The outdoors has quite an influence on interior design, in Cornwall in particular. After a fascinating visit to Padstow to meet Jill Stein, who seems to have quite a philosophical approach to interiors, and gardens, as places of calm and tranquillity. Spaces to relax in and take time to reflect. It turned out to be a recurring theme, shared by many of the other people I spoke to for this month’s cover feature, from Coastal Spaces to Nicola O’Mara; Earthworks to luxury holiday let company Cornish Gems: ‘bring the outside in, take your colours from nature, make your home your sanctuary’. So maybe it’s time to de-clutter a little at least, and bring some calming colours and ‘shaded whites’ into your home or holiday let. And, it really is time to organise Christmas, whether it’s the office party, large family gathering or a small, intimate meal! We have some ideas of how to make it all a bit easier in our Festive Celebrations section. And in Foodie, we meet the team behind The Beach Hotel in Bude, a truly stunning spot with a fantastic reputation for seriously good food, along with some other great foodie destinations and even a recipe or two to try. Along with all the usual tips on holiday getaways, art, news and even a secret beach, there is plenty to kick back and read… and maybe start that de-cluttering and re-decorating tomorrow! Enjoy!

Preparing for the future
We all face the possibility of losing capacity, or dealing with a family member who has lost capacity or has additional needs. Many of us don’t know the impact this would have. If you or your family member have not made a Lasting Power of Attorney, the Court of Protection will step in. Its aim is to protect and empower vulnerable people, including those who suffer from mental incapacity, regardless of whether this is due to age, illness or accident. The Court of Protection appoints a Deputy to deal with the incapacitated person’s affairs, like an attorney, managing their property and finances. Samantha Buckthought, Partner and Head of the Wills and Trust Department at Wolferstans Solicitors, has again been appointed to the Official Panel of Professional Deputies for the Court of Protection, a unique panel recognised by The Court for their skill in this area. Samantha has been a Panel Deputy since 2011, one of only 23 to be re-appointed, and one of only three in the Devon and Cornwall area. Samantha will be appointed to act in cases where there is no-one else available to act for the incapacitated person. Walk the Winter Garden at Pinetum While many gardens go to sleep for the winter, Pinetum Park is full of beautiful fragrance, colour and texture. Pick of the bunch at Fentongollan Aside from its fantastic beaches and stunning scenery, Cornwall is famed for farming. hether you are starting from scratch, want to turn your home into a peaceful haven with the latest trends in colour and design; or are renovating a holiday let, we have some top tips from some of our favourite designers, with the wealth of interior design advice on offer in Cornwall. The hard bit was choosing which ones to ask! It all started after talking to Jill Stein. Her ideas, about design, but more importantly the role of ‘home’, even if just for a holiday, were thought provoking (see page 48).

“Interiors should be calming and restful. Tranquil. I love being on my own at home, it’s my refuge.” Jill advocates the use of shaded whites, greys, blues and white, soft colours that seem to change with the light, a log burner, bookcases, and good use of lighting. “All my lights have dimmer switches on them. I think lighting can make or break a room,” she says. “Wood floors and ceilings are popular and I think we will see more wood, stone and even marble being used especially in bathrooms.” So we went on a bit of journey to find out more.
Making your home your sanctuary
Acclaimed interior designer Nicola O’Mara had similar thoughts but with some different ideas. “In this very busy world of gadgetry, people are finding sanctuary in their home. We are trying to avoid the huge overload of technology around us. Creating warm, subtle and atmospheric interiors, influenced by the outside; random organic shapes, curiosity cabinets, fossils, crochet, lace, baskets and weave, all with an added twist of luxury. There are varying colour hues; think sea urchins, coral, mineral crystals, new and old designs, silver mixed with ceramics and extravagant one of a kind pieces.” Nicola suggests using fresh and breezy fabrics, mesh and weave in furniture, layering indigo washed linen throws and adding oriental and Nordic inspired accents in soft warm and gentle colours. She adds, “Use plants and greenery to soften the room and aid relaxation and decorate with beautiful large crystals and minerals to create warm surrounding spirit.” www.nicolaomara.com
Bringing the outside in
Julianne Shelton from Cornish Gems, the luxury holiday cottage company, uses Shepherd’s House one of the holiday homes they market as an example. Julianne explains, “It’s a stunning Georgian home and the owner, interior designer Emma Caddis from Elemental Interiors has created truly stylish spaces for relaxed living.” Emma goes on to explain: “The Cornish love of the outdoors suits the trend for bringing nature in to your home. Furniture that can be used indoors and out, with interior details inspired by the environment. 2016 is a celebration of all things natural, mixed up with metallics, to give a bit of edge. Shepherds House’s beautiful proportions and stunning natural light are matched by its tranquil, generous grounds; so we let the house and gardens do the talking”. Emma says: “the interior is fluid from the inside out, connecting the space to the outside is really important today.” Slate floors run out to the terrace while a vintage chair with sheepskin rug creates warmth and texture. A large silver leaf mirror reflects a fabulous twisted willow chandelier, which adds some sparkle whilst picking up the natural vibe. Interior stylist Jessica Forbes has some great ideas on the use of colour, she explains: “Trending this season and well into 2016 is a return to the artisan. Be inspired by handmade pottery and handwoven textiles, infusing historic designs and techniques with new and bold definition. The colour palette is based on a global influence of vibrant oranges, mustardy yellows and natural greens paired with traditional tones of black, browns, greys and cream. Add to these warm metallics, copper, bronze and rose gold to embrace a little retro bling! And don’t be afraid to mix vintage items with mass produced goods, for example a vintage Ercol sofa, a retro pouf, an Ikea cushion and a fabulous rug from the Cornwall Rug Company. Good design doesn’t need to shout…
So says Isabel Humphreys from Coastal Spaces who showcase beautiful coastal interiors, furnishings and design from some of the best across Cornwall and Scandinavia. She shared the following tips with us. • “ Let nature inspire your colour palette. White and neutral colours allow a subtle backdrop. Cornish inspired artwork, soft furnishings and accessories add the colour and give a room the Cornwall feel. •D on't over clutter; allow the interior to be bright and airy, functional but comfortable. AND… never over-do the nautical decor - less is more when it comes to rope, driftwood and seashells! •W all cladding adds a nautical feel to a room; it's quite subtle, but adds warmth and makes a room more interesting. •O ne of the key themes for 2016 is Nordic. We will see lots of blues and greys and a lot of white. One thing at a time
Less is more and clutter is probably, almost certainly, out! So how to add to your freshly decorated room? We spoke to Tristan Williams from Earthworks, who sell design originals and a selection of vintage and salvaged items. “One good piece can transform a space - be it furniture, a picture, a mirror, an object of interest or art piece. Go for quality and keep it simple to begin with, and enjoy the process of creating and defining your space. Mixing old and new adds interest and depth providing you are consistent on quality. This does not mean expensive, just a great eye for good design and quality no matter what the object. One key piece can define and uplift a space. Do not try to fill the space in one go! Cornwall offers a unique resource for creating an interesting and enjoyable space that isn’t the usual high street solution. Designing for small spaces
Clare Hughes from CH Interior Design tells me: “Small spaces present the most challenging projects for interior designers, but they are also great fun to work with. Having special restrictions forces you to think outside the box, and often you come up with the most creative solutions this way.” She shared these images of a shower room that was built into an attic space between two bedrooms. It made very good use of what used to be two non-functional cupboards. Each cupboard opened into opposite bedrooms, and neither was easy to access or worked well for storage. Clare explains, “With some careful planning we created a wonderful funky shower room, a much more usable space. We played with cheerful vivid colours, as well as using nonslip Altro flooring for the floor, we used it on the walls to create the matching basin splash-back. We didn’t want tiles on the walls, and glass panels far exceeded the budget, so we used acrylic sheeting to line out the shower enclosure.” The result is a fun, yet very practical space, with a slightly retro feel, that might give you some ideas of what can be achieved in a small space, and add value to your home. www.chdesigners.co.uk

or most holiday home owners in Cornwall, the close of October half term week signals the end of the holiday letting season and the weekly schedule of changeovers and guests. For Lucie Howard, Creative Director of the HomeShed store and coastal Interior Design service Metamorphosis by Design, the renovation period between October and Easter is her busiest time of year. “Our in-house interior design service is more than a traditional design consultancy in that we really understand the importance of creating a coastal holiday retreat that captures the essence of the Cornish lifestyle,” Lucie explains. “We appreciate our clients’ needs, because we have firsthand experience of letting a holiday home and we know all the pitfalls,” she adds. Before moving into interior design, Lucie ran a marketing and PR agency for prestige designer brands in London. “I worked with over 30 leading designers, including Burberry, Jasper Conran and Versace – promoting these brands, designing press launch events and art directing photo-shoots – so I fully understand the concept of creating an aspirational lifestyle,” Lucie continues. “Ultimately, when choosing a venue for our summer holiday we’re all attracted by stunning interiors and spectacular views

– it’s about capturing the imagination of your prospective guest. f you’re looking for something special for the home or a friend, look no further than Atishoo Gallery, in the beautiful and historic Churchtown, on the south coast near St Austell. The popular independent gallery run by artists Liz Hackney and Paul Clark offers a bespoke picture framing service, with a small gallery and gift shop alongside. As Liz explains, the gallery is proud to support British artists, many of whom are based in Cornwall. “We source the majority our suppliers from the UK, often finding new artists and craftspeople via social media, or seeing interesting articles in magazines”, says Liz. One of Atishoo’s most popular suppliers is Emma Ball, based in Nottingham. “She’s been great to work with,” continues Liz, “designing a bespoke range of cards, magnets and coasters with Charlestown on them, exclusively for Atishoo Gallery. Emma uses British based manufacturers, such as Melamaster for her tablemats.” “Of course, the majority of artists are only a stone’s throw away, living and working in Cornwall,” adds Paul. “These include Alan Arthurs, the former set designer for the rock band Hawkwind, who continues to create ever more stunning paintings, often walking up from Duporth with new work wrapped in a pillow case!” Alan’s most recent work is a collection of basking sharks in various locations around the Cornish coast, painted in enamel paint onto both Perspex and acetate. Robert Burnett is another Duporth resident, who only recently started making little wooden drawer units for putting on your dressing table, often with hidden compartments inside, which are already proving very popular. Over the past year, Liz and Paul have reduced the amount of gallery space to make more room for the increasingly busy picture framing side of the business, expanding their workshop space. They are now framing for a number of well-known Cornish based artists including Amanda Hoskin, Ben Taffinder and Richard Lodey. “Word is getting around about our framing, our most recent inquiry came from Scotland!” says Liz.

Blue sea thinking A brand new properties and interiors venture offers a different perspective on coastal design.
F
or many, the great draw to Cornwall is, of course, the beautiful coastline, stretching for hundreds of miles, both in the north and south. Naturally this has a huge influence on the design of many interiors as we strive to attain a touch of coastal chic in our homes. Whether you’re lucky enough to enjoy a view of the glistening blue sea from your home or have to venture slightly further afield, there are many ways to bring a little of that ambiance inside. A good place to start is a visit to Coastal Spaces, a new company specialising in properties and interiors. Soon to open a new store and offices in Wadebridge, Coastal Spaces supplies exclusively Cornish and Scandinavian interiors, furnishings and homewares. Founders Isabel Humphreys and Sean Hodgson describe Coastal Spaces as a fusion business, combining their respective expertise. Drawing on Isabel’s Swedish heritage, all the designs have an elegant and less obvious take on the coastal theme. With Sean’s extensive background in the design and sale of many Cornish homes, and Isabel’s heritage (she spent her early

Isabel says: “We choose every piece in our collection with you in mind; our thoughtful edit is intended to make sure the things that fill your home work as well as look great; offering design that inspires, pieces which soften your home and evoke memories of summers spent by the sea.” Isabel aims to showcase beautiful coastal interiors and furnishings from some of the best designermakers across Cornwall and Scandinavia, with brands such as The Cornish Seaweed Company, Stelton, Kristina Stark, and Skandinavisk. W
inter maybe just around the corner, but don’t despair! It means plenty of opportunities to get cosy and warm. And although we live in one of the mildest parts of the UK, when the lights do go on and the central heating kicks in, creating cosiness can cost. But there are a few simple things you can do to keep warmer for less, as Cornwall home energy expert Happy Energy points out. There are two key things to look at: reducing the amount of energy you use and preventing energy you generate from escaping. 1. PLUG THE GAPS We’re really talking about insulation. Simply putting 270mm of loft or roof insulation in your home could save you £240, while cavity wall insulation could save you £160 per year. With about a third of all the heat in an uninsulated home escaping through the walls, it’s really important to plug the gaps. 2. TURN ON THE LEDS Replacing traditional bulbs with highefficiency LED bulbs can reduce lighting costs by up to 90%. Many LEDs have a life of 50,000 hours (or 11 years, based on 12 hours a day). Costing around £200 for the whole house, it’s a worthwhile investment. 3. THERMOSTAT Install and correctly use a room thermostat and thermostatic radiator valves and you’ll save between £80 and £165 per year. Turning your thermostat down by 1 degree
can cut your energy bills by 10%, according to Energy UK. The comfortable temperature for a living room is 21 degrees. 4. REPLACE YOUR OLD BOILER According to the Energy Saving Trust, about 55% of your annual energy bill is generated by your boiler. Upgrading to an A-rated, highly efficient boiler can save you £100s a year. Check your boiler before winter kicks in to make sure it’s working properly.

5. GET A SMART METER These nifty devices will tell you how much energy you’ve used and how much it costs on an in-home display and app. They’re a great way to keep track of energy usage. 6. GET THE EXPERT VIEW Get a home energy assessment from a professional, qualified company. This will help you understand where you are now, the savings you could make, and what you could benefit from moving forward. he Feed-in Tariff has made solar PV an excellent, long-term investment since its initiation in 2010. However, recent proposals by the Department of Energy and Climate Change to cut the Feed-in Tariff by up to 87 percent have put this in jeopardy. The Feed-in Tariff scheme was setup by the government to incentivise the uptake of solar PV installations, with the aim to help achieve the UK’s wider energy and carbon consumption targets. In effect, the tariff pays customers for the solar energy they generate and any excess energy, generated but not consumed, that can be sold back to the grid. Tariff payments and energy savings give solar PV arrays a payback period of around seven years. Should the DECC’s proposals to cut these payments by nearly 90 percent be passed, the financial viability of solar installations to homes and businesses is at risk. Due to the scheme’s overwhelming success, the government is hitting the tariff rates hard and customers interested in solar PV will now have to seriously consider making the switch before 2016. With a wealth of experience in this area, the renewable energy company GreenGenUK has

t’s a rather wet and blustery day when I set off to meet Jill Stein. Her office is above the Padstow Seafood School where excited parents and their offspring (I suspect the adults are even more excited than their children) are waiting for the afternoon cookery lesson. Jill meets me and takes me up to her office with its fantastic views out over the estuary. She is an elegant, striking woman who looks happy in her own skin; she is also extremely warm and friendly. We start with a whistle stop tour of the restaurants and some of their hotel rooms. Jill has designed all the interiors for the business since it first started some 40 years ago. “I just had to jump in and do it”, Jill

tells me with a grin. “We had our first restaurant and the two floors above, so as well as running the restaurant, I took to all the interior design work. And discovered that I loved it!” She was responsible for the smooth running of the restaurant for 25 years, but now as well as doing all the interiors, Jill keeps an eye on the smooth running of the whole business. “I like to know what’s going on”, she explains. “I’m here for everyone and am responsible for keeping the integrity of the business and the brand. But I do believe in letting my people get on with their job. When you have really good people you can do that, but they know I’m here if they need me.” For the past 18 months, Jill has been working on the 40th anniversary of the business and she now has her son Edward and his wife Kate working on the team with her, designing the new restaurants in Winchester and now Sandbanks, Dorset. “It’s wonderful having them on board with me. Edward is a sculptor, so has a real eye for design, and

I work with, interacting with the team, just the whole creative process.” Jill’s face lights up as she’s talking to me. “Our generation, people who work for themselves, we don’t want to retire – it’s a state of mind, I guess. For me, work and life overlap so there is no problem with work-life balance!” She keeps fit by going to spinning classes at the gym two or three times a week, and walking along the coast path. “I am very happy living by the sea; the north Cornwall coast is the best, I love the Atlantic, it’s wild and it suits me. But most of all, I just like being at home in my own space listening to music; it’s my refuge. I do like being on my own.”

Interior design tips? Jill answers without hesitation: “Less is more, same as with our food style. Rick and I are of the same opinion – don’t gild the lily too much! Interiors should be calming and restful. Tranquil! It doesn’t have to be expensive; invest in one or two statement pieces rather than lots of bits. You can always add more later! I think lighting can make or break a room; all my rooms have dimmer switches. Put some bookcases in and buy some books, and most importantly a logburner!” she adds with a huge smile. “Rick says I have an addiction to fires. A logburner is so comforting and it’s company on a bleak winter’s evening… it’s primal really, in our DNA – we need a fire.” Jill stops and reflects for a moment then goes on. “The most important things in my life – apart from family – are food, music and a log burner!” Then her face lights up again as she adds “Oh and a glass of wine!”

ou might have thought that anyone is entitled to leave their assets to whomever they wish by making a Will. But a recent decision by The Court of Appeal ruled in favour of a woman (whose estranged mother had left her entire estate to three charities, specifically excluding her daughter from her Will), by awarding her £164,000. Mrs Ilott was an only child, and had become estranged from her mother when she went against her wishes to marry her childhood sweetheart, who she is still with today. Largely dependent on benefits, Mrs Ilott made a claim for “reasonable financial provision,” even though her mother had left two letters along with her Will explaining why she didn’t want her daughter to receive anything. Stephens Scown solicitors advise that you must explain your decisions as clearly as possible when making a Will. If you are gifting your estate to charities, they advise you explain why, as well as any connections you may have had with them
during your lifetime. “There has been a steady increase over the last 20-30 years of courts allowing claims by adult children, even those working and earning an income, to meet their maintenance needs,” says Davina Haydon, a partner in the inheritance and trusts disputes team at Stephens Scown. If a Will has failed to provide for you, you could have grounds for making a claim under the Inheritance Act for reasonable financial provision. “However, there is a time limit for making claims,” says Davina. “You have six months from the date of the grant of probate.” So whether you want to draw up a Will, or you’re looking to make a claim, the importance of sound, professional advice is clear.

alloween approaches, and this Autumn we’re looking forward to the celebrations at Heartlands, swiftly followed by the annual Bonfire Night Celebrations at the beginning of November. And this year, Halloween promises to be a real extravaganza as Heartlands hosts two events. The first, for children aged 12 and under, takes place on Halloween, promising spooky treats and ghoulish games for everyone. The menu will feature some old favourites such as the Full Cornish Breakfast, piled high in the traditional way on a miner’s shovel, and new dishes including Granny Tolgus’ Tatie Cakes and the Tinner’s Hand – sure to become seasonal favourites. As the festive season approaches, The Cornish Pantry unveils its Christmas weekend carvery, starting at the end of November. The carvery is renowned locally and was highly commended by Taste of the West. This is an opportunity to sit down with the family for a mouth-watering, homecooked meal on either Saturday or Sunday, from 12pm to 2pm. There’s more sumptuous food to be had at the Simply Cornish Hampers shop. Stocked to the rafters, the store offers the best of Cornish food and drink under one roof – from chocolate to tea, cyder to gin. Whether you’re refilling the larder or sending a gift, there’s a wealth of choice either to take away or have delivered. Supporting Cornwall produce has never tasted so good!
Have a spooktacular half-term As the winter approached so too does half term week – and Cornwall Gold has some frighteningly good events for the whole family. Tolgus Stream Panning will be open from
Wednesday 28th October until 1st November, with some spooky new additions. Will you find a treat like fool’s gold and gems, or will your pan be full of creepy crawly tricks? Try your hand at finding the treasures buried in the sand, much like tinners used to do in days gone by. Over at Simply Cornish Hampers there’ll be a series of terrifying tasters from 25th to 31st October. Dare you try the chilli? It’s hot, but devilishly delicious! Can you resist the chocolate? So you might as well make it one to remember, by creating some irreplaceable memories to cherish for years to come. And if you’d prefer something a little more informal, why not head to Rafferty’s Pizzeria and Takeaway? They’ve put a festive spin on the classic pizza with a 12-inch base, topped with shredded duck, sausage, sage stuffing, sage and chestnut. And if you fancy pizza as a dessert (something we’re keen to try!), opt for the Nutella and ricotta topping. Or you could go for the cinnamon churros with chocolate sauce. W
e meet the team behind the acclaimed The Beach Hotel and Restaurant in Bude. Susie and Will Daniel, the owners, greet me on the fabulous terrace of their hotel and restaurant; the lovely decked area wraps right across the front of the hotel’s über-chic bar and restaurant with stunning views out over Summerleaze beach. It’s not difficult to see why this hotel has become a hit with locals and a real luxury foodie destination for visitors.
A bit of background Owners Susie and Will
Like many of us, Susie and Will moved to Bude some 15 years ago from Chiswick when two of their three children were small because “it’s just a great place to bring up a young family and we fell in love with the lifestyle.” They both ran other businesses for a while with Will still commuting up to London. When this iconic hotel overlooking the beach came on the market they jumped at the chance of another complete change of pace: “We bought the hotel in May 2012, so were on a very steep learning curve to begin with.” Will explains with a wry smile; “We kept it as just a bed and breakfast for that first summer, there was no bar or restaurant.” Susie adds: “But we could really see the potential of the place, it has such a wonderful position
above the beach, so we started by adding the bar and big sliding glass doors.” Then in 2014, they added the stylish restaurant, moved the bar to its current position and extended the terrace. “We have learnt a huge amount over the past three and a half years,” Will goes on. “We realised very quickly that if we wanted to be as good as we knew we could be, really create great times and memories for our guests; then we needed to be involved with and oversee everything. We share the General Managers role ourselves, and have a fantastic team in place who share our passion and vision.” Right on schedule, Joe Simmonds their Head Chef arrives and joins us fresh from the kitchen.

As Joe sits down he tells me, with a huge smile: “I remember coming to the Beach for the first time, it was just a cocktail bar then, but it was stunning and I just immediately thought: I need to work in this place. And here I am!” Joe explains that he got into cooking when he dropped out of college. “As a child, I had always baked with my grandma,” Joe tells me. “So I found an apprenticeship in the kitchen of a local pub in Hebden Bridge where I lived. And I just loved it from

foodie the start. The kitchen was such an exciting place to be, the noise, the swearing and flames everywhere. It was proper pub grub with big flavours.” Then Joe worked as chef de partie in an AA one star rosette restaurant. He grins and continues: “That really changed everything for me, and made me think ‘Wow’; food is pretty cool! That kitchen was part open to the restaurant and totally different from the pub; producing fabulous food with real class!” From there, Joe’s journey learning all about food and flavours continued at a pace. There followed time working in a tapas bar in Mallorca, learning about unusual flavours; then back to England to work in a one rosette country house hotel, where he was supposed to work for two weeks but ended up staying two years; and by the time he left it had two rosettes. This experience culminated in being classically trained at Michelin Star restaurant, The Priory in Bath, under Sam Moody. “That was a tough kitchen and the food was amazing; it really
consolidated all my learning and I gained so much really valuable experience.” By then, Joe had also discovered Cornwall and Bude in particular and was keen to move down. “I took a job as Head Chef in a pub here for a while and then worked as sous-chef at the Beach. I must have done something right because when Will and Susie took the restaurant back under their wing they offered me the job of Head Chef – and I was in heaven: back in Bude running the restaurant I had loved from the start! I have a terrific team, the souschef worked with me at The Priory. And, despite my early love of the drama and excitement, I like a happy, calm kitchen now and I don’t expect anyone to do anything I wouldn’t do!” Joe adds with a grin. Will comes over to tell me that Joe is far too modest; “He’s excellent, he does everything, manages his team, puts the menus together, does all the ordering as well as cooking! He is such an important part of the team here.”
“My cooking style is fresh, exciting, 90% local; but I’m not scared of using foreign influences to really lift dishes. Big flavours and seasoning! I am very hands-on in the kitchen.”

JOE - WHY CORNWALL?
“I first came here in the summer, and Bude is gorgeous in the summer; I wanted to stay here. I love this place. It’s more of a home than where I grew up – which is also lovely. But the coast around here is unbelievably beautiful; we have a young springer spaniel so I go for lots of walks along the coast. It gives me time to reflect. There’s a freedom and a peace about the north coast that I love. And there is a terrific community feel to Bude, the people are really lovely.” Joe keeps fit by jogging on the coast paths as well as walking; he also plays five-a-side football for a local team. He has two little girls – the youngest lives with him and his girlfriend, so these days, much of his time-off is spent with his family. “My favourite night in is time with the family, feet up on the sofa. Cooking at home is simpler, a good roast, meatballs and pasta, things that are quick to prepare and cook themselves in the oven… with lots of flavour! And if we do go out to eat, then I like things I don’t normally cook, so a good curry: I’m a big curry fan or Asian. And if there’s a sushi bar nearby, I can eat sushi all day!” It’s been lovely talking to Susie, Will and Joe; their mutual respect and admiration is clearly evident. But, more than that, they genuinely like each other; probably another reason why Joe feels so at home. I ask about their plans for the future and Susie answers, “It’s still a young business and we are focusing on the quality of the hotel offering as well as the restaurant, and marketing both. We are with the Mr & Mrs Smith luxury boutique hotel site now, so that was a bit of a coup!” Joe smiles and adds: “And I am extremely happy to be here, it has all turned out so well! There was never a big plan, and I have ended up working in this amazing place… maybe I will buy my own home next.”

he craft drinks revolution is spreading fast. Gone are the days when we were limited to a handful of big brand beers, ciders and spirits – there are literally thousands of products out there, with new ones springing up all the time. Take gin for example, as Tom Hanson of Johns, Wine and Spirit Specialist, in St Ives, explains. “Ten years ago we stocked three gins: Gordon’s, a cheap alternative to Gordon’s, and Bombay Sapphire (for people who didn’t drink Gordon’s). Now we stock nearly one hundred different gins, each with its own story, and each with its own unique method of production.” He continues: “Granted some are big brands in disguise, but many are the creations of people with a genuine passion for what they do, who have toiled away in garages and outhouses for countless hours to bring us something different.” But the proof of course is in the pudding – what exactly do these craft spirits taste like? Are they really that much better than the big brand alternatives? “To help answer this question we conduct regular in-store tastings, pitting the big
boys against the small-batch competitors,” says Sam Hanson. “The response has been overwhelming. People are not only impressed with the craft spirits, they are quite simply flabbergasted. Even something as supposedly premium as Grey Goose Vodka, is annihilated in blind tastings by much cheaper, small-batch alternatives.” The same, of course, is true for wine and beer, and just about any other drink. After all, how can something mass-produced compete with a product that has been genuinely handcrafted? But don’t take our word for it – next time you fancy a drink, give the supermarket a miss. Pop down to your local independent spirit merchants instead, and try something with a little soul.

ITALIAN JOB An inspiring family brings the authentic taste of Italy to west Cornwall.
I
t’s no secret that Italians are passionate about their food; cherishing simple ingredients of the finest quality, with flavours that pack a punch. But they also know that there are other essential ingredients to create the perfect meal: flowing wine and great conversation in the company of friends and family. This is known only too well by Tony and Angela Gatta, who have been bringing a little taste of Italy to our shores ever since opening The Italian Kitchen in Hayle, in 2000. The seaside Cornish town near St Ives has been rising in profile over the last ten years, thanks in no small part to the popular independent businesses and bistros such as The Italian Kitchen. Following its success, Tony and Angela opened a sister restaurant in Newlyn in 2003. Home to Cornwall’s largest fishing port and a thriving market, which serves restaurants all over across Europe, Newlyn made the perfect location to host their fresh, local produce. Over the last 15 years, the Gattas have built a reputation
based on great food and good old-fashioned family values. Recently, they handed over the reins to their son, Emile, who, as Angela explains, “is using his degree in Accounting and Finance and his passion for excellent food to continue to grow the business even further, incorporating our original ethos of offering quality and interesting food at great value for money.” Emile, who got involved from a young age, enjoys his time with the customers, as well as creating exciting new menus with the kitchen. “Our new Christmas menu is now available,” he adds, “incorporating excellent Mediterranean dishes using the freshest local produce and freshly caught fish, while maintaining our classic Italian favourites of handmade fresh dough pizzas and pasta and ragu dishes.” Both restaurants are individually styled to suit the cuisine, creating a casual warm ambience where you can relax and enjoy pre-dinner drinks at the bar. Both have a heated alfresco dining option, while Hayle promises a garden and patio leading down to the Copperhouse Pool for waterside dining, with its abundance of bird life.

Amazing food in a stunning location at The Ferryboat Inn on the Helford River.
estled on the banks of the Helford River in an idyllic location is the stunning 16th century Ferryboat Inn. The ancient building sits on the shoreline, overlooking the Wright Brothers’ oyster farm. As we head to this spot for a romantic dinner, with the last of the evening sun glistening upon the water and boats gently bobbing in the background, it’s hard to envisage a more serene and perfect place to dine. There’s plenty of outside seating on the terrace, just a stone’s throw from the beach, to soak up the awe-inspiring and everchanging view. What a place to while away
time on a summer’s day and watch the world go by! But, with the autumn evenings now beginning to cool, we decide instead to head inside for a table in the corner, beside the roaring log fire. The tables are individually decorated, adding to the cosy, relaxed atmosphere. But, of course, the best ambiance on the planet can easily be destroyed if the food and service are not up to scratch. Thankfully, from our experience, this is not a charge that could be levied at The Ferryboat Inn. The food here is amazing, as we soon discover. There’s great choice on the menu; of course, plenty of seafood,

but meat lovers and vegetarians are well catered for too. In fact, our biggest worry is which of the many tempting dishes to order; and which bottle from the fantastic selection of wines on the list to accompany them! Again, this dilemma is quickly solved
with a little help from the friendly, attentive waiting team, all knowledgeable about the menu and eager to please. For our starters, we opt for the smoked salmon and crab on homemade toast, both showcasing the freshest seafood, with delicious but understated flavours coming through. I follow this with the Ferryboat burger, served with dill pickle, coleslaw and chips. It’s a simple pub favourite, perhaps, but what really shines through is the quality of the ingredients, in particular, the cut of meat. My partner chooses the special of the day: grilled haddock with garlic mussels, roasted tomatoes and new potatoes, which looks equally tempting as it arrives. Once more, we’re spoilt for choice with the dessert menu – the Trelawney and stout chocolate pudding with double cream sounds delicious. But after much umming and ahhing, we both go for another sweet treat: the sticky toffee pudding, topped with a generous dollop of Rodda’s clotted cream. It’s the perfect end to a fantastic meal! As the last of the fire reduces to orange embers, we order a coffee each – not really out of need, but stemming more from a reluctance to drag ourselves away from this blissful setting. The evening inevitably draws to an end, but with appetites satisfied and contented souls, we console ourselves with the thought of planning our next visit.

Try a bit of hake, the most underrated fish in Britain!
ake is one of the most underrated fish in Britain and historically most of the hake landed in Cornwall has ended up in Spain, where people love it. Cornish hake is now the first in the UK to have received Marine Stewardship Council (MSC) accreditation, which signifies a well-managed, sustainable fishery. The white flesh of hake is quite soft but firms up on cooking, with a hint of sweetness, especially if really fresh. Because it’s a large fish it comes in substantial chunks, so try using it in place of salmon steaks or cutlets in recipes. This dish is lovely for early spring when the first Cornish earlies are arriving but the winter greens are still around.

Perranporth Pavilion on the north coast promises luxury homemade ice cream and fresh seafood, the perfect complement to a stay at Burrell’s Holidays.

t’s a beautiful day at Perranporth beach. With miles of sandy beach and crystal clear waters, the beach is buzzing with visitors and Perranporth’s very own luxury handmade ice cream parlour, Pavilion Ice, is understandably busy. But as the last days of sunbathing and sandcastles slowly draw to a close, Pavilion Ice owner and proprietor Matt Burrell is looking ahead to the upcoming season. “Autumn is one of my favourite times of the year. I can experiment with warmer, more filling dishes made with fresh roasted vegetables and local seasonal catches, like last year’s Day Boat Red Mullet which became especially popular with customers,” says Matt. For Matt, a new season also means new flavours at Pavilion Ice as he uses local produce as inspiration for his Italian-style Cornish gelato. His newest creation of Cornish rhubarb and custard is freshly made on site after a bigger than normal fruit and veg delivery. “I was thinking of all the

classic desserts you can make with rhubarb and I wanted to see if the same combinations would work as an ice cream too,” he explains. Pavilion Ice creates dozens of flavours on a daily basis, which range from traditional Cornish favourite, clotted cream vanilla, to the more unusual tastes of watermelon and white chocolate. There’s even a specially made range of dog friendly ice creams to give even the choosiest of dogs a chance to enjoy a beef, lamb or cheese ice cream on the beach. Next door to Pavilion Ice, Matt’s adjoining restaurant The Pavilion Boatshed offers a luxurious dining by the beach experience. The menu focuses on using locally sourced meats, seasonal produce and freshly caught seafood to create tasty and fulfilling dishes that reflect the very best in Cornish cuisine. The restaurant itself is in a unique and intimate setting. On a sunny evening, customers can dine outside while overlooking Perranporth Beach. On cooler evenings, a glass panel is pulled across the front of the restaurant to keep the cold at bay while retaining the view. Matt, who was born and bred in Perranporth, returned to his hometown three years ago to set up the Pavilion Boatshed and Pavilion Ice. Matt is from a long line of entrepreneurs as members of his family have spent several years running shops and holiday accommodation, in and around Perranporth. After leaving his studies at college, Matt travelled to Sydney, to work in several Michelin-starred restaurants, including
working under the supervision of French Canadian Executive Chef, Serge Dansereau. But while Matt enjoyed his work in Sydney, it wasn’t the same as being at home. “I missed home and working with my family so after my parents suggested coming home to run a place of my own I couldn’t imagine doing anything else,” he says. After another successful summer, Matt is looking forward to seeing what the upcoming season has in store, both in terms of food and in business. he Springer Spaniel is everything you could want from a rural, foodie pub, nestled in the quiet hamlet of Treburley, on the outskirts of Launceston on the Cornwall-Devon border. On a chilly, late September evening we are welcomed by the soft lighting, country chic style and the warmth from the roaring open fire. A babble of laughter and chink of glasses drifts to greet us at the door and feels just right for the first weekend of the autumn. The tables are all fully booked, even though it’s England’s first Rugby World Cup game, which gives you some idea that this isn’t simply the ‘local’, but the perfect mix of fine dining and Cornish village pub. Not content with relying purely on the reputation of owner and Masterchef winner Anton Piotrowski; the team, who feel more like a family, are attentive and knowledgeable about the dishes on the exquisitely creative menu, and helpful in recommending drinks to go with the food
from their hand-picked wine list. Scanning the menu it’s clear to see the emphasis on sourcing their ingredients from the best of local producers to create an innovative twist on many traditional dishes. The Springer Spaniel has always had a good food reputation locally, and in the 18 months since Anton and his team took over, they have transformed the atmosphere, menu and appearance. Three dining areas keep the cosy, relaxed country pub feeling, with the versatility to cater for larger parties as well as more intimate dining all on the same night. The menu has a generous selection for everyone from vegetarians to those wanting to sink their teeth into the 48-day hung sirloin steak, locally sourced from the well-respected butcher, Philip Warren, only a few miles down the road. Dishes, as they start to arrive, are set on a beautiful array of unusual, slightly mismatched, rustic crockery; their own

handcrafted little masterpieces. The food itself is a real treat for the senses; rich colour palettes starting with the contrasting white and squid ink bread, the black pudding scotch egg with a perfectly oozing vibrant yellow yoke just a taster of the perfection to come. Then the tomato, red pepper and chorizo broth with Fowey mussels a perfectly light, frothy dish, just enough to lead into the mouth-watering main course: a lamb rump with a warming accompaniment of harissa butter beans, grilled lettuce and tzatziki sauce. Delicious sights, smells and tastes – another hat trick! The choice of desserts doesn’t disappoint, from the traditional sticky pudding to the more cosmopolitan Lemon Bavior, all translating seamlessly from beautiful plate to a hit of flavour and texture in the mouth. With such high standards, it would be easy to assume there was an air of ‘silver service’ though this is absolutely not the case. Each course carefully explained as it is served,
nothing too much trouble even though tables were booked as late as 9pm to be seated. Anton and his team have put the little hamlet of Treburley, on the map; they have carried out a phenomenal job in creating a ‘go to’ place to eat, that remains a local pub for many, and a place to travel to for others. They have gently and unassumingly built a solid and loyal local customer base being mindful of what the Springer Spaniel was before they took over. Even through the quieter months in Cornwall, it is wise to book early to avoid disappointment, as this tucked away, hidden gem is rapidly growing into a destination place to eat.

osing weight is a fantastic achievement. However, some can be left with folds of loose skin and a lack of muscle tone, giving the abdomen a ‘saggy’ appearance. Pregnancy can be another cause of loose, sagging skin on the tummy. In some cases the tissue that binds your muscles can be weakened too. Exercise can restore muscle tone but has little effect on its tissue envelope. A saggy tummy may simply be a result of the ageing process or it could be a stubborn area that you’ve been unable to shift with diet or exercise. Whatever the reason, having a slim, toned tummy is important to many when it comes to feeling good about ourselves. It can really make a difference to what we wear and how confident we feel. Abdominoplasty (or a tummy tuck) is a cosmetic surgery procedure that tightens the tissue binding the muscles and removes loose skin and fat from the abdomen so that it appears flat and toned. Mr Antony Fitton, Consultant Plastic and Reconstructive Surgeon at Duchy Hospital, says: “This is one of the most common operations I perform, with a high rate of patient satisfaction. As with any surgery there are risks but with diligence these are reduced to a minimum. It’s very important that patient and surgeon discuss
the surgical plan and ongoing care in full, preferably on two separate occasions. This gives the patient a chance to reflect and consider their choice.” A number of options are available; your consultant can advise which would be best for you. The procedure is performed under general anaesthetic, usually involving a one to two night stay in hospital, and you’ll need some time off to recover at home. The length of recovery period depends on the type of operation and your own levels of fitness. Duchy Hospital holds regular free open events to meet a consultant, ask questions, and have a mini consultation to establish whether you would be suitable for surgery. See the website for details. 365 Secret Beaches
PENTIRE STEPS Be the first to make tracks in the sand with this month’s stunning secret beach on the rugged north coast. Area The golden sand of Pentire Steps sits at the northern corner of Bedruthan Steps and offers solitude from its popular big brother. Backed by imposing cliffs and littered with towering sea stacks, Pentire Steps is one of the most photogenic beaches on the north coast. Overlooking the beach is Diggory’s Island, a grass-topped island exhibiting an impressive natural arch that provides a doorway through to the rest of the bay. With large tides sweeping across the bay everyday, timing your visit is essential with low tide revealing impressive expanses of open sand and rock pools. Strong currents can make swimming conditions dangerous and care should be taken when exploring on an incoming tide to avoid being cut off.
Directions Follow the B3276 north of Mawgan Porth passing both of the main car parks for neighbouring Bedruthan. Look out for the small left hand turn and follow the track until you reach a grassy National Trust car park next to Pentire Farm. Follow the footpath to the coast, turning left at the signpost and traverse the narrow headland track 100m down to the sand. The final drop onto the beach will require a minor scramble.

Taking flight Care home worker Mandy flies in celebration of 20 years with Cornwall Care.

ornwall Care has 16 residential and nursing care homes across the county providing support, care and respite for elderly people and their families. These include Headlands, the residential care home in the stunning Carbis Bay, near St Ives. The Headlands building, which was once a hotel and retains many of its original features, now plays host to guests who require residential support. “Our team is dedicated to the comfort and contentment of the people we care for and we’re always there to lend a helping hand”, explains Manager Dawn Pearson. “We all love coming to work at Headlands as it has such a cosy, family atmosphere.” Mandy, Customer Relations Administrator at Headlands is an integral and wellloved part of the team, and it has been 20 happy years since Mandy Brownlee joined Cornwall Care – surely cause for a celebration. So, to commemorate two decades of service, Mandy chose to take to the skies with a coastal helicopter ride over St Ives, with a twist! Sitting in the front with the pilot, Mandy had a perfect view of Cornwall. When chatting to the pilot while the other passengers were getting in, she asked if it would be possible to fly via Headlands, so that she could get a bird’s-eye view of the
home. She wasn’t sure if he would say yes, but he put the postcode into his iPad and said that it would be fine! Not only did Mandy get to fly over The Island in St Ives, along the coast (enjoying the view of the local beaches packed with visitors), but she got to circle Headlands and wave to her fellow care workers Dawn and Darren, who were waiting with eager anticipation to greet her on the fire escape! They tied up the trip nicely with a crosscountry flight to the beautiful St Michael’s Mount. “It was stunning,” says a blissful Mandy. “All that ground covered in less than 10 minutes!” Mandy’s co-worker Darren says: “We are delighted that Mandy had such a wonderful experience and are so thankful for the 20 years of hard work, love and care that Mandy has given to us and our clients at Cornwall Care.”
