ornwall casts its unique spell on all who visit, an enchanting world with an identity of its own. Many will visit each year to capture a little of that Cornish magic and create lasting memories to take home with them. But with transport and communications links vastly improving in recent ears, the idea of lanting firmer roots is no longer the i edream it once was. In putting together this month’s opening feature, celebrating Cornwall’s fabulous range of drinks producers (page 12), we were amazed by the sheer diversity on offer. Popular literary festival returns to Cornwall The North Cornwall Book Festival returns for a fifth ear, from th to th October, to the illage of St Endellion near Wadebridge. Celebrating the thirst quenching drink producers across Cornwall, from distilleries and breweries, to vineyards and orchards.

C

ornwall is a cup-half-full type of place. We love the idea of inspiring, creative individuals, independently tinkering away across the Duchy, from artists and writers to technology entrepreneurs. To this list we can add drinks producers – alchemists, expertly honing their craft to produce liquid gold. Delve a little deeper, you discover a refreshingly wide range of producers, from one-man-in-a-shed homebrews to internationally acclaimed ciders, and wines with the royal seal of approval. In fact Cornwall has the largest amount of breweries per capita in the country. Or, in other words, you’re never too far from a decent, local brew! One thread that seems to run throughout is a genuine passion for their craft, coupled with a desire to promote the south west’s phenomenal produce roof that Cornwall can com ete er confidentl on the world stage. Another key focus is family, with skills, secret recipes and knowledge passing down from one generation to the next. Now, all in the name of authenticity – in order to fully translate the sensory experience to the page – it was deemed necessary to carry out some primary research for this article at various breweries, vineyards, distilleries and cider orchards across Cornwall. As usual, we must stress that with so many wonderful producers out there, we couldn’t possibly cover them all… despite our best efforts! We’re ever lauding Cornwall’s unique microclimate, but the proof really is in the produce. Our milder climate makes Cornwall one of the best places in the UK for growing grapes. A perfect example of this is POLGOON VINEYARD & ORCHARD set in a beautiful position in a sheltered bowl on the outskirts of Penzance, protected from the prevailing winds (www.polgoon.com). Polgoon is a producer of award-winning artisan wines, ciders and juices, with family at its heart. Indeed take a tour around the vineyard and you’re bound to bump into at least one family member somewhere! Mandy Milano visits the onsite café, The Vine House Kitchen, to meet owner Kim Coulson and her daughter, Emma, for a chat, over an exquisite crab sandwich (served by another daughter Millie). “We have six children,” explains Kim, “who have all worked there in various jobs over the years. Everyone gets stuck in! We started with just the sticks in the ground, learning along the way and gradually growing the vineyard and business to where it is now, with 13 permanent staff throughout year rising to 19 in summer and picking season. Bob Lindo of Camel Valley was very generous and helpful when we were starting out.”

The family and their team will be picking and making wine over the next few months. Polgoon is just releasing its 2016 Bacchus now, along with its 2014 sparklings. Mandy is keen to discover Kim’s favourite bottle. “The Pinot noir sparkling rosé. Everyone loves a pink sparkly, it’s delicious!” Emma’s favourite wine, meanwhile is the Seyval blanc sparkling white. “Pink is a more traditional style bubbly,” explains Emma, “but the Seyval is unique and more contemporary.” “It’s dry and delicious!” adds Mandy. As well as traditional wines, Polgoon rod ces s ar ling elderflower and raspberry wines, ciders, and non-alcoholic ices, resses and fi soft drin s. Based near Mullion on the Lizard, this company uses Cornish spring water, and fragrant botanicals to create thirst-quenching gin, distilled four times, and infused with rock samphire, foraged by hand on the surrounding cliffs. Craft beer has a real de th of fla o r that o won t find in t ical, mass- rod ced beers and lagers. As we discover on a visit to SKINNER’S BREWERY, there’s a lot to brewing beer... a bit of chemistry and art, skilfully blended together (www.skinnerbrewery.com). Steve Skinner and his family were lured to Cornwall, largely by the surf (son Ben is a pro-surfer and they named their recent pale ale Porthleven after the iconic surf break). A genuine trailblazer, Steve was ahead of the curve, foreseeing the rise of craft beers and, in particular, modern pale and golden ales. 20 years on, business is booming, achieving both national and international acclaim. Yet it remains a real family business to this day. Daughter Louise is extremely knowledgeable and passionate about the beer, brewing process, and ingredients used – how different variations of hops and grain create ni e fla o rs and intensities. For many a brewery (much like bakers), its yeast is a key part of its identity, integral in maintaining consistency of taste, character and quality. Like his beers, Steve is larger than life, and his mischievous touch runs through Skinner’s entire ethos. But when it comes to beer, it’s serious business and they are clearly devoted to their craft. he walls, laden with certificates and awards, are testament to this. They are proud to stick largely to traditional, ages-old methods and equipment, and this heritage makes its way into the beer. As Steve tells me, while the demand is there, he’s keen not to lose what made Skinner’s so special in the first lace. t s im ortant ne er to forget where we came from.” Steve’s favourite tipple? “I’ll always have a soft s ot for Cornish noc er, being o r first at the time a very modern beer. But it has to be Lushingtons. It’s slightly drier, and my palate is moving towards drier and hoppier beers. Hoppy beers are the growing trend.” Steve praises the talents of the wider Cornish brewing community. “We’re naturally creative down here. There are lots of great brewers in Cornwall.” And Skinner’s Head Brewer, Paola Leather, is proof that beer production needn’t be restricted by outmoded gender stereotypes. Another brewery with a strong female lead is ALES OF SCILLY on St Mary’s, now led by Head Brewer Jen Trevithick, originally from Falmouth (www.alesofscilly.co.uk). his fine microbrewery has been producing quality craft ales for over 15 years. The West Country has a strong and widely recognised heritage of cider making. But as we discovered from Barrie Gibson at Fowey Valley Cider, ‘Champagne’ style sparkling wine (and cider) actually has its origins in the West Country, in the early 17th century, long before a certain Dom Pérignon came on the scene. Bottled wine, imported from France, would continue fermenting in the bottle back in England, creating a fi when o ened. hile this fi was temperamental, it was discovered (on this side of the channel) that adding a little sugar helped the second fermentation, ens ring a consistent fi . From 1615, burning coal to produce glass instead of charcoal (when oak was required by James I for building warships), enabled stronger, thicker bottles, less prone to exploding under pressure – tellingly known as the ‘Verre Anglais’. This glass production was patented by Sir Robert Mansell, one-time MP for Lostwithiel. Fowey Valley Cider is famed for its Champagne style sparkling ciders (www.foweyvalleycider.co.uk). As Barrie tells us, the Fowey valley was once laden with orchards and he is proud to continue the tradition of cider making in this beautiful part of the world, gaining acclaim for his deliciously crisp ciders and cider products, including vinegar. (Discover more about Fowey Valley Cider on page 11.) Run by David and Kate Berwick, ST IVES CIDER is a small company that packs a huge fla o r (www.stivescider.co.uk). In fact, hot off the press, we’re delighted to learn that St Ives Cider has just won an extremely prestigious international award for its ground-breaking cider at the recent World Cider Awards. el JeOFwTHE SOUTH WEST As we discover from the Savills team, Cornwall continues to be a popular destination for holidays and relocation.

T

here can be no doubt that Cornwall remains enduringly popular with holidaymakers, with a well-trodden path heading to the south west from the rest of the UK. The summer ‘season’ is ever lengthening and many Cornish business owners have noted that business is becoming m ch less seasonal, with isitors floc ing here throughout the year. However, while Cornwall has long been thought of as the preserve of second homeowners, in recent years there has been an increase in the number of relocation purchasers.

The Savills Research team have been investigating recent market trends for prime property in the county and have noted that while the percentage rate of purchasers from within Cornwall has remained steady, rates of buyers from the rest of the UK have increased in the last two years. Indeed, the percentage of London buyers in the county has increased from 13% in 2015 to 32% in 2017 (to date). The well-known Cornish escapes of Rock, St Mawes and Padstow have all seen an increase in premium property values of

over 40% (versus the county average), however as Ben Davies notes, “Cornwall is so much more than just the established destinations; lesser known towns and villages are seeing increasing popularity and interest. Cornwall is a county with something for everyone – the food, music, festival and arts scenes are second to none, along with world-class sailing and s rfing in the waters around the county. People moving into Cornwall are able to enjoy living full time in what is a very popular holiday destination.” 2017 has been a mixed year, with the aftershocks of Brexit lurking at the start of the year, Article 50 in March and the snap Election in June meaning that many buyers have been hesitant to make bold moves in the market.

As we move into autumn, Head of Savills Cornwall, Jonathan Cunliffe, remains confident in the Cornish mar et e ha e seen the traditional summer lull at the top end, but the middle has continued to perform strongly, with buyers competing in recent weeks on more than one property. ince opening in November 2015 owner Isabel Humphreys tells us, the store has grown and expanded its range of Cornish and Scandinavian products. Isabel and the team are delighted to be able to offer an online service to their customers near and far. Along with her partner, Sean, who specialises in contemporary house design, Isabel explains: “Inspired by the Cornish coastline around us and Scandinavian heritage – a Swedish mum and many happy childhood years growing up in Sweden – we lovingly hand-select all of our items and source directly from some of the best Cornish and Scandinavian designer makers.” The couple works alongside Katie Parkinson, a Textile Design graduate from Falmouth University, who adds her passion, knowledge and expertise to further inspire the company’s product selection – inspiration that Isabel and Sean simply wouldn’t be without. Coastal Scandi carefully sources its brands, supporting those with a story behind them. Isabel frequently travels to Stockholm and London for trade shows and exhibitions, as well as attending local craft fairs, supporting local independent individuals and their unique products. From Scandinavia the team

sources handmade brushes made by visually impaired craftsmen, as well as gorgeous kitchen and home textiles made from 100% organic cotton, alongside kitchen and tableware, soft furnishings, bath and body and lifestyle products. It’s evident, then, that for the whole team, it’s the little things that make the biggest difference. But it’s not just interior design and furniture that o ll find at the all-new Coastal candi showroom – the team has even begun stocking Scandinavian food, including organic jams, cordials, traditional crispbreads and sweets, making it a foodie haven, too! Isabel tells us: “We’ve created a beautiful, calm and contemporary space to showcase the highest quality products that we love. We’re passionate about Scandinavian design, style and simplicity; interested in function and form, and we love nothing more than offering our clients the chance to choose a home décor that has a timeless quality about it, with pieces that are made to last forever.”

ased in Cornwall and passionate about the world of interior design and homebuilding, Lucy Orr works for clients all over the UK as well as overseas and has almost 20 years’ experience in property renovation and interiors. Growing up, Lucy was inspired by her mother, also a talented interior designer and seamstress, as well as her father, who was an avid collector of Scottish and Russian art. She tells us: “I grew up in a beautiful home in Scotland surrounded by a stunning collection of antiques, art and fabrics from around the world. Impressively, Lucy doesn’t always stick to the same group of suppliers, choosing rather to source fabrics and furniture from varied manufacturers, depending on the brief. What’s more, when it comes to her style, she places a focus on transforming interiors so that they work in harmony with both the style of the building, and that of the clients’ belongings. “Most of my clients come to me by recommendation. I think what they value most is my work ethos and positive and happy approach to every project. It’s about taking the stress away from the client, as m ch as it is abo t deli ering a first-class service and making everything loo fantastic. This September, Lucy will be opening her new design studio and shop, Lucy Orr Interiors, in Rock on the rugged north coast. im Simpson and Tom Jubb, both originally from Cornwall and keen to return to their roots, left the original Carpenter Oak in Devon, which operates all over the UK, to set up their own, franchised model, Carpenter Oak Cornwall, which would also specialise in timber framed buildings but in addition, offer complete build projects across the region. The Cornish yard was set up near St Ives in 2014 and the company hasn’t looked back, particularly thriving in the accommodation and hospitality market. “We’ve seen a steady rise in enquiries from clients who are looking to tap into Cornwall’s ever growing tourism trade and make the most out of their own property,” explains Tom, “whether the conversion of a redundant barn or a new building to complement an existing commercial holiday cottage venture. Our clients really feel that an oak frame from us will give them that something ‘special’ to stand out from the crowd, in what is an increasingly competitive market.” An early client was Nancarrow Farm, near Zelah, which has developed from an existing, family-run pastoral farm into a luxurious wedding venue, complete

with rental accommodation and thriving restaurant using the farm’s homegrown produce. Carpenter Oak Cornwall designed and raised the oak-framed barn, which hosts regular feasts and wedding receptions, as well as converting an old chicken shed into a luxury bridal suite that stayed true to its agricultural roots. “Our customers are always blown away by the space for both getting ready in, and staying in,” explains Steve Chamberlain of Nancarrow Farm. “We chose Carpenter Oak Cornwall after they were initially recommended to us by a local architect and we’d absolutely use them again!” Another project, overlooking the north coast near Boscastle, was built as a second home and holiday let for Rick and Petrea. The four bay, traditional style oak frame includes an open-plan living area and mezzanine level above. “The feedback has been so positive,” says Rick, “people love the building, especially the relaxed warm feeling that the frame creates and the way the building sits in the landscape. Using the oak frame enabled us to use natural finishes thro gho t the ho se which adds a calmness and a space that you are happy to spend time in.”

Petrea adds: “The building has a timeless quality which enables it to sit comfortably in the old rural hamlet where it is situated. The sculptural quality of the building always wows visitors when they step inside, and people love the relaxed warm feeling that the frame creates. We wanted to create a beautiful home that was also both practical and sustainable. Carpenter Oak appealed to us, being a local business, using traditional skills and attention to detail. The whole process was well managed and precise without losing the personal touches that make such a difference.” Mike and Karen Chiffers, owners of Fingers Point near Ludgvan, returned to Cornwall and spent several years planning what to do with their existing barn, a former cowshed and latterly used as workshops. Carpenter Oak Cornwall took on converting the barn into a luxury holiday let, named after the nearby top of the hill where visitors would always point toward St Michael’s Mount. The conversion needed an entirely new roof str ct re and an oa frame fitted the Chiffers’s brief of creating something striking and high in quality whilst also being from a local s lier st fi e miles

from the workshop. “Everyone loves the attention to detail everywhere you look, especially the oak work. We used Carpenter Oak Cornwall because they understood the attention to detail and ‘wow’ we were trying to create within a small area.” If you’re visiting Cornwall or are thinking about creating your own rental accommodation, seeing a Carpenter Oak Cornwall building in person is the best way to get a feel for how a timber frame can o en s ace and create fle ible b ildings that appeal to guests, depending on the size of the group or family. To clean mussels/clams, leave them under cold r nning water for to min tes, agitating them with o r hand e er to minutes to release trapped sand.

Add the celeriac, continue to simmer until the celeriac is coo ed (abo t to min tes). By now the stock should have reduced by about a third.

Place the mussels/clams in a pan with white wine and co er with a tight fitting lid. Coo over a high heat for about 3 minutes until the shells have opened and clams and mussels are cooked.

Pan fry the hake portions in a clean frying pan.

Remove the clams/mussels from the pan but keep the cooking liquor, straining through a fine mesh sie e or m slin cloth.

In the saucepan containing stock/celeriac, add the kale, parsley, spring onions and cream, then simmer for to min tes. Chec seasoning; add clams and mussels back in.

To serve, divide the sauce/veg/cockles/ mussels into 4 bowls, place the hake on top, then garnish with celery leaves.

Melt the butter in a clean saucepan, gently cook the pancetta, shallot and garlic. Add the flo r and stir o er a low heat.

Gradually stir in the cooking liquor from the mussels/clams, turn the heat up, then add the fish stoc in to stages, stirring between each. Bring to a boil, and then simmer for min tes.

Pat the hake dry with a clean tea towel. Heat an ovenproof frying pan, add 2 tablespoons of oil. Gently put the hake into the pan skin side down. Do not shake the pan or try to move the fish. Let it fry for 2 minutes, till the edges of skin turn light brown. Put the pan into a pre-heated 195°C oven for 3 to 4 minutes, then remove. Turn the fish over using a pallet knife. Add a good heaped tablespoon of butter. Return to the hob under low heat, basting with butter until the fish is cooked.

t’s simply been too long since we visited St Ives. So as we drove along the winding road past Lelant and Carbis Bay I started to act all get b tterflies. ith an e tra-long wee end to loo forward to was ho ing for great food, re enating wal s, chilled evenings, charming independent shops — and, well, sun, sand and sea. e fo nd o r ar ing easil and let ABOVE ourselves in to our delightful holiday home. We launched day two with an arty binge at the Tate St Ives to see Jessica Warboys’ isceral (and gigantic) ennor ea ainting, followed by a saunter around Barbara Hepworth’s sculpture garden (always a joy to see). ollowing coffee at the ellow Canar , we browsed in independent galleries – finall s cc mbing to b ing a rint at the Belgrave, which specialises in the modern and contemporary and never lets us down. After lunch we headed down the coast path. One of the great things about St Ives is that a few minutes from the bustling harbour you can head out in either direction onto astonishingly beautiful and tranquil aths. e headed west towards ennor, and, tempted by one stunning vista after another wal ed far f rther than we meant to n the evening we dined at Porthminster Kitchen (not at Porthminster but actually right on the harbo r) great s id starter and ha e for me, and as arag s followed b stea for him. Then Sunday… I should mention that we were blessed with perfectly sunny days, so it was straight to Porthminster for a beach

day – lazy sea swimming, really good lattes from various excellent beach cafés and a good read. he ne t da , a fine al fresco brea fast at Porthminster Beach Café (relaxed and e cellent fine dining) and an e c rsion pied along the coast path to Carbis Bay… then bo ti e sho ing for me while he too the dogs to explore the Knill monument on or as hill. rom there o can wal on footpaths all the way to St Michael’s Mount but we’ll save that for next time. I love St Ives. I always have done. It’s as simple as that. And this mini adventure reminded me why.
