S 1969 After World War II, Damir Drezga, founder of Epicure Foods, traveled between Croatia and Germany to seek new work endeavors. After hearing of the vast opportunites America had to offer, Damir left Germany to cross the Atlantic and pursue the American Dream.

After working various small jobs, Damir began working for diverse importers across Manhattan. Once he learned the ins and outs of the trade, he started to realize his potential to expand into the food importing industry.

With a small loan of $500 from a former employer, Damir was able to purchase his first pallet of Gouda cheese from the Netherlands, thus marking the beginning of Epicure Foods. Since then, the Drezga family has been able to build the successful Import and Distribution business that it is today.

Now almost 47 years later, Epicure Foods has grown from importing their first pallet of Gouda cheese from the Netherlands to importing and distributing quality cheese, charcuterie and various specialty foods from across the globe.

In October 2012, Hurricane Sandy devastated the company resulting in the destruction of the Epicure warehouse and offices. Determined to not let his hard labor go to waste, Damir Drezga and the rest of the Epicure team were able to sucessfuly rebuild the company and continue with normal operations.

Two years following the destruction of Hurricane Sandy, Damir Drezga passed away in 2014. His children, Stephen and Jennifer Drezga took the reigns of the company and continued their father’s legacy.

C WHAT IS CHEESE?

Everything is better with cheese, right? Originating in the Fertile Crescent, between the Tigris and Euphrates rivers, around 7000 BC - cheese was first introduced to mankind. Scientists and agriculturists debate that the discovery of cheese was purely by accident. It is likely that a traveling nomad filled his saddlebag, made of a dried sheep’s stomach, and set off into the desert. The combination of movement from the animal, the enzymes from the sheep’s stomach, and the rays of the hot Middle-Eastern sun, caused the milk to set and begin forming clumps of curd, creating the first cheese. With basic tools and the right conditions, the act of making cheese is truly quite simple, yet it is in the skill and detail that truly perfects its art. The quality of the milk, the amount of rennet added, the amount of salt and liquid in the brine, what herbs and spice are added to the mixture and lastly, how long to age the final product, are all factors that come into play. From a primitive form, cheese making has been refined into the award-winning, delicious product we enjoy today.

FRESH

Fresh Cheese is cheese in its youngest form. Crafted from fresh curds, fresh cheese is not ripened or aged, giving it a clean and creamy flavor. With its high moisture content, fresh cheese is soft, spreadable and excellent for cooking.

B BLOOMY RIND Bloomy rind is surfaceripened cheese. This cheese earned its name from its edible white rind. During the cheese making process, cheesemakers coat an edible mold called Penicillium camemberti, a yeast like fungus, across the exterior of the ripening cheese. With the presence of humidity, the mold begins to bloom and form a soft rind.

MIMOLETTE Isigny Sainte-Mère's Mimolette is made from the finest Normandy milks. These are distinguished by their exceptional richness, high fat content, high levels of protein and vitamins, as well as by their lactic bacterial flora that is characteristic of the Isigny terroir. These milks are collected every 48 hours, then taken to their reception tanks where they undergo a first series of tests to check that they meet Isigny SainteMère's quality requirements. The milk is then heated, seeded with lactic cultures that help the flavor notes to develop. Rennet is then added to the batch, followed by anatto, a naturally-occurring plantbased orange coloring agent. The curds are then cut finely to allow the whey to drain away. The curd is then pressed for a first time and cut up again into cubes. These go into cloth-lined moulds before being pressed a second time. At this stage, the Mimolette has taken on its final shape and is placed in a saline bath for 72 hours. This adds to the taste and helps to form its crust, which it will need during its time in the curing chamber and its subsequent stay in the ripening chamber.

H HARD

Hard cheeses are dense, savory and firm. Similar to semi-hard cheese, after being pressed to remove moisture, hard cheese will either be brined or coated in wax. Hard cheeses can be aged anywhere between 2 to 36 months. Due to its longer aging process and lack of moisture, hard cheese is the firmest in comparison to other cheese. In texture, aged hard cheeses are grainy and crumble easily.

Named after the natural port of Mahón on the island of Menorca off the Mediterranean coast of Spain, Mahón is a very versatile cheese. It is a semi soft white cheese made from cow's milk. Mahón is often grated and used for topping pasta, rice and vegetable dishes. Traditionally, it was eaten sliced thin and drizzled with extra virgin olive oil.

Mahón has some characteristics specific to it, despite aging. In general the cheese is buttery sharp, slightly salty and lightly aromatic (sweet and nutty aromas) in taste. Mahón's sweet and fruity but at times slightly salty taste is due in part to the sea salt content in the grasses the cows eat.

Blue cheese is classified as any cheese with marbled veins of blue or blue-green mold. In todays blue cheese making, Penicillium roqueforti mold is added to the cheese production. To ensure even distribution of mold throughout the cheese, oxygen is inserted through the surface of the cheese by thin needles or skewers. Fromagerie Papillon’s Roquefort was born from a meeting of humans and nature. They say that a young shepherd, in love, was distracted by a shepherdess. Forgetting his rye bread and sheep’s cheese in the cave of Combalou where he was resting, he left to pursue the girl. A little while later, he returned to this place and discovered his meal covered in a blue-green mold. Famished, he tasted the cheese anyways and was suprisingly delighted. Roquefort, an alchemy between the natural ventilation of a cave, rye bread and the cheese of the Lacaune ewes’ milk had been born. Today, it is still humans who gives Fromagerie Papillon’s Roquefort its unique character: In 1925, Roquefort became the first recognised Appellation d’Origine cheese. Additionally, European recognition as Appellation d’Origine Protégée guarantees a high-quality, authentic product to this day. To be considered AOP Roquefort, the cheese must be aged in designated natural caves for a minimum of 14 days and then in an aging room for 3 months. At the highest point of the mountains north of Auvergne, France, is the town of Saint-Nectaire where this cheese was first created during the 17th century. Saint-Nectaire (“saint nek-TARE”) is a semi-soft, washed rind, cows’ milk cheese. It has a leathery, natural rind that is mottled with brownish gray mold that develops over a minimum of 28 days while aging on rye straw mats. Saint-Nectaire’s aromas are of an earthy cellar with intensely vegetal flavors plus notes of hazelnuts or cashews which complement its doughy, pudgy, creamy paste. Town legend says King Louis XIV was presented this cheese and loved it! Serve as is, with Beaujolais on hand for a terrific terroir pairing.

Ă?zaro is the result of the output from the first olive orchard to be planted in the Casablanca Valley and specifically in the sector of Lo Ovalle. There are 60 hectares of different varieties which were planted in the autumn of 2007, using a semi-intensive scheme designed for semi-mechanised harvesting. The slope of the ground was respected in deciding the direction of the planting, so allowing for the movement of the water in winter and access for the machinery.
