Every penny of tonight’s proceeds benefits United Way’s non-profit partner agencies. Our nonprofit partners fight for the well-being of our children, families, adults in transition and senior citizens. Tonight’s Emcees BLACK BOX EDITION MASTERS OF CEREMONIES
Chef Josh Archibald
Will Leroux
Growing up with a large family meant lots of time was spent in the kitchen in the Archibald home. From a young age Josh was drawn to the process of feeding people and the genuine satisfaction that a handmade meal can provide. Starting as a dishwasher in Seaside Oregon at the age of 14 he quickly pushed to learn about the industry and the craft of cooking, but more importantly the art of true hospitality. He attended culinary school, graduating with honors, at Oregon Culinary Institute, over 14 years with Martin North finishing as the Executive chef manager of The Wayfarer Restaurant in Cannon Beach prepared him to be the Executive Chef of Tillamook. Josh is a steward for food sustainability, and an Oregon Coast local who digs razors, goes crabbing, loves sturgeon, and chanterelle mushrooms. In his career he has had the opportunity to showcase coastal cuisine at the James Beard house on multiple occasions, present at De Gustibus cooking school in NY, mentor the Seaside High School Prostart team for 8 years, winning the Oregon state championship in that event on two occasions, present at FEAST Portland, appear on season 18 of Top Chef, and been part of the presenting team for many weddings, events, beer festivals, and even a music festival.
Meet Will Leroux. Woodworker. Forager. Home farmer. Bearded (of course.) Trained as a chef, Will was eager to try out his home-brewing skills on a larger canvas and Public Coast Brewing gave him that chance. Will’s kitchen talent with flavors is a huge bonus; add the Public Coast Farm ingredients and Will now brews beers that are seasonal, original, classic and sometimes a little twisted. Will has received recognition for his craft, including an Oregon Beer Awards gold medal win for the ’67 Blonde Ale, another gold for the Blonde at the World Beer Cup, and most recently an Oregon Beer Award gold medal for the Coconut Brown Ale.
Growing up locally he visited the creamery as a young child and has had years to become familiar with the products and people that make Tillamook special and really understands the value of that experience in making the guest experience in Tillamook a continued tradition for visitors traveling the Oregon Coast.

Paul Paz
Bruce Jones
Paul Paz a native of Portland Oregon is a keynote speaker, trainer, columnist and consultant to the hospitality industry. Starting as a waiter serving over 250,000 guests, Paul created WaitersWorld followed by thousands of servers, restaurant managers and executives worldwide.
Captain Bruce Jones, U.S. Coast Guard, (retired), is Mayor of Astoria, Oregon, and Deputy Director of the Columbia River Maritime Museum. As a 30 year Coast Guard officer and helicopter pilot, Bruce commanded Air Station New Orleans (during Hurricane Katrina), Sector Lake Michigan and, finally, Sector Columbia River, which brought him to Astoria in 2011. His military awards include the Legion of Merit, Distinguished Flying Cross, and three Air Medals. Bruce has also worked as a helicopter pilot for the Columbia River Bar Pilots. He and his wife Linda have been married 38 years and have three grown sons and five grandchildren.
Based in the Pacific Northwest, Paul trains restaurants, clubs, resorts and casinos throughout the US and Canada. He co-authored Service at Its Best and The Professional Server with Prentice-Hall Publishers used in colleges and universities. Paul’s unique approach gleaned over a 42+ year waiter career has helped him build programs of professional table service that are second to none.

I started my career at the age of 15 at an Italian restaurant in northern California . From there I chased the sun and the snow traveling back and forth to Alaska and Hawaii, with time spent at ski resorts in Wyoming and Utah. Off seasons were spent traveling the globe through Southeast Asia to Central America ,which fuels my ethnic fusion cuisine. The North Coast of Oregon is now my forever home with my amazing son Briar and black lab Coco. Cheers.

Jonathan Hoffman graduated from Scottsdale Culinary Institute. His cooking favors the North Coast where he works with local fisherman, farmers and foragers to fashion flavors that represent the freshest and finest the region has to offer.

Chef Eric learned many of his skills under John Newman from Newman’s at 988 in Cannon Beach. There he worked his way up to Executive Sous Chef. Not only did working at Newman’s offer him a vast opportunity to learn and grow in the culinary field, but it was where he met his lovely wife Charity. Together they have an adorable son, and a brand new little girl. Eric began working at Maggie’s and has continued to hone his skills. He launched his new winter menu in the middle of October and it continually gets rave reviews.

Iron Chef Competition Rules BLACK BOX EDITION • Chefs receive a black box of ingredients which will be opened at the start of the competition. These ingredients must be used to create a complete entree plate including a COP (center of plate), starch, and vegetable. Chefs will have just one hour to cook and prepare the dish. Judging will be based on the chef’s demonstration of the required ingredients and their culinary skills. • Knives will be drawn at the beginning of the competition to determine order of presentation. The black box is not to be opened until the gong sounds and the time starts. • Each chef may have one sous chef of their choosing to help them produce their plates. • Chefs will have access to an extended mise en place for their use, and may bring their personal knives. However, NO other ingredients, equipment, tools, or cell phones may be brought in or used. • Four complete identical entrée plates must be prepared: one for each of the three judges and a fourth up for auction to the public. Finished entree categories must include a: A. COP: 5-8 oz B. Starch: 4 oz C. Vegetable: 4 oz • The COP portion of the plate may be either animal protein or a vegetarian option. • Entrée must include a sauce and be garnished appropriately. Remember, presentation counts! • All plates must be completed at the sound of the closing gong and covered. No further detailing of the plates will be allowed at time of ending gong. There will be a warming box on stage. Judges will have 10 minutes to taste and finalize their score cards for each presentation • Scorecards will be picked up by the UWCC representative, tallied and the winning team will be announced!

IRON CHEF GOES COASTAL It all began in 1928 at the land of dark Arctic winters and the midnight sun, when a blacksmith Janne Marttiini decided to establish a knife factory. With the user in mind, he began to create beautiful, high-quality utility articles to be used in the harshest conditions imaginable. The latest addition to Marttiini’s kitchen range is the Vintro kitchen knife set. The design of the clear-lined Vintro knives has paid special attention to maintaining their sharpness for a long time. In blade design, the product development team has invested in the shapes of various blades so that the series could offer something for the various needs of users of all kitchens. Marttiini knives are still manufactured at the Arctic Circle. Today they are a combination of generations of craftsmanship and modern technology that create knives that are not only sharp, but also perfectly represent the beauty and toughness of the North. They’re called “puukko” – the Nordic knife.

BSA Scouting: Shipwreck District
BSA Scouting is a family based organization that helps Clatsop County youth develop citizenship, character and physical fitness. Serves boys ages 6-20 and girls 14-20 through adult mentoring programs. 503-325-2990
Camp Kiwanilong
Camp Kiwanilong provides a safe, unique, rustic camp with programs that serve area youth of all backgrounds including school, youth and community groups. “Sparkyships” are granted to needs-based youth attending the 6-week summer program. 503-861-2933

The Harbor
The Harbor provides advocacy, prevention and support while promoting self-determination and hope for survivors of domestic violence, sexual assault and stalking. 503-325-5735
The Healing Circle – Victory Over Child Abuse (VOCA)
Victory Over Child Abuse (VOCA) Camp is a safe, specialized, healing annual camp program for child survivors of sexual abuse. Adult volunteers provide children safety and healing time during camp, as well as mentoring support through the year. 503-325-2761
Libraries ROCC
Libraries Reading Outreach in Clatsop County is a library services outreach program for all youth in Clatsop County that live in rural areas of the County. Together, through collaboration, networking, and community support, we are bridging the gaps between funded and unfunded youth services in rural areas. The work is supported by the three public libraries, five school districts, and Clatsop County as well as grants, public, and private support. Our three main goals are to place a library card in the hands of every child who wants one, to provide courier services between the schools and libraries for library materials, and to support the annual countywide summer reading program. 503-738-6742

Run through Clatsop Community College, the Lives in Transition (LIT) program is designed to support students as they complete or continue their education. It provides a trauma-sensitive environment encouraging students to develop greater selfawareness about their educational goals, enhance self-esteem, overcome personal barriers, and establish clear career directions. 503-338-2377
