Skilled cheesemakers with over a decade of experience enter this three-year program to perfect making specific varieties of cheese. When the Master Cheesemaker program was created, Wisconsin dairy farmers had no idea the impact that all of that mastery would have. Salmon and Cranberry Roulé Bites
INGREDIENTS:
• 125g of Rians cranberry Roulé
• 1 salmon fillet
• 6 fresh (or dried) cranberries
• 2 slices of smoked salmon
• Coarse gray salt
• 10 g of brown sugar dill
DIRECTIONS:
1. Mix the coarse salt, sugar and dill, cover the salmon fillet with the mixture.
2. Leave to rest for 2 hours in the refrigerator and then rinse with cold water for 5 mintures. Carve the salmon fillet into 6 larges cubes measuring 1 inch wide and roll them in a slice of smoked salmon.
3. Create the kebabs by alternating a cube of salmon covered with dill, a cranberry and a cube of Rians Roulé with salmon
Delectable Pear Bruschettini Toppers
INGREDIENTS:
• 11 bag of Asturi Bruschettini, Classic Olive Oil flavor
• 4 oz. Blue Cheese
• 2 tsp. milk
• 1 oz. almonds coarsely chopped, about 23 almonds when whole
• 1 large pear
DIRECTIONS:
1. Using a paring knife, cut 24 small slices of pear, put aside
2. Gather a handful of your almonds, place in food processor and blend. Slowly add more almonds until all have been ground to the desired consistency. Put aside.
3. In a microwave safe bowl, add blue cheese and pour milk on top. You can use a lactose alternative, like almond milk, but for best flavor and mixture we recommend cow’s milk
4. Microwave for 10 seconds or until cheese is soft, adding 5 seconds at a time if needed.
5. With a fork, mix milk and cheese until creamy.
6. Spread the blue cheese on Bruschettini.
7. Place a slice of ripe pear on top.
8. Sprinkle crushed almonds onto the combination and enjoy your sweet and textured treat.
The Doe Christmas Crackers
INGREDIENTS:
• 1 1/2 cups flour
• 1/2 cup butter, cubed
• 2 cups The Doe, shredded
• 1/4 teaspoon salt
• 1 tablespoon water
• Crushed pistachios
• Flaky sea salt and coarsely ground black pepper
DIRECTIONS:
1. Preheat oven to 375°F.
2. In a food processor, combine the flour, butter, cheese, and salt. Pulse or mix until a dough forms, adding the water as needed.
3. On a lightly floured surface, roll out the dough and cut into desired shapes. We used a variety of holiday cookie cutters to make it fun!
4. Transfer the cutouts onto an ungreased cookie sheet. Sprinkle each cracker lightly with pistachios, salt, and/ or coarsely ground black pepper, or leave them plain. Using your fingertips, gently press the pistachios, salt, and pepper into the crackers,
5. Bake for 10 – 12 minutes until lightly golden brown. Carefully transfer the crackers onto a wire rack to cool.
It all started in the early 80's when Jean-Claude Guilloteau set out to create his own cheese. This passionate man devoted 10 years of his life to developing a recipe that Fromagerie Guilloteau still uses today in the French countryside. In 1981, he made his first cheese using a unique approach to cheese making that filtered the milk and kept the best it had to offer! The cheese features a unique thin rind, a unique taste and a melting texture. The cheese-making savoir-faire has remained the same: that of Mr. Guilloteau. His knowledge has been passed on by Fromagerie Guilloteau cheese makers for over 40 years now Fromagerie Guilloteau uses only fresh milk from local French farms that is never more than 24 to 72 hours old, adding even more value (and flavor!) The cheese's even, creamy textures, delicate and unique tastes, and very fine rinds must be tasted to be truly valued. And for those who already know-the value of any bite of Guilloteau is truly priceless.
