CITY OF MYTH
A series of charming myths accompany the origins of its name, which either stems from an aspect of the goddess of the hunt, Artemis, or a legendary battle between the Muses and Sirens, which saw the latter lose their wings and plummet into the sea in terrible defeat – thus a-ptera [non-winged].
APTERA
A LOST CITY REEMERGES A largely unknown gem of Homeric-Era Crete, Aptera is a must-visit. A FEW MONTHS AGO, an exhibition at the Museum of Cycladic Culture in Athens brought to the spotlight a trio of ancient cities long forgotten in the public consciousness. All found in Crete, these settlements completed their life circles millennia ago, progressing from their establishment and development to abandonment and rediscovery. With its memory brought back by recent excavations and research, the lost city of Aptera is less than 20 minutes from Chania. Back in the Homeric Age, circa 1100 BC, it was one of the three capitals of Crete,
which was said to have a hundred cities. Built at a spot still revered for its outstanding natural beauty, it had two sea ports and extensive fields, thanks to which it saw great development and amassed significant wealth. In the 4th century BC, Aptera was the most affluent city on Crete, boasting close diplomatic and commercial ties with Egypt, Libya and prominent kingdoms found in modern-day Greece, Asia Minor and the Adriatic. A series of earthquakes, with the last one occurring in 364 AD, marked the city’s decline and eventual desertion. Yet, today, Aptera attracts attention once again as an intriguing archeological site – the ghost of a city where great warriors roamed, goldsmiths and silversmiths created objects of immense beauty, and the Olympians were worshipped. The two fascinating Ottoman forts located in close proximity are also worth a visit.
Top and left: Still standing after over three millenia, the amphitheater of Aptera is surrounded by verdant nature.

The Culture and Sports Organization of Agios Nikolaos Municipality also organizes a solo painting exhibition of artwork by Eirini Kanavaki titled “Color Passions," while “Agios Nikolaos, City and Faces” will showcase paintings by Natalia Manannikova, Petrova Ekaterina Dmitriyevna and Plevin Vladimir Fedorovich at the same location.

A KALEIDOSCOPE OF CONTEMPORARY GREEK ART Situated in a neoclassical building in Corfu Town, The Attic Gallery is a vibrant space that “loves to combine art, words and history.” This summer’s group exhibition brings together 17 artists from across Greece. Titled “Kaleidoscope” – “the observa tion of beautiful forms” – and curated by Sasha Chaitow and Paris Kapralos, the exhibition focuses on how the country’s struggles have caused the arts to flourish. Contributing artists come from diverse backgrounds and often use experimental materials and techniques in their work, which poses questions about nostalgia, nature, society and romance.

A FESTIVAL IS BORN
New and fascinating, the Corfu Literary Festival launched in 2018, created by chef and cricket aficionado Nikos Louvros, his wife Annabelle Louvros, who works in community projects, and awardwinning novelist Alex Preston, author of This Bleeding City. Its purpose is to champion the rich cultural mosaic of Corfu, to celebrate the passion for the arts and letters shared by the Greeks and the British – as well as to further cement the island’s place as a hub for culture in the country. ARTS AND LETTERS
CORFU LITERARY FESTIVAL Celebrating culture, heritage and cricket.
“AN ISLAND CELEBRATION of the Arts" is what the Corfu Literary Festival promises in its second year. As the summer season draws to a close, the organizers invite bibliophiles as well as anyone interested in culture and cultural exchange to attend an entire week of stimulating events celebrating and exploring history, politics, literature, food and culture. On the agenda are readings, talks, wine tastings, debates, performances and mixers – as well as a cricket match between celebrated English writer team Authors IX and members of the Hellenic Cricket Foundation, which will take place on the historic Plaza Spianada, a large square in the very heart of Corfu Town that is home to important land-
marks including the Ionian Academy, the very first university-level institution in Modern Greece. Several prominent authors have been confirmed for the lineup, including Sebastian Faulks; Sofka Zinoviev; Tom Holland, who will be presenting about his new book, Dominion; Elizabeth Speller; Frances Edmonds; Peter Frankopan; William Fie nnes, Anthony McGowan, Adam Nicolson; and several Greek authors. Topics of focus for the interactive panels range from Anglo-Greek heritage and literature to philosophy, Homer, cricket in Corfu, and history, while each will be followed by an informal supper at traditional tavernas, where speakers and audience will enjoy casual conversations in a friendly, rustic atmosphere.

THE ISLAND OF THE GODS
A glistening jewel of an island floats between three continents and two mythical seas. BY SOPHIA McCONNELL
ALMOST A COUNTRY of its own thanks to its distinctive character, history and passion, Crete – Greece’s largest island – is distinct in every way. A dazzling landscape made up of mountains, valleys, fertile plains, sun kissed beaches, a cliff-lined coastline and rugged canyons make for natural beauty that is beyond comparison, matched only by the richness of Crete's history. The island hosted the first advanced European civilization in history, the Minoans, who ruled some 4000 years ago. Standing at the crossroads of three continents, the island went on to be ruled by Romans, Byzantines, Arabs, Venetians, Egyptians and Ottomans. Today, it's a popular vacation destination that remains authentic and unique as ever, and the site of Domes Noruz Chania,
Casa Cook Chania, Domes of Elounda, Sentido Elounda Blu, and Pleiades Luxurious Villas in beautiful Agios Nikolaos. The basis of the Mediterranean diet, the Cretan diet and products are often considered one of the healthiest in the world. Visit any rural taverna to be spoiled with organically grown meats, cheeses, olive oil, fiery raki and wine in age-old recipes and dishes that you’ll only find on the island. But it is perhaps Crete’s spirited people who will take your breath away the most. Proud, free and generous, they uphold their unique culture and customs, through their music, celebrations and time-honored regional dances – for this is an island where, despite the difficulties of the past, life is truly celebrated.

OUR INSIDER TIPS
TOP 10 WORLD-CLASS BEACHES IN CHANIA & LASITHI The sheer size and variety of welcoming bays, beaches and coves on Crete can be overwhelming – that’s why we’ve asked those in the know for their expert tips. BY SOPHIA McCONNELL
CRETE IS THE LARGEST ISLAND IN GREECE, boasting 1,046 km of coastline with hundreds of incredible beaches, each unique in its beauty. Here are some of the very best beaches in the prefectures of Chania and Lasithi in western and eastern Crete respectively.
1. FALASSARNA
2. SEITAN LIMANIA
Easily accessible, Falassarna is situated in a beautiful fertile plain near the village of Platanos, 58 km west of Chania. Declared as one of the cleanest beaches in Greece, it welcomes visitors who flock to enjoy the pure soft golden sand and incredibly clear turquoise waters in what is a truly idyllic spot whose sunsets are celebrated. You’ll find a handful of traditional tavernas in the surrounding area as well as the ruins of ancient Falassarna, once a powerful city-state with a remarkable enclosed port which flourished mainly during the Hellenistic period.
Located close to Chania airport and all but hidden away in the rocky coastline, this gorgeous pebbly beach has incredibly blue, deep waters. Make sure you bring food and water as there are no amenities on the beach, and wear sensible shoes as the descent is rocky. You’ll nevertheless be rewarded for your efforts by the calm waters and stunning scenery.
3. AGIOS PAVLOS In addition to its imposing sand dunes, striking sea caves, whitewashed rocks and translucent waters, the partially organized beach of Agios Pavlos

also stuns visitors with awe inspiring vistas of Paximadia islands, which seem to almost hover in the middle of the Libyan Sea.
4. BALOS The beauty of the shores and waters of Balos lagoon is legendary. When seen from above, the water looks almost transparent, glass-like, surrounded by multiple strips of an exotic, pure white sand. Opposite the beach, the rocky island of Gramvoussa with its Venetian castle beckons, while Mediterranean seals have been known to frequent the surrounding waters.
5. ELAFONISI Located on the southwest tip of Crete, 82 km from Chania, the exotic islet of Elafonisi [“island of deer” in Greek] is renowned all around the globe. In fact, it made the top eleven most beautiful beaches in the entire world in 2018 in TripAdvisor’s Choice Awards for its pink coral sand and crystalline
waters. You can get there by boat from Palaiochora or by car. There are cantinas and water sports facilities on the beach opposite Elafonisi, while the islet itself features white sand and many cedar trees, and can only be reached by crossing the reef on foot.
6. KOLOKITHA Known for its fine white sand and calm waters, this secluded cove is made even more beautiful by the surrounding ancient olive groves and wheat fields. As it is very popular – especially in the peak summer months due to the excursion boats – we recommend you visit early in the morning or late in the afternoon. Remember to take an umbrella as the beach isn’t organized and the only natural shade is provided by a handful of tamarisk trees.
7. AGIA FOTIA Situated 10 km east of Ierapetra, this renowned and wellorganized beach boasts powdery sand, inviting waters and

Following its hippy backpacker destination status in the 1980s, Vai has been declared a protected area by the state. Its utterly soft sand, crystal clear waters and overwhelming natural beauty have made it very popular with families.
9. CHRISSI ISLAND OR GAIDOURONISI Located 8 nautical miles (approx. 50 minutes by boat) south of Ierapetra in the open Libyan Sea, Chrissi is a flat islet thousands of visitors visit every year, to swim in phenomenal bright blue waters and to marvel at the pink-hued sands, which are made up of millions of bro-

ken shells. Chrissi has been declared an area of outstanding natural beauty, so spending the night is strictly prohibited – as is collecting shells, sand or anything else, while visitors are also urged to take great care not to break the branches of the protected junipers when walking. Its most famous beach is initially rocky and then turns sandy – the setting of pure relaxation.
10. ΜAKRIGIALOS A full kilometer long, Makrigialos is known for its fine golden sand and often referred to by the locals as Hani or simply “Long Beach.” A great choice for children and families due to its warm, shallow waters which maintain their high temperature even during the colder winter months, this is a great seaside spot to while away the hours as it is surrounded by cafes and eateries for refreshments and meals by the sea. Additional facilities and amenities include umbrellas, water sports and showers.
There's a beach to suit every mood, preference and need on Crete; so much so that it's difficult to cross every one off your list.

SPELLBINDING TIMELESS BEAUTY
The vibrant, cosmopolitan destination of Chania offers visitors some of the most authentic and fulfilling experiences in Greece that are sure to be cherished forever. BY SOPHIA McCONNELL
CINEMATIC BEAUTY With a history spanning over four millennia, the stunning city of Chania is one of the oldest settlements in the world, which has blossomed into a cosmopolitan bucket-list entry that's celebrated as an alternative to jet-set favorites Ibiza and Mykonos. Once Crete’s capital (from 1898 to 1971) and hands down the island’s most evocative urban area, Chania is split into the old and new city by ancient Venetian walls that
define the border between the two, with the old town consisting of five districts surrounding the Venetian port. Vestiges of the city’s past can be seen in its dozens of Venetian and Ottoman buildings and architectural details, with mosques, Turkish bathhouses and beautiful mansions given a new lease of life by ongoing restoration works. Some of the city’s old townhouses have been transformed into atmospheric restaurants and boutique hotels. Meanwhile, the
Byzantine era is also highly visible, evident in Chania’s frescoed chapels and churches. Walking through the old town is a fascinating experience, To name just a few of the most important attractions, there’s the picturesque Venetian port whose 16th century lighthouse, seawalls and buildings have featured in many films, Firka Fortress, Giali Tzami, the highly interesting Maritime Museum and Grand Arsenal, the old Venetian shipyard which now houses the Centre of Mediterra-

Then, of course, there are Chania’s residents, whose zest for life is infectious, evident in the plethora of cafes, bars and restaurants spread along its fascinating labyrinth of alleyways and tiny squares dotted all over the old part of the city. This place's all about enjoying life.
CASTLES, HEROS AND LEGENDS With its traditional villag es and rolling hills, western Crete’s raw beauty is unparal leled. If you're staying at Domes Noruz Chania or Casa Cook
Chania, any of these stunning landmarks are just a short drive away. Further boasting mountain peaks, fertile valleys, secluded beaches and incredible canyons, the famed area of Sfakia begins at the impressive cone-shaped formations of the Lefka Ori [White Mountains] and stretches all the way down to the shores of the Libyan Sea. This is where Europe’s longest gorge, the 18 km long Samaria is located. Beginning just below the Omalos plateau, its width varies between 150 and 3 m, while its walls reach 500 m at their highest points. It ends at the seaside village of Agia Roumeli, with hikers often spotting the kri-kri, Crete’s native wild goat. Western Crete also pro-
vides a multitude of opportunities for free climbing. The most popular climbing track is found near Chania at Theriso gorge, with levels of difficulty ranging from V to VIII. Further afield, the land is filled with castles, heroes and legends – the result of the island’s tumultuous history and many revolts, one example being the bloody massacre at the hands of the Ottoman army which took place at Frangokastello in May 1828. In the same region, as dawn breaks daily between May and June, strange human shadow-like figures appear on the coast. Folk tradition refers to them as the Drosoulites and explains them as ghosts of the slain warriors; they are largely

This Industrial Era landmark is up-and-coming, already offering excellent eateries and spots to relax and take beautiful pictures.
REPRESENTING AN INTEGRAL PART of the history of the city of Chania, the Tabakaria district extends east from the coastal part of Vivilaki Street to the area of Agia Kyriaki, just a leisurely drive from Casa Cook Chania and Domes Noruz Chania. It is a very atmospheric neighborhood; an architectural monument of the industrial age located in the rocky part of Chania which dates back to the early 19th century, back when Egyptians ruled Crete. Used as tanneries constructed for the purposes of processing leather, its buildings were mostly erected between 1830 and 1840; the reason for their location being their proximity to Chania and the abundant groundwater, brackish water, and shallow sea, which was useful for the first stage of leather processing. The buildings themselves were built to follow the natural inclinations of the land, with a ground floor entrance at street level and two to three floors facing the sea. Featuring stone and tiled roofs, they were arranged one next to the
other with very small narrow passageways in between that led down to the sea. In the 1950s, over 80 tanneries were still in operation; today, it’s only six. Yet, this unique architectural gem can still be visited today, giving a distinct allure to the area and providing an up-and-coming backdrop to tavernas, bars and cafes that have started popping up nearby. After a short leisurely fifteen-minute walk from Chania’s Venetian harbor, you’ll find yourself in a markedly different place; a place that was once a hive of industrial activity with its own very individual architecture that took advantage of the terrain. Once almost desolate, it is slowly but surely coming back to life to become one of the city’s dozens of attractions. Charming fish and seafood restaurants have set up shop along the water to take advantage of the cinematic backdrop of this district with its almost otherworldly beauty visited and frequented by locals and inthe-know visitors alike.
Scenic and with an unmistakable air of times gone by, the Tabakaria neighborhood is worth a visit.

So much more than just a coveted Cretan destination, the area surrounding Domes of Elounda holds myriad surprises just waiting to be discovered. BY SOPHIA McCONNELL

From Ancient Greeks to Arab pirates, Ottomans to lepers and beyond, Spinalonga islet has a rich, profound history.
OWING ITS NAME TO LATIN SPINA [thorn] and longa [thorn], Spinalonga was not always an island, if Venetian cartographer Vincenzo Coronelli is to be believed; he recorded that the Venetians cut through a portion of the peninsula, creating an islet that measures 85 km² today. It was depopulated in the 7th century due to Arab pirate raids. In 1579, the Venetians built a fortress on the ruins of a pre-existing ancient fortress, which remained under Venetian rule even after the 1669 Ottoman occupation of Crete. The churches of Agios Panteleimonas and Agios Georgios were built subsequently. In fact, during the Cretan War (1645-1669), Spinalonga served as a base for refugees and rebels, consequently falling to the Turks in 1715. In the 19th century, several merchants and seamen moved to the islet, seeking the security offered by the fortress in their exploitation of the commercial routes of the eastern Mediterranean. It is estimated that by 1834, 80 families lived in Spinalonga. By 1881, the number had increased to 227 families. In 1903, the State of Crete decided that the island would house Crete’s leper community – it would go on to become a colony for lepers from all over Greece, overseen by a director, doctor,
nurses, a superintendent, cleaning staff, a financial department and a priest. One of its two entrances was a tunnel known as “Dante’s Gate.” With the little government funding they received, patients were able to go down to the docks and buy produce from the surrounding area’s families, who arrived daily. Any products not sold on the day were considered contaminated, could not be taken back ashore and were therefore thrown away into the sea. Nevertheless, during this period, the leper colony supported the economy of the surrounding area. Patients were initially housed in existing buildings, while additional construction was carried out in the ‘30s. The Leper Hospital operated until 1957. Today, visitors can reach Spinalonga via a scenic boat trip across the water to explore the remains of this historic settlement. In this eerie yet charming setting, the past renders the experience of wandering around the colony and learning about its history profound. Dilapidated but with restoration works underway, Spinalonga may be haunted by sadness and memories of tragic times but there is no doubt that it is a fascinating open-air museum worthy of a poignant visit that pays respect to its former inhabitants.
As seen from Domes of Elounda across the water, Lasithi's Spinalonga islet only hints at the rich history it hides.

AN ICONIC DESTINATION IN EVERY SENSE
Ethereal in its beauty and a cradle of culture and knowledge, the Greek island of Corfu fiercely protects its traditions and customs – yet, it has always been open to other cultures, too. BY SOPHIA McCONNELL

EVER SINCE THE 8th century BC, the island of Corfu, which the Greeks named Kerkyra, has been revered throughout the ages not only for its strategic position in the Ionian Sea but for its phenomenal natural beauty. Known for its almost heartbreaking love-
liness – think cypress covered hills, traditional villages and sandy coves embraced by cobalt-blue waters – has spurred many an army and international power to want to possess and rule it, from the Ottomans to the Venetians, the French and the British. Each
left an indelible mark on the island. A walk around elegant Corfu Town very much reveals Venetian and French architectural influences while, suffice to say, the islanders’ longstanding love for cricket is a very British affair indeed! Representing a beacon of learn-

itage, which extends to this day. Locals feel very strongly about music, too – and they have done so for centuries. From 1840 onwards, philharmonic orchestras started popping up on the island, with musicians eager to accompany religious ceremonies, festi-

Set to take place in late September, Corfu Literary Festival is currently in its second year, even hosting a cricket match between English and Corfiot writers. Corfu
is also the site of the Ionian University, whose highly acclaimed Faculty of History & Translation organizes an International Summer Academy for Intercultural Communication, with leading translators and interpreters sharing recent research and developments in their sector. After all, throughout its history, the island has attracted great thinkers and writers such as Goethe, Wilde, Gerald
and Lawrence Durrell, and Henry Miller, who found ample inspiration for their work here. Also portrayed as an idyll in Greek mythology, Corfu is – after all – where the shipwrecked Odysseus was soothed and sent on his way home. This overriding feeling is evident even today, in every beautiful sight and vista that continues to take visitors’ breath away…
Celebrated as the most musical Greek island, Corfu currently has 18 marching bands, featuring people of all ages.

THERE’S SO MUCH MORE TO CORFU than meets the eye; dig a little deeper and you will uncover one of Greece’s most lush and verdant islands that was almost made for hiking enthusiasts (there are marked trails everywhere you look). Discover strikingly sculpted cliffs that plunge down towards the sea, some bare and others covered in greenery, hilltop monasteries and castles offering eye-wateringly beautiful sea views, mountains, paradise-like beaches and coves, and ancient olive groves. Incredibly green, Corfu owes its sensational natural beauty to the winter rains, the relatively temperate summer temperatures and its fertile soil. Out of season (April, May and June), Corfu offers superb walking opportunities when the island is literally covered in a blanket of impossibly pretty wildflowers. Various international treaties that have conferred a special preservation status on parts of the island mean that much of it is safeguarded from any development taking place. For instance, such areas include Lake Korission with its immaculately preserved cedar forest, the beautiful Lagoon of Antiniotis, as well as the enchanting Erimitis region, known for its dense vegetation, stunning lakes and secluded beaches. There are many more areas and spots that deserve special mention. Among them, we find:

PALEOKASTRITSA: Located on the western side of the island and comprised of six beaches, each more beautiful than the next, Paleokastritsa is undeniably one of Corfu’s most beautiful areas. MYRTIOTISSA: Situated between Ermones and Glyfada, on the southeastern side of the cape of Agios Georgios, Myrtiotissa offers what is hands down one of the most picture-perfect beaches on the island. To get to the beach, you’ll need to walk for about 20 minutes – or have a 4x4. HALIKOUNAS: This long and isolated sandy beach is found near the village of Agios Matheos. TRACING THE UNIQUE CHARM OF CORFU TOWN
More closely resembling the small capital of an entire country than that of an island, Corfu Town never fails to seduce all who visit it. BY SOPHIA McCONNELL
IMBUED WITH GRACE and elegance, historic Corfu Town (also known as Kerkyra) is found in the middle of the island’s east coast. The name Corfu [“peaks”] refers to its twin hills, each topped by a massive fortress built to withstand the Ottoman sieges of the 16th century. Built on a promontory, the town has a unique architecture that reflects the various influences – Venetian, French and English – that have left their mark on the island. This blend of different styles has lent Corfu Town
a unique charm and character. Palaces, fortresses, austere public buildings from the Venetian rule combine with lines of drying washing that hang above tiny alleyways and small secluded squares. Indeed, a walk through the maze of narrow cobbled streets known as “kantounia” will make you feel as if you’ve traveled to Genoa or Naples. There are also numerous stately attractions, such as the Palace of St. Michael and St. George, Liston Arcade, the Reading Society, the Catholic Cathedral, the Ioni-
an Parliament and the Kapodistrias family mansion, as well as arcades, parks, fortifications and monuments – all lending Corfu a certain kind of grandeur more reminiscent of the confident air of the capital of a country rather than that of an island. But one thing is for sure – whether ambling down alleyways in search of hidden architectural gems or drinking an aperitif in one of the town’s stylish cafes or hotels, Corfu Town can’t help but make you feel like you’ve traveled in time.

CORFU: JET-SETTERS’ FAVORITE PLAYGROUND
A veritable galaxy of stars and celebs have visited Corfu and fallen in love with it, returning time and again. BY SOPHIA McCONNELL
THE RICH AND FAMOUS HAVE always loved Corfu. After all, the Duke of Edinburgh was born on the island, at Mon Repos, the stately home built in 1824 for the British High Commissioner, Sir Frederick Adam. Arguably its most famous past resident, the Empress Elisabeth of Austria built Achilleion Palace in 1890 as a refuge after the tragic loss of her only son, Crown Prince Rudolf. This royal connection has continued with many members of Europe’s royal families, including the British royal family, visiting the island on numerous occasions. Be they old money or self-made, those who enjoy wealth and fame flock to Corfu every year, most of them to the expensive, exclusive northeast side of the island – “Kensington-on-Sea,” as the
area of Kassiopi has become affectionately known. At this haven for businessmen, politicians, media moguls, art dealers and lawyers, the Rothschild family are perhaps the most famous residents while Lord Sainsbury, the Duke of Westminster, Prince Charles and the Duchess of Cornwall, and Roman Abramovich also visit regularly. With views of the deep blue Ionian Sea and the mountains of Albania in the distance, socializing largely takes place behind villa walls or onboard mega-yachts. Another favorite pastime is lunch at any one of the three tavernas at the Bay of Agni, where you’re very likely to spot members of one of Europe’s richest and powerful families – perhaps a Berlusconi, or a member of the Agnelli family dining on chargrilled swordfish or a tasty traditional sofrito.

Uninterrupted sea views, dreamy skies, design furniture and a romantic pier provide the backdrop for meals to remember. THΟLOS
Borrowing its name from the Greek word for “dome,” Tholos is a comfortable space located in the main building of Domes of Elounda, overlooking Spinalonga. Warm, elegant and unpretentious, this restaurant boasts magnificent seascapes that will steal your heart. The food is Greek and Mediterranean with multicultural themed nights and options for special dietary requirements. Tholos serves scrumptious breakfast and fantastic dinner, which we recommend pairing with some-

Named after the Japanese for “fortress” to mirror its impressive views of Spinalonga right across the water – as well as its bold approach to flavor – Yaosai restaurant and pool bar’s promise is that of Japanese-Peruvian dining. You can head here all day for your food and beverage cravings. Exotic fusion takes center stage for lunch, when Yaosai is an adults-only establishment for guests aged 16 and above. Try salads, snacks and mains such as the Beef Teriyaki or the vegetarian masterpiece of Eggplant with Honey Miso. As for dinner, put on your smart casual dress and take your picks from a fascinating menu that includes dry-aged flap steak, tamales, sushi platters… Don’t forget to try some of the chef’s one-of-a-kind gourmet desserts, too.

wine production. As for those with a sweet tooth, they’ll be spoiled for choice by the inventive selection of desserts, with everything from homemade ice cream to Rakomelo Baba, which uses local raki, and the chocolate-packed Cretan Banana with a Twist. Just one last tip for you: In our opinion, the sophisticated Kserotigano dessert is simply to die for, with local mizithra cheese, yogurt ice cream, thyme honey bubbles and raki-drenched crumb. After working for acclaimed establishments in Spain and the UK, Executive Chef Dionysis Pliatsikas arrived in Chania to lead a talented team. Today, he speaks to Domes Magazine about his inspiration, what makes Cretan cuisine stand out, and the Zeen approach to gastronomy – all building blocks of the acclaimed experience at this Domes Noruz Chania food and drink hotspot.
"
Which flavors of Crete stand out for you? I visit one of Chania’s farmers’ markets at least every week. I think that out all the stalls, I am drawn to the ones that sell many different varieties of wild Cretan greens. Some are sweet, others salty, or bitter, or aromatic… There’s an incredible wealth of flavors within this category of vegetable, and you can use them in all sorts of recipes – from pies to salads, cooked greens, in the pot or in the pan with meat or fish… literally everywhere!
How would you describe the food at Zeen restaurant? With tradition, simplicity and love for the produce of our land as our tenets, we continue to explore and discover the values of Cretan cooking – but we also work to take our cuisine further, to enhance it without losing sight of the fundamentals. We love to share the results with diners. We use ingredients produced on Crete: olive oil, fresh vegetables, seafood, fish... I should note that seasonality defines the menu at Zeen, so it’s not easy to be more specific in terms of the literal main ingredients of our success! Have you gotten in touch with your suppliers? What are your favorite ingredients to use? Our local suppliers are indispensable for us and our dishes. They are our lifeline, our connection to the Cretan soil and its products. At Zeen, we make sure we only work with certified
Zeen restaurant’s entire philosophy is based on what the island has taught us about flavor, ingredients and cooking."
Top: Dionysis Pliatsikas is at the helm of the kitchen at Zeen restaurant. Below: Cooked to order and perfectly balanced, Dionysis' dishes will take your breath away.
Do you combine local and international ingredients in your cooking? Because we focus on local and seasonal to deliver the best dishes possible, I try not to mix different cooking traditions with Cretan and Mediterranean cuisine, with the exception of our special events. However, our local producers themselves often experiment with new produce to cultivate in Crete, so we support their efforts by using their new products in our dishes. What dish would you recommend from the menu at Zeen? This is a difficult question with many possible answers, but I’ll give you just one: I’d recommend the White Grouper Giouvetsi with wild fennel.
