Regular cleaning of the chimney or flue will eliminate the buildup of soot and will clear obstructions such as bird or animal nests, leaves and debris. This will greatly reduce the likelihood of a chimney fire, and will allow the fire to function efficiently. Wood fires should have the chimney swept following every four months of use, whereas those which only ever burn smokeless fuel can be reduced to at least one annual clean. Ensure you and your customers are not at risk from carbon monoxide poisoning by checking that air bricks, vents or flues are not blocked. If there is a fire or burner in the domestic areas of the property, you must have a carbon monoxide detector installed – phone the Property Helpdesk if this is not the case. Sweep out the ashes the day after the fire was in use, to ensure that the ashes are cold.
Use a fire or spark guard to prevent accidental conforms to a relevant British safety standard
2.
Do not place objects on or over the mantle-piece which may cause people to stand too close to the fire to reach or use them, including any Christmas decorations
3. Have sufficient fuel and logs inside so that these warm to room temperature prior to use 4. Remember to allow time for the fire to burn down prior to closing 5. Ensure the fire or spark guard is in position at the end of the night 6. Properly manage the fire when lit, and do not allow customers to touch the fire If a chimney fire (or any uncontrolled fire) happens: • Leave the room, close the door and alert other people in the building

Celebrating Community Heroes Congratulations to all our publicans who went the extra mile for their local communities in 2016 – which not only helps forge valuable links with your customers by supporting charities and causes close to their hearts, but also delivers tangible business benefits, driving footfall into your pub from new and existing customers who want to support your community efforts. This year, over 530 publicans entered the Community Heroes Awards. The Cleveland Bay, Redcar was crowned National Winner 2016, receiving a prize fund totalling £6000 to spend on community initiatives. The Lunar Hare, in Andover, was awarded National Runner Up 2016, and receives a total of £5000.
The standard of entries this year was extremely high and it made the selection of the finalists extremely challenging. It’s clear that publicans from across our estate have once again pulled out all the stops. They involved themselves in a huge range of activities and initiatives, engaging with their local communities to encourage more of them to visit their local pub. National runner up The Lunar Hare, Andover Publican Allen Watts not only supports a variety of local charities, fundraising for the likes of the Countess of Brecknock Cancer Hospice and the National Autistic Society to name a few… but took the pub's charity campaigning to a whole different level by getting involved in the Barefoot Challenge, which will see Allen go completely barefoot for an entire year to raise money for the Giving Africa Campaign. Allen explains; “Through our various charity projects, we’ve seen the community really bond” – a statement the judging panel couldn't agree with more!

Cellar Keeper of the Year 2016 Greater London Division
Meet our Cellar Keeper of the Year! Back in February, Enterprise Inns began its annual search for Cellar Keeper of the Year, open to Enterprise publicans, managers, bar staff and cellar men and women across its Greater London division – ranging from North London & Watford and Kingston & Staines to Barbican and Central London. Judged by a panel of industry experts, including Cask Marque National Account
12
Manager Roger Clayson, each pub that entered went through a rigorous audit and assessment based on its cellar management processes. Roger was truly impressed with the standard of entry this year, commenting; “Every cellar I have seen would win a cellar competition in any regional beer awards!” The first round produced 13 regional winners, while round two narrowed those down to a shortlist of five, with
publican Noel McMahon, from The Nightingale, Wansted, awarded the title for the second year in a row! As part of his prize, Noel will enjoy an all-expenses-paid weekend break courtesy of one of the competition’s sponsors, Fuller’s. He also received £5,000 to spend on The Nightingale.
The deals&ideas team spoke to Noel from the Nightingale after the awards and asked him what winning this award again meant to him Congratulations on your win! What does it mean to receive the Cellar Keeper of the Year Award again this year Noel?
How important is good cellar management in a pub?
Would you recommend other publicans to get involved in these awards?
"To win this award again means everything to me. I'm so proud of my team and how we have all stepped up to the plate to raise the standards from last year.
"The cellar is the hub of the pub or as you call it the heart of the business. It's the most important part of the pub. It should be treated like its a Michelin star kitchen and that's what I aim for.
"The Cellar awards are fantastic and a credit to Enterprise Inns.
I was determined to win but knew I would have to improve on what was a great result last year."
The beer leaves the brewery in 100% condition and I aim to deliver the pint to the customer in 100% condition."
Enterprise Inns are supporting us (publicans) to be traditional landlords and publicans and I fully support the initiative. The support is there all publicans should use it as I have done over the years."
Runner up was publican Peter Clements, who runs The British Oak in Blackheath. His prize included the chance to name and help brew his own ale, courtesy of London-based Meantime Brewing Company, one of the sponsors of the 2016 Cellar Keeper of the Year awards. The beer named 'Best Cellar Pale Ale' will be available to purchase in the pub soon. “It was fascinating to be a part of the process,” said Peter, “and fantastic to see something being made right in front of us that’s for us. It’ll have pride of place on the bar, and I’m sure it’ll go down well with our customers.”

NOV
RAISING A GLASS TO HEROES Annabel Smith We are blessed every single day with an unprecedented choice of things to eat and drink. In the beer world especially, we have an unrivalled choice of styles, colours and brands, a beer to suit most palates. If it weren’t for our armed forces, we would not have the plentiful supply of food and drink we take for granted today. (Both my parents remember rationing during the Second World War and recall not having enough to eat when they were children). The fundraising efforts of The Royal British Legion enables many of our armed forces community, both
current and former, to receive the support they so greatly deserve. Throughout the UK, there will be boxes of poppies and collection jars. The RBL never dictate how much money they expect you to put in the jar for a poppy, it’s however much you feel you can afford. It’s a charity which touches the hearts of many. This Remembrance Sunday, my beer will be Poppy Beer, a crisp, nutty, amber bitter. The aroma is of freshly sliced ripe apples. Its amber hue is emphasised by a tight rich head. It has a complex finish of bitter hops, nuts and citrus fruits.
WYCHWOOD WICKERMAN 5.2% ABV
This month's 'On the dray' featured beers on page 43 offer distinct characteristics and are perfect for pairing with food: GREENE KING & SADLERS ONE STOP HOP 4.3% ABV Try this with a curry. The hops will cut through the spiciness of the dish.
A traditional British IPA to accompany my roast beef and Yorkshire Pudding, 10p from every pint sold will be donated directly to The Royal British Legion. If that’s not an excuse to raise your glass and say thank you, I don’t know what is. You can email Annabel your questions direct at beersommelier@enterpriseinns.com or simply tweet the name of a food to @BeerForThat with the hashtag #BeerMatch for an instant reply.
WICKWAR WESSEX TRY TIME 3.8% ABV
Serve with chicken satay – the peanut will complement the nuttiness in the beer.
This is a great refreshing sharing beer, so drink it with a plate of spicy chicken fajitas.
WADWORTH BISHOP’S TIPPLE 5.0% ABV
OTTER OVER THE BAR 4.0% ABV
Pair with roast loin of pork with lots of crackling, served with apple sauce and all the trimmings.
EXMOOR ALES WILD CAT 4.4% ABV
Try this with a Welsh Rarebit. The Pacific Gem hops will cut through the cheese.
BUTCOMBE HAKA 4.5% ABV
The sweetness in Wild Cat complements the earthy flavours of venison, rabbit, grouse and pheasant.
Serve it with spicy crab cakes with a lemon mayo dip on the side.
EVERARDS SINGLE HOP IPA 4.7% ABV
ROOSTER’S COGBURN 4.3% ABV
The spicy green tea flavours in Single Hop will cut through a grilled tuna steak.
Put a twist on Coq au Vin and make it with Cogburn instead of wine. It works!

Having had a resurgence in popularity, gaining a reputation as an on-trend tipple, it's responsible for driving massive growth within the spirits sector, which shows no sign of slowing. Cheers to
Christmas
Christmas is one of the most profitable times of the year for pubs, so it's essential to plan your festive range in advance, introducing limited-edition ales and mulled drinks to help drive additional sales across December. Offering one or two seasonal specials on your bar can be enough to entice
customers to try something new, and much the same as wine drinkers may turn to mulled drinks, beer drinkers are looking for something a little different too.

Responsible Retailing
Christmas is one of the busiest times of year for pubs, and with additional customers in your establishment, it’s important to advocate responsible drinking and offer a safe environment, whilst maintaining a festive and welcoming atmosphere that keeps people in your pub for longer.
Offer choice‌ Stock a range of non-alcoholic drinks including premium soft options like Frobishers, J20, and Belvoir pressÊs and cordials. Classic carbonated drinks like Coca-Cola, lemonades and energy drinks like Red Bull will also be popular choices for non-drinkers. A mocktail menu and warm, alcoholfree mulled drinks will go down a treat with customers looking for something special across the party season. Offering deals on alcohol-free drinks will also encourage purchase.

PUBLICANS & PUBS I N
T H E
S P O T L I G H T Celebrating a milestone The Ferry, Alveston The Ferry at Alveston recently hosted a celebratory event to mark its 150 th anniversary, which included an exhibition documenting the pub’s history. “We felt this was a great way of showing off our English country heritage and demonstrating how the country pub is alive and out there to be enjoyed” explained Publican Martin Tolley. Regional Manager, Helen Mckenna, added: “It is a remarkable achievement for the Ferry to still be around after 150 years. As everyone knows, this anniversary means so much to everyone who visits the pub. The staff have worked extremely hard when organising the event, so on behalf of Enterprise we’d like to thank them for their hard work.”
London to Brighton The York Inn, York Congratulations to Publican Paul Thomas and his team, who recently completed the grueling 58-mile London to Brighton Bike Ride. The idea was dreamt up by Paul and one of his customers during a cycle ride. "While chatting, we discovered that we'd both had cancer and been through chemotherapy," Paul explained. "We decided it would be good to give something back.” In total, the pub raised over £9200 for Bike4cancer, which arranges hospice and respite care for sufferers and their families. Congratulations to Paul on a fantastic achievement.

North Sussex CAMRA Pub of the Year The Malt Shovel, Horsham CAMRA North Sussex branch have awarded their annual Pub of the Year award to the Malt Shovel in Horsham. Publican Sam Clayton and his team have revitalised the pub in the three years since taking the helm, with up to seven real ales now available, along with a warm welcome, great atmosphere and regular music nights. The Malt Shovel now goes forward to the vote for CAMRA Sussex Pub of the Year. Regional Manager Martin Fisher commented; "I really respect publicans like Sam, who understands pubs and customers and the local market place. He’s a fantastic operator and a joy to work with, and this accolade is well deserved".
Pub Idols The Royal Standard, Wooburn Common Publican Mark Lloyd and his team at The Royal Standard, Wooburn Common, have been announced as winners of The Sun newspapers’ Pub Idol competition, which celebrates the very best of British pubs, and their commitment to improving local communities. The pub was nominated by one of its regulars, Bob Thompson, 71, because of the £30,000 regulars raised for various charities over the past five years. As part of the pubs fundraising efforts, Mark ran the London Marathon, completing it in an impressive three hours and 43 seconds. Local couple Mark and Jill Hammond told The Sun; “We can’t ever move, we wouldn’t know what to do without this pub!” Pub Idol judges include comedian Al Murray, Good Pub Guide editor Fiona Stapley and Good Beer Guide editor Roger Protz.
