Dutchland Derby Rollers will hold recruitment events in 2019. Participants can be involved as referees, non-skating officials, or game-playing skaters. Events will be at Overlook Activities Center, 301 Golf Drive, Lancaster, at 9 p.m. on Monday, Jan. 7, and Thursday, Jan. 10, and at 10:30 a.m. on Sunday, Jan. 13. Dutchland Derby Rollers have also posted their home games for 2019, which take place on Saturdays, March 9, April 13, and May 4. All home games will be held at Overlook Activities Center.

Fairmount in Ephrata will be the site of a retirement planning and 401(k) seminar on Tuesday, Jan. 8. The event will be held at 3 p.m. in Wheat Ridge Chapel, 333 Wheat Ridge Drive, on the west side of the Fairmount campus. Topics will include understanding and managing wealth for retirement purposes, defining common investment terminology, and providing perspective on investments. Time will be allotted for questions and discussion as well. The public is invited to attend. “We have some new programs,” said Angela Trout, director of development with Conestoga Valley Christian Community Services (CVCCS). Trout was referring specifically to Back-onTrack Financial Coaching and the Rooted After-School Tutoring and Mentoring Program. Back-On-Track just completed its first year at CVCCS. The Rooted program just finished its second year serving Smoketown Elementary School students. According to Trout, the after-school program began in 2017 under the mentorship of a Center for Champions, based in Harrisburg. “(Center for Champions) sent us a program coordinator who guided us,” explained Trout, who added that in 2018 a group of

The Lancaster County Christian School (LCCS) Class of 2019 recently returned from a shortterm mission trip to Peru. From Nov. 3 to 11, the students served alongside the missionaries and staff of Kids Alive International, both in the capital city of Lima and in the jungle city of Pucallpa. During their time in Peru, the students participated in many typical mission trip activities, such as work projects and children’s ministry. Furthermore, the senior mission trip experience included opportunities for learning, fellowship, and encouragement. With this in mind, the seniors worked to prepare their hearts and minds in the months leading up to this trip. LCCS, 2390 New Holland Pike, Lancaster, is governed by a board of directors and managed by the head of school and administrative team. The school offers a Christ-centered and interdenominational curriculum for area children in preschool through 12th grade. - 8 oz. Dark chocolate, chopped - 1 cup heavy whipping cream (or chocolate chips) Preheat oven to 350 degrees. Grease a bundt pan with coconut oil and dust with cocoa powder. In a large bowl, mix together flour, cocoa, soda, salt, and pudding mix. Set aside. Beat together coconut oil and sugars until light and creamed. Beat in eggs and vanilla for 2 minutes. Add dry ingredients and buttermilk to wet ingredients. Stir in chocolate chips. Pour batter evenly into greased pan and spread evenly. Bake in oven at 350 degrees for 30 min. Then lower temperature to 325 and continue to bake for an additional 30-40 minutes until toothpick inserted in middle comes out mostly clean. Cool for 5 minutes in pan before inverting onto wire rack to cool completely. Ganache: Chop up chocolate bar into chunks (or use chocolate chips) and set in a bowl. Pour heavy whipping cream into a saucepan and heat on medium-high until heated but not boiling. Pour cream on top of chocolate and let set for 10 minutes. Resist the urge to stir at this point! After 10 minutes, whisk together the chocolate and cream until smooth and shiny. Let set for a couple minutes before pouring on top of cooled cake. (Make sure your cake is on a cake plate.) Let ganache cool until slightly hardened. Store in airtight container.

out what their needs are.” According to Trout, clients qualify for the program based on specific situations and whether CVCCS is able to assist them. Clients who qualify must agree to attend three one-on-one financial coaching sessions tailored to their specific needs. Trout noted that financial coaches Dottie Slothower and Gayle Smith are often teaching basic financial literacy, including how to make good financial decisions, balance a checkbook, understand compound interest, and spot predatory loan practices. Both Slothower and Smith have been educating themselves about training programs and affordable housing issues because many of the clients are considered underemployed. Programs such as the Workforce Talent 2020 Project administered by the Lancaster County Career and Technology Center Foundation, New Choices for Development, and CareerLink can help people access free training. Affordable housing help can often be obtained from Homes for Hope, Tabor, or Rapid Rehousing. Because CVCCS wants to help the clients reduce debt, clients will be allotted up to three visits at the CVCCS Food Pantry and the CVCCS Clothing Bank. In addition to the food pantry and clothing bank, CVCCS operates a Weekend Blessings program, which provides food items to students throughout the school district who qualify for free and reduced lunches. The organization also held a Christmas party for clients on Dec. 15, 2018. They spend time in Bible study, and the students read to the mentors and play math games. “The mentors talk (to the students) about Jesus and how Jesus loves us,” explained Trout, who added that the program is blessed with more mentors than students this year. At this time, Rooted is only offered to Smoketown Elementary students who walk to the CVCCS location adjacent to the school at 2420 Gehman Lane, Lancaster, and then are delivered to their homes by bus when the session ends. Trout noted that CVCCS would like to see the program offered in Leola and Brownstown as well, but she added that the expense of materials and solving the transportation issues have prevented Rooted from being offered in more locations. “We are working to strengthen this program now and hoping that in the future we could expand this to other schools,” she said. Back-on-Track kicked off in January 2018 and served its first client in May. Clients must live within or attend a church located within the Conestoga Valley School District. The program involves individual financial coaching for clients who are generally referred by churches. Trout explained that clients of Backon-Track may not normally qualify for CVCCS services, but they are generally living paycheck to paycheck and may be only one car repair or medical bill from a downward spiral of debt that could eventually lead to homelessness. “(Back-on-Track) is a customized program because each situation is unique and different,” explained Trout. “We meet with (the clients) to find

Other attendees who were recognized included Knouse, who with his family has given time, talents, and resources to the endeavor, and former United States Army officer Robert Kornman, designer of the park, construction coordinator, landscape architect, and volunteer. Sinkovitz then introduced Kramer, the keynote speaker, who spoke of Robert Weaver, a United States Navy veteran of the Vietnam era, who had a dream of a memorial park dedicated to honor the sacrifices of Lancaster County’s military veterans. “Today, your dream
takes another step toward coming true,” said Kramer, who noted that the support of Sam Lombardo and his wife were also essential to the project. “From its inception, this project has been steered by an allvolunteer group of Lancaster countians,” said Kramer, who added that the project has been completely funded by private donations. “The mission (of this park) is to recognize and pay tribute to the valor of (all) Lancaster Countians who ever wore a United States armed forces uniform and swore to support and defend the Constitution of the United States against all enemies, foreign and domestic,” said Kramer. He emphasized the commitment each veteran makes by recalling the remarks of Ephrata native William “Tom” Hobbins, a retired United States four-star general and the highest ranking officer to emerge from Lancaster County. “When we think of honoring our veterans, we should always recall that the commitment they made requires them to sign a blank check to the American people … payable with their lives,”

The Community Room on King, 106 W. King St., Lancaster, will host a show titled “The Book of Matthew Project” by artist Daehong Kim for First Friday, Jan. 4, from 6 to 9 p.m. “The Book of Matthew Project” was conceived in June 2010 as a personal pledge to support a church ministry that was sending a group of young adults on a short-term service mission to South Korea. Kim committed to handwriting each verse from the Gospel of Matthew on individual cards, accounting for 1,071 verses. Kim also invited people to participate by contributing verses, and these verses and others were collected and applied on five canvases. The purpose of writing each verse was to facilitate a contemplative mode of worship and to help Kim choose wonder, praise, and gratitude in response to a challenging time in his life. Kim is an American artist who was born in South Korea in the late 1970s. He took up studio art and music performance as a child. At age 7, he became fascinated with basic generative design in a computer programming class. He is an advocate of art as an agent for telling stories and as a medium of renewal. He considers art integral to the narrative of his personal pilgrimage in human portrait and faith. Attendees of the First Friday event will be able to meet the artist, read some of the handwritten verses, and enjoy snacks.

Fundraiser To Benefit Local Family A local family will benefit from a fundraiser on Saturday, Jan. 19, from 9 a.m. to 8 p.m. at Scratch Bakes, 3 W. Main St., Ephrata. One hundred percent of the day’s sales will be donated to Wesley “Wes” Myers, son of Tom and Samantha Kulfan Myers of Ephrata. The family will also receive all proceeds from a by-donation giveaway drawing that will be held during the fundraiser. Donations will also be accepted. In early 2018, 1-year-old Wes was diagnosed with neuroblastoma, a rare form of cancer. Now 2 years old, Wes has had approximately 10 surgeries so far, and more are being scheduled. He is also about to welcome a new little brother into the world. Proceeds of the fundraiser will go toward the cost of banking the new baby’s cord blood so it will be available if Wes needs it for his treatment. Children with cancerous solid tumors like neuroblastoma can receive cord blood transplants after chemotherapy or radiotherapy to accelerate healing and reduce

Mid Atlantic Oireachtas, held in Philadelphia from Nov. 22 to 25. At the World Championships, each dancer will be required to dance a hard shoe and a soft shoe round in the first heat. The top 50 percent of the dancers in each age group will then be recalled to dance their two rounds again the following day. Only the top half of the competitors from heat two will progress to the third and final round, which is a nontraditional set dance that showcases rhythm, footwork, and endurance. The ceili team consists of eight dancers plus one alternate. The team will perform a traditional group dance called a ceili, which is judged on uniformity as a team. Ceili dancing in Ireland began with group dances passed down through generations by tradition. They were eventually put into writing in the Irish dancing commission rule book in 1939. The Hooley School of Irish Dance has announced that six dancers have qualified to compete in the CLRG Irish Dance World Championships in Greensboro, N.C., from Sunday to Friday, April 14 to 19, 2019. These six dance students and a junior team of eight dancers will compete against more than 4,000 dancers who have qualified at their regional championships. Competitors will come from Canada, Mexico, Ireland, Great Britain, mainland Europe, Australia, New Zealand, South Africa, and the United States. using icing,” said McClarigan. According to Horst, the secret to successful gingerbread house making is the sticky frosting made at the preschool using a mix for powdered meringue. A few weeks prior to the project, parents signed up to bring in a variety of cereals, colored candies, gumdrops, pretzels, candy canes, marshmallows, and other edible items to decorate the houses. The activity wrapped up with homemade Christmas cookies, cheese and crackers, and fruit brought by parents. “(We had) hot chocolate too,” noted McClarigan. An emphasis on the spirit of Christmas is a part of the annual activity. “ We have a bulletin board up that says, ‘Christmas is the time for caring and sharing,’” said McClarigan. “ We try to

This marks the ninth year that Saint Francis University has participated in this event. Members of the presenting team traveled to Lehigh University and Lafayette College to compete against The College of New Jersey, Gettysburg College, Lafayette College, Lehigh University, Princeton University, and Villanova University.
