Founded in 1989, the company began small with a milk contract of 3,000 pounds per week and a partnership between Jean Rossard and Arnaud Solandt. While they started small, they had no lack of expertise; Jean Rossard is a 4th generation French cheese maker. Despite continued growth, they remain committed to their workers, using a supply of milk from about 350 independent family owned farms. DOMESTIC SPOTLIGHTS Travel cross-country with Epicure Foods Domestic producers are changing the game- the American palate, that is. The offering of gourmet cheeses and meats has never been better, conssumers are responding to that by seeking out higher-quality products in every category. This shift is more than skin-deep; consumers care about the process behind the product and that it does good for the community in some way. Each one of these producers is changing the game and giving the people what they want.

SHEPHERD'S WAY Farms nERSTRAND, mINNESOTA

Steven Read and Jodi Ohlsen Read established Shepherd's Way Farms in rural Carver County Minnesota with a small flock of dairy sheep in 1994. Initially the farm produced only milk. In 1998, they introduced their first farmstead cheese. The farm relocated to its current location in 2001 and Shepherd's Way Farms flock has grown to be one of the largest sheep dairy flocks in North America. A devastating arson fire in January 2005 destroyed more than 500 sheep and lambs and all of the animal housing. Milking was suspended in the aftermath, and cheese production continued on an extremely limited basis. With enormous community support, Shepherd's Way has perservered, slowly rebuilding and resuming full production in 2011. Today, Shepherd's Way has a small foundation flock of approximately 200 dairy ewes and the renovated 'new' lambing barn is nearly finished. Jodi makes Shepherd's Way Farms' award-winning sheep milk cheeses by hand in small batches on the Read family farm. Read more about each one below. HIDDEN FALLS. A blended milk cheese, made with sheep milk and cow milk. Hidden Falls has a soft, delicate bloomy rind that ripens the cheese inward. Al and Desiree Wehner began as conventional dairy farmers before switching to an intensive grazing "New-Zealand-Style" farming method. La Gruta del Sol

MAHÓN, AGED 12 MONTHS Mahon is named after the city in Menorca, located just off the coast of Spain, where it was first traded. The cheese itself is actually made across the island of Menorca, where salty winds blow in from the Mediterranean Sea. This Spanish cheese has been made for centuries and received a PDO in 1985. Artisan dairires use fresh milk that comes from cows that graze on the island. The milk used to make La Gruta del Sol Mahon is not pasteurized, meaning that the final cheese has a more complex flavor than others. The curds are placed in iconic square molds with rounded edges, creating a shape signature to Mahon cheese.

What’s with Mahon’s funky rind?

After the cheese takes its characteristic shape, it is dipped in a brine bath. This helps encourage rind development from the start by forming a nice base coat or starter layer that protects the cheese from its environment. Dipping Mahon in a salt bath will control the amount of moisture expelled during the initial drying stages, setting the groundwork for a cheese aged for at minimum a full year.

This step alone would be enough to create a “funky” rind, but La Gruta del Sol Mahon gets additional treatment over its year in the aging rooms. At frequent intervals, these square blocks are washed with a mix of olive oil and pepper. As the cheese ages, the oil and pepper mixture soaks in to the cheese, creating an aromatic rind that is a tan to dark brown color. It’s natural and a mark of a well-aged cheese!

Just get to the good stuffwhat does it taste like? Mahon is intense and complex compared to the lesser-aged varieties on the market. It’s flavor has touches of aged wood, tanned leather or the ripeneing chamber. This is a saltier cheese, much like other Spanish cheeses that are more well known. What does Designation of Origin Mean?

A D.O. protects products that are linked to a place. MenorcaMahón must be made on the small island, using milk from cows which graze openly on the island. The island’s history of cheese production spans centuries, is meticulous and has remained unchanged in the Menorcan farmhouses. Tasting a piece of D.O. Menorca-Mahón is like tasting a tiny piece of the island itself. It then becomes a problem when producers try to dilute the quality of Menorcan-made Mahón by creating cheap imitations. Either by producing Mahon outside of the island, cutting corners in the production proces or using low-quality materials, these versions try to capitalize on the tradition of quality that Menorcan producers have cultivated since the 18th century. With a D.O. established, the product can maintain its heritage and quality.

MEMBRILLO QUINCE PASTE

The quince fruit, known as membrillo in Spanish, is little used in the United States. Extremely popular in Middle Eastern cuisine, the membrillo has a long history that dates back to ancient Greek mythology. Despite its long history, the fruit has not reached widespread notoriety in the United Stated, due in part to its misshapen exterior, stong floral aroma and astringent taste. These qualities, however, translate extremely well once the fruit has been treated. Naturaly high in pectin, quince is most often used to make jams, jellies and pastes. The La Gruta del Sol Membrillo Quince Paste takes the best qualities of the membrillo and makes them shine.

The Super Fruit The La Gruta del Sol Membrillo Quince Paste has many nutritional benefits that make this an important fruit for daily use. Quince is naturally high in potassium, has a high amount of fiber to reduce cholersterol, and stimulates digestion. When eaten raw, the quince, which is naturally rich in tannins, comes across as sour. After stewing, the flavor changes to sweetness, yet the tannins maintain their anti-inflammatory properties. How do they make Membrillo Quince Paste? Beginning in October, every harvest is picked by hand, with only the best pieces being selected. The harvest lasts until February or March, at which point the fruit is boiled with the peel on. After boiling, the pit and seeds are removed, leaving the skin and meat of the fruit intact. What remains is then minced very finely to reach a thick-yetpliant consistency. The minced quince is then stewed with lemon juice and sugar, using a traditional recipe for artisan quality. As the fruit stews, it naturall reaches a reddish color. Recipe: Quince Candy Quince is floral and naturally sweet; it’s not overly sweet or artifical tasting in any way. La Gruta del Sol Membrillo Paste is the perfect base for a variety of candy coatings. Not only are they extremely easy to prepare, but they’re an unusual and beautiful treat to eat as a snack or to give to others. To begin, the set-up is the same. Take a piece of refrigerated La Gruta del Sol Membrillo and cut it into cubes about a 1/2 inch thick. These are then ready to be coated, with a variety of mixtures like powdered sugar (for a simple version of a turkish delight) or melted dark chocolate. Make a healthier version with chopped almonds and coconut shavings. A different version- allow the Membrillo to reach room temperature. Then, add some chopped almonds or nuts and even a bit of chili powder (for a sweet and spicy combination). Blend well together; you may need to get your hands dirty for this. It is similar to Independence Day in the United States, as it was on this date in 1789 that the first fracture of tryannical rule occured.
