The big plus of living in Cornwall is that you are generally top of the list for family visits. But that means lots of planning, stocking up, cooking and booking outings for everyone. So we’ve tried to make life a bit easier this year with our cover feature, a very Cornish Christmas with 25 ideas of where to go and what to do. And, there are plenty of ideas in the magazine for some fabulous local shopping and places to visit from the magnificent festive garland at Cotehele to Fowey Christmas Market! We suggest where to go to party, as well as some great ideas for the home, local artwork, gorgeous properties to buy, and our holiday cottage guide. We meet some very special horses from the Brown Horse Academy. And it was great fun and really inspiring to meet Neil and Hamish, who will be setting off on the toughest rowing race on earth: the Talisker Whisky Atlantic Challenge, rowing for over 60 days from the Canaries to Antigua. We wish them huge amounts of luck and calm seas! In Foodie we get to know the lovely Elliot, Becca and their cute dog, Olive, owners of The Star and Garter in Falmouth. We welcome the reopening of the stylishly refurbished Bustopher Jones, check out some other fabulous eateries and have some delicious recipes to warm the darkest winter evenings. With the festivities officially in swing, it’s time to get the Christmas tree up. We’ve ordered our tree from Fentongollan, available in a range of sizes. Did you know? “Currently standing at 100ft, Pinetum Park houses Cornwall’s tallest Christmas tree”, Pinetum owner Chang Li explains. “Though already towering above visitors, some of these trees will grow to 300ft; the equivalent of a football field stood on its end!”
Well, the tree is up but it’s looking a bit bare and in sore need of some decorations to brighten it up. Add a bit of sparkle this year with these beautiful ‘Mini Star Wishsticks’, individually handmade glass pieces from Jo Downs. We’re also off to Just Delights in Penryn, the gifts and homewares store, and R & J Supplies at Praa Sands and St Ives to pick up some super stylish decorations.
4. Christmas markets
Nothing says Christmas like a stroll around a festive market; the scent of mulled wine and spices, and the sound of carols, filling the crisp air. Pick up supplies for the holiday season and indulge in some tasty fare while you’re there. Padstow Christmas Festival promises a real treat for foodie lovers, with a whole host of top chefs headed to the fishing town to cook up a feast. There’s a market

and lots of demonstrations, plus a Santa Fun Run. Over at Watergate Bay there’s the Fifteen Cornwall Winter Fayre (28th November), showcasing Cornwall’s finest food producers. Truro Victorian Market (8th to 13th December) is a step back in time, while the Last Chance Christmas Market in Truro (18th to 20th December) is exactly that. Cotehele has a Christmas fair too. If you fancy really going to town, we expect

the Fowey Christmas Market to be truly magical this year, with lots of stalls, fantastic food, and a very special guest. Turn to page 63 for a preview of things to come.
5. Santa’s Grotto
Keep the kids happy with a trip to Santa’s Grotto. Of course, Santa gets around a bit and there are loads of places across Cornwall to visit the big man himself. Santa will park up his traditional sleigh to arrive at the Fowey Christmas Market by boat. For a truly spectacular and memorable setting, we’re off to The Eden Project. After completing the trail, enjoy a festive story around the open fire, witness the toy-making workshop and meet Santa himself with his elves and reindeer. The shows are understandably popular, so booking is recommended. And for another unique experience, you’ve got to try ‘Santa by Steam’ aboard the train on the Bodmin & Wenford Railway, throughout December.

This is where it all begins – the official turning on of the Christmas lights. Mousehole has long held a reputation for its increasingly elaborate installations across the beautiful historic harbour, some even that float, while Padstow’s display grows in scale and popularity every year. Watch lanterns take to the skies and witness the spectacle of Truro’s City of Lights procession on 18th November. The theme for 2015 is ‘The Museum of Lost Stories’ – and with digital elements too, prepare to be mesmerised!

Go on, why not bake your own this year? It’ll taste all the better knowing you’ve personally slaved over it yourself, earning the respect of your guests at the same time. A Christmas cake will keep for ages so can be made well in advance, and you can have fun mixing up the ingredients then decorating it with the kids. Can’t be bothered? That’s fine, too. Simply order a delicious cake from your favourite bakery, and just pretend you made it anyway!
7. Booze
Let’s face it, Christmas just isn’t Christmas without a well stocked drinks cabinet. You never know who might be calling in, so make sure have a tipple ready for every visitor. You’ll need brandy for the brandy butter; wine for the gravy; plenty of gin to keep Aunt Flora topped up. Yes the supermarkets may offer some bumper deals, but for something a bit more special and the expert advice, nothing beats an independent. So pop over to Constantine Stores near Falmouth, or Johns Wine and Spirit Specialist in St Ives to find some delicious craft drinks and get that cabinet stocked up. Turn to page 94 for advice.
8. The ultimate hamper
Of course, Christmas needs supplies of food. Copious supplies of food. With so much quality produce, we’re truly spoilt for choice when it comes to festive hampers. t will take 60 days or more and take them across the Atlantic: that’s over 3000 miles… rowing… two hours on, two hours off, 24 hours a day, 7 days a week. Forty foot waves, solitude, blisters and sleep deprivation; it is little wonder that more people have been into space or climbed Everest than rowed the Atlantic! I meet Neil Blackeby (above left) and Hamish Stewart, one of the teams entering this year’s race just before they leave Padstow for a 24hour practice row to check out the boat. The boat looks tiny moored up in the inner harbour but Neil and Hamish positively bounce off her to greet me. They are nothing if not hugely (probably should be in capitals!) enthusiastic about their upcoming adventure, and an hour shoots by as they keep me entertained with facts and stories, much

laughter and constantly interrupting each other. Neil tells me, “It all started at Earls Court boat show when I was 10! I met Tom aka ‘Moby’ Maclean, one of the first ocean rowers. I pretty much spent the day with him, following him round; and since then I have always wanted to row across the Atlantic.” Neil became a keen sailor, cruising, racing and delivering boats around the UK, Ireland and France, despite working as a firefighter in Windsor for 23 years! When he retired, he moved back to Cornwall. Then in 2011 the chance to buy the ocean-going rowboat came up. “She was built in Penzance in 2009 for the Atlantic Challenge, but the rowers hit a reef one mile from the finish line, so weren’t placed in the race. It’s one of the original design plywood boats and we have spent a lot of time getting her ready for another go.

We’ll finish this time!” Hamish chips in: “And we’ll be the oldest boat in this year’s race, with the oldest combined age between us of 105! But we certainly aren’t underestimating the challenge; the first week is going to be really hard while we settle in, but we’ve both wanted this for so long; we want to enjoy it, to embrace the whole experience.” Neil and Hamish became friends through rowing – both are members of Port Isaac Rowing Club, so when Neil bought the boat he talked to Hamish about taking part in the Atlantic Challenge. “We got lucky with some sponsorship.” Hamish explains, “On the last day of entries for the challenge, we had a meeting with Sharp’s Brewery who agreed to sponsor us. We were in! Now all we have to do is find someone to sponsor bringing the boat back!” Raising money for the boat and their chosen charity Children’s Hospice SW, in particular Little Harbour in St Austell, has taken up a lot of their time. Local pubs have each sponsored an oar – that will eventually end up on the pub wall, and small local companies have helped, either with bits of kit or funding, and Josh Kernow has done a charity record for them; the local community has really taken them to their hearts. “We have raised £6000 for Little Harbour already, but hope to raise more including some from the sale of the boat after the race,” Neil adds. The boat will be thoroughly checked by the organisers before and after the race, mainly for safety reasons. Hamish says: “We have to take 70 days worth of dehydrated and
wet food; bottles of water sit in the bottom of the hull to help with the self righting of the boat should we capsize. We have to keep all our rubbish on board – they check that when we arrive.” Neil interrupts, serious for a moment: “And we have to be tied on at all times; a life jacket is not much use if you fall overboard in mid ocean and aren’t tied on! Usually quite a short line, but in rough weather we’ll be clipped onto a longer line, so if we do get thrown out when the boat goes over we are well clear and don’t get hit by her!” Hamish chips in with another grin “Oh yeah, that’ll be me, swimming outside the cabin door, knocking to be let in, while Neil sleeps through all the drama!” I ask if the boat will be ‘dry’, they answer together: “Oh no, there’s some medicinal rum, a seafaring tradition and, of course, a bit of brandy and port in case of stomach upsets! And we are taking some treats: pork scratchings, smarties, jelly babies.” Hamish looks at Neil, “But you’ve eaten all the jelly babies already!” As I leave them back on the boat getting ready to go out, I decide that they are firmly on my dinner invite list – if they are so entertaining now, imagine the conversation after the race is completed! Then I hear Neil ask Hamish: “Shall we go for a quick half before we set off?”

The solution? Wooden sheets that slots together like a big 3D puzzle to create sustainable and unique seats, storage boxes, and beds. The Little Leaf multi-functional storage box/seat comes in a range of colours and can be customised with your child’s name or favourite colour. Children love Little Leaf furniture. It’s wholesome designs are fun and functional, yet sustainable. They’re built to withstand the most boisterous of toddlers and will last for years and years. Fed up with seeing mass produced plastic children’s furniture, that’s unlikely to biodegrade in hundreds if not thousands of years and that will most probably end up in landfill, Founder and Director Jake Howard wanted to create unique eco-friendly and sustainable brand that is designed, crafted and made in the UK. Jake explains: “I’m a father of two, and it’s startling seeing the amount of plastic used in the production of children’s toys and furniture, which is unlikely to be recycled and won’t even bio degrade in my lifetime, let alone my children’s. Therefore, it was important for me to come up with some alternatives for environmentally conscious parents to invest in the planet for their children”. Little Leaf uses birch timber that is responsibly sourced by the Forest Stewardship Council (FSC) and can be recycled entirely. The company doesn’t try to keep its costs low by using sprayed MDF. The Toddler Bed is designed to keep your little one safe with a side rail to stop them falling out. When they grow bigger the bed can be turned upside down so the rail is at the bottom, saving money and the need to purchase another bed. Both products have been tried and tested by little people with excellent results.

went to meet Megan and Shane, new owners of Interiora on the Falmouth Road in Penryn. Just walking into their stunning showroom makes me wish I was redoing our bathroom at home… maybe some new ideas wouldn’t hurt though while I’m here! Megan greets me with a huge smile “It was the showroom that really persuaded us to take it on,” she says, “I could really see the potential in the business, it was a great showroom, looked really nice and homely and it was a natural progression for us to start off on our own… it had been our dream for quite a while… so finding the just the right place that we could build on and make our own was wonderful.” And the show room is stunning with even more on offer than before, they have deliberately added a mid-price range to the high end products, for those of us with slightly smaller purses; as well as a range of interior and exterior doors and flooring. They are happy to just sell the products to you or will supply and fit, using their hand picked tradespeople. “For instance we can cut glass to size and fit for a sloping ceiling for you. And we offer a complete, bespoke design service. As well as baths, fittings and bathroom furniture they have a huge range
of tiles. “I always recommend you take a tile home with you to check out how it looks in situ.” Megan explains. I ask her about new bathroom trends. “The main thing is they are much more flexible now, there are far more products available so whether you have a tiny space or a big bathroom there is still plenty of choice. Free standing and wall hung modular units are popular for bathrooms now, much more than fitted vanity units. Big tiles made from porcelain are very on trend, they create a wonderful natural looking stone or wood effect and are much easier to maintain.” They have some fabulous flooring products too, from luxury vinyl tiles or a laminate that is 100% waterproof, guaranteed for 20 years and creates a natural stone or wood effect without all the upkeep. “It looks fantastic and really effective when down” Megan adds with a smile. These two seem to have all the right ideas along with a warm and demystifying approach to bathroom design.

or years it has been a family tradition to go to R & J Supplies in Praa Sands to buy new Christmas decorations. We make a day of it, shopping at R & J, a walk along the stunning beach and lunch at the Sand Bar. For returning visitors, at this time of year it’s an essential visit and it’s a real pleasure taking new people into the shop… watching their faces light up… and generally an “Oh, Wow!” So it was a real treat to meet the lovely Jane, one half of Roy and Jane Kettle who own R & J Supplies. A bit like meeting Mrs Santa Claus! Jane explained how the magic happens. “It all starts in February each year with the ordering. I just love picking out all the different things we’ll stock, each year there is more to choose from! Then at the start of September we start to arrange all the displays. I really love watching the faces of the staff as we slowly unpack all that I’ve bought. I know I’ve got it right from their reactions!” Jane adds with a smile: “I do love Christmas. I’m involved from start to finish creating all the displays. But I couldn’t do it without our fantastic staff: Paul, who’s been with us over 30 years, is known by all our
customers, Paula has worked here since 2007 and this will be Adele’s third Christmas.” We walk round the store as we talk and the displays are fabulous; there is something for all tastes, with glittery, shiny, blingy things in silver and gold, there’s lots of glitter ('Strictly': eat your heart out!). Decorations that light up, bears and reindeer that move, baubles and sparkly things to hang up. But also lots of natural wood, soft colours, fir and pine garlands and glass for those who want something a bit more muted this Christmas. “We aim for quality at the best possible price.” Jane adds. “And have a range that suits all pockets and tastes.” There is plenty of free parking and on Sundays 22nd, 29th November and 6th and 13th December there’s a free glass of wine or soft drink to help the shopping. “It’s our way of saying thank you to all our customers. We just love to make Christmas a bit extra special!”

In 1945, Bryan Wynter settled in Cornwall, living in a cottage on the moor above Zennor where he painted works inspired by the ancient landscape. This evocative work is one of many in ‘The Bigger Picture’, an exhibition showcasing the marvellous assortment of painting in Cornwall from the 1920s to the 1960s, until 21st November.
Sitting right on Polperro’s stunning 15th century harbour is Gina’s Art Studio, and this is where you can find Gina Farrell day-to-day, painting and chatting to visitors about her gallery. illions of people across the world will tell you of the joy that an animal can bring. After all, that’s why so many of us have pets. Animals really can do so much to lift our spirits, simply through offering companionship without judgement. Horses, in particular, excel in this regard. But they can do so much more too; they can play an important role in therapy, to help overcome emotional, mental or physical obstacles; to help alleviate worries or addictions; and to build or repair capacity for forming reciprocal bonds, friendships and relationships with others, helping to restore confidence too. This is because horses have a natural desire for company. They also mirror behaviour, responding intuitively to body language and so will be more willing to respond to positive language. They are also mentally complex,

with their own unique personalities. Another factor is that being large animals, horses have a big physical presence. When combined together, these factors make horses ideal animals to test, challenge and build your own communicative skills and a positive mindset. Interaction with horses can help those with autism build social skills and cope in a variety of social situations, leading to greater participation in society. Equine Assisted Therapy (EAT) as it is known has a rising profile, although sadly many are still unaware of the phenomenon or its benefits. Brown Horse Academy is a Community Interest Company, set up to help people with disadvantages, disabilities or who need help to move forward in their lives, through the use of EAT and Equine Assisted Learning (EAL). With a successful track record and credibility in the field, all income received goes towards the stables and upkeep of the horses. Working closely with other organisations, the company also seeks to raise awareness about the advantages of these practises, so that more people can reap the benefits. The company has a strong sector assisting persons with the Austism Spectrum disorders and an autism centre has been opened in St Austell. Managing Director and Founder Peter de Snoo explains: “It’s well known that humans benefit from regular contact with animals; and many have an especially unique relationship with the horse. Horses can be related to freedom for many people and this can be used to make an important connection between people and horses, for mutual benefit.” You don’t need an existing interest in
horses to benefit from EAT, nor do you need experience of riding. In fact, most EAT doesn’t actually involve riding at all! Sessions are individually tailored, and typically involve interaction in a range of activities such as leading horses over a series of obstacles, opening the mind to new ways of thinking. The team consists of qualified psychotherapists, counsellors, life coaches business mentors and horse professionals, assisting the company in achieving its objective, many being unpaid volunteers. Of course, therapy is a complex area without a simple ‘quick fix’. Depending on the client’s specific needs, EAT is just one component of a wider programme, often with several elements working together. These can also include life coaching, business mentoring, counselling and interview coaching, to help people re-integrate back into society or equip them with the right tools to achieve their potential. Indeed, it could prove just as useful to businesses looking to build team relationships. Brown Horse Academy has equestrian facilities dotted across Cornwall, from Penzance to Liskeard. So, wherever those in need might be located, there is a centre within easy reach to start reaping the benefits now.

s the busy holiday season on the Isles of Scilly draws to a close the winter flower season begins. The very first scented narcissi are often picked as early as September; by midOctober picking has started in earnest and will continue until Easter. There is a long history of flower farming on the Isles of Scilly and today narcissi are grown commercially on four of the five inhabited islands, keeping up the long held island tradition of producing high quality and beautifully scented narcissi for which Scilly is famous. As well as a great deal of local expertise, the flowers are helped by the mild climate. Scilly might get battered by some ferocious Atlantic storms, but the sea surrounding the little islands acts like a giant blanket and the temperature rarely drops below freezing. This means flowers can grow outdoors all through the winter in small fields, sheltered by tall pittosporum hedges. The way Scillonian farmers grow their flowers might be very traditional but the way some farms now sell them certainly isn’t. Churchtown Farm on St Martin’s has led the way and for nearly 30 years, the Julian family have been sending Scilly grown scented flowers by post, cutting out the
wholesale flower markets and delivering gift boxes of fresh Scillionian flowers direct to any doorstep in the country. The second generation of Julians, Ben and Zoe, are now responsible for the day-to-day running of the farm and, as Ben points out, they can’t rely on customers just popping in: “Our summer visitors are often surprised to learn how busy we are in the winter. Obviously there isn’t much passing trade in December, so people use our website or call us to order their flowers. Our farm team are good multitaskers: often the person taking your order will also have graded and packed your flowers.” Churchtown Farm is a hive of activity, employing 18 people year-round, with quite a few more joining the team at the busiest times such as Christmas and Mother’s Day, when thousands of boxes of scented narcissi will leave the islands, sending messages of love and a little bit of Scilly to homes all over the country.

Sunday 13th December and Tuesday 15th December Comedy legends Jasper Carrott and Alistair McGowan split the bill and your sides with a night of fantastic comedy stand up and amazing impressions. Jasper Carrott’s career has spanned five decades, starting as resident compére at the Boggery Folk Club in Birmingham in the mid-seventies. There he discovered his talent for comedy, and his inability to sing; the rest, as they say, is history. His comedy single Funky Moped shot to the top of the British pop charts in 1975, establishing him as a household name. The flipside was his take on the legendary Magic Roundabout, a record still sought out today by a whole new generation of fans. He is known as the Godfather of British Comedy. Alistair McGowan is probably best known to British audiences for The Big Impression which was, for four years, one of BBC1’s top-rating comedy programmes – winning numerous awards, including a BAFTA – and for his recent much-admired ITV1 sports-comedy You Cannot Be Serious (‘An excellent one-man show!’ Clive James, Daily Telegraph). We check out an inspiring new surf and outdoor apparel and hardware shop opening in St Ives.
W
hen we got wind of a new surf shop opening in St Ives, with a firm conscience for both great design and sustainable practice, we just had to find out more. So we catch up with owner Raven Williams, who gives us the lowdown on Common Wanderer. “Having grown up in St Ives, I’ve always been inspired by our natural surroundings, whether surfing, camping, or hiking”, explains Raven. “So it seemed fitting to start a shop that facilitates adventure and inspires people to get out and connect with nature.” And Raven has done just that, as he continues: “It was important for me to bring
something different to the town as in recent years there has been an influx of chain stores and fast food outlets.” Recently graduating in Sustainable Product Design at Falmouth University, Raven wanted to bring together a project that promoted the values of good design that’s thoughtful to the environment. Common Wanderer aims to provide functional apparel and hardware that’s both stylish and sustainable. The store aims to reflect these values through the items it carries, consider multiple factors in regard to where items are manufactured, the materials they use, and the context that they can be used in.

Traditional retail environments offer an unrivalled experience and despite plans to launch online, Raven explains that it was important to get the physical space right first. “We like to advocate adventure and we feel it’s refreshing to shop in an area surrounded by such natural beauty. Online can be an important tool for a business, but we aim to get people away from their laptops and out into the open! At this stage, we’re happy to be offering thoughtful products that balance function and style and aim to carry on doing so as we feel it sets us apart from traditional retailers.”

nyone who has renovated a home will tell you what a rewarding – albeit occasionally exhausting – experience it can be. The satisfaction upon seeing the finished result is unparalleled, and it can also be a financially rewarding process too. But whether tearing down walls or simply revamping with new soft furnishings, we all love to add those special and individual touches to our homes. And this autumn, we found a wave of inspiration at two Cornwall Home Show events, beginning with the Interiors Market in September, followed swiftly by October’s Home Improvement and Self Build Show. And, of course, Cornwall Living was there to witness all the action! The Royal Cornwall Showground, situated in rolling green countryside on the outskirts of Wadebridge, made the perfect venue to host these landmark events. Over the two weekends, hundreds of exhibitors, from master craftsmen and women to bespoke independent designers, showcased the finest wares, products and services that Cornwall has to offer for house and home. Event Organiser, Andrew Weaver, says: “It has been another fantastic turn out for our home events this year, and we look forward to building on this for 2016 with more of Cornwall’s finest”As well as the many stalls, the event organisers curated a series of
seminars, giving tips on everything from infrared heating to building control advice. Another fantastic component has been the ‘Meet the Expert’ sessions, a chance to talk face-to-face with those in the know; perfect for those embarking on an improvement or renovation project. Whether talking to architects about moving a wall in a listed building, or discussing lighting design to create the right ambiance in a particular room, the 25-minute sessions proved popular; an amazing opportunity to pick the brains of those in the know, at no extra cost. Looking round all the incredible stalls provides a lot of food for thought, and we soon worked up an appetite. Thankfully, the artisan food and drink market, ‘A Bite of Cornwall’, was on hand to deliver a range of delicious cakes, pastries, teas and craft beers, all lovingly produced right here in Cornwall. With another successfully year out the way, bring on the next Cornwall Home and Lifestyle Show next April! In the meantime, check out the Fowey Christmas Market this December, to get into the festive spirit.

went to meet Becca and Elliot Thompson the new owners of the Star and Garter in Falmouth. Tucked away at the top of High Street in Falmouth it is well worth searching out this lovely pub. There are plenty of little independent shops on the way up for a bit of window shopping and arriving at the pub it is warm, welcoming and somehow traditional and contemporary

all at the same time. On a sunny day in October the log burner is lit adding to the cosiness but the eye is immediately drawn to the views from the windows that run across the entire back wall. Not only is this a fab place for lunch or supper – but a great place for a natter and to while away some time with a cup of coffee watching the boats of all shapes and sizes drift by.

The sToRy so FAR…
Elliot and Becca are as welcoming as their pub – they got married in April this year and opened the pub in August – so it has been quite a year for them. Elliot has been a chef for the past 10 years, he explains with a smile: “It was always food; I love eating! But it is the sport of cheffing I love, being in the kitchen, working with the team with a clear goal in sight, being creative, the adrenaline pumping as you work to get delicious food out in good time and looking great! It is like a sport.” After college Elliot went to work at the Gylly Beach Café. Becca grins, “It was quite fortuitous really, I was away at university (she read Geography at Nottingham) and my mum rang me up and said the I should come home and meet the rather gorgeous new chef at the Gylly, she was sure I would like him!! I came back down to
Falmouth for Easter, met Elliot and, of course, mum was right… end of story, we got married eight years later!” In fact they made a point of thanking Becca’s mum for her match-making at their wedding. After she graduated they travelled for a year working their way round China, Australia and India with Elliot absorbing new ideas of wonderful flavours and cooking methods. Then back to Exeter where Becca did her Masters in sustainable development and Elliot cheffed at the Rusty Bike and Fat Pig, then a year at the St Moritz Hotel in north Cornwall, followed by four years in London with Becca working in international development and Elliot honing his skills working for Youngs in Fulham, Hawksmoor in Spitalfields and cooking for Stella McCartney. “By the end I was really pining for Cornwall. I always wanted to be a chef.” Elliot tells me. “But I wanted to be a chef in Cornwall, I

have enormous respect for its food; you feel attached to the land, sea and the food here. It wasn’t the same in London, even though I had been taking Cornish food up to London to the restaurants I worked in – it wasn’t the same! Now we change the menus twice a day to suit what has come in; that’s fresh!” The pair had been looking round for a place of their own and Becca tells me that Elliot loved The Star and Garter: “It was his benchmark: he would say ‘Yes it’s nice… but it’s not the Star and Garter!’ When it came on the market it was too expensive for us initially.” Elliot
takes up the story. “The building was in a pretty bad state, even our surveyor told us not to buy it because it needed so much work! But we persevered, negotiated hard and took it on. The alternative was that it would have been turned into flats, and we really didn’t want that! It does feel quite a big responsibility taking on such an iconic building, with so much history. It was a wine merchant’s when the harbour would have been buzzing with trade, full of exotic produce and people… in fact, it’s partly built of bits of old boats with thick wooden masts as beams.”

foodie “Owning a pub in a town where we’ve lived for many years is a dream come true and I hope we can respect all the pub’s traditions while making it a place where locals and visitors come and drink, eat brilliantly sourced and fairly priced food and be merry!” Philosophy on Food
“Simple, we have a really strong ethic about our food, respect for the animals and produce we use, and the people who produce them. We waste nothing – properly subscribing to the ‘nose to tail’ philosophy and our three chefs are the same; they hate to see anything go in the bin! We want it to still be the local pub and a foodie’s heaven; I roped in Stephen Knowles from Fifteen as chef. We had worked together at Gylly Beach so I knew we had the same ideals and philosophy and he brought two other chefs from Fifteen. They are a fantastic team.” The kitchen does all it’s own butchery. Whole carcasses come in from Philip Warren butchers so the chefs can butcher them into whatever they want to cook, they make their own sausage meat for their sausages and delicious scotch eggs. “There is always something being slow smoked in our ‘big green egg’ or brined for a few days. We have twice daily briefings with front of house so they know the provenance and detail of each dish. We have regular wine, beer and food tastings with the whole team – so they can give an informed view of dishes and drinks, and we take them to visit our suppliers. It’s not about preaching to customers, but having knowledgeable, informed staff who can tell you about a dish if you ask them. We are finding that many of our customers do want to know, are as conscientious about the food they eat and drinks they have, as we are.” Becca and Elliot agree that three chefs might seem a bit of a luxury – but are keen to emphasis that that
is why the menu is as good as it is, and can change so easily. “It really is our ethic behind the whole business,” Becca goes on. “We can’t deskill our menu by having fewer chefs. And the three chefs came on board together, they like working together and, like us, it was a lifestyle choice for them – they are in for the long haul! But all the staff are important, they choose to work here because we are a bit different in our approach.”

Time Off
A bit of a stupid question in such a new venture! Becca laughs, “We do talk about it constantly, live and breathe it, and we live above the shop. So we have designated times when we don’t talk about work: though it doesn’t always work!” Elliot adds: “But time off is walking Olive our French bulldog, Porthtowan to St Agnes, or somewhere on the Helford. Eating out is No 4 in St Agnes, The Gurnards Head or lunch at the Peppercorn Café in Perranuthnoe, also good for a walk. There are so many. We live in the most amazingly beautiful place in the world, and now own the best pub with the best team in our favourite place, Falmouth. It just doesn’t get any better!”

Hearty food
With the nights drawing in, Adam Cawood, Head Chef at Trevalsa Court Hotel, shares his tasty recipe for blade of beef with dumplings with us. Creating a warming, hearty dinner, this dish is perfect with a nice bottle of red, for a cosy, fireside evening. Marinate a blade of beef in red wine, port, vegetables, bay leaves and peppercorns for 48 hours. Pat it dry and season, then quickly brown all over in a frying pan. Strain the marinade and mix with beef stock. P lace the blade and liquid in a large pan, or oven proof dish, and put on a slow simmer, or 130�c in the oven for 8 hours. Remove the blade and reduce
the cooking liquid down until thickened. To make the dumplings, placed cubed bread and milk in a bowl and soak for 15 minutes. Squeeze out the bread and mix with bone marrow, beaten egg, chives, salt and pepper and breadcrumbs. If the texture is too sticky add more crumbs until it forms a ball. Roll into golf ball sized balls and pop in the fridge for at least an hour. C ook in a little of the liquid until they f loat. Add watercress to a pan of boiling water for 30 seconds. Drain it well and refresh under cold water, then blend in a food processor with 2tbsp of water

We catch up with Head Chef Matthew and are lucky enough to be treated to one of his tastiest dishes. It’s a tough job, but someone has to do it!

Fabulous food with
harbour views Delicious, great looking plates of food, friendly staff and a wonderful atmosphere.
O
n hearing that The Square had been awarded a Michelin “Bib Gourmand” we decided it was definitely time to revisit this popular little restaurant on the picturesque harbour front in Porthleven. It is the second restaurant in this well-known foodie village to receive the honour – the other being Jude Kereama’s Kota, which is right next door to The Square. It was a gorgeous evening after one of those beautiful sunny days we had in October, and we were looking forward to some great food. The décor is light, beachy and elegant with a wall of windows looking out over the bustling little harbour. The little restaurant was filling up fast and it was still only 7.30pm. We were greeted warmly and shown to our table, menu’s distributed and water arrived. There is a lovely relaxed, intimate feel to the restaurant and we settled down to mull over the mouth watering menu, then called our friendly waitress back – wine was going to have to be consumed to make the very difficult choice of dishes. The house white wine was dry, soft and delicious. To start we agreed to share: Porthleven crab bisque, crab rarebit on toast, pickled fennel and crab salad. And the smooth Cornish duck liver & port pate, apple & raisin chutney with toast. What fabulous flavours! The bisque was fragrant and delicious with the rarebit a tasty addition. The duck and port pate was rich, full of flavour and excellent with the chutney; we scraped the plate so we didn’t miss any! The pickles are worth a mention all of their own; the chef makes them fresh every morning and they are sweet and crunchy little additions to the plate - pretty wonderful just on their own. For main courses we again decided on one meat and one fish dish – to share! The slow cooked Primrose Herd pork belly, braised puy

lentils, black pudding, bubble and squeak, apple puree, root vegetable mash with rosemary sauce. And the roast Newlyn hake fillet, chorizo and butterbeans, sweet pepper fondue, local greens sauté potatoes and aoli. It was all fabulous, mouth-watering food. There were a lot of “ooh you must try a bit of this” and “wow, who would have thought of adding that!” The pork belly was melt in the mouth with lots of big flavours, the braised lentils had just enough bite, the bubble and squeak was a mini triumph and the addition of the rosemary sauce added an unexpected freshness to the dish. I think that hake is probably my favourite fish – it tasted fresh and cooked to a perfect translucent sweetness (it is a lovely sweet fish that is still slightly underrated). The chorizo and butterbeans added punch and texture along with the colour from the local greens, a terrific combination. And the aoli was a gorgeous buttery yellow colour, rich and softly flavoured with garlic the perfect foil to the fish. It’s also worth mentioning that this is fine dining for people who have been in the fresh air all day, walking the coast path or surfing… the portions are really generous so it wasn’t difficult sharing! Dessert menus arrived and we decided on
the lemon and vanilla crème brûlée, Cornish strawberries, basil syrup, with lemon curd ice cream. And, the orange panna cotta, raspberries, orange jelly and brown sugar meringues. All was heaven on a plate! The top of the crème brûlée shattered under the tap of a spoon, and the underneath was rich and light at the same time. The orange panna cotta was smooth and delicious with the little meringues crisp on the outside and slightly chewy in the middle – just as a meringue should be. Outside, the stars were out and the multi-coloured lights twinkled round the harbour, it all looked so inviting. So having enjoyed such a fabulous meal we opted for coffee and brandy outside on the little terrace. We gathered up the restaurant's blankets and headed outside to sip, kick back and watch the world and the stars go by. (I do know I can find fault, gently, or criticise, carefully, where appropriate – but there was nothing to find fault with – the Square really was fab, and fully deserves its Bib!).

That’s Bustopher Jones, with mouth-watering food, delicious cocktails,beautiful contemporary interiors and fabulous art.

nd it has been lovingly restored with a relaxing grey, pale blue and shaded white colour scheme and soft lighting. Bustophers is bright and airy for drinks and lunch during the day then switches magically to atmospheric, candlelit evening dining. General Manager Gianni shows me around. As well as the chic restaurant; upstairs there is ‘the attic’ a light and open space with seating for up to 30; though it would
be perfect for standing and mingling events – an office party maybe. It’s flooded with natural light during the day and transformed with lanterns in the evening. Or, there’s the panelled, candlelit, basement room with a large, solid wood table seating up to 12; the perfect space for a family reunion over the festive season. Outside there is a sheltered, tranquil garden away from the bustle of town, the perfect suntrap on a summer’s evening and a cosy, heated retreat in the winter. Next Gianni introduces me to the new head chef, Darren Millgate who was Executive Chef at Bedruthan Steps and the Scarlet Hotel. He arrives with some little tasters from the new main menu for me to try. The slow roast pork belly with puy lentils and water cress puree is melt in the mouth delicious, the hogs pudding with lyonnaise onions and roast Jerusalem artichokes completely changes my view of hogs pudding (I wasn’t a fan before). Both are big in flavours… but… it is the sea bass poached in coconut broth, chilli pak choi and crispy lotus root that is the best of all – just such terrific flavours without overpowering the fish… truly scrumptious! I asked Darren: why Bustoper Jones? “It’s been really exciting coming here, I am back to what I love most… which is cooking. And the kitchen is open to the restaurant so

it’s very much part of the whole experience. I’m a Cornish lad, born and raised near Truro and I have always wanted to work in the city, now I get to see family, friends and regulars coming in for some great food.” Darren explained with a grin. “It really is an iconic restaurant and meeting place in Truro.”
Favourite Ingredient Darren answers instantly “it’s got to be Forum’a Chardonnay vinegar, it lifts just about anything. I do love big flavours. And… I love vegetables, the challenge that comes with the changing seasons; meat and fish are a constant and I love them, but… asparagus season.” He pauses briefly. “And the autumn, we have some fabulous local squashes coming in now: onion squash or crown prince squash they are just so rich and vibrant. Oh and game! My father grew
all our vegetables when I was young and I remember farmers coming round with game in season, a brace of pheasants – stunning!” So Bustopher Jones is firmly back on the map for some fabulous big flavours, a delicious Christmas menu… and… if you are really lucky you might get to hear Darren sing, “I’m a happy chef and love a bit of a sing song! One of our waitresses is classically trained… so there could be singing!” Gianni adds: “It’s an upbeat place; you sing all you like!” I will be booking our houseful in as a delicious change from cooking over Christmas.

ith the evenings closing in, our thoughts invariably turn to open fires, wood smoke; meals with the family. And of course the evermounting concern as to what to buy people for Christmas. A bottle of whisky is a great present, but there are only so many times you can buy Grandad the same bottle of Glenmorangie. “We stock over 200 different whiskies,” explains Sam Hanson from Johns Wine and Spirit Specialists. “The problem with the standard releases from people like Glenmorangie and Glenfiddich is that they are endlessly blended to achieve consistency. The result, though of a certain standard, lacks the depth and complexity of whiskies from smaller, less well-known distilleries.” “What people see on the supermarket shelves are just the tip of the iceberg,” continues Tom Hanson. “If you want something really decent, you need to go to a specialist. And that’s not to say that you need to spend a fortune – we have some stunning whiskies starting from under £30.”
But what about people who aren’t into whisky? Perhaps you have a son or daughter who’s just discovered that alcohol can actually be savoured and enjoyed; sipped rather than downed. “If people aren’t into whisky, but still like the idea of sipping on a glass of something special, I usually point them towards rum,” explains Tom. “It’s a bit sweeter and a bit more easy-going, but some are every bit as complex and sophisticated as a top-notch single malt.” The advice of a specialist can’t be overlooked either. Ask a supermarket shelfstacker for tips on choosing a whisky and he’ll probably laugh at you – a specialist is an expert in his or her field; they can listen to your likes and dislikes, evaluate your palate, and point you in the right direction.

Have a special Christmas at The Perranporth Pavilion.
n a beautiful crisp, clear day, Perranporth beach is the perfect place for a seasonal stroll along the miles of golden sands with family and friends. With a festive chill in the air, it’s no wonder that Matt Burrell, owner and Executive Chef of Perranporth’s the Pavilion Boatshed Restaurant, has turned his thoughts to Christmas. Christmas time in Perranporth has always been special for Matt, but never more so than when he was living and working in Australia and would return to his hometown for a few precious weeks each year. “After finishing my studies at college, I was lucky enough to travel to Sydney and work in several Michelin-starred restaurants, including under the supervision of Executive Chef Serge Dansereau,” says Matt. But, while he enjoyed his work in Sydney, Matt realised that it wasn’t the same as being at home. “I remember coming home for Christmas and enjoying the family gathering around a large table full of festive foods, the beautiful decorations, the cold clear Christmas Day walks on the beach, everything that summed up home for me,” explains Matt. These short
but memorable advent trips home always left him longing to return to Cornwall and his hometown of Perranporth. Fortunately for Matt, the opportunity to combine his passion for Perranporth with his expertise as a chef was soon to present itself. “The lease came up on my parents’ old shops and it seemed too good an opportunity to miss. I wanted to help improve Perranporth and help revitalise the area; it’s such a great location,” enthuses Matt. He was quick to seize this chance of a lifetime, and founded The Pavilion Boatshed Restaurant, offering a luxurious dining experience by the beach. On his return to Perranporth, Matt felt inspired by his special memories of family Christmases and resolved that everyone deserves to experience Christmas like he did. “I knew that I wanted to deliver something that would give my customers the same magical Christmas feeling I had experienced. For me, it’s not about just a normal Christmas meal, but Christmas with family and friends in your home away from home,” he says. Got to do... VISIT COTEHELE’S CHRISTMAS GARLAND AND FOOD FAIR
The yuletide tradition of decking the Tudor Hall at Cotehele with a flower garland began in the 1950s. It has since evolved into a magnificent 60-foot garland made from more than 35,000 flowers, all grown and dried on the estate. Gardeners sow the seeds in February and cut daily in the summer. The team strip the leaves from each individual stem then bunch and hang them in the potting shed to dry. Construction begins in early November when visitors are invited to watch and help. The finished garland hangs in the hall from 15th November until 31st December (closed 25th26th December). Gather by the fire, enjoy local choirs and bask in the atmosphere created by this annual floral masterpiece. There’s also the annual Christmas Food Fair on 21st and 22nd November, in partnership with Taste of the West. So stock up on all of your favourite seasonal meats, seafood, cheeses, spirits and puddings. Entry for adults is £2, and under 16s go free.

Back to heal� Consultant Spinal Surgeon Mr John Fowler joins Duchy Hospital, to help patients who suffer with back troubles.
M
ost of us will experience spine problems at some point in life, giving rise to neck pain, back pain or a trapped nerve leading to arm or leg pain. A trapped nerve in the spine can be one of the most painful problems you are ever likely to experience. Lower back pain is the most common problem and can occur at any age. There’s often an existing problem that the patient is unaware of. An injury or minor incident can trigger the symptoms. Fortunately, in many instances, the pain may be self-limiting and can rapidly settle spontaneously. In 90% of acute back episodes, the symptoms will settle on their own within six weeks. However, if you suffer from longer-term (chronic) back pain or nerve entrapment, it could be time to see a specialist. Modern imaging can now regularly diagnose the problem leading to more effective treatments. Non-invasive treatment from a physiotherapist can help you manage your pain, but if this isn’t successful, interventions such as targeted injections or even spinal surgery could be an option. Duchy Hospital is now able to offer spinal surgery to private patients. Prior to this, spinal surgery was not available in Cornwall and patients had to travel to Plymouth for
surgery. Consultant Spinal Surgeon Mr John Fowler joins Duchy Hospital from University Hospital Southampton where he worked since 2008 as a full-time Consultant Spinal Surgeon. John’s areas of interest include minimal intervention spinal surgery, lumbar and cervical surgery and he provides one of the few endoscopic lumbar disc surgery clinics in the country. He now treats many patients as day cases – the surgery is performed under local anaesthetic and sedation with patients often walking back to their room minus their sciatica. Cervical spine surgery for intractable brachalgia and myelopathy is now a large part of his practice. John is keen to point out that the management of most spinal conditions is conservative. “I’m firmly of the belief that most patients will settle with the reassurance of an accurate diagnosis and an explanation of the natural history of the problem. But for those patients who don’t settle, modern spinal surgery can be and often is amazing!”

A helping hand This month we take a look at the supported living service offered by Cornwall Care.

ornwall Care provides personalised support for people with mental health issues and learning disabilities to help them live in their own homes. Its tailored care packages are for individuals with complex needs, including those with physical health and mobility issues. Supported Living Manager Heather Bamford explains: “Our supported living staff are trained to meet the unique requirements of the people we care for. We build teams of highly skilled support workers and our personalised approach means that we can help out in someone’s home or supported living flat for up to 24 hours a day.” Heather continues: “We also maintain good working relationships with other health professionals and any social support agencies that are involved in someone’s care. This ensures we can provide a complete overview of all their needs.” Cornwall Care helps with people with a variety of conditions, including (but not limited to) schizophrenia, schizoaffective disorder, bi-polar mood disorder, anxiety, and aggressive, challenging and high-risk behaviours. The team also helps with communication difficulties, complex dementia and Alzheimer’s, personality
disorder, learning disability and autism. Cornwall Care recruits staff with the skills to suit each individual, providing support for people across the county in a warm and homely environment. Typically, this is in someone’s own home, but Cornwall Care also has 11 supported living flats across Cornwall that are attached to its care homes Heather says: “Our aim is to promote independence and help people to develop the skills they need to live with as little help as possible. We give those with degenerative disorders increasing levels of support in the areas that they find most challenging.” These include everything from budgeting and daily living skills, to management of mental health and learning disability symptoms; from emotional support and support to integrate in to the community, to engaging in activities and groups, attending college, and developing skills in socialisation.
