BACON MAC & CHEESE WITH BLACK TRUFFLE Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes Makes: 4 servings

INGREDIENTS •

4 cups (1 quart) heavy cream

Salt and cracked black pepper to taste

1/2 pound bacon, diced, fried crisp and drained

1 pound elbow macaroni or short hollow pasta.

2 cups (8 ounces) Wood River Creamery Black Truffle, shredded

Chopped chives for garnish

PREPARATION •

Cook pasta according to package directions and drain, reserving 3 teaspoons of pasta water. Set aside.

Place cream in large saucepan. Add salt and pepper. Bring to boil and keep at boil until reduced by half (be patient, this takes some time). Stir in bacon and pasta and simmer until hot; add the shredded Black Truffle cheese and 3 teaspoons pasta water. Stir until cheese is melted. Garnish with chopped chives. Serve immediately.

VEGETABLE AND SALAMI PIZZA Prep Time: 10 minutes Cook Time: 15 minutes Total Time: 25 minutes Makes: 4 servings

INGREDIENTS •

1 16oz pre-made pizza dough

1 teaspoon olive oil

1 8 oz can of pizza sauce

1 cup shredded mozzarella

1/2 cup thinly sliced Bellentani Italian Dry Salami

1 medium roma tomato, thinly sliced

1 medium bell pepper, chopped into strips

1 small red onion, chopped into strips

1/3 cup arugula

2 tablespoons shredded parmesan cheese

1/2 teaspoon oregano

PREPARATION •

Preheat oven to 425°F. Flour the ball of pizza dough and form into a 1/2 inch thick circle. Place on baking sheet that has been thinly coated with olive oil.

Cover the pizza dough with the sauce and then the mozzarella cheese. Top with sliced Bellentani Italian Dry Salami, sliced tomatoes, bell peppers, red onion, and arugula.

Bake for 14 to 18 minutes, until the crust is golden brown. After removing from the oven, sprinkle shredded parmesan cheese and oregano on top.

THISTLE HILL

histle Hill is different to other Stilton makers, as they do not make any blue cheese on their site. The wide range of White Stiltons made at Thistle Hill have a clean and fresh taste which allows it to stand out amongst other White Stilton cheeses. Thistle Hill’s White Stiltons are blended with the finest flavors around, to create delicious and fantastic seasonal cheeses. White Stilton is a Protected Designation of Origin and can only be made in Derbyshire, Nottinghamshire and Leicestershire from locally produced milk which must be pasteurized before use. If Roquefort is the assertive "King of Blues", then even-tempered Bleu d'Auvergne is the prince. Though both were developed in the early 19th century, are currently AOC protected, and made with a similar recipe, the difference lies in milk type, region, and intensity. The blue, made from raw cow's milk, is mellow and meaty, taking its name from the region of origin. So while he may not be the life of the party, well-balanced salt and spice makes d'Auvergne a perfect companion for cooking or for winding down with some Barsac dessert wine.

France's response to Stilton, Fourme d'Ambert is the ideal blue. Unlike its relative, d'Auvergne, d'Ambert's production is on a much smaller scale. Thus, a high quality and more pristine cheese is formulated. The paste is slightly more knit than Stilton, with a more mellow, yet more present mold. Raclette is the world’s most famous melting cheese as well as a beloved dish originally created by Alpine cheesemakers feasting upon boiled potatoes and cornichons topped with the melted cheese. The name Raclette derives from the French verb “racler” meaning “to scrape”, which describes the method used to layer the cheese once melted from the heat of fireside rock on which it was placed. This semi-firm cows’ milk cheese has a washed rind which creates a pungent aroma that is met with a contrastingly mild flavored, springy paste. Pair with pickles, vegetables, cured meats, a bottle or two of your favorite Vouvray, Riesling, or Alsatian white and invite over your nearest and dearest for a fabulous French fondue party.

Montboissié du Haut Livradois is produced in the highest part of the Jura Mountains in the Franche-Comté region. It dates back to the 19th century when producers of Comté decided to make a smaller cheese from the day’s leftover curd for their own consumption. They’d sprinkle the curd with ash to keep the cheese from drying out overnight. The next morning new curds were laid on top of the thin layer of ash and the wheels were pressed and washed with brine to form a protective rind. Today, Montboissié is made from a single milking and vegetable ash is added for purely as a nod to its origins. Because it is a washed rind cheese, the aroma is pungent. However, its flavor is surprisingly mild. Its springy yellow-ivory interior houses a complex taste including subtle hints of fruit and fresh hay that pairs well with tangy or fruity white wines and light fruity reds.
