Business news Know your cash As the festive period approaches, it's key to ensure that your staff are familiar with all change and bank notes in circulation. The new £10 polymer bank note is now in circulation (14th September). The note, which features Jane Austen, is made from the same material as the new £5 note. The new note will be smaller than the current note at 132mm x 69mm compared to 142mm x 75mm. It is likely that machines that take £10 notes will need a software update. The old note, featuring Charles Darwin, will be withdrawn from circulation in Spring 2018 and three months notice will be given prior to withdrawal. Being able to identify counterfeit banknotes is a key skill for staff, with around 347,000 fake banknotes taken out of circulation in 2016. Staff need to be extra vigilant during the festive period as counterfeit cash reaches its peak.

Does your license cover you for Christmas and New Year? You may find that your license limits trading hours you would otherwise look to operate in during Christmas and New Year. If this is the case, consider applying for a Temporary Event Notice, which can be obtained via your local authority. Don’t forget, you need to apply for the Temporary Event Notice at least ten days before the event. This will allow you to extend your opening hours during a designated period of time. The licensing activity includes: • Selling alcohol • Serving alcohol to members of a private club • Providing entertainment (such as music, dancing or indoor sporting events) • Serving hot food or drink between 11pm and 5am Christmas Eve and New Year’s Eve fall on a Sunday this year, when permitted hours under a premises licence often tend to be more restrictive. Double check your permitted hours and whether you have any specific longer authorisation for either or both dates – failing which consideration should be made to giving a Temporary Event Notice for these dates. Autumn Budget The 3.9% increase in beer duty announced in the March Budget risks undoing all of the good work of the cuts from 2013 to 2015, and a further increase this year would be hugely damaging to the brewing and pubs sector in the UK. The tax cuts in 2013 were not easily won, which is why we need your help to increase pressure on the Government for a beer duty cut in the Budget. Drinkers' Voice, a new alcohol consumer organisation launches Drinkers’ Voice, which has formally launched, is a brand new initiative which seeks to bring the public back into the debate on alcohol and health. Drinkers' Voice believes it is important that people understand that drinking alcohol can form part of a healthy lifestyle, and that people should openly discuss how enjoying a drink with friends enhances their well-being. Our pubs start filling up with ‘occasional’ drinkers, guests who might only visit a pub once or twice a year. This is a great opportunity to exceed their expectations by recommending a diverse selection of beers matched to the menu, rather than automatically pointing towards the wine list. A beer menu gives customers an informed choice and introduces them to the delights of beer with food. If a dedicated beer list is a step too far, just pick a few dishes on your menu and indicate what beer goes well with that dish on the food menu. The bar's heating up... Baby, it’s cold outside, and your customers will be looking for a winter warmer to help them crank up the interior temperature dial. There’s something hugely alluring about a simmering pot of mulled wine or the warming taste of an Irish cream coffee, and at this time of year, promoting these tasty hot drinks will help set your profits on fire too. Many of the major drinks brands introduce seasonal products that can be served as a standalone drink, or used to create a base
for a winter special. Food focus: Christmas party food Christmas is no longer all meat and two veg. There are plenty of opportunities outside of the traditional sit-down meal that you can profit from this party season. Christmas revellers will be looking for something to soak up the festive excess, and party platters and sharing foods are ideal for feeding the masses. Party food has come on over the last decade or so. Consumer tastes are far more refined and a mushroom vol-au-vent or cheese and pineapple on a stick just isn’t going to cut it. A recent poll revealed that over 26% of those surveyed wanted to see more choice on Christmas party menus, and 24% wanted to see simpler serving formats*, making platters an ideal solution for shared dining experiences.
Don’t be afraid to use flavour and global food trends to excite the palate, from twists on Christmas classics like mini pigs-in-blankets or turkey stuffed Yorkshire pudding bites, to more international flavours like spicy nachos. Make sure that hot food is served hot, and keep an eye on your presentation – we all eat with our eyes after all. Offering a free drink for those booking a party with you is a great incentive too – for example a mulled wine or glass of prosecco upon arrival.
What I really love about this style of dining is you don’t have to be a food-led pub to pull it off; these dishes can be created in small catering environments and bought in direct from wholesalers including Booker. Think about your price structure – buffet style food needs to represent value for money to your customers, whilst making your business money. I’d suggest starting at around £15 per person, with a minimum party size of 10 people. This should include a variety of meat and vegetable platters, sharers and canapés.

Festive checklist... It’s official. The sun has taken its hat off, leaves are crunching underfoot and the supermarkets have started to stock familysize boxes of Quality Street. It can only mean one thing… Christmas is coming.

By now your Christmas menu should be available online, and for customers to browse whilst in your pub too. We eat with our eyes, so delicious descriptors will get the taste buds tingling in anticipation of your festive offering. Your chef should have a definitive order list in with key suppliers too.
Never mind decking the halls, it’s all hands on deck when it comes to planning your staffing rota this Christmas. As well as regular staff, build a bank of reliable temporary staff you can call in during busy shifts. Make sure that you carry out a briefing before each shift to help identify any potential issues that may arise.

Christmas is the most profitable time of year in the pub trade. Customers will be in the party spirit, so make sure your bar is fully stocked to cope with the demand. Christmas delivery dates will also vary from the norm. See page 5 for key delivery dates for this December.
From late November, you can start to get creative with the Chrimbo decorations. From twinkling lights to garlands, embellished trees and all in between, customers will want to feel like their favourite pub is embracing the most wonderful time of the year.

Ensure you have a sufficient supply of hardware to cope with the seasonal crowds. Customers are likely to want to enjoy some celebratory fizz at this time of year, so make sure you stock up on flutes! Cutlery should be polished and free from tell-tale scrapes that indicate over-use – and don’t forget to stock up on extra crockery!

Hoppy Christmas Christmas is the season for feasting and a time of year when many people consume a wider range of libations. They trade up and often drink to match the season. This means that customers are open to spending more or having different taste experiences. Beer ticks both those boxes. High ABV barley wine with its warming character and dried fruit flavours and the powerful roasted coffee notes of an imperial Russian stout are premium beers that suit winter weather. These are not everyday beers, so upselling from staff may be required with tasting notes and description of the style. Matching beer with Christmas dinner is also a winner because there are several courses in the meal and beer to go with each one. A perfect opportunity to increase engagement in the beer offering.

Smoked salmon with wheat beer. The beer has a lemony tang and is acidic so this cuts through the oiliness of the fish.
Christmas pudding or mince pies are spicy fruit and more fruit. Barley wines or old ales have complementary dried fruit and spice flavours.
Main course Turkey is not highly flavoured and can be dry on the palate so go for an imperial IPA. The bitterness from the hops will stimulate the salivary glands and add much needed juiciness to the meat. Pork is rather fatty so the hops from the imperial IPA will work in a different way, with their acidity and tannins to cut through the meat’s texture. For the veggie option, a nut roast matches well with brown ale - a bittersweet beer where fruit, caramel and nut flavours combine.

Cheese plate The received wisdom is that wine is the appropriate match for cheese. But as Garret Oliver, a leading American brewer, says ‘Have you ever seen a cow in a vineyard?’ Cheese and beer together is alchemy. For instance cheddar and Belgian abbey beer – the cheese’s acidity and beer’s malty sweetness are a contrast. With Stilton and porter, the salty cheese contrasts the savoury flavour of the beer. Christmas dinner is a special event. A meal matched with beer served in elegant glassware (banish the pint glass) will be a memorable dining occasion for customers.

The revitalised awards programme is designed to reward and recognise outstanding operators, managers and their teams, pubs serving their local communities and operational excellence across the Group. This scheme provides an excellent foundation to develop our awards strategy over the coming years, and replaces Community Heroes, Pubs in Bloom and Cellar Keeper of the Year. There are 16 different categories* incorporating Ei Managed Operations and Ei Managed Investments, and the Ei Group Pub of the Year will be chosen from all the category winners. The knowledge Topping up your income Gaming machines can be a really lucrative source of income for your pub – but it’s important that they are well maintained to really maximise their profit. Players will naturally avoid a machine that has defects, appears faulty or isn’t accepting notes. When the machine float drops below £125, the note acceptor will automatically switch off, and there’s nothing more frustrating for a customer than feeding the machine £1 coins. Every day, your team should carry out a checklist of actions to ensure that your gaming machines are in perfect playing condition. Why not run an incentive scheme, appointing one of your staff as a machine champion? Before you open up, turn the machine on and carry out a daily check that all lights and buttons are working and the machine is paying out. This should be carried out each morning
Refill your machine daily before you open – other than on collection day – to the maximum hopper limit (usually around £350) Make sure the note acceptor works at all times. Drinkaware Supporting responsible retailing As a responsible drinks retailer, Ei Group is a funder of Drinkaware, the alcohol education charity that seeks to reduce the harms linked to alcohol misuse. Their work is broad and targets a wide range of audiences from consumers, health professionals, Government and employers to retailers in the on and off-trade. Drinkaware Chief Executive Elaine Hindal said: “Drinkaware recognises that alcohol is part of everyday life for many people and can be enjoyed in moderation. Publicans & pubs in the spotlight An audience with Jim Davidson The Three Crowns, Bushey Heath The Three Crowns hosted an exclusive ticketonly event for its regulars, hosted by none other than celebrity comedian Jim Davidson, OBE, in aid of the Care After Combat charity. At just £15 per ticket, the customers were treated to an intimate gig by the comedian, who shared stories of his eclectic career, hosted a pub quiz and led the auction, which included coveted Simpsons memorabilia. Publican Michael Duffy said, “We raised a total of £2,869 for Care After Combat where Jim is president. Luckily the weather was on our side and it was a great day”.
Up the creek with a paddle The Chequers Inn, Laddingford Publicans Charles and Tracey Leaver of The Chequers Inn, Laddingford, are dedicated to fundraising in the local community. From village flower shows to model train days, The Chequers Inn hosts a range of events throughout the year to raise money for local projects, with the proceeds from the latest event donated to the Yalding Scout Group. Yalding Scout Group Treasurer Paul Mahoney commented, “It was a very timely donation as we were about to invest in some new kayaks. The money was spent on four new kayaks, helmets, buoyancy aids and paddles.This now means we can get all of the Scouts on to the water at the same time, and with equipment that fits”.
Celebrating summer in the great outdoors The Whip and Collar, Iver Publican Zoe McCabe treated her customers to a taste of summer with a garden party. Partygoers were treated to live music from local band ‘The Stiles’, a boozy tent serving Prosecco and Pimm’s as well as a BBQ to ensure party guests were well fed. The garden party catered for guest of all ages, starting at 3pm for families and going on until 1am for night owls. Zoe McCabe said, “It was an excellent day, we had plenty of people attending. It was all about getting the community together. We’ve worked hard to bring the pub back to its former glory and have made it a true community spirited pub”.

“It’s a fantastic achievement for a pub to be listed
The hub includes superfast wifi facilities, two publicly accessible personal computers, newspapers and magazines, photocopying and printing facilities, local information and a book exchange. The hub is accessible through a separate, well-signed entrance to the pub to ensure its appeal to non-pub goers. Walkers, cyclists and even dogs are made to feel welcome. As part of their programme of support, Pub is The Hub awarded a grant of £3,000 to the project from its Community Services Fund, which went towards the IT equipment, printer and drinks-making facilities. “Our priorities in running The Swan are all based around the village and its residents as it is the only thing that will ensure that the business is sustainable over time. “We are incredibly lucky to have the Carleton Community Umbrella organisation and, with Pub is The Hub’s advice and financial backing, I am delighted that we can extend its reach even further in providing the hub and coffee shop service. In a very short time, the hub has become a lifeline for many people in Carleton” explains Paul.

The Anchor Inn, Wingham, The Lion Hotel, Treorchy, The Thirsty Bear, Waterloo, The Chequers, Houghton Conquest, Rose & Crown, St Albans, and Cellar House, Eaton were all shortlisted finalists. Adrian Emmett, publican at The Lion, Treorchy, said: “We’ve got a fantastic team at The Lion and although we haven’t won this year, we can certainly claim to be the best pub in Wales in our categories! We’re proud of where we’ve come as a business and will continue to forge relationships with the local community.” Congratulations to all of our finalists.
