Stay up to date on how to avoid counterfeit money in your pub. The Bank of England has introduced a new scheme to protect businesses like pubs falling victim to counterfeit money. Victoria Cleland, Chief Cashier at The Bank of England, has said that “retailers and other businesses are the front line of defence against counterfeiting”*, and they have decided to take measures to help publicans and their staff to recognise counterfeit money. A millennial view… Tristan O’Hana This year’s Pub Goers Conference educated operators on their guests of the future. Tristan O’Hana, editor of Pub & Bar, shares a few key learnings from the day. Since my last column, Pub & Bar magazine has hosted its annual Pub Goers Conference – a day of insightful presentations delivered exclusively to a room of modern on-trade operators at the Royal Garden Hotel in Kensington. After this year’s General Election drew out record numbers of young voters, we decided to focus 2017’s Pub Goers Conference on your millennial customers. Here are three top tips for those who couldn’t make it: They like to eat out While many headlines would suggest that the declining consumption of alcohol from young consumers is a degenerative hindrance on the industry, it’s up to operators to observe what they’re doing instead, and act on it. Millennials love to eat out. In fact, UK diners have spent nearly £55bn on eating out this year. Stick that in your pot and cook it! They have money worries Times are tough for most at the moment, especially for this youthful demographic. Millennials are stressed about money; they prefer to pick and choose specific and special places to part with their cash – something that may seem more of a treat. Ironically, this can often lead to them spending more than they would have done had they just nipped out for a mid-week drink. They’re health and image-conscious Whether they’re monitoring their step count through their smart phones or posting selfies in the gym, this generation are taking health seriously. Naturally, this has had a direct effect on what they choose to consume and when. I’m yet to see a pub list protein shakes and superfood smoothies on its menu, but I wouldn’t bet against that happening in the coming years.

Meet me at live Annabel Smith It’s over two years since I started matching the On The Dray beers with food, and penning these features for deals&ideas in conjunction with the There’s a Beer For That campaign. T Dry January When it comes to ensuring your takings don’t hit a dry spell in January, you’ll need to come up with enticing and inventive ways to lure your customers into the pub. Not only will they be feeling the pinch on the purse strings after Christmas, they’ll also be looking to counteract festive excess, likely to shun alcohol in favour of exercise. 'Try January' can give you a healthy kick-start to 2018. Counteract the profit implications that 'Dry January' presents to your pub by offering customers the prospect of trying something new, whilst also positioning your pub as somewhere they can socialise without over-indulging.

Deal or no deal? Deals on drinks will be popular as customers crawl towards that elusive January payday. You don’t need to run offers all day, try ramping them up during busy periods, like after-work or Thursday through to Sunday – it's a great way to encourage extra sales. Why not try…. Adding one or two lighter options will appeal to calorie conscious customers, and can also be introduced at a special January sale price to encourage trial. From stacked salads to hearty soups, use seasonal vegetables and locally sourced products to premiumise your offering.

Hashtag #success Join the trend and tag your #TryJanuary offers across your social media platforms, encouraging your customers to re-post to unlock special deals. From pictures of your delicious menu creations, to new products on bar, use this free of charge marketing medium to spread the word about your pub.

You don’t need to restrict yourself to just one if your pub excels at a multitude of offerings! Have a look online and see what categories would suit you best. Drafting an award entry can be daunting – very few people like talking about themselves or their successes. However the time investment is well worth it, as the PR opportunity that stems from being shortlisted or winning an award can be hugely beneficial for your business, driving new custom and putting you on the map. Also, by going through the entry process, you have the opportunity to focus on what you have achieved in your pub, allowing you to see where you could improve in the future. It’s also a fantastic morale booster for your team going through the entry process and even more so if you win.

Here are our tips on compiling a stand-out entry… I dentify the right category for your business. You could enter the awards to celebrate everything from your marketing campaigns to your food offering. Take the time to review each of the categories in detail ake sure you stick to the M submission deadline and leave plenty of time to write your entry. Late submissions will not be counted so are a wasted effort, and rushing your entry you run the risk of leaving out vital information or underselling your business ead the entry criteria and R ensure you understand what the judges will be looking for

and stick to it. If in doubt, speak to your Regional Manager who will be able to help ring your pub to life through B your submission. Excite the judges, highlight some of your achievements and initiatives and back them up where appropriate. From video of your buzzing live music events to photographs of your pub garden in full bloom, really shout about your stand-out features Be passionate and innovative to really illustrate why you and your pub stand out from the crowd. Don’t be shy, celebrate your business.

We spoke to last year’s Community Heroes Award winner, Russell Clark. He offered his insight into what it takes to be an award-winning pub. “One of the most important factors when you’re looking at your award submission is to be truthful and be yourself. Last year, we highlighted the wide range of community projects we’ve organised, and what a difference we had tried to make to our customers and local community. An important ideal we choose to work by is invest in your community and your community will invest in you, and it seems to have worked, as we can now call ourselves an award-winning pub!"

Food focus: Trending Tastes 2018 It’s that time of year again, when the experts look ahead to predict what the next big trend for 2018 will be, and no less so than within the food industry, as customers look to seek out increasingly new and exciting flavour and taste experiences. More often than not, you’ll be competing for your customers' attention against a wave of high street chains and street food outlets, as well as delivery services which are dropping restaurant quality cuisine right to their front door, so it’s really important to make sure your menu offering is reflective of what’s going on in the wider market, whilst still boasting those pub classics you just can’t replicate in any other dining environment! Start to think about your 2018 menu evolution now, and use January as a test-bed for new dishes. On page 8 we share ideas on how you can encourage your customers to try out new food and drinks during the traditionally quieter January trading, so why not consider trialling one or two new dishes a week at a special price across the month, and ask your customers for honest feedback on them? The stand-out winners will then be no-brainer dishes for your 2018 menu.

All-day brunching Bottomless brunch anybody? This trend has really taken off over the last couple of years and sees no sign of abating. Dining occasions are becoming less defined and this breakfast and lunch hybrid can be found on most high-streets paired with a compelling drink offer like unlimited prosecco, which pubs can tap into easily.

Sharing is caring Sharing platters are an easy way to cater for groups and tap into the casual dining trend. Why not create a small menu of different sharing plates inspired by global flavour, like Mexican nachos, Italian anti-pasti or even Turkish meze?

Slice it up Pizza is set to be one of the biggest pub food trends of 2018. Low cost to produce, a 2016 Morning Advertiser report cited possible margins of up to 80%. Mama mia, that’s got to be worth getting involved in!

Finger lickin’ chicken Poultry has long been a favourite on pub menus. Elevate the traditional chicken wing with a variety of sauces and coatings that give your customers a kick!

Party your way to profit! For many of you, New Year's Eve will be one of busiest and most profitable nights of the year. From revellers looking to drink and dance the night away, to diners looking to indulge in their last feast of the year, you shouldn’t see your bar or restaurant empty come the 31st December! Double the opportunity…

The party atmosphere will certainly impact upon your wet-sales, with spirit sales in particular soaring at this time of year, accounting for 26% of total festive serves1 – outperforming all other categories. Stock up on premium blends and quality mixers, and upsell to double measures to maximise your profit opportunity. Don’t miss our article on page 29 exploring the art of the perfect spirit serve.

By now, you’re likely to have already planned and advertised your New Year offering, but if you’re still looking for inspiration, themed parties such as 1920’s or 1980’s are really popular and a lot of fun. There are likely to be two spikes in ticket sales, one when you first advertise your event, the second the week before the event, so remember to save some tickets back for less organised customers!

Uncork success

By offering a cocktail on arrival and a glass of bubbly at midnight, customers will feel like they are really getting their money’s worth and you’ve pulled out all the stops. Keep partygoers in your pub after they've sung Auld Lang Syne by bringing out light bites after midnight, like hot dogs or bacon sandwiches.

Red, white and sparkling wines like prosecco will be a big hit over New Year. If you’re introducing a New Year menu, suggest wine pairings for each course. The biggest opportunity however lies in the fizz... from pimped up prosecco cocktails to a glass or two of champagne at midnight, sparkling options are a must to stock at this time of year.

What’s the best night to put on live music? The venues that get the most from live music, host on the same nights consistently so customers know when to expect entertainment. How do I know what type of music is right for my pub? Different types of live music are a great way of introducing new groups of customers to your venue. Host multiple music nights of different genres to attract different crowds and see what works for your business. How much should you pay for an event fee? If you have your own PA system you can usually get a better deal. We recommend £150 as a starting point for an artist fee for venues beginning to book live music. Live&Loud allows you to either pay the artist on the night or we can handle the payment for you digitally. How much time do you need to promote an event? The earlier you book a musician, the sooner you can advertise it, meaning better footfall for the event. We recommend no less than 3 weeks in advance. Natalie Coleshill, publican at the The Milford Arms in Isleworth A sporting success Publican Natalie Coleshill has been at the helm of The Milford Arms in Isleworth for three and a half years. In that time, with the support of her team, she has transformed the pub into the hub of the community. Famed locally for being a great place to enjoy live sport, here she shares her advice on getting the atmosphere just right for fans heading to the pub to watch the big match. Sport is a big part of your retail offering. What makes your pub such a great place to enjoy live sports screenings? We have eight TVs inside our pub and one external TV. We can play three different screenings at once and I think that really helps as we can show a variety of sport for different audiences at the same time. How do you cater for sports fans without alienating other customers? Because of the size of our pub we are able to create a kind of zoning system. We have an area at the back of the pub that is quieter where you can dine and drink. Then we have all of our sports equipment in one area, such as our pool tables, dartboards and our flatscreen TV’s to create a sports hub.

On a big match day, how busy does the pub get and how do you and your team prepare for the rush? We’re lucky that our bar area is large, meaning we can cater for larger groups. We position our screens away from the bar, and because of that, we have don’t really have sports fans hovering at the bar whilst they watch the game, there’s a steady flow of customers coming to the bar and importantly, less queuing and bustling for a pint. With a big summer of football coming up next year, what’s your number one piece of advice for other publicans to improve overall atmosphere and viewing experience for sports fans? You need to deliver an atmosphere that outrivals watching the match from their sofa. AV equipment needs to be high-quality and working correctly, delivering an excellent sound and picture, making sure the volume is just right. Keeping an eye on the fixtures is also important so you know when your big rushes will be and you can staff up accordingly. For really big matches, try ticketing games where people can reserve a table and table service is on offer. Barbeques are a good way to ease pressure on your kitchen. For the FA Cup Final we created burgers named after Chelsea and Arsenal players, which was good fun. Ultimately, preparation is key. Get it right, and you’ll see the results in your profits!

The knowledge Cue profits Pool tables and teams are an established part of British pub culture, but did you know that they could also drive income to other gaming and entertainment machines as well as drive wet sales? Helena Rudd, Marketing Director at Bob Rudd, gaming and amusement machine operator, explains; “It’s a no brainer really, pool team squads usually consist of around 12 people each so that could be 24 customers per pool night in your pub. We recently carried out some research and as suspected, customers that play pool are really likely to play other gaming and entertainment machines, and income shoots up as a result of this extra footfall.”

“There can be a fair bit of waiting around during pool games and tournaments too, and depending on the amount of pool tables you have on your premises, you may have a significant amount of additional customers who will want to preoccupy themselves whilst they are waiting for their turn on the table. Creating an

appealing gaming machine area, one close to the pool area, will be a really attractive proposition. Not to mention, the research also revealed that the pool team players were drinking 4 to 5 pints each during pool tournaments, thereby boosting wet sales too. Win win, unless you're on the losing pool team of course!”

Social Media Trends for 2018 "With social media being one of the most important ways pubs communicate with customers, being up to date on what social media practices to employ can give you the edge on your competitors. In 2017 we saw new elements of social media employed more and more throughout the year, such as live video," explains Matthew Jones, Digital Services Manager at inapub. Don’t miss these trends in social media coming up in 2018. Video content is one of the major growth areas of social media. 90% of shared content on social media was video in 2017. This will continue to grow as this type of posting is seen as more authentic by customers than other types of business posts. Pubs should look to post video content wherever possible, including live video and Boomerangs on Instagram. These involve short, looping videos, to reach more customers and to promote food and drink. Throwaway content is looked upon by many social media users as the most reliable and authentic. Stories on both Instagram & Snapchat are the most effective examples of this, with Facebook adding more features in 2018. These story posts, which last only 24 hours, give a real sense of what is happening now to customers. For a small price, you can also pay for a Snapchat Geofilter, which creates a

bespoke location tag so users can spread awareness and engagement of your pub in one swipe. The fear of missing out (FOMO) on what you show them can be an effective motivator in driving footfall to pubs. Pubs should look to adopt Instagram if they haven’t already. Instagram’s user base grew by an estimated 200 million users in 2017, with that growth rate expected to continue in 2018. Instagram is integrated with Facebook, saving any publican time as one post can reach 2 different platforms' followers at once.

Publicans & pubs in the spotlight Celebrating being an award winning ‘Woman in Business’ The Queen Charlotte, Andover Publican Victoria Thorp has won the “Women in Business” category at the annual Test Valley Awards ceremony. With 170 entries and 18 businesses shortlisted for the top six spots, it is a true testament to the hard work Victoria has put into running her business. Victoria, who only took over the site 18 months ago, has truly made her mark on the Andover pub, having already set up a charity initiative raising money for those affected by cancer, which has received donations from Manchester United and Southampton football clubs. Victoria reveals, “I’ve always wanted to do charity work and a few months ago one of our regular customers was diagnosed with cancer. I decided to set up The Queen Charlotte Foundation, to help local people suffering from terminal and chronic illnesses, and others affected by it.” A fantastic achievement for a publican dedicated to supporting such a worthy cause.

Taste of the West The Chagford Inn, Newton Abbot The Taste of the West Gold Award for SouthWest Dining Pub has been awarded to The Chagford Inn for the second year running. The pub strives to make most of their food in-house, and to source all produce as locally as possible, and they change their menu daily to make sure they have the freshest ingredients available for their customers. Their added ‘Beef Menu’ is a notable touch as they display a variety of different dishes using various parts of the animal. Publican John Freeman has said: “We pride ourselves on using as much local produce as we possibly can. Our beef menu is a prime example of that, we take the whole animal from a farm less than half a mile away and use every part of it, creating everything in house. Our staff’s knowledge in what we do and how we do it is extremely commendable. Using locally sourced produce is very popular and it has truly integrated us into the local community”

National Gastro Pub of the Year The Bladebone, Bucklebury The Bladebone in Bucklebury recently won another award to add to the ever growing list, having been named as National Gastro Pub of the Year at the Food Awards 2017. It’s been a great year for publicans Richie and Charlotte Sanderson, who also won Best Destination Pub at the Muddy Stilettos Awards Berkshire 2017. The Bladebone underwent major refurbishment earlier this year and has transformed their pub into the hub of the community. Regional Manager Richard Bentley said: “When I first met the current publicans, Richie and Charlotte, I knew they had the enthusiasm, local knowledge and ability needed to make the pub a success.”

The Plough Inn, Tiptoe Steve Weal, publican at The Plough Inn, Tiptoe, has managed to smash his charity targets for his annual fundraiser, raising money for the Oakhaven Hospice Trust and Wave 105 Cash 4 Kids programme. The fundraiser included a raffle and tombola, live music, a BBQ and more. His target was £3,500 and he raised a staggering £5,710, an incredible achievement. Steve told us: “We have chosen these charities as we, and our local community, wanted to support local people in need. This year was exceptional with many tradesmen who drink in our pub donating days of their services for our auction. This helped us raise our record amount of nearly £6,000. I’m not sure how we are going to beat this amount next year, but I’m sure with the continued support of our locals and all the fantastic donations we received from local companies, we will have a really good go.”

The Royal William IV, Lincoln Publican Chris Bulaitis had a very successful day at the Select Lincolnshire Awards 2017. No stranger to taking home a trophy, Chris was awarded Pub of the Year for The Royal William IV. He was also runner up in the same category with another site, The Horse and Groom, which previously won Pub of the Year in 2016. Another of his pubs, The Duke William, came runner up in the Restaurant of the Year category. Regional Manager David Hill said: “Considering he only took The Royal William IV on 12 months ago, this is quite an achievement. Congratulations to Chris and his team from the entire Ei Publican Partnerships team.”

The Flemish Weaver, Corsham The Flemish Weaver in Corsham has won Gold at the local Bloom Corsham Competition 2017. The competition recognises local and public groups who take time to make their communities a greener, cleaner and prettier place. Publicans Steve Fowler and Rob Carter have been at The Flemish Weaver for nearly a year and have managed to transform the backyard and front area into a quirky space that customers have enjoyed all summer long.
