Vegetable peeler Cup (if using frozen onion) Weighing scales Teaspoon Tablespoon Spatula/Large spoon

Ingredients 500g minced beef (or vegan alternative) 1 tbspn tomato puree 1 white onion chopped (or 1 cup of frozen ready chopped) 2 tbspns Worcester sauce (or GF alternative) 2 carrots peeled and roughly diced 1 tspn chopped garlic (or ready paste/chopped) 1 tspn chopped ginger (or ready paste/chopped) 1 tbspn mixed Italian herbs 400ml beef stock (boiling water & 1 stock cube – use vegan/veg as req’d) 1 tin chopped tomatoes Pinch salt & pepper 3 tbspns vegetable oil for frying Method Add the oil to your frying pan and heat under a medium heat (not smoking) Add the chopped carrots and onions and fry for 5-10 mins Turn up the heat to medium high and add the minced beef (or alternative) Carefully break up the mince and fry until all is brown Add the garlic and ginger, stir in then reduce heat to medium Add the Worcester sauce and tomato puree and stir in well Keep cooking for 10 more mins Add the can of tomatoes, dried herbs and salt and pepper, then stir to combine Pour over the stock, turn down the heat to a low bubble and leave for 25-30 mins, stirring occasionally When you get the consistency you want, it’s ready! Hints & Tips Don’t rush the onions, time = flavour! Do take your time after adding the tomato puree, it needs to lose the tinny flavour! If you can, make A Little Extra to bag up and freeze to give you a huge booster when you really need it Ways To Change You can use this as a base for Cottage pie or in Lasagne Add ½ tspn ground cumin and ½ tspn dried chilli flakes for beef tacos and/or beef burritos Add 1 tspn dried oregano, 1 tspn dried chilli flakes, 1 tspn dried coriander and 1 can red kidney beans for chilli beef Add 1 tspn ground cinnamon and sliced aubergine for Middle Eastern twist
