Season’s treating Tristan O’Hana It might seem early, but it's time to start planning for Christmas, advises Tristan O’Hana, editor of Pub & Bar. I saw a picture doing the rounds on Twitter the other day. It featured a man at some form of public protest in the States. While other people displayed banners and signs with poignant slogans written out in giant letters, his offered a lighter demand: “Stop premature Christmas decorating.” The man had a point. However, should he have demanded an end to premature Christmas planning, we may have had a disagreement on our hands. In the ontrade, it’s almost never too early to plan for the festive break. Some of the operators I have interviewed in the past make such an impression on customers during Christmas that they have had to open their bookings for the following December immediately after New Year. That’s how much of an effect it can have on business. The reason for this is that it is the one time of year when consumers forget about budgets, ignore their savings and head to your venues with an open mind and an open wallet. The instinct that we have to treat ourselves, our friends and our families through the Christmas holiday is a powerful pattern that pub and bar operators need to harness. Whether that’s through special events, traditional food or exploratory drinks, it is your chance to leave a lasting impression on excitable and expectant guests during the most wonderful time of the year.

Food focus: Winter warmers

It’s easy to get bogged down with Christmas menu planning as the days draw in and the temperature drops, but don’t forget that late autumn and early winter is a fantastic time of year to get creative in the kitchen. For me, the colourful palette of the season can offer up some tasty dishes and can bring warmth and comfort on a winter’s day. There’s a misunderstanding that winter is the worst time for seasonal eating, which could be because we tend to think only in terms of seasonal fruits and veg. But if you then look to meat, game and fish, the cold months can really offer a fantastic array of products. The game season starts in the late summer and carries on all the way through to February. Venison is a fantastic alternative to beef and can be an excellent winter menu mainstay. You don’t always have to use the premium cuts – for a more affordable option use some mince and turn it into a rich Bolognese or add a wonderful luxurious twist to the classic pub lasagne. Fish is also in its prime, and nothing is more comforting than an amazing fish pie topped with cheddar cheese mash.

They want food that has been roasted, slow-cooked and braised until the meat is falling off the bone, and the vegetables have caramelised and crisped. Autumnal events Make your Bonfire Night go with a bang! Date for the diary:

Sunday 5th November Attract family footfall this November by hosting a Bonfire Night event with a little extra bang. Falling on a Sunday, it’s a great opportunity to attract customers attending local firework and bonfire displays – or if you’ve got the space, host your own Guy Fawkes Night event. Jeanne Brennan, publican at The Royal Oak in Linthwaite recently won John Smith's ‘Only Ordinary by Name’ competion. She has been hosting a Bonfire Night event at her pub for the last 14 years. “It’s the highlight of our year. We usually see around 2,000 people join us for the display. We have a social club which raises money for the fireworks, and then the firework display funds our annual pensioners Christmas lunch in turn. It works really well!” If you are planning your own firework event it’s important you consider health and safety regulations. Speak to your regional manager in the first instance but you’ll need to consider: 1. Suitability and size of your external area Do you have space for a firing area, safety zone and can you ensure falling fireworks will land away from customers, other local properties and your car park? Do your customers have adequate space to enjoy the display, and enter and exit safely?

2. Firework Safety Regulations Did you know you’re restricted by the type of firework you can use at public events? Ensure you are up-to-speed on the latest regulations surrounding this. Visit gov.uk/ fireworks-the-law for more information. 3. Weather If the heavens open, do you have a secondary option in place that means your customers can be hosted inside? 4. Lack of space? Team up with a local event To take advantage of the extra footfall that it will generate. Consider a pop-up bar with warming mulled wine, ciders and steaming hot chocolates for the little ones, and then entice visitors back into your pub after the display with the lure of great tasting food, pies, hot-dogs or even a hog roast.

Remembering our veterans Dates for the diary:

Saturday 11th and Sunday 12th November The work of The Royal British Legion and its annual poppy appeal will be close to the hearts of many of your customers, who will be keen to support this much-loved cause in any way they can. Who can forget the impact of the 2014 Tower of London art installation, ‘Blood Swept Lands and Seas of Red’, which saw 888,246 ceramic poppies positioned around the London landmark to mark 100 years since the UK’s first involvement in the First World War? Or the County Durham pub which adorned its walls with over 70,000 poppies to raise money for the charity. Across the weekend, open your doors for customers to watch the annual Armistice Day parade, which will be televised from The Cenotaph, London, or welcome those taking part in local memorial services by making your pub a meeting point where those attending can grab a tea or coffee to take on their way. Remembrance Sunday will be an occasion where families get together, so lay on a dedicated Rememberance Sunday roast dinner, with a percentage of your menu profit donated to the cause.

Deck the halls… Creating a warm and welcoming environment over the Christmas season is the perfect way to attract customers in from the cold. The atmosphere you create can make the difference between your pub being seen as somewhere to celebrate, or not. It’s worth getting the decorations up in November – without winding up your customers who will have been inundated with Christmas carols, tinsel and the like since early Autumn on the high street! First impressions are vital – work from the exterior inwards. Adorn the outside of your property with lights and make sure that passing trade gets a sense of what’s on offer inside too by creating an inviting view through the window. A small zone in your entrance area advertising your Christmas events and menus is also an easy way to attract additional custom. Much as you would at home, pick a theme and carry it through the interior of your bar or restaurant area. If you have the space, consider a Christmas tree as the focal point, but if you’re looking to maximise all floor space in your pub, hanging decorations, garlands and lighting will do the job just as well. You don’t have to go overboard to turn your pub into a winter wonderland. Simple accents, like cinnamon scented candles or the smell of warming mulled wine will add to the overall atmosphere, and sprigs of holly can be a cost effective centre-piece on your tables and bar. Don’t stop at just decorating the building itself – dressing up your staff is an easy way of extending the Christmas cheer too. Think Santa hats, beards and festive jumpers (the more ridiculous the better)! This year, why not encourage your customers to take part in Save the Children’s annual Christmas Jumper Day – which falls on Friday 15th December. Sure to be a busy night for parties and celebrations, consider a best or worst Christmas jumper competition, with proceeds from entry going to this much-loved cause.

Tapping into the craft trend Craft beer, which exploded in the states in the 1970’s, was long associated with the hipster scene, however, as mainstream beer drinkers began to wain from lack of choice, the craft revolution slowly took hold here in the UK. Led initially by younger audiences, it's now crossing a broad customer demographic. We have to cater for people from all walks of life – so it’s vital that we follow the market trends – and it’s been obvious to me for a while that the craft movement showed no signs of slowing down. “I started off by offering a Caledonian 3 Hop and then a Maltsmiths IPA – my customers loved it, so as soon as my regional manager mentioned the Craft Tap, I knew I’d be missing a trick not to install it.”

The knowledge The digital revolution Did you know that gaming machines could make your pub on average £3,000 in additional profit every year? A lucrative source of extra income, getting your gaming machine mix right could result in even more than that, with insight showing that adding a second or third machine could yield around £5,000 in profit over 12 months, with digital AWP’s outperforming analogue machines significantly. Need further proof that the digital revolution is nigh? In July 2016, an Ei Publican Partnerships site with one existing gaming machine installed its first digital AWP, followed by a second digital machine in March 2017. Since the introduction of the digital machine, the average net balance of the three machines has grown from £630 to £1,243 per week. This equates to an average licensee share of £344 per week on its AWP’s, with the two digital machines far outperforming the analogue machine on site. Another pub transitioned to a digital machine this spring, and has seen their share of machine income more than triple from £57 to £186 per week. A clear example where switching to a digital machine paid off, in a site that was historically not making much money on its gaming machines. So, if you’re looking to increase profit in your business, look no further than the new technologies sweeping the pub gaming industry!

Share your story... Are you using Instagram? If you are, you should also be using the Instagram stories functionality. Stories are a useful way of showcasing what is going on in your pub, as it happens. Stories appear at the top of the feed of customers who follow you, meaning more reach than other posts. Unlike other Instagram or Facebook posts, you can add as many stories as you want and will not be penalised for the quantity. Here are some ideas for how you can use them to promote your pub.

Tell the story of a day in the life of your pub. Shoot a quick video or pictures across the day. You could show your followers your line cleaning process, your new ale tap or setting up your tables for service. You’re aiming to share an insight into the behind-the-scenes running of your business that customers wouldn’t usually see.

The Royal Oak is crowned winner of John Smith’s ‘Only Ordinary by Name’ competition The Royal Oak, Linthwaite The Royal Oak in Linthwaite, Huddersfield, has been crowned Britain’s most extraordinary pub, according to a nationwide competition. The pub received a £5,000 prize presented by top comedian Paddy McGuinness, after John Smith’s, the nation’s favourite ale, teamed up with Trinity Mirror, the largest national and regional news publisher in the UK, to champion and celebrate pubs that are, like the beer, ‘Only Ordinary By Name.’ Jeanne Brennan has been running The Royal Oak for 14 years. As well as hosting quizzes, regular seasonal events, charity fundraisers and live music nights, the pub has raised over £36,000 for good causes. The local community regard Jeanne as the pub’s unique charm and it is her driving force that ensures the

pub goes out of its way to tirelessly help people in the local area. She plans to use the prize money to help establish a ‘Home Alone Club,’ ensuring those who live on their own have events to look forward to in the local community. Jeanne comments; “The recognition we’ve received on the back of this award has been fantastic. We were already on the map, but this has been really great for the business!” Ifeoma Dozie, Beer Brand Director at HEINEKEN, owner of John Smith’s, says: “We are a nation of pub lovers and the energy and excitement behind this campaign has cemented this. The range of nominations we received was quite extraordinary and is testament to the hard work of licensees up and down the country.”

The Cider Pub of the Year

The Elburton Inn, Plymouth Not renowned for their facilities, car parks are usually the last place patrons would choose to hang out, but that’s just what they did at The Elberton Inn in Plymouth this summer. Hosting live bands, a bouncy castle, a kids’ corner with arts and crafts and a BBQ, the event raised over £3,000 for Leukaemia Care. More than 400 people from the local community joined the party to raise funds for the worthy cause. Publican Teresa Leigh said “The event brought the whole community together, while raising funds for such a good cause and of course raised awareness of our pub.”

West End, Gomersal Andrew and Janette English are celebrating their pub, The West End being named Cider Pub of that Year 2017. The award is presented to the pub in the UK that best promotes and encourages the sale of quality real cider. The West End outshone the competition as its passionate landlords and team demonstrated its quality cider offering, cider knowledge and community focus. A CAMRA spokesman said: “Andy & Janette’s commitment and ideas have given them this deserved success. The pub was close to winning the award last year, but such is the consistent quality of its ciders, it finally managed to beat all of its competitors this year.”

The Bell & Gate, Romford For most people, popping to the pub is not coupled with a haircut, but for customers heading to The Bell & Gate last month that’s exactly what happened. It was all in the name of charity, raising £3,500 for The Little Princess Trust, which creates wigs for children with cancer. Publican Mick Harold told us; “It’s a really worthwhile cause and we were delighted to get involved.”

Star Pub of The Year The Five Ways Inn, Cannock The Five Ways Inn, Cannock, has been named Mid Staffordshire Express & Star Pub of The Year. The accolade is awarded to pubs that demonstrate exceptional customer service, a buzzing atmosphere, value for money, and quality of food and hygiene. Publican Lisa Wilson explained, “It really has been a team effort, our team are absolutely fantastic and deserved the recognition that came with this award.
