Business news BBPA helps develop tool for pub sector The BBPA has helped develop ‘How Good’s Your Business Really?’ (HGYBR), a free online productivity tool for managers in the hospitality sector. HGYBR uses five short surveys to assess a business across key performance areas, and benchmarks the user against their competition. It has been developed as part of an initiative led by Sir Charlie Mayfield (Chairman of the John Lewis Partnership), with the support of the Government. The BBPA helped to develop the tool with McKinsey & Company during the pilot phase, ensuring the tool’s relevance to the pub sector. Pubs will benefit from the insights the tool gives on issues such as increasing sales potential, effective business planning for the future, management of staff and operational efficiency in comparison to similar businesses. BPPA Chief Executive Brigid Simmonds comments: “There are considerable cost pressures on pubs. Looking at how we can improve productivity and become more profitable is essential. This should prove to be a really useful tool to promote effective business management in pubs, and I would urge licensees to try it.” Visit howgoodsyourbusinessreally.co.uk to try the free app.

Charles Wells Poppy Beer Enterprise's exclusive Poppy Beer brewed by Charles Wells, will be available this June to help celebrate the Queen’s 90th birthday. What is the inspiration behind Poppy? This beer was first brewed in 2015 as an exclusive beer for Enterprise, to help commemorate Remembrance Day and raise money for The Royal British Legion. With the Queen being their patron, it seemed totally fitting to re-brew the beer to celebrate the Queen’s 90th birthday and raise more money for the charity. This time Charles Wells Brewery have given the Poppy pump-clip and POS a more summery, celebratory feel.

What are the main ingredients? Pale ale and crystal malts together with Styrian Golding and Challenger hops. What does it taste like? A crisp, nutty amber bitter. The aroma is of freshly sliced ripe apples. Its amber hue is emphasised by a tight rich head. A complex finish of bitter hops, nuts and citrus fruits. Who will this beer appeal to? It is a traditional IPA with an abv of 3.6%, appealing to all cask ale drinkers and pubs that stock cask ale. It will have even more appeal to pubs and drinkers that like to get involved in charity fund raising, as 10p per pint will be donated directly to The Royal British Legion.

SEASONAL BEER PAIRING
Tips from Annabel Smith National pride was at an all time high in 2012, with the Olympics and the Diamond Jubilee uniting communities across the country, and many of us celebrating these key occasions in our local pub. We’ve got another storming summer ahead with the Olympics in Rio, Euro 2016 and the Queen’s 90th birthday, which calls for a toast with our national drink – beer. Beer is sociable, it’s inclusive, it’s incredibly diverse and in the case of cask, it’s the only drink not available in a supermarket, giving pubs a big advantage. To toast the Queen, Enterprise have brought back their exclusive Poppy Beer, brewed by Charles Wells – a lovely copper coloured sweet and crisp beer. Match it with a traditional British roast
beef lunch, and for every pint sold, 10p will go to The Royal British Legion. One of the things I love about working in the beer industry is the generosity and altruism of brewers, pubs and drinkers pulling together to recognise good causes – and have a good time whilst doing it! With the Euro’s coming up, start thinking about match-by-match inspired beer and food promotions for your customers. You could pair a Portuguese Sagres Cerveja with seafood, or an Italian Birra Moretti with pizza or pasta.

TOP TIPS FOR HOSTING
Meet the Maker GUY LAWRENCE of WESTONS Cider across Herefordshire, Worcestershire, Gloucestershire and Monmouthshire, together with fruit from 222 acres of our own orchards. We use traditional, old varieties like Dabinett, Michelin, Brown Snout & Strawberry Norman and press them on our site in Much Marcle. All of our ciders are made from 100% local and home-pressed fruit.”
Essentially, a cider festival is all about driving and increasing footfall into pubs. It gives consumers a compelling reason to visit – and not just your regulars.
Being the fifth generation of the Westons family line, Guy inherited a fine cider making heritage, which he uses to create contemporary and pioneering ciders. Try as he might, Guy can’t help but go against the grain, determined to challenge cider-lovers palates.
“Westons ciders and perries are slowly matured, the majority using our old oak vats, some nearly 200 years old, to deliver a full and rich robust character. All our ciders go through the same process, receive the same care and attention and all have their own distinct characteristics.”
1. Stock an interesting & varied range Ensure a diverse and interesting range based on draught, packaged, cloudy, clear, apple & fruit.
Great ciders are in my blood, I demand the finest yeast and fresh bittersweet and bittersharp British apple juice to craft ciders I am proud of.
“Our ciders appeal to cider lovers and those wanting to try something just a little bit different from the mainstream brands out there. Of course, our inherently British flavoured ciders will appeal to those flavoured cider drinkers who want to move up to something more authentic and less “jammy” in flavour.”
“All of our ciders use a blend of the finest bittersweet & bittersharp cider apple varieties, plus a number of perry pear varieties for our perries. These are all sourced from 300 local farmers
2. Give the knowledge Provide interesting and factual tasting notes and details of producers. Drinkers love to absorb and be able to share their new discoveries with others. It’s essential that bar staff are knowledgeable and engaging on the range to recommend ciders with confidence. 3. Be adventurous with serves Consider smaller sampling sizes e.g. flights, schooners, 1/3rds. This creates opportunities to trade up and responsibly extend a drinker's capacity to sample more styles. 4. Add value Create a cider matched menu with plenty of options to extend the food offer – nibbles, grazers, sharing platters, bowl food – the possibilities are endless.
Why not try this cider-matching recipe from Booker?
5. Extend a drinker's stay in the pub Include carefully planned entertainment – live music, open mic, comedy and vintage style games.

HOT FOOD TRENDS The way we consume food has shifted dramatically. Casual dining has replaced cordon bleu, and the street-food revolution has changed the way we eat out of home. It’s easy for your pub to profit from food savvy customers who are increasingly seeking out the latest trends, via Enterprise Inns' food partnerships…
Casual dining connoisseur and one of the Banger Bros, Marc Phelps, is truly passionate about his product, and the profit opportunity tapping into this trend presents to pubs. “Partnering with Banger Bros is an easy way to tap into the trend for tasty, hand-held food options, and our range includes hotdogs, burgers
and veggie options. We work with pubs to devise a menu that suits their custom base, which on average delivers a 62% GP on food sales.” “Many hot dogs are still made from reconstituted, mechanically reclaimed chicken or worse; and they just don’t deliver on taste. Our 4oz Bockwurst is hand-made for us using 86% prime cuts of beef and a natural pork casing.’’
DOGS ARE HOT • 156% increase in UK sales • 83% increase in UK operators offering hot dogs
• 15% rise in average price of a hot dog to £6.90
• Up to 20% uplift in beer sales when purchasing hot dogs (Banger Bro’s Menumonitor data)
Serving up success “We offer a complete turn-key solution for pubs looking to partner with us”, says Marc, “We’re also an ideal solution for wet-led pubs looking to offer quick-service food via a limited menu. You don’t need an existing kitchen or a chef, our equipment can be operated easily by bar staff, who we can train initially.” For more information about Banger Bros, visit bangerbros.co.uk or speak to your regional manager.

Things are hotting up in the Pieminister kitchen. Having been making award-winning pies for over a decade, founders Jon Simon and Tristan Hogg have developed two dedicated pub propositions, Pieminister Served Hot, developed for pubs with an existing food offer, and Pieminister At, designed for drinkled establishments taking their first step into the popular pie market. “Pieminister Served Hot suits businesses that typically have an existing food offer, who want to enhance (or often simplify) their menus with minimal investment and no extra staff costs, whilst generating incremental commercial gains for
both dry and wet sales”, explains Tristan. “Pieminister At is an exclusive proposition, providing a full re-design of your food space, and the introduction and launch of a new menu.”

In contrast to the once-trendy menus with a plethora of options, menus are going the other way and shrinking in size. This resonates with millennials, who value local, high-quality food and hate the idea of food waste. Charles Banks, The Food People at The Caterer Foodservice Forum 2015

Family friendly activities, events and promotions can boost pub trade by 30%*, and with six weeks of school holidays ahead, appealing to parents and children alike is a great way to boost profits and increase footfall and daytime trade.
The great outdoors If your pub has an outdoor area, make sure it’s a safe and enclosed area for children to explore whilst the grown-ups relax with a drink. From free-standing play equipment like slides, swings and climbing frames, keeping little ones entertained is key to increasing family dwell time. If you have a bit less space, outdoor toys and games are just as good. Giant Jenga, Skittles or Connect-Four are a cost-effective and easy-to-store source of family fun.
Kids zone! You can't always rely on the weather, and not all pubs have outdoor space, but you can make your pub interior a welcoming environment for families. If space allows, create a dedicated kids zone with toys,
books and games away from the main bar area. A good Wi-Fi connection will also allow younger customers to get online via tablets and iPhones. From face painters to magicians, putting on family-friendly entertainment will also draw in the crowds.
Serve up a profit You’ll see your soft drink profits soar over the summer, so make sure that you take advantage of offers available in deals&ideas on fruit juices and carbonated soft drinks over the next few months. Cost-conscious parents will be attracted to deals on food and drink. Try a ‘Kids Eat Happy’ promotion, like kids eat free with a full-paying adult, or a fixed-price children’s menu including a main, drink and dessert. For more ideas, check out our Making the Most of Guide.

kids to play, whilst their parents enjoy a meal. We also offer free colouring sheets, crayons and balloons for all children – the small touches really help to encourage repeat custom.

Screening for success Showing live sport is a surefire way to attract additional footfall from fans, and with the Euro’s kicking off in June, it will be a profitable season for pubs that create an atmospheric viewing experience for their customers. Having the correct commercial TV equipment in place is crucial to this.
Play your position
Mounting
If you already have TVs in place, make sure they are positioned to provide sports fans with a clear view of the action. If space allows, consider housing your TV away from the main bar, in a dedicated area. This will avoid crowds and queues gathering where you serve, and avoid alienating customers less interested in the big game.
Unlike the TVs found in most living rooms, commercial televisions should come with VESA compliant mounting connections, allowing you to safely position your TV in higher areas of the bar for the optimum viewing position.
Commercial vs Domestic Although the technology and capability of our TVs at home has improved dramatically over recent years, their durability and functionality still doesn't match up to commercial TV equipment.
Tamper resistant With covered panels and buttons, commercial screens are designed to prevent disruptions, like customers turning the volume up or down, changing the channel or switching off mid-way through the action.
You may not have screens in place for a summer of sport yet, but it’s not game over. With exclusive deals for Enterprise Publicans, TVC Technology Solutions offer a full rental, delivery and installation service, avoiding the expense of buying equipment when you might only need it for a short period of time. For example you could get a 48" Screen with trolley stand plus delivery and installation all for a package price of £825 across the Euro's tournament. Visit tvc.uk.com and quote ‘Emarket deals’ for more details on sale and rental deals
Warranty
Final whistle
Domestic TV equipment usually carries a 1-year warranty. Commercial screens typically offer a minimum 2-year cover.
There’s a whole host of live sporting events coming up over the next few months. Check out commercial packages from Sky and BT Sport to attract customers long after the final whistle. See page 20 for our guide to sport this summer.
Operating capability Designed for between 8-16 hours of use per day, commercial screens will stand the test of time. A domestic screen should only be used for 4-6 hours per day. In addition, commercial screens are brighter, great for larger areas.

Licensing Laws Any pub or bar showing live television must be covered by a valid TV Licence. If there is living accommodation on the premises, where a TV is also in use, this must be covered by a separate licence. If an unlicensed TV set is found to be in use, the landlord or manager risks prosecution and a fine of up to £1,000. For more information, visit tvlicensing.co.uk

CASK ALE
There’s plenty of profit to be made from cask ale, and in order to maximise this opportunity, it’s important to understand the average volume of saleable beer in your casks. Adjust retail prices accordingly to manage the overall GP% you can achieve from them.
Cask Ale sediment allowance data is available for all casks sold by Enterprise and includes a guide to the average saleable volume for each cask in litres and pints, this will enable you to accurately calculate your selling price. This factsheet is available via a link on the GP calculator tool which is located on your Publican Channel dashboard. The Enterprise online GP calculator tool assumes 100% yield from products, so please bear this in mind when using it to review your cask pricing.

CaskWidge Solutions The CaskWidge Cellar System is a vertical "fit & forget" method of dispensing cask ales, which pour clean and bright pint after pint. It features an upright dispense system that has a flexible pipe with a floating filter attached, drawing the beer from near the top of the cask. The floating filter sits below the 'top break' and follows the beer down until it reaches the bottom of the cask. By taking beer from below this sub-surface layer, any oxygenation and contamination is prevented from spreading down into the beer below, keeping the beer in its best condition. INSPIRATION FROM ONE OF LAST YEAR'S REGIONAL WINNERS
Mel Carus; Publican at The Metropolitan, West Didsbury and 2015 Regional winner, Manchester and North Wales “As members of the Didsbury Traders and its Shop Local scheme, we support local businesses and events wherever we can. We stage a quarterly networking event for local businesses, hosted by a local firm, in the pub too.”
A great way to get involved in your local community is to offer your pub as a venue for events.
“Last year we hosted the Didsbury Art Festival, and promoted the event by displaying banners to gain local support outside the pub.” “We will use some of the Community Heroes prize money to help promote ‘Small Business Saturday’, which highlights small business successes and encourages consumers to shop local and support businesses in their communities. It has good social media coverage but requires banners and other advertising. In an area known for its independent spirit - it's a great campaign!”

Licensee of the Year Awards The Metropolitan, West Didsbury Melanie Carus, General Manager of The Metropolitan in West Didsbury, Manchester, has been named as one of the six finalists in this year’s Licensee of the Year Awards, held by the BII. Melanie, who has been running the site for over 17 years, is delighted to be recognised by her peers for the dedication she has offered to the industry since her teens. She comments, ‘We were nominated by a mystery party for the awards, and are hugely grateful to them. It means so much that someone has loved our pub as much as we do, and taken the time to enter us; we’d like to give a big thank you to the person who did put The Metropolitan forward! ‘The interview process to get to this stage was pretty intense so I’m preparing myself for a tough final stage. I’ve only ever worked in pubs, and am incredibly committed to the industry, so to be named as the winner would be a tremendous honour. I’ll definitely be revising a lot before I undergo the judging panel!” The six finalists now face a panel judging day in May, where they will be quizzed by industry experts in four areas; Marketing, Industry Affairs, Finance and People & Training. All finalists will be presented with trophies at the BII Summer Event on 7th June, when the overall winner of Licensee of the Year 2016, sponsored by BT Sport, will be announced.

Boltmaker, the 2014 CAMRA Champion Beer of Britain, is a well-balanced, genuine Yorkshire beer with a full measure of maltiness and a hoppy aroma.

THIS MONTH'S ON THE DRAY FEATURED BEERS OFFER DISTINCT CHARACTERISTICS AND ARE PERFECT FOR PAIRING WITH FOOD: GREENE KING BACK OF THE NET Keep it light and summery with a seasonal risotto. The citrus zing of this beer will cut through the buttery rice. For something more robust, try it with pan fried salmon fillets with a pinch of tarragon
SHEPHERD NEAME 4-4-2
The 10 different hop varieties in this beer will love asparagus wrapped in parma ham, served with a dollop of Hollandaise. For a snack, try it with roasted almonds or even cashew nuts
CAMERON’S HAZE
Weisse beers love shellfish, so steam a big pot of mussels in this beer, add cream, garlic and parsley, and you’ve got a match made in heaven
TIMOTHY TAYLOR’S BOLTMAKER
A Champion Beer of Britain deserves championship food: a juicy rib eye steak with all the trimmings pair nicely with the malty, roasted flavours in this beer. A roast beef and horseradish baguette works equally well, bringing out the spiciness of the beer
PURPLE MOOSE ELDERFLOWER ALE Elderflower is sweet and floral so don’t overwhelm it with something fierce! A pot of Panna Cotta with fresh berries will bring out the delicate flavours of this beer
ST AUSTELL LIQUID SUNSHINE This clean, citrusy beer works well with grilled mackerel or tuna, or a big sharing dish of paella packed with prawns, squid and chorizo.
