The British Legion, corporate partners of Ei Group, is offering a select number of places to publicans who’d like to take part. If you’re interested, we’ve added some information below for you: Registration fee is £120 Fundraising target is £2,000 Application deadline is Friday 29th September If you believe your running shoes could do with a work out for a worthy cause, all you need to do is email vwershof@britishlegion.org.uk and request an application form. Publicans are encouraged to explain why they’d like to run for the British Legion, and share how they’d reach the fundraising target. As there are only a limited number of places, please consider your application carefully. Successful applicants will be confirmed in October. Good luck! Keep your pub drug-free The BBPA have announced the launch of a free guide for licensees, highlighting the laws surrounding drugs. “Drugs and pubs: a guide to keeping a drug-free pub” has been produced with input from the Home Office and National Pubwatch and can be downloaded from the BBPA website beerandpub.com Parliamentary Pub Chef of the Year Award 2018 The BBPA Pub Chef awards celebrates Great British cooking in pubs. Tap into beer sales Tristan O’Hana As you prepare for another busy Cask Ale Week, it’s worth looking at all retail opportunities for inspiration, says Tristan O’Hana, editor of Pub & Bar Magazine. I don’t know about you, but my local off-licence seems to have changed over the past few years. All of a sudden there were benches outside, people drinking in the shop and promotions for various beer tastings and events going on in the coming months. The name ‘off-licence’ is pretty much redundant. The local bottle shop is certainly not what it used to be. All around the UK, independent retailers are catching on to the intrigue and education consumers have around beer. No longer do you pop round the corner to pick up a six-pack – now you choose a selection of beers, take a seat and chat to the owner about what’s coming in next week. Unfortunately for pubs, this is a growing form of competition. However, these bottle shops are also enlightening your potential guests on a category that is only growing in popularity. The pub goer’s exploration of beer is there for you, as retailers, to take full advantage of. Cask Ale Week is fast approaching and as you can read all about in this issue, it brings with it a whole host of beer retailing opportunities. From tastings and events to beer paddles and takeaways, pub and bar operators should be looking at how they can make the most of this yearly celebration. Beer-consuming environments are changing, giving your guests more choice than ever before – make sure you’re one of the places they’re choosing time and again.
Don't miss our Cask Ale Week feature on page eight for ideas on how to get involved.

Exmoor Ales Urban Fox What is the inspiration behind Urban Fox? Urban Fox was the brainchild of our Assistant Head Brewer Dan Frye, who, being an American, wanted to bring the taste and style of his homeland’s favourite beers to us here in good old Blighty. His beer is a 4.2% ABV American style IPA, the first beer in our new Exile range – modern beers from an established, multi award-winning, traditional English craft brewery.
TO ORDER SEE PAGE 39
What are the main ingredients? Urban Fox is a complex blend of malts and hops that benefits from the late hop addition of two American hops, Cascade and Willamette. What does it taste like? It is amber in colour with an aroma of fresh grassy green hops. Smooth to taste but hoppy with a slight maltiness and pleasant bitterness. The late hop addition also brings out slight citrus and tropical fruit flavours. Who will this beer appeal to? An ale for those that enjoy craft beer, so everyone from ‘city slickers’ to ‘country folk’!
Please order your pump clip from your customer account manager or when placing an online order.

This month's 'On the dray' featured beers on page 39 offer distinct characteristics and are perfect for pairing with food: Theakston’s Paradise Ale 4.2% ABV Bring out the full body in this golden ale by serving with a joint of pork. The fruitiness contrasts with the saltiness of the meat. Butcombe Pope 5.1% ABV The wood smoke and spice in this beer taste great with goulash. The paprika in the stew complements the beechwood smoked malt in the beer. Exmoor Urban Fox 4.2% ABV We’re going to bring out the tropical fruit notes in this beer and match it with a tangy sweet ‘n’ sour chicken, or some crispy lemon chicken. Woodforde’s Boudicca’s Revolt 4.2% ABV The malt, biscuit and citrus and fruit in this beer pair perfectly with a New York vanilla cheesecake. Together you’ve got a match made in heaven. Hook Norton Haymaker 5.0% ABV This is perfect for barbecued foods. It's particularly good with slightly blackened chicken. Moorhouse’s First Cut 4.2% ABV This complex beer from Moorhouse’s, with its sweet honey notes and a kick of spice, will jazz up a lamb Lancashire hotpot. Sharp’s Fathom’s Deep 4.5% ABV The smooth roasted flavour of this beer with little hints of coffee will contrast and complement a burger topped with smoked bacon. Fuller’s American Fall 4.0% ABV An Indian summer of a beer: light citrus, soft and sweet flavours will complement a dish of Eggs Benedict or salmon steak with lemon and butter.

There’s A Beer For That this Cask Ale Week Annabel Smith So, it’s coming to the time of year where we’re just starting to notice that the lights are being switched on a bit earlier each evening, you’re having to pull a jacket on to walk to the pub, and the roads are rammed because the kids are back at school. Does it make me sad that summer’s drawing to a close? Not at all. One of the things I love about living in Britain is the diversity of its weather. You never know, we could be in for a long hot Indian summer September. Let’s break out the San Miguel or the Brahma and squeeze in the last few precious moments in the beer garden. On the other hand we might be facing lashing rain, gale force winds and a touch of frost. In which case, let’s embrace the 11-day week which is Cask Ale Week (runs from 21st September to 1st October) and celebrate with some great British beers such as Spitfire and Bombardier. Let’s face it, our climate perfectly matches the mantra of the campaign I represent, “There’s a Beer for That”. This edition of deals&ideas has a perfect balance of beers to match the transition from summer to autumn, from a carefully selected range of blonde sunny ales and lagers which complement the end of season produce, to autumnal beers like Exmoor Stag and Black Sheep Holy Grail to sup with your stews and sausages this autumn. You can email Annabel your questions direct at beersommelier@eigroupplc.com r simply tweet the name of a food o to @BeerForThat with the hashtag #BeerMatch for an instant reply.

Jane Peyton Beer Sommelier
According to the current Cask Ale Report published by Cask Marque, 72% of British pubs serve cask beer in a market worth £1.7 billion annually. The good news is that 82% of licensees report growing cask ale sales. Even more positive is that cask beer drinkers tend to have more disposable income, visit the pub more often than consumers of other drink options and spend more on each visit. In summary, cask ale is good for business! So this September, tap into the cask opportunity by celebrating Cask Ale Week, 21st September – 1st October. From simply shouting about your cask range on social media, to sharing your knowledge during tasting events or hosting a week long Cask Ale Festival, showcase your offering by trying out some of these ideas. Variety – there are more than 140 different beer styles but most people can name no more than five. A mini beer festival is an opportunity to showcase a wider range of styles and enthuse customers. Golden Ale and India Pale Ale are currently big performers. Education – Knowledgeable staff, tasting notes, explanation of style and engaging in beer conversation can result in more sales. Use your team as ambassadors for the products you have available.
The cask ale opportunity 57% of cask drinkers are more likely to visit a pub if they advertise they sell cask ale1

Try before you buy – Small samples help to educate customers and allow them to choose a beer that suits their tastes. Beer & food matching – Especially effective if every dish on the menu has a beer match – even dessert. Serving beer in third or half pint glasses, or from a jug into wine glasses means that diners can have a different beer with each course. For more information on beer & food matching don't miss Annabel Smith’s monthly column or visit beerforthat.com Social media – is not only free publicity but a brilliant way to communicate beer lists and news with customers. Tag Cask Ale Week on your Facebook, Twitter and Instagram posts and they will help spread the word about your participation.

Winning with wine Wine is big business, worth £4.1bn1 to pubs. However, with a wider audience interested in this category than ever before, it’s important to offer more than a bottle of house red or white on your wine list. While trusty Pinot Grigio takes the title of the UK’s most popular wine, sparkling wine continues to grow in popularity with a 34%2 increase in on-trade sales. Prosecco continues to drive this trend, however Champagne, Cava and English sparkling wine are all strong contenders on the fizz front. Think about offering a variety of wines which not only cater to the differing palates of red and white drinkers, but also offer different flavour profiles to match different types of wine drinkers. With two main audiences to cater for: Millennials and Generation X it’s important that your wine menu appeals to the needs of both markets as they have wildly differing approaches to wine drinking.
Millennials • Are looking for experience over choice • Are keen to be bolder, but need reassurance • Are looking for new world wines as well as familiar favourites such as Pinot Grigio or Sauvignon. Stock both to encourage them to make new purchasing decisions • Award winning products are key to this age group
Generation X • Are much more likely to opt for a full-bodied red • Country of origin is a top three influencer when purchasing wine • Want to make informed choices and are more likely to ask the opinion of staff before purchasing – do your team know enough to upsell your wine range? Appealing to both audiences, wine tasting will allow millennials to sample new wines without committing to the purchase of a bottle. Whilst Generation X can learn about the wines they are drinking meaning they can make more informed choices on their next visit.

Making Christmas sparkle Wine is big business all year round, but never more so than during the festive period, when getting your wine offering right means big profit. For many, Christmas festivities and bubbly go hand in hand, giving you a prime opportunity to up-sell you sparkling wine offering. Visibility is key to increased sales and Prosecco should take pride of place, supported by less premium options. Offering a glass of complimentary bubbly on arrival is a good way to encourage your customers to buy sparkling options throughout their visit, whilst also making them feel they have value for money. Placing deals on your sparkling wine, such as 10% discounts or buy one get one free on bubbly by the glass, will encourage off peak sales.
Food & drink for thought! Pairing food with wine is a simple way to entice customers to try something different. It's not as simple as offering red wine with red meat and vice versa for white. Why not try these exciting new flavour combinations?

Food focus: Festive feasts
Head of Food, Ei Group
Christmas is the one time of year where people allow themselves to over indulge. Customers will be expecting to have a great time in your pubs, so you should pull out all the stops and wow your festive crowd with a mixture of tradition and innovation via your food offering. Precision planning is required to maximise the significant profit opportunity that Christmas presents. Once your menu offering is planned, it’s all about promotion. Get both right and you’ll be cooking on gas this Christmas!
Minimise prep time and pressure on your kitchen staff by buying in ready made dishes. Booker has a fantastic range of fully prepared products available this season. Use your suppliers to balance the workload in your kitchen.
Menu planning made easy
Customers will naturally expect some Christmas classics on the menu, like turkey. Additional options like game meat dishes make a great addition whether offered as a started or a main. Don’t forget vegetarian and gluten free options too!
Consider your audience – are they looking for a party atmosphere with drinks and nibbles or a sit down meal? Does your kitchen have the capacity to offer both an a la carte menu and a more cost-effective fixed price option? The latter is an ideal solution for corporate bookings or large groups of family or friends.
Great tasting food will get people talking. Don’t over complicate your offering with elaborate serve styles.
No kitchen? No worries… offer a selection of themed nibbles and bar snacks, which will help increase dwell time.

Prepare for festive success Christmas is one of the busiest but also most profitable occasions across the year for pubs. With this in mind, it’s well worth thinking about your yuletide game plan now. Over the coming months we will explore a variety of topics, designed to help you get ready for party season.
Want to learn more about running a succesful business? Don't miss our pub principles guide for Christmas Planning available from the publican channel.
Use this handy check-list as a starting point for your festive planning… Menu
Crockery and glassware
As we mentioned on page 14, now’s the time to start thinking about different options for your menus. Why not ask customers what they would like to see served up this season? You could host a survey on social media asking your online communities the dishes they can’t wait to devour. Note – pigs in blankets are non-negotiable Christmas menu classics!
Ensure you’ve got enough crockery and glassware to get you through this busy time of year. Check your stock levels now and replace any chipped or worn plates and bowls, and order in any extra glasses you need to deal with functions – wine and champagne flutes will be in high demand over party season. Delivering a quality experience will keep customers coming back to your pub long after the tree is taken down.
Bookings Once your menu has been chosen, it’s time to shout about it. Consider creating flyers to drop into local businesses promoting your offer, and ensure it’s well advertised on your website with clear instructions on how to book a table. Print out your festive food menu and display in and around your pub for extra visibility. If you have budget available, it’s worth investing in some local media advertising too.
Entertainment Planning on providing entertainment over Christmas and New Year? Look to book this sooner rather than later as popular acts will be in high demand. Live&Loud has been working with Ei Group for over two years and its online service helps pubs to access 10,000+ artists nationwide across all genres. For more information visit liveandloud.com
Decorations From late November, your pub should be adorned with decorations to really help get customers in the mood, however from early on in the autumn season it’s worth having a small area, for example a table by the front door, decorated with Christmas items like a mini-tree. An eye catching display showcasing your Christmas offering will get customers talking, and booking tables too!

Raising a glass to Poppy Beer Poppy beer, which has raised more than £23,000 for The Royal British Legion in the past two years, is back for 2017. Premier League pubs This summer, England’s football youth and women’s teams have both put on successful displays which have got the nation talking. Pair this with the fact the Premier League kick starts this month… and with several World Cup Qualifiers on the horizon, football really is coming home to your pub. This issue, Russell Cox from Sky commentates on the businessdriving benefits of live sport. “The average pub showing Premier League football benefits from a £30,000 boost in wet sales every season, showing the value of the nation’s favourite sport to landlords up and down the country,” explains Russell.
our pub customers can look forward to driving trade with the top-flight domestic football action.” “Over a third of all Sky Sports domestic football viewing takes place in the pub, with sports fans choose to head to their local to enjoy the atmosphere and the buzz they don’t experience at home. Pubs can look forward to what promises to be a Premier League season to remember.”
“Last season, Sky Sports showed 13 out of 14 of the most watched Premier League matches for pub goers and with 126 exclusively live matches lined up for this season,

Digital is King Digital machines have come a long way over the last few years and it is clear that these are now the machines of choice for a lot of players. They pay out slightly more often and offer a range of games from slots to roulette. These types of games can encourage new players who normally wouldn't use an analogue fruit machine. Get in touch with your RM and they will be able to help you trial a digital machine, or talk to your supplier and make sure you have one of the best in your pub!

'Tis the season to be social! To maximise your reach and promote your Christmas offering far and wide, it is important to make the most of digital marketing and social media. Try to use Digital & Social Media to show that your pub is a place customers will enjoy the festive season and have a good time. Here are a few simple things you can do in the run up to Christmas to promote your offering to customers online. • Make the most of your header/cover pictures. The header/cover picture is the largest image that appears when a customer visits your social media page. Having an image which relates to Christmas bookings and events will show them as soon as they arrive on your social pages what your Christmas offering is all about. • Plan out a post for each week from now until December about Christmas. Each week, try to reflect something different to build up engagement and interest.
• Have your Christmas menu clearly available on your website. Customers wanting to see the food on offer should be able to find it easily. If it’s not accessible they will go elsewhere. Remember to take this down in the New Year though! • Make sure you are maximising hashtags. Use one to two on Twitter and six to 12 on Instagram. Link your content to as many relevant hashtags as possible to reach the most potential customers. E.g. #Christmasmenu • Use the Live functions of Social Media to talk to your customers. Set aside some time where you can interview the Chef or staff about your menu and what you have planned. Live gets 10x more engagement than other social media posts, so it’s well worth doing.

Protecting against unwanted visitors Burglary is an unfortunate reality for business and home-owners alike. Operating in an environment that carries the added lure of cash, expensive equipment and cellars full of stock sadly increases the risk of break-in’s. Here, Charlotte Vedmore, Insurance Manager at Ei Group delivers advice to help protect yourself and your business. Site security and access points Are gates and perimeter security protections kept locked around your property and any outside space? Are there any vulnerable access points to the site or the building? If so, these should be identified and measures put in place to reduce the risk of attracting unwanted attention. Physical security of the building Regularly inspect your doors and windows. Are these fitted with good quality five lever locks? Are all possible entrance points safe and secure? Intruder alarms Alarms provide a deterrent, but they must be regularly maintained. Is there a maintenance contract in place? Does protection extend to cover target areas?
26 | preventing break ins deals & ideas
CCTV Whilst this can be of limited benefit, it can act as a deterrent should prospective unwanted intruders spot camera equipment or signage regarding your surveillance equipment. Locking up Ensure management procedures for locking up and key control are being adhered to and have been reviewed and documented with clear staff instructions. Cash retention, safes and valuable equipment Is cash regularly removed from the premises? Keys to the safe should be taken off the premises or locked away securely. Are valuables and cash placed in the safe and is the make and model of the safe suitable?
Publicans & pubs in the spotlight A Fundraiser to remember The Whimsey Inn, Willenhall A Remembrance Day parade in November was under threat this year when funding to close the roads was withdrawn. The community and Short Heath British Legion has rallied to raise the needed £4,000, with the Whimsey Inn raising £2,500 for the cause by hosting events, including a fun day with numerous activities in the garden such as stalls, skittles and a tombola. The pub praised the public for their support and dedication to saving the parade, which has gone a long way to meeting the amount needed.
The Britvic Lifting Spirits Award The Keel Row, Seaton Delaval Sharon Herron, landlady of the family-run business The Keel Row, is no stranger to community awards over the past few years. In July, Sharon and her team won the Lifting Spirits Awards, a competition dedicated to searching for those who have gone above and beyond to lift the spirits of the local community. Run by the Morning Advertiser and Britvic, this is the first year the nationwide awards have been held. The Keel Row made it to the final six after going through three rounds, winning
a framed certificate, £1,000 to go towards a favourite charity and 50 cases of Britvic products. A well-deserved result for a fantastic team!
Successful skydive for local girl with cancer The Old Ship, Bridlington Landlord Rob Donaldson and a member of his team, Jess Pickering, took part in a skydive to raise money for a local girl who suffers from a rare type of cancer. With perfect weather at Skydive GB in Grindale, the skydive took place in June, with the duo raising £2,000 on behalf of the six year old. Jess’ grandparents came along to support this brave act for such a worthy cause.
Annual Pub on the Green Event The Cottage Loaf, Loughton On the 16th July, John Walsh and his team hosted their annual Pub on the Green event for the fourth year. Working with the local council, The Cottage Loaf welcomed over 1,000 people and even a little bit of rain couldn’t dampen anyone’s spirits. Featuring a range of stalls, food and drink, and attractions such as horse riding, music and a fun fair, the day was followed up with a band and several supporting acts before a DJ finished the evening off. The Pub on the Green event is run for the community and to help raise money for charity, and it does a great job at bringing the local area together for a fun day.
