S.A. Brain & Co Ltd Café Phoenix What is the inspiration behind Café Phoenix? Café Phoenix was created for the Nicholson’s ‘Whose Beer Is It Anyway’ challenge, and named after the hop used.

TO ORDER SEE PAGE 39

What are the main ingredients? A blend of seven malts was used, each adding to the intricacy of the beer, along with the UK hop, Phoenix. The coffee aromas and flavours have been accentuated by coffee beans from Brains’ exclusive house blend coffee. What does it taste like? A rich, dark and smooth Porter with undertones of caramel, toffee and coffee (think Caramel Macchiato). Who will this beer appeal to? Our target consumers for Café Phoenix, as with each of our unique creations from the Brains Craft Brewery, are adventurous craft beer drinkers aged 25-40.

6 | ale of the month deals & ideas

Please order your pump clip from your customer account manager or when placing an online order.

This month's 'On the dray' featured beers on page 39 that offer distinct characteristics and are perfect for pairing with food:

Shepherd Neame Whitstable Bay Red IPA 4.5% ABV A punchy beer which complements wild boar or venison sausages with mash and fried onions. Fuller’s Southern Star 4.0% ABV Pick out the tropical flavours in this beer with a simple fish dish such as grilled salmon or prawns. Theakston’s Hogshead 4.1% ABV This ale complements monkfish in Parma ham - the saltiness contrasts with the delicate flavours of the ale. SA Brain Café Phoenix 4.4% ABV This Porter, with its caramel, coffee and chocolate flavours, perfectly matches a crème brulee. Adnams Fat Sprat 3.8% ABV Contrast the light, biscuit flavours in this ale with pan fried mushrooms and crème fraiche. Moorhouses Spring Watch 3.9% ABV The fruity effervescence of Spring Watch will cut through the fat in a leg of lamb roasted with garlic. Charles Wells Double Chocolate Stout 5.2% ABV Try Double Chocolate Stout with a plate of seasonal strawberries or raspberries with cream. Purity Bunny Hop 3.5% ABV Another beer to try with a fatty meat like pork belly, or a joint of roast pork and apricot stuffing. Exmoor Hound Dog 4.0% ABV The ale’s chewy, toffee flavour perfectly contrasts with a plate of macaroni cheese or Croque Monsieur. Black Sheep Baa Baa 4.0% ABV Low on bitterness with juicy flavour, this session beer complements a creamy chicken and leek pie.

Marvellous matches Annabel Smith

With summer just around the corner, plan how you’ll complement lighter dishes with some of this month’s beers. On a warm summer evening, there’s nothing better than a refreshing glass of beer paired with some of the season’s best produce. Prosecco fans will love a cold glass of Erdinger Weiss or Franziskaner 0% ABV with a chicken Caesar salad, or a crispy calamari dish. The effervescence and low bitterness in these beers complement the delicate flavours. An all time favourite is a crab meat sandwich on white bread, served with the fruity 61 Deep Pale Ale. If lager is your tipple, a hop struck Pilsner like Bee 17 will appeal to your taste buds and cut through a plate of cured meats, while spicy tapas demands a more robust beer such as Robinson’s Trooper. Ale drinkers searching for flavour but served a bit colder should try Goose Island Honkers Ale, an American take on a traditional British ale, or The Lawnmower with some vintage cheddar, cold ham and a side of piccalilli. These are beers with attitude that stand up to the strong flavours in the food. For sandwich lovers, there’s a brilliant piece on matching beer styles with sandwiches on the beerforthat.com website. It might be just the kind of weird combination that puts your menu ahead of the competition. You can email Annabel your questions direct at beersommelier@eigroupplc.com r simply tweet the name of a food o to @BeerForThat with the hashtag #BeerMatch for an instant reply.

Say ‘Hello’ to Meantime’s London Helles Also being introduced at eilive 2017 will be Meantime’s London Helles. We’ve teamed up with Meantime to bring an exclusive craft beer to the Ei Group range – try some for yourself by visiting the stand at one of our shows! Translating from German to English as ‘light’, this beer is

a perfect summer addition. Refreshing, clean and crisp, the citrus hop aroma will invoke a true taste of warmer, fresher evenings and at a lower 4.0% ABV is the perfect casual summer tipple. Pair it with light seafood, pasta dishes or a goats cheese salad to keep appetites satiated and taste buds tingling. Check out the Taste of the Season Food Focus on page 14 for some inspiration!

John Tollfree, Sales Director at Meantime Brewing Company explains why it’s so important to tap into the craft beer boom:

“The recent explosion of breweries in the UK has provided the market with many new beers to try, drinkers have never had it so good! It is great to be able to provide choice. That choice must be offered with a consistent high quality; an accessible anchor craft tap at the bar that can be trusted to deliver a premium experience the

drinker is willing to pay for above their regular beer. Alongside the credible craft anchor tap, a rotational craft tap can grow your share of the craft offering. There are many opportunities out there to provide the right products and the ‘Craft Club’ is an ideal chance to widen choice by offering new and often innovative beers.”

NEW LOOK FOR THE

NATION’S FAVOURITE BEER

CARLING, THE UK’S NO.1 LAGER BRAND HAS UNVEILED A FRESH NEW LOOK, WHICH WILL BE ROLLING OUT TO PUBS AND BARS ACROSS T H E C O U N T RY T H I S M A R C H . The new design is modern and bold, and will be carried across the entire Carling family including Original Lager, Cider, Citrus Twist and Premier. The new identity has been designed to reflect Carling’s values; genuine, dependable and unpretentious.

Having been the first ever title sponsor of the Premier League, for eight seasons from 1993 to 2001 and the title sponsor of the Carling Cup, for nine seasons from 2003 to 2012, the partnership builds on the brand’s long standing relationship with football.

This refresh is part of a broader investment programme for Carling, including a 3-year partnership with the Premier League.

Carling will be championing pubs and bars by creating a national community of venues that become the “must go” place to watch the footy.

Time to lighten up There’s no denying that British weather can be unpredictable, but one thing is for sure… as colder winter nights start to give way to brighter skies, it’s time to refresh your back bar and usher in lighter drink options that reflect the change in season. Stocking up for spring and summer Say goodbye to heavier, warming drinks associated with the wintertime. Pale ales should replace dark cask ales, while your ice machines will be working overtime as fruit ciders are embraced once more. This is the time to spruce up with a spring clean and fresh lick of paint to ensure your outside area looks the part! Start to introduce a taste of summer by offering lagers with lime, such as Sol. The aptly named lighter lager, Coors Light, will come into its own for beer drinkers, too!

Customers are likely to shift away from bold and warming red wines, as summer menus (and sunny skies) lend themselves to fresh and fruity white and rosé varieties, which can be mixed with soda water for a refreshing spritz. Nothing says summer like a gin and tonic, full to the brim with ice and served with a slice! Gin sales have soared in recent years, so offer a selection that includes both a mid-value and premium option for an upsell opportunity.

Go alfresco! Preparing for summer is about more than just getting your food and drink offer right. Prepare your beer garden and outside area, pot some plants and make sure you have signing in your pub directing customers to your great outdoors. Check out next month's issue for tips on perfecting your outside presentation.

Food focus: Tastes of the season It’s time to start planning your new seasonal menu. Customers will be swapping the stodge for fresher, healthier bites that can be enjoyed alfresco, as they start thinking about getting beach-body ready! 1st & 29th May What’s better than a free day off work? Two free days off work! Make the most of additional footfall from happy punters as we head towards two long weekends, with Bank Holidays book-ending either end of May. Bank Holiday bonanza Why not host your own Bank Holiday festival with performances from local bands and entertainment acts? Tie this in with a cider or craft beer festival for an added reason to head to the pub. Don’t forget to plan family-friendly activities such as face painting and a bouncy castle, if space allows. BBQ season is upon us Carrying on with the festival theme, barbecues and hog roasts are a definite must over the summer months. Consider offering a menu of seasonal, local produce, to add a sense of premium to your Bank Holiday feasts.

The great outdoors You’d have to be mad to stay indoors when you have an extra day to spend enjoying the early summer sun. Extend your licensing hours on both Sundays for customers looking for a leisurely drink in the afternoon and evenings. As always, make sure you have an alternative plan in place if the great British weather decides not to cooperate with your plans.

Play safe Provide outside alternatives this spring by offering families a play area to rival their local rec. Giving customers a fun, safe environment for little ones to play in, whilst mum and dad enjoy a drink, will see your sales soar this season. As a rule, if the kids can play, parents will stay. You’ll see improved food and drink sales if adults can relax instead of rushing off to keep their children entertained, so go get that play area ready. Now’s the time to start planning any maintenance work or replace your old play equipment to make sure it’s installed in plenty of time for the holidays. Vitally, all play equipment has to meet a host of H&S regulations, which you can discuss with your regional manager for additional clarity. It’s also worth doing a full recce of your garden – from loose paving stones to thorns, stinging nettles or tasty looking, inedible berries, outside can be a bit of a battlefield for smaller children, so it’s worth making sure the area is as safe as possible now.

For information on creating the perfect play area, look no further than Alasdair Stewart of The Coffee Pot Tavern in Yardley Gobion. Having built his own play area from scratch, he’s somewhat of an expert on the subject!

“Play areas are a big attraction for families. Last summer was a prime example – we had some great weather and found that at tea times, families would bring their kids in for tea then stay longer outside in the garden. We insist on a responsible adult being with them at all times for health and safety reasons, and it has proved really popular. Adding a play area will add a lot of value to your pub.”

While a child will be the apple of every parent’s eye, the same cannot be said for all your other customers! Providing a ‘kid friendly’ section of the pub ready for children’s activities keeps everyone happy. Vice versa, section off a smoking area outside, as many parents won’t want children to play around smokers.

Go all-in on the Grand National this year For some, April is about Easter eggs and the arrival of Spring. For everyone else, it’s about the Grand National! The world and its grandmother are willing to throw £1 at a 100-1 outsider or simply into a sweepstake, so prepare your pub for what always proves a popular, busy and fun occasion. The knowledge Maximising Machine Profit Whether choosing your first gaming machine or looking to change up your entertainment offering, we’ve explained the profit opportunity for your pub… It’s a risk-free profit booster… Rental charges and MGD tax on machine income can make fruit machine installation seem a risk.

Jargon buster SWP Machine = Skills with prizes AWP Machine = Amusement with prizes MGD = Machine Game Duty

The opportunity

This isn’t the case. MGD tax is removed separately to the publican share. For many Ei Publican Partnership sites, Ei Group pays the rent on AWP’s. More is more… An additional machine can actually help increase overall machine sales.

An Ei Group managed site recently installed its first machine. The pub’s share of the income averaged well over £300 per week and across the year, is set to make more then £16,000 profit in machine sales.

The opportunity A site with one well-performing machine was making over £100 per week. A second machine was installed which yielded £600 over the last two months and is on target for making an additional £3,600 this year.

So if your current machines are performing well, add another.

Digital revolution Changing poor-performing SWP quiz machines with a more profitable digital AWP machine can increase your machine profit by hundreds each month.

Hit the jackpot Up to 90% of machine income is from notes. When the amount of pound coins in an AWP falls below £125, the note acceptor switches off; players then pay with coins and it can still pay out a jackpot.

The opportunity A pub making £250-£300 per week on two wellperforming traditional reel machines recently installed a digital AWP. The new machine has made an extra £70 per week with income continually improving.

The opportunity To maximise AWP sales, ensure each machine is refilled with coins when running below £200. Players will not be deterred by fear of an unlikely win, which is the assumption made of a machine not accepting coins.

Going mobile There’s a reason we’re seeing the number of pub related searches go through the roof. The generation that has grown up with smartphones are now of drinking age. First impressions It’s not just this generation doing it, though. 82% of people will Google a new pub before visiting. It could be those new to an area: 'Pubs near me serving lunch' or a pub they’ve heard of but need more information on: 'Red Lion, Lincoln'. Google figures show 75% of these searches take place on a mobile phone. This is why a mobile-friendly website is so important. Responsiveness If you’ve encountered a website on your phone that disappears off the side of the screen or the text is too small to read, you've found a nonresponsive website. By comparison, a responsive website fits whatever size screen you look on.

This is important not just because your website is often a new customer’s first impression of your business, but also to your Google ranking. Google ratings Google has made having a responsive site one of the most important considerations in its ranking factors. Whilst you may still show up on a laptop if someone searches for you by name, chances are you won’t for the hundreds of thousands of searches every month for 'pubs near me' on a mobile. It’s one of the reasons we’ve partnered with Ei Group to give you a fantastic price on one of our websites – every one of our templates is responsive, built for you by our team and easily updated in seconds. Plus, you’ll get a free photo shoot from one of our professional pub photographers.

Budget 2017 The March 2017 budget announcement means 90% of pubs in England will receive discount on business rates. This applies to pubs with a “rateable value” of £100,000 for 2017.

We’re here to help with business rates It’s one of the most controversial topics in the pub world and we’ve been working to boost the support we can offer any of you looking for independent advice on business rates, with changes taking place in April. It may not be a glamorous subject, but you’ll know business rates can be one of the biggest overheads for any publican. This service will give access to a selection of three suppliers, each of whom were chosen for their outstanding expertise and professionalism. How it works All fees are success dependent, meaning you won’t have to pay a fee unless your rates are reduced. We won’t be benefiting should you choose to use any of these suppliers; the instruction and payment arrangement is solely between publican and provider.

What next? Contact your regional manager for more information on accessing this professional advice, or visit gov.uk/introduction-to-business-rates/ overview. Each of the three suppliers will be on hand to offer advice at eilive 2017, so stop by and make sure you’re a step ahead of the game. The three providers are:

A fantastic first year at The Swan Inn “There’s no such thing as a bad pub, there’s just bad management.” Those are the words of publican Darren Turner, who is about to mark a very successful first year in charge of The Swan Inn, Suffolk. Darren is certainly displaying very good management. Working his way up the corporate ladder in his previous role as an operations director, publican life is very new for Darren. Incredibly, he will be celebrating his first anniversary on St. Patrick’s Day having already achieved many of the targets forecast for a few years’ time. “You have to really know what you want your pub to be”, explains Darren, “we’re a country village pub; we welcome everyone, walkers, dogs, kids, people stopping for a drink or people

who want to sit down and eat. Our food offer is simple but effective, we offer a lot of the classics and our food is all locally sourced.” “I think it is the pub’s character that has made it so successful. When people walk into my pub, it’s like they’re walking into my living room and I want them all to feel welcome. They’re often coming to the pub after a hard week or a long day at work and giving them something to smile about will make sure they keep coming back.”

Darren’s five tips for first time publicans: Launch – the police asked us to open early, such was the queue outside! Alert local newspapers and start a social media countdown to get the ball rolling early Live events – we host music nights but are also tapping into more unique offers, we even have a showing of Shakespeare’s Twelfth Night planned! Personal touch – customers appreciate you taking the time to talk to them and show some genuine interest in them, it only takes a few minutes! Invest – my time is better spent on strategic planning than cleaning the bathroom. Sometimes budget cutting can be a false economy – free up your time! Ask for advice – I have relied on Ei Publican Partnerships’ advice and also sought out help from other publicans, there’s no reason we can’t help each other

Publicans & pubs in the spotlight Winter Pub of the Season Old Packet House, Broadheath Trafford & Hulme branch has voted the Old Packet House as its Pub of the Season for 2016. Run by Claire Hardman and her partner since 2014, the pub supports the local community with a range of events throughout the week. A welcoming and friendly local, the Old Packet House offers two cask ales; Little Bollington from Dunham Massey and Golden Best from Timothy Taylor’s. The pub has become renowned for its fantastic food offer. Claire and her team received the award on the 26th January.

Pub of the Year The Hinds Head, Stockport Colin and Janine Edwards’ family-run pub, The Hinds Head, won What’s On Guide, Stockport’s ‘Pub of the Year 2016’ in January. The pub has been on the up since they took the building over in 2013, putting a focus on their delicious food and drink. Everything is made fresh on the day, and only premium wine and beer make it onto the menu, with specials changing every week. Renovations in the bar, updated equipment in the kitchen and new canopies in the garden, mean The Hinds Head will continue to build on its success.

Free beer for centenarian’s birthday The Bowling Green, Chorlton Arthur “Bunny” Johnson turned 100 on the 26th March. The centenarian still frequents his local in Chorlton where he enjoys half a pint of Timothy Taylor's Landlord. As a special birthday present for the smartly dressed regular, publican Mark Canny has given “Bunny” free beer for the rest of his life.
