Sweet success
BY CATHY MOLITORIS
Shemay be only 10 years old, but Scarlett Elliott has an entrepreneurial spirit. She is the owner and operator of Scarlett’s Sweets, a bake stand located in front of her home at 1991 Turnpike Road, Elizabethtown.
“I love to bake,” said the daughter of Matt and Vanessa Elliott, noting that she enjoys the precision of baking. “I like how it’s super organized. I really like making cupcakes and cakes.”
Last winter, Scarlett mentioned to her dad that with a KOA campground right across the street from their home, she could probably do brisk business selling to campers in the summer.
“So I said, ‘I can make you a bake stand,’” recalled Matt, who is an engineer. “I designed and built her cart.” The cart is outfitted with an air-conditioned top compartment to store anything that might be affected by heat and humidity, as well as glass doors and shelving and a small refrigerator to hold fudge or refrigerated pies.
Scarlett opened her stand in late June and plans to operate it Fridays through Sundays until school starts again in the fall. Scarlett will be a fifth-grader at St. Joan of Arc School in Hummelstown.
Her inventory changes weekly, although she always has whoopie pies and pies. “The whoopie pies and pies in general seem to be very popular,” Scarlett stated. “They usually sell out quickly.”
She also creates cupcakes, cookies, fudge and more. “I just made apple pies, and next week I’m making lemon sponge pie,” she said. “I’m also going to do shoofly pie.”
Scarlett accepts cash or Venmo payments at her stand, and everything is run by the honor system.
She typically takes Mondays off, but by Tuesday, she’s back in the kitchen baking that week’s inventory. Her 6-year-old sister, Iris, also helps with the business, serving as

Old-fashioned fun will be in the spotlight when GEARS hosts Movies in the Park. The series will feature a showing of “Frozen II” on Thursday, July 20, and “Cars 3” on Thursday, Aug. 10. Rain dates for the films are Thursday, July 27, and Thursday, Aug. 17. Movies will begin at dusk, approximately 8:30 p.m., at the amphitheater in Elizabethtown Community Park, 201 S. Mount Joy St.
quality control. “Her job is mostly to eat anything that doesn’t pass or anything I don’t want to sell,” Scarlett said.
Matt noted that he and his wife are proud of Scarlett’s drive. “I thought it was a great idea when she said she wanted to do this,” he said. “From the time I was 10, I had my own business mowing lawns.”
He emphasized that the bake
stand offers real-world experience for his daughter. “We make Scarlett do all the math on how much everything costs, and she has to figure out the cost per unit so she can figure out what she’s going to charge and still make a profit,” he shared.
Scarlett said she plans to save most of the money she makes from her bake stand, but she’ll also invest some back into the
business, purchasing supplies and equipment.
Offering advice to her peers who may want to start their own businesses, Scarlett said, “It seems like it’s hard, but once you start doing it, it gets a lot easier because you know what you’re doing.”
For a current list of bake stand offerings, search for “Scarlett’s Sweets” on Facebook.
There is no charge to attend the movies, and people should bring chairs or blankets to sit on. GEARS has been hosting Movies in the Park since 2004, shared Lee Eckert, GEARS program coodinator, and the series helps the organization fulfill its mission of providing programming for the whole family. “GEARS loves to offer free family events for the community,” he said. “We love bringing families together in different settings throughout the year.”
He credits event sponsor Knowlton Dental Associates with making the series possible. “We would not be able to run this event without (the business’s) generosity,” he stated. “We pay a licensing fee for each movie, and they are very expensive.”
Along with covering fees for the films, Knowlton Dental Associates also provides free snacks and giveaways at every movie.

CHALC honors homeschool graduates
The Coalition of Homeschoolers Across Lancaster County (CHALC) honored 59 homeschool seniors during its 28th annual graduation ceremony on May 26.
The ceremony was held at Lancaster Evangelical Free Church and included music performances by members of the senior class, a commencement speech from the keynote speaker, a video collage of the graduates, graduation speeches from two senior students and the awarding of diplomas by parents.
The keynote address was given by John Blowers, an executive and leader in the small business, nonprofit and local government sectors for more than 30 years. Blowers is currently a member of the leadership team at Martin Flooring Inc. in Fivepointville and serves on the board of directors for Lancaster County Solid Waste Management Authority.
Peter Hasse of East Earl and Mya Higgins of Lancaster were chosen to deliver the class speeches. Hasse, the son of William and Pamela Hasse, earned an E.C.H.S.D.A. diploma with honors in mathematics, science and fine arts. He plays cello with the Veritas and Allegretto orchestras, as well as the Amorelle String Quartet. This fall, he will
attend Grove City College to study chemistry and swim for the college team.
Higgins, the daughter of Brad and Tammy Higgins, earned a Mason Dixon Academic Honors diploma with Leadership Distinction and Honors for Performance in Fine Arts. Higgins will attend Regent University Honors College to pursue a degree in secondary education.
The graduates performed “Psalm 46 - Lord of Hosts” as their class song. Their class Bible verse is 1 Timothy 6:12, “Fight the good fight of faith, lay hold on eternal life, to which you were also called

Each participant will create his or her own 5-by-7-inch fanciful fraktur bird.
The workshop will be held in the Mennonite Life Community Room, 2215 Millstream Road, Lancaster, and a fee will be charged per person. Using a river for recovery
BY CATHY MOLITORIS
There’s something therapeutic about paddling in a kayak out on the water, said Bill Butler, chapter secretary for Susquehanna Valley Team River Runner (TRR). The sport helps participants hone motor skills, requires focus and instills discipline. It also might save lives.
Founded in 2004, TRR has a mission to provide health and healing for injured military personnel, people on active duty, veterans and disabled members of the community.
“Team River Runner literally started in an elevator in Walter Reed Medical Center,” said Butler, a Manheim resident who helped start the Susquehanna Valley chapter in 2015.
“Our executive director, Joe Mornini, was visiting a friend of his who had been wounded in combat.” Mornini, a special education teacher, had used kayaks to help children to improve motor coordination and tackle emotional issues, and he invited the veteran he was visiting to try it out. The organization quickly grew to almost 70 chapters across the country.
Butler emphasized that while the program revolves around kayaks and other forms of adventure paddling, its mission is much broader.
“The kayak is just the tool we’re using,” he said. “The
whole point of this program is to get our veterans who are having difficulty adjusting to life after serving out into the community with people who are like-minded and enjoy the sport.”
Noting that 22 veterans a day die by suicide, Butler said TRR is working to address that concern. “We’re hoping to reduce that number by getting veterans re-engaged with the community,” he remarked.
“Using a sport like kayaking helps them do that in a disciplined way, providing structure and way for a veteran to dip their toe in the water of getting back into the community.”
An Operation Desert Storm combat veteran, Butler knows firsthand what it’s like to return to civilian life after service. He returned from war with 80% disability and has
difficulty walking or climbing steps. “You put me in a kayak, and I’m completely transformed,” he stated, noting that he’s seen the same transformation in the participants of TRR, many of whom become instructors themselves after going through the program.
TRR is also open to members of the community who have disabilities, and several of the Susquehanna Valley chapter’s biggest events revolve around people who are vision impaired. Kids are OuttaSight (KAOS) provides paddle sport opportunities to children, with TRR veterans serving as leaders. TRR partners with VisionCorps in Lancaster to offer the program.
All of the programs TRR offers are free of charge, and the organization relies on community support as well as
Fossil and Mineral Club sets show
The Lancaster County Fossil and Mineral Club will host its annual Christmas in July Extravaganza on Saturday, July 22, from 9 a.m. to 5 p.m. and on Sunday, July 23, from 10 a.m. to 5 p.m. at the Lancaster Farm and Home Center, 1383 Arcadia Road, Lancaster. Featured will be more than 100 tables filled with specimens of fossils, minerals and crystals to peruse or purchase.
There will also be an Adventures in Geology learning room where interactive displays will teach children about geology, and a trip into a big makeshift mine will allow them to use flashlights to find their own treasures. Hot food will be provided by the Paradise Township Lions Club.
Proceeds will benefits three nonprofit groups: the Lancaster County Fossil and Mineral
grants for funding. “It can cost $800 to $1,000 apiece for each kayak,” Butler said, noting that the chapter currently has 23 kayaks. Additional equipment needed includes life jackets and paddles for each participant. Butler said that nationally, TRR hosts close to 3,000 paddle sessions annually, and the Susquehanna Valley chapter has served more than 150 paddlers to date.
He hopes more veterans will join the program, and he invites people to volunteer, noting, “If a kayaker wants to help, I’d love for them to become part of this and watch all the amazing things that happen out on the water.”
For more information on TRR, email Butler at Bill.Butler @TeamRiverRunner.org or Jennifer Eaton, chapter coordinator, at jennifer.eaton@team riverrunner.orgor visit https://svtrr.org.
