EMP 180 St. Patty's Day Dinner Turkey Zucchini Sliders

INGREDIENTS 1 lb. ground turkey 1 cup shredded zucchini (lightly squeezed to remove some of the liquid) 1 tsp. dried Italian Seasoning ½ tsp. garlic powder ½ tsp. onion powder 1/4 tsp. crushed red pepper ½ tsp. sea salt ¼ tsp. black pepper (omit for AIP) Walden Farms ketchup mustard

NUTRITION

INSTRUCTIONS 1. Pre-heat oven to 400 degrees. Cover a baking sheet with parchment. Combine all of the ingredients in a bowl and mix with hands. 2. Form into 24 sliders and place on the baking sheet. 3. Bake for 12-15 minutes or until sliders are cooked through and insides are no longer pink. 4. Serve warm or at room temperature with your favorite EMP 180 approved condiments.

EMP 180 St. Patty's Day Dinner Turnip Fries

INGREDIENTS 1/4 cup olive oil 4 medium turnips 2 teaspoons garlic powder Sea salt & pepper as needed.

INSTRUCTIONS Preheat oven to 400 degrees. Grease baking sheet with half of the olive oil. Trim ends of turnips. Cut into wedges. In a large bowl, toss turnips remaining olive oil. Season with Old Bay, garlic powder, salt & pepper. Toss to combine. Arrange on baking sheet in an even layer. Transfer to oven and roast until turnips turn golden brown, about 15-17 min. Remove from oven and flip turnips so they roast on both sides. Return to oven and roast another 15-20 min until very golden. Serve immediately.

EMP 180 St. Patty's Day Dinner Corned Beef Meatballs & Cabbage

Cabbage

Meatballs 12 oz can of corned beef 1/2 cup of chopped raw cabbage 2 eggs 1/4 tsp of black pepper 1/4 tsp of sea salt 2 tsp of whole grain mustard 2 tbsp of olive oil

4 cups of shredded, raw cabbage 2 bay leaves 1 tsp of kosher salt 1 tbsp of dried onion flakes 1 cup of water

INSTRUCTIONS 1. Remove the corned beef from the can, along with the juice, and mash it with a fork. Add the cabbage, onion flakes, almond flour, eggs, salt, pepper, mustard to the corned beef and mix thoroughly. Form 18 small meatballs. Heat oil in a nonstick saute pan and saute the meatballs in batches. Remove from pan and place on a paper towellined plate. Serve with mustard, or simmer in cabbage. 2. Combine cabbage ingredients in a medium saucepan. Bring to a boil. Simmer on low for 20 minutes. Remove bay leaf and cloves. Add meatballs and cover. Simmer for 1 hour. Serve with whole grain mustard.
