Welcome... Running from the 27th September to 4th October, Cask Ale Week offers a great opportunity to showcase your pub as the leading destination in your area for great tasting beer. Read on for advice on promoting your Cask Ale Week events. This year, Halloween falls on a Saturday, and during half-term week for much of the country. Our feature within provides inspiration on spooky themed events that are sure to draw in the crowds and drive family footfall over the holiday. Sporting fever is sweeping the nation too, with the Rugby World Cup commencing on the 18th September, and in football both the Champions League and Premier League now underway. This issue we share some tips on driving custom during this exciting season of sport. News & trends HMRC e-learning products on VAT Do you need help understanding VAT? HMRC has developed two new e-learning products including advice about registering for VAT and getting started, as well as a course on how VAT works. HMRC has also produced a key messages briefing, which includes links to the August live webinars, the live joint HMRC & HSE webinar, the new National Minimum Wage (NMW) YouTube video, the recorded NMW webinar and the letting property to tenants e-learning platform. Webinars are being planned for late September/October on record keeping for the tourism industry. Please provide information on any areas you would like the webinars to cover to Mark Tettenborn at mtettenborn@beerandpub.com Fire safety advice The Chief Fire Officers ‘UK Business Safety Week’ takes place between the 7th - 13th September, and aims to advise businesses on how to reduce the risk of fire and protect staff, buildings and resources. Tumble dryers are a common cause of fire within the hospitality industry, as the parts can get very hot. If machines are not properly cleaned, excess fluff or lint can build up over time and catch fire. Stay fire safe by following advice from Joe Taylor, Enterprise National Fire Safety Officer: • Always read and follow the manufacturer’s • Never leave the appliance running when instructions before using your dryer no-one is around or overnight • Do not cover the vent or any other opening • Only vent the warm air to the outside of a building • Do not put rags or materials into your tumble dryer if they have been used to soak up flammable liquids, cooking oils etc. If you are going to put linen in a washing machine then use a tumble drier to dry, the linen should be washed at 60 degrees or above to remove the cooking grease.
• Keep your dryer well ventilated, ensuring the vent pipe is kink free, not blocked or crushed in any way • Clean the filter in your dryer after every use • Have your dryer serviced, inspected, tested and maintained regularly by a qualified engineer
Signs that your tumble dryer is not properly ventilated… • Clothes take a very long time to dry, especially heavy articles of clothing such as jeans, or towels • Clothes feel hotter than usual at the end of the cycle • The flapper on the vent hood remains closed when the dryer is on DON’T ignore the warning signs… Does your tumble dryer smell of burning? Are your clothes taking longer to dry? Do the clothes feel hotter at the end of the cycle? Does the external vent flap stay shut when the dryer is on? Alcohol Wholesaler Registration Scheme HMRC has published a briefing pack for Publicans affected by the Alcohol Wholesaler Registration Scheme. This is relevant to all businesses that trade in duty-paid alcohol in the UK, including brewers and pubs. All businesses wholesaling duty-paid alcohol will need to register with HMRC between October and December 2015. HMRC will then decide whether or not to register each business. From April 2017, it will be illegal to purchase duty-paid alcohol from a non-registered UK wholesaler. The briefing pack can be found by visiting beerandpub.com/industry-briefings HMRC intend to publish further information on the operation of the scheme in due course. The future of eating out The ‘Eating Out – Today and Tomorrow’ report, commissioned by Sacla UK, has identified key emerging trends and habits shaping eating out across the nation, following a survey of more than 2,000 nationally representative pub and restaurant customers. 66% of respondents described themselves as passionate about food and drink and 62% stated they were totally adventurous in terms of cuisine. The survey also revealed that almost a third of families eat out together on a weekly basis (29%), while 31% of all respondents say they eat out at least once a week. One in five people last ate out mid-morning or mid-afternoon, whilst 37% expect to go out to eat a sit-down breakfast in coming years. Clare Blampied, Managing Director at Sacla UK, said: “The launch of ‘Eating Out – Today and Tomorrow’ responds to the UK’s increasing passion towards food and consumers’ higher expectations when it comes to dining out-of-home.” The report is based on primary research from interviews with 2,034 adults, exploring their lifestyles, regular routines and habits, plus their relationship with food and eating out. The latest guide from Licensed Trade Charity’s Support & Care explains how pension rules have changed and what these changes mean for your future. Everyone wants to retire someday but preparing for your retirement when the rules keep changing makes long-term planning very difficult. Recent changes to pension rules have given people much wider choice about how they can use their pension, but these reforms could also leave people financially vulnerable after they finish working. If you are retiring soon, or are starting to plan for your retirement, you’ll want to choose the best option for you and your family. That is why the Licensed Trade Charity has published a Support & Care guide: ‘How the new pension rules will affect you’. The guide has been written specifically for people who work in pubs and breweries. Pension changes explained The easy-to-read guide outlines what’s new, what options you have and how changes to the state pension will affect you. It explains the new changes around lump sum withdrawals and how much tax you will need to pay. The guide also has a useful list of other sources of information to help you be pension smart, such as the Pensions Advisory Service and contact details for the government’s Pension Wise Service. What’s in season Autumn As autumn approaches, many comforting foods come into season, perfect for warming us up during the cooler weather. Apple, cabbage and pumpkin are all at their best at this time of year, and work well with a variety of dishes. Pumpkin soup makes for a delicious starter or light bite and can be easily cooked in large batches for a quick and easy service. Cabbage is a great accompaniment to roast meats and pies, and can be mixed with braised apple for a twist on a traditional vegetable side dish. Can I show you the beer list? Wine may be the traditional pairing with food, but a pint of beer is now being seen as the perfect meal accompaniment.
Pairing beer with food was frowned upon not so long ago, but with the growing demand for cask and craft beer, there’s been a shift in attitude – and beer is now an increasingly popular choice to match with food. In an article in The Independent on Sunday, Jane Peyton, named Sommelier of the Year by The Beer Academy, backed this up. “It’s actually a much better pairing [beer] with food than wine and there are so many special beers for fine dining.” So why does it work? In many ways, beer is more food-friendly than wine, with far more flavour variety. While wine is made with one key ingredient – grapes – beer makers are now experimenting
with a huge variety of blends. Also, as beer is carbonated, this lifts food from the palate and refreshes the mouth, making each mouthful an exciting experience for diners. There’s a beer for that… In November last year, CAMRA launched ‘There’s A Beer For That’, a £10m campaign to get people thinking about beer differently. The campaign highlights the diversity of beer available in pubs today and the many different dishes they can be matched with. It's been eight months since Britain's Beer Alliance successfully launched 'There's A Beer For That' and the campaign shows no signs of slowing in momentum. Our guide to AA Rosette and Star ratings Today, online reviews are just as important to consumers as personal recommendations – making the value of a positive review unquestionable for Publicans. The achievement of high ratings in industry awards and accreditations such as AA Rosettes and Stars assure consumers of the quality and reliability of your establishment, and are sure to draw in the crowds. We spoke with two Enterprise Publicans who have recently been through the AA judging processes to achieve top ratings. Over to the experts… Dominic Chapman, Chef Proprietor at the Beehive in Berkshire, sheds some light on what it takes to achieve an AA rosette. "My philosophy has always been to source high-quality ingredients and then simply show them a little love – a simple idea that will produce highly commended dishes. Once this simplebut-imperative notion is consistently delivered, then it’s time to share". Lesley Benson and her team at the New Inn in Clapham, Lancashire, have successfully gained a five-star rating with the AA. We caught up with Lesley to find out more about the process: How did the New Inn achieve five-star status? In 2013, we took over the hotel and underwent a complete renovation.
There are 20 bedrooms, a restaurant and two bars. When the renovation was complete, we decided it was a great time to bring in AA for an assessment. Any tips with the process? The best thing to do if you’re looking to achieve five-star status or rosettes is to have the criteria sent to you. You don’t have to do everything you think you do. It doesn’t necessarily
For any accreditation, the judges will be looking for the following things: • Quality of the product: I trust my suppliers and have spent years building strong relationships with them. To be frank, they can make or break your menu. • How you stand out in your area: Always know your competitors better than they know themselves! • Mastery of flavour and cooking techniques: A great dish is all about the ingredients and careful cooking. Think about the components of the dish and how their flavours work together. Precision is key and judges will be looking at this closely. • Consistency: Judges visits will not just be a one off, they can visit anything between three and six times, or in some cases more. Each time, the menu, signals of provenance and overall service should be consistent. Change in portion size, taste and presentation will not make for a good experience. • Value for money: People who appreciate good food will still look at the price tag and if that is not in line with the product, they will not be returning. Don’t become greedy or too adventurous with expensive produce. Always think about your customer at every stage of the process.

Every demographic is different, and what works in one hotel won’t necessarily work in another. How has this changed your business? We actually took over a business that had failed so everything has changed. The real difference is the change in the team – everyone’s expectations are lifted and as a result our staff are motivated to deliver the best customer service. How has the five-star status helped market your business? It has made it much easier with our online booking sites. We have a plaque outside and roadside signs. Both curbside and online advertising have benefitted from the five-star status. Our final tip would be to ask for an inspection. The judges will rarely just arrive on your doorstop, you will have to invite them – and then, for the most part, be very patient! Cellar Keeper of the Year Awards Noel McMahon, Publican at London’s Nightingale pub, has been crowned overall winner at the first Enterprise Cellar Keeper of the Year Awards. Open to Enterprise publicans, managers, bar staff, cellar men and women in Greater London, the award recognises the people responsible for the capital’s best beer cellar, and was judged by a panel of industry experts including Enterprise regional managers and divisional director Nathan Wall, Marston’s technician Jim Bligh, and Cask Marque’s Roger Clayson. Noel took on The Nightingale, in Nightingale Lane, Wanstead, in 1987, and notched-up 27 years there last December. Joint runners-up were Sarah Gillam, who runs the 465-yearold Magpie & Stump, Old Bailey; and George McCabe, part of the team at The Tommy Tucker, in Waterford Road, Fulham. Enterprise CEO Simon Townsend presented them with their prizes at a special ceremony at The Magpie & Stump. Enterprise senior regional manager Michael Ekberg, who organised the awards, said: “The 15 regional winners were all superb, and it was particularly difficult to separate the top three. However, Cask Marque’s Roger Clayson said of the winner, ‘In all honesty, I’ve never visited such a complete cellar and behind-bar set up as at The Nightingale’.”

Going the Extra Mile Nags Head, Brampton The new team at the Nags Head in Brampton raised an outstanding £3,500 as a result of a charity day held earlier this summer, after taking on the site which had previously been closed for 18 months. Much of the funds were raised as a result of a hair-raising ‘hot coal’ walk, with customers and bar staff carefully navigating their way across a red-hot walkway in return for sponsorship. The entire event was a roaring success and saw the local community come together, enjoying entertainment with music from a live band and delicious hog roast supplied by a local butcher.
All Guns Blazing! Riflemans Arms, Glastonbury The Rifleman’s Arms, Glastonbury, Somerset, has reopened following a fantastic facelift! The Rifleman’s Arms, known for its live music scene, and is now home to a real ale and cider bar. Parts of the 16th -century building have been restored, and its popular terrace area has been rejuvenated with new garden furniture and decking. In addition, the pub has a new kitchen, toilets and fixtures and fittings, and has been redecorated throughout. Publican Robert Carter said: “There’s been a real buzz around the return of The Rifleman’s Arms, and the response has been overwhelming. As well as an influx of locals, we’ve seen visitors from far and wide since reopening, even as far as America. I didn’t realise just how much people love the pub, which is often referred to as the place to be, in Glastonbury. “
Charity Concert Kingsbridge Arms, Totnes The Kingsbridge Arms raised an impressive £550 amount for charity recently, hosting and directing a memorial concert featuring the Military Wives Choir from Plymouth. The event raised funds for the Stillbirth and National Death Society, with the Little Footprints at Follaton House benefitting from the proceeds. The choir were supported by local singer/songwriter Aaron Samuel. Publican brothers, Alex and Rob Young, have been tirelessly raising money for local charities for years, with over £40,000 raised to date. Rob is not only the musical director of the Military Wives Choir, he is also a director for SRA Developments, producing ultra-sonic scalpels for medical applications, which enable a less invasive way of operating.

A Taste of Success The Gibraltar Rock The Gibraltar Rock, Tynemouth, received a glowing review from leading regional newspaper the Newcastle Chronicle after a recent visit from a roving reporter who dined with several guests. The pub was praised for its ‘tasty menu’ which the publication added matched ‘its fantastic views’ of the North East coastline. Enjoying a varied meal, the reviewer commented that their starter, a tomato, mozzarella and basil salad, was ‘exceptional’, the vegetables ‘excellent’ and the roast dinner offered ‘everything anyone could want in abundance.’ Commenting on the ‘Everest-high plates’ they added ‘customers were there to enjoy every mouthful.’ Adding, ‘service was exemplary’.
