Baked Salmon with Cauliflower Mash & Green Beans Perfect for Your Valentine's Dinner!

Nutrition: Calories: 470 Carbohydrates: 24g Fat:22.7g Protein:52g Ingredients: ~ salmon fillet (2, 6 oz portions) ~ 1 head of cauliflower ~ 2 Tbsp fresh parsley, chopped ~ 1/4 lb. of fresh green beans ~ 3 garlic cloves, pressed ~ 1/2 cup of water (for green beans) ~ ½ Tbsp mustard ~ 1/2 cup of chicken broth (for cauliflower) ~ ½ tsp salt (we use sea salt) ~ ⅛ tsp black pepper ~ 2 Tbsp light olive oil (not extra virgin) ~ 2 Tbsp fresh lemon juice ~ Lemon slices, garnish Instructions: ~ Preheat the oven to 450° F. Line rimmed baking sheet with foil. ~ In a small bowl, combine: parsley, 2-3 pressed cloves garlic, ½ Tbsp mustard, ½ tsp salt, ⅛ tsp pepper, 2 Tbsp oil and 2 Tbsp lemon juice. ~ Slice salmon into 4 portions and arrange them on a lined baking dish, keeping salmon skin-side-down. ~ Generously brush top and sides of salmon with sauce and top with lemon slices. ~ Bake at 450°F for 12-15 min or until just cooked through and flaky. Don't overcook. ~ While salmon is baking: wash a head of cauliflower, pat dry. Fill a large pot with 3/4 cup of water or chicken broth. Bring to boil, add cauliflower, lower heat, cover. Let steam until very soft. Drain. Mash with a stick blender or potato masher. Add sea salt, pepper, and garlic powder to taste. ~Wash green beans and clip ends. Boil 1/2 cup of water in a large pot. Add beans, cover, and steam until tender. Drain. season with sea salt & pepper.

FILET MIGNON WITH MUSHROOMS & ONIONS Perfect for Your Valentine's Dinner

Nutrition: Calories: 440 Carbohydrates: 12g Fat: 26g Protein: 38g Ingredients ~ ~ ~ ~ ~

2 filet mignon steaks, each about 6-ounces and 2-inches thick 2 tablespoons extra-virgin olive oil (divided) Sea salt and pepper to taste 1 large yellow onion (Vidalia is preferable) 1 package of cremini mushrooms

Instructions ~ Remove the filet mignon from your refrigerator and set them on your countertop to come to room temperature, about 20 minutes. ~ Pre-heat your oven to 425 degrees. Season the filet mignon with sea salt and pepper on both sides. ~ Heat a large oven-proof sauté pan over medium-high heat. Add the olive oil and let it get hot. Add the filets to the hot pan and let them cook for 4 minutes. After 4 minutes, flip the filets. Then immediately transfer the sauté pan to your pre-heated oven and set your timer. ~ Cook in the oven for 5-7 minutes, depending on your preferred level of doneness: 5 minutes for rare, 6 minutes for medium-rare or 7 minutes for medium. ~ Remove the pan from the oven and transfer steaks to a plate. Tent with foil and let them rest for 5 minutes. ~ Place half of the vegetables onto each dinner plate, top with one filet. ENJOY!!!
