he scarf is inspired from truck art elements and the Pakistan cricket team's logo, which adds colour to their wardrobe. "The colours represent the different roles women play in our society. It can also serve as a staple accessory that they can wear on any occasion. "Keeping in mind that [the women's cricket team] are seen as role models for today's women, we focused on the traditional timeless silhouette," shared Al Karam Studio designer Pooja Achariya about the white kurta. “As we had to coordinate the outfit with the official green blazers of the women's cricket team, it was quite natural that we paired it with white as opposed to green," she added about the colour scheme. "We have further detailed the o u t f i t w i t h g r e e n f i n i s h i n g to complement and enhance the delicate thread work."

Ex-boat Builder Designs Unique off-Grid Tiny House
E
x-boat builder and carpenter Jeff Hobbs from New Zealand-based studio Room to Move was recently commissioned to build a special bespoke tiny house for local resident Briar Hale. The 23.95 sq m (257.8 sq ft) house was built using structural insulated panels (SIPs) made from plywood and foam; recycled wood materials and sports multiple off-grid solutions. Hobbs chose to build the home using 62 mm (2.45 in) thick SIPs due to their lightweight, strength, durability and excellent insulation qualities, and also meant that he had extra floor space to work with when designing the home's interior. "The design was a collaboration between the owner (Briar Hale) and myself, but it really is her baby as she had a clear idea of what she wanted,"
Jeff Hobbs tells Gizmag. "There are eight different types of wood featured in this little house, most coming from recycled natives." The ground level of the home measures 16.75 sq m (180.3 sq ft) and features a multi-purpose living zone, a large fully equipped kitchen, bathroom with a walk-in shower and composting toilet, a small office area and combustion fireplace. The living room is filled with natural light due to the inclusion of multiple large windows, a central skylight and double glass doors which open out onto a wooden terrace. The outdoor terrace wraps around three quarters of the dwelling, adding the feeling of extra room and expansiveness to the home. The tiny house also features an elevated loft bedroom, measuring 7.2 sq m (77.5 sq ft). The lounge area can double as a guest bedroom, with the L-shaped sofa easily transforming into a double bed. The loft bedroom, which has a queen-sized bed, also features an additional sleeping space where the owner's young niece stays sometimes. The kitchen features a two burner gas stove with overhead range-hood, an oven/grill, 130 liter under-bench fridge, cupboard and storage space, wall pantry and a sink hand-made by owner. "One of my favorite features of the home is the staircase because we wrestled so hard to get stairs that looked good, that were safe, not too expensive and functional," says Hobbs. "We

obtained all this plus we managed to put extra storage underneath them." The tiny house features a series of sustainable features, including a solar collector used to heat the water, which feeds into a 90 liter (approx. 24 gallon) water tank located on the home's roof. A wet back is also connected to this tank from the small fireplace, providing hot water during the winter. "The water system is low pressure and is fed by a 110 liter (29 gallon) header tank," says Hobbs. "This means you use less water and the shower uses only four liters of water per minute. It's a nice shower though and we are very happy with the Separette villa 9010 composting toilet. It has no smell and the urine diverter goes directly into the grey water tank, making it ver y low maintenance." Grey water is collected into a 200 liter (approx. 53 gallon) tank via a stainless steel mesh which strains all food waste and hair etc. The water is pumped out into the garden on a weekly basis, and the strainer is emptied onto the compost heap. The home also features two 300 watt solar panels located on the roof. The panels are hooked up to a 12 volt battery bank with a capacity of 445 amp hours. A 1,300 watt Outback inverter runs the washing machine. The overall costs of the materials to build this tiny house were higher than your usual tiny build, coming to a total of NZ$75,000 (about US$50,250). The home took 2,400 hours to construct, with the owner paying a final figure of NZ$130,000 (about US$87,100). "I make double that amount building boats, but these little houses are very satisfying to create," says Hobbs. "We wanted to create something that was functional, beautiful and that would last a long time. Hopefully it will become a classic in 50 years and I know they will be quicker to build in the future. Our biggest difficulty was building the tiny house in a time frame that made it affordable for both the owner and where the

builder didn't go without in the process. We started building this one in April and finished in December 2015. Most of the time there were two of us working on the project at a time." Hobbs is currently building a tiny house shell for his son and his girlfriend, and although he is tempted to go back to boat building for the money, he is passionate about the tiny house movement and the freedom it offers the younger generation. “I love working with small spaces, because of the challenges to achieve function and beauty," Hobbs explains. "I hope I can work out a way of making SIPs available to young people so they can make their own tiny houses to a high standard. I would love it if bio foam became more affordable or even available in New Zealand as polyurethane foam is oil based, but I'm convinced SIPs are the future for tiny houses, especially when they are on wheels. I'd like to be able to help in some way to make the tiny house movement become a practical and viable option for young people and for the older too. My hope is for urban tiny house villages, all self-sustainable, using gardens to deal with the grey water."

Tell us a little bit about you ? I have been photographing a little over 8 years now, however I started my business 3 years back. My company is called Shay Photography FZE. My approach to photography is creative and artistic, and most of my shots are from my imagination. I love capturing moments that are stylish and aesthetically appealing. I want to create images that will sweep my clients off their feet. Have you taken any Photography classes ? When I started photography I felt the need to attended workshops for professional training to master the art and science. Once/twice a year I try to attend workshops for honing my skills and to get better at what I am doing. Among your works, which one is your favorite? Why? I am trying to get better at what I am doing everyday so my favorite changes often. My target is that today's shoot should be better than what I did yesterday. In the field, what are your settings? for example Aperture ,Shutter Speed ? I am more comfortable shooting in Manual mode. I adapt to the environment. Are you a fashion Photographer only ? I do fashion and Wedding photography. I love capturing real emotions and interacting with people. I am often
approached by my clients for lifestyle shoots, engagements or anniversary and I am more than happy to cover them. Can you describe how and when you use flash, video light, reflectors and natural light during a shoot? Using strobes or reflectors are based on two things, one on the ambient light and the second one would be based on the mood that I would like to set for my images. Photography has now became a very popular among youth as a career, any advice you want to give them? It is very important for young aspirants to practice, practice and practice more often.

Make-up artists are often referred to as cosmetologists. The entertainment and fashion industry currently employs the largest margin of make-up artists today. Shazia Qudsia is a well known make up artist in Dubai, her versatile make up for brides, party, events and in all ethnicity made her “apple of the eye,” a highly talented, motivated and passionate professional, with years of extensive experience and a multitude of exposures. She is able to enhance the features of any face and sculpt the hair to a flawless finish. Well here we brought you a chit chat with the star who makes other shines. Where did you get inspiration from to choose this path as a career? Since childhood like all females I was fascinated with colors and makeup and got my inspiration from my sister who used to do makeup for all family and friends and also by Musarat Bismah's story. What do you most like about the make up? I believe that beauty is universal, and makeup is one way to let it shine through! Make-up has the power to completely change the look of a person as it greatly helps to enhance a
person's features. It’s amazing, what a difference the little things can make! How long you have been in this industry? Although I have been doing Make-up for friends and family for more than twenty years but professionally I have been in the industry for the past 10 years and have been a part of various commercial local and international projects like ads, events, fashion shoots, weddings, parties etc. How you will describe your signature look and how that style differ you from other makeup artist? Frankly speaking every makeup artist has their own style my style is a fusion of east and west, I try to stay close to the natural beauty of a face and makeup for high-definition especially for photography and video. I learned to do makeup for the camera right from the start! I know how important it is for makeup artists to create faces that look amazing in person as well as on screen, in any lighting situation. What you do besides in your free time? I like to bake and cook during my free time, or practice new makeup techniques, hairstyles. If I was not a makeup artist I would definitely be a Chef. Would you apply makeup only on special occasion like party or wedding ? or either you deal in all types. I relish working with color and texture and finding ways to enhance the face in front of me, and I enjoy the collaborative process involved in a wedding, shoot, or any professional work that I do.
I HAVE NEVER TAKEN MY MIND OFF BEING A MAKEUP ARTIST... THIS IS WHAT I WAS BORN TO DO. Few tips for girls you want to give? I would advise everyone to do age appropriate make-up which enhances or suits your facial structure not follow the fashion trend blindly. Who you consider is the most supporting person of your life and profession? My whole family is very supportive especially my brother Aijaz and my sister Qudsia who is also a makeup artist. And Mr. & Mrs. Khan who were kind enough to lend their home for the shoot. What is your advice to aspiring makeup artists? Nonstop Practice of your skill on all kinds of nationalities as everyone has different skin tones, facial structure and skin type so it's good to practice and test the products thoroughly before buying lots of unnecessary makeup items, invest in good brands they are long lasting and give good results. Last but not the least I want to thank all my co photographers, all my lovely and beautiful models for their time as with a good team we achieve great results. TRIP TO SOUTH AMERICA
A
fter our Alaska cruise, I wanted to take Jan on a South America cruise around Cape Horn to hopefully see the magnificent Chilean Andes and glaciers along the Chilean Fjords. I booked the cruise aboard the Holland America ship, ZAANDAM. The cruise itinerary included Buenos Aires, Argentina; Montevideo, Uruguay; Port Stanley, Falkland Islands; the Strait of Magellan, Punta Arenus, Chile; Ushuaia, Argentina; Cape Horn; the Beagle Channel; the Chilean Fjords to Puerto Montt, Chile; and ending at Valparaiso, Chile. I had previously sailed from Montevideo, Uruguay, to Ushuaia, Argentina, on the tall ship bark EUROPA in 2008. I had also sailed from Ushuaia around Cape Horn and through the Chilean Fjords to Valparaiso on the EUROPA as part of the “Tall Ships Sailing Around South America” in 2010. We arrived at Buenos Aires. After checking into our hotel in the Palermo Soho District, we explored the neighborhood street market area and admired some of the “local street art.” That evening we went to dinner at Efimero Festin Restaurant. It is operated by Carolina La Vecchia with whom I met in 2010 and have since kept in touch. Carolina is a marvelous cook and our dinner was superb. Carolina invited us to r e t u r n f o r d i n n e r o n S u n d a y . The restaurant is closed on Sundays but she cooked exclusively for us as the only guests in the restaurant and we all ate dinner together. It was a marvelous seven-course dinner and was by far the very best meal that we ate during our entire South America trip. We boarded the ZAANDAM on Monday, 8 December, and settled into our cabin. While the ship remained docked at Buenos Aires, we enjoyed numerous shipboard activities and met two new friends, LaVonne and Bill. The ship arrived at Montevideo on Wednesday, we spent part of the day taking a self-guided walking tour of the city. After open-ocean sailing for the next two days, we arrived at Port Stanley, Falkland Islands, early morning on 13 December. The Falkland Islands are also referred to as Isla Malvinas. Jan decided to take a four-hour ship’s shore excursion with LaVonne and Bill to visit a Rock hoppper Penguin colony. The weather cooperated and she had a very good time with the penguins. I opted to take a bus and explore the Gypsy Cove area on my own. The landscape around the Gypsy Cove area was magnificent – it was a combination of beautiful beaches, Magellan penguins, scenic views from the hilltops, and interesting vegetation. One area called Ordnance Point had remains of an artillery outpost overlooking the harbor area of Port Stanley. Upon returning to Port Stanley, I walked along the waterfront from the dock to the Port Stanley Museum and enjoyed exploring part of this small but colorful city. After another day at sea, we entered the Strait of Magellan and continued on to Punta Arenas, Chile. Upon arriving at Punta Arenas, Bill and LaVonne joined us to hire a taxi to go to the cemetery. Upon arrival at the cemetery, I instructed our taxi driver to wait for us near the entrance with the intention of paying him when our tour was completed. I had visited the cemetery in 2010 and wanted to return to

the gravestone where the last Onas, the extinct Fireland Natives, are buried. In addition, the cemetery is beautifully landscaped with beautiful mausoleums. When we returned to the cemetery entrance, we could not find our taxi driver anywhere and I had memorized only the last three letters of his taxi license plate. After searching in vain for our taxi driver, we decided to walk along the waterfront area back to downtown Punta Arenas. As we approached the waterfront road, we noticed the Cervecia Artesanal – Hernandes de Magallanes micro-brewery on the corner facing the Strait of Magellen. The brewery was open and we purchased two cold Hernandes de Magallanes Imperial Stout beers. The proprietor opened the bottles which we drank while sitting on a bench overlooking the Strait of Magellan. We later learned that this was the southern-most micro-brewery in Chile. We passed several beautiful monuments as we continued walking to the downtown area. We ate lunch a Chinese buffet restaurant where I had eaten in 2010 and used the restaurant wifi to catch up with our emails. It began raining while we were eating lunch and then began to clear up as we started walking back to the dock area.

Upon entering the immigration area, we told the people about our taxi driver who did not wait for us and that we wanted to make sure that he received our money for the taxi fare. While we were telling them about our driver and the last three letters of the license plate, LaVonne spotted our driver and we were able to pay him directly – all is well that ends well. After departing Punta Arenas, we sailed southbound through the Cockburn Channel and eastbound through the Beagle Channel to Ushuaia. Much to my surprise, as we disembarked at Ushuaia on the morning, the tall ship bark EUROPA was docked immediately in front of the ZAANDAM. Since I had previously sailed a total of 127 days aboard the EUROPA, it was wonderful to see her again while she was there in between her annual Ushuaia to Antarctica voyages. We spent the day at Ushuaia before sailing during the night to Horn Island. It was raining while we sailed around Horn Island and Cape Horn during the morning. Then, due to unfavorable weather reports, the

crew decided to return to the Beagle Channel. We continued sailing westbound back through the Beagle Channel, northbound through the Cockburn Channel, and then northbound through some of the Chilean Fjords to Puerto Montt. Although we were able to see several glaciers as we sailed along the Beagle Channel, inclement weather prevented us from sailing through portions of the Chilean Fjords and precluded us from visiting a couple of glaciers en route to Puerto Montt that were annotated on the cruise route map. We arrived at Puerto Montt during the morning. Prior to arriving at Puerto Montt, I was considering an excursion to the nearby lake and volcano. However, since the weather was partly cloudy with rain in the forecast, we began walking along the waterfront instead. We planned to walk toward the old downtown area and then backtrack to the fish market for lunch. Portions of Puerto Montt are colorful and the old church was very picturesque. As we were backtracking through the city, it began to rain. We tried to hail a taxi to go to the fish market but to no avail. Finally a local bus stopped and, as we got on, we asked the driver if it went near the fish market. He said yes and we continued on the bus until he stopped to let us off. The rain subsided to a light drizzle as we walked to the fish market. We ate lunch at a small restaurant on the second floor balcony with a view over the small bay. Our fresh seafood meal – consisting of pisco sour, ceviche, salmon, and abalone – was very good. The rain subsided while we ate lunch, and we enjoyed a beautiful afternoon as we walked back past handcraft markets to the dock area. After another ocean sailing day, we arrived at Valparaiso, Chile, and disembarked on Monday, 22 December. We spent two days in Valparaiso, which is a very colorful and picturesque town. We took a Wally Tour 4 Tips walking tour of Valparaiso where we learned that because portions of Valparaiso have been designated as a UNESCO World Heritage Site, virtually no upkeep is being done in those portions of the city. The old town portion of the city has become much more rundown that it was when I visited in 2010. Street art in Valparaiso is also very colorful. On Wednesday, 24 December, we rode a bus from Valparaiso to Santiago and took a local taxi to our bed and breakfast, Casa Moro, where also I stayed in 2010. Casa Moro is operated by Walter and Marcelo and has been the number one rated B&B in Santiago by Trip Advisor for many years. Since it was Christmas Eve, Walter recommended the Bella Vista Neighborhood area of Santiago as a place where we might be able to find a few open restaurants. We took the subway to Bella Vista and found many restaurants closed. We finally found one restaurant still open but getting ready to close. The waiter took pity on us and finally said that he would remain open for us. After taking our order, many more people converged on the restaurant and the waiter relented and remained open for business. I had advanced booked the Christmas morning Santiago Wally Tour 4 Tips on the Internet. Although it was a somewhat abbreviated tour because many places were closed, it included Parque Forestal, the Central Fish Market, walking through various neighborhoods, and the General Cemetery. Most of the tour group ended up eating lunch at a local restaurant adjacent to the main central fish market building. We also decided to take the afternoon Tours 4 Tips that

included Barrio Lastarria, Gabriela Mistral Cultural Center, Paris-Londres Neighborhood, Palacio La Moneda, and Plaza De Armas. Since it was late afternoon, we continued walking to Bella Vista for a fresh fruit drink and dinner. It was a very long day and Jan’s phone computed that we walked nearly 18,000 steps during the day. On 26 December, we began the day at the Museum of Memory and Human Rights. We rented the museum headphones and spent nearly three hours viewing the exhibits. This is a very powerful exhibition that documents Pinochet’s seventeen-year rule from 1973 to 1990 which resulted in torture, murder, and disappearances of thousands of Chileans. The museum displays photographs of victims, video of protesters, legal documents, letters, and artifacts. We walked from the human rights museum to Desde 1886 Boulevard Lavaud, a French restaurant that Walter recommended highly for lunch. It was a two story restaurant with a very unique and picturesque décor. Our waiter was very friendly and the food was also quite good. We continued on to visit the Pre-Columbian Museum. I had visited this museum in 2010, and it was well worth a return visit. Walter had informed us when we arrived at Casa Moro that we would be the last guests at Casa Moro. He and Marcelo had purchased a farm to the south of Santiago. They plan to take a one-year sabbatical to pursue their other interests while looking for property to build a seaside resort in the future. We would be leaving on 27 December and they would move the following day. Walter and Marcelo cooked a wonderful Chilean dinner for us on our last night with them and they joined us for dinner. Prior to departing Casa Moro on 27 December, we purchased one of the colorful dolls that Marcelo had made. After we said goodbye to Marcelo, Walter drove us to the Santiago airport where we said goodbye to him and caught a flight to Buenos Aires. Back in Buenos Aires, we had one last meal at Efimero Festin cooked by Carolina. It was another wonderful meal, after which we bid goodbye to Carolina and took a taxi to our hotel. We departed Buenos Aires on 28 December and returned home the following day. The highlights of our trip were time spent with Carolina, as well as the time spent with Walter and Marcelo.

Fawad Khan, who was recently seen in ' Kapoor and Sons' alongside Alia Bhatt and Siddharth Malhotra, believes that there is no bitter competition in the entertainment industry. The 38-year-old actor said in a recent interview, "I think the current generation of actors focuses more on improving their own craft rather than bringing down each other. There is no bitter competition at play. eight loss is a billion dollar industry worldwide, with ever more books and magazine articles touting “new findings” and “guaranteed results.” In searching for the truth behind all the diet plans and hype, one finds a simple answer – THERE IS NO SIMPLE ANSWER. Because standards of beauty are different across the world, and because women come in all shapes and sizes, there is no one-sizefits-all way to have the perfect body. There are, however, a few key ingredients to maximizing your own brand of beautiful. The first step is to inventory yourself. Try to look objectively at your assets, then emphasize the good, and downplay the “less-than-my-ideal.” Remember that while you may see the flaws in yourself, others looking at you focus on the total package. They see your smile, the light flash in your eyes, and the joie de vivre in your attitude. But what if you find that you would feel better and have more energy if you were a few pounds less? Weight loss was once thought to be a simple equation of calories in versus calories out. If you ate less, you lost weight. What more recent findings have shown is that our bodies are intricate balances of metabolism and survival skills that can confound conventional weight loss methods. While cutting calories can cause an initial loss of pounds, the vast majority will put those pounds back on as soon as regular eating is resumed. SO HOW DO WE CIRCUMVENT THIS TENDENCY? Change the Quality of the Calories you are Eating Recent developments and economic factors have made processed foods more prevalent and more available. It is now easy to consume thousands of empty calories in the form of chips, candy, carbonated soft drinks and the like. In order to slim down, says health coach MaryleeLaBaw, you need to get back to real foods. Simple carbohydrates and sugars spike blood sugar, causing a release of insulin and a hoarding of fat. In order to keep blood sugar level and encourage the use of stored fat for energy, eat as close to nature as possible, and eat frequent small meals that include both proteins and fat. For instance, an apple has fiber that fills the stomach and slows down the fruit sugar from absorbing too fast, spiking blood sugar, but apple juice does not. And an even better
option: an apple with a spoonful of peanut butter will create a feeling of fullness that prevents overeating later. The same amount of calories has very different effects on the body depending on what macronutrients they are composed of.According to the Anschutz Health and Wellness Center, foods to target are whole, raw, unprocessed fruits and vegetables, lean proteins like chicken breast, fish and lean cuts of beef, and healthy fats like olive oil, canola oil, avocado and nuts1. Foods to avoid are high fructose corn syrup and partially hydrogenated oils. Avoid them like the plague that they are.
Reduce Stress
Our “fight-or-flight” reactions to stressors in our life help with survival with short burst of life-saving energy. But in this age of overwork, global fears and constant crisis, our stress reactions seem to go on all the time. The American Psychological Association reports on the impact of stress. Continuing elevated levels of stress cause a rise of the hormone cortisol in the body, which in turn increases appetite. Stress eating is common but most people don't realize it is linked to the physical effects of this fight-or-flight hormone. To reduce stress one of the best solutions is...exercise. Taking that walk after work is a double-duty weight control device. Other healthy ways to reduce stress are meditation or pursuing a favorite activity like reading, visiting with friends, or a hobby you love.
Movement is key A recent study in JAMA Internal Medicine Journal shows that exercise is the leading indicator of reducing obesity with longterm health benefits. While reducing caloric intake can result in short term weight loss, it's increasing activity to the sweet spot of 70 minutes a day that produces the best chance of staying at the ideal weight for your body2. Activity does not need to be overly strenuous, nor does it have to be painful. Simply adding an hour walk into your daytime routine can set you up for health and fitness over the long term. The National Weight Loss Registry tracks those in the U.S. who have lost 30 pounds or more, and who have kept that weight off for more than a year. 90% of those registered report that they exercise an average of one hour a day3. Movement is a key component for your body to create a flexible metabolism, allowing you to eat normally and maintain a constant weight.
Beauty Sleep is Right! In a 2013 study by the Obesity Society, “sleep duration was significantly associated with body mass index and waist circumference.” Short sleepers – defined as those who got an average of six hours or less sleep per night – were heavier and had a larger girth than long sleepers with an average of more than 9 hours per night5.Good sleep hygiene leads to better quality of sleep, and only compounds the benefits. Try to go to bed and get up at the same time each night, since bedtime fluctuations can decrease the body's ability to relax and reach deep sleep. Keep your bedroom a calm and inviting place. Minimize distractions like having a computer or TV in the bedroom. And shut down screens 30 minutes prior to bed. Studies show that the cognitive stimulation of commuters, video games, even our smart phones, keeps us from dropping into restful sleep. Do that old fashioned activity: read a book before bed!

FOOD FANTASTIC INGREDIENTS:
CHOCOLATE SALTED CARAMEL TART
Almond Chocolate Sweet Pastry Flour Ground almonds Unsweetened cocoa powder Sugar Salt Cold unsalted butter, cut into small(1/2-inch) cubes Vanilla extract Egg Ice water Caramel Sugar Water Heavy cream Unsalted butter Salt Chocolate Ganache Heavy cream Bittersweet chocolate, chopped
1 1/4 cups (160g) 1/4 cup (30g) 1/4 cup (30g) 1/4 cup (50g) 1/4 tsp 1 stick (110 g) 1 tsp 1 1-2 tbsp 1 ½ cups (300 g) ½ cup ½ cup (120 g) 5 tbsp (70 g) 1 tsp Chocolate Ganache ½ cup (120 g) heavy cream 4 oz (120g)
METHOD : Prepare the sweet pastry. In a large bowl mix flour with ground almonds, cocoa powder, sugar and salt. Incorporate butter to the flour mixture, using a pastry blender, a fork or a pastry processor, until crumbs are formed. Add the egg and vanilla extract and mix them in. Add water and incorporate into the dough. Wrap it with plastic, knead slowly to form a disc and refrigerate for at least 30 minutes or overnight. On o floured surface or over the plastic wrap roll the dough to a circle with about 1 ½ inches larger than your tart pan. Lift up the rolled dough and place it on a greased 9 inch tart pan. Remove the edges and refrigerate for 30 minutes before baking. Prick the dough with a fork, line a parchment paper over the dough. Fill with dry beans, rice or pie weights. Bake for 15 minutes in preheated 350 F (180C) oven. Remove the weights and the parchment paper. Return to oven for another 10 to 15 minutes. Allow to cool before removing from the tart pan. Prepare the caramel. Place the sugar and water in a medium heavy bottomed saucepan over medium-high heat, and cook without stirring until sugar dissolves and gets a caramel color. Remove the pan from the heat and add the cream. It will bubble a little bit. Cook for about 1 or 2 minutes stirring constantly with a wooden spoon until smooth. Remove from heat and add butter and salt. Stir well until smooth. Let the caramel cool slightly and pour over the chocolate crust. Refrigerate for about 4-5 hours. Prepare the chocolate ganache. Heat the cream in a small saucepan. When the cream just begins to boil at the edges, remove from heat and pour over the chopped chocolate. Let sit one minute, then stir until smooth. Pour the chocolate ganache over the caramel. Spread it evenly and refrigerate for another 2-3 hours before serving. Sprinkle with sea salt flakes and serve.

STRAWBERRY PANNA COTTA METHOD : Dissolve gelatin in 2 tbsp cold water and let it swell for about 5 to 10 minutes. In a medium saucepan bring the cream, milk and sugar to a simmer over medium-low heat (Do not boil). When sugar has dissolved remove from heat and add vanilla extract. Let cool for 5 minutes before adding the gelatin. Add gelatin in the milk mixture and stir until the gelatin has completely dissolved. Pour it in the serving glasses (I've used 5 oz - 150 ml capacity glasses) or ramekins and refrigerate until it sets, for about 4 hrs or better overnight. To prepare the sauce: Wash the strawberries, drain well and remove leaves. Cut strawberries in quarters. In a small saucepan put the strawberries, sugar and water. Bring to a simmer and remove from heat immediately. Pour into the bowl of a blender or food processor and blend the mixture to make a smooth sauce. Pass through a strainer to remove the seeds out of the sauce. Cover and let it cool to room temperature then refrigerate until ready to serve. Before serving pour the strawberry sauce over the panna cotta and serve.

METHOD: Heat 3-4 tablespoons oil - add the spice , after 30 seconds add the onions. Cook onions till golden brown. Remove onions and whole spice with slotted spoon , cool and grind to paste . Set aside for later use. Lightly roast and grind to a powder the Fennel Seeds, Black Pepper, Green Cardamoms. Reheat the paste - add some more if needed , when hot add the chicken and salt - fry a couple of minutes till it seals and turns light brown. Now add the powders and cook another minute or so . At this stage introduce tomato puree along with chili powder ginger garlic and some haldi. Cook covered on low till oil separates - 10 minutes. Now add the onion paste , mix well , add ½ cup of hot water and simmer another few minutes till chicken is almost done. Heat ghee in a frying pan, when hot add tomato's and ginger juliennes, cook 2-3 mts till soft, mix well into chicken along with 2 tbsp water and cook covered for a couple of minutes.

CHICKEN TERIYAKI
Low sodium soy sauce

Light-brown sugar

Finely grated fresh ginger
1 Tbsp
Garlic, finely minced
2 cloves
Freshly ground black pepper

Cold water
1 ½ Tbsp
Cornstarch
1 ½ Tbsp
Cooked white rice, for serving, Sesame seeds, for garnish (optional)
METHOD: In a mixing bowl, whisk together soy sauce, apple cider vinegar, light-brown sugar, honey, orange marmalade, ginger, garlic and pepper. Pour mixture over chicken, cover with lid and cook on low heat 4 - 5 hours. Remove chicken and shred. Strain sauce through a fine mesh strainer into a medium saucepan. In a small mixing bowl whisk together 1 ½ Tbsp cold water and cornstarch. Pour cornstarch mixture into liquid in saucepan and heat mixture over medium high heat, stirring constantly, until mixture begins to gently boil. Allow mixture to gently boil about 20 seconds until thickened. Pour teriyaki sauce from saucepan over chicken. Toss mixture gently to evenly coat. Serve warm over cooked rice garnished with optional sesame seeds and serve with diced fresh pineapple if desired.
