WHIPPED FROMAGER D'AFFINOIS

GARLIC & HERBS CHEESE

INGREDIENTS

• Fromager d’Affinois Garlic and Herbs

• Olive oil

• Sundried tomatoes

• Rosemary DIRECTIONS

1. Remove Fromager d’Affinois Garlic & Herbs rind and set the cream aside.

2. Place the Fromager d’Affinois Garlic & Herbs cream and 2 tablespoons of olive oil into a small food processor or powerful blender and blend for 3–4 minutes until smooth. The time required may vary depending on the appliance.

3. To serve, spread the whipped Fromager d’Affinois Garlic & Herbs across the base of a flat serving plate and swirl to create grooves on the surface.

4. Drizzle with olive oil.

5. Add finely chopped sundried tomatoes and rosemary.

SPINACH, ARTICHOKE & SAUSAGE

EGG STRATA CASSEROLE

INGREDIENTS

• 8 ounces bulk Italian sausage

• 1 small onion, chopped

• 4 tablespoons unsalted butter, softened

• 6 slices Italian bread

• 2 cups fresh spinach leaves, chopped

• 1 (8.5-ounce) can artichoke hearts, squeezed dry and quartered (about 1 cup)

• 8 ounces Cabot Extra Sharp Cheddar, grated (about 2 cups)

• 1 dozen large eggs

• 1 cup Sour Cream

• 1 teaspoon salt

• ½ teaspoon ground pepper

DIRECTIONS

1. Prehead oven to 350°F.

2. Cook sausage and onions in a large skillet over medium-high heat.

3. Break up sausage with wooden spoon, until sausage is fully cooked and onions are tender.

4. Spoon off and discard excess fat and let mixture cool.

5. Spread butter evenly over both sides of bread slices.

6. Arrange in even layer over bottom of 9-by-13-inch baking dish, cutting to fit if necessary.

7. Top with layer of spinach, followed by layers of artichoke hearts, sausage-onion mixture and cheese.

8. Whisk eggs in a large bowl until well combined.

9. Whisk in sour cream, salt and pepper. Pour mixture evenly over ingredients in baking dish.

10. Bake strata until top is golden and eggs are completely set, about 1 hour. Serve hot.

A cheese flavored with beer – that truly is something to savor. This cheese is produced to an authentic recipe from Gouda, using only the best Dutch milk. Then they add a unique beer, made according to the traditional method used at the Paulus Abbey, and ripen the cheese for about eight weeks until the flavor is just right. The result is a fine Dutch Gouda that blends the gentle saltiness of a wellmatured cheese with the fresh, slightly bitter fruitiness of Paulus Beer. A cheese that will leave you wanting more.

It all started in the early 80's when Jean-Claude Guilloteau set out to create his own cheese. This passionate man devoted 10 years of his life to developing a recipe that Fromagerie Guilloteau still uses today in the French countryside. In 1981, he made his first cheese using a unique approach to cheese making that filtered the milk and kept the best it had to offer! The cheese features a unique thin rind, a unique taste and a melting texture. The cheese-making savoir-faire has remained the same: that of Mr. Guilloteau.
