HOLIDAY CHERRY JAM BITES

Cherry jam spread is the perfect complement to Belletoile cheese for your holiday party charcuterie board. It can also be a homemade gift for a friend paired with a wedge of Belletoile and your favorite holiday wine. All you need are a few ingredients to make this sweet jam.

INGREDIENTS 2 lb fresh cherries, pitted and chopped 3/4 cup sugar 2 tbsp lemon juice 1 wedge Belletoile 1 French baguette INSTRUCTIONS 1. Combine cherries, sugar, and lemon juice in a large saucepan over high heat and bring to a boil, stirring until sugar is dissolved. 2. Reduce the heat to medium-low and simmer, stirring frequently, for 20 minutes, then remove from heat. 3. Transfer the jam to a glass jar and let cool completely. 4. Slice baguette into thin slices and toast in the oven until golden and slightly crunchy. 5. While baguette is toasting, slice Belletoile into decent sized wedges. 6. Remove baguette slices from oven and top each with 1 slice of Belletoile. Remove cooled cherry jam from fridge and coat belletoile slices with one tablespoon of jam each. 7. A Century of Experience

Henri Hutin and his family began making artisanal cheese on their farm in the North of Meuse, France, in the early 1900s. After the war in 1922, Henri expanded the family business into a fromagerie in Lacroix-Sur-Meuse and established himself across the region as a “Master Cheese Maker”. Their signature product, Belletoile, was first produced in 1960 and quickly rose to acclaim in the world community by being the first triple crème brie exported to the United States of America. www.belletoile.us

What makes Belletoile triple crème brie different from other soft-ripened cheeses like traditional brie and camembert is the addition of extra cream before the production process. While other soft cheeses add some cream in the pre-production process, triple créme brie adds an extra amount of cream which gives Belletoile its wonderful, creamy and mellow mouthfeel. Because of the rind that protects the cheese while it ripens, Belletoile can be enjoyed for weeks after opening as it softens and ages. Our secret recipe includes living cheese cultures, so you will notice different flavor profiles as the cheese matures, starting out fresh and mild but turning more creamy and aromatic in taste as the cheese continues to age.

Saint-Nectaire is a semi-soft, washed rind, cows’ milk cheese. It has a leathery, natural rind that is mottled with brownish gray mold that develops over a minimum of 28 days while aging on rye straw mats. Saint-Nectaire’s aromas are of an earthy cellar with intensely vegetal flavors plus notes of hazelnuts or cashews which complement its doughy, pudgy, creamy paste. Montboissié du Haut Livradois is produced in the highest part of the Jura Mountains in the Franche-Comté region. INGREDIENTS Woolwich Triple Crème Goat Brie Cheese, cut into small pieces 2 sheets of phyllo pastry, thawed 1/4 cup melted butter 6 thin slices of prosciutto, chopped 1/4 cup pomegranate seeds 1/4 cup walnuts, finely chopped 1 oz thyme, minced INSTRUCTIONS 1. Preheat the oven to 375 °F. Grease a mini muffin pan. In a small bowl, combine the pomegranate seeds and walnuts. 2. Lay a sheet of phyllo pastry flat. Using a pastry brush, lightly butter the surface of the pastry. Place a second sheet of phyllo pastry over the first one repeat buttering. INGREDIENTS 1/2 lb Fromager d'Affinois Original 2 Ripe tomatoes 1 oz pine nuts 2 eggs 1 cup flour 1 cup bread crumbs 2 lemon wedges 1 oz thyme, minced Salt & pepper to taste INSTRUCTIONS 1. Finely dice the tomatoes and coarsely chop the pine nuts. 2. Mash the cheese in a mixing bowl with a fork and blend in the diced tomatoes and pine nuts. Roll the mixture into small, bite-sized balls. 3. Break the eggs into a bowl, season with salt/pepper and thyme and lightly whisk. 4. Pour the flour into one bowl and the breadcrumbs into another. 5. Roll the cheese ball first in the flour, then the egg mixture and finally into the breadcrumbs. Repeat the operation with just the egg mixture and breadcrumbs. Flaky, golden puff pastry wrapped around rich Fromager d'Affinois Garlic & Herb and smothered in garlicky spinach. This tasty pastry is the perfect appetizer to serve for large parties.

INGREDIENTS 1/2 cup Fromager d'Affinois Garlic & Herb, crumbled 1 package puff pastry sheets 2 tbsp olive oil 10 oz fresh spinach, chopped 2 garlic cloves, minced 1 green onion chopped 1 tbsp flour Salt & pepper to taste INSTRUCTIONS 1. On a flat surface, sprinkle small amount of flour and lay out puff pastry sheet. Roll the pastry sheet into a 10"x10" square. 2. Heat olive oil in a skillet, add garlic, green onion, spinach and salt and pepper and sautÊe for 3 minutes stirring consistently. 3. Spread the spinach mixture across the puff pastry and sprinkle Fromager d'Affinois across the surface evenly. 4. Roll the pastry into a long roll and wrap in parchment paper. Put in freezer for 35 minutes. 5. Remove pastry log from freezer and remove the parchment paper. Using a serrated knife, cut log into 10 even spirals. 6. Heat oven to 375 °F. An ivory color marbled in blue-green, holds well when cut, a discrete and subtle smelland balanced taste, melting, long-lasting in the mouth and slightly salted: these are the characteristics of the Roquefort Papillon. The Roquefort Papillon is visually characterized by its intense blue veins that run through it and many cavities uniformly distributed from the center to the rind. In the mouth, its has creamy and supple texture, which is accompanied by a strong taste. Its odor is characteristic of ewe milk cheese combined with the nobility of the Roquefortii Penicillium. They say that a young shepherd, in love, was distracted by a shepherdess. Forgetting his rye bread and sheep's cheese in the cave of Combalou where he was resting, he left to pursue the girl. A little while later, he returned to this place and discovered his meal covered in a blue-green mold. Famished, he tasted the cheeseand was delighted. Roquefort, alchemy between the natural ventilation of a cave, rye bread and the cheese of the Lacaune ewes had been born. In 1070, there is mention for the first time of Roquefort in the Carolingian texts. From then on the history of Roquefort remains closely related to Roquefort-sur-Soulzon and the Combalou mountains, thanks to King Charles VI. Named after the natural port of Mahón on the island of Menorca off the Mediterranean coast of Spain, Mahón is a very versatile cheese. It is a semi soft white cheese made from cow's milk. Mahón is often grated and used for topping pasta, rice and vegetable dishes. Traditionally, it was eaten sliced thin and drizzled with extra virgin olive oil.

Mahón has some characteristics specific to it, despite aging. In general, the cheese is buttery sharp, slightly salty and lightly aromatic (sweet and nutty aromas) in taste. Mahón's sweet and fruity but at times slightly salty taste is due in part to the sea salt content in the grasses the cows eat.
