which we offer with the highest quality of service possible. The response has been overwhelming. I have seen our guests filled with joy, serenity and a sense of completeness. But I wanted to go further. I could feel that we could be doing even more. I envisioned something different, new, fresh, combining unique architecture with fantastic amenities and high standards of service to transform visitors’ stay into an unforgettable life experience. A place that didn’t exist on Santorini island until today. I am overjoyed and immensely proud that this dream has now come
to life. Andronis Arcadia has been completed and every detail matches my vision. Ready to welcome its first visitors, it is a luxurious accommodation facility located in the popular Oia and stretching across 30km2. It is very close to the Caldera and with beautiful views of the Aegean Sea and its mesmerising sunsets, but it also secluded enough from the town to guarantee the peace and privacy visitors deserve. I imagined a place where our guests can indulge in the care of our experienced staff, live memorable moments and feel special. Andronis Arcadia is a holistic experience that does all of the above,

and I have personally made sure that everything is executed to perfection – including our infinity pool, the largest on the island, and the Pacman project, which boasts four brand new restaurants and bars, as well as Opson restaurant a little further uphill. This contemporary Cycladic space, which pays tribute to its tradition and to Greek hospitality while looking to the future, has a sense of vastness and a very unique style. Diving into the Beauty Every time this half-moon of an island appears on the azure horizon, I feel a fluttering in my heart, and my longing intensifies. Santorini is not merely gorgeous; it is one of those rare places that draw you in, change your perspective and remind you what life is all about. This “land that was scattered”, to borrow Greek Nobel laureate poet Giorgos Seferis’ words, is generously welcoming crowds from every corner of the globe. Although world-renowned Oia, the iconic Caldera and picturesque
Imerovigli are fantastic ambassadors of the beauty of Santorini, the island has so much more to explore further afield – and we’ve made it our goal in this issue to showcase some of them, just like the Andronis Exclusive team continue to help visitors discover the full extent of the magic of this destination. How can just one island have so many faces? No matter how many times I’ve visited it, Santorini never fails to amaze me by giving me more than I ever expected.

Four Santorini Tips from Insiders WINDING PATHS AND TOWERS
Emporeio is the island’s biggest village. This hinterland settlement served to protect locals from pirate raids in the Middle Ages, which explains the Kasteli, a castle settlement at its heart with tall walls to keep social and economic activity hidden. Also visit Goulas Tower, dating back to the15th century, the church of Agios Nikolaos Marmaritis with its gorgeous marbles, Metamorfosi church to see its impressive seashell mosaic – and discover intriguing architecture all around.

inhabited caldera in the globe. The island’s shape is telling in the extent of damage caused by a 17th century BC explosion. Nea Kameni and the islets seen from the slopes of Imerovigli, Fira and the rest of the west coastline used to be part of a larger, unified island before disaster stroke. Yet, this geological particularity was responsible for the large pumice deposits that used to bring in much of the island’s income. What’s more, this is why we can now sunbathe on stunning red and black beaches that look right out of a sci-fi film – including Perivolos, Red Beach and White Beach – a secluded lunar landscape in black, white and blue. Fira is Gialos, the island’s old port. Today, it serves only cruise ships, and is where you can hop on a cable car to Fira – very useful for those who cannot walk the 588 steps uphill, which take most about half an hour. Looking suspended above the sea, Gialos hides unique caved houses chiselled into the rock as well as mysterious caves formed by erosion. Straight out of the pages of a fairy-tale, it’s worth heading downhill for.

Along with archaeological evidence from Akrotiri, an ancient city that was abandoned when the volcano erupted, they have inspired theories of the island being the location of the legendary lost city of Atlantis. The Hellenic Centre for Marine Research concluded that even if Santorini is somehow linked to Atlantis, it is difficult to find evidence in the bottom of the sea. However, the experience of a visit to Nea and Palea Kameni islets is not to be missed: you can see steam emitting from the depths of the earth and swim in warm, sulphur-rich waters. It’s no surprise that the spirit of beauty and freedom that permeates Santorini has inspired myriad artists, who have turned this gem of an island into a veritable art hub. 34

The entire island had become a creative neighbourhood of distinctive character. Both old and new, excellent art galleries leave their mark with exhibitions and events. A prominent stop on the cultural map of Santorini, MATI Art Gallery is the artistic home of internationally acclaimed sculptor and owner Yorgos Kypris, who has irrevocably linked his aesthetic to the island. Located in Fira, this celebrated gallery has been driving Santorini art forward since 1990, showcasing an extensive portfolio that includes commissions across the globe. Its impressive list of patrons comprises renowned brands and famous personalities such as Ceasar’s Palace in Las Vegas and the Sheikh of Qatar, with the gallery becoming a point of reference for art aficionados from far and wide. The MATI team also showcases stand-out Greek jewellery from the country’s most exclusive modern designers, propagating fine taste in all forms of art. Moving on to Messaria, SMAG – Spira Marble Art Gallery – is also worth your while. The domain of sculptor Grigoris Kouskouris, another creator who found himself drawn to Santorini, SMAG reinterprets Tinos island’s millennia-old marble-sculpting tradition, bringing in an air of modernity. Having trained with the best, he is now lauded as “one of the world’s greatest culinary talents”. Gert de Mangeleer’s Hertog Jan restaurant has three Michelin stars, a direct result of his passionate and outgoing philosophy. Travelling the world and exchanging experiences is his inspiration and part of why he is a Captain of Gastronomy for Flanders, Belgium. Closing the festival is Jacob Holmström, a Paris-trained Swede whose Gastrologik restaurant is also Michelin-starred. He creates his menus after consultation with the producers’ ingredients, which results in food of impeccable quality and taste.

ANCIENT GRAPES ON OLD VINES Part of what makes them unique are the grape varieties themselves. Across 120 hectares of vineyards with 80-year old phylloxera plants, Estate Argyros cultivate white Assyrtiko, Aidani, and Athiri grapes as well as red Mavrotragano – all indigenous Santorini varieties. They are blended to produce wines that enjoy Protected Destination of Origin status, including Santorini, Nykteri and the illustrious Vinsanto. Argyros wines include the white Argyros Santorini, twice awarded the Regional Trophy at Decanter Awards, Estate Argyros Assyrtiko, which has scored an outstanding 95/100 Robert Parker points, as well as Oak Fermented and Mavrotragano. Adding to the range are naturally sweet aged wines including the Visanto 20 years barrel aged, the first Greek wine to score a perfect 100/100 from Wine and Spirits magazine.
Boasting a history that spreads over three millennia, wine is not just a buzzword on Santorini. Matthew Argyros knows this well, himself part of the fourth generation of his family to work the vines. At the helm of award-winning Argyros Estate, he runs a boutique winery, investing in some of the oldest vines on the island, traditional cultivation techniques, and ancient grape varieties. Santorini is said by aficionados to be the oldest vineyard in Europe. Family businesses like Argyros Estate, founded in 1903, are living proof of this legacy, strengthened by the island’s unique terroir and techniques that took centuries to develop. A BLESSED DESERT BECOMES ITS OWN OASIS Wandering the stunningly rocky Santorini with its cliff-edges, black soil and red beaches, many are taken aback when they come upon fields upon fields of vines planted in a circle close to the ground. They are the famed “kouloures”, which allow grapes to grow on this seemingly unfertile land, whose high acidity and low pH instils unique flavour into the grapes. The Estate Argyros team plough the land with mules, hand-prune vines, hand-pick grapes and forbid the use of all pesticides, all to produce organic wines of exceptional quality.

It is the contribution and innovative ethos of Santorini’s wine masters that has earned the island a spot on the global wine map. —What was the first thing you wanted to taste when you arrived in Santorini? A salad of Santorini tomato, katsouni cucumber, capers and fresh local cheese. —Tell us more about the philosophy of the menu you have designed. Our menu makes use of the ingredients that were available in Greece in ancient times. For example, there are no potatoes, tomatoes or lemons. We conducted extensive literature research on that era to track down references to Ancient Greeks’ nutritional habits, we identified ingredients and culinary techniques and then adjusted them to our menu. It is an Ancient Greek menu interpreted through my personal lens. —Have you met your local suppliers? No matter where in the world I’m working, I always make sure to meet the producers. They let me in on local secrets, and I discover regional ingredients and flavours that enrich my flavour palate. —What’s it like when you’re gathering produce from the Andronis garden patch? In all honesty, I cannot describe the feeling of being so close to the soil of Santorini. You have to experience it to grasp how magical it is. —How does your kitchen fit into Andronis Exclusive? Do they complement each other? In my personal opinion, it is a result of the philosophy and vision of the owner, who has managed to communicate his vision for the Group and find the right people who were able to create the desired result as closely as possible to this vision, just like I’ve done with my menu at Andronis Arcadia. •
