DIRECTIONS:
1. Preheat oven to 375ºF.
2. With sharp knife, cut pumpkin in half horizontally, slightly above stem, to form bowl.
3. Remove fiber and seeds. With spoon or ice cream scoop, scrape out some of flesh so shell has a thickness of ¾ to 1 inch.
4. Spray top edge of pumpkin with cooking spray or brush lightly with oil, then place cut-side down on pizza pan or baking sheet
5. Bake for 45 to 60 minutes.
6. Cook and drain macaroni according to package directions while pumpkin bakes; set aside.
7. Melt butter in a large saucepan over medium heat. Sprinkle flour into butter and whisk into a rue.
8. Add mustard, red pepper and Worcestershire. Gradually whisk in milk and continue stirring until sauce thickens and returns to simmer. Reduce heat to low.
9. Add 7 cups of grated cheese and stir until melted. Add macaroni, stirring until well coated; remove from heat
10. Turn baked pumpkin over with oven mitts. Place in large shallow baking dish or leave on baking sheet. Fill pumpkin with macaroni mixture and top with remaining cheese and breadcrumbs.
11. Bake until filling is puffed and golden, about 40 to 50 minutes longer.
12. Let stand for about 10 minutes to settle before serving.
INGREDIENTS:
• 1 large pumpkin, about 11 inches in diameter, preferably with one flat side
• Cooking spray
• 4 cups small elbow macaroni
• 6 tablespoons salted butter
• 6 tablespoons unbleached all-purpose flour
• ½ teaspoon dry mustard
• Large pinch ground red pepper (cayenne)
• 2 dashes Worcestershire sauce
• 4 cups whole milk, heated
• 2 pounds Cabot Sharp Cheddar or Cabot Extra Sharp Cheddar, grated & divided (about 8 cups)
• 1 cup buttered bread crumbs
INGREDIENTS:
• 2 Le Pico Germain cheese
• 1 puff pastry
• 2 onions
• 2 shallots
• 2 tablespoons of brown sugar
• 1 egg yolk
• 1 tablespoon of water
• fresh thyme
DIRECTIONS:
1. Finely chop the onions and shallots.
2. Melt butter in a pan and add the onions and sugar.
3. Slowly cook to caramelize the onions, then let it sit to cool.
4. Spread the puff pastry, cut it in 4.
5. Put a piece of the Le Pico Germain in 1 of the piece of the puff pastry, with a spoon of caramelized onions.
6. Close the Pico cheese in the puff pastry. Repeat 4 times.
7. Once ready on a baking sheet, brush egg yolk on each piece of the puff pastry.
8. Add some fresh thyme on top.
9. Put in the oven for 15-20 min at 400°F.
10. Serve on a plate with arugula salad.
DIRECTIONS:
1. Cook wild rice according to package directions; drain. Cool completely.
2. Meanwhile, bring the apple cider, apple cider vinegar and shallot to a boil in a saucepan over medium-high heat, stirring frequently.
3. Reduce heat to medium. Simmer, uncovered, for 5-7 minutes or until cider mixture is reduced to about 1/4 cup, stirring occasionally
4. Remove from the heat. Whisk in honey, Dijon mustard and cider mixture in a bowl.
5. Slowly whisk in olive oil. Season with salt and pepper to taste. Combine the celery, dried cranberries, walnuts, parsley and rice in a large serving bowl.
6. Drizzle with cider vinaigrette; toss to coat.
7. Sprinkle with cheddar gruyere.

This creamy, semi-hard cheese features a decadent fusion of cheddar and gruyere. It’s aged to develop the perfect blend of sweet and nutty flavor notes. Serve it sliced on a charcuterie cheese board as well.

The cheese features a unique thin rind, a unique taste and a melting texture. The cheese-making savoir-faire has remained the same: that of Mr. Guilloteau. His knowledge has been passed on by Fromagerie Guilloteau cheese makers for over 40 years now Fromagerie Guilloteau uses only fresh milk from local French farms that is never more than 24 to 72 hours old, adding even more value (and flavor!) The cheese's even, creamy textures, delicate and unique tastes, and very fine rinds must be tasted to be truly valued.
