If you’re short on time or want to eliminate some of the fuss, you can take almost all the work out of a holiday dinner by using prepared side dishes from Omaha Steaks. Options like Brussels Sprouts with Bacon and Shallots, Roasted Root Vegetables or Roasted Garlic Mashed Potatoes can lend a special touch to your holiday feast. No festive feast is complete without dessert, and individual-sized Sticky Toffee Pudding Cakes are a perfect solution. Horseradish Cream

1 teaspoon kosher salt

3 tablespoons prepared horseradish

1/8 teaspoon cayenne pepper

1 tablespoon white vinegar, plus 1 teaspoon

1/8 teaspoon black pepper 1/2 cup heavy whipping cream

In medium mixing bowl, whisk together mayonnaise, horseradish, vinegar, salt, cayenne and black pepper. Whip cream to soft peaks using stand mixer. Gently fold into mayonnaise mixture. Chill until ready to serve.

Reverse-Seared Prime Rib Roast Active time: 30 minutes • Total time: 4 days

Thaw roast completely in refrigerator before cooking; allow 4872 hours. Season roast with rub 12-18 hours before cooking and leave uncovered in refrigerator overnight. When ready to cook, heat oven to 225 F. Place roast on elevated rack in roasting pan. Roast 3 hours and 15 minutes, or to internal temperature of 120-125 F. Let roast rest 30-45 minutes.

Broil on high 2 inches from broiler, 4 minutes on one side, 2 minutes on other side, or until brown crust uniformly covers roast. ■

Tip: For easier carving, trim roast from bones prior to cooking. Stand rib roast on end so ribs are pointed up. Using sharp knife, cut along bone, being careful not to cut into roast. Tie roast up with butcher’s twine to hold it together while cooking.

In 4-cup sauce pot, melt butter over low heat. Add onions. Cover and cook on low 15 minutes until onions have softened. Add figs, 1/4 cup water, 1/4 cup vinegar, sugar and salt. Cover and cook on low another 15 minutes until figs have softened. Remove pot from heat and add black pepper and vanilla extract. Pour into blender or use immersion blender to process until smooth. Add remaining water and vinegar to blender for smoother jam or leave as-is for a more chunky texture.

A day before cooking, dry brine or season roast and leave it uncovered in the refrigerator to develop crust and flavor. This dries the outside of the roast and forms a layer that allows even browning while locking in moisture.

These recipes from Chef George Duran, host of TLC’s “Ultimate Cake Off” and Food Network’s “Ham on the Street,” make it easy to elevate your cheeseboard, serve up delightfully delicate puffed pastries or make glass canning jar gifts to give away to guests. Each dish features Jarlsberg

Tomatoes Gratin Servings: 4

4 tomatoes 2 ounces balsamic vinegar 1/3 cup extra-virgin olive oil, plus 4 ounces, divided 4 garlic cloves, sliced thin 4 sprigs fresh thyme (or equivalent dried) salt, to taste pepper, to taste 2 ounces pine (pignoli) nuts 8 ounces shredded Jarlsberg Cheese

Heat oven to 350 F. Cut tomatoes in half. In bowl, whisk together vinegar, 1/3 cup olive oil, garlic, thyme, salt and pepper; gently mix in tomatoes. Transfer to ovenproof dish. Place tomatoes cut-side up and bake 15 minutes. In pan, toast pine nuts with remaining olive oil until golden then set aside. When tomatoes are cool enough to handle, remove skins and return to baking dish. Sprinkle tomatoes with shredded cheese. Return to oven and broil about 5 minutes, or until cheese turns golden and bubbly. Top with toasted pine nuts.

Cranberry and Walnut Phyllo Triangles Servings: 4

Filling: 1 cup chopped fresh or frozen cranberries 1/3 cup sugar 1/3 cup raisins 2 tablespoons honey or maple syrup 1 tablespoon finely grated orange peel 3 tablespoons freshly squeezed orange juice Triangles: 10 sheets fresh or frozen phyllo dough 1/3 cup melted butter 2 1/2 cups Jarlsberg Chunk Cheese, cut into 25 cubes 2 cups chopped walnuts

Heat oven to 375 F. In saucepan, combine cranberries, sugar, raisins, honey, orange peel and orange juice; bring to boil. Reduce heat and simmer uncovered 5 minutes, stirring occasionally. Cool to room temperature. Carefully lay one phyllo sheet on cutting board and brush with melted butter. Place another sheet of phyllo on top and brush with melted butter. Cover remaining sheets with damp towel to prevent drying out. Position brushed pastry horizontally and cut into five strips. Place 1/2 teaspoon cranberry filling, one cube of cheese and 1/2 teaspoon chopped nuts in lower corner of each strip. Fold dough over filling to form triangle. Fold triangle up then over, forming another triangle. Continue folding to end of strip. Brush top with melted butter and sprinkle with 1/2 teaspoon chopped nuts. Repeat with remaining strips of dough and remaining

sheets of phyllo.

Bake 12-15 minutes, or until golden brown. Cool on wire rack before serving. n

Note: If using frozen phyllo dough, thaw in refrigerator overnight.

Finely chop oregano and peppercorns, and finely mince thyme and garlic. n To make marinade: Whisk vinegar with oil, oregano, peppercorns, thyme and garlic. Layer cheese, olives and leeks inside jar. Cover with marinade and seal tightly. n Place jar in refrigerator to marinate 1 day. For best results, use within 3 days. n

6 eggs 1/8 teaspoon salt 1/8 teaspoon pepper 1 teaspoon white vinegar 1 teaspoon mustard 1/4 cup mayonnaise 1 cup shredded Jarlsberg Cheese n n n

Boil large pot of water. Carefully add eggs and boil on high 2 minutes then simmer 13 minutes. While eggs cook, chop parsley and scallions, if desired. Once eggs are cooked, transfer to bowl of ice water; cool 8-10 minutes. Peel eggs and cut in half lengthwise. Separate egg yolks into another bowl. Reserve egg white halves. Combine egg yolks with salt, pepper, vinegar and mustard. Add shredded cheese and mayonnaise; mix until smooth. Spoon about 1 tablespoon of yolk mixture into each egg white half. n Add toppings, as desired. For classic deviled eggs, sprinkle paprika and chopped parsley over eggs. For a savory alternative, cook four strips of bacon and chop. Top eggs with chopped bacon and shredded cheese. For a unique variation, try topping eggs with cooked crab meat and chopped scallions.

Celebrating Family Features

Cooks today crave new food inspiration, creative recipes and flavorful dishes, and they want it all at a great price. Whether you’re trying one of the year’s hottest cooking trends or serving up a spread for a holiday celebration, pork offers an affordable variety of cuts and flavor profiles to help inspire every occasion. This season, the National Pork Board is teaming up with leading chefs from across the country –Matt Abdoo, Adam Sappington and Jose Mendin – to discover their favorite pork dishes, the techniques behind them and how pork inspires their creativity in the kitchen. Chef Mendin is a five-time James Beard semi-finalist and founding partner and chef at Pubbelly Noodle Bar, an Asianinspired gastropub in Miami. In his Honey Balsamic-Glazed Ham

recipe, pineapple combines with honey and balsamic vinegar for a flavorful centerpiece that’s easily paired with smashed potatoes.

Honey Balsamic-Glazed Ham with Smashed Potatoes Recipe courtesy of Jose Mendin, Pubbelly Noodle Bar, on behalf of the National Pork Board Prep time: 15 minutes • Cook time: 1 hour, 20 minutes • Servings: 8

1 3-pound boneless ham, netting removed and casing trimmed off

Honey Balsamic Glaze:

1 can (8 ounces) crushed pineapple (2/3 cup pineapple, 1/3 cup juice) 1/2 cup honey 1/2 cup balsamic vinegar 2 tablespoons unsalted butter 2 tablespoons soy sauce 1/2 teaspoon finely chopped fresh thyme (or 1/4 teaspoon dried thyme) 1/2 teaspoon freshly ground black pepper

Smashed Potatoes:

3 pounds small red potatoes, scrubbed but unpeeled 3 tablespoons unsalted butter 2 tablespoons extra-virgin olive oil 1 1/2 teaspoons kosher salt 1/4 teaspoon freshly ground black pepper 2 tablespoons fresh parsley (or 1 1/2 teaspoons dried parsley)

Make the Honey Balsamic Glaze: In a small heavy saucepan, bring ingredients to a boil over high heat, stirring often. Reduce the heat to low and simmer, stirring often, until the liquid is reduced by about half, 7-10 minutes. Transfer to small bowl and let cool to room temperature. n Preheat oven to 350 F. Using a sharp knife, score ham in a crosshatch pattern. Place ham in roasting pan and add 1/2 cup water. Cover tightly with aluminum foil. Bake for 30 minutes. Uncover and spread half of the glaze over the ham, forcing it into the scored cuts. Bake for 15 minutes. Repeat with remaining glaze and bake until a meat thermometer inserted into the center of the ham reads 140 F, about 15 minutes more. If necessary, to keep glaze from scorching, tent ham with aluminum foil. Let stand at room temperature for 10 minutes before slicing. n Make the Smashed Potatoes: After about 30 minutes of baking the ham, place potatoes in large saucepan and add enough cold, salted water to cover by 2 inches. Cover saucepan and bring to a boil over high heat. Uncover and reduce heat to medium. Cook until tender, about 20 minutes. Drain well and return potatoes to saucepan. Add butter, oil, salt and pepper, and crush with a large fork then stir in the parsley. Partially cover with the lid to keep warm. n Slice the ham crosswise and serve with the smashed potatoes. n

Get your plans in writing, including your menu, how many people will attend, any special dietary needs of guests and what time you plan to serve the meal. n Buy the turkey early, and look for a bird with a pop-up timer in the breast, which ensures proper cooking time. Thawing the Turkey

n Thaw your turkey in the refrigerator for 24 hours per 5 pounds in weight.

For example, a 20-pound bird takes four days to thaw. Thaw it faster by covering with cold water in the sink and changing the water every half hour per pound of turkey. n Don’t unwrap a frozen turkey before thawing. n Refrigerate the turkey as soon as it has thawed, or cook it immediately.

Preparing the Bird

n Baste the turkey with extra-virgin olive oil, butter, margarine or wine. n For an unstuffed turkey, place a stalk or two of celery, seasonings, a cut-

up onion and a handful of parsley in the cavity to keep it moist. If you stuff the turkey, pack the neck and cavity loosely with stuffing prepared just before you plan to cook the bird. n Heat oven to 325 F. Place turkey breast-side-up on a rack in a shallow roasting pan. n Lay a “tent” of foil loosely over the turkey to prevent over-browning. n The turkey is done when the meat thermometer is 180 F and the stuffing is 165 F. If you don’t have a meat thermometer, look for the red stem to go up on the pop-up timer, press a thumb and forefinger into the thick part of the drumstick to see if it feels soft or wiggle a drumstick to see if it moves easily. n For easier carving, let the turkey stand at room temperature for at least 20 minutes. n

Preparing Homemade Rolls

n Purchase Frozen Rhodes Ready to Bake Rolls, which give you that origi-

nal homemade taste with no preservatives. n Coat baking pan and large sheet of plastic wrap with nonstick cooking spray. Place frozen dough on the pan and cover with oiled plastic wrap so it won’t stick to the rolls as they rise. n Let rolls rise for 4-5 hours, until they double in size. Carefully remove the plastic wrap. n While you are carving your turkey, put rolls in the oven at 350 F and bake 15-20 minutes, until golden brown. n Brush tops with butter or olive oil, if desired.

Don’t Forget the Add-Ons

n Surprise your guests with something different from years prior, such as

new recipes or add-ons. For example, if you serve salad add something new, such as olives, pearl onions, raisins, nuts or mandarin oranges.

Mini Marbled Cherry Cheesecakes

18 chocolate cookies with white filling 2 packages (8 ounces each) cream cheese, softened 1/3 cup sugar 2 eggs 1 teaspoon vanilla 1 can (21 ounces) Lucky Leaf Premium Cherry Fruit Filling, divided ■ Heat oven to 350 F. Line muffin tins with 18 paper liners. ■ Place one chocolate cookie in bottom of each paper liner. ■ In mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy. Fold in half of fruit filling. Fill each muffin liner about three-fourths full with mixture. ■ Bake 20-25 minutes, or until done. Cool. Top each cheesecake with spoonful of remaining fruit filling.

Cinnamon Apple Pie

1 refrigerated pie crust 1 tablespoon butter, melted 2 teaspoons ground cinnamon 2 cans (21 ounces each) Lucky Leaf Premium Apple Fruit Filling 1 stick (8 tablespoons) butter, softened 1 cup flour 1 cup light brown sugar 1/2 cup powdered sugar, plus additional (optional) 1/4 teaspoon vanilla 1/4 teaspoon cinnamon 2 teaspoons milk, plus additional (optional) Heat oven to 400 F. On lightly floured surface, unroll pie crust. Brush with melted butter and sprinkle evenly with cinnamon. Roll up tightly and slice into 1/2-inch rounds, like miniature cinnamon rolls. Press miniature cinnamon rolls evenly into bottom and sides of 9-inch pie plate, making sure there are no spaces between rolls. Pour fruit filling on top of crust. In large bowl, using pastry blender, combine stick of butter, flour and brown sugar, until crumbly. Sprinkle over apple filling. Bake pie until top and crust are golden brown and filling is bubbling, about 40-45 minutes (cover top and crust with foil, if necessary, to prevent from getting too dark). Remove from oven and allow to cool. In small bowl, whisk together powdered sugar, vanilla, cinnamon and milk to form icing. Add more sugar or milk, if necessary, to reach desired consistency. Drizzle icing over cooled pie.

1/2 cup (1 stick) butter, softened, plus 6 tbsps 3/4 cup firmly packed brown sugar 1/2 cup granulated sugar 2 eggs 1 teaspoon vanilla 1 1/2 cups all-purpose flour

Heat oven to 350 F.

In large bowl, beat butter and sugars with electric mixer on medium speed until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well. Drop dough by rounded tablespoonfuls onto ungreased cookie sheet. Bake 8-10 minutes, or until light golden brown. Cool 1 minute on cookie sheets; move to wire rack. Cool completely. Store tightly covered.
